One of the most memorable experiences of my life happened shortly after I accepted the editor position at Las Vegas Magazine: I was invited to fly into the Grand Canyon in a helicopter, land, and be served a hot meal. It took me about two seconds to say, “Uh, yeah!” The entire experience was unforgettable, from the smoothness of the ride and the friendliness of our pilot to the music he piped through our headsets (as we approached the canyon, he played “Thus Spoke Zarathustra” from 2001: A Space Odyssey, the perfect music for such an occasion). I asked someone to take my picture as we were enjoying our lunch; it’s the picture you see to your left. I think my face says it all. If you want to have that same feeling, I have two words for you: Maverick Helicopters, which I’ve profiled in this week’s cover feature (“Fly High,” p. 38). Heating Up Summer Shake Shack is well-known for its amazing burgers, fries and shakes, all made fresh, but for a limited time you can expand your horizons with the restaurant’s recently released summer menu lineup, available until Oct. 4. It’s ideal for fans of spicy food, highlighted by the Hot Honey Chicken, a honey-glazed, crispy chicken breast smothered with habanero mayo sauce and shredded lettuce on a toasted potato bun. Fans of finger food will love the Hot Honey Chicken Bites and Hot Honey Fries, both dusted with hot honey seasoning and served with habanero mayo sauce for dipping. The flavor continues with mocktails and shakes. The lime agave margarita features real lime juice, agave nectar, orange, jalapeño smoked salt and cane sugar. The Pina Punch is made with real blackberry and caramelized pineapple (so good!), in addition to fresh lemon juice, orange zest and agave nectar. If you want the views, all the views, take a short trip on the High Roller observation wheel, like an enormous Ferris wheel but with cars that can handle a large group—so there will be no chickening out with a “no room for me” attitude. It rotates once every half hour and hits 550 feet at its maximum height, but the trip around is really smooth—you may barely even realize you’re moving. There are a number of different packages available, including a “Happy Half Hour,” where you can drink as you take a spin, with up to 10 guest allowed on the wheel (Of course, you must be 21 and older). –Nina King The Linq Promenade, 866.328.1888

Knight Moves

Excalibur show deserves a mighty ‘Huzzah!’ You’d be hard-pressed to find another show in town where you can really let loose, be rowdy and be this loud—all in the name of fun. Tournament of Kings, which recently returned to the Strip, resuming its schedule of six nights a week, is quite the theatrical delight, providing guests with a chance to celebrate all things medieval, including King Arthur, Price Christopher and the Knights of the Round Table. The story starts with the majestic wizard Merlin coming out into the theater in the round and welcoming the audience to the Tournament of Kings—an evening where various countries gather to cheer on their kings as they compete

in feats of strength and knighthood. Your seat assignment for the evening assigns you to a country—Russia, Ireland, Spain, Austria, France or Hungary—or the dragon knight. It’s you and your section’s job to root on and scream for your king as he and his noble steed participate in various contests like javelin throwing and jousting. During the tournament, guests feast on a multicourse dinner of roasted, seasoned Cornish game hen, lemon pepper roasted potatoes, corn on the cob, a dinner roll and an apple square pastry for dessert. The fun part is being able to eat everything with your hands, without those weird looks from your neighbor.

But just as the beautiful maidens seduce with their dance and the kings continue their fantastic feats, darkness falls over the theater as the evil dragon knight descends into the arena. With blazing fireballs and his minions following, a great battle ensues where Prince Christopher must avenge his father’s death. Stunning visual effects and pyrotechnics impress and truly heighten the theatrical experience. Banging your tankards, shouting for good and evil and joining in song and merriment is continuously encouraged throughout the entire show. The nonstop action keeps guests entertained from start to finish. –Kiko Miyasato

Obviously, steaks are king here, from filet mignons to bone-in ribeyes and Japanese and American wagyu. But if your tastes run more to fowl, don’t sleep on the crunchy organic chicken, another great presentation served with spinach and hot sauce. –Ken Miller

What separates Kramer from the rest of the pack is the intimacy of her show—she eschews the larger theaters, packed with pyrotechnics and special effects, opting instead to really connect with her audiences. All the Right Notes

Italian restaurant perfectly re-creates New York favorite Las Vegas’ population includes quite a few New York City transplants. If you were to poll a small sample, we’d wager that one of the things that most excites them about Las Vegas is that it has the only other Rao’s Italian restaurant in the entire country. And if you’re at all familiar with the original location in New York City, you’d get what the excitement is about. Opened in 1896, it’s not only one of the oldest family-owned restaurants, it’s also one of the hardest places to get a table. The Las Vegas outpost is spectacular in both its décor and its food. It’s a much more open space than its counterpart, including a patio dining area, center bar, and private dining area. (In a very cool nod to the original, there’s a replica of the 12-table space.)

Start with a cocktail like an All in the Family, featuring Grey Goose Le Citron vodka, limoncello, fresh lemon and club soda, or an E. 114th, a delicious blend of Knob Creek single barrel reserve, vermouth, Montenegro amaro, filthy black cherries and bitters, before your meal arrives. Pair any of them with appetizers like Rao’s Traditional Meatballs. Made with ground veal, pork and beef, these nearly baseball-sized babies are fork-tender and smothered with marinara. Main courses include a sensational chicken Parmesan served over pasta, frutti di mare (linguini accompanied by Maine lobster, shrimp, calamari, Manila clams, marinara and chili flakes), and a world-beating beef lasagna, highlighted by beef Bolognese sauce, ricotta, Parmesan and

mozzarella. Meat lovers will flip over the filet mignon Marsala, served over a heavenly Parmesan risotto and topped with mushroom Marsala. And fowl fans definitely need to order Uncle Vincent’s Lemon Chicken, a Rao’s signature sensation featuring a charcoal-broiled bone-in chicken with Uncle Vincent’s Famous Lemon Sauce. For dessert, the New York cheesecake, flavored with just the perfect touch of lemon, fills that bill perfectly. Naturally, you can go slightly less heavy with the tiramisu, and it’s just as satisfying, packed with espresso-soaked lady fingers, mascarpone mousse and cocoa powder. Go Back in Time Bugsy & Meyer’s Steakhouse transports its guests to a bygone era when mobsters ran Las Vegas. As its name implies, it’s a tribute to Bugsy Siegel and Meyer Lansky. The property is filled with touches harking back to their time, including a “back-way” entrance, which leads to a variety of dining areas, including a raw bar. Designer Jonathan Adler provides the decorative ‘20s and ‘30s touches throughout, and you’ll feel like you’ve really gone back in time as you enjoy a drink from a menu of various Old-Fashioned recipes—you can have it made with rum, mezcal, brandy or, of course, bourbon. A terrific appetizer is the hand-cut Prime beef tartare, served with foie gras aioli and pan-toasted country bread. Main course options are steak-heavy, naturally. But there’s plenty for every palate here, including pan-roasted lamb chops, free-range roasted chicken, pan-seared sea scallops and plancha-seared salmon. Join the Converted Are you a Prince fan? No? I don’t believe you. Really? Well, attend just one performance of Purple Reign: The Prince Tribute Show, and you’re sure to be among the converted. Tribute artist Jason Tenner, a pair of dancers and an incredible band give an inspired show, with Tenner ably evoking Prince’s persona, wearing signature outfits and makeup and playing the guitar. (Tenner is bigger than Prince was, but somehow seems mostly the same size; it’s wild).

You’ll hear Prince’s biggest hits, of course, like “Raspberry Beret” and “Purple Rain,” but you’ll be surprised to learn there are some more obscure songs like risqué “Darling Nikki,” which is somehow as hot here as the artist himself intended it. A Morris Day and the Time tribute act add some comedic respite, so you’ll have a moment to catch your breath before the music takes it away again. –Nina King Tropicana, ticketmaster.com

The Big O It’s all-in-one-Vegas-fun at O’Sheas. The famed Irish-themed venue is a longtime favorite of visitors and locals and is part mini casino (roulette and blackjack tables), part college-themed fun (beer pong) and part bar and lounge (three bars with a great people-watching one outdoors right along the Linq Promenade). Downtown experience is a Vegas must-do Yes, we’re always asked, “Where are some of the top places to go to experience Las Vegas?” The Fremont Street Experience makes our list every time. Fremont Street is one of the few spots in town that combines Las Vegas history with modern-day technology and indulgences. Originally opened to horse and buggy traffic all the way back to 1905, Fremont Street closed off its throughway in 1994. About a decade later, Viva Vision was added—a multisensory attraction that covers the top of the pedestrian walkway and displays amazing visuals and music 24 hours per day. And in 2014, Fremont Street Experience really got people’s adrenaline pumping with the installation of SlotZilla, a ginormous mock-slot machine that reaches 12 stories into the air and features an 850-foot zipline and 1,750-foot

Popping Flavors If you love fresh fish, one of the best places to get that is at Yellowtail Japanese Restaurant & Lounge. Executive chef Akira Back’s Asian eatery features a number of signature preparations for you to indulge in, from the bigeye tuna pizza to the Popping Spicy crab roll, which, as the name suggests, has Pop Rocks candy inside. Enjoy a variety of shared plates and individual entrées, including the jalapeño yellowtail, with a blood orange sauce; toro caviar with kochuchang (a red chili paste); pork gyoza with tomato salsa; grilled eggplant skewers; filet mignon in a toban skillet; and broiled Atlantic black cod. The dishes fold in Japanese flavors, but you’ll also find a lot of Korean influence and ingredients on the menu. In addition to the Popping Spicy crab roll, there’s yellowtail scallion, the Angry Salmon specialty roll and the Krispy Kalbi specialty roll with Korean short ribs, among many others. Todd Skier

Leaving a legacy of his own in Las Vegas He’s definitely got personality, and he’s definitely the definition of host with the most. Meet Todd Skier, operations manager for Legacy Club at Circa Resort & Casino. Skier was born and raised in New York. “I’m from the motherland, Brooklyn,” he says, with an instantly recognizable accent. He’s spent nearly four decades in the food and beverage and culinary industries—everything from running corporate chain restaurants and owning his own establishments to studying pastry making and cooking, and being a captain at fine dining restaurants. He’s plied his trade from New York to Florida, landing in Las Vegas in 2004 where’s he’s worked at properties including Rio, Palms and Tropicana Las Vegas. He joined The D in 2014 and worked as a beverage manager for both The D and sister property Golden Gate. When word got out about third sister property Circa being built and specifically Legacy Club, Skier knew that was his next move.

“I love being in this industry—it’s the immediate satisfaction,” he says. “If you feed somebody or give somebody a drink, it’s like 1, 2, 3. And you know their reaction like 1, 2, 3. I also love to talk a lot, all day. You know that’s an art, too. I should have gone into psychology—I know how to read people after all these years.” You also have to love Skier’s one-liners that he throws out about every other minute: “I’m from Brooklyn, I’m a hustler;” “I’m a straightforward guy, I shoot straight;” “I’m from New York, we know how we roll;” “I’m all of the fun and everything that Vegas is about;” and “Legacy Club might be downtown but when you come up here, we’re up in downtown.” Sixty stories up to be exact, providing some of the best views in all the city from the expansive patio. “Up here is perfect for me—it’s a perfect fit,” Skier says. “I have a really good time up here. Of course, off-Strip landmarks like these and other local dining scene evolutions would not have occurred through the years without the pioneering spirit of some of the world’s top chefs and restaurateurs and their desire to set up shop in Las Vegas. When it comes to sushi, Nobu Matsuhisa’s name is at the top of the list, and there are two prominent Nobu locations creating that fantastic foundation in Vegas. The original spot at Virgin Hotels Las Vegas (702.693.5090) was recently renovated along with the resort and is the rare Vegas restaurant that has survived and thrived despite major changes to the overall property. It remains one of the best places in the city for an intimate, customized meal with plenty of chef interaction and Nobu’s signature creations like spicy tuna with crispy rice, black

cod with miso and creamy, spicy rock shrimp tempura. Caesars Palace (702.785.6628) is the home of one of the world’s largest Nobu restaurants—not to mention the very first Nobu Hotel—and this regal dining space brings all those classics to your table as well as teppan offerings, an expansive cocktail menu and sake selection and a lot more. “Iron Chef” Masaharu Morimoto is another legend who couldn’t wait to establish a presence on the Las Vegas Strip. Morimoto Las Vegas (702.891.3001) at MGM Grand is one of the city’s epicenters for sushi and sashimi, where a team of specialized chefs practices old-world techniques in preparing the finest fatty tuna, freshwater eel, yellowtail, Japanese red snapper and other popular and rare varieties. Morimoto also serves fantastic noodle dishes, prime steaks and entrées like crispy whole fish with papaya salad and kakuni pork and caramelized rice cooked at your table. Carlos Santana returns to Strip residency By Brock Radke

THIS WEEK BRINGS the return of one of the longest-running musical residency headlining shows on the Strip to the House of Blues at Mandalay Bay. Carlos Santana will be kicking off his ninth year of shows at the stalwart music hall and calls the comeback a “golden opportunity.” Now more than ever after the challenges of the pandemic year, he says, people all over the world see music and live entertainment “like water and air. We are an ingredient that people gotta have, because it gives them hope and courage, which is something the world needs right now.” Speaking via phone from his home in Hawaii, Santana recently shared his thoughts on spreading that hope, his history in Las Vegas, new music and upcoming tour plans.

How does it feel to be getting back onstage again? It’s such a blessing. I have never looked at (music) as a job or an opportunity or even as a profession. For my wife (drummer Cindy Blackman Santana) and I, it always has been a way of life. My father did it and his father and his father, and now my son does it. I’m sure you never expected to have a Las Vegas show running this long. No. My first time playing in Las Vegas was with the Grateful Dead. We opened for them a lot, and at that time hippies weren’t allowed on the Strip in Las Vegas or in Lake Tahoe, so we grew up almost like adversaries with Las Vegas, until the situation presented itself to be at the Hard Rock first, for a year and a half, then the House of Blues. That’s when I realized the things I was afraid of in Las Vegas or on Broadway, that you would become like a hamster going around and around. I thought, no, dissolve that fear. I look at it like this: People say, “Santana, we came all the way from Paris or from Sydney. Would you take a photograph with us?” They came from Australia, 12 of them, paying money at the airport and the airline and the hotel and the tickets. So yeah, I’ll take a picture. I’ll take two pictures with you! I’ve

learned to be infinitely more grateful and to be in Las Vegas. You don’t just perform here, you’ve become part of the fabric of the community. How did that happen? I have become really involved with the community, with Three Square and a few other organizations that give back. There are so many people in Las Vegas that don’t get their credit, people I call weapons of mass compassion. They just wake up every day to serve or to heal or bring comfort. It’s really commendable. How will your show be different when you return to the House of Blues after this long break? A new intro, a new middle and a new ending. Rick Rubin and I did 49 songs together in 10 days about three or four years ago, and we used some of them on (last record) Africa Speaks. But we’ve got some of them coming out on this new album, Blessings and Miracles. We’ve got Steve Winwood singing “A Whiter Shade of Pale.” We have Kirk Hammett playing guitar on a song called “America for Sale.” We have Rob Thomas singing on a single coming out soon called “Move.” There are 14 songs, very vibrant, and for being 73 years old, this stuff is kicking some serious booty with energy.

Bruno Mars brings the finesse back to Las Vegas It seems incredibly appropriate that Bruno Mars’ first appearance in front of the soon-to-be-adoring public was in the beloved 1992 movie Honeymoon in Vegas, which featured Nicolas Cage and a bunch of skydiving Elvis impersonators: 1. Mars, who began his career as an Elvis impersonator, had many drawing comparisons with the King himself after his 2016 Park MGM residency absolutely killed, selling out and practically guaranteeing Mars’ continued involvement with Sin City. 2. Elvis impersonators pay homage to the music of the past, and so does Mars, drawing on musical roots from Michael Jackson and Prince to the Browns (James and Bobby). 3. Much like Elvis and, subsequently, Cage, Mars is well on his way to becoming synonymous with Las Vegas and all its over-the-top history, glamour and glitz. Don’t believe that last part? Well, believe this: Mars, who returns to Las Vegas this week, had to add additional shows to meet demand; his first shows sold out almost immediately. (If you’re thinking of just sauntering up

On the Strip, there are several options for English-style teas, like the Tea Lounge at Waldorf Astoria (702.590.8888). Here, 23rd-story views provide a backdrop for petite sandwiches, scones and tea desserts, plus pots of gourmet teas by the company Tealeaves, which tests for herbicides and pesticides in its products. You can add on sparkling mimosas, Bellinis and sparkling wines, too. Afternoon tea seatings are Friday through Saturday.
