Emeril Lagasse Chef keeps cooking up delicious changes

Emeril Lagasse’s Delmonico Steakhouse is a Las Vegas landmark, a dining institution that celebrated 20 years of successful business at The Venetian with a full renovation, front and back of the house. But don’t fret—the legendary chef’s New Orleans barbecue shrimp, gumbo and other signatures are still on the menu. Somehow Lagasse also found the time to create a brand-new restaurant onboard Carnival Cruise Line’s newest ship when it debuts this year. Congrats on launching your first restaurant at sea. What is it about this project that excited you and drew you to such a unique situation? You know what? These guys are pros. As I’ve been working with the folks at Carnival, they keep getting more dedicated and working very hard and just perfecting culinary excellence. They approached me about this ship called Mardi Gras, which of course is a little bit about what Emeril stands for, so it became really exciting. Then my team started working with their team and it started getting more exciting. The restaurant is ... sort of in the French Quarter section of the ship, so it should be a very vibrant experience.

your food, but you’ve been an essential part of dining developments in Las Vegas and we like to claim you as our own. Do you see similarities in the culinary culture between New Orleans and Las Vegas? Vegas has certainly evolved into that now. I started in Las Vegas almost 25 years ago, and there was an educational part in the early years that had to be established. Now it’s turned into an incredible dining and food scene and I’m just so happy to be a part of it. My team has been there a long time and has really become part of the community and we do a lot of different things, particularly with mentoring kids, and we love it there.

What will the menu be like for Emeril’s Bistro 1396 onboard the ship? It’s not too sophisticated because we’re trying to keep things perfect for the family. There’s a great seafood component to the menu, oysters and shellfish and whatever we can get fresh and bring on the ship, then touches of gumbo and some po’ boys. The (Carnival) team, they get it, and they’ve spent a lot of time in my restaurant in New Orleans, so it’s a good mix.

Delmonico at Venetian just celebrated 20 years and is open again after a renovation. Why was it important to reinvest in this restaurant? We’re constantly trying to evolve all the time in Las Vegas. We did this blowout renovation in pieces, starting with the kitchen about six months ago. We didn’t want to do it all together because it really was that extensive and took a lot of time, so we broke it up. And the meat program at Delmonico is one of the best out there and we’ve been doing it a long time, but we’re trying to evolve not just the meat program, but bring a new

dedication to the seafood and the other dishes. We’re always looking for the best product and using our great relationships we’ve established over the years, and now we can keep doing in our thing. What else are you working on in the new year? Well, we’re almost done renovat-

ing Emeril’s (in New Orleans) and it’s going to be 30 years old. Really, it’s about not resting on your laurels, constantly brainstorming, testing new dishes every day and for me, working very closely with our chefs and our culinary team so we can keep giving the customer a great experience no matter what restaurant they visit.

SOUL SENSATION Rolling Stone magazine has called Grammy Award-winning soul artist Raphael Saadiq’s new album Jimmy Lee a masterpiece. The New Yorker described his new music as “a novelistic song cycle that seems at once intensely private, broadly political and undeniably funky.” For those who know Saadiq best as one of the leaders of seminal Oakland R&B group Tony! Toni! Toné! or

the neo-soul supergroup Lucy Pearl, his recent work is striking, ambitious and unforgettable. But even though he’s telling an important story through song, Saadiq continues to craft thick grooves that will stick in your head long after you catch his live performances, including at Brooklyn Bowl Las Vegas in the Linq Promenade on Jan. 24.

MUST-SEE Blue Man Group Street performers work without the advantage of a captive audience. Their artistry must be thrilling enough to disrupt your day, to steal you away from your ordinary existence and to ultimately inspire. That experimental, exciting spirit is deeply embedded in each Blue Man Group performance at Luxor, a show that originated with three friends hitting the streets on Manhattan’s Lower East Side and making an eclectic spectacle of themselves. Sometimes the Blue Men’s stunts are silly and funny, while at other moments they are slyly commenting on the human condition. The Blue Man phenomenon has come a long way from those NYC streets but it remains one of the most unique and enchanting shows on the Strip.

I recently hit the Bellagio for my first Mayfair Supper Club experience, and while my table had a great view of the new venue’s stage with the legendary fountains serving as a cinematic backdrop, music and TV legend Paul Shaffer had the preferred corner booth. Seems fair. He was dining with friends on prime rib, Dover sole, tomato salad and Baked Alaska and paying close attention to the electrifying entertainment. MGM Resorts International executives were also part of his group, so don’t be surprised if we see Shaffer at a Strip venue soon. He’s played at Cleopatra’s Barge at Caesars Palace in recent years and would be an ideal fit. Also that week, Back to the Future star Christopher Lloyd hit the supper club with friends. Vegas Golden Knights Ryan Reaves, Deryk Engelland and Marc-Andre Fleury celebrated their big win over the defending Stanley Cup champion St. Louis Blues with dinner at Scotch 80 Prime at the Palms. The group enjoyed new chef Daniel Ontiveros’ salmon tartare, oysters, the burger, the rib cap steak and more. Megan Bomgaars of A&E’s documentary series Born This Way celebrated her birthday Saturday night with friends, family and fellow cast members at Best Friend at Park MGM, feasting on Korean barbecue. Two shows at V Theater at Miracle Mile Shops at Planet Hollywood Resort recently reached landmarks. All Shook Up, a tribute to Elvis Presley, celebrates six years and 2,000 performances on the Strip this month. In December, Zombie Burlesque also marked its six-year anniversary there.

Maximizing Space Indoor/outdoor living is one of the most noticeable design trends of the last decade, and it shows no signs of slowing down as builders and buyers seek to lose the walls between interior and exterior spaces. Realtor/broker Tamara Heidel explains, “It’s so nice to be able to entertain indoors and outdoors so easily. Anybody buying a new home that doesn’t have a retractable wall is making a huge mistake. When I’m out with my clients and they’re deciding on what upgrades to make, I say the retractable wall is a must-have.” –AD

Realtor Meghan Jorgenson has lived in Las Vegas for close to 25 years. She notes, “I know the city really well and it helps me find the right fit for my clients.” She’s used her insider knowledge to help clients find their ideal homes all over the Las Vegas Valley, and she encourages buyers to “Be open to new areas, because I feel like people just hear that Summerlin is a great place to live, and it is, but there are a lot of really great neighborhoods across the valley that could actually be a better fit for people.” Jorgenson points out how important it is to enter the home search with open minds, because “people come to the table with these super-long lists and they might miss a house because it doesn’t have one of the certain things they want.” She reminds her clients not to get hung up on cosmetic things because they’re less expensive to alter than they realize and can often be negotiated into the purchase price. Jorgenson brings up the excellent point that anybody looking to buy new construction should still use a Realtor. “We’re able to negotiate pricing and often get you a better lot premium price. Music That Moves During his life, Michael Jackson always worked to create a sense of wonder in his music and other artistic projects, and the Cirque du Soleil show Michael Jackson ONE is a perfect realization of those ambitions, even though Jackson is no longer around to see it. Created around a fantastical story of four young people who collect magical artifacts associated with Jackson (his sequined glove,

his fedora, his dance shoes, his sunglasses) and eventually meet up with him in a version of his home at Neverland, the show brings Jackson’s music to life for new audiences while taking care to honor his memory. It also features all of the astounding talents that Cirque is known for, including amazing dancers (performing iconic Jackson moves like the moonwalk and the “Smooth

Criminal” anti-gravity lean) and limber acrobats (zombies on trampolines during “Thriller”), plus live musicians augmenting Jackson’s recorded vocals or shredding on intricate guitar solos. The show is packed with Jackson hits (including “Bad,” “Beat It,” “Human Nature,” “Black or White”), from his youth in the Jackson 5 through the end of his career. –Josh Bell

Skeptics Welcome

It’s not surprising that a self-proclaimed clairvoyant medium who has his own reality show on E! and is known for giving readings to celebrities encounters a certain amount of skepticism. But whether you believe in Tyler Henry’s powers or not, he’s able to give closure to grieving people and provide life advice, and he’s open about any questions he receives from doubters. Thanks to his E! show Hollywood Medium, Henry has given readings to celebrities including Megan Fox, RuPaul, Margaret Cho and the Kardashians, who helped launch his TV career when he appeared on Keeping Up With the Kardashians in 2015. With that level of fame has come increasing demand for Henry’s services, and so his current tour (titled An Evening of Hope, Healing and Closure) is a chance for him to connect with non-celebrities who can’t score a coveted one-on-one session (the waiting list for a reading with Henry was up to 15,000 at one time). Henry will talk about how his work as a medium has shaped his life, and he’ll perform live readings for select audience members. –Josh Bell

Luxor’s long-running topless revue, which celebrated its 20th anniversary last year, embraces the glamour of Sin City showgirls in a new vision. Food and Fun Instagram alert: Every inch of the beautiful, opulent entryway of seafood/sushi restaurant Catch is filled with colorful flowers and lights, not to mention giant, bird-cage booths and trees adorned with translucent orbs. It all helps set the tone for the decadent meal awaiting you inside this hip eatery, a favorite among celebrities in New York City and L.A. But feast your eyes instead on the menu: Catch’s signature cold plate, truffle sashimi, presents thinly sliced tuna and hamachi delicately rolled in a tantalizing, impossible-to-forget sauce of chili oil, ponzu and black truffle, then topped with caviar and scallions. New Tricks and Treats There is a new generation of magicians emerging on the Vegas Strip. It may be premature to predict who will rise to the top but America’s Got Talent champion Mat Franco is a likely suspect. Forbes recently named his residency, Mat Franco: Magic Reinvented Nightly, one of the best shows to see in Las Vegas, along with Lady Gaga: Jazz & Piano, Absinthe and Cirque du Soleil shows “O” and The Beatles LOVE. This is because Franco is a master of sleight-of-hand and misdirection, and he exudes a comfortable confidence to match an engaging smile. There’s a lot of audience participation as Franco makes

A Night With a Legend

Singer brings best-loved songs to intimate venue Dionne Warwick’s career spans almost 60 years, longer than many of today’s biggest music stars have been alive. She scored her first hit in 1962 with “Don’t Make Me Over,” her first solo single after breaking out from her family’s gospel and R&B singing group, and she last made the charts in 1998 with a version of the Burt Bacharach/Hal David standard “What the World Needs Now Is Love.” In between, she racked up dozens of hits across multiple decades, including “I Say a Little Prayer,” “Then Came You,” “I’ll Never Love This Way Again” and her signature song “That’s What Friends Are For.”

Warwick started releasing hits in the early rock and R&B era, working with songwriters Bacharach and David on her 1960s singles, and she maintained her popularity even as musical tastes shifted, collaborating with disco-era stars like Barry Manilow and Barry Gibb of The Bee Gees in the ’70s. She then achieved possibly her biggest success in the ’80s when “Friends” on which she was joined by Elton John, Gladys Knight and Stevie Wonder (billed as Dionne and Friends), became a massive pop-culture sensation, ending 1986 as the No. 1 single of the year and raising millions of dollars for AIDS research.

Warwick, who received a Lifetime Achievement Award from the Grammys in 2019, will showcase hits from throughout her career in the latest dates of her Caesars Palace residency, in the intimate atmosphere of Cleopatra’s Barge. She’s been performing in Vegas since 1969 when she headlined at The Sands, and she knows exactly how to keep a Vegas crowd entertained with songs that have become timeless. “All of the music that has been written for me to record, I love them all,” she told Las Vegas Magazine before launching this new residency. “They’re like my babies.” –Josh Bell

A Simpler Time When Beatlemania took hold in the U.S. in the 1960s, American teenagers were enraptured by a new sound, a new look and a new dream: I wanna be like the Fab Four! That dream spawned countless garage bands, 99 percent of which never made it as far as the driveway. But in Newport, R.I., four musically inclined brothers— Bill, Bob, Barry and John Cowsill—were determined to buck the odds. So they honed their sound at nearby school dances and churches, and in short order the The Cowsills were off and running.

Irish pub continues to show visitors a good time Looking for a fun place? A fun place that’s casual, cool and you can gamble, too? But lest we forget, the star of the Carbone show is its delectable Italian fare. Begin with the carpaccio Piemontese, a dish combining ingredients hailing from the namesake Piedmont region of northwest Italy—truffles, walnuts and mushrooms—atop thinly sliced beef tenderloin. Brushed with a white truffle emulsion invoking earthiness and umami, the tender meat is contrasted in texture with the addition of toasted walnuts. Or instead, order the octopus pizzaiolo, where charred cephalopod intermingles with both cherry and Italian hot peppers, delivering more than a hint of heat. Entrée-wise, the aforementioned veal Parmesan is a hearty hit—don’t forget to gnaw on the cheese-crusted, deep-fried rib that accompanies the dish—but if you’re looking for something a little bit lighter, look to the dover piccata. Prepared in a lemony brown butter sauce rife with capers, the fish—like so much of the Carbone menu—is finished tableside, deboned by a server with surgeon-like precision. Pair your main dish with duck fat-fried potatoes Louie, a garlicky treat serving as a foil to both the more acidic red sauce dishes awash on the Carbone menu and vampires alike. With crisped skins giving way to fork-tender interiors, these spuds are a welcome addition to any meal.

While Carbone is clearly an Italian restaurant, chef Mario Carbone’s namesake restaurant boasts an ample selection from a whole other part of the world: rum. For a splurge, finish with a pour of Samaroli 1999 Trinidad rum aged in Scotch barrels from the vintage rum cart. But no need to wait until dessert for a libation; instead, order a house Old-Fashioned or two with your meal as El Dorado 12-year rum stands in for the cocktail’s usual whiskey, endowing the drink with wisps of vanilla.

For dessert, while the bananas flambé capture the room’s attention—when isn’t fire the center of attention?—when the tableside dessert cart arrives, order the lemon cheesecake. A slice of this oversized, almond cookie-crusted treat is just about the right amount of decadence to round out your meal. Opening more than four years ago in Aria, Carbone is practically a Strip veteran. And as recent meals attest, it has done nothing but get better with age.

General manager gets another feather in his cap Over his two decades in the Las Vegas food and beverage industry (with eight of those years in management), Jake Leslie, general manager of The Mayfair Supper Club at Bellagio, has opened many popular restaurants, but none quite like The Mayfair. “It’s not just a restaurant, it’s live entertainment,” he says. “It’s a true, classic supper club. A classic Vegas lounge feel. There’s a three-piece band, modern showgirls. … I was very fortunate and excited once I saw the investment. It’s a pretty lavish production when you come in here say at 10 o’clock on a busy night ... the place is packed and the lights are flashing and there’s dancers in the aisles and people twirling their napkins and having a blast. It’s a very different experience.”

Before Mayfair, Leslie helped open other hot spots in town like Libertine Social and Best Friend; he even opened his own eatery downtown, The Goodwich. “The hardest part of openings are the things you forget, so those last few weeks, there’re those little details that kind of come up,” he says. “The more you do openings, the more you think about how to approach things. You have to be flexible and nimble.” After all the years in the industry, after all the openings and working in management, Leslie continues to find passion and love for his craft. “One, you get to work in beautiful spaces,” he says. “Restaurants in general are immersive, transportive. Especially Mayfair—you walk through those doors and you realize this is special, this is different.” –Kiko Miyasato

Back in 1989, a group of friends who learned to harmonize in the bathrooms of Philadelphia High School for the Creative and Performing Arts sang at a Valentine’s Day party, then went on a mission. The singers, who had named themselves after a New Edition song, planned to sneak backstage at a Bell Biv Devoe concert for an impromptu audition. The plan worked, and BBD member Michael Bivins was impressed enough to throw his weight behind the group. They were signed to Motown before the end of the year. Next month, Boyz II Men take a break from their long-running residency at The Mirage to perform a hometown Valentine’s Day concert at The Met Philadelphia on the anniversary of the night they serenaded Bivins with a rendition of New Edition’s “Can You Stand the Rain.” Baritone Nathan Morris, tenor Wanya Morris (no relation) and tenor Shawn Stockman had celebrated the 30th anniversary of their discovery last year with a Feb. 14 concert at the newly opened Met Philly. The group that personifies the sound of hip-hop doo-wop had come full circle since going from high school to recording the songs that would be released on Boyz II Men’s 1991 album Cooleyhighharmony. Cooleyhighharmony Bivins would provide a guest rap on debut single “Motownphilly,” but the album’s strengths lay in skillful singing set against

a new jack swing backdrop. The group, with Michael McCary on bass vocals, were equally influenced by ’60s Motown, ’70s Philadelphia soul and gospel groups such as Take 6, Commissioned and The Winans. “Motownphilly” reached No. 3 on the pop charts, only to be outdone by “It’s So Hard to Say Goodbye to Yesterday,” a cover of the end credits song from 1975 film Cooley High that reached No. 2. Their second album II yielded back-toback No. 1 hits “I’ll Make Love to You” and “On Bended Knee,” and spent five weeks at No. 1. The Boyz took a break after touring in support of II, but when they returned to work they found hip-hop had surpassed new jack swing in popularity. Instead of rappers guesting on pop songs, singers were contributing to tracks by hip-hop acts. They scored two more No. 1 hits, “One Sweet Day” with Mariah Carey in 1995 and “4 Seasons of Loneliness” in 1997. A slow fade in popularity put stress on the group. McCary, who privately battled multiple sclerosis, left in 2003 to focus on his health. Boyz II Men carried on, with Nathan Morris adapting his role to compensate for McCary’s absence. It was as a trio that they would find renewed popularity beginning in 2013 when The Mirage offered them a headlining residency. The comeback was extraordinary, with several sub-generations of fans snatching up tickets for exuberant performances and a return to romance in pop music. The Boyz were back on top where they remain today, with a showstopping moment involving ladies in the audience and the distribution of roses. They may have said goodbye to yesterday, but Boyz II Men have far to go before reaching the end of the road.

Imagination in the Center Ring As Cirque du Soleil expanded its presence on the Las Vegas Strip, with seven productions currently running, the first resident Vegas show has remained a centerpiece of its lineup. Mystère (Treasure Island, 702/894.7722), launched in 1993, when the idea of a Cirque show in Vegas was still a risky proposition, but it quickly proved that the Canadian circusarts company was a perfect fit for Strip

entertainment. While Cirque has branched out, Mystère still captures the traditional circus feel of early Cirque productions, led by a ringmaster of sorts and showcasing acrobatic, dance, clowning and magic acts. Those acts have been rotated and refreshed over time, but many elements of Mystère have remained the same, including the mischievous Big Baby, a playful figure in a bonnet and

nappy who interacts with audience members, and Alice the snail, a giant inflatable creature who appears in the finale. Both Big Baby and Alice have become iconic Cirque characters, and their whimsical nature complements the feats of strength and agility seen in the trapeze artists and acrobats. Even after more than 25 years, the sights and sounds of Mystère can still astound. –Josh Bell
