As I write this, the after effects of the events at the U.S. Capitol in Washington, D.C., are still being felt around the world. It’s truly a trying time for our country, the likes of which we have not experienced for some time (some would argue never), and a sobering reminder that a new year is not necessarily a better one. All we can hope at this point is that the upcoming inauguration is the beginning of a healing 2021. After all, things can’t possibly be worse than 2020, right? It does seem certain that disagreement will continue to divide certain parts of the country. But there’s one city where you can put all that behind you for a few days or a few weeks and really enjoy yourself: Las Vegas. We are now almost completely reopen for business, and Las Vegas Magazine is here to help guide you through the best ways to spend your time and forget about the real world for a while. This is an issue with a little bit of everything. If you’re not familiar with some of the plans Las Vegas has for 2021, you’ve definitely got to check out our look ahead (“What We’re Looking Forward to in 2021,” p. 22). Trust us: After reading this, you’ll be planning your next trip to Sin City before the year is out. We’re still a vibrant, exciting metropolis with big plans. And we definitely want you to be part of it!

You may not realize it, but Las Vegas has a thriving arts community, including on the Strip itself: The Bellagio Gallery of Fine Art. And it recently reopened with a doozy of an exhibit, featuring the collections of some of the city’s biggest supporters (“Local Flavor,” p. 24). If you’re in any way an art lover, this is a must. Elsewhere in this issue, enjoy our coverage of the area’s gradually re-emerging food scene, from the return of Giada De Laurentiis’ restaurant at The Cromwell (“Buon Appetito!” p. 20) to VooDoo Steak at the recently reopened Rio (“A Smoking Good Time,” p. 10) and the world-famous Mr Chow at Caesars Palace (“Taste the Tradition,” p. 7). Taste the Tradition A name synonymous with Chinese cuisine since 1968, the Mr Chow dining empire— restaurants in London, Beverly Hills, New York, Malibu and Miami Beach—opened its Las Vegas location in 2016 at Caesars Palace. Las Vegas guests can now take a deep, delicious dive into traditional Beijing food. “This restaurant, like all the Mr Chows, has a special side to it,” Michael Chow told Las

Vegas Magazine when the restaurant opened. “This environment is white on white, a Mr. Chow tradition. Very romantic. This is fantasy, this is poetry, this is theater, excitement. I was given a 60-foot dome with 35-foot ceilings, so I created this kinetic sculpture.” That sculpture, The Moon, is a 26-foot moveable disc that changes colors and light throughout the evening, providing endless entertainment.

But the entertainment doesn’t stop there. It expands to the food with the noodle show, which features classic handmade Beijing noodles. There’s also the tableside carving of traditional Beijing duck. The dessert and champagne trolleys are a sight to behold, too. From the moment you take the private elevators up to Mr Chow, it’s an entertaining experience from start to finish. –Kiko Miyasato

Good Times Galore There’s much lore regarding the days of yore in Vegas, but that’s because the 1950s and ’60s were truly a magical time in this city. And although old Vegas now exists spiritually more than it does physically, The Steak House at Circus Circus is a place where you can still catch a glimpse of this town’s golden age. For the last three decades, The Steak House has achieved success by avoiding steakhouse trends; rather, they hark back to the culture of old Vegas by offering a no-frills experience filled with careful, dedicated attention to you and your party, and by focusing on classic cocktails and cuts that make for the perfect meal. Cozy up in an old-school leather booth and order a Manhattan or an Old-Fashioned to whet your appetite. But don’t get too hungry too quickly, for you’ll want to savor your drink and take in the classic atmosphere. Laughter is an emotional vaccine that builds immunity to pain and brings happiness to one’s soul. And although laughs were in short supply last year, Las Vegas just received a huge shipment now that Brad Garrett’s Comedy Club has reopened, bringing some of the best headlining comedians back to action (this week features Eddie Iff t and Gary Cannon). In a club that was already intimate, it will feel a little smaller with COVID-19 precautions in place—50-person capacity, minimum 25-foot distance from the performer, and 6-foot social distancing between tables—but there’s no mandate on laughs, so get your fill. –AH MGM Grand, 866.740.7711

A Smoking Good Time

Rio restaurant elevates classic steakhouse fare Treat yourself to the full steakhouse experience at VooDoo Steak. This restaurant at the top of the recently reopened Rio offers incredible views of the lights of the Strip in the near distance. Start with a cocktail, the Witch Doctor, which may possibly be Las Vegas’ most famous. This behemoth is concocted with five rums and a mix of fruit juices and is served in a monster glass fish bowl from whence smoke rolls off. (The smoke is created through the magic of dry ice, and it is mightily impressive.) Accompany that bad boy with the seafood tower, served hot or cold, or both. It’s piled with oysters, shrimp, crab, mussels and, depending on which version, ceviche, mini crab cakes, seared

scallops and shrimp scampi. Pretty decadent. But the appetizer menu doesn’t stop there. Go traditional with crab cake or a shrimp cocktail, or take it up a notch with a foie gras macaron with aged balsamic and gold accents, or a short rib bruschetta with truffle ricotta. An heirloom beet salad, prepared with aged balsamic, honeycomb, watercress and candied pecans, or French onion soup with Parmesan crust will both really hit the spot, not to mention providing the background for the main attractions here at VooDoo. For that, choose lamb chops, brick chicken or fried pork shank. Seafood lovers will dig Australian lobster tail, Ora King salmon or crab-stuffed

halibut. But steak is the main draw, with 21-day wet-aged steaks presented in a variety of ways, including a 10-ounce filet, 16-ounce ribeye, 8-ounce Mishima Reserve wagyu rib cap, or 12-ounce ribeye. The 32-ounce tomahawk dinner for two entices with a side of lobster mac and cheese. And there are plenty of other sides to add, like wild mushrooms, tempura green beans and a blue cheese potato gratin. For dessert, crème brûlée is a steakhouse favorite, but the Forbidden Apple gives you a bolder take on apple pie, with white-chocolate yuzu whipped ganache and honey-caramelized apple. Ask for the tasting menu to get some of the best dishes in the house. –Nina King

Flavors of Taiwan Dumplings are the specialty here at Taiwanese restaurant Din Tai Fung, and you can see that as you walk through the entrance, past large windows that showcase the making of many types. Go ahead and scan the QR code at your table and access a menu with cocktails and drinks, from hot oolong and jasmine tea to seasonal boba. Then choose from such goodies as sweet and sour pork baby back ribs, braised beef noodle soup or a vegetarian noodle soup, which features the lightest broth, greens and mushrooms. But don’t forget the dumplings (as if you could); there are a multitude of styles and fillings to select from, some delivered in steamer baskets and some in a bowl, like the jidori chicken wontons with spicy sauce. And you can mix the dipping sauce to your liking, going heavier on the spice or the soy sauce, whatever your preference is. For dessert, do choose the chocolate-filled dumplings. It’s one of the most popular items on the menu, and for good reason. The soft wrapper perfectly complements the warm, oozing chocolate. Lives and Memories Although much of the mystery surrounding the fate of the Titanic has been uncovered over the last four decades, there’s still a mystique within the tragedy that captures the imagination. You wonder about the people and the lives lost on that frigid night in the Atlantic. Who were they? Why were they there? Where were they going? It’s all become a distant and abstract memory. Yet, at Titanic: The Artifact Exhibition, you’ll get a chance to know the passengers

Although the plant-based-eating push began in the U.K., here in Vegas in January it’s also become known as Vegan Dining Month, due to the efforts of website Vegans, baby. This month, 20 restaurants feature special vegan dishes on the menu, and will donate a portion of the proceeds from each dish to the Progressive Leadership Alliance of Nevada. A Little Bit of Italy

From pizza to pasta, this restaurant perfectly satisfies In St. Mark’s Square at The Venetian, you’ll find an Italian experience that’s relaxing yet invigorating, with a charming patio and excellent food. Sixth + Mill Ristorante, Pizzeria and Bar features a range of interesting cocktails, from the seasonal Orange Unicorn, a little like a screwdriver, but elevated with ingredients like Tito’s vodka and the complex Licor 43. Depending on what you order to eat, you’ll find a few good craft beers and amazing wines by the glass to complement your dish. As an appetizer, beef and pork meatballs in San Marzano tomato sauce, grilled octopus, beets with burrata and beef tartare are very satisfying. And although you may be tempted to

make those meatballs your main meal, please!— you can do that with the pizza. The pies here are delectable, and one favorite among patrons is the Vince, laden with mortadella, mozzarella and burrata. The addition of the pistachio and orange zest adds another dimension entirely. The funghi pizza features field mushrooms, mozzarella, roasted garlic and arugula, while the Margherita includes San Marzano tomatoes, fior di latte and oregano on a puff y crust. As you might expect at an Italian restaurant, pasta covers a wide variety of shapes and styles, including lasagna with ricotta, provolone, tomatoes, beef and pork ragu. Other options

include pappardelle with a wild boar sugo, classic cacio e pepe and gnocchi with burrata, Reggiano cream and arugula pesto. Entrées include salmon, chicken parmigiana, lamb chops, and seafood risotto with shrimp, mussels, clams and scallops plus vialone nano rice, which produces a super-creamy risotto. For something that just sounds wild, the braised beef cheek comes with saffron-infused Aquerello rice. Aquerello is actually a white rice that’s been aged 12 months on a Piedmont farm. Meal to Remember Although Ruth’s Chris Steak House is a chain restaurant, dining there always feels like a unique experience, especially when that experience is in Las Vegas. Part of it has to do with the ambience, for the restaurant’s floor-to-ceiling windows offer incredible views of Caesars Palace, which is a wonderful backdrop for a meal. But since the restaurant was founded in New Orleans, there’s a distinctive, easygoing feel that permeates the restaurant and its menu. Start your meal with a specialty cocktail like the refreshing French Quarter 75, a mix of gin, St-Germain, prosecco and lemon. Then it’s time for some comforting appetizers, like the blue crab cakes served with a sizzling lemon butter or the chilled seafood tower stacked with Maine lobster, Alaskan king crab legs, jumbo shrimp and lump blue crab. But you’re likely visiting Ruth’s Chris because of their stellar steaks, and you can’t go wrong with the 11-ounce filet, the 16-ounce New York strip, or the 24-ounce T-bone, all of which are broiled and served to your table sizzling on a 500-degree plate. Old Canadian Way Part of Diaz’s job as the director of beverage is to oversee the menu and cocktail creations of the beverage outlets at The D and the DLVEC. When The D’s upstairs bar was recently redesigned as BarCanada, Diaz and his team created cocktails that were Canadian-themed, like the Old Canadian Way. Many of them are a Canadian twist on classic cocktails, and this one is a twist on the Old-Fashioned. It’s mixed with Crown Royal Maple Finished whisky, Angostura bitters and simple syrup. –KM

Success is a shared experience for this director Hector Diaz believes in his company, believes in his employees, and believes that success is achieved as a team. As the director of beverage for The D and the Downtown Las Vegas Events Center, he says, “The great thing about working for this company is you’re not just a person alone—you’re a part of something bigger. We make decisions as a team. That is the best feeling to have. You go into work and watch as it grows. It’s very unique, the culture of the company, that we’re constantly interacting and taking in each other’s perspectives.” For six years, Diaz has been with the property, hired on a month after he moved to Vegas in 2014—starting out as a beverage manager and promoted to his new position last June. Before he moved to Vegas, he was successful in the food and beverage industry in his hometown of San Diego, holding management positions at golf courses, nightclubs and sports bars. “And I saw some of my directors and VPs were going

to Vegas and I said, ‘What’s in Vegas?’ I wanted to grow,” he says. So, he sold everything he had and made the move—and it’s paid off. “I attribute most of my successes to my grandparents—how they raised me, showed me a strong work ethic and dedication,” Diaz says. “I give all respect to them. My grandfather was always working. He went from having no education to having his own company, raising 10-plus children, taking care of his family and setting a good example.” But Diaz also believes his successes are attributed to his mentors, and he believes in paying it forward. “I’m just grateful for the people that I’ve encountered in my career,” he says. “From directors to VPs—I think it takes strong leaders for you to be a strong leader. The mentoring is so important, and I in turn have applied the same to my managers. It’s good to help them grow and become strong, because then everyone is successful.” –Kiko Miyasato

You’ve Got Options

Twenty-one drinking hot spots for whatever mood strikes you In honor of 2021 we’ve rounded up some hot spots in town to get your drink on—21 of them! If you want to try your hand at some luck, think about doing some drinking and gaming at O’Sheas at The Linq Hotel. The Irish-themed bar not only has a killer beer collection, but you can make some blackjack and roulette bets. Also, Carnaval Court at Harrah’s has blackjack tables, and up at the bar you can marvel as flair bartenders entertain with their cocktail-making skills. For some patio partying, Margaritaville at Flamingo offers a few levels to relax and watch the traffic on the Strip. Beer Park at Paris, with its rooftop, picnic-style patio, has great views of the Bellagio fountains and tons of beer and cocktail selections. Vice Versa at Vdara has a

romantic, cozy patio, and Foundation Room at Mandalay Bay affords high-up views of the boulevard from the expansive patio. For a bit of that old-school, speakeasy-type experience, head downtown to Oscar’s Steakhouse at The Plaza and have a classic cocktail in the lounge. While downtown, take it to the basement of The Mob Museum for The Underground—one of the truest speakeasy-type settings where there’s an actual moonshine distillery. Another classic haunt is Parlour Bar at El Cortez, a property that represents Vegas’ glittery past; the bar is part of that 60-year-old charm. If you’re a red meat fan and are looking for a “Giada Classic” (yes, it’s denoted throughout the menu), the no-brainer here is the 28-ounce bone-in Tuscan ribeye, topped with a sunny side-up egg and arugula. But other favorites on this menu section include the veal chop saltimbocca (served Milanese style, meaning the thin pieces of meat are covered with

eggs and seasoned bread crumbs before frying), and the petit filet, served with a loaded sweet potato, escarole and an amarone-maple sweet-and-sour sauce. Seafood lovers will find plenty to enjoy here as well, from the seafood tower that could feed an army with its selection of shrimp cocktail, king crab, Maine lobster and oysters, to the branzino, succulent and served with artichokes, sun-dried tomatoes and lemon butter sauce. With any course, make sure to pair them with sides like smashed and fried lemon potatoes and broccolini, roasted with Parmesan, garlic The Cromwell and lemon zest. 855.442.3271 Please, please, please, make sure to save room for dessert. Giada has some of our favorite sweet treats on the Las Vegas Strip, especially those lemon ricotta cookies—heaven! As much as we’re happy to say goodbye to 2020, we absolutely cannot wait to enjoy all that’s coming to Las Vegas in 2021! In addition to new properties, rebranded properties and properties that we didn’t get to enjoy in 2020 because of COVID-19 restrictions, we’ll also see new residencies and the return of some of our favorite performers and shows. Donny & Marie said goodbye to Las Vegas in 2019 after an 11-year run at the Flamingo, but fans of DONNY OSMOND will be happy to know that he will be returning to the Strip in August to headline his own show at Harrah’s. Expect all of his greatest hits and—we sincerely hope—an occasional guest appearance by his equally famous sister. The coming year will also see the arrival of a brandnew residency at the Colosseum at Caesars Palace: USHER, who’s set to begin there in July. In addition to his top-selling albums, Usher is known to millions for his appearances on The Voice. He’ll have plenty of hits to perform, spanning a 26-year career, and as anyone who’s seen his videos knows, there will be plenty of hot dance moves. The Las Vegas Raiders played their first season at ALLEGIANT STADIUM in 2020, but because of the pandemic, fans were not allowed in. (Even owner Mark Davis, in a show of support for the fans, didn’t attend games). But it’s a good bet that policy will change this year. It’s one thing to see Allegiant Stadium on NFL broadcasts; it’s going to be another thing entirely seeing it in all its glory. We cannot wait to see that huge Al Davis Memorial Torch in person! MAGIC MIKE LIVE was a massive hit upon its opening at the Hard Rock Hotel in 2017, and fans have been anxiously waiting for it to return since announcing its move to Sahara Las Vegas in 2019. The events of 2020 forced the show to push its opening date, but we’ve no doubt Channing Tatum’s brainchild will pack in crowds to the rafters once it reopens in March. Speaking of the Hard Rock Hotel, its transformation into VIRGIN HOTELS LAS VEGAS was supposed to be unveiled on Jan. 15, but the pandemic has set that back a bit. An opening date has yet to be announced, but hopefully we see the re-emergence of this vibrant, fun property in 2021. Another property that opened last year but whose hotel only debuted at the end of December is CIRCA RESORT & CASINO, Derek Stevens’ gem that promises to redefine the downtown experience. From its massive sports book to its year-round pool experience, this will be one of the must-visit destinations in 2021. Another must-visit venue will undoubtedly be RESORTS WORLD LAS VEGAS, a 3,500-suite property promising world-class dining, entertainers, shows, mixology and much more, tentatively opening in summer.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.


There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Reality Bites During quarantine, Giada De Laurentiis was filming Giada at Home 2.0, a pandemic-inspired offshoot of her popular Food Network program. Maybe you saw her cooking and thought, “Man, I’d like to try some of that.” Well, at Pronto by Giada (Caesars Palace, 702.731.7266), you can dig into several of her casual, California-inspired Italian creations.
