From the Editor You Can Have It All
Whether this is your first visit to Las Vegas or you come out a couple of times a year, you all likely have something in common: There’s a specific reason you came. Some make plans months in advance to see their favorite band perform; others want to revisit their favorite shows; others want to check out the natural wonders of the Southwest, with Vegas as their hub; still others plan on doing some serious gambling. It’s the Vegas mystique: It means something different for everyone. This week’s issue of Las Vegas Magazine is a perfect example of that mystique. We really do have something for everyone in the following pages. For those seeking: Entertainment? Check out one of the most beloved shows in the history of Las Vegas, Cirque du Soleil’s The Beatles LOVE at The Mirage, which is celebrating its 16th anniversary this month (“Sweet 16,” p. 30). If you head downtown, you’ll be able to enjoy the off-the-wall joy that is Miss Behave’s Mavericks at Cheapshot. And in this issue, editor at large Brock Radke interviews the show’s creator and host Amy Saunders (“One Wild Night,” p. 32). Live Music? Head straight to Virgin Hotels Las Vegas, where music icons Chris Isaak and Lyle Lovett are performing as part of the same show (for the first time) in what is sure to be an unforgettable evening
(“A Good Good Thing,” p. 34), or check out country superstar Luke Bryan, who continues his smash residency at Resorts World Las Vegas (“The Great Entertainer,” p. 9). Dining? Fans of Todd English will want to check out his newest version of Olives, previously at Bellagio and now at Virgin Hotels Las Vegas (“Coastal Accents,” p. 24). And if you’re planning on catching a game at the massive sportsbook at Circa Resort & Casino downtown, pay a visit to Victory Burger & Wings (“Winning Ways,” p. 14). If you’re in town with Dad this week, check out some of best places to make him feel special on Father’s Day (“Father Figures,” p. 12). Libations? The Great Entertainer When Luke Bryan won Top New Artist and New Artist of the Year at 2010’s CMAs and ACM awards, just a few years after releasing his first album, it was a harbinger of a successful career to come. Since that time, Bryan has released 10 albums, sold about 75 million records, garnered many other awards,

been named entertainer of the year five times, become a judge on American Idol—and scored a Vegas residency. In his first dates earlier this year, Bryan pulled out hits like “Crash My Party,” “That’s My Kind of Night,” “One Margarita,” “Huntin,’ Fishin’ and Lovin’ Every Day” and
“What Makes You Country.” “Drink a Beer” provides an emotional moment in the concert. And possibly his most popular song of all, “Country Girl (Shake it for Me),” will leave the audience feeling energized, before “I Don’t Want This Night to End” brings another performance to a close. –Nina King

Master Class in Laughs
Comedian brings more than props to the stage Prop comic extraordinaire Carrot Top is currently observing his 16th year as a headliner at the Luxor, his 15th anniversary having taken place during the pandemic pause. While a nonstop barrage of visual jokes is his trademark, the stage show has evolved. “I had a friend last week who came and said, ‘I don’t think you should be called a prop comic anymore,” says Thompson. “There’s still props in the shows, but there’s a lot more storytelling—it’s hard to describe—or even stand-up.” The screen behind him is used to complement his delivery with visual punchlines, often media-driven, for at least one-third to one-half of the show. One bit involves images from a Las Vegas Magazine shoot of him in a Varvatos suit with his trademark curls straightened. “Whenever we have a real windy day, I always come onstage and say, ‘What a beautiful day. Look at the beautiful weather,’ and they show a clip of me where they put like 10 leaf blowers on me outside. It’s fun. I’m trying to smoke a cigarette, and then it cuts to, ‘My hair was straight this morning,’ then I put those pictures that you did with the straight hair, and it kills. It always kills.” Thompson’s prop jokes are often topical and may remain in the set as long as they continue to get laughs. A giant, translucent, impenetrable cell phone case that prevents tweeting may show up whenever Donald Trump trends. A clip of Norm Macdonald chiding Carrot Top’s infamous foray into film, Chairman of the Board, on Late Night With Conan O’ Brien made it to the screen after Macdonald’s passing, transformed into a self-deprecating tribute. “There’s always props being built,” says Thompson. “There’s a shelf life, but I can always retool it and make it work.” And he kills. Get your weekend mornings started on a perfect note at Giada. The Food Network star’s California-Italian dishes are light, yet decadent. No matter if it’s Saturday or Sunday, since it’s brunch, ordering a drink is clutch. The Giad-arita is a simple but delicious thing with Patron silver, Cointreau and lime juice, while the G consists of Macchu pisco, pineapple juice, apricot preserves and Angostura bitters. But if you prefer sangria, wine or beer, Giada’s got those, too. If your appetite is light, try ordering a pastry basket—there are several goodies to sample, including rosemary-Parmesan scones and chocolate croissants. If you need more, try the Sunrise polenta waffle, a favorite among patrons, with béchamel and two sunnyside-up eggs. Other great options include cavatelli pasta with pesto, and a really delicious grilled panini with lemon pesto and heirloom tomatoes. And since it is brunch, not breakfast, feel free to indulge in dessert. The chocolate tiramisu is gorgeous and tasty, while a selection of cookies are sure to include Giada’s justifiably famous lemon-ricotta cookies. –Nina King

The famed Fountains of Bellagio feature a dancing fountain show that’s an epic feat in design and dazzling production. More than 200 water-emitting devices spread across 1,000 feet rocket water nearly 500 feet up. The attraction animates the water, so guests watch choreographed “dances” to hit pop songs like Cher’s “Believe,” Lady Gaga’s “Bad Romance,” Bruno Mars’ “Uptown Funk,” and Elvis Presley’s “Viva Las Vegas.” It’s also a top spot for romance, especially

We’ve lassoed a few suggestions as to places to take him and what to order (and making reservations ahead of time are never a bad thing). We know not all dads are fans of barbecue, but if yours is, Virgil’s Real Barbecue in The Linq Promenade is offering a special surf and turf menu with a 28-ounce tomahawk and grilled shrimp with two sides. If he orders an entrée, he’ll get a beer for free. Hofbräuhaus Las Vegas, at 4510 Paradise Road, has created the Smokehouse Platter, with

Krainer sausage, Debreziner sausage and smoked pork. Share? Ha ha, as if he’d let you. Over at The Venetian, Chica’s three-course Father’s Day menu is full of surprises, with smoked octopus carpaccio, a 10-ounce rib cap with crab meat and Huancaina sauce. And check out the wildest dessert ever: The corn, a strawberry cheesecake that looks just like an ear of corn. At Carmine’s Italian Restaurant in The Forum Shops at Caesars, wowing your father is easy with a 2.5-pound Angus beef tenderloin, served with a sides like herb-stuffed tomatoes and roasted potatoes.

When you waltz up to Din Tai Fung, the first thing you may see is the chef with a dumpling for a head—he’s kind of hard to miss. The cheerful greeting from the Taiwanese dumpling house mascot puts you in an upbeat frame of mind, a feeling that is sure to continue until you are seated at your table. Ordering here is on a checklist-style system, where you choose the dumplings and buns you want to share. Good choices are the shrimp and kurobuta pork shao mai; Jidori chicken; and vegan dumplings, the latter stuffed with shitake and wood ear mushrooms, glass noodles and bean curd—but it’s the color that’s truly amazing. The plump buns come in several options, like kurobuta pork, Jidori chicken and oyster mushroom buns, and a vegan version stuffed with the same mix you’ll find in the dumplings. Get wontons and xiao long bao varieties, too. It seems like the choices are endless. If you’d prefer, choose soups, noodles or entrées instead of dumplings only. The vegan wonton soup is light and delicate in kombu broth. The hot sour pork soup is packed with tons of ingredients. Wok specialties include shrimp fried rice, fried rice with a pork chop; veggie and mushroom fried rice; noodle dishes; and rice cakes. –Nina King

Go Up, Look Down The Eiffel Tower Viewing Deck really is a cool attraction on the Las Vegas Strip—and one with some of the best views of said Strip. Hop aboard the elevator—with glass walls so you can watch as you climb higher and higher—that takes riders 46 stories into the air to the top of the half-scale replica of the real deal in France. Once at the top, the open-air, wraparound observation deck provides optimal views of the Bellagio

Winning Ways As the name would indicate, there’s no shortage of meaty options at Victory Burger & Wings, but you can also enjoy great salads, shakes and more. The burgers here are substantial, each featuring a half-pound of Angus beef, short rib and brisket blend. Top them with anything from an olive sauce mixture (the Vegas Martini Burger) to sweet red peppers, roasted artichokes and blanco cheese sauce (Fondue Burger). Wings can be ordered boneless or bone-in and prepared with buffalo, sweet chili, sweet barbecue or garlic Parmesan. Sides like onion rings and seasoned waffle fries round out what’s truly a satisfying experience. Vegetarians will love the Victory Loco Salad, romaine lettuce and spring mix sprinkled with tortilla chips and topped with fire-roasted corn poblano mix, chipotle ranch dressing and cotija cheese (and all burgers can be swapped out with the Impossible version). Bally’s production celebrates the variety show If you’re the type to romanticize Las Vegas (which means you’re like me), you’re the perfect audience for Extravaganza—The Vegas Spectacular. It’s a celebration of all the elements that make this city legendary, from famous performers and locales to gambling and the showgirl. It’s also one of the most jampacked variety shows you’re likely to see. Extravaganza is a collection of some very talented acts, from roller skaters and motorcyclists to acrobats and plate-spinners. The framework in which they operate concerns a down-on-hisluck hero who takes a one-way bus ticket to Las Vegas and experiences everything the city has to offer—including love. Along the way, he’s

guided by a tap-dancing philosopher who helps move the story forward while providing plenty of good-natured laughs along the way. You’ll visit a ’50s diner, complete with bobbysoxers, a wedding, a visit to downtown Las Vegas and even fly high in the sky with the moon in the background. The show is punctuated with several different styles of music, from the hits of Elvis Presley and Frank Sinatra to the sultry sounds of Marilyn Monroe—all courtesy of impersonators who appear via a portable projection screen. The show’s technological components are well used here, including background projections that propel the audience into the desert, up and down a roller coaster and along a canyon.
It all combines for a fantastic framework around which Extravaganza presents us with acts like the skaters who perform death-defying feats on a small, circular stage; acrobats who are hurled into the air during a romantic interlude; a juggler who tosses several hats into the air in succession, always managing to be at the exact spot when they return; crossbow master Silvia Silvia, who displays absolutely pinpoint accuracy in whatever she’s shooting bolts at; and a Michael Jackson impersonator who delivers some thrilling dance moves to “Billie Jean” and “Smooth Criminal.” Best of all? This show is fun for the entire family. –Ken Miller

You can view it as a learning experience. You can view it as entertainment. Either way you choose to view Bodies … The Exhibition, you’ll walk away with a better understanding and appreciation for that body that actually just carried you through said exhibit. Bodies is human anatomy come to life in a unique, curious and teachable way. Put through a method known as polymer preservation, 13 real, whole-body specimens and more than 250 actual organs and body parts are on display (as well as skeletal structures). The self-guided, walk-through experience is also chock-full of facts you can read throughout the exhibit: Every drop of blood in the body passes through the heart once per minute; the tongue is made up of 16 individual muscles; the kidneys filter impurities from the blood at a rate of 15 gallons per hour. Perhaps the most meaningful quote on display says, “Why all this interest in the human body? The answer to this question seems quite clear to me: your body is the only thing you can carry with you from the moment you are born until your very last breath.” So why wouldn’t you want to learn as much as you can about your body, right? And that makes Bodies … The Exhibition a must-see. –Kiko Miyasato

Sharing both sides of her personality There are two sides to Flamingo GO Pool’s model cocktail server, Tiffaniee Paige—the extrovert and the introvert. “I’m a party starter at this pool,” says the Florida native. “I’m hosting a party at my own house. Celebrating with my guests. I want to get to know my guests, my people. I think it’s important, customer service—I have to be on the memorable scale. I want them to remember Tiffaniee on their Vegas vacation.” When she’s not charming guests and bringing the party to the pool club, Paige is at home creating oil, acrylic and watercolor paintings, working out and writing poetry and song lyrics. “Outside of work I am a big nerd,” she says. “I give my personality to everyone all day at work, so when I’m done, I like to take a breath, relax and go inwards.” But don’t get Paige wrong. She’s happy with what she does for a living. She’s been with GO Pool for three seasons and loves every minute
of it. “Our pool gives you something completely different than other clubs,” she says. “If you could have a backyard barbecue with your whole entire neighborhood and just have everyone come over and everyone is just vibing out and drinking, having a good time, swimming. That’s the energy we have here. It’s more about celebration and having fun. It’s not about what you’re wearing, how much money you have, where you come from.” Paige herself comes from a background in nursing and has her aesthetician license. She’s also been a bartender in Orlando and Miami; but always wanted to move out west so she came to Vegas about five years ago. “It was intimidating in the beginning when I moved here,” she says. “I had no idea how big the industry was. But now I couldn’t be happier. I love it here. I’ve made lifelong friends. I feel like I’ve found a home away from home.” It seems Vegas has pleased both Tiffaniees. –Kiko Miyasato

pop soundtrack puts you in a good mood. The open kitchen allows you to see all the action if you so choose, but odds are you’ll spend more time admiring the view, which includes the pool. It’s highly recommended that you pair your meal with one of these vintages, but don’t sleep on the cocktail menu either, full of originals like Life Is Fresh, a blend of gin, cucumber, purple grapes and simple syrup, served in a martini glass lined with both sugar and cayenne pepper for a taste combination you’ll not soon forget. If you’re looking for something a bit less spicy, the
Tiffany is just about perfection, raspberry vodka, crème de cassis, fresh sour mix and fresh raspberries. As you might expect given the name, mixed olives are a perfect starter, served with orange, fennel and extra virgin oil. Olives also make an appearance on English’s spin on beef carpaccio, although on this version there’s a delightful surprise in the
middle: a cake of gorgonzola polenta. This is one starter you’ll be telling your friends back home about. Everything on English’s menu begs to be sampled. The TE signature Greek salad almost doesn’t need a fork to be enjoyed; its various, ultra-fresh ingredients like whipped feta, pepperoncini gelee, olives, tomato and cucumber ribbons are served on a bed of iceberg and radicchio. Just grab a piece and enjoy! Herb ricotta-stuffed ravioli are served alongside sweet sausage ragu and Parmesan cream. Get a bit of sauce on your fork, dab it on a piece of ravioli, and take your sweet time savoring all those amazing flavors. Larger entrees are no less impressive. Untouchable veal Parmesan is served in a size that makes it almost resemble a pizza. The tender meat below is smothered with mozzarella, fried basil and “Nona’s ragu.” Classic chicken Milanese looks as good as it tastes, with this version served alongside arugula, Parmesan cream, tomato and lemon vinaigrette. Any of these dishes pairs wonderfully with the grilled asparagus, a thing of beauty served with Parmesan and lemon vinaigrette. Save room! The banana tiramisu is as nice to eat as it is to look at, a banana cake topped with espresso whipped cream and candied hazelnuts.

The Chancellor (702.447.0502) has more than Mexican items available, including beef tartare, spicy tuna on crispy sushi rice and whole roasted branzino, all mingling with fried chicken tacos and chipotle pork tamales. These are flavors you won’t find elsewhere. Back on the Strip, “Cake Boss” Buddy Valastro has done it again with Boss Cafe (775.490.2873) at The Linq Hotel, where fresh mozzarella is made in-house daily for salads and focaccia sandwiches, and Grandma-style square pizza slices are the specialty of the house. If you fill up fast, take some cannolis for the road. For another highly recognizable bite, head to Excalibur to feast at the new Fatburger (702.597.7777), another Strip site for the 70-year-old Los Angeles burger institution. Restaurateur and consultant Elizabeth Blau and her globe-trotting chef husband Kim Canteenwalla have made an immense impact on Las Vegas dining through the years, from developing the food portfolio at Bellagio to launching their own homey neighborhood spot at Honey Salt. Their latest local project is a companion to the immersive Illuminarium experience at AREA15, a versatile restaurant called Lumin Café & Kitchen (702.527.3100). The indoor-outdoor space serves lunch, dinner and a special late-night menu for revelers taking advantage of AREA15’s nightlife offerings, with comfort food favorites like fried chicken sliders, chickpea hummus, tater tot poutine and a bacon grilled cheese sandwich taking top billing. John Lennon, Paul McCartney, George Harrison and Ringo Starr are ever-present in spirit at The Mirage, where Olivia Harrison recently made a pilgrimage to revisit the show that pays tribute to her late husband’s band. She was in Las Vegas to accept a Grammy for All Things Must Pass: 50th Anniversary Edition when she attended an April 2 performance of The Beatles LOVE by Cirque du Soleil, re-experiencing “Something” as only Mrs. George Harrison can. While there’s nothing you can do that can’t be done in Las Vegas, re-experiencing The Beatles LOVE should be high priority. Now nearing its 16th anniversary, having debuted June 30, 2006, a shot of LOVE is just the antidote for post-pandemic blues, or anything else that ails us. That antidote begins musically when the Beatles’ career was coming to an end. After the audience is beckoned to “Come Together,” Starr’s instantly recognizable pounding from “Get Back” kicks LOVE into

overdrive. That final song from the final Beatles studio album paves the way for the dancing, soaring, rolling and strolling cast members to parade onstage. The Let It Be rooftop concert at Abbey Road Studios inspires the scenario, but the abstract narrative travels back to 1940s Liverpool, where “A Day in the Life” is drawn on to reflect the turbulence of the war-torn time the Fab Four were born into. It’s also where Father McKenzie appears, writing words for a sermon that no one will hear. He’s one of many characters that come to life in the show, including sly Doctor Robert, expectant Lady Madonna, ostentatious Sgt. Pepper and stuffy Mr. Piggy. A whole gang of sea creatures float in the theater-in-the-round during “Octopus’s Garden” while a winged creature tries to fly in the dead of night during “Blackbird.” There are some truly magical moments where technology and performance meet, most sensually during “While My Guitar Gently Weeps.” An aerialist interprets “Lucy in the Sky with Diamonds” above a performer bound to the ground with wheels. Amy Saunders brings inventive variety show to downtown Vegas
I’ve been in and run variety shows for a long time in a variety of different festivals all over the world. When (Cheapshot owner) Ryan Doherty approached me, there were a lot of different things in the mix, but what made the most sense to me to put in a small showroom downtown, a place where people could come to see fast-moving, uncomplicated entertainment, was a variety show. And it’s a rolling variety show, which means there will be fantastic acts coming and going. For me, the exciting thing is connecting to the Vegas history of hospitality and that sort of live and loose entertainment you would have seen in the lounges, like Louis Prima and Keely Smith at the Copa.
I’ve been very lucky to perform in some of the original spiegeltents (in Europe) and some beautiful little sideshow tents in Australia, really cut my teeth in that specific, intimate environment. I’ve been around it a long time, and I’m obsessed with it, and knowing where there are beats meant to be filled and how to create that. I think with this show, what I love to do is put on good acts for good acts’ sake, and … getting to work with entertainers in different disciplines from around the world. And it needs to be authentic and accessible.

It’s a very different show. I enjoy hosting because it’s fun to share with the audience a bunch of brilliant acts. Gameshow was a lot of fun for me because I get to talk more and really control it from beginning to end, but here … the show is a sum of its parts. What I love about a variety show is it’s all about dynamics and rhythm, and I’m sort of the glue that smushes it all together, and how I choose to do that is dictated by where the crowd is and how they are responding to the acts that night.
I used to run a tent at the Glastonbury Festival that held about 300, and that’s where I learned that if another performer walks in and wants to play your stage, you’re doing it right. To be able to bring headliners from the Strip to come and play with us just because they can, that’s a lovely surprise for the audience and a really good time for the performer.
I’m really blown away and flattered by the response to the show. It’s been amazing. Ultimately the goal of Mavericks is for people to come to Fremont Street to see it, to love it, and for them to come back and have it be different every time because there will be changes, new acts, and old acts. It’s a beautiful start.

Sure, the Las Vegas Strip has completely reopened, and so you can gamble to your heart’s (and wallet’s) content, you can go on a shopping spree, you can eat at some of the world’s finest restaurants and see some of the greatest entertainers on the planet—often all in the same day! These experiences are quintessential Vegas musts and definitely contribute to a joyful and fulfilling visit. But what if that’s not enough? You may not know it, but away from the Strip, Vegas is a mini-paradise for the everyday adventurer, whether you’re venturing out during those brutal, triple-digit temperatures or during the cooler months. There are mountains to climb, trails to explore, a man-made lake to admire and nature to observe. Of course, we fully expect that you’ll be taking advantage of all the Strip has to offer. That’s why you’re here! But if you really want to stretch your legs and see a side of the Southwest you’ve never seen before, take a chance and do something new—call that Über or Lyft, head to REI for some supplies, and get off the grid. You may never want to leave!
Start off your morning by exploring one of the many hiking trails in Las Vegas. Near Lake Mead, right outside of Boulder City, is the Historic Railroad Trail (nps.gov), an easy 7.5-mile trek (round trip) that follows the old railway that transported machinery and supplies to Hoover Dam during its construction. Along the path, you’ll pass through five massive tunnels, which helps measure the scope of the dam’s construction and

shows how the project was a major feat of engineering. Another great option for easy hiking trails is Lone Mountain Park. There’s a flat-ground desert trail that loops around the tiny mountain and offers great views of the city. But if you’d like to make that view even better, climb to the mountain’s peak. If you decide to check out either of those hiking areas, remember that the weather may reach warmer digits, so bring a lot of water and don’t forget your sunscreen. If
you’d rather not deal with any heat, however, Mount Charleston is a much cooler refuge, with temperatures nearly 20 degrees lower than in the valley. It’s home to the popular Mary Jane Falls and Cathedral Rock trails, to name a few, which are a little tougher and rockier than the previously mentioned trails, but the crisp mountain air and stunning scenery—as well as seeing a side of Las Vegas that you probably didn’t know existed— will make it all worth it.
If hiking doesn’t appeal to you, but you still want to observe and enjoy nature, that’s not a problem. The Henderson Bird Viewing Preserve (cityofhenderson.com) is a tranquil place to view resident birds like roadrunners and verdin, as well as nesting American avocets and black-necked stilts. Go to Floyd Lamb State Park and you might wonder if you’re still in Las Vegas. The small oasis has lush vegetation, a quaint ranch and a few fishing ponds filled with ducks and geese— you’ll even come across a few peacocks. But if you want to see some nature without leaving your car, take a drive along the 13-mile scenic loop at Red Rock Canyon

(redrockcanyonlv.org), where you’ll be able to view unique red rock formations and wideopen desert landscapes. If you feel compelled to leave the cool air-conditioning of your car, however, there are several observation points and overlooks where you can walk around and further explore the canyon. In speaking of canyons, while it’s not Vegas, the Grand Canyon is too close to not be part of a Southern Nevada experience. If you don’t know where to start, try Grand Canyon West (grandcanyonwest.com). They offer a one-stop shop of ways to view the Grand Canyon and its surrounding areas, such as walking along the glass-paneled Skywalk or taking a helicopter tour. There’s also a convenient shuttle service that circulates through Guano Point, Eagle Point and Hualapai Ranch, allowing you to explore the West Rim at your own pace.
What’s great about the desert is daytime temperatures can still warm the body so visitors have the opportunity to enjoy some of Vegas’ watery attractions, even in fall weather. Take a short drive off the Strip to Lake Las Vegas for the popular Lake Las Ve-

Or head a little farther down the road and you’ll find Lake Mead (nps.gov). It’s one of the nation’s largest man-made lakes, so there’s a lot to explore. Entry to the lake allows you to access relaxing beach ar-
eas, including Boulder Beach, and its several marinas, like Lake Mead Marina and Lake Mead Boat Harbor, where you can rent pontoon boats, sports boats and WaveRunners through Boating Lake Mead (boatinglakemead.com). Maybe all that water will remind you of something like the Bellagio Fountains, and you’ll want to head right back to what you came for: that fabulous Las Vegas Strip.
