As Las Vegas prepares for an action-packed 2022, it’s important to note how much our city has rebounded since the disastrous events of 2020. Last year saw almost the complete reopening of everything that makes this city the entertainment powerhouse it is. Shows, restaurants, nightclubs, live music venues and shopping that visitors know and love all returned—and thrived, thanks to all of you. And to all our visitors who contribute to our city’s success, we dedicate this issue of Las Vegas Magazine, arguably our most important of the year. It’s our annual Hall of Fame issue ( p. 26), a collection of 10 of the Strip’s most vital venues, shows, shopping and much more, all available for you to enjoy right here and now—and all chosen by past honorees. After all, who knows this city better than Wayne Newton? And because this city is synonymous with parties and celebrations, what better sponsor for this year’s class than Jack Daniel’s? This feature should give you plenty of ideas for ushering in 2022 in style. (And, as you enjoy yourself this week, please remember our sponsor’s slogan: “Live Free. Passing the Torch

‘Hell’s Kitchen’ winner helms Paris restaurant As famous as Gordon Ramsay is for his restaurants, he’s equally famous for the television legacy he’s created over the last few decades. The legendarily foul-mouthed host of such reality-show classics as Kitchen Nightmares, Master Chef and The F Word has created a recognizable brand the world over, demanding only the best from the people and up-and-coming chefs he brings into his orbit. Fans of Ramsay’s most recent series, Hell’s Kitchen: Young Guns will be thrilled when they visit Gordon Ramsay Steak. That season’s winner, Trenton Garvey, is now the head chef at the world-class restaurant, and whether you’re a

fan of the show or just a Ramsay fan in general, you’ll love what Garvey is planning. I was recently invited to a gathering of food writers to meet Garvey and enjoy a small tasting menu. If this sampling is any indication, Gordon Ramsay Steak is in very capable hands. The amuse-bouche was a take on Ramsay’s Scotch egg, here prepared with a quail egg, Berkshire pork sausage, red wine-braised cabbage and truffle aioli. Heaven! (Compliments of Hell!) The Hudson Valley foie gras is a revelation for fans of the decadent protein. It’s served on caramelized orange brioche for the beginning of an amazing flavor profile, but Garvey then adds

smoked granola, Grand Marnier reduction and tangerine brulèe. This dish easily caused the most discussion at the table. Spoiler alert: the majority thought it was the highlight. Garvey’s diver scallops were a close second, one of the best examples of this mollusk I’ve ever had, accented with brown sugar-glazed carrot purèe, pickled carrots, dill oil and pomegranate. This is a “secret” menu item, available only for those in the know (which now includes you). Other Ramsay classics like the 8-ounce American wagyu rib cap and sticky toffee pudding are as scintillating as ever. Don’t wait—make your reservation here today. –Ken Miller

A Show to Remember Rio, 702.777.2782

There are so many elements at play during WOW—The Vegas Spectacular, it’s hard to know where to start. This family-friendly revue features dancers, acrobats, daredevils, comedians, jugglers and so much more, all in a 180-degree theater created to inspire awe and emotion. The storyline here involves the journey of Alberto, who stumbles into an alternative universe, one where pirates show off serious dance skills, chefs spin plates and moonwalk, and roller skaters defy physics. Alberto shows off some skills himself, mostly of the comedic variety. As he continues hurting himself and coming into the audience for sympathy, it’s extremely entertaining to watch audience members’ reactions. One of the show’s highlights is Silvia Silvia, a crossbow expert known to millions from America’s Got Talent. You’ll be holding your breath as she effortlessly displays pinpoint accuracy again and again. WOW stands for “World of Wonder,” and this show truly delivers on that promise. It’s a great reminder of the classic Las Vegas production show where anything goes. –Ken Miller

Even if you’ve never seen the show, odds are you’ve been to see some of the past winners: Terry Fator, Shin Lim, Tape Face, Piff the Magic Dragon ... the list goes on and on. The entire production is hosted by comedian Preacher Lawson, a high-energy, highly personable individual who keeps the proceedings moving at a brisk pace. You’ll hear the emotional, reverberating messages from poet Brandon Leake and the incredible musical talents of Kodi Lee. Magician Dustin Tavella will confound you

with his illusions while touching your heart at the same time (all three men won their respective seasons). There’s also the incredible acrobatic talents of husband-and-wife team Duo Transcend, as well as the nail-biting, death-defying knife-throwing skills of Deadly Games. But wait—we’re just getting started. Talking history with Piero’s lead bartender Piero’s Italian Cuisine and its lead bartender Ryan Bruce have something in common—they both have deep roots planted in Las Vegas. In fact, Piero’s will be celebrating its 40th anniversary this March, and Bruce is a third-generation Las Vegan. Bruce’s grandfather moved to the desert city to work for Area 51 and the Nevada Test Site; Bruce’s father has long owned and operated a small business in Las Vegas; and Bruce himself joined Piero’s when he was just 16 years old, more than a dozen years ago. “I thought I wanted to be a chef, so I came to Piero’s to help in the kitchen,” Bruce explains. “But I ended up bussing tables instead and then worked almost every position here from busser to waiter to captain and host. Then when I turned 21, I became a bartender.” As the lead bartender, Bruce takes great pride in taking care of each guest that sits at his bar. “I have a good memory of what you drink—I

can remember exactly what you drink and how you like it made,” he says. With Piero’s long history, many of Bruce’s guests have been coming to the restaurant for years—it’s long been a hot spot for celebrities, politicians. athletes and the Vegas elite. “I love the history here, especially being from Las Vegas myself,” Bruce says. “I wouldn’t trade it for anything. I grew up working here. I’ve taken care of the celebrities like Jerry Lewis, Don Rickles, Joe Pesci (scenes from the movie Casino were filmed at Piero’s). It really is a family-owned restaurant, and we treat it like that. It’s not going to be a quick dining experience—it takes awhile, but that’s what adds to the feel of it. The moment you get here to the moment you leave, you’re always going to be taken care of. Piero’s is one of a kind. It has that classic feel. It’s that old-school Vegas restaurant. Night + Market brings chef Kris Yenbamroong’s ‘Thai drinking food’ to Vegas Popular L.A. restaurant Night + Market has made a name for itself over the past few years, with owner Kris Yenbamroong’s fusion cuisine showing how flavors and dishes from different cuisines can go together. He’s not the first, of course, and it’s that Asian fusion scene that inspired him along with the experiences he had in his family’s restaurant while growing up. With Night + Market, Yenbamroong took some of the most well-known Thai dishes and popped them up a notch. This “Thai drinking food,” as he termed it, hit a chord and attracted a following, with visitors from Vegas regularly making the trek to enjoy it. With Night + Market’s opening in Virgin Hotels Las Vegas, that trip was a lot shorter. In Vegas, Night + Market is a bright, vibrant place with a menu that makes your mouth water. Like the L.A. spots, a big focus here is on wine, of which you can find plenty, in red, white, rosé and orange! There’s champagne, too, plus cocktails like the spicy Thai chili margarita— with its combination of Yola mezcal, curaçao and Thai chili, it’s sure to wake you up. Start with raw bar selections like oysters and scarlet prawn sashimi, enlivened with spicy sauces. Much of the menu here encom-

Al Solito Posto’s incredible bar, where you might luckily find yourself for dinner if you skipped a reservation, also has new seasonal cocktails ready for sampling, such as the Hocus Pocus with vodka and chai tea flavors, and the Il Capo, made with cocoa nib mezcal, brandy and amaro. And don’t skip dessert; the hot new bite is pumpkin cheesecake with spiced caramel white chocolate anglaise. How could you resist? Back on the boulevard, celebrity chef David Chang is introducing something fun at his meat and seafood eatery at The Palazzo, the fantastic Majordomo Meat & Fish (702.607.3060). The Early Doors Menu is designed for guests who are ready for a quicker, earlier supper, perhaps because there are many more stops ahead on your night out on the Las Vegas Strip. The three-course meal is available Sunday through Thursday and includes options such as an iceberg wedge with thick-cut bacon and marinated tomatoes, a wood-grilled prime New York strip steak with beef fat butter, miso-marinated Chilean seabass with bok choy and daikon, and a selection of sorbets to complete the experience. At Sahara Las Vegas, a historic Strip casino that has been steadily updating its dining portfolio in recent months, the newest entry is Philadelphia import Chickie’s & Pete’s (702.761.8070), one of the most well-regarded sports bars in the country. Your favorite gameday foods are here, from burgers and wings to pizza and cheesesteaks. But seafood is the specialty of the house here, running the gamut from fried Sicilian-style calamari to New England clam chowder, warm or chilled lobster rolls to steamed mussels, clams and oysters. This is one of the few restaurants on the Strip where you can order whole Dungeness crabs and go to town at your table. If you watch movies or television from pre-1959, you’ll notice something interesting about casinos in Las Vegas: Everyone is standing. This despite the fact that casinos had been a Las Vegas institution since the first one was opened in 1906 (The Golden Gate, to be exact). That’s a lot of people doing a lot of standing over a lot of years! And as hard as it might seem to believe, we might still be standing at that Buffalo Link slot machine or that Dune-themed slot game were it not for a man named Gary Platt. For those who spend countless hours at their favorite machines without a bit of discomfort, that wonderful feeling you enjoy is mostly thanks to Platt and his simple idea: Why can’t people sit while they play their favorite game? It all started with a simple sketch Platt drew on a yellow pad for a gaming supply executive—a 12-inch-by-12-inch seat with straight legs. While Platt can’t remember the first casino to try them, within 24 hours that casino begged for more, indicating that its revenues had skyrocketed. The rest is history. You may now be seated.
