Dine where the food and décor are works of art Even after 23 years, Bellagio continues to be one of the most elegant, picturesque locales on the Las Vegas Strip. Then you get your choice of main courses—Japanese wagyu filet mignon, sautéed filet of Chilean sea bass or prime petit filet mignon. The prix fixe menu is also a great way to go, where your first- and second-course choices include poached oysters with vermouth beurre blanc and Osetra caviar and sautéed crispy
gnocchi made with Alaskan king crab and nantua sauce. Main courses include a roasted milk-fed veal chop served with rosemary potatoes and au jus, and a pan-seared branzino smothered with court bouillon sauce. There’s also a decadent and flavorful vegetarian menu. Enjoy roasted delicata squash, served with mushroom escabeche, plancha Chinese eggplant accompanied by hazelnut, sun-dried tomatoes, caramelized onions and raisins, and sautéed asparagus and mushrooms. Expanding Horizons If you love art, then a trip to Park West Fine Art Museum & Gallery is in order. The gallery plays host to a number of changing displays of contemporary and classic artists, and everything here is for sale! Top of the World at The STRAT is taking advantage of some of the freshest ingredients around with seasonal summer dishes. Executive chef Chad Castanino has put together a mouthwatering menu that will tempt you as the restaurant rotates. You’ll want to sample starters like the lobster cannelloni with heirloom tomato purée, preserved lemon and herbs; a refreshing burrata panzanella salad with pickled tomato, cucumber, and country bread in red wine vinaigrette; lump crab fritters with mango and habanero chutney. Entrées include garganelli pasta with lobster Bolognese, spring peas and whipped ricotta; and Icelandic salmon. Top your steak with several new accompaniments like bacon jam and tomato and garlic butter prawns. A new side, baked corn pudding, comes with honey and poblano butter. Adding on a cocktail is sure to mellow out any anxieties you might have. Try the Summer Solstice, with Myers’s dark rum, Campari Milano, pineapple and lime juices, with demerara syrup. For a more citrusy take on an Aperol spritz, order the Not from Concentrate, made with Jameson Orange Irish whiskey, Aperol, Cointreau, lime sour and simple syrup. –Nina King
Tempered Temptations I’ve said it many times to people who have visited me in Las Vegas, “If you’re on the Strip and you’re a sweets lover, you’ll find nirvana at Hershey’s Chocolate World.” The two-story destination has all the Hershey’s candy products on the market, huge sections of different varieties of Reese’s, Jolly Ranchers, Hershey’s Kisses, the list goes on and on. Plus, there are gifts, collectibles, apparel and even chocolate-flavored lipstick.

Quick-Witted Wizardry The real magic comes from the crowd Something very interesting happened at a recent performance of Mat Franco—Magic Reinvented Nightly I attended (and I’ve attended a lot; it’s one of my favorite shows in town): Midway through the show, an audience member, to whom Franco had earlier tossed a bag of ramen noodles as a souvenir (ramen plays a huge role in one of Franco’s signature illusions) tossed it back to him, got out of her seat, and began an incoherent rambling about something or other. It went on for minutes, and Franco’s attentive ushers were about to intervene, but Franco shooed them away, pleasantly engaging in a conversation with the audience member until she left the theater of

her own accord. As soon as she left the theater, Franco sat down, let out a huge sigh and said, “I’ll never forget this night!” And that, in a nutshell, is the appeal of Mat Franco and his illusion-filled show: Not only is each show unique because of his interaction with audience members of all ages (and states of inebriation), but Franco genuinely enjoys that interaction. He’s a people person of the highest order, remembering the most specific details at the end of the show, in which he “customizes” each performance to reflect the people he meets, their stories, and maybe a few embarrassing moments. This is where the show gets its title,
and it’s precisely the reason why Franco’s show continues to have infinite appeal more than seven years after he won America’s Got Talent. And then, of course, there are the close-up illusions themselves—Franco’s skill at making objects appear from thin air—cards, coins, wine bottles, you name it—is on full display here, and the various volunteers Franco brings onstage are in a constant state of amazement. No matter how close they are to him, they can’t figure out how the illusion works. And, as Franco is quick to ask, why would you want to? The memories of his show are what are important. –Ken Miller

Augmented Worlds Arcadia Earth is a newer option for Las Vegas but has a precedent in Lower Manhattan, where industrial designer Valentino Vettori debuted the first exhibit three years ago. The installations were created by artists and are treated as such, with a security detail on hand to make sure visitors don’t immerse themselves too far into the environments. It’s over the top. It’s mind-blowing. It’s equal parts scary and funny. What we’re trying to say is that you won’t soon forget Criss Angel MINDFREAK once you’ve experienced it. The master illusionist was wellknown to millions for his extreme stunts on television. This Las Vegas production turns that all up to 11. A live rock band keeps the energy high during the entire show, during which Angel re-creates a fight scene from a video game, saws a woman in half (in the craziest way you’ve ever seen), walks on air and reads minds, all with a wink and a nod to the audience—Angel is clearly having fun, especially when he brings volunteers onto the stage to reveal their greatest fears. But as edgy as the show can get, it has a softer side as well. Angel is deeply involved in charitable causes, and uses part of his show to raise awareness of how necessary it is to help the less fortunate. Regardless of your views on magic, there really is something for everyone in this production. You’ll feel like you know more about the world we live in after seeing it. –Ken Miller
Uncork Your Inner Vino Wine lovers will want to have their cameras ready for the spectacle that awaits them at Aureole. Its centerpiece is now world-famous, and deservedly so: A four-story, see-through, climate-controlled wine tower, stocked with thousands of bottles and manned by “wine angels” who descend by cables a la Tom Cruise in Mission: Impossible. It’s one thing to make your way through the truly mind-boggling array of vintages available on the menu; it’s another to see
your particular choice hunted down and collected by your very own wine angel. But that’s only the beginning of what makes Aureole special. This award-winning establishment has been serving up the highest-quality meals for decades, and excels at its wine-tasting menu. Taste the Tradition When you take that first bite of a steak at Saltgrass Steak House, you’ll taste hundreds of years of tradition. Impressive Moves Magic Mike Live Las Vegas originally opened in Vegas in April 2017 at the Hard Rock Hotel. Channing Tatum—who starred in both Magic Mike and sequel Magic Mike XXL—helped bring the movie to the stage as co-producer and director and it ran for more than two years before Hard Rock closed. The show has a new permanent home at Sahara Las Vegas, where the theater was specifically designed for the show and give guests a truly immersive experience.

Some Las Vegas hotels have pretty cool front yards. Bellagio has its iconic fountains and The Venetian has its faux canals. And while those sights are impressive, they don’t hold a candle to the original, free large-scale entertainment attraction—the fire-spewing volcano in front of The Mirage. For more than 30 years, the volcano has attracted children and adults alike with its booming explosions, fireballs, faux lava and flames that are so hot you can practically feel them across the boulevard. Fire-Breathing Fun Magician keeps crowd giggling Nonsense reigns supreme during a performance of Piff the Magic Dragon. There’s no rhyme or reason to any of the proceedings; the point is to just have fun and laugh as much as possible. Whether it’s a bit of shrubbery producing strange fruit, a fortune cookie that reveals all the intimate details of an audience member’s marriage, or a volunteer producing a card from an unexpected part of their body, this is a show to make you just shrug your shoulders and get lost in the rambling, ridiculous and riotous world it creates. The process of finding volunteers is a big part of the show’s entertainment value—Piff grabs a large flashlight and points it into the audience,

often singling out individuals whom he continues to harass throughout the show (all in good fun, of course!). Those called onstage truly get their 15 minutes of fame—for better or worse. The silly antics that pepper this production are almost too numerous to list, including: • An audience member’s $100 bill, which goes through a series of torture tests throughout the show. Of course it will eventually reappear, but you won’t be able to guess when (or where); • The transformation of an audience volunteer into “Jimmy,” a poor orphaned boy who helps Piff in producing cards seemingly at random (and from, uh, random places).
In perhaps the show’s most delightful bit, Piff becomes a magical therapist, helping a couple “fix” their relationship, complete with literal olive branches (with rubber gloves on the ends), the aforementioned piece of shrubbery, Mr. Piffles and some music by Enya. It’s hard to imagine anyone watching this unfold and keep a straight face. Even Piff occasionally lets loose with a laugh over how outrageous this all is. But Piff can’t let the show end without demonstrating some serious magic skills. He may call himself “The Loser of America’s Got Talent,” but as a Strip performer, Piff is a winner in every department. –Ken Miller

Seasonal Delights If you’re a fan of Maryland soft-shell crab, which is now in season, you’ll definitely want to head over to Water Grill in The Forum Shops at Caesars, which has several specials for a limited time. All blue crabs arrive daily from the Chesapeake Bay, and the female blue crab stock is at its highest level in 28 years, so fans can plan on taking full advantage of Water Grill’s menu. In addition to the classic presentation of the crabs, served with a watermelon and cucumber salad and a brown butter soy ginger sauce, fans of the crustacean can also enjoy a soft-shell crab roll, made with mango, pickled jalapeno, snow pea shoots, eel sauce and cilantro oil. Read This! You may be a bit intimidated by the prospect of going to a mentalist’s show, but trust us: the star of Banachek’s Mind Games Live is very approachable. He’s a humble guy who fully admits at the beginning of his show that he’s not a psychic—just an entertainer who uses his five senses and, for lack of a better word, magic. Bartender continues working her dream Stella Cho’s dream came true. “I have always dreamed of working in Las Vegas; and I always strived to work at the best dayclub in the world,” says the South Korean native. Cho is now working as a model bartender at the longest-running dayclub in the city, Wet Republic at MGM Grand. “(Wet Republic) is a very tight group of very experienced hospitality veterans and getting a job here is something that I feel someone should earn and not just be handed,” she says. “Which I decided to do, when I started at Liquid (Wet’s sister dayclub) and work my way up to working at Wet Republic.” When Cho moved to Las Vegas in 2016 to work at Liquid Pool Lounge at Aria, she brought with her more than a decade of bartending and management experience. Raised in Brooklyn, she began working in the New York City nightlife industry when she became of age and then went on to bartend in Pennsylvania while she attended Penn State.
This year marks Cho’s fifth season with Wet Republic. But she’s not guaranteed the position; she needs to reapply every year. So, just how does she pull it off? “My work ethic and reliability, and I have tremendous experience behind the bar in many different settings,” she says. And there is a lot of pressure at Wet Republic; the dayclub continues to dominate the daytime partying scene in Las Vegas. “It is the longest-running in the city,” Cho says. “It has not lost its allure. It’s popular. There’s A-list talent—one of the pioneers of EDM daylife in Las Vegas. And, still to this day, we are five to six rows deep at the bar.” When she’s not behind the bar, Cho is traveling the world to places like Iceland and Belgium and exploring the Vegas food scene. “I’m a huge foodie,” she says. “I’m that person that if anyone needs restaurant or bar recommendations in most major cities throughout the world, I’m your contact!“ –Kiko Miyasato

break the bank—so if you want to splurge, this is place to do it. Live jazz and contemporary music round out the experience. One of the most-intimate bars, and decadent in décor, on the Strip is Rosina Cocktail Lounge at The Palazzo. Try and snag one of the semi-private booths for real romance vibes. ghetti and meatballs, tagliatelle bolognese and spaghetti carbonara, served with a “raw egg” on top—break the yolk and mix it in. And as far as creating an illusion of meat, the eggplant filet is a masterpiece. The eggplant has been dry-aged (albeit for a much shorter period than its beef counterparts) and looks exactly like a cut of meat. Not only does it look like meat, but it also cuts like meat, and the first mouthful you get may shock you into thinking its meat. The filet comes with a bordelaise sauce, mashed potatoes and chanterelle mushrooms. Pair that with a traditional side of spicy broccoli de cicco with crispy garlic and pine nuts; creamed spinach with truffles and “Parmesan,” or balsamic-glazed mushrooms, and that steakhouse illusion is complete. For dessert, a lovely citrus berry verrine, layering lemon curd, almond streusel and a berry gelée is not too sweet; but if you require a little more sugar, try the brownie sundae, with vanilla ice cream, fudge sauce, coconut whipping cream and brandied cherries. And the luscious Chocolate Crunch Bar, with chocolate mousse, caramelized nuts and rice crisp recreates a candy bar—now that’s really sweet.

The spicy pork adobada is the specialty of the house, packed into fresh-griddled corn tortillas with your
choice of toppings, but the carne asada, chorizo and lengua (beef tongue) tacos are also wildly popular. This is the prime spot to start your taco tour of the city. Palace Station is home to a new version of a Mexican restaurant that was successful for a long time at a Strip casino location, and now Tacos & Tequila (702.253.2916) has been born again in a very convenient, centrally

located and charming spot. This menu goes far beyond tacos with plenty of traditional Mexican favorites, but its alambre tacos have built a reputation of their own. Grilled filet mignon is combined with applewood smoked bacon, poblano chilies, Oaxaca cheese, onions and cilantro inside warm flour tortillas for a hearty and satisfying bite that could recalibrate the way you think about tacos.
For another creative innovation on this common dish, head to Park MGM and celebrity chef Roy Choi’s L.A.-flavored eatery Best Friend (702.730.6770). If feasting on tacos at a Korean barbecue joint feels foreign, you must not know Choi. He cut his teeth slinging tacos from his Kogi BBQ trucks in Southern California, and Best Friend’s beef short rib tacos bring those fun flavors to the Vegas Strip. Take the next step by visiting Border Grill (702.632.7403) at Mandalay Bay, just like Choi did in his Netflix series The Chef Show, and savor the tacos he prepared there on the show with iconic chefs Mary Sue Milliken and Susan Feniger. Border Grill’s veggie version of the beloved dish features rainbow cauliflower, red quinoa, tomatoes and smoked paprika in blue corn tortillas. For Stripside patio taco feasts, you have some options. Penn & Teller return to Rio after Australia shows
Penn & Teller return to Las Vegas this week after a triumphant sold-out tour of Australia that included 10 shows at the Sydney Opera House. Catching up with audiences who were denied access to the Penn & Teller experience during lockdowns took precedent over making sure they were in Vegas on June 23 to observe the 20th anniversary of the date they became full time headliners at the Rio. Times change but the duo’s dedication to their worldwide fanbase remains the same. It was first time Penn Jillette and Teller toured Oz, fulfilling dates that had originally been promised before the pandemic. It was also an outreach of sorts, taking the show directly to the people that can’t make the pan-Pacific journey to Penn & Teller Theater. They took new tricks that they had developed with their time away from live performing as well, and perfected at the Rio once they returned to their 1,475-seat Vegas venue. place of brave knights representing thousand-year-old thrones to gather and share company, swap stories, clash swords and display expert horsemanship to shouts of “Huzzah!” from onlooking crowds. Those thrones are generally stable, but not every kingdom gets a permanent place in the arena. Austria, France, Hungary, Ireland, Sweden and Spain are now joined
by Romania, whose hardened armies arrive after preventing hordes from the east from sweeping across Europe. Romania’s rulers included members of the Order of the Dragon from Transylvania and Wallachia such as Vlad Dracul, whose son Vlad Dracula would inspire legends of merciless cruelty towards his enemies. Tournament of Kings has a

section devoted to its own dragon on par with the bleachers reserved for fans of the continental kingdoms. Hearty Cornish hen dinners (dietary accommodations may be available upon request) are served to guests, making flatware unnecessary and conserving precious metals for swordsmiths. Monarchs and aristocracy make merry, dancers twirl and pounding on tables is a time-honored tradition of showing enthusiasm. The evening is hosted by the wizard, whose pyrotechnical prowess is impressive but has not yet been lethal to the leagues of Las Vegas visitors in Tournament of Kings’ more than two decades of history. The skills of the warriors who cross swords, on the other hand, improve with every show.

Sounds of metal striking metal resound through the arena as armor-plated knights thrust and parry. One lapse of split-second timing can make the difference between victory or defeat. Timing is even more important when knights ride towards each other on horseback at top speeds. Jousting is the deadliest of games, having brought a sudden end to many a monarch’s reign. The chances of being unseated,
trampled on, impaled or blinded is intimidating, but the tradition lives on at Excalibur. Nearly a dozen horses from the Tournament of Kings’ stables take part. Ultimately, the eternal forces of good and evil square off in a special effects climax filled with smoke and fire. The sounds are as intense as the sights, with the proceedings having the magical effect of maintaining the attention of younger audience members. There was no social media during the medieval era. There was chivalry, honor, and spectacle. There were dukes and damsels, dining halls and dark forces. And these elements are all present at Excalibur daily. Time marches on, but the Middle Ages never end at Tournament of Kings.

Adam Steck keeps the stages filled
Producer Adam Steck’s company, SPI Entertainment, is known not only for ushering in some of the Strip’s most popular and unique shows—including male revue Thunder From Down Under and a headlining residency from Boyz II Men—but also managing some of the busiest showrooms in town. Until last year, Steck’s focus was on the Thunderland Showroom at Excalibur, also home to The Mac King Comedy Magic Show, but SPI also partnered with The STRAT on the north end of the Strip to program its classic Vegas theater. Business boomed for you in 2021 with lots of new projects, but did your original show, Thunder From Down Under, recover well after 2020’s temporary shutdown? Not only has the audience come back, they’ve come back in droves. We had a

record summer . We’ve never done this kind of business in our 21-year history in Las Vegas. It’s like the floodgates are open. All the bachelorette parties that couldn’t happen (during the last year), they’re making up for that. Girls 18 to 80 are coming back, letting their hair down and coming to see the show that’s been successful for so many years. The addition of Mac King to that room at Excalibur seems like a natural fit given his long success on the Strip and family-friendly appeal. Mac King is a legend. He’s been around town as long as me, so when I was asked if we could put this deal together and do the King at the castle, I thought it was a no-brainer. There are very few shows that can play in the afternoon with a brand like that.
How did the partnership with The STRAT come to be, and how did you go about curating the new shows in that theater? I never stopped working (during the pandemic). I’m always plotting and planning how to expand, what shows can go where. This property just finished this $100 million renovation and it looks really good and has a great energy. The building is iconic, it has Top of the World, one of the coolest restaurants in town, and the showroom itself is phenomenal. For years, they only had one show there and I said I’d like to maximize the real estate and make the property stickier, so when people go there, they have multiple entertainment options. We set out to have shows at 4 p.m., 6 p.m., 8 p.m. and 10 p.m., and now those spots are all filled. You’ve added magic with Xavier Mortimer, mentalism with Banachek, a party dance show called iLuminate, and you have Sammy Hagar’s residency. I’m a rocker; classic rock is my jam, I love all kinds of music but I grew up in classic rock. Sammy is a legend, from his band Montrose back in the day to Van Halen, one of the biggest bands of all time, and after that he had the Circle ,which is also very successful. To have the opportunity to work with Sammy at The STRAT is unbelievable. He loves the room, he could have picked any place in town but he just loves the vibe there, and the whole idea is to bring his Cabo experience to Las Vegas. The showroom is transformed into his club down there in Cabo. What are some of the keys to success in entertainment on the Strip? We have the history in Las Vegas to know what generally works. A show that might work in New York or off-Broadway or some other place might come in thinking it’s going to kick butt, and most of the time it doesn’t. Twenty-plus years of doing what we do, being on the ground in Las Vegas and being able to wear different hats and have different roles, it’s been quite amazing.

Go behind the scenes of the Fountains of Bellagio It’s one of the most stunning productions on the Strip, but it doesn’t just happen. The Fountains of Bellagio has a crackerjack team working behind the scenes 365 days a year to ensure that the watery spectacle continues to flow beautifully. Las Vegas Magazine went beyond the façade and captured the inner workings of the fountains—an operation that few are privy to. Thirty employees work on the fountains, including engineers, pool specialists and maintenance divers—and each employee is scuba-certified and holds Open Water Diver or Rescue Diver certifications. The site is staffed almost around the clock, year-round. Yet another group can be found walking around the premises—mallard ducks, which have raised ducklings on Lake Bellagio year after year. The tour starts in the features support area, where the equipment and mechanics for the fountains are stored. It’s a cavernous space just off the 8.5-acre Lake Bellagio, and continues underneath the hotel’s landscaping. The walkthrough continues with the bat cave, the compression room and, finally, the control tower. Here’s your chance to take a peek inside this iconic attraction.

CONTROL TOWER This is where the magic happens. The main computers that control the lighting, sound and performance numbers are located in this tower. Here is also where you’ll find the “famous” green button. At the top of the tower, accessible only by ladder, workstations command awesome views overlooking the lake. Each choreographed show is stored on computers. To start a new show, the file is uploaded and the green button initiates the fountains—a button only a handful of people have pushed, including this writer!

THE BAT CAVE Inside the bat cave, located in the front features support area, is where you’ll find the water-emitting devices. Workers clean and repair all of them in-house. The devices include three shooters of different sizes that push water straight into the air at varying heights. The mini shooter (798 total) goes 100 feet up, the super shooter (192 total) goes 240 feet up and the extreme shooter (16 total) goes 460 feet up. The oarsmen (at top of photo column) spray water— this is where the “dancing fountains” come into play. There are 208 in the lake and 13 spares. The streams of water can reach 77 feet high and flow up to 140 gallons per minute.
It takes WET (the company behind the design and choreography of the fountain performances) several months to develop, design and perfect a new song for the catalog. Some of the songs include:

COMPRESSOR ROOM It’s so loud inside the compressor room that one is advised to wear industrial-strength earmuffs. Inside this room sits two of the large compressors (10 total) used in the show. When it’s showtime, the compressors operate at about 3,000 horsepower and push through approximately 9,000 cubic feet of air per minute. Large storage tanks of soft water, used for the fog that drifts across the lake, are also in this room. The ground fault circuit interrupter (GFCI) panel that protects people and equipment is also here. The panel shuts down all the electricity on the lake in the event of an emergency or electrocution, reacting faster than the blink of an eye.

His great uncle was none other than the legendary Nat King Cole, and his father Edward Cole also carried on the family legacy and served as musical director for his cousin Natalie Cole for more than a decade. Honestly, my dad. Nat King Cole is a humongous name, but this guy nobody really heard of, Edward Cole, he’s everything to me and I learned everything from him. My mom and dad met in college, two music nerds that made one more little music nerd. He’s definitely my greatest influence and how I got started, learning music production and all of that from him. Outside of that, I’ve always said I felt like I was born in the wrong decade because the soul of the ’60s and ’70s just resonates so much, Donny Hathaway, Stevie Wonder, Marvin Gaye, that whole era. Those influences are very deep in my blood.
WHAT IS THE MOST EXCITING PART OF JOINING THE TEAM BEHIND MAD APPLE? I’ve been touring with Nas for a long time and in that setup, I’m the only other vocalist, so I’ve spent a lot of time singing by myself. When I found out this show would have this five-person singing group, that excited the hell out of me. There’s nothing like singing with other people. It’s a deep spiritual experience to be able to harmonize and flow with each other.

I’m glad that is translating well. I never know how that moment feels, even though I’ve seen video, but the visuals that are going on make it very special in so many ways. I wish I could get the full experience like everybody else, to see (the acrobat) performing at the same time. There have been so many times I want to look up and see the act while I’m singing.
Our composer Evan Duff y did an incredible job; he’s a true student of music and he gets an assignment and nails it. He did his research and knocked it out of the park.
