From the Editor An Exciting Start

Welcome to the first new 2021 edition of Las Vegas Magazine! This issue excites me to no end. For starters, it means we’re already looking at the horrific 2020 in our rear-view mirror; it’s also the start of a year rich in possibilities. We now have multiple COVID-19 vaccines at our disposal, and Las Vegas, the country and the world are poised for a massive comeback. But the reason I’m most excited about this issue is because it features our 2021 Hall of Fame class! Las Vegas Magazine launched its inaugural Hall of Fame in 2020, and the response from our readers— and our honorees—was nothing but positive. And why wouldn’t it be? After all, it’s our opportunity to honor the performers, restaurants, shows, nightclubs and other institutions that make Las Vegas the most dynamic tourist destination in the world. Of course, with COVID-19 changing the course of Las Vegas’ history for most of the year, we had to do things a bit differently with this year’s class. Our rules for eligibility are simple: Whether you’ve been in town for three years or 50 years, if you’ve made a significant contribution to the culture and history of Las Vegas, you’re up for consideration. The other major factor? Unlike other halls of fame, where honorees are only eligible after years of inactivity, our class has to be accessible to our read-

ers here and now. After all, our magazine exists to inform our tourists as to what there is to enjoy in town. Our Hall of Fame needs to reflect that philosophy. But therein lies the problem: Some of those up for consideration for our 2021 class are not currently operating. That list includes performers, shows, nightclubs and more. So we asked ourselves the following question: If not for COVID-19, would this nominee have remained open? If the answer was “yes,” it was added to the list of eligible candidates. So yes, this year’s list does contain several honorees that our readers cannot presently enjoy. But as we begin our slow climb out of this pandemic, Las Vegas Magazine is positive that all 10 honorees will eventually return. Las Vegas has survived some horrible times throughout history, and this is no different. What makes this year’s issue even more exciting is that, unlike last year’s inaugural class, which was selected by the staff of Las Vegas Magazine, this year’s class was selected exclusively by the 2020 honorees. They responded enthusiastically to our requests for participation, and we think you’ll agree that all their selections were spot on. We can’t wait for 2021—or think of a better way to start it off !

That’s the scene at Blackout Dining in the Dark, a restaurant experience where you have to rely on your sense of smell and taste to know exactly what you’re eating. Therefore, the menu is kind of a secret, for if

you knew what was being served, the experience wouldn’t be as fun. Although walking into the pitch-black dining room is initially jarring, if you enter with an open mind and trust your waitstaff, the darkness will quickly slip away and you’ll focus on what’s more important: communion.

Since the room must stay dark at all times, any items that emit light are prohibited. So, sorry—no cell phones allowed. But now you’ll have time (and no other choice, really) to converse with your dining companions, sharing an experience that cannot be Instagrammed. Trust us: you’ll love it! –Alex Haase

C’est Si Bon As chef Michael Mina has quietly built a restaurant empire in Las Vegas, you would think one of his four restaurants would stand above the rest, but each one is so uniquely different that they’re impossible to rank. It depends on mood and taste. So, if you’re looking for delicious French-inspired comfort food in Las Vegas, Mina’s Bardot Brasserie is the perfect choice. The prime steak tartare is a favorite starter among diners. It’s served traditionally with egg yolk on top, along with crisp, homemade waffle fries. If that option is a little too raw for you, the caviar deviled eggs or the chef’s selection of cheeses are other delectable options. As an entrée, steak and fries is the ultimate French comfort food, and Bardot offers several cuts to pair with hand-cut fries, such as filet mignon, double-cut ribeye or a 10-ounce flat iron steak. But if meat isn’t your thing, opt for the gnocchi Parisienne, topped with Roquefort cheese, acorn squash, pomegranate and sage. Lights, Sound, Action One of the bright spots of the last few months has been the opening of Area 51, a huge multiuse environment opposite the Strip. And recently, Museum Fiasco opened there. It’s a welcome addition. Museum Fiasco was designed as a kunsthalle space, an art museum that does not have a permanent collection and instead shows works on loan from other museums or from individuals. And it’s one

of only a handful in the U.S., where most art museums do own collections. And that lack of a collection allows the space to host more avante-garde exhibitions. Currently on display at Museum Fiasco is the Cluster, an exhibit by Playmodes Studio, a large-scale installation combining light, technology and sound coming from multiple pillars for an immersive show. –Nina King 3215 S. For a vibe that’s classic yet modern, head to Vista Cocktail Lounge. Not only is the décor refined and decadent, but along the walls are LED screens that display the skylines of other big cities across the world. One moment you’re staring at the Manhattan skyline, and later you’re looking at Dubai. But the cocktails are equally astonishing to view. Here, you’ll find an assortment of classics like the Negroni and Old-Fashioned. Italian restaurant makes you feel at home If you’re a fan of Cake Boss, then you’ll know how much family means to chef Buddy Valastro. That love of family is reflected in the Italian recipes and dishes on the menu at his restaurant Buddy V’s Ristorante. On the appetizers, you’ll find Grandma’s Meatballs and My Wife’s Eggplant Parm, the former combining beef veal and pork, the latter a crispy portion of tender eggplant with tomato, mozzarella and Parmesan. Buddy’s caprese salad is a classic, with burrata, basil, tomato and a tomato confit. You can get pizza on both the lunch and

dinner menus, and Buddy’s Favorite just might become yours. This pie’s built with spicy Italian sausage, ricotta, mozzarella, provolone, peppers, onions, garlic and basil—you know, all the good stuff. What’s really cool about the pizzas here is that the dough is proofed for two days and then stretched just prior to your pie being slid into the oven. Entrées celebrate the fam, too, with such options as Nonna’s lasagna al forno, with pork, Italian sausage and beef, plus plenty of cheese like provolone, Parmesan, ricotta and mozzarella.

My Mother In Law’s linguine shrimp scampi, with tomato, spinach and white wine, might be unforgettable—just like your mother-in-law. But don’t stop—there are all kinds of goodies on the Buddy V’s menu, like a salumi and cheese board, cheese ravioli, chicken rigatoni alla vodka, chicken piccata and grilled salmon. And, in keeping with the theme, both Valastro and his wife have desserts named for them— Buddy’s lobster tail and Lisa’s warm Nutella cake. The lobster tail is stuffed with fruit and cream and looks seriously decadent. –Nina King

Reality Bites While you were at home during quarantine, so was Giada De Laurentiis, filming Giada at Home 2.0, a pandemic-inspired offshoot of her popular Food Network program. Maybe you tuned in and saw her cooking some delicious Italian food or baked goods and thought, “Man, I’d like to try some of that.” Well, at Pronto by Giada, you can dig into several of her casual, California-inspired Italian creations. Although the restaurant is more of a grab-and-go joint, it’s not wrong to stay awhile and relax. If you want to sip on a hot cup of coffee, Pronto serves Counter Culture Coffee, a specialty brew far better than your average diner coffee. But day drinking is not frowned upon here, so don’t feel embarrassed to order a mimosa, a glass of wine or a cocktail. This is Vegas, after all. As for the food, you’ll find a bevy of fresh salads and sandwiches, like the lobster roll and the ultra-gooey grilled cheese. If you plan to hang out, don’t hesitate to share a meat-and-cheese platter. Then, for dessert, Giada’s famous lemon ricotta cookies are the obvious choice (one of our personal favorites), but you could be swayed by gelato or a cute slice of cake. –Alex Haase

Check out three of the coolest lounges on the Strip There’s a lot of cool things to check out in Las Vegas. But no three spots capture the word “cool” both literally and figuratively more than Minus5 Ice Experience at The Shoppes at Mandalay Place and The Grand Canal Shoppes at The Venetian and Icebar at The Linq Promenade. Constant Classic While Cornerstone is one of Vegas’ hidden gems, it’s also the crown jewel of the Gold Coast Hotel & Casino, serving up classic steakhouse fare that pays tribute to an era that feels similar to Vegas’ golden age. First, you’ll want to order a drink, and Cornerstone specializes in classic, Prohibition-era cocktails. The Old-Fashioned is a must-try, mixed with Old Forester bourbon, brown sugar, bitters, orange and dark cherries. As you sip, peruse the appetizer menu, where you’ll find tried-and-true starters like oysters on the half shell, crab cakes, shrimp cocktail and bacon-wrapped dates. They’re all wonderful, but if you’re looking for a starter that’s more robust, go with Shanghai-style fried calamari, served with a tongue-tingling chili glaze. Party Central You came to Vegas to misbehave a little, and Coyote Ugly is the perfect bar to cut loose. Just like the movie, you’ll watch the beautiful bartenders show off their masterful pouring techniques, as well as their sassy dance routines along the bar top. Outdoors In Local Arts District restaurant Esther’s Kitchen recently added a new dimension to the popular dining destination. The Greenhouse Village consists of eight outdoor dining pods created from portable greenhouses, each one that serves four persons. Each one is completely outfitted with table, heat, chairs, carpeting, music and art. “We sat down and thought about ways to resolve some of our guests’ ongoing concerns, as well as the current limita-

tions, and this is what came together,” said James Trees, chef/owner of Esther’s, in a release. And although pod dining has been a reaction to the past year’s problems, it’s an idea that has been around for years. Meet your new fave Vegas bartender Looking for a really good bartender to visit with while in town? Let us suggest to you, Jessica Carter, bartender at The Book at The Linq Hotel. And don’t just take our word for it; consider that during the 10 years she’s worked in Las Vegas, she’s had visitors that like her so much they’ve followed her to every bar she’s worked at in town, from The Venetian to The Cosmopolitan, to the four years she’s been at The Linq (she joined the hotel on Flamingo Road when it was formerly The Quad). Not only is the L.A. native one of the most personable people you’ll ever meet, she’s also a great bartender—knowledgeable in wines and a certified cicerone (meaning this lady knows a lot about beer—which definitely helps working at The Book, where there’s two dozen beers on the self-pour beer wall, 12 beers on taps and tons of bottled choices). “I love meeting new people—I really, honestly mean it,” Carter says.

Carter has had guests come back to Las Vegas for their anniversary, the Super Bowl, and to celebrate birthdays (she loves getting her customers a little birthday cake with a candle they can blow out), and they always make it a point to visit her while in town. “You have to like people to be a bartender,” she says. “You have to like to talk to people. It doesn’t matter what you’re going through, or what mood you’re in—when you come in you are a performer, you’re on stage … It’s especially important these days with what’s going on in the world, to make people feel good, to show you care.” Besides being a great all-around bartender, Carter is also a freelance licensed aesthetician. She’s also a self-proclaimed foodie, a big lover of trying new restaurants and happy hours. “I get out often, so I always have somewhere new to share with my guests,” she says. Paul Conforte Xpand Realty’s Paul Conforte is looking to help you expand into the Las Vegas area, and he has plenty of experience in that area. “I’ve been in real estate about 15 years,” Conforte says. “My mom was a Realtor, so it’s been in my blood. At Xpand, it’s more like family.” While Xpand Realty serves all types of customers, Conforte notes the niche they’ve created. “Our company’s owner is from Hawaii and our business is very referral-based,” Conforte says. “We find that a lot of people from Hawaii are looking at the Las Vegas market for vacation homes or investment properties because it’s so much cheaper here.” Conforte, who moved here 20 years ago to attend UNLV, sells homes all over the Las Vegas Valley, but he does a lot of business with custom home builder Toll Brothers. He observes, “Toll Brothers is going really modern, doing more with less space, and they’re doing so much with one-story communities.” Conforte is full of pro tips, but something especially valuable he notes is regarding perception on the part of the buyer. “The biggest misconception is that when you go to a builder, they’re your Realtor. If you want somebody to look out for your best interests, somebody who has fresh eyes to notice something that maybe you didn’t, you should always bring a Realtor. The seller or builder pays the commission. You don’t pay the Realtor; you don’t owe them anything.” –Allison Duck
