From the Editor Let It All Go
Whether you love or hate stand-up comedian Bill Maher, the man had some very kind words about Las Vegas recently on his HBO show, Real Time. While talking to Jimmy Kimmel, a Las Vegas native who now has a comedy club in Las Vegas, Maher said an impact of the pandemic that has really gotten to him is not being able to tour anymore—Las Vegas in particular. “I miss Vegas,” Maher said. “We need one place in America that will be the bastion of political incorrectness. Someplace has to be a place where we don’t have to conform and be perfect.” As longtime Las Vegas residents ourselves, the staff of Las Vegas Magazine has one resounding answer to that: Amen, Bill! As our country continues to experience the growing pains of a growing divide between parties (often within those parties themselves), it’s extremely comforting to know that Las Vegas is, indeed, a place where none of that matters in the slightest. And this week’s edition of Las Vegas Magazine is all about letting go of your stressors and letting your hair down all the way to the ground! This issue has it all, from Q&As with comedian Tape Face (“Breaking His Silence,” p. 26) to Iron Chef Masaharu Morimoto (“A Culinary Icon,” p. 22). We run down everything there is to do at the iconic
Fremont Street Experience (“City Lights,” p. 20) and, perhaps best of all, break down the best way to enjoy Las Vegas for just $100 a day ( p. 24). We know some people might spend that much on one hand of blackjack, but we also know there are some budget-conscious visitors out there as well. Hungry and in need of some seriously delicious options? You’ve come to the right magazine! Check out our walk-throughs of restaurants like Jean Georges Steakhouse at Aria (“Lasting Impressions,” p. 10), Veranda at Four Seasons (“An Enticing Repast,” p. 12) and True Food Kitchen at The Forum Shops at Caesars (“A Focus on Health,” p. 15). Maybe you’re searching for that perfect, Instagrammable Vegas attraction to make everyone back home jealous. They don’t come any sexier than The High Roller at The Linq Promenade (“Making the Round,” p. 8) or the Eiffel Tower Experience at Paris (“Take in the Sights,” p. 12). And speaking of that political incorrectness Maher mentioned, you won’t find a better example than Brad Garrett’s Comedy Club at MGM Grand (“Funny Ha Ha,” p. 7). We’re so glad you picked this week to visit. And we’re glad you’ve allowed our magazine to show you the best ways to leave the real world behind for a while.

Making the Rounds It’s inarguable that Las Vegas has the most unique skyline in America. Where else can you find a pyramid, next to a medieval castle, near a Manhattan skyline, near an Eiffel Tower replica, near a space needle? Yeah, nowhere. And smack dab in the middle of this skyline is the High Roller, a bright, beautiful observation wheel that stands 550 feet. For scale, that’s 100 feet taller than the London Eye. And while it’s mesmerizing from the outside, the view is even better from the inside. With its great height and floor-to-ceiling glass cabins, the attraction offers incredible 360-degree views of Sin City. Daytime viewings reveal the stunning mountainous scenery that surrounds the Las Vegas valley, and late afternoon rides offer a chance to watch a gorgeous sunset. But nighttime views are ideal, for they capture the dazzling big-city lights that make this town so romantic and alluring. One spin cycle lasts half an hour, which seems like enough time to relax and take in all the scenery, but by the end of one revolution, you’re already thinking about taking another spin. –Alex Haase

Elevated Dining Vic & Anthony’s Steakhouse started in Houston, and its accolades over the years are few too many to list here. When the owners decided to open their second location, the choice was obvious: Las Vegas. And we can guarantee: All the elements that lead to the original’s success are present and accounted for here. First and foremost on the menu is its Kobe beef program, one of the most prestigious in the country. All the Kobe beef

comes from cattle in the Hyogo Prefecture in Japan, making it some of the finest beef you’ll ever order. The quality continues with A5 Japanese wagyu filet mignon from the Kagoshima Prefecture. Pricey? Oh yes. Worth it? Do you even have to ask? Other joys here include a vast seafood menu, lamb chops and pan-roasted chicken, tuna poke, steak tartare, maple-glazed quail and so much more. –Ken Miller Golden Nugget, 702.386.8399

Lasting Impressions
Elegant steakhouse offers experience of a lifetime Outside of the culinary world, Jean-Georges Vongerichten may not be a household name, but it’s a name any Vegas visitor needs to remember, for Jean Georges Steakhouse is one of the most exquisite dining experiences on the Strip. From the elegant, art deco-inspired décor of the space, to playful twists on classic cuisine, the steakhouse promises to impress. Vongerichten is well-known for incorporating Asian-inspired influences in his cuisine, and it starts with the cocktails. If you’re looking for something bold, go for the Japanese Old-Fashioned, a blend of Japanese whisky, Demerara sugar, ginger and bitters, but if you prefer something light and refreshing, a gin and tonic balanced with yuzu fruit and shiso leaves is the perfect choice.

Move on to appetizers like the Japanese wagyu carpaccio served with black truffle fritters and lime salt, bacon-wrapped shrimp with avocado and papaya mustard, or pan-roasted octopus with crunchy potatoes and smoked chilies. From the raw bar, other delicious bites await, such as the Gulf shrimp cocktail, oysters on the half shell and the crispy sushi sampler. As an entrée, you’re likely to salivate over their selection of steaks. Prepared in a wood-burning grill, which fires up apricot and mesquite wood that give the meats a unique flavor profile, you’ll find juicy cuts like filet mignon, New York strip, and a huge tomahawk ribeye. But those are pretty standard cuts among steakhouses on the Strip. Yet, Jean Georges Steakhouse carries a supreme cut of beef you won’t find in most
steakhouses: the vaunted A5 certified Kobe beef. Although it clocks in at $65 an ounce (3-ounce minimum), you should treat yourself, because you may not get another chance to try that beautifully marbled, melt-in-your mouth hunk of meat. If you’re looking for leaner meat, the Chilean sea bass with a miso-yuzu glaze or the roasted salmon with Brussels sprouts are equally delicious options. Pair any entrée with sides like the creamy black truffle mac and cheese, crunchy potatoes, creamed spinach or hand-cut fries. Then, cap off the night with warm Valrhona chocolate cake served with vanilla ice cream, or a seasonal sorbet, and enjoy the quiet final moments of a perfect meal. We promise you’ll remember the name from now on. –Alex Haase

When it comes to respected names in the Las Vegas food and beverage industry, this Philadelphia-born woman is at the top of the list. Since moving here a decade ago, she’s been one of the go-to people to help set up, open and organize bars for hot spots like Rose. Rabbit. Lie at The Cosmopolitan, downtown bars including The Laundry Room, Park on Fremont and Commonwealth, and The Dorsey, when it opened in 2016. “When I first started bartending, I went to the liquor store and wrote down every brand and every category of spirits and familiarized myself and learned all of them,” Kang says. “It was like this great mystery that I wanted to solve. I love solving puzzles, crosswords, jigsaws—so it fit perfectly with me. I’m really good at organizing bars, setting them up, making it simple. I see
the whole picture; I get into the details. It’s solving a puzzle, there’s that connection.” Behind the bar, Kang is known for making some of the best booze-forward cocktails and her whiskey knowledge is on point, too. “I’ve also finally figured out how to perfect the egg white cocktail, to make it silky,” she says. While much of her knowledge is selftaught—with a constant eagerness to continue learning—she’s also had great mentors. “A lot of people along the way believed in me to do well, and they gave me mentoring, tips and advice, and I took it and used it, and that’s why I am where I am,” she says. Kang is also dedicated to mentoring the next generation of bartenders. “I always say that every bartender should be kind and have a bit of humility,” she says. “You have to be able to own the bar but with kindness. Mob Museum makes ‘legal’ hooch at The Underground The National Museum of Organized Crime and Law Enforcement in Downtown Las Vegas, commonly known as The Mob Museum, is operating its own brewery and distillery. Dubbed The Underground for its basement location, the wing is dedicated to educating visitors about the era of Prohibition, but the moonshine and beer being produced are definitely “legal” hooch! Overseeing the brewing and distilling operations and The Underground’s Speakeasy is director of food and beverage Clint Thoman, who, along with brewer/distiller Clint Everett, determines the beer styles and variations of moonshine being made. Thoman said several beer styles are brewed, but only one type of spirit: moonshine made from 100 percent yellow

corn and twice distilled to increase flavor and alcohol content. Everett began as a volunteer, but soon expressed an interest in the operation. After on-the-job training, he became the resident brewer/distiller. During a recent visit, moonshine varieties available were the signature moonshine and two infused—one with cinnamon and another named Ginger Jake with ginger, allspice, lime, jalapeño and cinnamon. Since its opening in 2018, the brewery has doubled its capacity and now can offer two beers at all times. Two beers pouring were Irish red and porter ales; beer styles previously offered have included cream ale, IPA, hefeweizen and dunkelweiss (all brews that were made during Prohibition). Both the moonshine
and beer can be imbibed in the Speakeasy, steps from the brewing and distilling apparatus. Those wanting some to enjoy at home can purchase bottles of moonshine and growlers of beer at the museum gift shop (both can be ordered online, but must be picked up in person). Pints of the beer go for $8 and growlers are $19.95 or $10 for refills; and moonshine pours are $6.95$7.95 for 50 ml, $15.95-$18.95 for 375 ml and $20.95-$24.95 for 750 ml; a variety pack of three 50 ml bottles is $25. Fremont Street Experience keeps evolving and only getting better In the heyday of Vegas, it wasn’t the Strip that was big, it was Fremont Street. The first hotel in Vegas, Golden Gate (formerly Nevada Hotel), opened in 1906 at Fremont and Main, and it’s still there. Casinos and hotels lined both sides of the avenue, and celebrities and stars could be seen in the glow of the famous lights. But gradually, the resort business in downtown Las Vegas began to slow because of competition from the burgeoning Strip. By the early ’90s, the city and businesses felt they needed a draw, something that would give visitors more than a place to gamble; it would give them an … experience. Many ideas for the downtown attraction were proposed, included building a replica of the Starship Enterprise or having a Sky Parade under a gigantic canopy; ultimately the VivaVision light show was selected. The canopy took more than a year to construct, beginning in 1994. When it debuted in December of 1995, VivaVision consisted of thousands of sets of incandescent lights in panels secured to the underside of the

Fremont Street Canopy; a sophisticated computer program and 32 computers installed along the Experience controlled the light shows, which played from dusk to midnight as crowds stood and gaped. Since opening, VivaVison and the Fremont Street Experience have been upgraded several times, including one in 2004 that installed 12.5 million LEDS and the latest in 2019, which upgraded
the canopy’s video screen, increased the lights to 49.3 million (which allows the attraction to play during daylight hours), and added new entertainment elements, including music by The Killers, Imagine Dragons, Steve Aoki, The Chainsmokers and Linkin Park. Currently, shows run from 6 p.m-1 a.m. daily, although those times change with the seasons. Several bars offer prime viewing spots for watchers.

Through the years, three stages have offered free shows with live bands such as Three Doors Down, Smash Mouth, Joan Jett & the Blackhearts, Melissa Etheridge, Everclear and many others. Buskers and artists provided additional entertainment, and new attractions have opened along the pedestrian promenade (and some have closed due to the pandemic). The biggest is certainly SlotZilla, a 12-story zipline whose towers are designed to resemble giant slot machines. Riders are launched either sitting or in a superhero flying position, reaching up to 40 mph. The newest hotel opening off Fremont Street is Circa Resort & Casino, which opened in October and began receiving guests in December. Some of the coolest aspects of the hotel include its Stadium Swim, an enormous swimming pool complex with a 40-foot-tall TV screen; Circa|Sports, a three-story sports book; and a steakhouse headed by lauded chef Barry S. Dakake. As Fremont Street evolves, there are likely to be many changes through the coming years—it’s sure it’ll be worth your time to see what the future holds.

You’ve received different awards and recognition throughout your career but what does this one mean to you? Being inducted into the Asian Hall of Fame is a tremendous honor. I take so much pride in being Japanese, so being awarded the Culinary Icon Award is very special. It has been great to learn more about the Asian Hall of Fame and all they do for the Asian community. It not only celebrates national and international influencers across multiple disciplines, but they also assist in increasing positive messages of Asian excellence and cross-cultural narratives through their fundraising and programs.
Sushi has seemed to emerge as a comfort food for many people. Have you rediscovered any comfort food favorites of your own during this time? Ramen has long been one of my favorite comfort foods, and I have been turning to it more throughout the pandemic, and especially lately as the weather started getting colder. I opened my first Momosan Ramen & Sake in New York City as a more casual way to enjoy the foods that I love to eat and cook, with a focus on noodles plus izakaya-inspired dishes like gyoza, karaage (Japanese fried chicken) and crispy mimiga (pig’s ear). We now have three U.S. locations and introduced an instant ramen version that guests can MGM Grand ... prepare for them702.891.3001 selves at home.
Sharing food and styles of cuisine is such a natural way to share one’s culture as well. How important is it for you to continue to tell your story through your food? It is very important to me. The art of cooking is so unique and that’s why I love it. I like to cook using ingredients that are in season, every season, and choosing the cooking method that best suits the ingredients... For me, it’s all about using the best ingredients possible and preparing them with respect and passion for creating a delicious dish.
You must have felt some relief when your restaurant at MGM Grand reopened. What kind of changes have you made to the experience there as business warms up? I was very happy when Morimoto Las Vegas reopened. We are committed to making every guest’s visit as comfortable and enjoyable as possible. The team there is following all mandated restaurant guidelines put in place to ensure a compliant and safe dining environment and appreciate the guest’s cooperation, while still being able to create a culinary experience that will be memorable.
Has the pandemic changed the way you see your own brand and business? The pandemic has been especially hard on the restaurant industry when you consider how many jobs have been lost... The pandemic reminded us of our strengths and taught our team how to quickly adapt our business model to best serve our guests and to bring our restaurant staff back together safely.

Fountains of Bellagio
Undoubtedly, the first night of a Vegas vacation is the best night. But it’s also the most dangerous night for your wallet. The excitement, the promise of an unforgettable experience, and the presence of friends, family and friendly strangers all might compel you to be a little more generous than normal. In those moments, it’s easy to blow most of your budget on a fancy dinner and several rounds of drinks for everyone and their mom. But don’t worry if you’re almost out of cash after day one, because you can easily budget an entire
day in Vegas for under $100. (Taxes, fees and tip are not included. Prices subject to change.)
Throughout the day, you’re going to need some sustenance, so it’s important to plan out your meals ahead of time. You won’t be able to eat like a king under a $100 budget, but you can get by with some good eats. For breakfast, PBR Rock Bar & Grill (Planet Hollywood Resort, 702.750.1685) offers a classic

breakfast with two eggs, bacon or sausage patties, mixed fruit and toast for only $6. The next two are interchangeable depending on what you’re feeling at the time, but we suggest heading to Blue Ribbon Fried Chicken (Grand Bazaar Shops, 702.800.0404) for lunch and ordering the classic fried chicken sandwich for $10. Then, for dinner, stop by Shake Shack (New York-New York, 725.222.6730) for a ShackBurger and an order of fries for $10. Don’t forget a side of ShackSauce!
Checking out Las Vegas attractions is the best way to save some cash, because many of them are free. At the 4-acre Wildlife Habitat (Flamingo, 702.733.3349), you can see more than 300 birds, such as Chilean flamingos, swans, songbirds and more, hanging out in a lush, exotic environment. There’s even a tranquil koi pond. Then, down the street you’ll find the world-famous Fountains of Bellagio, an elegant water show that always impresses, no matter how many times you’ve seen it. One attraction you can spend hours exploring is REAL BODIES
at Bally’s (702.777.2782). For $30, this exhibit, which features delicately preserved human bodies, will not only inform you about the inner workings of your body, but it might also make you think more deeply about what it means to be human.
As the night begins, and the city comes alive, you’ll be tempted to splurge, so we’ve saved the greatest expense for last. You’ll probably want a fancy cocktail, and the average price range on the Strip these days is around $18-$22. So if you’re going to spend top dollar, it’s best to head to The Dorsey (The Venetian, 702.414.1945), a swanky lounge that blends modernity with timeless elegance. The Penicillin ($18) is a favorite cocktail, a mix of Scotch, lemon, ginger, honey and Islay float. End the night with one of the most stunning views of the city at The STRAT Skypod. Admission ($25) gives you access to both indoor and outdoor observation decks atop the tallest tower in the city, capping off a day in Vegas for under $100, with a dollar to spare.

Tape Face speaks out about changes to his hit Strip show When multiple Las Vegas shows reopened in the fall, many adjustments were made to each production to maintain a memorable live performance experience while keeping audience, cast and crew safe. Creative changes were also part of the comeback, but few shows changed as much as Tape Face. Now that the Tape Face crew has performed more than 100 times, we checked in with the character’s creator and the star of the show, Sam Wills, for a behind-the-scenes glimpse at the process that powers one of the most intriguing entertainment options on the Las Vegas Strip.
By Brock Radke
What was the most challenging element of reopening the show in a different space at Harrah’s when you got back onstage in November?
what’s holding us back, where can we improve, where can we speed up and where can we cut.
The first hurdle we had to overcome was the … audience being 25 feet from performers at all times. So I ordered 1,000 polystyrene (mannequin) heads and 1,000 wigs, and then it was talking with the cast and crew and friends to go, right, who can donate a T-shirt? That’s how we built that fake audience to (sit in the first few rows). And then once we were doing it, we started refining it, what’s helping us,
How does the real audience react when people walk in and see these mannequins sitting in the front rows?

for me to host and introduce the other characters and I get a chance to tell people how it’s different now, and get a feel for what the audience will be like. And it gives me a chance to subliminally program a few people in certain ways to help the show go better. (Laughs.) Everything has a purpose. You’ve been performing as Tape Face all over the world for more than a decade now. What’s it like to be speaking onstage again during this meet-and-greet portion of the show? It’s so much fun that my stage manager occasionally has to tell me to tighten things up and stop talking. I end up having too much fun chatting away and talking to the audience and enjoying the conversation, and I have to remember they’ve come to see me not talk. (Laughs.) But I’m enjoying it. It’s really nice to have a voice again to play around and refine that style of storytelling. On America’s Got Talent I never spoke, nobody knew the backstory of Tape Face or where he came from, so it’s nice to go in front of these small audiences and say, here are the reasons I do the things I do.
as props to come and play my games. In this situation, we’ve got a chance to really script it and play with things. The second Tape Face character we have, we’ve kept him on and he’s created a new character, Harry Harrahs, the owner of Harrah’s. He’s this old man that sits off to the side of the stage and he’s almost like the narrative train of thought I genuinely have while performing. And he vocalizes that, which is really, really funny. We can take it further than I’ve ever been table to take it with a volunteer. If we could flip a switch and go right back to no pandemic circumstances, packed houses and everything normal, would you revert back to the show you were doing before all this? One hundred percent. This is very much a COVID show. We have taken these conditions and made a bespoke item for this. This is not the ideal condition of performing. From a creative point of view, it’s like a creative corner. You’re backed into this situation and you have to make something out of it. But under the conditions, Vegas can be enjoyable. Just wash your hands.
How has the show benefited from the additional characters? I’ve been very much a solo performer for many years. I use the audience members essentially

what’s been done to make your experience safer.
You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
COVID-19. It’s also considerate of fellow guests and resort workers.

You’ll notice hand sanitizer stations. Give yourself a squirt before and after playing slots or the tables, and anywhere it seems you might need it (after touching elevator buttons,

6 feet from people other than your travel companions whenever possible. Common places that lines form will often be marked, making this easy. Be patient—even though you are 6 feet apart, you’ll still be moving.
Practice social distancing. Stay
Try not to touch your face.
Periodically, wash your hands for at least 20 seconds with soap and water, then rinse for 10 seconds. You may receive personal size bottles of hand sanitizer in your room. Take those with you and use whenever it’s not practical to wash, or a hand sanitizer station isn’t close.

Teachable Moment During February, at Bodies ... The Exhibition (Luxor, 702.262.4400), you can learn about a lot more than the body itself. To commemorate Black History Month, the attraction has installed displays that highlight some of the Black men and women who have contributed to the fields of medicine and healthcare. Those include such people as neurosurgeon Dr. Alexa Canady, and Dr. William Edward Allen Jr., the first African American certified X-ray technician, among many others. Bodies is a little like a cross between a natural history museum and a biology class, where real human bodies have been preserved through the method of plastination, replacing body fat and water with plastics, allowing specimens to be moved and posed. They retain many of the properties a live body would, which is why checking out the exhibits is so fascinating. –Nina King
