NOTES
From the Editor It’s Magic!
In addition to gambling, nightlife, Cirque du Soleil and themed resorts, Las Vegas is known the world over for its phenomenal magicians. It’s no secret in the magic community that you’ve officially “arrived” if you score a Las Vegas residency. After all, this is the city that gave the world acts like Siegfried & Roy. And the current list of magicians performing here reads like a who’s who of the profession. One of the longest-running magicians in Las Vegas is Mac King. His Comedy Magic Show has long been a favorite with families—as well as some of the most famous magicians you can name. He recently moved his hit show to Excalibur, and it’s safe to say his brand of entertainment will never go out of style (“Feel Like a Kid Again,” p. 32). Speaking of magicians, illusionist Criss Angel, who already has a hit show at Planet Hollywood Resort, MINDFREAK, is hard at work on unveiling his next big show with producer Franco Dragone, AMYSTIKA, at the same property. Radke recently interviewed the entertainer to discuss that project, as well as a restaurant he recently opened (“Artistic Drive,” p. 34). Another thing Las Vegas is known for is cocktails. And in this issue, associate editor Kiko Miyasato takes you on a tour of some of the city’s best happy hours. (“Get
Your Drink On—and On and On,” p. 22). While you’re touring the valley’s watering holes, consider enjoying some of its newest restaurants, detailed in this issue by Radke in his On and Off the Strip column (“New Year, New Eats,” p. 26). And that’s just the beginning of the dining options available in this week’s issue. No matter your taste, there’s something in Las Vegas guaranteed to satisfy. Mexican food lovers will want to check out ¡VIVA! at Resorts World Las Vegas (“Eat in Style,” p. 9), while carnivores will no doubt be excited to try recently opened Carversteak at the same property (“Luxurious Cuts,” p. 14). And January is Vegan Dining Month (and Veganuary), so whether you’re a vegan or would just like to see what it’s all about, some of your favorite restaurants in town offer amazing options, highlighted by managing editor Nina King (“Upping Your Vegan Game,” p. 24). If you’re like us, you love looking at gorgeous homes. Wait until you check out this week’s LVing feature: A three-story penthouse at Sky Las Vegas (“Stunning Showcase,” p. 44). And yes, it’s for sale! Las Vegas is known for so many things, and Las Vegas Magazine will remain your go-to source for the best options in every category. Here’s to an exciting and eventful 2022!

tour it by invitation only. So, the book is a way of allowing other people to see this amazing place and some of the highlights, with beautiful pictures. But the book itself is only two or three years in the making because I was searching for another way to share this place. It’s a very rich history, and I’m really proud of it. You know more about magic than anyone, but was there anything that you learned or rediscovered while you were compiling the material for the book? I was more of a creator than a historian for decades, inventing new magic, making giant objects disappear, walking through walls, traveling around the world trying to break the mold of what magic was. My current show at MGM is about dinosaurs and spaceships, aliens and time travel, things that don’t exist in any of these amazing volumes in the library here. My real effort in life was to move magic forward, and I didn’t look back. Then, 20 years ago, I acquired a collection of things just to kind of rescue it and keep it together, and I started learning about the stories of these magicians, and suddenly it was vibrant. Stories are very important to me. We learn from stories. We learn from our past. So, in the last 20 years, I’ve been looking back as well as looking forward, and it was very enjoyable to relearn all this stuff, and through the book, I found out some incredible things I didn’t know.

Since reopening your show at MGM Grand, you’ve been back onstage for 15 performances every week. What’s the secret behind that incredible consistency? I take no days off during the weeks I work, then I take 10 separate weeks off during the year and it’s a great balance for me. I get to re-energize during those breaks, but while I’m here I like to work. I do three shows Saturdays and two shows every other day. But the audience is the reason I’m there. I enjoy them, I enjoy the experience, and if I wasn’t having a good time, I wouldn’t do it. It’s very rewarding. I’ve been doing meet-and-greets in a different way now where I’m doing a little command performance backstage, and I look forward to it. I get to do a piece of new material to test for that group backstage and it’s really fun, and they’re happy about it, too. –Brock Radke MGM Grand, 866.740.7711

Educational Oasis At Siegfried & Roy’s Secret Garden and Dolphin Habitat, you’ll be immersed in a lush oasis filled with exotic animals such as white tigers, white lions and dolphins, including the adorable Lady Ace, the most recent addition to the dolphin clan. Since its opening in 1990, this enchanting habitat has not only served as a sanctuary for some very big cats and sea creatures, but it also focuses on scientific research, education and conservation outreach. Once entering the Secret Garden, you’ll feel like you’ve been transported to some distant jungle or African veldt, replete with abundant grassland, greenery, trees and waterfalls. Within the habitat, you’ll find lions, tigers and leopards lounging and grazing in the grass. You’ll also find plaques with fun facts and information; for instance, did you know that the frosty coats of white tigers and white lions is due to a condition called leucism, which means they lack dark pigmentation? So, be careful not to call them albinos. –Las Vegas Magazine Staff The Mirage, 702.791.7188

Magical Music Memories
Tribute act evokes a bygone era of entertainment In 1978, I was obsessed with two movies: Grease and Saturday Night Fever. I went to see Grease three times (waiting in line what seemed like hours each time), and although I was too young to see Fever, I was struck by two things: Its poster, featuring a mythical-looking John Travolta, striking his now-classic disco pose in a white suit; and the soundtrack, particularly the tracks by the Bees Gees—I had simply not heard anything like it before. To this day, that music still captivates me and takes me back. In other words, I’m the ideal audience for The Australian Bee Gees Show, a tribute to the legendary trio of The Brothers Gibb—Maurice, Robin and Barry, rendered beautifully by Wayne Hosk-

ing, David Scott and Michael Clift, respectively (on the night I attended, James Simpson and Matthew Baldoni filled in as Robin and Barry). They bring back 1978 to brilliant, vivid life, delivering crisp, note-perfect renditions of not only every Fever classic they wrote, either for themselves or other artists—“Stayin’ Alive,” “How Deep Is Your Love,” “Night Fever,” “You Should Be Dancing,” “More Than a Woman,” “If I Can’t Have You” and “Jive Talkin’”—but also the theme to Grease, written by Barry. But that’s only the beginning of the fun on tap. The trio performs nearly 30 songs over the course of 70 minutes, some in their entirety, some in small snippets or as part of medleys.
There’s also a fair amount of humor throughout— Hosking will comment on how good that night’s audience is at singing along (and how he says it every night, but really means it this time), and during a moment when all three men are singing into one microphone, Hosking gets forced to the side so that just two men can sing, and he’s not sure what to do with himself until rejoining his bandmates at the mic. Best of all, the audience is fully encouraged to dance at “Club Mo,” off to the side of the stage. When the disco starts, the theater is transformed into a nightclub—and people like me are transported right back to 1978. –Ken Miller Excalibur, 702.597.7600

Great Flavors, Views It’s really not much of a contest: For people-watching and great views of the heart of the Las Vegas Strip, Giada cannot be beat. The restaurant’s perched on the second floor of The Cromwell, with floor-to-ceiling windows that open out onto a vista that includes Caesars Palace, the Fountains of Bellagio, Bally’s and more. Like Giada’s California-influenced Italian food, it’s just delightful. Whether you’re here for dinner or brunch, you’ll find plenty to keep you satisfied. We’re partial to those bacon-wrapped dates to start (especially when they mix in spicy Italian sausage and gorgonzola crema), and the arugula salad is terrific, its flavors snapping with candied lemon, crispy pancetta and Parmiagiano-Reggiano. Whether you opt for surf or turf, get ready for a treat. The branzino features creamy fennel and potato puree, braised fennel and a pomegranate glaze, while the veal chop saltimbocca is served Milanese-style. Don’t skip dessert here, especially Giada’s Favorite Cookies, which includes her lemon ricotta recipe—probably our favorite cookies on the entire Strip. Rio steakhouse offers great views and cuts Treat yourself to the full steakhouse experience at VooDoo Steak. This restaurant at the top of the Rio offers incredible views of the lights of the Strip in the near distance. Start with a cocktail, the Witch Doctor, which may possibly be Las Vegas’ most famous. This behemoth is concocted with five rums and a mix of fruit juices and is served in a monster glass fishbowl from whence smoke rolls off. (The smoke is created through the magic of dry ice, and it is mighty impressive.) Accompany that bad boy with the seafood tower, served hot or cold, or both. scallops and shrimp scampi. Pretty decadent. But the appetizer menu doesn’t stop there. Go traditional with crab cake or a shrimp cocktail, or take it up a notch with brandied steak tartare with a quail egg, or a short rib bruschetta with truffle ricotta. An heirloom beet salad, prepared with aged balsamic, honeycomb, watercress and candied pecans, or French onion soup with Parmesan crust will both really hit the spot, not to mention providing the background for the main attractions here at VooDoo. For that, choose lamb chops, chicken Marsala with crispy pan-fried chicken breast and forest mushrooms or fried pork shank. Seafood lovers
will dig Australian lobster tail, Norwegian King salmon or ahi tuna. But steak is the main draw, with 21- to 28-day wet-aged steaks presented in a variety of ways, including a 10-ounce filet, 16-ounce ribeye, 20-ounce bone-in ribeye, 8-ounce Mishima Reserve wagyu rib cap or 12-ounce wagyu ribeye. The 32-ounce tomahawk dinner for two entices with a side of lobster mac and cheese. And there are plenty of other sides to add, like wild mushrooms, tempura green beans and a blue cheese potato gratin. A Whirlwind of Fun As you walk into the Mystère theater, don’t be surprised if you find yourself in the spotlight—literally. A clown, who wanders through the theater before the show starts, delights in pranking random audience members—maybe you! Mystère never disappoints in the fun factor department, from the oversized baby looking for his “Papa” to the reappearance of the clown throughout the performance, performing magic tricks and generally messing around with the other performers. It’s a very loose framework around which Cirque has assembled some of the greatest athletes. You’ll wonder if acrobats are defying gravity as they ascend poles effortlessly, then slide down, stopping themselves just before they hit the ground; as two strongmen hoist each other into impossible positions while slowly spinning on a raised stage; and your adrenaline will be pumping as you watch acrobats propel each other up in the air on a see-saw, culminating in some truly dizzying heights. –Ken Miller Treasure Island, 702.894.7722

Arthur Lucero
Creating magic behind the bar Arthur Lucero moved to Las Vegas to seek “more opportunity, something exciting, more social,” he says. And that’s exactly what he got! Lucero works as a model bartender for the Strip residency show Magic Mike Live Las Vegas at Sahara Las Vegas and he found everything that he’s been looking for. When he moved to the city in 2013 from Taos, N.M., he cut his teeth in the industry bartending for hot spots like Piranha nightclub. Then, in 2017, he heard about the Magic Mike movie franchise opening up a live show at the then-Hard Rock Hotel, so he decided to audition for one of its model bartender positions. He landed the job and stayed with the show until it closed at Hard Rock. He bartended at bars and restaurants in Park MGM until he caught wind that the show was opening at Sahara. “When I heard the show was set to reopen, I reached out to the managers, who were happy to welcome me back, which was a huge honor,” Lucero says.
The show recently celebrated its grand opening. “We get all types of guests from all over the country,” Lucero says. “They’re always a little nervous because they don’t know what to expect. As part of the model bartending team, the experience begins with us. I let them know, ‘Let’s have some fun tonight.’ The goal of the show is to remind women how powerful and precious they are, so celebrating them the moment they come up to the bar, that’s what it’s about. The smile you see when people walk out of the theater—you can see their aura glowing.” While Lucero works his magic behind the bar whipping up cocktails, I had to ask if he ever gets to shake his groove thang for guests, so to speak. “I always like to insert a corny joke when guests ask that. I like to tell them, ‘I auditioned but word-of-mouth straight from Channing Tatum (who conceived and co-produces the show), the only thing I have business shaking is a cocktail.’” Ha! –Kiko Miyasato

Lately, you may have noticed more vegan options when you dine out. (Even fast-food joints have vegan and vegetarian options!) This month, plant-based eating gets a starring role on menus, thanks in part to Veganuary, an English charity that encourages people to try a vegan diet for the month of January and which is becoming more popular in the U.S. If you want to give it a go, here are some fabulous options for you while you’re on vacation. Vegan advocate Vegans, Baby has partnered with restaurants across the Vegas Valley for Vegan Dining Month, offering special meals where a portion of the proceeds will benefit a local animal charity. You can check the list on vegansbaby.com, but some delicious dishes you can enjoy include the truffle vegan meatloaf with potatoes and truffle gravy at Barry’s Downtown Prime (Circa Resort & Casino, 702.726.5504). There’s a vegan menu as well, so you can indulge in other items, too. Also on Vegans, Baby’s list is Border Grill, with a root vegetable tamale, Impossible meat nachos, wild mushroom tacos and smoked tofu enchiladas (Mandalay Bay, 702.632.7403). There are lots of local options as well, including Tacotarian in the Arts District (1130 S. Casino Center Blvd., 725.251.3853). The Venetian and The Palazzo has upped its vegan game; more than 15 restaurants in the resort offer vegan options, like, Brera Osteria’s Go Vegan four-course prix fixe menu (The Venetian, 702.414.1227), where your choices include

garganelli, farro, eggplant and spiced polenta. Another great option for vegans includes the high-end Chinese place Mott 32 (The Palazzo, 702.607.3232), where the signature smoked “cod” has garnered rave reviews from meat eaters and vegans alike. And the braised eggplant is to die for. At Bouchon (The Venetian,

Casual options for vegans at Resorts World Las Vegas include Streetbird (702.676.7000), where chef Marcus Samuelsson introduced Impossible chicken nuggets to snack on in November, and Mulberry Street Pizzeria (702.676.8860), where you can get a slice perfect for you. And for dessert? Stroll over to Craig’s Vegan (702.676.7000), where the plant-based ice cream will make you swoon. A local favorite, Ada’s Wine Bar (410 S. Rampart Blvd. No.120, 702.462.2795) has five vegan items on the menu, including blue corn tamales. And there are plenty of vegan-only restaurants in Vegas (including burger joints!), but the broccoli beef at Chef Kenny’s Asian Vegan Restaurant (682 Spring Mountain Road, 702.889.0939) is freaking amazing. The chef, Kenny Chye, also owns Chef Kenny’s Vegan Dim Sum (5570 W. Flamingo Road, 725.251.3920). Saffron, The Vegetarian Eatery (3545 S. Decatur Blvd., 702.201.1926), garnered a ton of buzz when it opened, offering Asian cuisine with such items as mushroom dumplings, floating gyoza, and red and green curries, plus vegan cheesecake and gelato.

Open for breakfast, lunch, dinner and weekend brunch, the updated restaurant now displays the design influences of Miami with fresh new art and finishes built around an expanded main bar at the heart of the space. New dishes reflect Chica’s long-standing commitment to diverse flavors and ingredients,
including crispy Peruvian octopus with blistered Padrón chilies, wagyu beef quesabirria empanadas, baby back ribs al pastor, and a roasted meat parrillada with beef, lamb, venison chorizo and chicken. A spicy new casual option also popped up on the Strip recently. The second Las Vegas loca-

tion of Los Angeles phenom Dave’s Hot Chicken (725.229.7300) is now dishing up tenders and sliders at the Grand Bazaar Shops at Bally’s, matching the scorching heat and comfort-food satisfaction available at its drive-thru store on the west side of the valley. Speaking of homestyle food favorites, doesn’t an indulgent bowl of mac and cheese topped with Buffalo-spiced fried chicken sound great right now? That’s just one of the signature offerings at the new I Heart Mac & Cheese (702.875.4566) on South Fort Apache Road, the first Vegas spot from the burgeoning franchise. You can build your own bowl from a variety of ingredients or opt for a customized grilled cheese sandwich at this smile-inducing, casual restaurant. Comfort food awaits! Let’s raise the level of luxury by returning to the Strip to check out one of the newest openings at Resorts World Las Vegas. Caviar Bar (702.676.7936) offers a sleek and sexy environment in which to sample one of the world’s great delicacies, from Russian Golden Osetra caviar to Siberian sturgeon caviar and everything in between. Charcuterie, antipasti, cheeses and a selection of entrées like cauliflower risotto and wagyu beef with miso butter round out the offerings here, in addition to curated cocktails, champagne and wine. Head north to the ever-changing Sahara Las Vegas resort, where Chinese cuisine is the latest addition to the dining portfolio with the charming and authentic Noodle Den (702.761.7000). Hand-pulled noodles and scratch-made dumplings are the centerpiece of this exciting new menu, in addition to Northern Chinese favorites like sweet and sour pork ribs, roast duck and Yangzhou fried rice. Ready for something sweet? Head to the Arts District downtown and explore all the goodies at the newest location of Freed’s Dessert Shop (702.989.9899). You won’t find a more colorful and tempting pastry case in town, and this offshoot of the local institution Freed’s Bakery (established in 1959) is a perfect fit with the fashionable bars, restaurants and shops blossoming on Main Street. These delicious destinations prove there is always something new to experience around town, whether it’s a culinary comeback, an exhilarating expansion or a brand-new concept looking to make its mark on the Vegas food scene. When restaurateur and chef Bobby Flay first began traveling through Italy, he might not have been intending to transform his Mesa Grill at Caesars Palace into an Italian restaurant. But when the opportunity to do so appeared, it seemed perfect. “Opening Amalfi at Caesars Palace has allowed me to showcase my passion for the Amalfi Coast and the fresh flavors the region is known for,” said Flay in a release when the restaurant opened last summer. Inside the upscale, seafood-driven restaurant, you’ll find a scene set with light woods and tile work, with a bar curving away from the entrance. The dining area is arranged as two large rooms, with comfortable seating, soaring ceilings and an open

kitchen with large racks of wine on the area above that, creating a striking architectural element. In the second room, you’ll find more tables and circular blue-tiled displays, a focal point that showcases the seafood available that night. There are several cocktails to start a meal with, from light spritzes to mezcal negronis and espresso martinis, plus wine and beer. The antipasti has plenty of seafood-inspired selections, including a shellfish fritto misto with pistachio pesto, charred octopus, tuna tartare and mussels in a tomato and white wine broth. The ricotta-stuffed squash blossoms are also popular, and in a delicious twist on the classic caprese, bufala mozzarella comes with charred lemon
leaves and chopped tomato relish. Choose from pasta like the squid ink fettucine, an eye-catching arrangement with lobster, squid, shrimp and a fra diavolo sauce. The spaghetti limone, with Calabrian chili and Dungeness crab, presents a milder flavor, and the orecchiette is served with an inventive eggplant Bolognese. The fish menu is special here, with guests heading to the fish display to consult with a fishmonger, and select their dinner entrées. Recently, striped bass, red snapper, branzino, carabinero shrimp, among others, were available from the market, although your options may vary. Choose from grilled whole or filleted, served one of three ways: with Meyer lemon and capers, with salsa verde or with red pepper and Calabrian chile pesto. You can also choose Jidori chicken al forno, with a pecorino crust, or ribeye, New York Strip or filet mignon steaks, all Prime Angus beef. An amazing side is the crispy potatoes with Parmesan, lemon and oregano. There won’t be any of this left over. The unusual cremini mushroom polenta with mascarpone and white truffle oil is delicious. And the desserts are delightful, including Bobby’s pistachio sundae, a chocolate budino, blackberry crostada and tiramisu. But the Lemon, Lemon, Lemon cake definitely does take the cake. Tart lemon custard is layered over a light lemon cake and crispy lemon wafers, for a perfect finish.

Mac King balances laughter and illusions at Excalibur By Ken Miller
Before The Mac King Comedy Magic Show even begins, something wonderful happens: An announcer invites you to participate in the kids’ singalong “If You’re Happy and You Know It.” Sure, there’s bound to be plenty of eye-rolling at this request (maybe by you yourself), but once that jaunty music starts playing, you just cannot help yourself—you’re clapping your hands, stomping your feet and shouting “Hurray!” along with everyone else. The best part? It instantly puts you in a better mood. The cares of the world fade away, and suddenly you’re a kid again, smiling and excited for what’s to come. That feeling will continue unabated throughout King’s set. The Kentucky-born-and-raised magician instantly connects with his audiences through down-home humor and a self-effacing nature—no one is quicker to acknowledge that a joke didn’t work than King, which in itself is pretty hilarious. And King’s choice of garb—that checkered suit that seems just a bit too big for him—is now as iconic as his long-running show, long one of the best family shows in Las Vegas. King is so endearing, in fact, that you momentarily forget you’re at his show to see some magic— you’d rather just have a conversation with the guy while sitting on a porch, drinking some sweet tea. But when the magic does come, it’s very organic to King’s persona—there’s no pomp, no circumstance, no razzle, no dazzle. In fact, the illusions are oftentimes so subtle that you may not immediately realize you’ve just seen the most amazing thing

ever. But when it hits you, don’t be surprised to find your jaw on the floor. (King’s immense talent has been praised by many in the magic community, including Penn Jillette, who has often called him one of the best magicians he’s ever seen.) And there’s plenty of audience participation in King’s show as well, highlighted by several great bits: Using a “cloak of invisibility” (no Harry Potter jokes, please), King helps a couple move some playing cards around the stage—and each other; Using four envelopes and a bit of fire, King finds a novel way to use a volunteer’s $100 bill; A young volunteer is asked to help King set up his camping tent. At one show I attended, my great-niece was brought onstage. Her reaction to the “great reveal”—utter shock, followed by the biggest smile ever—remains one of my fondest memories as a Las Vegan. Excalibur Other props are used to huge 800.745.3000 effect, particularly a goldfish that Ticketmaster seems to literally appear out of thin air, a guinea pig that pops up in the most unusual of places (you’ll see!) and … Fig Newtons. We won’t tell you where King makes these things appear from, but trust us … if he gives you one, do not eat it. By the time King’s show is over, it’s hard to say what you’ll miss more on the walk back to your room—the illusions or the laughs.

From restaurants to shows, Criss Angel is keeping busy Criss Angel returned to his spectacular MINDFREAK show at Planet Hollywood last year while laying groundwork for AMYSTIKA, a collaboration with legendary director Franco Dragone, set to open March 11. We chatted with him about AMYSTIKA and his new endeavor, Criss Angel’s Breakfast, Lunch and Pizza (aka Cablp).
Most Las Vegas headliners had a very busy year in 2021 but you really took it to another level. You added a beautiful baby girl to your family and opened a restaurant, all while getting MINDFREAK back on track. How’s the restaurant biz treating you? Cablp is doing fantastic and I’m really excited about the future of that concept. We bought a second building and are hoping to open a second location by the end of (this) year, and we’re looking for at least 10 locations in the future. People love it, the food is amazing, just casual comfort food in a great environment with a friendly staff. That community in Moapa Valley with Overton and Mesquite, they’ve been fantastic and incredibly supportive. And it all started because of my son Johnny Christopher’s birthday wish to ride dirt bikes in the desert, that’s when we stumbled upon this place and camped out for the first time as a family there, and we all loved it. Of course, you also spent a lot of time last year developing AMYSTIKA, your new show that is set to open in March. What was the spark for this project? I think back to when I first saw Franco’s work on an HBO special and I just fell in love with something about what he does. He’s completely unorthodox and has a different way of thinking about live entertainment and theater and circus. He’s been copied and emulated, but he is who he is, and I always wanted the opportunity to work
Planet Hollywood Resort 702.777.2782
with Franco. Back in the first days of Le Rêve (formerly at Wynn Las Vegas), we hooked up and worked on that show … and we were developing a show together for Steve Wynn before my deal at Luxor, but that never came to fruition. But we kept in touch. What’s it been like to work with him on this new show? Franco is probably one of the most prolific directors in entertainment history, and he certainly changed the trajectory and history of Las Vegas. Now we are equal partners on a course to create some more. Sometimes when you work with somebody, you don’t know what you’re going to get. It has turned into something absolutely beautiful, and I’ve grown so much, personally and professionally. He’s such a genius at what he does and he looks at the process in a very different light that I’ve seen anybody do. You’ve said AMYSTIKA is a sort of prequel to MINDFREAK. What will set this new show apart from your previous efforts? What’s wonderful about this show is that it’s very interactive, a visual feast, but there is a story there. This is the first time I’m aware of in Las Vegas history where you have two shows you have to see to get the complete experience and understand the entire concept. This is about my journey, about how I became who I am, not literally but much more symbolic. Hopefully it will give anybody watching it not only an incredible experience, but to leave the theater realizing anything is possible, even for a kid who barely made it through high school and never went to college and now finds himself more successful than he ever dreamed of. If I can do this, anyone can do this.

It’s a showpiece in and of itself; the stainless steel appliances, wood finishes, appealing light fixtures and granite countertops will be a hit with any budding chef. And wait until you see the views from the breakfast bar, covered balcony and dining area—an expansive glass wall overlooks
