NOTES

From the Editor Making Progress

The Las Vegas Strip got a big boost a few days ago when The Mirage reopened on Aug. 27. It’s reopening several noteworthy restaurants, spas, pools and attractions, which means the Las Vegas you visit this week will have far more to offer than the Vegas of weeks prior. If you scheduled your trip to our city this week, congratulations! Yes, there are still notable absences. Live shows and entertainment are, unfortunately, not returning anytime soon, and the same can be said for nightclubs. This is still a vastly different Vegas from the one you visited in 2019. But as this week’s issue of Las Vegas Magazine will show, that doesn’t mean you won’t still have the time of your life here. Pools, restaurants, attractions, spas, salons and more have all reopened, and all have implemented strict safety protocols to ensure your safety ( for more on this, consult our Safety Guide starting on page 33). Masks are still required everywhere you go, and if you forget yours, no worries—most properties provide them free of charge. Now get ready to have some serious fun. To get you started, Kiko Miyasato takes you on a tour of some of the more exciting and Instagram-worthy locations across the Las Vegas Strip (“Picture This,” page 20). We can almost guarantee you’ll have

more followers after this week if you take her advice. And with Labor Day just around the corner, Nina King introduces you to some of the best brunch options around (“Summer Brunches Make Me Feel Fine,” page 26). Good luck choosing a spot; as with almost anything else in Vegas, the options feel almost endless. The fun continues with Brock Radke’s walk-through of the aforementioned Mirage in his “On and Off the Strip” column (“An Icon Returns,” page 18). If you’re new to the Las Vegas Strip, you’ll definitely want to check out our “Friends With Benefits” interview with Stephen Thayer at The STRAT. Once you’ve read the piece, seek out Thayer and introduce yourself. You’ll be on your way to becoming an automatic Vegas insider! Speaking of The STRAT, we’ve got a fun rundown of the thrill rides atop the tallest building west of the Mississippi. In addition, we’ll whet your appetites with menu rundowns of restaurants like Cucina by Wolfgang Puck at The Shops at Crystals, Gordon Ramsay Steak at Paris Las Vegas, and Carbone at Aria. Again, congratulations on choosing to visit Las Vegas this week. You’re about to make a lot of your friends back home very jealous.

Who Needs a Stadium? Going to the stadium to watch a sports game is the best excuse for eating the food you wish you could resist. There are Dodger dogs at Dodger Stadium in L.A., clam chowder bread bowls at Oracle Park in San Francisco and the list goes on. Yet, with spectator sports at a standstill, where will you go to nosh on similar stadium-style comfort foods

while watching your favorite sports teams? Fortunately, that’s Public House’s specialty. On the menu, you’ll find a range of finger foods like fish and chips, tuna poke nachos and pepperoni pizza bites served with marinara and jalapeño ranch dipping sauces. If you couldn’t tell at first glance that burgers like the mushroom and Swiss or the Big Texan are

gigantic, they come stacked on a miniature pallet inscribed with a “heavy load” warning to reinforce that these burgers are big. Yet, just like at a stadium, you’ll also find quick bites like the Truffle Shuffle fries and the giant pretzel served with beer cheese. So, order up, then kick back with a beer and enjoy the game. –Alex Haase

Are You Ready? If you’re ready to test your nerves of steel, there’s no better place than the thrill rides at the top of The STRAT—Insanity, Big Shot and X Scream. Each, in their own unique way, dare you not to whoop and holler as you’re pitched off the edge of the building, shot straight up into space and suspended hundreds of feet above the earth. Big Shot catapults you 160 feet straight up as you’re locked in a seated position. There’s no warning: You just suddenly feel a G-force of 4, quickly followed by a negative G-force as you drop. X Scream feels innocuous at first— you’re seated in a roller coaster-type car and slide down a track toward the edge of the building. Then, as you reach the end of the track, it suddenly tilts forward, and that’s when you feel the scream leave your throat. Insanity, a five-fingered claw, has riders dangling from each claw before reaching out 64 feet from the edge of The STRAT, after which it begins to rotate. As you begin to turn and tilt upward, try to control your bodily functions as best you can. You must be at least 48 inches tall to ride Big Shot and 52 inches to ride X Scream and Insanity. –Ken Miller The STRAT, 702.380.7777

Scenes From an Italian Restaurant From pizza to pasta, you’ll find what you need here Celebrity chef Wolfgang Puck opened one of Las Vegas’ first celebrity fine dining restaurants, Spago, in 1992, and since then has expanded his culinary reach into several cities and even supermarkets. Today, Cucina by Wolfgang Puck serves up some of the most relaxing, delicious meals you’ll eat in Vegas. Stop in for lunch or dinner—and a little people watching—and grab an app like frito misto, with calamari, shrimp and baby squash, and one of Puck’s delicious pizzas—margherita, wild mushroom, pepperoni or spicy Italian, all concocted

.10. 8.30.20 LAS VEGAS MAGAZINE

with fresh, flavorful ingredients like San Marzano tomatoes, Tuscan kale, capicola and Calabrian chilis. The crust here is a major plus. Or go for the Provolone cheeseburger, created with goodies like crispy pancetta and onion jam. You’ll find several types of pasta, such as bucatini with a nice tomato sauce, pappardelle with a hearty wild boar ragu and a light, refreshing gemelli with shrimp and a basil pesto. If you’re just not up for pasta, one of the other entrées will give you plenty of fuel—chicken Parmesan and chicken piccata both are satisfying. For some-

thing that really sticks to your ribs, try the osso bucco served over a bed of creamy polenta. Cucina has a nicely curated wine list that isn’t overwhelming. Choose from a number of Italian wines or get a glass from the California wine country. You can even find a few from France, Germany and New Zealand. For dessert, traditional tiramisu will give you a comforting feel, but apple crostata or a vanilla panna cotta make for an excellent ending to the meal. –Nina King The Shops at Crystals, 702.238.1000

Prime Atmosphere We all know Gordon Ramsay is a master chef, but did you know he’s also a master of feng shui? Or, at least, something like it? At Gordon Ramsay Steak, the food is exceptional, which is expected, but it’s the atmosphere of the restaurant that elevates the experience to a new level of dining. While addressing the attendees of the restaurant’s seventh anniversary last year, Ramsay spoke of how aspects like proper lighting and décor are crucial, for they’re likely to influence how you’ll feel about your meal. And he’s right—the effect is most favorable. Once walking through the Chunnel, a symbolic walkway that transports you from Paris Las Vegas to Ramsay’s England, dim lighting and sleek, modern décor help put you in a mood that confirms you picked the right place to dine. The comfort the space exudes causes you to trust Ramsay’s crew from the start. For the perfect meal, start with the crisp heirloom tomato salad, move on to Ramsay’s signature beef Wellington, pair with sides like the rainbow carrots and mac and cheese, and finish with the decadent sticky toffee pudding. –Alex Haase Paris Las Vegas, 702.946.4663

Maine Attraction

Rich in Flavor If you’re in the mood to go old school, hit up Carbone. This restaurant channels the Italian joints New York is famous for. You’ll dig its plush, high-backed booths and velvet curtains around the dining area, as well as the eclectic playlist. Start with a classic cocktail like the Negroni, simply concocted with London gin, vermouth and Campari, or a fancy one like the White Lady, with gin, orange liqueur, vanilla and egg white. Num-num. Add an

.12. 8.30.20 LAS VEGAS MAGAZINE

appetizer, such as the carpaccio Piemontese, which Carbone is known for—thin slices of lean beef, with a truffle emulsion, mushrooms and arugula. Another Carbone classic, the rigatoni in spicy vodka sauce, lives up to its name. You’ll probably suss out Calabrian chili, as well as plenty of onion. And a medium-rare ribeye Diana with a cacciatore-style sauce may float your boat as well. –Nina King Aria, 877.230.2742

If you can’t get up to Maine this year for a seafood splurge, head over to Lobster ME. You’ll find the freshest lobster, crab and shrimp products around. The signature lobster rolls are highly recommended, from the chilled Maine roll with light mayonnaise and special seasonings, to the warm Connecticut roll served with warm butter and special seasonings. For the meat lover, order the surf and turf sandwich, a blend of shaved Angus steak and chunks of lobster and crab, topped with lobster bisque, ranch and green onions. Yum! –Ken Miller Miracle Mile Shops at Planet Hollywood Resort, 702.562.7837

Feels Like Five O’Clock The ultimate goal while on vacation is to achieve the feeling that time has stopped. Singer Jimmy Buffett seems to know this feeling well, as it is the bedrock of his philosophy, his music and the Vegas restaurant Margaritaville. There, it takes the expression “it’s five o’clock somewhere” one step further; rather, it’s five o’clock all day long. Thus, it’s the perfect spot on the Strip to spend an hour or two (but, hey, who’s counting?).

Meet a top ambassador of The STRAT Can you remember ever having met a vice president of a casino hotel while staying in Las Vegas? Most would answer no. Well, that’s not the case when you visit The STRAT—especially if VP and general manager Stephen Thayer has anything to say about it. “With the way things are right now, the current environment—employee interactions with guests play a bigger role now, in my opinion,” Thayer says. “Even though it’s always been important, now it’s very important; it’s the entire staff’s role now, including myself. … Our roles are being ambassadors of The STRAT and making sure people have safe experiences.” Guests can see Thayer walking the casino floor daily, something he really enjoys and considers a top priority of his job. He interacts with guests and welcomes them to the recently renovated property. “The whole look and feel is completely different—it’s no longer the Stratosphere; it’s now The STRAT,” he says.

Thayer knows a little something about renovations, as well as openings and managing properties. The Delaware native has held top positions for more than two decades in the hospitality and gaming industry. He’s spent more than 15 years with the Caesars corporation in both Vegas and Atlantic City, and more than a decade with the non-gaming Wyndham International hotel group running properties in states like Arizona and Pennsylvania. Last year, he was itching to come back to Vegas, and joined The STRAT in October. While his role does require him to oversee operations, finances, branding and growth of the property, Thayer is quick to point out that “My door is open to everybody. I say hello to everybody that I can, make eye contact. I’d say I’m a friendly leader and I like to be on the floor with guests and employees. … I like to lead by example—not sit in my office telling people what to do.” –Kiko Miyasato

simply prepared Amalfi Coast seafood specialties, and ’round-the-clock favorite Pantry (702.696.7050), where buttermilk pancakes, chicken-fried steak or a bagel with lox could be your pick for breakfast, lunch or dinner. Global chef José Andrés’ acclaimed Bazaar Meat at Sahara Las Vegas (702.761.7610) has been open again since June, but there’s a brand-new dish on his menu and it’s already creating quite the beefy buzz. Bazaar’s first-ever burger is available at the handsome Bar Centro, and it’s made from a unique blend of wagyu beef short rib and brisket. Topped with shredded iceberg lettuce, special sauce and pub cheese on a homemade bun and served with fries and house-made ketchup, it might remind you of your favorite fast-food flavors. But this is no drive-thru snack. Also new on the Strip are the enhanced happy hour offerings at STK at The Cosmopolitan (702.698.7990), where half-price specialty cocktails and select wines are available daily between 4:30 and 6 p.m. Bold bites to light up the afternoon include the signature Lil’ BRG sliders with truffle fries, roasted shishito peppers, beef or tuna tartare and the memorable jalapeño-pickled shrimp cocktail. Speaking of shellfish cravings, there are new and newly opened seafood spots sprinkled around the valley, on and off the Strip, that deserve your attention. The often-overlooked Oyster Bar at Harrah’s (702.369.5000) offers a lively and casual environment and a menu stacked with favorites like New England clam chowder, Maryland crab cakes and a creamy lobster and shrimp pan roast with rice or pasta. For Labor Day, midday means a meal to chill With Labor Day around the corner, you may wonder what to do in Vegas. Well, we’ve got some very tasty ideas. A weekend brunch is never a bad idea, with delicious cocktails and dishes ranging from wholesome to whimsical. Space is limited, so make your reservations now!

At Hearthstone Kitchen & Cellar (Red Rock Resort and Casino, 702.797.7344), brunch on the outdoor patio makes the morning and afternoon fine. Pair dishes like breakfast pizza; chicken and waffles; or an Impossible burger with libations such as the Aperol spritz or the Heat of Passion,

which gets a kick from habanero and a Tajin rim. Bottomless mimosas are also nice! Get an impressive seafood tower with shrimp, lobster oysters and crab—share if you must—at Bottiglia Cucina & Enoteca’s (Green Valley Ranch, 702.617.7190) Sunday brunch. Not only are there break-

fast faves like French toast and lobster eggs Benedict, but you’ll also find Italian specialties including chicken piccata and tagliatelle bolognese. Latin-inspired dishes make brunch at Chica (The Venetian, 702.805.8472) most pleasant. Heavenly corn cachapa pancakes with tropical toppings, buñuelos (like doughnuts), arepas, pastries, carne asada tacos, sunny-side up eggs and yucca hash are just a few of your choices. Mimosas, fresh juices and bloody Marys round out the offerings. Although Salt & Ivy (Aria, 877.230.2742) doesn’t offer brunch per se, its breakfast and lunch offerings make it seem like brunch every day. Huge Dutch baby baked pancakes are stars of the morning scene— although a kale and mushroom fritatta is close behind—and a poke bowl shepherds you into the afternoon. Pair your morning

repast with a build-your-own bloody Mary or endless prosecco. Locals favorite Sparrow + Wolf (4480 Spring Mountain Road, 702.790.2147) announced its Sunday brunch at the end of July and it’s mega-cool, with innovative dishes like a duck confit cinnamon roll with duck fat frosting, and the Smash Bang burger with smoked cheese, wood-fired onions and scallion aioli. Across from the Fountains of Bellagio, Hexx (Paris, 702.331.5100) offers brunch daily from 8 a.m.-3 p.m., with such delights as a jumbo lump crab cake, a Cinnaroll waffle with cream cheese icing, brioche French toast, shrimp pizza and a prime rib French dip. Bottomless mimosas, several oversize specialty cocktails and a variety of champagne and wine are perfect accompaniments to the show across Las Vegas Boulevard South.

Wicked Spoon buffet at Cosmopolitan (The Cosmopolitan, 877.893.2001) is one of only a few buffets open in Las Vegas, and boy, buffets and brunch go together like cheese and crackers. Once you arrive (dining is limited to two hours), you’ll make your way through the line in a socially distanced manner and the staff will hand you dishes such as smoked salmon, Nutella toast, eggs Benedict, green chili tamales and Tandoori roasted chicken, as well as ice cream, macaroons and bread pudding. In Las Vegas’ suburbs there are many excellent restaurants, including Americana (2620 Regatta Drive, Suite 118, 702.331.5565), where chef Stephen Blandino’s Sunday brunch is offered lakeside from 11 a.m.-3 p.m., with specialties such as shrimp and grits, a creamy polenta with pickled ramps and brioche French toast with berry jam and maple syrup.

Cutting Edge

Summerlin property combines great location with high-end amenities To say that this fully furnished model at Granite Heights in Summerlin has a “wow!” factor is a considerable understatement. From its magnificent Strip views to its countless amenities, this property, built by Toll Brothers and listed by Paul Conforte with Xpand Realty, incorporates several cutting-edge concepts into one comfortable property. This 3,496-square-foot, one-story home combines modern and contemporary design throughout. Soaring ceilings in the two-story

great room (16 feet high!) offer a fantastic space to just meditate, read or engage in some good, old-fashioned conversation. Those ceilings contrast with elaborate glass sliding doors, which lead to a backyard (don’t worry, no rear neighbors to spoil your privacy) with a built-in barbecue, disappearing edge pool and private in-ground spa with waterfall. This is the kind of space where you’ll probably want to spend most of your time—it’s simply too nice to ever want to leave!

If you’re into entertaining, get ready: The courtyard and covered patio, complete with lots of seating, guarantee your party guests will be more than comfortable whenever you feel like hosting. The kitchen includes a large pantry area, perfect for stocking up for those large parties, and the two-story dining room (also with a 16-foot-ceiling) is a great space to bring the party inside on those hot summer nights. It also features an island with two sinks for a high level of convenience.

With four bedrooms, this is a perfect space for the average family. And with four and a half baths, there’s never going to be a fight to see who gets the first shower. Every room throughout this gorgeous home has custom cabinets to maximize storage space. However much you bring with you when you move, odds are you will have zero difficulty finding someplace to put it. Family visiting in from out of town? Problem solved. This model has a guest quarters with its own garage that has a door made of glass. (Just

in case you needed any more of a “wow!” factor.) The guest quarters also has its own private courtyard, separate from the rest of the house, allowing tenants to enjoy both the outdoor living space and interior living space. The real piece de resistance here is the master bedroom suite. In addition to a large walk-in closet offering all the space you’ll ever need for your wardrobe, the suite has a corner multislide door that opens to a magnificent view. To see this in action almost sells the house by itself.

It also has an upgraded bathroom with a large walk-in shower, large Roman tub and other impeccable touches throughout. Need more? How about easy access to Oak Leaf Park (complete with playground and pickleball court) and the Summerlin trail system? You’d also be in the district for top-rated Summerlin public and private schools like Bishop Gorman high school. –Ken Miller 6226 Petroglyph Ave., $2,299,995, 702.308.9670. License No. S.0071850

required to submit their plan for reopening to the

Commission have been implemented, with every-

thing from casinos to guest rooms covered, so you

what’s been done to make your experience safer.

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.

There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

LAS LASVEGAS VEGASMAGAZINE MAGAZINE 8.30.20 6.14.20 .35 .9.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

COVID-19. It’s also considerate of fellow guests and resort workers.

holding escalator rails or getting money from the ATM).

You’ll notice hand sanitizer stations. Give yourself a squirt before and after playing slots or the tables, and anywhere it seems you might need it (after touching elevator buttons,

6 feet from people other than your travel companions whenever possible. Common places that lines form will often be marked, making this easy. Be patient—even though you are 6 feet apart, you’ll still be moving.

Practice social distancing. Stay

Try not to touch your face.

Periodically, wash your hands for at least 20 seconds with soap and water, then rinse for 10 seconds. You may receive personal size bottles of hand sanitizer in your room. Take those with you and use whenever it’s not practical to wash, or a hand sanitizer station isn’t close.

Feel Your Way Do you know how they say that when you lose one sense your other ones are heightened? Check out that theory at Blackout Dining in the Dark (3871 S. Valley View Blvd Suite 8, 702.960.4000), where you’ll need to rely on just four main senses: taste, touch, smell and hearing. When you enter the restaurant for your meal, you’ll sign in and make your culinary choices, then a guide will take you to your table. And, yes, it’s completely dark. Initially, you may feel a bit intimidated, but you’ll find conversing with your companion is way more focused. You’ll get appetizers, main course and dessert, and it’s quite the adventure and a challenge to see if you can figure out what is being served without seeing it. The dishes are really, really good, and touch on those salty, sour, sweet, bitter, umami notes. It may seem like an easy thing, but it’s much harder than you think to discern the difference between grains and pasta when you can’t take a look. Your server will guide you with clues to where your meal is, but it’s up to you to figure out how to use your silverware. –Nina King

Feel Like a Kid Again Some people refer to Las Vegas as Disneyland for adults, but even when you’re an adult, sometimes you still want to act like a kid. There’s no better place to relive that childlike nostalgia than at The Big Apple Coaster and Arcade (New York-New York, 702.740.6969). In the arcade, play video games like NBA Jam, old-school arcade classics like Skee-Ball and air hockey, or try to win some big-ticket prizes by playing Bust the Balloon or Stacker. You could easily spend all day here without realizing it. As for the coaster, you better have a strong stomach. Starting off with two huge drops, you’ll soon be twisting and looping alongside New York-New York’s pseudo-Manhattan skyline. The roller coaster was also the first in the world to feature a heartline twist and dive maneuver, which flips the car completely upside down and settles into a gut-wrenching drop. So, sit back, channel your childhood, and enjoy the ride. –Alex Haase
