New Year, New Challenges Still very young, 2021 is experiencing some major growing pains. The vaccines to fight COVID-19 are arriving, but slowly; civil unrest threatens the current presidency; and Nevada, and Las Vegas, are still operating under strict social distancing guidelines until we can flatten the curve. We definitely have a long way to go before we’re operating at full capacity, but we are operating. And we’re definitely doing our best to make your visit this week safe. This week’s issue of Las Vegas Magazine is packed with helpful, insider information designed to help you make the most of your time here. A must-read is managing editor Nina King’s latest installment in our “Day Planner” series. This week, King gives you an ideal day spent at the intersection of Las Vegas Boulevard and Harmon Avenue (“Organization is Key,” p. 22). This is a bustling area, and our itinerary will allow you to hit all the key points. Even though shows on the Las Vegas Strip have had to significantly downsize crowd numbers to comply with the governor’s COVID-19 protocols, they are still selling tickets. Fans of America’s Got Talent will no doubt recognize Tape Face, who returned to his hit show at Harrah’s last year. The show has changed somewhat, but still offers the same laughs you remember from AGT (“Louder Than Words,” p. 20).
One of the Strip’s hottest must-visit destinations is The Linq Promenade, which celebrates its seventh anniversary this year. Las Vegas Magazine editor at large Brock Radke takes a tour down this exciting, vivid corridor that includes great restaurants, exciting attractions and overthe-top bars (“Walk the Walk,” p. 24). Las Vegas is known worldwide for its classic cocktails, and associate editor Kiko Miyasato rounds up nine of the coolest places to enjoy said cocktails in our latest installment of “Vegas 9s” on p. 26. No matter your taste or budget, you’ll find something to enjoy here. In addition to cocktails, Las Vegas is quickly becoming renown for its local craft beer scene. Tell the Universe When you wish upon a … tree? At The Grand Canal Shoppes at The Venetian & The Palazzo, The Wishing Tree lets you send your fervent desires into the universe, and yet keep them close to earth. Recently, an augmented reality component was added to the tree, allowing guests to experience a super-neat visit designed to inspire peace, hope and good fortune. Local firms Best Agency and Lumen and Forge created a special Instagram filter just for that. Scan a QR code near the tree, and you’ll be able to say your wish and watch in wonder as that wish takes flight to nestle among others that guests have made. The 20-foot-tall Wishing Tree, located in The Palazzo Tower, is itself an impressive feat, custom-made and inspired by Italian olive trees, with more than 3,700 3D-printed brass leaves, and an array of cast-glass birds of many colors perched throughout the branches. Their chirps can be heard in the outdoor-inspired area, which is based upon an Italian garden. While you can allow your wishes to float away during this visit to Vegas, The Wishing Tree will be the focus of more AR experiences to come and will change out seasonally. Plus, it’s free! –Nina King

A Culinary Classic
Wolfgang Puck’s legacy lives on at relocated icon Wolfgang Puck is a world-renowned chef, but its arguable that the greatest impact he ever made in the culinary world was when he opened the Las Vegas outpost of his popular Beverly Hills restaurant Spago. Not only did it elevate Vegas’ dining scene in the ’90s, which was surprisingly unremarkable at the time, but it opened the door for other chefs of Puck’s stature to bring their culinary skills to the city. Now, along with being the Entertainment Capital of the World, Las Vegas is one of the world’s top dining destinations, and much of the credit goes to Puck. Yet, despite the growth of Vegas’ dining scene, Puck’s Spago remains very much a culinary mainstay. And its move from The Forum Shops at Caesars to Bellagio in 2018 made the

restaurant even more intriguing—now Puck’s classic menu is paired with a beautiful view of the Fountains of Bellagio, making it a very Vegas experience, indeed. To double down on that Vegas experience, a meal here must start with a fancy cocktail. Try the Reel Around the Fountain, a refreshing blend of Aperol, St-Germain, Moscato d’Asti, strawberry and lemon juice. But if you’re more old school, the barrel-aged Negroni hits the spot. Move on to chilled starters like the kaluga caviar or the seafood tower, which includes poached Gulf shrimp, Maine lobster, seasonal poke, king crab legs and more. But you may want to try one of Puck’s signature dishes, and the smoked salmon pizza with dill cream, red onion
and salmon pearls is a showstopper. To make the dish even more decadent, top your pizza with kaluga sturgeon caviar. For an entrée, you can’t go wrong ordering one of Puck’s handmade pastas, such as the butternut squash ravioli, or the spaghettini pomodoro topped with Sungold cherry tomatoes, Parmigiano-Reggiano and Genovese basil. But if you’re seeking something more substantial, opt for the roasted Colorado lamb rack, the miso-marinated organic salmon, the 12-ounce New York strip or 8-ounce wagyu ribeye. End the night with the dark chocolate soufflé served with vanilla ice cream and chocolate sauce, and you’ll leave feeling satisfied, knowing exactly how Spago helped shape the Strip. –Alex Haase

Supreme Sushi At Nobu Matsuhisa’s Nobu, sushi and sashimi is king, with a huge range of fish and seafood being used in its preparation, such as big-eye tuna, fluke, Japanese red snapper, yellowtail, and salmon. Get hand rolls or cut rolls, and for the best of the night, order the omakase for a multicourse tasting menu. That even comes vegetarian, if you so desire. Accompany your meal with edamame, mushroom salad, shishito peppers or kelp salad. There are plenty of hot and cold dishes, too—the options seem never-ending. Try monkfish pate with caviar, oyster or uni shooters, spicy crab and wagyu gyoza. The expansive menu also encompasses tempura, including a whole Maine tempura lobster, and tobanyaki, where you can enjoy Japanese A5 wagyu. The steak is available grilled or in other styles. Grilled items include free-range chicken, beef tenderloin, roasted seasonal veggies and cauliflower with jalapeño. Don’t Look Down This year, take your sense of adventure to new heights by riding thrill rides atop The STRAT’s Skypod. At nearly 1,000 feet above ground, three extreme amusement rides await. And there’s no ranking which one is more thrilling, as they all offer their own adrenaline-pumping (and slightly terrifying) experience. Greisy Pacton
Making her mark in Las Vegas Greisy Pacton is a boss lady in the Las Vegas food and beverage industry—and she has the résumé to back it up. She’s helped open and manage restaurants for chefs and restaurateurs including Kerry Simon, Elizabeth Blau and Giada De Laurentiis, and now she serves as the general manager at celebrity chef Gordon Ramsay’s Paris restaurant, Gordon Ramsay Steak. Born in Puerto Rico and raised in Queens, New York City, Pacton moved to Las Vegas in 2001. She spent the first seven years helping to open and to run Simon Kitchen & Bar at Hard Rock Hotel, Cathouse at Luxor and Simon Restaurant at Palms Place. She got homesick for New York and moved back for a couple of years, going on to help open and manage the famed Barclays Center. “Then in 2014, I missed Vegas, it had become home, and we wanted to come back home,” she says. A short while after being back, she joined Giada at The Cromwell as the restaurant
manager, eventually being promoted to general manager. In 2019, she applied for and was named general manager at Gordon Ramsay Steak in September. “In my opinion, this restaurant set the tone for what a celebrity restaurant should be,” Pacton says. Managing a restaurant with such a famed chef’s name attached to it “feels good,” she says. “It makes you feel special. Guests are die-hard fans of Ramsay, and their excitement is contagious. We’re not saving lives, but we’re creating memories, and it feels good.” After two decades in the industry, you can still see the twinkle in her eye and hear the genuine passion in her voice when she speaks about her success. “You have to believe in what you’re doing to be in it for so long,” Pacton says. “I love it. I don’t think I’d want to do anything else. I never thought I’d be managing multimillion-dollar operations—it just feels amazing to say that.” –Kiko Miyasato

Breweries across the valley offer unique products Moving into a new year is certainly something worth rejoicing, and never more so than this year. To help us celebrate, our local brewers have come up with several unique, creative brews to help herald in 2021. CraftHaus continues to be one of the Las Vegas Valley’s most creative and distinctive breweries, and head brewer Cameron Fisher has now brought us Wundernutz!, an Imperial Brown Ale with vanilla and hazelnut coffee offering a huge toasted hazelnut aroma with a vanilla tsunami and a bold, roasted coffee finish. Richard Lovelady at Lovelady Brewing Company continues to push the boundaries on what ingredients can work well in beer, evidenced by his 7.8 percent ABV Paleo Rex, an Imperial Porter with chocolate, peanut butter and coffee; and Sichuan Down, a 6.7 percent ABV Golden Ale with Sichuan pepper and five different Chinese hot peppers. Dave Pascual, director of brewery operations at Big Dog’s Brewing Company, has a robust beer to help us begin the new year with: his War Dog Imperial IPA, an 8.5 percent ABV Double
IPA heavily hopped with Simcoe and Amarillo. Delicious and oh so satisfying! Head brewers Michael Key and Eddie Leal at Ellis Island Hotel & Casino have their Let’s Get Hazy, a 6.3 percent ABV New England-Style IPA with intense tropical fruity aroma and flavor, thanks to the TropiCali and New Zealand hops it’s brewed with. Head brewer Zach Johnson at Trustworthy Brewing Co. at The Grand Canal Shoppes at the Venetian and The Palazzo has created a crisp, clear Mexican lager, and as the Burbank brewery location’s fourth anniversary is on Jan. 11, we can expect some of the special beers brewed for the event to make their way to Las Vegas shortly thereafter. –Bob Barnes

FEW RESTAURANTS on the Las Vegas Strip have a better location than Tom Colicchio’s Heritage Steak. Nestled in the heart of all the action at The Mirage, it’s also right next to the property’s gigantic atrium, and you’re likely to spend a few minutes just gawking at it before you even make your way into the restaurant. But you quickly realize that Colicchio’s destination is a wonderful complement to the lush foliage and water features, with its dark, burnished wood

décor and warm, welcoming atmosphere. It almost feels like an extension of the atrium. Fans of Colicchio are no doubt aware of his high standards on such shows as Top Chef and Best New Restaurant. You would no doubt be expecting nothing but the best at one of his restaurants, and as you work your way from appetizers to the main courses to dessert, you are never disappointed. Colicchio’s restaurant, like the man himself, is unforgettable.
There are several must-try items on the appetizer menu, especially the wonderfully presented charred octopus, served in a leek vinaigrette with roasted red peppers and romesco sauce. So tender and so full of flavor! If you’ve avoided octopus up to now because of its texture, this will make you a lifetime fan. You’ll see a lot dishes you recognize from other menus, but Colicchio has packed a flavorful twist into each one, from the French onion soup smothered

with caramelized Gruyère to the jumbo lump crab cake served with watercress, apple and remoulade. Even the salads will make your tastebuds pop with surprise, especially the romaine Caesar with a soft-cooked farm egg and pickled white anchovy. Yum! Main courses will be familiar to any The Mirage fan of a classic 866.339.4566 steakhouse, and all are worthy of consideration. You’ll be tempted (and rightly so!) to order the 16-ounce prime rib, served with au jus and Yorkshire pudding, as it’s easily one of the best things on the entire menu, but there’s something for every palate here: Seafood lovers can enjoy sea scallops, served with roasted root vegetables and smoked bacon jus, and king salmon, accompanied by braised red cabbage and fennel. The 12-ounce Colorado lamb chops are amazing here, as are all the steak selections, from a 10-ounce American wagyu skirt steak, flavored with a Tabasco By KEN MILLER rub, to the 48-ounce Mishima ultra tomahawk, meant for mulPhotography by PETER HARASTY tiple diners. Make sure to pair your meal with one of Colicchio’s great sides, from crispy Brussels sprouts and spicy cauliflower to creamed spinach and decadent truffle risotto. Well, even if you didn’t, you’ll still want to take something to go, including the chocolate cake topped with raspberry compote, the vanilla bean cheesecake with strawberry gelée and whipped cream, and the key lime pie with graham-cracker crust and Roasted Brussels sprouts whipped cream. Well, technically, it’s Wills, who hosts a short Q&A with the audience before performing the routines that made him famous. And during those routines, Tape Face will have a narrator, commenting on the action. But not to worry—comedy is comedy, whether it’s
WHEN SAM WILLS FIRST showed his, uh, face to the world on NBC’s reality competition show America’s Got Talent, it was a little more than awkward at first. He came out, duct tape covering his mouth, looking like he’d come straight out of a Tim Burton movie, staring wide-eyed at the judges and unable (or maybe unwilling?) to tell them anything about himself. But then “Endless Love” began to play, and a star was truly born. Wills, now known to millions as Tape Face, produced two oven mitts, one on

each hand, serving as puppets that sang to each other (one Diana Ross, one Lionel Richie). As they sang, the mitts came closer together, culminating in a kiss that appeared to truly embarrass Tape Face. What made the moment so amazing wasn’t so much the clever way Tape Face used the mitts—it was his body language, communicating so much with eye rolls, double-takes and furtive glances. It was a reminder to a generation that audiences used to get their laughs from silent movies—you don’t need words to be uproariously funny. Sims, a New Zealand native, did not win that season of AGT (the winner gets a million dollars and a headlining show in Las Vegas), but it scarcely mattered. His popularity was undeniable, and it wasn’t long before he got his own show on the Las Vegas Strip—his own theater called The House of Tape at Harrah’s. His was one of the first shows to return following the shutdown of Las Vegas, but because safety procedures are in full effect— reduced audience size, at least 6
played before 10,000 people or 10. And besides, one of the things that always made Tape Face’s shows so great is his connection with the audience. Most who have seen his show would agree: This show would not work as well with a massive crowd. At its heart, Tape Face feels like something you could easily reenact in your living room, surrounded by friends and family. The antics of Tape Face appeal to all ages, so definitely bring the kids. Another element that makes this show feel so universal is that Tape Face’s props are all things you have around your house: balloons, staple guns, toilet seats, plungers, tape measures, flashlights, coats, and much more. The fun lies in the anticipation you feel, wondering how Tape Face is going to use his chosen implement. When you do get the payoff, your reaction will range from a pleasant smile to a hearty laugh, but you’ll always be anxiously awaiting the next gag. And that’s definitely the first rule of show business: Always leave them wanting more.

Hey you! If you’re in Vegas, you’ll find there’s a lot to accomplish—yes, it takes some planning to make relaxing even more effective, but it’s well worth the effort. In Las Vegas Magazine’s ongoing Day Planner series, we give you a suggested itinerary to help make the most of your Vegas trip. In this installment, check out the options if you’re staying near Harmon Avenue and Las Vegas Boulevard South. A few tips: Switch things up by subbing in a new restaurant or attraction, if your first
choice is booked. Walking shoes are essential—allow 15 or 20 minutes between destinations; and getting those reservations in early is a must. (Some venues are not open or offer limited hours and menus on weekdays.) 8 a.m.: Good morning! Run a comb through your hair or add a little eyeliner and get yourself over to Aria Patisserie and Pastries, where the concoctions of chocolate, sugar and all things good are ready to greet you and are displayed all around the airy stop. Get a hearty omelet, a creamy

yogurt parfait or indulge yourself with a fragrant crepe. 9:30 a.m.-1 p.m.: Amble through Aria and look at the artwork. The Aria Fine Art Collection is located all over the resort and City Center, with sculpture, paintings and large installations. On the Aria website, you’ll find a guide to the pieces. While you are here, do a little gambling, too. The machines are a little less populated during the morning hours. Make your way over to The Shops at Crystals to take in a floating wooden staircase—an amazing artwork. Hermès, Alice & Olivia, Dior and Cartier are just a few of the incredible boutiques here. 1-2:30 p.m.: Head to your lunch at Gordon Ramsay Burger at Planet Hollywood Resort, and work up an appetite on the way over. The famous chef’s burger joint offers an array of dishes, and burgers are just the start—find kettle chip nachos with beef short rib, a fish and crisps burger and the Forest burger, with Tremor cheese, forest mushrooms and duck bacon. This is definitely the place for your first beer or cocktail. 2:30-7 p.m.: Time for a nap! Chill out in your hotel room, or leave your partner and mosey

to the casino floor for a little gambling and another drink. If you feel up to it, hike to Eataly at Park MGM, where you’ll find an Italian marketplace with tons of cool things to take home. 7-8:30 p.m.: With so many great options, it’s hard to narrow down your dinner choice, but a reservation at Catch at Aria will not disappoint. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
