NOTES
From the Editor A Holiday Bounty
The opening of Resorts World Las Vegas was truly something special this year. Not only is it absolutely stunning in design and décor, it’s loaded with restaurants, nightclubs, pools, shopping and so much more. And it’s going to be an entertainment monster; its slate of performers includes Carrie Underwood, Luke Bryan, Katy Perry and Celine Dion. We here at Las Vegas Magazine are thrilled to be covering this brand-new property. This week, we’re featuring FUHU, an Asian bistro with an interesting twist: DJs performing from booths while you eat. Managing editor Nina King takes you through a meal there (“Get the Vibe,” p. 24). Check it out—along with the rest of the property. Just make sure to set plenty of time aside; you’ll be here awhile. With holiday season now in full swing in Las Vegas, you’re going to want to take advantage of holiday-themed displays, specials and attractions. To get started, check out King’s information-packed feature (“Joyous Occasions,” p. 32). Then head to associate editor Kiko Miyasato’s roundup of holiday-themed cocktails (“Get Nice and Toasted,” p. 22). How about a holiday show? Editor at large Brock Radke interviews Jaclyn McSpadden, a performer in Palazzo holiday show This is Christmas (“Sticking to Vegas,” p. 40). It’s a great look
at the show itself, the city’s entertainment culture, and an introduction to a phenomenal talent. Are you a fashion fan? This week’s issue has a special treat. With New Year’s Eve celebrations right around the corner, we’ve partnered with TNG Models to highlight some of the best looks for the occasion (“Countdown Couture,” p. 34). No city does NYE like Las Vegas, and after checking out this feature and hitting the stores, no one’s going to look better than you while celebrating it. And we’re really only just getting started as to what’s in this week’s issue: Usher begins his residency at Caesars Palace (“Usher It In!” p. 30); exciting new attraction Arcadia Earth opens at Showcase Mall (“A World View,” p. 42); Carrot Top just celebrated his 16th anniversary at Luxor (“Great Scott!” p. 14) and Shin Lim is packing the house at The Mirage (“Bring the Family,” p. 47). If you’re planning on visiting the Neon Museum, make sure to check out our Friends With Benefits feature on executive director Aaron Berger ( p. 20). Then stop by and say hi while taking a tour. From the staff of Las Vegas Magazine to all of you enjoying our city this week, have the happiest of holidays, and take lots of special memories home with you!

A Longstanding Favorite Out of the hundreds of restaurants on and near the Las Vegas Strip, Delmonico Steakhouse makes my list each time when suggesting to visitors where a good meal can be had (and it is a personal favorite of this writer, too!). This restaurant from celebrity chef Emeril Lagasse never, ever disappoints. The dining room is perfect for a romantic date

night or a nice evening out with a group of friends. Dishes here are all good, but for pescatarians the Chilean sea bass might be the best on the Strip—flaky and light with a slight char. Another fave is the roasted Maine lobster tail, simple yet delicious served with grilled lemon. For meat eaters, Delmonico’s offers tons of
hand-cut selections from Creekstone Farms, all made with Lagasse’s signature Creole seasoning. Stand-out cuts include the prime bone-in ribeye, double-cut Kurobuta pork chop and the 100% Japanese wagyu. Don’t miss the creste di gallo pasta (an amped up mac and cheese) and the signature Lagasse dessert, banana cream pie. –Kiko Miyasato

Entertainment Meets Flavor
Caesars Palace restaurant re-creates ambience of TV show Gordon Ramsay’s Hell’s Kitchen is one of the most popular restaurants on the Las Vegas Strip. Named for Ramsay’s hit reality series, the dining room will be instantly recognizable to fans with its now-iconic red and blue kitchens. And the cuisine fans see being served on the show is all here, from the pan-seared scallops and lobster risotto to filet mignon—although, unlike the show, all are cooked to perfection each and every time, of course. Take a seat in the high-energy dining room and get ready for a real adventure. The signature cocktail list has a bit of everything, from the Meet Your Maker, made with Maker’s Mark,

of course, Domaine de Canton ginger liqueur, mint, apple, strawberry and cinnamon, to the Peat’s Dragon, featuring Ardbeg Scotch, Patrón Citrónge orange liqueur, lemon and egg white. But fans of Ramsay will love the Notes From Gordon, a cocktail featuring Plymouth dry gin, green tea, lemongrass, peach and lemon. In addition to a delicious sip, you’ll get a note with the drink containing a bon mot Ramsay has said on his show. (“This crab is so undercooked, it just told me its name is Sebastian!”) Most know about Ramsay’s beef Wellington, a juicy cut of meat surrounded by a pastry shell in a red wine demi-glace, but explore the rest
of the menu at this restaurant and you’ll find other delights. Jidori chicken scallopini is pure decadence, served with roasted pee wee potatoes, artichokes and lacinato kale, while crispy skin salmon is perfectly complemented by warm white beans, sea bean salad, Iberico chorizo, all in a citrus beurre blanc. It wouldn’t be a Gordon Ramsay experience without the sticky toffee pudding for dessert, but if you want a change of pace, there’s also salted peanut decadence, a carmelized peanut crisp and peanut butter crémeux, served with salted peanut ice cream. –Ken Miller Caesars Palace, 702.731.7373

Sit a Spell When you dine at Libertine Social, it’s just that, social. Everything about Shawn McClain’s place is designed to encourage interaction between you and your party as you nosh. With several areas to land, from the dining room to one of two bars, and the patio outside, the buzz of the entire establishment will get you fired up. And the menu is just as buzzy now as it was when Libertine opened—the caviar fried egg, filled with corn pudding and topped with caviar and brioche, is almost a must. A favorite of mine, garlic hummus, comes with balloon bread, a thrill every time I pull a piece off. You’ll find mains like shrimp and grits, roasted Petaluma chicken and the hefty Libertine cheeseburger. And drinks! The drink menu here was designed by celebrated mixologist Tony Abou-Ganim, and features some super libations. Plus, a to-go window lets you get some of those culinary pops at lunch on weekends, before the restaurant opens for the evening. –Nina King Mandalay Bay, 702.632.7558
All the Right Moves Both men and women can delight in the viewing pleasures of new burlesque show Rated Red. With a mix of modern, classic, recorded and live music, the unisex cast display some hot-andheavy dancing skills, everything from pole dancing, modern and interpretive dance to of-themoment dance moves and classic burlesque. And you’ll find a variety of bedroom fantasies, which the show brings to life while mixing in new interpretations of seduction. –Las Vegas Magazine Staff Area15, 21+. area15.com/events/rated-red

A Bit of Venice When The Venetian was built, its planners knew right away one element they could not do without: A replica of the Grand Canal in Venice. Without it, how would they replicate the gondola ride? It’s arguably the most romantic experience one can enjoy as part of a trip to Italy. So it would have been sacrilege to not replicate it in Las Vegas. And very romantic it is! It’s still one of the most popular attractions in Las Vegas after more than 20 years. But it’s not just
couples—entire families can also be seen enjoying a song (or two) from their gondolier as their boat floats down the man-made waterways, snapping photos aplenty. And this is one attraction you’ll want to experience more than once. With the Gondolier March, twice a day at 9:50 a.m. and 4:20 p.m., catch gondoliers serenading the crowd along the indoor canal near the gondola turnaround. –Ken Miller The Venetian, 702.414.4300

That French Touch
Aria steakhouse provides endless surprises The first thing that strikes you about Jean Georges Steakhouse is the way the dining room looks. There are no hard lines here; only soft, comforting curves. The entire room flows and has an ambience that begs you to stay as long as you like. The classic starters you would expect are all here—iceberg wedge and Caesar salads, bacon-wrapped shrimp and char-grilled octopus— and they all shine. Sometimes the familiar is a great way to start a meal! But this is a steakhouse, and you might want to be more adventurous and try the Japanese wagyu carpaccio, so flavorful and served with black truffle fritters.

It’s meant to be shared, but you may find yourself wanting it all. If you want steak for your main course, we certainly couldn’t blame you. All steaks are of the highest grade and grilled on sustainable apricot wood and mesquite, finished with rendered beef fat, sea salt and cracked pepper. Whether you try an 8-ounce filet mignon, 8-ounce ribeye cap from Mishima Ranch, or 3-, 6- or 9-ounce A5 certified Kobe beef, you’ll be happy with your choice, especially when pairing it with king crab legs, diver scallops or bone marrow. That being said, definitely scan the menu for other directions that you can go. The crunchy
organic chicken, served with spinach and hot sauce, is immensely satisfying, as is the steamed halibut with green olive dressing, spinach and shallot crackling. Classic sides are made unforgettable thanks to the Jean Georges touch. Select from grilled asparagus, sautéed corn, creamed spinach, mashed Yukon Gold potatoes and much more. You’ll find plenty of decadent choices here for dessert, including New York-style cheesecake with a sour cherry sorbet, warm Valrhona chocolate cake with vanilla ice cream, and an assortment of market citrus, accompanied by yuzu cream, white chocolate and fruit. –Ken Miller

Magic Suits Him
Excalibur, 800.745.3000
Mac King wasn’t sure he was playing with a full deck when he returned to the stage after the Strip’s pandemic pause. It had been awhile since he had a stage to fish for goldfish from or make Fig Newtons appear from various openings in his trademark plaid suits (created by Los Angeles designer margaretrose, who created custom clothing for Elvis Presley during that King’s Vegas period and knew a thing or two about tailoring for magicians). King charted a new course for his career with a residency at Excalibur. The pressure was on. His daytime shows precede kidtastic spectacle Tournament of Kings, heightening his profile among audiences with an appetite for fantasy and illusion, and adding value to Excalibur as a family-friendly destination. Luckily, his sleight-of-hand muscle memory hasn’t lost a step. If his grandfathers’ interest in magic was genetically destined to skip a generation, King may very well have inherited a chromosomal fate of using illusions to earn a living. His shows are like a live magic version of The Simpsons, with kid jokes alternating with adult innuendos as King expertly misdirects the attention of children of all ages. Guinea pigs and goldfish appear and disappear, and King has a Cloak of Invisibility that fools everyone and no one at the same time. –Matt Kelemen

A Higher Love The Eiffel Tower Viewing Deck really is a cool attraction on the Las Vegas Strip—and one with some of the best views of said Strip. Feel the Energy For an energetic spot that gives diners a mix of traditional and modern Chinese cuisine, head to Mott 32. From appetizers to desserts, you may recognize the names of the dishes, but the flavors and textures may be more nuanced than you have experienced elsewhere. Take, for instance, the lettuce cup, ubiquitous on Chinese menus, but presented here on baby gem lettuce with black truffle and almonds, suitable for both vegans and meat eaters. Dim sum selections include Shanghainese soup dumplings, perched on small, lovely silver baskets, filled with trendy Iberico pork. Crispy, sugar-coated baked buns are also filled with barbecue Iberico pork. It’s not necessary to choose between them; get both or choose pork and black truffle siu mai. The duck here is a signature item and is found throughout the menu, including in applewood-roasted 42 Days Peking Duck “Signature Mott 32 Cut,” on a Peking-style spicy crispy duck rack and in a shredded duck salad. But if duck isn’t your thing, no worries. Try Wok-fried Maine lobster; the signature smoked black cod, which is covered in a rich sauce that will have you repeatedly dipping just one more piece; or the Black Angus beef short rib. –Nina King

It’s Cabo San Lucas, Mexico by way of Las Vegas. Rock ’n’ roller Sammy Hagar’s Cabo Wabo Cantina combines a laid-back, beachy vibe with the excitement of the Vegas Strip (the restaurant is situated Stripside, so there’s great people-watching!) with plenty of delicious food and cocktails. Stardust It’s one of the most popular and Instagrammable signs in the museum, says Berger. The Stardust sign dates to 1958 and now appears in the Neon Boneyard as it was last seen shining on the Las Vegas Strip before the hotel was imploded in 2006. It measures 216 feet long and 27 feet high, and when it was first built featured 11,000 light bulbs and 7,000 feet of neon. Director helps keep the lights on in Las Vegas Aaron Berger is a lover of the arts. He appreciates it, studies it, shares it, supports it and for more than 25 years has built his career around it. Berger is currently the executive director for Neon Museum, his fourth executive director position with a museum. He studied art history in college and earned an MBA, and after graduation he plied his trade in cities like Charleston, South Carolina and Atlanta, Georgia. “Balance of left brain and right brain is what I love about being in museums because it’s really a combination of both (degrees),” says Berger. His studies and past work experience are what helps him succeed in his new position at Neon Museum, which he accepted this summer. “My job entails overseeing and directing the programming and fundraising initiatives, exposure of the museum, day-to-day operations, staffing and most of all creating a really memorable experience for our visitors,” he says. “There’s no place in Las Vegas that is more
iconic than the Neon Museum. The thing that I love about Vegas is that it changes—every year it’s a different landscape. But here at the museum, we’re preserving those changes, so you get a chance to have that connection, that history. It a great way to connect with the city.” The Moulin Rouge sign, Berger says, is his favorite because of its history. “Living and working in the South, I was very aware of the history of the civil rights movement,” he explains. “So, when I came to the museum and learned about Moulin Rouge and its importance in the civil rights movement—that’s when I knew this was a true museum and something I wanted to be a part of.” Berger works toward expanding the museum’s importance in the community, and one can easily see that Berger himself is inspired by the history and art he oversees. “Art is always and will always be core to my human being without a doubt.” –Kiko Miyasato

FUHU wraps up exquisite preparations
At Resorts World Las Vegas, you’ll find FUHU, an energetic Asian bistro by the Zouk Group. It’s right off the dynamic District, close to numerous other venues, but sporting a gorgeous contemporary feel in décor with a nod to the past. And with DJs playing from two booths, it feels even more exciting. The menu here is relatively small, but you will find that it packs plenty of choices and exciting twists on Asian dishes, and the first place to look is in

the cocktail section. The Zedd is named for the DJ who has a residency at Zouk Nightclub (he’s anchoring the nightclub’s New Year’s Eve celebration). It’s concocted with Jack Daniel’s Tennessee Fire, Campari and falernum, while the Green Gold keeps it spicy with a diverse flavor matching of Casamigos reposado, peppers, pineapple and matcha. You can go with small bites to start (Tiger Bites on the menu!) or sushi. Some things to snag while you’re there: Miso cod tacos in bibb lettuce, signature black pepper beef, seared foie gras and vegan Chick’n larb, which uses Gardein in the preparation. And Asari miso soup gets a little kick with clams and scallion. Get tuna several ways in raw, sashimi and roll form. The crispy tuna from the raw menu section brings in spicy mayo and sweet soy plus crispy garlic and rice. Coconut tuna ceviche gets a little twist with celery Bermuda onions, cilantro and chicharrónnes—pretty wild—and the chili tuna specialty roll combines spicy tuna takuwan and sweet gochugaru. Can’t decide? Get them all! If you need more substantial entrées, order the bone-in ribeye with miso pow-

If you are up for brunch (and who knows if you will be, especially if you partied at Zouk Nightclub the night before), FUHU features platters of oysters and sashimi, ube pancakes, a dim sum collection, chicken katsu and plenty of cocktails to get your strength back and your motor running. Italian cuisine adds comfort and style to the dinner table Italian is one of America’s favorite food categories. In this month when so many celebrations and family gatherings are centered around classic American comfort food favorites, this might be the right time to go Italian and mix things up a bit. And this is absolutely the right place to do it.

A fantastic Italian restaurant has long been a crucial component for all the casino megaresorts lining the Las Vegas Strip, and the newest property on the Boulevard boasts one of the most exciting new restaurants to land in the city in years. Brezza (702.676.6014) at Resorts World

kale salad with figs and date vinaigrette, savory and spicy bucatini alla amatricana or seafood mezzaluna pasta with shellfish butter and fresh tarragon, a fantastic filet done Piedmont-style or pan-seared orata with caviar and crispy potatoes. This is one Italian restaurant that might change the way you eat. When you think of classic Las Vegas cuisine, you can’t leave out Piero’s Italian Cuisine (702.369.2305). The old-school eatery near the Las Vegas Convention Center has been satisfying locals and visitors for generations, and while this is definitely the place to revisit all your favorite Italian dishes like meatballs, pasta fagioli, chicken or eggplant parm and rigatoni with Sunday gravy, chef Chris Conlon is spicing things up with some new twists and fresh flavors that are worth exploring. Try steamed mussels with white wine, garlic and Calabrian chili; beef short rib pizzaiola with cipollini onions and sweet peppers; or mushroom risotto with white truffle butter and Parmesan. You won’t regret reconnecting with this local dining icon. Esther’s Kitchen (702.570.7864) has become everyone’s favorite neighborhood Italian restaurant, no matter what neighborhood you call home, and one of the best reasons to explore the Arts District in downtown Las Vegas. There are items on this menu simply too beloved to be altered, but this creative kitchen continues to push forward with thoughtful new dishes like rich chicken liver fegatini with balsamic and strawberry served with the house-made sourdough bread, beef cheek and red wine pizza with fontina cheese and mushrooms, ricotta gnudi with pistachio pesto, and a dry-aged New York steak with Gorgonzola greens and garlic potato gratin. Sorry to make your mouth water. For that big-night-out feeling, hit Carbone (877.230.2742) at Aria, straight from New York City with all the flash and style you could ever desire. Tableside service adds plenty of dazzle to this dining experience, but this is a place of substance. The baked clams, spicy rigatoni vodka, veal Parmesan and lobster fra diavolo are all legendary. It’s tough to decide which signature to skip in order to make room for linguine and clams—Dover Sole done piccata-style, bright and spicy chicken scarpariello or the equally memorable cherry pepper ribs. And you can’t leave without a slab of tiramisu, cheesecake or decadent blackout cake. That’s just not an option. –Brock Radke

Bring a little of that holiday spirit into your week with one of Las Vegas’ fabulous themed shows, events and installations. There are several holiday-themed productions this week, from Excalibur’s Tournament of Kings special ’Twas the Knight (702.597.7600), where a medieval party features a Christmas wizard and falling snow, to A Very Terry Christmas (866.606.7111) at New York-New York, where ventriloquist Terry Fator’s dummies accompany him in Christmas carols. At The Venetian, This Is Christmas (702.414.9000) features Broadway and Vegas performers plus American Idol contestants, along with a rocking band, who bust out holiday classics and even originals. The cast includes Diana DeGarmo, dancers Alejandro Domingo and Sarah Le Clear, Lou Gazzara, Randal Keith, Jaclyn McSpadden (who is also featured in a Las Vegas Magazine Q&A this week), Ben Stone, Laura Suzanne Wright, Ace Young and Jasmine Trias. Shows are Dec. 19 and 25 at 3 and 7 p.m., Dec. 22-24 at 7 p.m. and Dec. 26 at 3 p.m. At numerous venues, just waltz right by to check out gorgeous decor. Aria has created a sweet vista of an enormous snow globe, with a base made of 200 sugar panels, containing a cocoa cup with holiday treats filling it. Down the street at Bellagio, the Conservatory and Botanical Gardens’ It’s Time display is equally as elaborate, with floral elements creating incredible vignettes, including a Swiss chalet, a huge sleigh filled with presents and a 42-foot-tall fir tree. Over at Area15 (3215 S. Rancho Drive, area15.com), Tim Burton’s The Nightmare Before Christmas gets a super-cool, projection-mapped treatment to bring the movie to life, with light and sound synced to the now-classic animated film. Showings occur several times daily, with 8 and 10 p.m. reserved for adults 21+. Several venues focus on outdoor fun, including The Linq Promenade, where you’ll find gorgeous decorations and an

enormous tree, plus plenty of food and drink specials at the shops throughout; Enchant (enchantchristmas.com) at the Las Vegas Ballpark, where an Ice Skating Trail, a light maze and a Christmas market are just some of the fun there; Opportunity Village’s Magical Forest (6300 W. Oakey Blvd.), where ornaments adorn the trees, and slides, carousels and warm treats keep you happy; Santa’s Experience (400 S. Rampart Blvd., tivolivillagelv.com), where an interactive visual experience guarantees you’ll have a super selfie to post for the holidays. Although this one isn’t outdoors, it surely feels that way. At The Venetian & The Palazzo, the Streetmosphere Holiday Spectacular in St. Mark’s Square uses digital mapping to light up the clock tower at 6 p.m. Friday through Sunday in December. Streetmosphere characters will mix up traditional carols, singing them in Italian and using contemporary rhythms as well. Many of the venues throughout the Grand Canal Shoppes are featuring holiday specials, dishes and cocktails, and here’s a way to give back while remembering your experience—the Grand Canal Shoppes and The Venetian Resort have compiled some of the best dishes from the restaurants in the resort into a digital cookbook, whose purchase supports Three Square food bank. The electronic cookbook is $10 and can be found at threesquare.org/ecookbook. Pop into one of these festive places and have fun—it’ll make your heart grow, three sizes at least.

Singer Jaclyn McSpadden appears in ‘This Is Christmas’ By Brock Radke
You might not know her name but once you hear her voice, you’ll never forget Jaclyn McSpadden. The Georgia-born singer and entertainer is a veteran of Las Vegas Strip productions like Vegas! The Show, Baz, Scott Bradlee’s Postmodern Jukebox and more, and she’s currently onstage at the Palazzo Theatre in This is Christmas, a holiday musical spectacular also starring standout voices from Broadway and American Idol and continuing through Dec. 26. McSpadden is also a regular at the glamorous Mayfair Supper Club at Bellagio and a recurring guest star in the buzzed-about Brian Newman After Dark at the NoMad Library at Park MGM. You’ve been blowing minds singing a unique cover of Radiohead’s “Creep” in Brian Newman’s late-night jazz show. What’s that experience been like? He’s really sweet and yeah, he loves that one. But he’s always appreciated that sort of old Vegas style, and I knew that was a goal of his doing the show here. It’s that whole idea of the Las Vegas lounge, where people used to hang out until the wee hours, and I just love being there because it’s such a beautiful room. I didn’t realize at first that all those books are from the Rockefeller family’s personal library.

After Dark is coming back for some New Year’s Eve shows, too. There’s really nothing else like it on the Strip, anchored by Lady Gaga’s bandleader and trumpet whiz, with that style of music in an amazing environment. ARCADIA EARTH AIMS TO ENLIGHTEN AND ENTERTAIN By Matt Kelemen

T W O D AY S I N T O D E C E M B E R , a hive of activity buzzes beneath the giant Coke bottle and anthropomorphic M&Ms that mark the site of Showcase Mall. The first level of the multilevel complex across the Strip from New York-New York resort is being transformed into Arcadia Earth, nearly 17,000 square feet of immersive installations inspired by environmentalism and ecology. It’s art-as-attraction, or attraction-as-art, joining off-Strip Instagrammable experiences Area15 and Seven Magic Mountains. Arcadia Earth distinguishes itself by inviting visitors to become “in harmony with nature” for 45 minutes without having to leave the Strip. It’s a new option for Las Vegas but has a precedent in Lower Manhattan, where industrial designer Valentino Vettori debuted the first Arcadia Earth three years ago. The word “arcadia” itself originates from a bucolic, mountainous area in Greece, and denotes pastoral surroundings, which the native of Verona, Italy, expands upon to focus on what is possible in the here and now when it comes to caring for the Earth. “Utopia is something unreachable,” says Vettori, while giving a tour of the site. “Arcadia is something actually reachable—(being) in harmony with nature.” After having a life-changing realization several years ago about what kind of legacy he wanted to leave behind, Vettori redirected his restless visions for immersive department

store spaces toward educating the public about the environment. He enlisted a squad of artists to transform a Broadway address and collaborated on creating a menagerie of environments that educate visitors as they promenade from room to room. Vettori says the Las Vegas version of Arcadia Earth is five times the experience of its predecessor. Guests enter what appears to be an ice cave and discover the texturized surface is made from thousands of discarded plastic bags. Reams of recovered fishnets

form rustic stalactites and a swing that hangs from the ceiling of one room, while walls breathe in another. A tunnel serves as an aquarium simulation, with a resident animated humpback whale that swims by and makes eye contact. A virtual reality room will be ready by the Dec. 27 opening, but it’s the rooms with “augmented reality” installations where most enlightenment takes place. Guests can install apps allowing them to access information via QR codes that inform about the amount of plastic that end up in the ocean, the harm nets cause to marine life, or how little sunblock it takes to damage a coral reef. The installations were created by artists and are treated as such, with a security detail on hand to make sure visitors don’t immerse themselves too far into the environments. There is a shop at the end of the tour where guests can buy books or environmentally friendly bathroom and beauty products, but what Vettori really wants guests to take away as they exit Arcadia Earth and reenter the land of big Coke bottles, merry M&Ms and roller coasters riding around a replicated Manhattan skyline is inspiration that leads to action. “Go back into the world and do something better about it,” he says.
