From the Editor An Exciting Month
This is a very exciting month for Las Vegas. In addition to the reopening of many more properties, including Park MGM, the Four Seasons, Tropicana Las Vegas and OYO Hotel & Casino, October brings the arrival of downtown’s first from-the-ground-up hotel/casino in more than four decades: Circa, built by Derek Stevens, who tourists and locals alike know as the owner of downtown’s The D (named for Detroit, where Stevens is from). Circa promises to be a must-visit property when it opens on Oct. 28, and a big part of that appeal will be its restaurant lineup. One of its undeniable highlights will be chef Barry S. Dakake’s steakhouse, Barry’s Downtown Prime. In this issue, associate editor Kiko Miyasato snagged an interview with Dakake (“Prime Time,” p. 20), and after hearing what he has to say, we cannot wait to be among the restaurant’s first customers. Odds are you’ll be a bit hungry after reading chef Barry’s Q&A, so we’ve got you fully covered, regardless of your particular tastes. For starters, Las Vegas Magazine’s Alex Haase has rounded up nine burgers you want to be eating right now ( p. 22). You’ll likely have a difficult time choosing which one, but the good news is that there are no wrong choices. Can you tell we love writing about food? If you need further convincing, check out
managing editor Nina King’s story on al fresco dining options in Las Vegas (“Fresh Air,” p. 26). Yes, when it isn’t summer in Las Vegas, the weather is pretty darn awesome, and you owe it to yourself to take advantage with some patio dining. Again, lots of choices, all of them great. If you’ve been reading my editor’s notes of the last few months, you’ll know that I’m really, really, missing our big-name entertainers and shows. So, to both remind you of some of the amazing entertainers who are on hiatus as well as give you some ideas of how to spend your entertainment dollars when you return, I’ve compiled a list of some shows and entertainers I can’t wait to see again (“Setting the Stage,” p. 24). Even if they are dark, it’s still nice to see these familiar faces and productions back in the pages of our magazine. Elsewhere in this issue, there’s so much to digest: Thrill seekers should head straight to SpeedVegas, Skydive Las Vegas and the FLY LINQ Zipline; those looking for some great sights should check out the Wildlife Habitat at Flamingo and the Grand Canyon, courtesy of Gray Line; and shoppers can hit Fashion Show and the Guinness Store. As exciting as Las Vegas is now, it’s only going to get more so in the coming months. We hope you’re here to share it with us.

The Glide of Your Life It’s amore! Clamber into a gondola ride at The Venetian for a fabulous tour through the romance and glamor of Italy, which at present is a little hard to find in person. But here in Vegas, that ambience is abundant. Board your craft at the dock for either an indoor or outdoor excursion through the canals, where you’ll glide under bridges and nod to patrons of cafés tucked along the cobblestones. To cap the experience off, your gondolier will let loose with a song or two on the way. And if you need a little dramatic flair in the day, get to the center by 9:50 in the morning, when a whole team of gondoliers marches from the gondola turnaround, singing all the way. Catch them again at 4:20 p.m. Rides in the gondolas start at 10 a.m. for both indoor and outdoor routes, and run well into the evening hours. And although we recommend taking your significant other, it’s also a neat thing for the kiddos to experience. Who knows? Escape for a While These days you’d like to get away. Some days, perhaps, you’d even like to fly away. Who knew life would ultimately feel like a Lenny Kravitz song? But one place in Vegas where you can both get away and fly away (well, sort of) is at the FLY LINQ Zipline. In fact, it’s become such a hot spot recently that the attraction expanded its hours to 4 p.m.-midnight Thursday through Monday. And it’s not difficult to see why

business is booming. Once you reach the top of the 114-foot launch tower above The Linq Promenade, you’ll have an amazing view of the Strip. From food and drink to ambience, venue is all-around impressive One look at the foliage billowing out of Vanderpump Cocktail Garden and you might wonder if it’s a hipster version of Rainforest Cafe. It might seem intimidating, but don’t worry, you’re cool enough to go inside. You can tell them Las Vegas Magazine sent you. Yet, that might not get you in the door. As if it were one of the hottest nightclubs in Vegas, there’s typically a line to get inside, with two imposing men in suits blocking the entrance. So, you may have to wait outside awhile before grabbing a table or a seat at the bar. Or you can purchase a “VanderPass” for $25, which ensures that a spot will be waiting for you inside the lounge. It’s well worth the investment.

But no matter how long you wait, you’ll be glad to step inside, because the space is stunning. Fresh flowers and plants abound throughout, while elegant decor and rustic furniture provide a cozy vibe. It’s so comfy inside that it’s tough to leave. (That might explain the long lines.) Another reason why you’ll want to stick around is because the Vanderpump menu is on point. Fancy specialty cocktails fill the menu, ranging from twists on classics like an Old-Fashioned to signatures like the Matcha Matcha Man, a blend of Vanderpump vodka, matcha, mint, lemon, ginger liqueur and aquafaba. Some cocktails even match Lisa Vanderpump’s reality show persona, like the Checkmate Bitch, which is
inspired by the phrase she uttered regarding one of her memorable run-ins with Faye Resnick on The Real Housewives of Beverly Hills. The drink is sweet and spicy, mixed with hot vodka, jalapeño liqueur, grapefruit liqueur, pineapple, vanilla citrus, Angostura bitters and pink peppercorns. Then there are the small bites. Particular highlights include the Manchego cheese-stuffed bacon-wrapped dates, the crispy chicken sliders and the goat cheese balls, served with a small Belgian endive salad on the side. Animal Attraction An unassuming enclave, the Wildlife Habitat almost begs you to ask, “Am I there yet?” If not for the colorful denizens hanging around, the habitat would have seemed like just a beautiful gateway to the pool. More than 300 birds reside on the 4-acre facility, with paths meandering throughout. You could spend a good amount of your day here and not realize it. Regardless of any imagined destination, you’ll quickly come to realize you’re right where you should be. A swan dives into the water for an early dinner. The sacred ibis, regarded as such for eating crop-devastating locusts in ancient Egypt, wins the unofficial award for longest bill, while the Chilean flamingos provide a huge amount of color. A Dining Homage
Plaza steakhouse is a nod to mayor and classic Las Vegas The day Oscar Goodman left city hall after spending 12 years as mayor, he went over to the Plaza to discuss lending his name and personality to a new restaurant. During his tenure as mayor, Goodman was part of creating a downtown renaissance, and now was his chance to leave a personal mark on the city. Nearly 10 years later, Oscar’s Steakhouse has become a downtown dining destination that’s an upscale nod to oldschool Las Vegas. Taking the escalators up from the casino floor, guests arrive at Oscar’s and are first hit with views of a beautiful wine room and a wall of fame—pictures of Goodman with celebrities, presidents and sports stars. Then there’s the impressive bar and lounge area (which guests can sit at now that the city’s coronavirus restric-

tions have been lifted for service at bars) with its classic design. Here, start with Goodman’s own signature cocktail, one that he drinks personally, the Hizzoner. Other fun-named cocktails include the Defendant, the D.A. and the Consigliere—all nods to Goodman’s time spent as an attorney to the mob. The dining room, under the Plaza’s famous glass dome, is an impressive and intimate space with views of the famed Fremont Street Experience. Sit back in a cozy booth and start your dinner with the hearty and rich Crazy Phil’s onion soup, topped with melted Gruyère cheese, or go lighter with the Cardini’s Caesar salad. Steaks are served á la carte and include cuts like filet
mignon, New York strip, prime rib and Goodman’s personal favorite, the 24-ounce bone-in ribeye. A View and a Thrill

It’s the classic dad joke: Why would you jump out of a perfectly good plane? Skydive Las Vegas will show you why. The exhilaration that you’ll get from the initial jump may leave you slightly breathless, but the views you’ll get when you and your tandem instructor free fall, then float after your parachute opens, are simply incredible. The desert and mountains of Nevada and Boulder City, Las Vegas cityscapes, Hoover Dam, the Colorado River and more will leave you in awe. Before your jump, you’ll get some safety and operational information from your instructor. Then you’ll don your jumpsuit and goggles and head up. There are height and weight requirements, so do check those before booking. Sandals and boots are not allowed. Skydive Las Vegas, which was founded in 1993, features state-of-the art chutes and a special Automatic Activation Device, in case anything should happen to your instructor, who will normally pull the ripcord. You can get picked up by shuttle on the southern end of the Strip, or drive to Boulder City Airport yourself, where the company’s planes depart. It’s an easy half-hour or so drive from the Strip, and the landing area is in the same area. –Nina King

Heritage Manhattan In Hink’s opinion, if you’re going to have meat at Tom Colicchio’s Heritage Steakhouse, then the Heritage Manhattan cocktail is the way to go. It’s mixed with Redemption Rye and Carpano Antica vermouth. The special touch—one that lends a smooth sweetness and smoky flavor—is the hickory-smoked cherries that are smoked in the kitchen. Elisa Hink
Being a part of a special history and its future “I’m an industry kid,” says Elisa Hink, director of restaurants for The Mirage. Born and raised in Las Vegas, her dad worked at The Mirage and her mom worked at Treasure Island. Although she studied history at UNLV and planned on being a professor in the subject, she found that she, too, loved working on the Strip. “Every job I’ve had has been on the Strip,” Hink says. “I found out I liked being of service to people.” She’s worked retail and on the hotel side, but, it was in 2004 that “I first fell in love with food and beverage when I was a host at Prime (at Bellagio),” she said. Working at various properties along the Strip, Hink describes her love for working at restaurants with a clever analogy: “When you’re on the floor of a restaurant as a manager, you really get to be in it. You get together before the ‘show’ and say, ‘Everyone have a great show tonight.’ And the curtain raises and everyone gets to go to their parts and then the curtain eventually closes.”
In 2014 Hink joined The Mirage, helping to manage Tom Colicchio’s Heritage Steakhouse; in 2017 she was promoted to her current position. Now, as director of restaurants, “My main focus is making sure the leaders in each of my venues have what they need to succeed,” she says. “It’s about taking care of them and making sure they feel that they can get through their day and take care of their team properly.” When Hink looks back on her long, successful career, she says she’ll always have a soft spot for working at The Mirage. Not only does she remember the property growing up as a child, but, “There’s such a sense of pride working at The Mirage,” she says. “There’s a lot of really genuine emotion and general friendliness at this hotel—everyone that works here wants to have a good time. If The Mirage was a musical, it would be Singin’ in the Rain—we’re all just here and we mean it. This building is a living valentine to Las Vegas.” –Kiko Miyasato

Offerings include a 40-ounce tomahawk steak, Korean fried chicken, kalbi tacos and, for the lighter appetite, tuna tataki salad and prosciutto and mozzarella flatbread. Dessert? Try honey toast or a massive sundae. To accompany your dishes, you’ll find a range of cocktails and even bottle service. If you’re shy or just tone-deaf, the small gathering suites may be just what you need to feel
comfortable. And what will you choose to sing? With KAMU’s large library of hits to select from, you’re sure to find something appropriate (or possibly inappropriate; you’ll need to get feedback from your group to tell!). The venue also allows you to sing from your own music library, and even stream music from your phone. Two wildly popular dining destinations reopened recently at The Venetian. Buddy V’s Ristorante (702.607.2355) at The Grand Canal Shoppes serves some of the most craveable Italian comfort cuisine in Las Vegas and tops the experience with some of “Cake Boss” Buddy Valastro’s iconic dessert creations. Meanwhile, a legendary experience returns: Tao (702.388.8338) reopened on Oct. 1 just in time to celebrate its 15th anniversary as a game-changing dining and nightlife experience on the Strip. Las Vegas star chef Barry S. Dakake brings his culinary talents to new downtown hotel Circa through his new steakhouse, Barry’s Downtown Prime, opening Oct. 28. With Dakake’s big personality, big dreams and big flavors, the restaurant is poised to be a shining star of the property—and the chef couldn’t be more excited to share it with everyone. Las Vegas Magazine’s Kiko Miyasato recently sat down with Dakake to talk about this new endeavor. How does it feel to be opening a restaurant in the first brand-new downtown hotel built from the ground up in four decades? To work with Derek Stevens, who pioneered this whole deal, is simply amazing. I feel blessed. That’s the real word: blessed.
on my menu, from a child to an adult, to whatever flavor you’re looking for. From meat, fish, vegetarian, gluten-free, pastries. If you come into my restaurant and you can’t find something that you like, shame on me! And, if you can’t find it, you can ask and I can make it!
Why a classic steakhouse? America. Meat and potatoes. But let’s take it to the next level. Everyone feels comfort in a steakhouse. Most of the people know they can go into a steakhouse and the menu is going to be great. My steakhouse—there’s something for everyone
Why bring a vegan menu into that? The reason why is because I respect vegans. Some chefs get mad, pissed, and like, “Oh, here’s a vegan and I have to cook a special dish.” Well, hey, guess what? Vegans are human beings. I love everyone. I want to make people happy when they come
to my restaurant. I want them to experience Barry’s Downtown Prime, a steakhouse, and let them leave saying, “Wow, I just had the best vegan meal I’ve ever had in a restaurant.” Back to the meat. Tell me about the steaks. All my dry aging is being done by West Coast Prime Meats in Los Angeles. The type of cuts we have are filet mignon, bone-in ribeye, spinalis rib cap muscle, 40day dry-aged tomahawk steak, fresh bison—just so much to choose from. All the beef is USDA Prime. We’re also going to have American wagyu from Seattle, which is my favorite from Mishima Reserve; and we’re going to have Japanese wagyu. We’ve got a variety of meats and selections. I cook with the seasons, so every season I’m always changing things up. It’s going to be exciting. Every once in a while, I’ll do a prime rib special. I’ll take a whole ribeye and roast it slowly and serve it with peppered popovers, and it’s gonna be great.
Are there any recipes that you’ve been holding onto for a while that you can now bring to the people? We’re going to be doing some tableside cooking— those are all new recipes, classics. But I’m doing a twist on them. What would a classic steakhouse be without some tableside cooking? We’re doing a lobster flambé with some pink vodka sauce with some rigatoni. We’re going to be doing some bananas flambé. Baked Alaska, tableside. It’s going to be a lot of fun. You’ve run some of Vegas’ best restaurants. How does it feel to have one of your very own? I’ve always wanted to open my own restaurant before I turned 50 years old. I’m going to be 50 Oct. 20th. I have three other great partners: Marco (Cicione), Yassine (Lyoubi) and Donnie (Rihn). Anything we do, we all talk to each other—from the menu change to the type of Xerox machine we’re gonna buy ... But I’m very blessed to have my own restaurant.

When it comes to great burgers, quality of ingredients and preparation are of only partial significance. In this case, the old adage stands: People eat with their eyes. Thus, burgers are most appetizing when they’re visibly sloppy, ooey-gooey, greasy and over-the-top. Thankfully, there’s no difficulty finding must-try burgers like that here in Vegas.
Bacon Mac ’N’ Cheese Burger (Guy Fieri’s Vegas Kitchen & Bar at The Linq, 702.794.3139) It’s not just a burger; it’s a physical manifestation of comfort. Plus, can one think of anything more American than mac and cheese, burgers and bacon? Forget leaders. This burger just might have the power to unite the country.

Impossible Burger (Hearthstone at Red Rock Resort, 702.797.7344) Truly, it seemed improbable, but the impossible happened: Impossible Foods made a plantbased burger that tastes good. Hearthstone’s take goes full vegan, with vegan cheese and vegan mayo, topped with fresh veggies and an avocado spread. ShackBurger (Shake Shack at New York-New York, 702.740.3311) It’s not flashy, nor is it fancy—it’s a simple burger and it’s simply good. All-natural Angus beef, American cheese, lettuce, tomato and onion sounds basic until you taste the coveted ShackSauce, which brings this into the upper echelon of fast-casual burgers. Wagyu and Brisket Burger (Bazaar Meat by José Andrés at Sahara Las Vegas, 702.761.7610) If you can’t decide on one of the several superb dishes at Bazaar Meats, this newly offered burger is worth ordering. A blend of wagyu short rib and brisket is topped with iceberg lettuce, special sauce, and a creamy pub cheese. On the side, fries are served with a house-made ketchup that’s so good it’s tempting to add a dollop to your burger. Nacho Burger (Public House at Luxor, 702.262.4525) Forgive the lame pun, but it must be said: This is nacho average

burger. You’ll get double beef patties, chorizo, guacamole, jalapeños, pico de gallo and tortilla chips sandwiched between a brioche bun. The Texan Burger (Black Tap Craft Burgers & Beer at The Venetian, 702.414.2337) They say everything is bigger in Texas, but this burger might be too big for Texas. It’s a monster, loaded with bacon, aged cheddar, and the largest onion ring you might ever see, all smothered with Sweet Baby Ray’s barbecue sauce. Cheeseburger in Paradise (Margaritaville at Flamingo, 702.733.3302) This cheeseburger is so good there’s a song about it. Actually, maybe the song was so good they made a burger about it. Who cares? Grab a LandShark lager and this burger, and prepare to waste away into food coma oblivion.

able guy performing on the Las Vegas Strip; he just wins you over from the second he walks out onstage, and he genuinely seems to be having the time of his life making audiences both gasp and laugh at his antics. And his illusions are on par with any other great magician on the Strip. We still can’t figure out how he does that cell phone illusion! MYSTÈRE (Treasure Island) The original Cirque du Soleil production in Las Vegas (all the way back to 1993) is still one of the best shows on the Las Vegas Strip. Its plotline, like most Cirque shows, isn’t quite clear, but as the various acrobats, strongmen, clowns and comedians do their thing, you aren’t likely to care. And we never, never get tired of that enormous snail at the end. GEORGE WALLACE (Westgate Las Vegas) This legendary funnyman has never been one to rest on his laurels; it could be argued he is the hardest-working man in comedy right now, and easily one of the most influential of all time (he counts Jerry Seinfeld among one of his best friends and greatest admirers). If you’ve never seen him perform, do yourself a favor and be one of the first to see him when he returns. Odds are he’ll have a lot to say— and you’ll want to hear every word.

In Vegas, crisp fall weather means perfect patio dining Autumn in Vegas is a little different from other places. Instead of temperatures heading toward freezing, you find temperatures in the 90s and occasionally dipping into the 60s overnight. In other words, it’s the perfect time to indulge in al fresco dining. Mon Ami Gabi at Paris (702.944.4224) has long been considered one of the prime
places in Las Vegas for breakfast or lunch, due partly to its menu of French favorites and partly to its exquisite location Stripside with a great view of the Bellagio fountains. Order a Croque Monsieur or steak frites and St. Germain spritz to complete your repast. Right next door at Paris you’ll find Hexx Kitchen + Bar (702.331.5100), with the same stellar view of the fountains,

enormous roll-up glass panel doors opening up the patio and a relaxed American menu. The Cinnaroll waffle is marvelous for brunch, and braised short ribs with creamy polenta will fill you up at dinner. At Border Grill (702.632.7403), Mary Sue Milliken and Susan Feniger bring a twist to Mexican food that’s pretty fabulous. Pair that with seating on a two-story patio that overlooks the lazy river of Mandalay Bay’s pool complex and it’s a weekend brunch destination. Spicy chicken tamale and eggs or chilaquiles go great with the green corn tamales every table gets. The patio area at Aria’s Salt & Ivy Café and Patio Bar (702.590.9899) is a perfect early morning spot, with greenery dotted throughout a relaxing space. Eat healthy here with a kale, mushroom and cage-free egg frittata; or an upside-down parfait with blueberry, dragonfruit, strawberry and goji berries. The Dutch Baby pancakes come in several varieties and might feed the whole table. Over at Fashion Show, the huge cloud structure facing the Strip plays host to plenty of restaurants on several levels:
Benihana (702.820.3030), El Segundo Sol (702.258.1211) and Ra Sushi (702.696.0008) are just a few. At Benihana, enjoy weekday lunch or dinner every day. Start with vegetable tempura and move onto beef gyoza dumplings, Hibachi chicken rice and items like the spicy lotus tempura roll. El Segundo Sol’s Mexican cuisine is perfect before wending your way through Fashion Show’s retail offerings. And the energetic vibe at Ra Sushi is a great backdrop for not only sushi, but ramen, salad and small plates. The Bromberg brothers imported their New York-stateof-mind restaurants to Las Vegas in several Strip restaurants, but expanded to the outskirts with Blue Ribbon Sushi Bar & Grill at Red Rock Resort (702.797.7777). In the Kanpai Beer Garden, you can chill out while enjoying sushi platters, sashimi and sake. And beer, of course! It’s a Italian style at Bottiglia Cucina Enoteca at Green Valley Ranch (702.617.7075), where the picturesque Tuscan dining room spills over to patio dining. For weekend brunch, order a glass or two from the extensive wine list, an $18 bottomless mimosa or Aperol spritz and lobster Benedict. Now you’re living!

At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
