From the Editor So Much To Do

Another week, another piece of great news. In addition to The Linq Hotel reopening its doors on Sept. 10, MGM Resorts International announced that Park MGM, the home of such hit shows as Lady Gaga’s residency, would be reopening sometime in October. Bit by bit, Las Vegas is on its way to becoming the experience you remember from 2019, one full of world-class restaurants, amazing cocktails, exciting attractions and, yes, even live entertainment—sort of. This week’s issue of Las Vegas Magazine is proof of how much there is to see, do, taste and touch while you’re in town. We’ve got so much packed into this issue that it’s hard to believe our entire Strip was shut down just mere months ago. Let’s start with live entertainment. Las Vegas Magazine’s Brock Radke scored an interview with music legend Bill Medley, who is taking his hit Righteous Brothers residency at Harrah’s online in a series of livestreaming concerts. (“Web Tide,” page 26). Let’s just say it’s nice to look forward to a live performance—sure, you can’t see him in person, but it’s a start! Then dig into managing editor Nina King’s look at some of the vegan options across the valley (“The Impossible Dream,” page 24). Even if you’ve never tried vegan cuisine, trust us: One visit to just one of

these eateries and you’ll be wondering why you waited so long to try it. The Strip is amazing, sure, but do not overlook downtown Las Vegas. Associate editor Kiko Miyasato gives you an itinerary of nine that is guaranteed to keep you busy during your entire stay (page 20). I’ve added a story of my own to this issue: A tour through the REAL BODIES at Bally’s exhibit (“Hearts and Souls,” page 22). You may have seen pictures from this attraction throughout the years, but until you actually experience it for yourself, it’s hard to express how profoundly it affects you—in a very good way. Elsewhere in this issue, you’ll find profiles of some of great Strip restaurants—Bobby Flay’s Mesa Grill at Caesars Palace, Smith & Wollensky at The Grand Canal Shoppes at The Venetian and The Palazzo, and Cornerstone at The Gold Coast—as well as attractions like Shark Reef Aquarium at Mandalay Bay, which just added a very cool VR experience to what is already a great afternoon of fun for the whole family. You picked the right week to visit Las Vegas. There’s no possible way you could do everything detailed in this issue’s pages, so bookmark this issue and use it to plan your return visit. The Right Amount of Spice When you hear the name Bobby Flay, can you immediately identify the culinary style that made him famous? Unless you’re a superfan of Flay’s, it’s not as easy as you might think, for he’s a straight-up New Yorker with a Northeastern attitude that suggests he became famous for slinging pizzas or serving up flavorful cuts of veal Parmesan. But, no,

that’s not even close. In fact, Flay made a name for himself by cooking up fiery Southwestern flavors. And, in Vegas, those flavors are on full display at Mesa Grill. One of Flay’s most popular dishes on the menu is the tiger shrimp and roasted corn tamale. But this is not your traditional tamale. It’s served nearly deconstructed, with a

generous amount of shrimp and roasted corn bursting out of the tamale, resting on top of a creamy corn-cilantro sauce. Other standouts include the cornmeal-crusted chile relleno and the New Mexican spice rubbed pork tenderloin. For dessert, try Flay’s chocolate sticky toffee pudding, served with ice cream and a salty sweet cajeta sauce. –Alex Haase

Tasty Return When The Mirage finally reopened last month, so did Tom Colicchio’s Heritage Steak, arguably one of the best steakhouses in Vegas. To welcome you back, it’s rolled out a three-course tasting menu (for an incredibly reasonable $68) that highlights some of the restaurant’s noteworthy dishes. A New Adventure

Virtual reality experience gives new meaning to swimming with the sharks There’s something new swimming around Shark Reef Aquarium, and you can be right in the middle of the action. The aquarium recently announced its newest attraction, the Undersea Explorer virtual reality theater from Immotion. Inside, you’ll find motion platform seating and a 360-degree, stereoscopic, virtual-reality experience. The theater features several different shows such as Shark Dive, where you can tag along with a marine biologist as he swims around hammerhead and tiger sharks. Plus, check out what a shark really sees while it’s cruising through the ocean (the camera was strapped to the dorsal fin of the shark).

That’s not the only show you can immerse yourself in the VR theater. Check out another marine biologist, who will show you all about the behavior of mother humpback whales and their babies. You can also get a virtual selfie in a shark cage and get a little education about humpback whales and sharks as well, including whale songs and real-time shark tracking. Immotion group commercial director Rod Finley said in a release, “We’ve created a safe, educational and adventurous way to explore underwater wildlife and hope that guests become passionate about oceanic conservation through this unique VR experience.”

The Undersea Explorer package is included with your ticket; seats and VR goggles are cleaned between each viewing, and 6-foot social distancing guidelines are in effect. You must be at least 5 years old to enter the theater. Shark Reef itself has adopted timed ticket entries, so be sure to allot time to include the Undersea Explorer before you head into the main attraction, which leads you through environments that host about 2,000 animals, from Komodo dragons to sharks, stingrays, sea turtles and even piranha. Classic Experience The term “hidden gem” gets thrown around a lot in this town, so much so that all the hidden gems have been exposed. And, in the digital age, there aren’t too many “best-kept secrets” either. Despite all the chatter, Cornerstone is a steakhouse that doesn’t get talked about nearly enough. Tucked away off-Strip, the restaurant serves up classic steakhouse fare in an environment that feels much like classic Vegas. You’ll first notice the lounge, sleek but also casual, where you can order a snazzy crafted martini. If you like yours dirty, the I Like it Dirty martini is quite filthy, mixed with New Zealand’s Broken Shed vodka, olive juice and Filthy brand olives. But if you’re more of a whiskey drinker, opt for the Sazerac, a classic New Orleans cocktail with rye, absinthe and Peychaud’s bitters. In the dining room, the menu is filled with favorites. A True Classic

Celebrate four decades of culinary greatness Smith & Wollensky are two names synonymous with a great steakhouse. So, were they two ranchers or rugged cowboys of the Wild West that joined forces to create the best cuts of meat? Nope. They were two names picked randomly from a phone book. First came the name Smith. The second shuffling of the pages produced Wollensky. And, in 1977, a N.Y. steakhouse was born. However, one thing that was not left to chance is the Smith & Wollensky dedication to offering the best in USDA Prime beef, rich and marbled and sourced from small family ranches with grain-fed, humanely raised cattle. Since its first restaurant, Smith & Wollensky has ventured across the nation and globe with outposts including Boston, Chicago, London, Taipei and, most recently, Las Vegas—in a two-story classic steakhouse.

Start your Vegas dining experience in the tavern-like lounge on the first floor and order an end-to-summertime cocktail like the Strawberry Sipper with Sobieski vodka, fresh strawberries, pink peppercorn syrup and club soda. Since it’s a classic steakhouse, indulge in all the standard cocktails here, too, like a martini, Manhattan, sidecar, mule, gimlet or gin sour. Move up to the second floor for dinner and peruse a menu packed with top beef selections, many aged for extended periods of time for tenderness and intense flavoring, so be sure to ask your server about the aging varieties offered. Classic steakhouse cuts include bone-in ribeye, bone-in New York cut, boneless New York Strip and filet mignon. Star entreés fall under chef’s recommendations like the coffee- and cocoa-rubbed 10-ounce filet with ancho chili

butter and onions, the Cajun bleu stacked filet medallions with bleu cheese and confit bacon and the 10-ounce filet Oscar with jumbo lump crab meat, asparagus and Hollandaise. For an over-the-top experience, there’s the 44-ounce swinging tomahawk ribeye from Snake River Farms—a dry-aged cut of American wagyu, carved tableside and served with beeffat potatoes. And what’s a classic steakhouse without some options from the sea? Loaded With Options Pretty much anything you order at Maxie’s is going to make for a good pic on your Instagram feed. The breakfast-and-lunch joint features stacked-high burgers; a blueberry chicken sandwich (blueberry jam and blueberry mayo); several versions of avocado toast giving that green goddess her proper worship; and loaded nachos with your choice of tortilla chips or fries. For breakfast, signature Benedict boxes come with two eggs in a brioche loaf—avocado pops up again in the guacamole and chorizo version. You can indulge in biscuits and gravy studded with plenty of sausage, or the waffle stack, which adds scrambled eggs, bacon and sausage to the base. Fruity Pebble French toast is a wonder to behold, with Fruity Pebbles inside and rainbow chocolate, cereal, cream cheese and whipped cream on top. Or try the cotton candy pancakes—four cakes with mixed berries inside, all stacked up and covered in cotton candy cream cheese, whipped cream and cotton candy. Legendary Fall Do you feel sort of on the edge with this whole quarantine thing and need a little something to put some pep in your step? Well, relief is just a jump away with SkyJump Las Vegas at The STRAT, where you literally leap from The STRAT tower and fall 829 feet at 40 mph to a landing area below. The feeling you’ll get is exhilarating, and a little out of control, but the descent is carefully controlled so that you slow down to make an easy landing. Go Clubbing Sure, golf is the name of the game at Topgolf Las Vegas, but the true sport is socializing. It’s the perfect place to bring your family, enjoy some fresh air, snack on delicious small bites and work on your golf swing. It’s also one of the better spots for socially distanced entertainment, as the hitting bays are spread 11 feet apart, allowing enough space for groups to play safely and comfortably.

The game is like a driving range on steroids, more fun than just hitting balls. In the distance, there are multiple targets ranging from large to small. Yancy Perez

A journey from the kitchen to the front of house Learning to cook his grandmother’s Cuban food was always a passion for Yancy Perez. “I would watch my grandma cook and write down on a little notepad the recipes, and I’ve just been trying to perfect them,” says the Miami native, who was raised in Las Vegas. It’s those cooking traditions that inspired Perez to go to culinary school and start his career as a chef for various restaurants across the Vegas valley. In 2010, he got the call to go work as a chef at Border Grill at Mandalay Bay, but the offer actually turned into a manager position of the Mexican eatery created by celebrity chefs Mary Sue Milliken and Susan Feniger. After four years, Perez left to manage other restaurants in the city, and it was during that time that he developed a passion for managing restaurants instead of cooking in them. Almost three years ago, Perez got an offer to come back to Border Grill as the general manager, and that’s where he’s been working since.

“It was not only a homecoming with Border Grill but Mary Sue and Susan hold a very special place in my heart for what they do,” Perez says. While he loves hosting a great time for his guests, Perez still gets to exercise his creative side. “I love food and I love to create,” he says. “And now I’m using my creativity more on the cocktail side.” Already a certified cicerone and currently pursuing his tequila certification, Perez has helped create a dozen new cocktails for the Border Grill bar program. He’s also responsible for expanding the Border Grill brand by helping build new outposts inside Allegiant Stadium and the Las Vegas Ballpark. Does Perez ever plan on going back in the kitchen? “I cook at home all the time—that I love to do. But managing this restaurant, I’ve worked my entire career to get to this position. This was the end goal. I love being on the floor and being in tune with my guests—welcoming them to my restaurant.” –Kiko Miyasato

Feel connected with everything at REAL BODIES at Bally’s Did you know that the saliva you produce over a lifetime can fill two swimming pools? It’s likely not something you ever even consider as part of your everyday life, but once you step into the world of REAL BODIES at Bally’s, it’s all you want to think about. This exhibit, which explores the human condition, is designed to really make you stop and ponder what our existence on this planet is really about. And it succeeds wonderfully.

BODIES is separated into various sections, each dealing with different physical aspects of the human body—circulatory, muscular, nervous, etc. The exhibit begins with a coffin and a cabinet with different bones, including skulls, teeth, small hand bones and others. Right from the beginning, you start to feel an emotional connection to what’s around you; everything in BODIES has a connection to the past, and what we’ve been able to learn about ourselves from the experiences of the past. True, some of that is purely clinical (“There’s enough carbon in the body to make 9,000 pencils,” “The volume of air that lungs inhale daily can fill approximately seven hot air balloons,” and “The average speed of a sneeze is about 100 miles per hour”), but once you get into the real heart of BODIES—the preserved cadavers in various states of activity—you begin to feel an


incredible sense of connection, not just to the exhibit, but to everyone around you. Twenty different human forms were put through a process called plastination that allows an incredibly detailed look at different systems, from circulatory to digestive, not to mention muscular movement. Some are playing sports; some are dissected in half to get a better look at the head and neck regions; and others offer demonstrations on how bones mend. A particularly powerful section of BODIES is the “Beginnings” gallery, which contains several displays of fetuses in various stages of early development. There are also sections devoted to relationships, love and death. BODIES is like no other exhibit you’ve experienced. It will stay with you long after you’ve left Las Vegas. And there’s a recent addition to BODIES: COVID-19 content, including 3D printed

COVID-19 virus models and a short film explaining how the virus reacts to your body and how it is spread. As you make your way through the various sections, you’ll be able to read quick facts about the virus and how it affects each of the different body systems. The content was created with the assistance of Dr. Anna Q. Yaffee, who works as an emergency medicine physician and epidemiologist in Atlanta. “I am excited to share with the public the amazing work that Dr. Yaffee and our team created to enhance the exhibition in an effort to answer everyday questions about COVID-19,” said CEO of Imagine Exhibitions Tom Zaller. “Our goal is to share with people the current findings about how this new virus affects the different systems of the body ... The hope is that we all come out of the exhibition knowing a little more than when we went in.”

Just a few years ago there were only a few vegan restaurants in Las Vegas, and plant-based options on menus were pitiful, consisting of limp asparagus and carrots, or salad with balsamic vinaigrette. Getting a decent vegan meal seemed impossible. But now the impossible has become, well, The Impossible! These days, many restaurants offer vegan (and vegetarian) menus, and the number of restaurants in the valley continues to grow. Here are just a few of the places where you can go beyond those tired veggies and into a new realm. Let’s bite into what has become the poster child for vegan meats, the Impossible Burger. Find it at Hearthstone at Red Rock Resort (702.797.7344), where you can get the monster meatless burger for dinner or weekend brunch. If you want to try the other trendy faux burger option, Hubert Keller’s Burger Bar at The Shoppes at Mandalay Place (702.632.9364) offers a Beyond Meat burger. Both options emulate the look, taste and mouth feel of hamburgers and can be found at many places in Las Vegas. David Chang’s new Moon Palace at The Palazzo (702.607.3060) offers Impossible sliders, while even White Castle at Casino Royale (702.227.8531) gets in on the burger action with veggie sliders. If it’s Mexican food you crave, you’ll find many vegan options, such as in the Arts District’s Tacotarian (725.251.3853),

where you can find an enormous number of tacos, from carne asada to plantain. Hussong’s Mexican Cantina at The Shoppes at Mandalay Place (702.632.6450) features a full vegan menu, and Pancho’s Vegan Tacos (702.898.9001) will make up a seriously rocking, huge plate of carne asada fries for you. Umm, umm, spicy! For nachos, Nacho Daddy at Miracle Mile Shops at Planet Hollywood (702.462.5000) has a delicious plate with our old friend Gardein Chick’n, plus a boatload of other options. Chef Stacey Dougan piles it high with her Nachos Grande at her Simply Pure at Container Park in downtown Vegas (702.810.5641), featuring a beef-style protein, cheddar sauce, sour cream and pico de gallo. Fancy pizza? Many pizza joints offer plant-based pies, from Slice of Vegas at The Shoppes at Mandalay Place (702.632.6470), with a vegan supreme pie and a full vegan menu, to Evel Pie (702.840.6460), where the Viva Las Vegan is similar to your basic cheese pizza, with vegan mozzarella and tomato sauce. Two locals favorites recently announced new menus for the fall, including a lovely vegan menu at restaurateur Elizabeth Blau’s Honey Salt (702.445.6100). I’ll gladly take the asparagus here! At The Stove in Henderson (702.625.5216), the Beyond Meat bratwurst and “eggs” gives you a solid breakfast option.

And those locals options just never seem to end, with Chef Kenny’s Asian Vegan Restaurant (702.889.0939) cooking up a freaking amazing crispy beef and broccoli, plus sushi! Violette’s Vegan (702.685.0466) offers a diner-style menu in a pretty space, and recently added a weekend brunch. For Italian cuisine, take the drive to Tarantino’s Vegan (725.777.3888), a family-owned restaurant with all those Italian staples, like eggplant and Chick’n Parmesan, meatball sandwiches and a build-your-perfect pasta bar. Whether you are staying on the Strip, or venturing out to explore the valley, you’ll find these plant-based restaurants are worth the drive.

The Righteous Brothers, who immortalized such songs as “Unchained Melody” and “Ebb Tide,” became the first Las Vegas Strip headlining act to take their show online this month when Bill Medley and Bucky Heard, who have been starring at the Harrah’s Showroom since 2016, launched a special series of livestream shows from popular off-Strip venue The Space. The unique musical productions continue Sept. 23 and 30 (tickets available at thespacelv. com). Rock and Roll Hall of Famer Medley, who turned 80 this week, took some time to get us up to speed on this exciting new endeavor, another interesting phase of his legendary career. The pandemic has changed so many things for so many people. I’m sure you never thought you’d be doing payper-view livestream shows from Las Vegas in 2020. This is all brand new to me, but it’s a different day and all performers, everybody is just trying to reinvent themselves in some way to stay busy and stay active. This is the longest I’ve been out of work in 60 years. It’s really tough. These are the strangest times. It will be interesting, once this is all over, what kind of reality we get back to. I’m sure it will be different

for a while and then hopefully everybody will get back to normal and want to come to Vegas and see shows. You have been very busy preparing this new kind of show, which you and your singing partner Bucky Heard turned around very quickly after connecting with the people at The Space. It did come together quickly, but everything Bucky and I have done since we reformed the Righteous Brothers about four and a half years ago has been that way. We just see

something we want to do and how we want to do it and just go for it. I’m kind of a trigger puller, which is probably a good and bad thing. It’s a lot to take on but we’re excited about these shows. You’re bringing in some special guests and incorporating a lot of behind-the-scenes storytelling as well. Why is that important to you? I’ve been really fortunate to have this pretty incredible life and history and got to know a lot of wonderful people and do a lot of wonderful things, so


it’s fun to tell those stories. But more importantly, I’ve been finding out in the last few years that people really love the music and want to hear the music, but they really want to know what you were thinking when you recorded those songs, or how you got to that song and what you were going through.

Frank Sinatra brought Bobby (Hatfield) and I to Vegas for the first time in 1965 at the Sands hotel. Elvis Presley was a good friend. And we went on the first American tour with the Beatles and the first Rolling Stones tour. There are just a million things I think people love to hear about. You have a long history of performing in Las Vegas as a solo act, too. What was it like to transition from that segment of your career to becoming a duo again with Bucky at Harrah’s? It was a lot easier and more comfortable than I thought it would be because Bucky is such a pro, such a wonderful guy and a great singer. He’s a hard-working kid. Obviously I had years and years of being with Bobby, and it really wasn’t all that different being onstage with Bucky and performing as the Righteous Brothers. It was a little like going home. Being on my own as Bill Medley was a little tougher. You’re up there by yourself, which is fine, but I guess over the years I got so accustomed to having a partner and bouncing things off someone, and getting back to that felt really good. I’m sure you’re both very anxious to get back onstage. One of the main reasons we reformed was because we had that offer to come to Vegas for what started as a three-month engagement. It just worked out and it was pretty amazing, and it’s such a great showroom. We love it. It’s not too fancy, it’s just kind of a soulful place and the crew there is phenomenal. We are thrilled to have the opportunity.

Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.


There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

Magical Time One of the most unique attractions in Las Vegas has to be Siegfried & Roy’s Secret Garden and Dolphin Habitat (The Mirage, 702.791.7416). The outdoor nature area contains pools which are home to several generations of dolphins, including Bella and her daughter, Lady Ace, who was born about a year ago. Above ground, watch the dolphins swim and frolic and through underwater viewing portals. For an additional cost, you can participate in an up-close meet-and-greet program and get printed and digital photos with one of the dolphins. It’s a memory to cherish. In the big cat area, you’ll see a variety of white lions, white tigers and leopards hanging out in their daytime enclosures, which emulate a tropical environment, with waterfalls, misters, rocks and grassy areas.
