Fresh and Flavorful

Celebrity chef’s Italian venture specializes in seafood Inside the upscale, seafood-driven restaurant Amalfi by celebrity chef Bobby Flay, you’ll find a scene set with light woods and tile work, with a bar curving away from the entrance, a dining area divided into two large rooms, soaring ceilings and circular blue-tiled displays showcasing the seafood available that night. The incredible room is just the beginning of an unforgettable meal. There are several cocktails to start a meal with, from light spritzes to mezcal Negronis and espresso martinis, plus wine and beer. The antipasti has plenty of seafood-inspired selections, including a shellfish fritto misto with pistachio pesto, charred octopus, tuna tartare and mussels in a tomato-and-white-wine broth. Choose from

pasta like the squid ink fettucine, an eye-catching arrangement with lobster, squid, shrimp and a fra diavolo sauce. The paccheri, with rockfish and cherry tomatoes, presents a milder flavor, and the orecchiette is served with an inventive eggplant Bolognese. The fish menu is special here, with guests heading to the fish display to consult with a fishmonger, and select their dinner entrées. Recently, striped bass, red snapper, branzino, carabinero shrimp, among others, were available from the market. Choose from grilled whole or filleted, served one of three ways: with Meyer lemon and capers, with salsa verde or with red pepper and Calabrian chile pesto. You can also choose

Jidori chicken al forno, with a pecorino crust, or ribeye, New York Strip or filet mignon steaks, all Prime Angus beef. An amazing side is the crispy potatoes with Parmesan, lemon and oregano. There won’t be any of this left over. The unusual mascarpone polenta with red pepper and a black olive relish is one of those love-or-leave-it dishes. We think you’ll love it. And the desserts are delightful, including Bobby’s pistachio sundae, a chocolate budino, blueberry panna cotta and tiramisu. But the Lemon, Lemon, Lemon cake definitely does take the cake. Tart lemon custard is layered over a light lemon cake and crispy lemon wafers, for a perfect finish to your evening. –Nina King

Taste and presentation are put into every plate that comes from the kitchen of Michael Mina. The James Beard Award-winning chef’s eponymous restaurant is a practice in modern cooking techniques combined with global influences, all concentrated on fresh seafood and the cuisines of Japan, the Mediterranean and France. Tableside preparations and grand entrances of signature dishes like Mina’s famed lobster pot pie are de rigueur here. But a must-try is fan favorite caviar parfait, or start with the bright-pink, melt-in-yourmouth ahi tuna tartare served with a habanero-infused sesame oil. Main options address both land and sea, with flavorful, fresh-steamed Icelandic halibut in coconut-corn broth, phyllo-crusted sole in a mustard beurre blanc, and the impressive “pepper steak,” made with your choice of a 12-ounce New York Strip or 8-ounce filet mignon. For a longer, more decadent tour of Mina’s cooking capabilities, opt for one of his two seven-course tasting menus—the Seasons of Mina tasting menu or the Signature tasting menu. –Kiko Miyasato

A Striking Scene For a step away from the indoor delights during your vacation, check out the wildlife habitat. Chilean flamingos are the big draw inside this lushly landscaped area, and they are splendid, standing on one foot in the pools dotted throughout the environment. Of course, that pink coloration against the greenery is striking and impossible to ignore. But flamingos aren’t the only residents here—swans and ducks abound, floating

along streams and waddling across paths. You’ll notice numerous types of small birdies flitting about as you walk, and occasionally dipping into a waterfall. Lean over a bridge and orange koi will become the star attraction for you. Watching a school of koi swimming up, down and around is mesmerizing and completely relaxing. Celebrate global flavors in a casual setting What’s that you see greeting you at Famous Foods Street Eats in Resort World Las Vegas? Is it a whole roasted pig? It is! That’s not an unusual sight at Pepita’s Kitchen, where you’ll see it pretty much every day. Stretched alongside the main gaming floor at the resort, the “food court” (and we use that term loosely, as every food stall in the area is chef-driven) delivers food from countries across the globe, like lechon dishes from Dedet de la Fuente, owner of Pepita’s Kitchen. What else will you find? Streetbird Las Vegas, where James Beard-winner Marcus Samuelsson gives fried chicken his twist with such items as the hot honey chicken and waffle. Samuelsson

recently introduced Impossible chicken nuggets, so if you are vegan, you can still get a vegan fix while hanging out with meat-eating friends. The Mozz Bar, by local favorite and James Beard finalist James Trees, offers chicken and eggplant sandwiches plus fresh mozzarella and burrata cheese. At Ten Suns, get Thai beef noodle dishes from the family whose Bangkok establishment was named as a Michelin Bib Gourmand restaurant. Speaking of family, DJ Steve Aoki and brother Kevin’s Kuru Kuru Pa Yakitori stall features yakitori, kushiyaki and yaki onigiri, as well as mochi. Zouk Group’s FUHU Shack wraps up a Peking duck burrito; Ah Chun Shandong Dumplings serves, well, Shandong

dumplings; the fragrance of the roti canai from Springleaf Prata Place will draw you in even if you’ve ordered elsewhere; and the Nori Bar presents sushi and sashimi plus sake. In the center of it all is The Center Bar, where you will find a self-pour, automated beer system, plus wine and cocktails on tap. Directly behind that is Sweet Eats, where all manner of desserts are there for you. And those aren’t the only options here—find the Here Kitty Kitty Vice Den speakeasy if you can; or dishes from Char Kuey Teow, where they use charcoal-fired stoves to cook your rice and noodles. And look out for Tiger Sugar, a wildly popular Taiwanese black sugar milk tea place, coming soon. –Nina King

An Experience With Bite

Aquarium introduces families to a variety of species Odds are your kids have finally seen the movie Jaws (it’s streaming everywhere these days), and odds are they might be a bit … obsessed with sharks at the moment. If that’s the case, there’s a perfect attraction for families in Las Vegas that will create memories to last a lifetime. Shark Reef Aquarium is one of the most unique destinations in the world—after all, if someone said you could find denizens of the briny deep in the middle of the desert, would you believe them? But believe it, because not only does this manmade wonder feature sharks (and a huge variety of them to boot), it’s got more than 2,000 creatures, all of them in no way indigenous to the

Mojave Desert. For example, there’s no way you would ever want to approach Komodo dragons, Johnston’s crocodiles or piranhas, but there they are, all just a bit behind the see-through partitions. It’s nature at its most dangerous—and yet safest. When you do get to the sharks, it’s almost overwhelming, as there are so many to look at. A simulated shipwreck is visible through a large viewing area (a tunnel allows you to see fish swim all around you). You may not know exactly what type of shark you’re looking at, and that’s understandable; the varieties here include blacktip, grey reef, Galapagos, Port Jackson, sand

tiger, sandbar, whitetip reef, bonnet head, nurse and much more. For a truly different perspective, check out the Undersea Explorer virtual reality theater. Created by Immotion, this 360-degree experience features motion platform seating, from which you can enjoy shows like Shark Dive (where, thanks to a strategically placed camera, you can see what a shark sees). Shark Reef currently has timed ticket entry, so reserve your spot in advance (good for the onehour window selected). A Delectable Menu There’s a quaint French bistro tucked away on the level just above Aria’s casino floor. The space is beautifully designed—dark woods, leathers and etched glass windows throughout immediately transport guests to what feels like a hidden gem in Paris. Bardot Brasserie is world-renowned chef Michael Mina’s foray into the classic French cuisine realm—and he’s put together a menu of classic French comfort foods and given them his special Mina touch. Foie gras and le fromage, a chef’s selection of cheeses, are a perfect way to get the table started. Your party might also want to try the popular prime steak tartare, a favorite among frequent guests, served with egg yolk and fresh-cut potato chips. Do as the French do with classic entrées like le steak frites. Choose from three different cuts—a flat iron steak, double-cut ribeye or filet mignon, all served with hand-cut fries, of course. From manning doors to the opening of doors Jamill Ballard will be stationed at one of the Las Vegas Strip’s hottest spots come New Year’s Eve. As VIP services manager for Drai’s Beachclub and Nightclub at The Cromwell, the Las Vegas native will be manning the doors to the grand celebration. “It’s a great experience not only for the artists that we have but for the views of the Strip,” says Ballard. “Our location is the 50-yard line of the Strip. We’re across from Caesars Palace and they put on one of the largest fireworks displays, and we’re right across the street from it!” Ballard has been celebrating the holiday every year at Drai’s since 2014, when he joined the rooftop nightclub as a junior host. Since then, he’s worked his way up the ladder and received his current title about four years ago. “Here at Drai’s, we like to develop our team,” he says. “So I look at myself more as a mentor. I put myself second. What I love to see is my junior hosts, my senior hosts, my customer

development team succeed. And if I can be a part of their growth, that’s more than enough for me. I’m a very hands-on manager. I’m going to be right there alongside my team out in the field. I always want my team to know that I have their back and we’ll get through things together. I’ll always be there to guide the way.” Part of the perks of the job for Ballard is taking care of his VIP clients, including many athletes. “I’m very passionate about sports—I really love to see young talent blossom into professional athletes. One of my customers now, Lonzo Ball, player for the Chicago Bulls, I’ve been following him since he was a kid, and now I personally know him. It’s kinda cool—one of the benefits of the job that ties into my passion for sports. Look, being born and raised here, I never thought that I’d be working on the Strip, but the career path that I’ve chosen has turned into a blessing. If you close your eyes and imagine a French fine-dining restaurant, odds are it’s a little … intimidating. You know—one of those establishments where you have to sacrifice an arm and a leg to afford the prices, a place where you have to dress to the nines to even be allowed in the door, and a décor that makes you nervous to be around it, lest you accidentally spill wine or drop a piece of food. You can leave all those concerns at the door when you dine at Le Cirque, one of the warmest, most welcoming restaurants you’re likely to find on the Las Vegas Strip. Let’s start with décor—to call it fun just doesn’t get it done. There are images of monkeys and circus balls everywhere, and the ceiling is decked out to make you feel like you’re under a circus tent. The dining room itself is incredibly small when compared with other Strip locations (just 17 tables), which only heightens the feeling of intimacy. Throw in stunning views of the Fountains of Bellagio and it’s almost … perfection. Then there’s the waitstaff, most of whom have been with the venue since it opened. You don’t so much feel like you’re being waited on so much as you feel like you’re making new friends. And while Le Cirque is by no means cheap, there are pricing levels that will allow any budget to enjoy delights from new chef Dameon Evers (he worked under

world-famous Thomas Keller of French Laundry and other legendary restaurants). Your sommelier, ever so anxious to tell you about the wine you’re about to enjoy, will both educate and entertain you—at a recent dinner I enjoyed there, our somm had an endless supply of one-liners, each funnier than the last. Depending on your appetite, you can

choose from either a six-course menu la decouverte or a 10-course menu degustation, both with wine or premium wine pairings available. There are courses both have in common, including Osetra caviar atop cauliflower and lemon verbena and served with squid ink tempura; Mishima ribeye, served medium rare with chanterelles mushrooms, ruby red beets and a caramelized wine jus (both for a supplemental price) and Hudson Valley foie gras, very dessert-like in flavor with rose celery branch, aged balsamic and pain de genes. Those who opt for the degustation menu will also be able to try Hawaiian kampachi, so light and flavorful with petit radishes, kinome leaves and tendon crisps, as well as fromage du Faucon Rouge, cheeses served with lavash, pineapple sage and black truffle coulis (for a supplemental price). Both tasting menus come with ganache chocolat beurre noisette, served with milk tuile, Sicilian pistachio and strawberry mint, and after-dinner chocolates. Both are perfect ways to finish a fun, fantastic meal.

Dig into chicken yakitori, rich beef short rib dumplings with horseradish cream, salt and Szechuan pepper chicken wings or cumin lamb lollipops to get a first taste of this exciting new destination on Circa’s second floor.

It’s all about Mexican food out in the suburbs of Summerlin with the energetic new La Neta (702.476.5484), a stylish restaurant and lounge attracting the see-and-be-seen crowd for group dinners and fabulous weekend brunches. This recently opened, versatile venue at the northern end of Downtown Summerlin seems to do it all, from craft cocktails to authentic favorites such as queso fundido, ceviche and cochinita pibil, and large-format dishes perfect for sharing with your party-ready friends, like pan-fried whole branzino and a butter-poached lobster, ready to pick apart for DIY tacos. An even newer arrival is taking the neighborhood of Henderson by storm. Boom Bang Fine Food & Cocktails (702.478.6200) is serving up a tasty and cozy mashup of French and American fare, including a savory mushroom tart with goat cheese mousse, charcuterie boards stocked with artisanal meats and cheeses, duck confit with poached pears and chive-scallion oil, and fish and chips made with wild Alaskan cod. That’s the spot you need to hit in the southeast; in the southwest, the casual Gabi’s Gorditas (702.268.7466) is winning over its neighborhood with its signature mini masa sandwiches filled with slow-cooked beef and ancho chile demi-glace, tuna poke and avocado salsa, or longaniza sausage and potatoes with melted Oaxaca cheese. Of course, the Las Vegas Strip was replete with exciting new dining choices in 2021, but there was at least one landmark Strip restaurant that made its debut in 2020 and definitely hasn’t received due attention for its quality cuisine and stunning atmosphere. Bugsy & Meyer’s Steakhouse (702.733.3111) is the signature culinary experience at the iconic Flamingo, which is celebrating an incredible 75 years this month at the center of the Strip, and the vintage experience here is an appropriate summation of this resort’s legacy with bold flavors to boot. Transport yourself to a different era of Las Vegas while enjoying a modern spin on traditional steakhouse fare. Go all out with a striking seafood tower, decadent lobster bisque, an old-school Caesar salad laced with aged Parmesan, and your favorite cut from the B&M Private Reserve collection of dry- and wet-aged premium steaks. AMYSTIKA: The Secret Revealed, a collaboration with visionary producer Franco Dragone, will follow MINDFREAK shows at Criss Angel Theater inside Planet Hollywood when it is unveiled in early spring. And although it comes later in the evening, AMYSTIKA is a prequel of sorts to MINDFREAK.

Angel is enigmatic when it comes to revealing details about the new production, but he strongly hints that it’s autobiographical. Whether or not he even stars in AMYSTIKA remains to be seen. “Who said I’m in the show?” he teases in a phone interview with Las Vegas Magazine. “I don’t know. I just know there’s this ominous character. You see him in the poster, and you’ll have to see the show to find out.”

What is promised is a firestorm that engulfs a human body, a tornado raging through the theater and a blinding snow blizzard that falls on the audience. Beyond that, the fruits of the collaboration between Angel and the man behind Cirque du Soleil’s Mystère at Treasure Island and “O” at Bellagio, Le Rêve at Wynn and Celine Dion’s A New Day… at the Colosseum at Caesars Palace will remain an intriguing mystery.

“I’m not creating this show for superfans, although they’re going to love it,” says Angel. “We’re creating this show for everyone. Anyone that loves ‘O’, anyone that loves Mystère

or anybody that loves MINDFREAK is gonna die for this. It’s going to be a beautiful show that’s going to speak to all pretty much all walks of life. … A show that celebrates life, and the value of life, and how one boy named Christopher who had big dreams was able to persevere through trials and tribulations to see this dream become bigger and better than ever. I think that’s a sentiment that everyone can relate to.” Angel has seen his share of trials and tribulations. He brought home a newborn daughter, Illusia, in time for Thanksgiving, and his family (now of five) includes son Jonny Crisstopher, whose battle with leukemia led Angel to be familiar with taking precautions for immunocompromised children long before lockdowns. He knows the value of life—and of celebrating it. He also knows the value of enthusiasm and unclouded perception, which Dragone has in droves. Angel says he met Dragone in the ’90s, but their sparks of inspiration may never have collided were it not for circumstances that put every Strip show on temporary hold. “What’s so wonderful about our partnership is that it really takes the best of what Franco does and the best of what I do and kind of meets in the middle,” says Angel. “And allows us to produce these spectacles in a shorter amount of time while maintaining a higher level for the final product because you have two minds, two people that have their respective disciplines. Franco doesn’t have to worry about things that I’m taking care of, and I don’t have to worry about what Franco’s doing because that’s what he does best.”

It’s been a minute since Katy Perry performed “Waking Up in Vegas” during concert tours, but with fans from around the world making the pilgrimage to Resorts World Las Vegas to experience her headlining residency Play, it’s a distinct possibility the song will be part of the production. Play, which debuts Dec. 29 in a run that includes New Year’s Eve, is the next logical career step for the singer as she comes out of the pandemic with a year-old daughter, a steady beau in Orlando Bloom, and the dark tresses she became famous for when she burst onto the music scene in 2008. Superfan KatyCats are raring to reconnect with the

singer whose pin-up image, powerful voice and string of chart-topping hits made her one of the first icons of the 21st Century. Her previous tour ended abruptly in Australia in March 2020 with the first wave of COVID-19, leaving the restless entertainer with more energy than she had ways to expend. She released an

album, Smile, in defiance of the dystopian dust that had settled on much of society, spent time recording videos and enjoyed being a mom. The enforced solitude gave her time to think about her next career move, as well as develop and execute it. Making good use of time as she pursued a music career is something Perry has practiced since the get-go. Her parents were Pentecostal pastors who settled in Santa Barbara and encouraged young Katy Hudson to sing gospel as her vocal talents emerged. She busked with an acoustic guitar at age 13, soaking up popular music when she had access to it while becoming acclimated to the Golden State. Madonna, Freddie Mercury and Kelly Clarkson became primary influences. Katy Hudson would release one album before she adapted her mother’s maiden name and became Katy Perry. A single, “Ur So Gay,” put her on the pop music radar in 2008, but it was her follow-up, “I Kissed a Girl” that placed her on the map with her first No. 1. The song was a huge hit, and the accompanying video introduced

her vampy, campy, indelible image to the public. Bettie Page bangs, big blue eyes and a voluptuous figure were backed up by a powerhouse contralto voice. She could be lyrically self-deprecating or engage in slapstick for videos, then turn around and create a siren song such as 2013’s “Dark Horse,” her biggest hit, which topped Billboard’s Hot 100 for four weeks and spent more than a year on the chart. Half of a theoretical Play set list consists of No. 1 hits, five of which came from her 2010 album Teenage Dream. Now songs such as “Firework,” “Hot N Cold,” “E.T.” and “California Gurls” will be in a residency context, with Perry’s effervescence ensuring a high-energy atmosphere, high-concept set designs, high-fashion costuming, high-stepping choreography and meet-and-greets for faithful Katycats. Perry, who reportedly earns $25 million annually as an American Idol judge, clearly doesn’t need to have two main gigs. If she’s going to be a working mom, work needs to feel like Play.

Bruno Mars brings energetic show back to welcome new year The always-supercharged Las Vegas Strip musical residency landscape has changed quite a bit over the last five years, with superstar artists coming and going and new venues opening to accommodate even more high-tech concert spectaculars. But there’s one incredibly popular and successful production that has remained a constant over that period of evolution, and that’s the headlining residency from Bruno Mars at Park MGM. He played his first shows in the venue then known as Park Theater for New Year’s Eve in 2016, and Mars is back at the recently upgraded and renamed Dolby Live theater at Park MGM to ring in 2022 with performances on Dec. 30-31. Mars’ ongoing chart-topping success and overall prominence in the global music industry is built on a double-sided, impressively sturdy foundation: He crafts songs that make people feel good, and he performs them with loads of passion and endless energy. When Mars first landed at Park MGM, he had just released his third album, 24K Magic, an absolute smash that paid tribute to the R&B, soul, funk and pop sounds of the 1990s that still holds tremendous influence on his songwriting and creativity. Even while he toured the world on the strength of those songs—“That’s What I Like,” “Versace on the Floor,” “Finesse” and the inescapable title track—Mars continued to pop up in Vegas regularly for his big, welcoming musical party on the Strip.

The nostalgia his fans also feel for the sounds of that era keeps Mars and his audience connected on a deep, dance-inducing level, and this year he’s strengthened that bond with his new music. Teaming with another versatile talent in rapper, singer and musician Anderson .Paak to form a new project dubbed Silk Sonic, Mars has shifted his focus to re-creating the R&B and soul of the 1970s. The duo collaborated with legendary Parliament Funkadelic bassist Bootsy Collins and took inspiration from generations of Motown artists, James Brown, Aretha Franklin, Stevie Wonder and Prince. Time will tell if Mars incorporates Silk Sonic singles “Leave the Door Open” and “Skate” into his Vegas shows, his only live performances currently scheduled. But the Vegas experience, which was the first big-room residency show to return to the Strip after the shutdown of 2020, is more than just a musical trip back in time. Mars and his band hit the stage hot and never cool down, not even when he belts out hit ballads like “Just the Way You Are” and “When I Was Your Man.” He keeps everyone dancing to the bouncy “Locked Out of Heaven” and the retro “Uptown Funk.” And when he does reach back for a quick cover or acknowledgment of the music that set him on his path, it feels like you’re out at a bar with your best friends, picking a song from the jukebox or singing karaoke together. That’s the power music holds over all of us, and Mars has a refined understanding of that phenomenon.

Piff talks challenges and rewards of larger showroom HERE’S A BIT OF VEGAS ENTERTAINMENT TRIVIA to impress your friends: Who was the first headliner to reopen on the Strip after the shutdown of 2020? The answer is Piff the Magic Dragon at the Flamingo. The illusionist and comedian has been starring at the legendary center-Strip property for six years now and just signed on for three more years, continuing the significant growth of the show that moved out of the intimate cabaret space and into the larger Flamingo Showroom last fall. It’s one of the rare Vegas productions that expanded over the last two years, and it only takes a couple minutes of the performance to understand why Piff is thriving. What was it like to move the show into the big room at the Flamingo last year? For the last couple of years, we’d been touring the show in different venues with anywhere from 500 to 2,000 or 3,000 people in the audience. So, this was a pretty simple move and transition for us. The great thing is now we can

do all this stuff we’ve been wanting to do so long in Las Vegas, bigger tricks, bigger routines. It’s a blank canvas.

Although it was challenging, to say the least, to keep it going last year and earlier this year, what did you learn from this experience that has helped you evolve the show? It took about three months to really find our feet in this room, but then after that it felt like home. We did 50 people for a long time, three months I think, which was bananas. But it was good to just the run the show, to keep doing it and keep figuring things out, and we developed a lot of material during that time so when audiences did come back, we’d had the flight time already. And doing what you’ve always done, uniquely combining comedy and magic, ended up being a real feelgood experience for audiences returning to Las Vegas for the first time in a long time. Considering it’s a grumpy dragon onstage, it’s still a feel-good show and everyone comes out of there having laughed for an hour and a half and had a really good time. It’s still what people need, to laugh and enjoy themselves and get out there and have fun. And maybe they are a little grumpy after the last year or so, so they can relate. It’s like, “I finally understand how he feels.” There’s so much new stuff in the show. Is there any element that stands out that you really love right now? The show is all new. We do a trick now with 25 pounds of lemon-lime Jell-O, and that took awhile to get right, but it’s a lot of fun for me. It’s one of the things I’m most proud of, but with the whole show being new, audiences are just loving it. But we do have a $500 a week Jell-O budget, I think, and I’m getting sick of the stuff because I eat the leftovers. You kept busy doing some virtual shows and TV gigs, and now that you’re back, I’m sure you have plans to tour again soon. Where is your focus heading into the new year? We really don’t have time for stuff like (virtual shows) now and all our time and energy is going into the Vegas show and making it the best we can. I just changed one of the pieces and spent a week working on that, and it’s really about investing in what we do in Vegas performing live. I’ve been out on the road a couple times but it’s still a strange time for that. I think next year we’ll do something like 46 weeks in Vegas, and that suits us just fine. We’ve transitioned to being much more in Vegas now, which I love.
