Absinthe The Strip Sensation is Back!

NOTES

From the Editor Treats Galore!

We’re now at the point in 2020 when we’re just starting to realize how different the holidays are going to be. For instance, Halloween. Those weird, wild, wacky parties that used to populate the entire Strip? Yeah, those aren’t happening this year, what with social distancing and all. And those haunted houses that crowd in people like sardines, only to prey on their fear of claustrophobia? Yep, canceled as well. As with everything else regarding COVID-19, we’ve had to adapt. Those haunted houses are now from the comfort of your own car (see our Spotlight on Trapped! on p. 12). And while you can still “party” on Halloween, it more involves enjoying quality cocktails than dressing up as a sexy nurse and getting into a sweaty mosh pit (see our Imbibe feature on p. 17). But for us here at Las Vegas Magazine, Halloween still has to be about a spirit of fun—parties and haunted houses or no. We’ve gone all out in past years for our Halloween issue, going so far as to dress up Terry Fator as Frankenstein, Penn & Teller as, respectively, a pith helmet-wearing archeologist and the Mummy, and Frank Marino as Vampira. To be sure, the Strip’s performers have been more than willing subjects for any crazy ideas we come up with. But none are more accommodating than Carrot Top,

who was more than game for perhaps our favorite Halloween-themed feature: We asked Scott Thompson to help us re-create some of the most memorable scenes from some of our favorite horror movies. And no matter what we suggested, Carrot Top said, “OK!” The results are stunning and hilarious. If you don’t believe me, turn to p. 20 (“Carrot Top’s Scary Scenes”) for proof. Revisiting this particular feature seems even more apropos when you consider that Carrot Top will be returning to his Luxor gig on Nov. 6! And Carrot Top is not alone. This week sees the return of several more shows, including an honoree in our inaugural Hall of Fame issue: Absinthe at Caesars Palace (“The Circus Is in Town,” p. 10). If you have not yet seen this, trust us: Between the show itself and the new safety measures in place, you will truly feel like a part of history being one of the first to get a ticket. Elsewhere in this week’s issue, you’ll find coverage of some of Las Vegas’ top restaurants, including Top of the World at The STRAT, Gordon Ramsay Pub & Grill at Caesars Palace, and Chica at The Venetian. We’re still not sure what Thanksgiving or Christmas will look like in Las Vegas, but if it’s anything like Halloween, you’ll want to be a part of it, because no city is adapting to this crisis better.

High on Flavor At Top of the World Restaurant, there’s not a bad table in the house. The restaurant slowly rotates a full 360 degrees every 80 minutes, which means you’ll see the entire city throughout the course of your meal. But there’s another, arguably more eye-popping, view—just look down at your plate. Start with appetizers like the Prime

beef carpaccio topped with shaved foie gras, chives, tomato and pickled shallots, or go for the crab cakes, served with a roasted poblano remoulade. Then move on to some juicy cuts like a 22-ounce bone-in ribeye, 16-ounce New York strip or tender 10-ounce filet. Pair with sides like blistered broccolini with rosemary butter and lemon breadcrumbs,

crispy Brussels sprouts or indulgent lobster mac and cheese. No meal is complete without a stiff drink, and there’s a world of choices here. Go classic with an Old-Fashioned, or get into the fall spirit with the Drunken Pumpkin, a blend of Maker’s Mark bourbon, Fireball whiskey, RumChata and pumpkin syrup. –Alex Haase

Changing It Up Gordon Ramsay restaurants like Gordon Ramsay Steak and Hell’s Kitchen might seem posh, but Ramsay also knows how to appeal to the working-class heroes who’d rather spend their time in pubs. At Gordon Ramsay Pub & Grill, the celebrity chef offers an experience that’s down-toearth and simple. You won’t find too many Ramsay staples on the menu here. No scallops, but there’s Maine lobster pot pie. No risotto, but there’s crispy chicken paillard. No beef Wellington, but there’s Ramsay’s delectable take on fish and chips. And if you’re looking for something meatier, an 8-ounce filet and a 12-ounce New York strip also make the menu. Yet, you might decide to ignore all those elevated pub dishes and instead opt for the short rib kettle chip nachos. Ramsay’s pub also has a healthy beer list, with more than 25 brews on draft. If you get stuck, Guinness is always a fine choice. A few local brews make the menu, too— beers by Bad Beat, Big Dog’s and Tenaya Creek breweries. Towards the end of your meal, you’ll find comfort knowing some things never change for Ramsay: For dessert, you’ll find his signature sticky toffee pudding. –Alex Haase

So Much Good Stuff The first thing you notice about Trece when you enter is the long mural of the Las Vegas skyline. This greenhouse-style restaurant in the Planet 13 entertainment complex features plenty to fill your belly, plus cocktails and beer. And although many of the dishes are Latin-inspired, you’ll find many others to satisfy you. Munch on cheese-covered carne asada fries or the tasty hummus with crunchy flatbread to start. gherita, pepperoni, barbecue chicken or a supreme. For your entrée, choose from an all-day breakfast menu, with such goodies as chilaquiles with cooked-to-order eggs or a breakfast burrito, appealing at any time of the day. Other good choices include ricotta cheese ravioli, an enchilada platter and a pan-seared ribeye steak. If you’re in the mood for a hamburger or a crispy chicken sandwich, they’ve got that, too. –Nina King 2548 W. Desert Inn Road No. 105-B, 702.665.6701

Great things come in threes, and the cocktail collective at The Venetian and The Palazzo is no different. There’s The Dorsey, Rosina and, most recently, Electra Cocktail Club, with creative cocktails crafted by Sam Ross. While Ross is the common denominator, all three have distinctive feels, and Electra is simply, well, electric. It buzzes like a nightclub, yet still feels like a locals spot. You’ll find some of the best cocktails on the Strip here, from the Penichillin, a frozen mixture of lemon, ginger, honey and smoky Scotch, to the Age of Aquarius, made with passion fruit, lime, honey, Campari and mezcal. –AH The Palazzo, 702.607.1950

The Circus Is in Town

Iconic production returns to the Strip It’s one of the most memorable shows ever to hit the Las Vegas Strip (it made our inaugural Hall of Fame list for 2020), and starting Oct. 28, Absinthe returns! There will be many changes to the experience itself, but rest assured, the chaotic, hilarious and extremely un-PC show you remember will be intact. To begin with, the iconic spiegeltent outside Caesars Palace has installed an air purification system, and all rows of chairs have been removed in favor of cabaret-style seating (tables spaced six feet apart and seating parties from two to five). In addition, capacity at the show has been reduced from the usual 660 to 153 guests to allow for proper social distancing. All guests

.10. 10.25.20 LAS VEGAS MAGAZINE

will be checked with no-contact temperature testing, masks will be mandatory during the performance, and the tent itself will be sanitized before and after each performance. The lineup of Absinthe changes constantly, but the show’s signature characters—The Gazillionaire, his “assistant” Wanda Widdles, and The Green Fairy—are constants. And the show’s signature opening act—an acrobat who stacks chairs almost to the top of the tent, balancing himself on his hands at the very end—will have you holding your breath from beginning to end. This is a show that practically demands you have a cocktail before, during and yes, after

the show. And while the bar will no longer allow guests to line up for their drinks, have no fear— table service will be provided to ensure the proper levels of intoxication. Show producer Ross Mollison was positively beaming about the show’s return in an announcement to the press. “Absinthe is uniquely positioned to allow us to present the same raunchy, hilarious show in a way that should give everybody involved complete confidence to laugh, cheer and watch in wonder. We can’t wait to welcome audiences back for a much-needed shot of Absinthe.” –Ken Miller Caesars Palace, 702.534.3419 or spiegelworld.com

Visit, Shop, Eat While all outlets at Eataly have not reopened, there’s still more than enough reason to visit the huge Italian marketplace that offers fresh fare and an abundance of food-and-wine retail from the boot-shaped country. There’s still a week left of October, the month that celebrates vegetarianism, and you can get your fix at the La Pizza e La Pasta outlet. There, dig into veggie dishes like Lo Spaghetto al Pomodoro, Spaghetti Cacio e Pepe and a variety of Neapolitan-style pizzas. You can also stop by the outlet for lunch or dinner and indulge in its two-course Italian lunch for just $24 from 11 a.m.-3 p.m., which includes one antipasto and one pizza or pasta, and the $26 two-course prix-fixe menu for dinner that you can pair with a glass of wine for an extra $10. Winding your way through the light-filled space, grab a cappuccino or espresso at Gran Caffé Milano or cool off with a fresh scoop of gelato. For more sweet-tooth satisfaction, stop by the Lavazza and Pasticceria counter for fresh-made Italian pastries and cakes. Take a piece of the Italian lifestyle home with you as you peruse the wine shop and retail spaces that offer a huge assortment of pastas, sauces, candies, kitchen tools, breads and gifts perfect for the holidays. –Kiko Miyasato

So Many Flavors

Multiple Latin American cuisines inspire expansive menu When chef Lorena Garcia and 50 Eggs Hospitality Group opened Chica in Las Vegas, they introduced a wide-ranging menu that pulled in dishes and influences from all over Latin America. Many of those dishes were inspired by Garcia’s native Venezuela, like the griddled corn-cake arepas, a must-start to any meal here. A basket of the tender cakes come served with rich nata butter, and that’s all they need. But choose guacamole to start (a dish the Aztecs came up with), and you’ll get arepas and plantain chips for dipping. And the plantain chips are sooo good! You’ll want to hoard these to munch on throughout your meal. Other popular appetizers include grilled Peruvian octopus, grilled beef empanadas and potato-and-cheese

.14. 10.25.20 LAS VEGAS MAGAZINE

empanadas, as well as both Peruvian and Mexican ceviches. Entrées here run the meat gamut, from pork porchetta and rotisserie chicken to chicken and beef skewers. And, of course, steak. The 14-ounce dry-aged ribeye comes with blistered Padrón peppers and chimichurri sauce. Side orders of grilled cauliflower and slow-roasted sweet potato are excellent accompaniments. If you are in for brunch (offered daily), then you’ve got another treat coming. Libations are in order, whether it’s a Bloody Mary or mimosa, or healthy juice such as Turmeric Tonic with turmeric, ginger, lemon and black pepper. Twists on classic brunch items fill the menu. Corn cachapa pancakes are a standout, covered

with tropical fruit and queso fresco. They’re so much better than buttermilk. Get eggs several different ways, from an eggs Benedict Cazuela with chorizo to sunny-side-up eggs with yucca hash. Or choose shrimp tacos, dulce de leche French toast and a Cubano sandwich with marinated pork and smoked ham. You can’t lose no matter how you roll. One of Chica’s signature dishes are the churros, and for good reason. These cinnamon-and-sugar covered, ring-shaped delights come stacked on top of one another in descending size, somewhat like a child’s toy. Drizzling chocolate sauce on top is visually pleasing, and a perfect topper to the dessert. –Nina King The Venetian, 866.659.9643

Fire It Up! You would probably have high expectations for any venture involving the talents of celebrity chef Michael Mina and TV personality Ayesha Curry. And at International Smoke, all those expectations are exceeded. The theme here is fire, from which all things originate, as well as smoke. And this menu is jam-packed with signature items from both chefs that emphasize both fire and smoke. The ribs menu alone is worth a trip here, St. Louis cut pork ribs served with either American barbecue sauce, Vietnamese chili-lemongrass sauce, or Korean sesame-gochujang sauce. The woodfired grill options include an 8-ounce center-cut filet mignon, 14-ounch New York strip steak, and a 16-ounce Delmonico ribeye. Just heaven for fans of smoky, meaty goodness. Smoke also makes an appearance on the cocktail menu! The cold-smoked Old-Fashioned combines Evan Williams bourbon, cardamom syrup and Corazon bitters and is smoked in its own container. Other delights include Ayesha’s fresh-baked cornbread, with red curry butter, and Mama Mina’s falafel, lightly fried. Whether you order the key lime pie or Valrhona chocolate molten cake for dessert, this is a meal to remember. –Ken Miller MGM Grand, 702.891.3922

Bartender is friendly, fun and witty “Fun. That’s the key word,” says bartender Martin Toromanov. “If you don’t have fun bartending then don’t do it.” And according to Toromanov, he’s been having fun for more than 20 years now. Born and raised in Sunny Beach, Bulgaria, he grew up in the hospitality industry, working at the bar his family owned and operated in the popular resort town on the coast of the Black Sea. When he turned 25, he moved to the U.S., first landing in Wisconsin, then moving to North Carolina to bartend in the convention industry. But he knew that Las Vegas was the city he needed to be in to really further his career, so he made the move in 2010. Since then, Toromanov has worked at El Cortez Hotel & Casino at the property’s various bars, including Parlour Bar, for more than seven years. “I like the smaller venue, the hotel,” he says. “I like it better than the Strip. I like downtown. If you want to experience the old vibe of

Vegas, that’s what is at El Cortez. We’re also more affordable but with the same quality of big Strip properties.” Toromanov is just the type of bartender you’d want behind the bar—friendly, fun and witty. “Bartending is something between being a best friend, a shrink and a pharmacist,” he says laughing. “Three in one! No one comes to the bar just to drink—they can drink at home. People come to the bar because they have the need for social interaction. They cheer together. Get into conversations. Get into trouble.” Toromanov also likes to give his guests unique experiences through both drink and conversation. “I like to break people of their routine when it comes to drinking—get them to open their tastes and try something new,” he says. “Offering my guests different experiences than what they’re used to makes the job fun, and it leaves a lasting memory, and that lasting memory brings people back.” –Kiko Miyasato

Veranda

A Return to Peace

Serene Strip restaurants are returning As the Las Vegas Strip continues to come back to life in 2020, some of its more serene experiences have returned with characteristic quiet—and that means you may have missed them. The regal Four Seasons hotel, attached to the megaresort Mandalay Bay, has reopened and brought back one of the Strip’s most beloved dining destinations, Veranda (702.632.5121).

.18. 10.25.20 LAS VEGAS MAGAZINE

Always a favorite among locals and tourists alike for breakfast and lunch or weekend brunch on the perfect poolside patio space, Veranda is ready to serve a selection of refreshing, lighter plates like avocado toast or the veggie-laden egg white frittata, or more substantial fare like the Sin City Burger with bacon jam and white cheddar.

Looking north on the Strip, Planet Hollywood Resort returned to action in early October and a comprehensive restaurant portfolio comes with the exciting package. You don’t have to stick to burgers and fries when indulging at lunchtime at Gordon Ramsay Burger (702.785.5462); try the Crispy Cherry Pepper Chicken sandwich or the bacon-wrapped Sabrett hot dog. over to Pin-Up Pizza (702.785.5888) for a monster-sized slice or the comfy Café Hollywood (702.732.1222) for diner-style favorites like a Reuben sandwich or chicken fettucine Alfredo. For dinner, head upstairs and choose between the glamorous Strip House (702.737.5200) for a dry-aged ribeye or Maine lobster, or the stylish Japanese cuisine at Koi (702.454.4555), where sushi and other seafood specialties shine. You can find a vast variety of flavors if you continue your journey north to lively downtown Las Vegas, where buzzy new bars and restaurants intermingle with longtime local favorites. Carson Kitchen (702.473.9523) is one of the last dining concepts created by the late Kerry Simon, one of the most influential chefs in Vegas history, and while it has grown beyond Vegas with locations in Atlanta and Salt Lake City, the original spot in the renovated John E. Carson hotel building just off Fremont Street has evolved into a comfort-food classic. A brand-new brunch menu tantalizes with sopapilla French toast, oxtail hash, shrimp and grits and more. At Downtown Grand, Freedom Beat (702.719.5315) has also reactivated its brunch on Saturdays and Sundays featuring live music and bottomless mimosas or Bloody Marys to go along with all-you-caneat offerings such as Hatch chile chilaquiles, eggs Benedict and biscuits with chipotle gravy. Over at Downtown Container Park, charming wine bar Bin 702 (702.826.2702) has room on its expansive patio and is serving up craft cocktails, cheese and charcuterie boards and delicious panini. One of the most talked-about downtown combos can be found in the Arts District just off Main Street, where local brewery CraftHaus (702.888.1026) has a big, bright taproom that’s teaming up with next-door neighbor Garagiste Wine Room & Merchant (702.954.3658) to create a unique and casual experience. Happy guests are bouncing between these bars and patios, snacking on small plates and sampling specially curated wines and fresh, Vegas-made brews. It probably isn’t what you imagined when you started off downtown, but it’s a great example of how Las Vegas hospitality continues to evolve in new and interesting ways. –Brock Radke

Carrot Top’s (1988) “I’ve always been compared to that doll. That one strikes home for me. The doll coming to life was really creepy. But it doesn’t really bother me when they compare me to Chucky. It’s all good.”

By LAS VEGAS MAGAZINE STAFF Art direction by WESLEY GATBONTON Photography by CHRISTOPHER DEVARGAS Hair and makeup by TAI SHANE

Carrot Top is more than just one of our favorite comedians; he’s one of our favorite people. No idea that we’ve come up with is going too far for the Luxor headliner (who will return on Nov. 6). Heck, one year we crazily suggested he straighten his famous locks for a photo shoot—and he did it! So a few Halloweens ago, we asked him to re-create some of the most iconic scenes from the greatest horror movies ever made. This remains one of our favorite features ever. We hope you enjoy this trip down memory lane.

20 10.25.20 LAS VEGAS MAGAZINE

(1982) “I remember that scene. It was just so creepy. I was really scared to death. I think my eyes were shut the whole time. But when you hear the noises and the voices in front of the TV, it’s very cool.”

22 10.25.20 LAS VEGAS MAGAZINE

(1982) “That was one of the big movies everybody went to. It’s one of the legendary images when you see that Jason mask. Now that we’ve talked about it, I probably won’t sleep tonight.”

(1960) “Every time you get in the shower you think of that stupid scene. And that music—Wrang! Wrang! Wrang! Wrang! Wrang! That’s why a lot of people don’t shower is because of that movie. I got to shoot in that exact bathtub. We were the first ones to shoot a music video there. (Creature, with singer Brian Evans, at the Bates Motel set at Universal Studios). It was so surreal. You can still see the bloodstains they put on there, and the tiles are all cracked.”

(1980) “Jack Nicholson—still one of my all-time favorite movies. It was scary but it was more of a thriller, more of a mystery and he was stuck in this big hotel by himself for so long. And those twins were great. But it’s that classic picture of Jack Nicholson putting his head through the door. ‘Heeeeere’s Johnny!’ It’s amazing as famous imagery.”

A Special Space It’s long been said that the kitchen is the heart of the home. Open-concept kitchens have become the norm as a home’s cooking space has been integrated as an extension of the living room. Let’s face it: for some buyers, a line of sight from the kitchen to the TV is key. It certainly does make it easier to play along on Chopped. Colleen McCullough of Toll Brothers notes, “The kitchen became almost outfitted with furniture in the beautiful appliances that are made now, which seem more like works of art. It’s so beautiful how it’s all integrated into making that gathering space so special.” –AD

Delicious Outdoors Areas like Las Vegas boast beautiful weather for the vast majority of the year, which simply begs people to spend more time outside. The creation of full outdoor kitchens is on the rise with everything from fire pits for s’mores to custom pizza ovens to elaborate barbecue setups. Realtor Tamara Heidel notes, “The outdoor living area having a fire pit and an outdoor kitchen facility—those are all key.” –AD

Frank Napoli courtesy photo

Las Vegas Realtor Frank Napoli celebrated his 20th year as a licensed real estate agent. His father started their real estate company in 1991, so he’s literally been around the office since he was in high school. Napoli encourages prospective buyers to “make sure they have a proper education on the market in which they’re looking to purchase. Finding someone you can trust is most important.” As an owner of a Las Vegas high-rise unit himself, Napoli can say with authority, “I’m extremely familiar with the high-rise product in Las Vegas. Having the building amenities was something I found very important. Having a gym, concierge, valet, all those comforts in the building that I didn’t experience in my single-family home, I found to be really valuable.” Napoli noted that high-rise life is great for investors and “for people looking for a second home in Las Vegas, it’s so convenient. It’s just lock up and leave! You don’t have to worry about your pool or security. A lot of my clients who are moving from out of state prefer high-rises. “As Las Vegas becomes more and more of a family-oriented city, with sports and diversified entertainment, I think a lot of investors are looking to Las Vegas and, in turn, realizing it’s a great place for them to live as well,” he added. –Allison Duck

Here in Las Vegas a myriad of changes have oc-

can expect to see similar protocols throughout

curred, all intended to keep visitors and employees

Las Vegas. All casinos opening in Las Vegas were

healthy. Guidelines issued by the Nevada Gaming

required to submit their plan for reopening to the

Commission have been implemented, with every-

commission. Here’s what you can expect to see, and

thing from casinos to guest rooms covered, so you

what’s been done to make your experience safer.

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.

There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

LAS LAS VEGAS VEGAS MAGAZINE MAGAZINE 10.25.20 6.14.20 .35. .9.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

COVID-19. It’s also considerate of fellow guests and resort workers.

holding escalator rails or getting money from the ATM).

You’ll notice hand sanitizer stations. Give yourself a squirt before and after playing slots or the tables, and anywhere it seems you might need it (after touching elevator buttons,

6 feet from people other than your travel companions whenever possible. Common places that lines form will often be marked, making this easy. Be patient—even though you are 6 feet apart, you’ll still be moving.

Practice social distancing. Stay

Try not to touch your face.

Periodically, wash your hands for at least 20 seconds with soap and water, then rinse for 10 seconds. You may receive personal size bottles of hand sanitizer in your room. Take those with you and use whenever it’s not practical to wash, or a hand sanitizer station isn’t close.
