From the Editor A Universal Constant

This has been a year of divisiveness, to put it mildly. Everywhere you turn, people cannot seem to agree on anything. Some of it is, of course, political, so it only makes sense that a divide would exist there. But in other areas, it’s a true head-scratcher. I never in my lifetime thought people would return to the “world is flat” theory that was debunked centuries ago, but we are in truly different times. You simply cannot assume that anything out there is a universally embraced principle anymore. But I’m going to be bold and suggest that there’s at least one thing we can all agree on: To paraphrase a lyric from the song in the musical Oliver!, food is glorious. There, I said it, and I’m not ashamed to say so. It’s glorious on so many levels—eating a delicious meal; smelling fresh bread cooking in the grocery store; looking at pictures of food on Instagram; sharing your amazing food experiences on Yelp; debating your favorite cuisine with other foodies; the list goes on and on. Food is a huge part of all of our lives. For many of us, it shapes who we are. Which brings me to this week’s issue. Las Vegas Magazine’s Kiko Miyasato reached out to some of the high-profile chefs up and down the Las Vegas Strip to talk to them about all things food, from their favorite dishes of all time to the best

compliment they ever received. To our delight, all chefs were quite candid in their responses (“Chef’s Table,” page 20), and we’re sure you’ll find plenty in the ensuing eight pages to entertain, enlighten and, in some cases, inform you. And do yourself a favor once you’re finished reading: Make a reservation for at least one of their restaurants. You won’t be sorry. But your food journey has just begun. This issue also contains several other restaurant highlights, from Virgil’s Real Barbecue at The Linq Promenade to a new supper club at Lavo at The Palazzo. In addition, we’ll take you on a tour of a great new restaurant at the Planet 13 Entertainment Complex: Trece. If you’re planning on shopping for some legal cannibis at Planet 13, you should definitely make a day of it with a meal there. And there’s so much more. We’ll acquaint you with some must-see attractions, including High Roller at The Linq Promenade, REAL BODIES at Bally’s, and HyperX Esports Arena at Luxor. These days, it’s truly hard to make sense of our country’s great divide. But you’re in Las Vegas at the moment, so it’s time to celebrate the things that bring us together. Bringing the Heat Whether it’s a drop of hot reaper salsa on the edge of a freshly made tortilla chip or a forkful of shrimp enchilada, each bite at Diablo’s Cantina is an explosion of flavor. They’re not holding back on spice either, because you can’t have diablo without a little heat, right? The restaurant has a fun party atmosphere, so starting with a cocktail is a must.

If the wide-ranging drink menu seems daunting, make it easy on yourself and order the house margarita, pictured (which can also be made spicy). Pay the extra couple of bucks to upgrade your tequila to Casamigos reposado. Then dive into the menu. Nachos are stacked high and drenched in cheese sauce, pico de gallo, guacamole and pickled jalapeño;

slow-roasted pork carnitas tacos are tender and topped with pickled onion and cilantro; and the three enchiladas (shrimp, chicken and beef barbacoa) are so good that it’s difficult to pick just one, so order the enchilada platter, where you can sample all three. But there’s no wrong choice here, because each dish is fire. –Alex Haase

Star Power Movie lovers rejoice! Planet Hollywood Restaurant has reopened, and the experience you remember—great food and lots of ultra-cool movie memorabilia—is intact. Cue the ’Cue

Restaurant offers up classic summer dishes Barbecue and all its associated flavors and side dishes are one of the prime pleasures of summer, and in Las Vegas, popular New York import Virgil’s Real Barbecue does it right. Virgil’s has plenty of drinks for you to enjoy, from the Bourbon-Berry Smash, with Old Forester, muddled strawberries and lemon, to margaritas, beer and an impressive range of spirits for sipping. Accompany your bev with “Trash” ribs (little morsels glistening with sauce), piled with hush puppies or BBQ nachos with Carolina pulled pork, pulled chicken, Texas brisket and jalapeños. For your entrée, if you feel like going light (ha!), order

a salad—a highlight is Virgil’s BBQ salad, lettuce and all its normal bedfellows, piled pulled pork, pulled chicken and brisket. That’s some kinda salad, indeed. But if you didn’t come to a barbecue joint for salad, indulge yourself with everything from Memphis-style pork spare ribs to a catfish filet. Get a combo and choose two meats, or get The Pig Out! delivered to your table—it’s got basically all the meats, side dishes and cornbread, which comes with all your meals, thank the lord (but if you want to swap and get buttermilk biscuits as a side, we can’t blame you). If you need a steak,

you’ll find a 20-ounce T-bone, 6-ounce ribeye or 28-ounce tomahawk, all chargrilled. For dessert, banana pudding is always a great ending to the meal, but apple pie, classic milkshakes and ice cream will also suffice. Take It for a Spin The huge round pods seem like something out of a sci-fi movie, but you won’t find any aliens here. What you will find on the High Roller are some of the best views in Vegas through curving glass walls on all sides. Take in Strip vistas like the Fountains of Bellagio and the Eiffel Tower, plus the mountains and skyline on all sides. You’ll barely know you’re moving during your half-hour rotation as the huge observation wheel transports you up until you’re 550 feet above the ground. Food and Fun For chef Michael Mina, having fun is as simple as having a wonderful meal. That philosophy is stressed in his restaurants here and around the world, and Mina has absolutely nailed the concept at StripSteak. Expect only the highest quality here, from the meal to the servers. You’ll be all smiles as you sample appetizers like “instant bacon,” featuring pork belly, tempura oyster and green cabbage slaw, and the fun continues with cocktails like the Gold Rush (Old Forester bourbon, honey syrup and

lemon) and sangria (Grüner Veltliner, Pavan, Cointreau and peach). Steak lovers will struggle trying to decide what to order, as Mina has packed the menu with several options, such as a ribeye, New York Strip, filet mignon and much more. But a prix fixe tasting menu makes the decision much easier. Tangerine Mojito “Most people that come in here are cigar freaks,” Fayerverger says. “They know their Scotch, they know their bourbon, but a lot of people come here for the mojitos, and cigars go good with mojitos.” Besides serving the classic mojito, Casa Fuente also makes a refreshing tangerine mojito, a mix of Botran rum, simple syrup and muddled tangerines, mint and lime with a splash of soda. (Fayerverger is right: This has to be one of the best mojitos ever, ever tasted!). Casa Fuente is currently serving sandwiches, too. –KM

Michael Fayerverger

If you love cigars, this is the man to know “Most of the customers that come, come to see me,” says Michael Fayerverger, general manager of Casa Fuente at The Forum Shops at Caesars. “We have a lot of very rare cigars that you can’t get anywhere and I kind of have a thing—everything is not always out on the shelf. I work in a special cigar store and I have things that kind of are tucked away in my closet, my cabinet … I get texts, emails, people asking if I’m here, because they know they have to see me to get the good stuff.” The good stuff, indeed. For 15 years now, Casa Fuente has welcomed cigar lovers to its intimate bar and lounge—filled with upscale furnishings and a flair of Cuban-inspired décor— plus a cozy patio and fountain out front. Fayerverger has been with the company for more than two decades, starting part time selling cigars wholesale to various spots along the Strip. Before he joined the cigar industry, Israel native Fayerverger, who was raised in Chicago,

was a sort of jack of all trades, from working in various industries like the fur and shoe business in his hometown to running Kmart stores, managing pawn shops, nightclubs and bars when he moved to Vegas in 1999. He worked with the Arturo Fuente brand part time, and when it was decided the company wanted to open its own brick and mortar, it was Fayerverger they wanted to put in charge. “Casa Fuente has become well-known with people around the world—we’re pretty famous,” he says. “After 20-plus years with the company, when you love what you do, you have no problem coming back every day and eventually what’s supposed to be a job isn’t a job anymore.” Asked if he plans on retiring from the cigar industry or if he plans on never leaving, Fayerverger says, “I will die in the cigar industry—I’m not going to retire. See the statue out there in the front? Hopefully they’ll put a statue of me right next to it.” –Kiko Miyasato

There’s even a selection of great pizzas, from a classic margherita with mozzarella, tomato sauce and fresh basil, to a keto pie with a cauliflower crust and topped with peppadew peppers, crispy bacon bits, black olives, wild arugula and a fig reduction drizzle. So good! Round out your experience with dessert. The gram matcha cheesecake topped with raspberry sauce is rich and decadent, while the house flan is a lighter, but still flavorful, option, topped with fresh seasonal berries and whipped cream. You could also go a little unconventional and get a smoothie—there are plenty of options available here, from strawberry peach to mango berry. My best meal recently was at Aponiente by chef Angel Leon in southern Spain— the menu was 100 percent local seafood and the experience from start to finish was the absolute peak of what we aspire to as chefs. As a chef, I found it humbling and

challenging—I’ve been doing this for a while now and it’s not too often that I say, ‘I have no idea how they did that,’ but that afternoon, course after course, I just kept saying, ‘Wow, this guy and his team are on a whole different level!’ (The other) is chilled, shaved foie gras with cucumber granita, crab, and tarragon at Crush restaurant in Seattle by chef Jason Wilson. This dish blew

my mind because it shouldn’t have worked—what a crazy combination of ingredients, temperatures and textures—I never would have put those together, but the result was spectacular. In the following years I’ve taken a stab at doing a version of this myself several times but I just can’t get the balance right: super frustrating for me, big props to chef Jason!”

Favorite dish at his restaurant: “Chef José has been doing the foie gras cotton candy for decades, and you’d think that this dish would be long in the tooth by now, but it just never fails. It’s so simple and lighthearted—almost silly, but it’s the perfect way to start off a meal.” Best piece of advice he’s received: “’You’re either gonna drive this bus or you’re gonna get dragged behind it.’ Basically, take charge, be aggressive, don’t wait for anyone, never get caught reacting, always keep plowing forward, retain the initiative, run your restaurant, be in charge and accept responsibility for everything.”

Best Advice: “Never get caught reacting, always keep plowing forward.” His best cooking compliment: “It’s corny I know, but no compliment is as good as stepping back for a moment and taking in a room full of people enjoying themselves and each other. As chefs, our job is not to seek recognition from strangers, our job is to throw a party and to make sure everyone is having a great time. The nuts and bolts of making that happen are what we get paid for and we each have a bag of tricks that we draw from, but they’re all a means to an end—when you’re doing it right, those strangers will become your friends and, at the end of the day, that’s why we do this.”

She would make this dish on special occasions, or if we had some extra chickens and I would get so excited whenever she would make this for us.” Favorite dish at his restaurant: “The A5 Japanese Miyazaki wagyu. It is full of flavor and chef Matt Hurley prepares it perfectly.” Best piece of advice he’s received:

“That ‘No’ is not an answer. You have to keep going and persevere. Patience is also one of the most important things. Be patient and good things will happen.” His best cooking compliment: “Longevity. Spago in Beverly Hills has been open for 38 years and Chinois in Santa Monica for 37 years. Staying open for this long, especially when it can be difficult for restaurants to stay open, along with constant competition with other great chefs and restaurants, longevity is the biggest compliment.”

(Executive chef, Jean Georges Steakhouse at Aria) Best dish he’s ever had: “The chilli crab from Jumbo restaurant in Singapore. It was my first time in Singapore and chef Jean-Georges (Vongerichten) took the team out to try the famous dish. It was sweet, savory, spicy and downright messy! The crab is presented whole, but precracked and you eat it with your hands. It is as much about the experience as it is about the crab. To top it off, the most addictive fried Chinese buns are served alongside to soak up the sauce.” Favorite dish at his restaurant: “The crispy sushi is popular with our guests, and one of my personal favorites at Jean Georges Steakhouse. It is prepared with hamachi, tuna and salmon atop fried golden

The short ribs marinated and smoked, then sliced tableside. We serve the meat with sides and sauces for you to make wraps. The meat on the bones are then mixed into a beef rice.

The short ribs are without a doubt the best dish on the menu and a can’t miss.” Best piece of advice he’s received: “’Don’t pursue shortcuts in your career. (Executive chef, Top of the World at The STRAT) Best dish he’s ever had: “To pinpoint the best thing I have ever eaten is not easy! I was fortunate to have a mother who was an amazing cook, and even though I haven’t had her food since she passed in 2012, she is responsible for making the few dishes I would identify as the best I’ve ever had. One of those includes her pozole—it was life changing! She used to create this amazing broth using pork neckbones and a couple of

pig’s feet, which would give it such rich flavor and an amazing texture along with that deep red color of the ancho, guajillo and arbol chilies. The intense flavors—finished with a garnish of radishes, cilantro, onions and shredded lettuce—were impeccable. I would always finish it with a spoonful of her homemade, fiery red chile de arbol salsa.” Favorite dish at his restaurant: “I am a huge fan of a properly

cooked, high-quality steak, and at Top of the World, I think we do that really well. Our 22-ounce bonein ribeye steak from Creekstone Farms in Kansas is my favorite cut of meat, as it is perfectly marbled and seasoned with coarse salt and fresh-ground Tellicherry pepper, then seared in our searing hot broiler. The preparation creates a flavorful crust, sealing all the juices and flavor inside this beautiful steak. Served with our creme corn

brûlée and you have a winner.” Best piece of advice he’s received: “Best advice I have ever received was as a young sous chef working for chef Martin Swift, who I’m very proud to call my mentor and a friend. He once said to me, ‘Treat your ingredients with respect and always cook with integrity,’ and those words have always stuck with me. He also taught me to never waste anything, pay attention to technique, taste everything, and if you make a mistake, own it. If you know you made a mistake and the dish isn’t right, don’t serve it. Your guests will appreciate it!”

I worked at a local independent restaurant and it was my first head chef gig, so I invited her and my family to dinner for her birthday. I walked to the table after they were done eating and she said she loved the food, but most importantly she said, ‘I am so proud of you! Keep working hard and you will get far!’ That made me happier than I could have imagined. I only hope I’m still making her proud.”

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.


There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

Feel Like a VIP At Carbone (Aria, 877.230.2742), it’s as if restaurant creators Mario Carbone, Rich Torrisi and Jeff Zalaznick took a New York Italian restaurant from the mid-20th century, put it in a time machine and transplanted it to Las Vegas. A captain is assigned to your table, and they attend to your every need and desire, providing you with detailed menu descriptions and more than a little personality in the process. You cannot go wrong with the appetizer menu here, but we suggest starting with the carpaccio Piemontese, featuring truffles, walnuts and mushrooms atop thinly sliced beef tenderloin, brushed with a white truffle emulsion. We’re particularly partial to veal Parmesan, and this version is pretty much the reason. It’s enormous and enormously satisfying, accompanied with cheese-crusted, deep-fried rib. If fish is more your style, the dover piccata, drizzled with a lemony brown butter sauce and finished tableside by your captain.
