How many times have you discovered a new place to eat and can’t wait to tell everyone you know about it? It’s exciting, right? Here at Las Vegas Magazine, we get the same thrill in keeping you informed about the Strip’s top restaurants. The multitalented business and style icon’s Paris restaurant is filled with luxury touches that reflect her philosophy

This summer, Martha Stewart, along with partner Marquee Brands, opened the domestic icon’s Vegas restaurant on the Las Vegas Strip in a celebrity-studded event that showcased a mix of her signature dishes and a variety of French-inspired cuisine.

You’ll find The Bedford by Martha Stewart down a passageway leading to the shopping area and Bally’s, near Nobu and Vanderpump á Paris. The entire façade is styled after Stewart’s New York farmhouse, with second-story windows and even chimneys and trim. When the restaurant was announced earlier this year, Stewart said, “The architecture and decoration of the spaces cleverly exemplify the beauty and atmosphere you might find at my beautiful farm in Bedford, N.Y.” Inside, elegant farmhouse décor in a muted palette makes for a calming meal. You’ll find a patio area and fireplace settings in the dining areas.

The elegant cocktails include such offerings as the Martha-tini, with Zubrówka Bison Grass vodka, dry vermouth and lemon twist. Order a pair and they’ll shake them at your table. Or you may want to order Martha’s Perfect Manhattan, with Woodford Reserve bourbon, sweet and dry vermouth, Angostura bitters and Luxardo cherries.

And there are plenty of other classic cocktails with that Martha twist, too, plus beer and nonalcoholic options. Don’t forget the extensive wine list!

Appetizers include buckwheat crepes (a perennial favorite in the Stewart recipe canon), made ultra fancy with crème fraîche, grated hard-cooked eggs and Golden Osetra caviar. The amount of caviar depends on you, and the more you get, the more it costs.

You might like crab cake with jumbo lump meat, roasted yellow peppers and celeriac slaw; or a bread basket that has customers raving. The restaurant emphasizes farm fresh, local cuisine, so salads may make a great option, too.

There are a number of pasta choices for you, and the signature Big Martha’s Pierogis are filled with potato and finished in brown butter. Yes, you can get Golden Osetra caviar on these, too! Handkerchief pasta is vibrant with herb pesto and toasted pine nuts. For entrées, try Martha’s Big Square burger (pictured), whole roast chicken and a 32-ounce bone-in ribeye. If you just can’t get enough of that caviar, Martha’s smashed baked potato, normally served with bacon, is available with a little extra luxury thrown in. –Nina King

Views

It’s always moving to see the great Leonardo Da Vinci’s works displayed inside museums across the globe; but Las Vegas can lay claim to a new way of experiencing the Renaissance man. Perception Las Vegas—a digital art museum that currently houses the exhibit Leonar do: The Universal Man—celebrates and brings to life some of the most famous works of Da Vinci.

Within the space divided into three galleries, visitors begin the journey inside The Gallery: Mona Lisa’s Perception, where six panels

of the famous painting get digitized and come to life, morphing into new versions of artistic expression. The second gallery, Painting With Light: The Last Supper, is playfully called “the Electric Daisy Carnival version” of Da Vinci’s The Last Supper, where visitors experience the famous painting through immersion in light, color and sound.

The final gallery, Grand Salon: Chapters of the Genius’ Life, is a huge, 28-foot-tall, four-wall theater where you go on a visual and auditory journey through chapters of

Da Vinci’s works as a philosopher, scientist, inventor, architect, and painter. This is one room where you’ll want to break out the camera!

In Perception, you’ll be guided through each gallery and given a set amount of time to immerse yourself inside the world of Da Vinci’s works. In the end, you’ll never view the master’s accomplishments the same way again. –Kiko Miyasato

Revamped menu at Mandalay Bay Asian restaurant brings a variety of beautiful combinations

If your group is craving Asian cuisine, head to the delightful Kumi Japanese Restaurant & Bar. Kumi is situated in what seems like a beachy oasis in the resort, with bamboo and sleek interiors yielding a very zen feel. If you’re lucky, you’ll be seated at the sushi bar, where you can watch the chefs at work. A high ceiling lofts over the dining area, and a good-sized bar is backed by the gorgeous colors of cherry blossoms.

The menu was recently revamped by Kumi’s director of culinary, chef Thanawat Bates, and the team. It fea tures Japanese dishes with a Korean American twist. On the menu are plenty of shared plates, both hot and cold, plus a variety of entrées. Although most items changed, some stayed, including nigiri and sashimi.

Warm and cool dishes include a bluefin tuna pizza with onion, a ponzu aioli and truffle oil; steak tartare, constructed with Prime beef and served with milk bread and gochujang dressing; soy ginger tofu with silken tofu, ginger scallion sauce and tosaka; a chicken katsu sando with black garlic tonkatsu sauce; marinated maple-glazed pork ribs; and wagyu gyoza.

Entrées include galbi toban, A4 wagyu striploin from Kagoshima prefecture, crispy striped bass, Kumi yakisoba noodles and even a chef’s tasting menu, with a variety of hot and cold dishes plus your choice of strip loin, grilled salmon or wagyu ribeye, with a chef’s selection of mochi ice cream for dessert.

On the sashimi menu, you’ll find everything from unagi and anago to king crab and Japanese scallops; you can order separately or get the moriawase. But a great option is the popular sushi set (pictured), with crispy rice, two specialty Kumi rolls, nigiri and sashimi. It’s a true feast.

The Kumi rolls feature a variety of unusual ingredients, from the Hot Mess with poke sashimi and kanikama to the Garden with gobo (burdock root) and takuan (pickled daikon).

Float Your Boat

Yacht rock group perfectly replicates easy-listening classics

From the second the members of yacht rock group The Docksiders hit the stage at the Duomo at Rio and launch into a pitch-perfect version of Christopher Cross’ “Run Like the Wind,” it instantly hit me: I need a cocktail. Now! This music instantly puts you in a good mood, one that makes you want to get up and dance (and if you’re like me, that means a bit of social lubricant is almost a necessity).

The Docksiders—singers Kevin and Erin Sucher and Bobby Rouse, guitarist Larry Esparza, bassist Matt Vollmer, saxophonist Clay Konnor, keyboardist Theo Merriweather and drummer Chris Kollman—keep the proceedings lively and highly varied, veering from the Doobie Brothers’ “What a Fool Believes” into Toto’s “Africa” and ABBA’s “Waterloo” without missing a beat.

Perhaps the best thing about their show is its occasional tongue-in-cheekiness. During Rupert Holmes’ “Escape (The Pina Colada Song),” singer Kevin Sucher, pictured, has a field day with the lyric, “If you like makin’ love at midnight” by re-enacting it, only to throw his back out (‘Cause, you know, most fans of yacht rock, like me, are most likely in similar boats, age-wise).

At a recent performance held shortly after the death of Olivia Newton-John, the group performed a medley of some of her greatest hits, including “Magic,” “Hopelessly Devoted to You” and “Xanadu.” It was very sweet and, like everything else the Docksiders deliver, sing-along-worthy. –Ken Miller

What Path Will You Take?

Stop right there! You’re about to try FUHU, an exploration into Asian cuisine full of unexpected turns. You may not emerge unchanged.

Once in, drinks are called for—the specialty cocktails are mouthwatering. Try the Tiger Tree with ginger, yuzu and Tito’s vodka (or Remy Martin); the Heart of Fire delivers a sweet, spicy pop in your mouth with serrano chili-infused Avion tequila, Dos Hombres joven mezcal, passionfruit, honey and egg white. There’s a strong list of sake to try, too, primarily by the bottle, although you can

enjoy some by the glass. If you’d rather grab a beer, there’s Kirin and Sapporo, as well as several domestic craft brews.

Start with a few Tiger Bites to accompany your beverage, like a miso cod “taco” on bibb lettuce, tiger shrimp with garlic mayo, black pepper beef (a signature item, pictured) or the vegan chick’n larb with lemongrass rice powder. You’ll notice several vegan dishes on the menu, so no one will feel left out.

The menu’s inventiveness shines in every section with items like KariKari toro tartare with truffle cruller; salmon

sashimi with mango and caviar; and bay scallop ceviche with Bermuda onion, avocado and tomato. Plenty of rolls are available, from a Buttery Snapper with hamachi belly to the vegan Two-Timing Tuna, with roasted pepper, negi tempura, and ponzu-caramelized onion. Duck fried rice, king crab tempura, a tomahawk and vegan basil pork with Impossible meat are excellent options if you’re not up for sushi. –Nina King

Vegas restaurants and bars go all in on local beer

Scores of Las Vegas restaurants and bars are doing their part to bolster Nevada breweries, sometimes going so far as to contract with them to make a signature brew.

Holsteins at The Cosmopolitan has Holsteins Lager by Tenaya Creek , which general manager Ivan Cuevas says has become the gourmet burger restaurant’s best-selling beer since putting it on in late 2011.

Circa Resort & Casino within the Fremont Street Experience has teamed up with Able Baker to brew a beer for its Vegas Vickie’s Cocktail Lounge. Called Vegas Vickie Neon Blonde (pictured), it is a 4.5% ABV, easy-drinking, crisp and clean lager that pays homage to the leg-kicking neon cowgirl that shone bright on Fremont Street for decades and now overlooks the Lounge.

Chef Todd English’s The Beast at AREA15 looked to the north for its special brew, contracting Revision Brewing in Sparks, Nev., to make its Todd’s Blondie Pale Ale.

Kyle Weniger, former head brewer at Joseph James before it permanently closed during the pandemic shutdown, contracts with various local breweries to use their facilities to brew his creations, and currently there are six restaurants and bars making his brews their house beers. They include the Mexican lagers Nueva Esperanza at SerVehZah, Desperado at Pub365 at Tuscany Suites & Casino, Attack of the Killer Tomatillo at Peyote, Pilau

Talk, a Southeast Asian-inspired ale made with three types of rice, at 595 Craft and Kitchen, and Bin Blonde, a blonde ale, served at Bin702 and 18Bin.

Half Bird Chicken and Beer in Chinatown chose to collaborate with HUDL Brewing to make its Cock Fight Pilsner. Chef/owner Brian Howard (who also owns Sparrow + Wolf) shared, “We wanted to

create a beer that was light enough to drink a few without feeling full yet had enough body to stand up next to our rotisserie chicken … and emulate the flavor profiles of our chicken brine to some degree, showcasing the lemon peel, white pepper and coriander, yet having the tingling spice of a Sichuan peppercorn without becoming a beer you only try once!” –Bob Barnes

When it comes to the Las Vegas food and beverage industry—it’s a family affair for Eduardo Sanchez, assistant general manager of China Poblano at The Cosmopolitan.

His brothers and uncle are all in the industry and nudged him to follow suit because they knew he had the work ethic and personality to succeed. “I started in entry-level positions and worked my way up,” Sanchez says. “The more I learned, the more I enjoyed it.”

It was local favorite eatery Firefly, where, after six years of hard work, he

made it all the way up to management. He continued on the management track at top fine-dining spots on the Strip until 2019, when he joined China Poblano.

“I love chef José Andrés,” Sanchez says. “I feel super fortunate to be a part of this company. Since day one, it’s been such a fun ride. … We are one restaurant with two cuisines: Chinese and Mexican, but we’re not fusion. We do authentic dishes from each country.”

After more than a decade of service—thanks in part to his mentors and family—Sanchez brings a strong work

ethic to his job; and, when meeting him, you can see his passion for the industry.

“One of the main things I always tell the staff is, ‘Have fun with it—never forget to have fun with this industry,’” he says. “It’s all about our guests and the team that makes it happen.

“I’m very grateful for my mentors and all those that I have met throughout this industry and have supported me in my journey. I have a very hard-working family and we were taught that no matter where or what you’re doing to always give it 110%.”

The man behind Barry’s Downtown Prime wants you to feel special

I met Barry S. Dakake on my very first assignment for Las Vegas Magazine back in 2015—a dinner at N9NE Steakhouse at Palms. The second Barry came out to shake my hand and introduce himself, I felt like one of his closest friends. He sat down at my table, and we discussed everything from his philosophies on cooking to our families. The man had a way about him that made me feel special. Oh, and his food rocked! He even brought out a few things that weren’t on his menu, all of which blew me away.

And that’s about what you can expect at his newest restaurant, Barry’s Downtown Prime at Circa Resort & Casino. Yes, there’s a menu, and it’s packed with deliciousness, but Dakake’s sense of adventure is alive and well here. As he explained to Las Vegas Magazine upon

opening in 2020, “If you come into my restaurant and you can’t find something that you like, shame on me! And, if you can’t find it, you can ask and I can make it!” And believe us, if Dakake takes a special liking to you, he’ll probably bring something off the menu out anyway.

Everything about Barry’s makes you feel comfortable, from the dark woods to cushy booths and leather chairs, all lit with pendant lighting and chandeliers overhead. It all evokes an old steakhouse feel while still maintaining some modern touches. It’s the perfect atmosphere for enjoying some signature cocktails, and Dakake is always experimenting and updating his selection. Appetizers are a must at Barry’s, with a wild combination of flavors in delights like a bone marrow luge atop a bed of fettuccine Alfredo topped with Parmigiano Reggiano,

truffle butter and Madeira wine. If you want to keep the beef theme going, it doesn’t get much better—or eye-catching—than the 46-ounce Mishima Reserve tomahawk ribeye, sourced from Mishima Reserve Farms in Seattle. Panic! at the Disco imbues every performance with crackling energy

delivers incendiary performances as frontman for Panic! at the Disco has become an understatement in the wake of part of the stage combusting during a Sept. 14 concert in St. Paul, Minn. Urie continued to dance momentarily without noticing the flames as fans captured video of the small fire being extinguished. It was a fitting metaphor for the singer, who has managed to fly as close as he can to the sun with his band without singeing his wings.

That’s more of a credit to Urie’s preternatural ability to handle suc cess and develop as an artist while in the spotlight than providence. What started out as an ambitious band formed by four friends in Las Vegas has evolved into a showcase for Urie’s talents as an all-around entertainer. Panic! hits Las Vegas this week as part of a 40-date tour, with opening acts Marina and Jake Wesley Rogers.

Urie gives his all at every performance. The setlist includes all 12 songs from latest album Viva Las Vengeance, sandwiched between

two generous helpings of hits from the band’s catalog. Urie is dedicated to creating music that will be performed onstage rather than become forgettable filler to package with a few singles.

“A big portion of the time I write songs, I’m thinking about the live performance, what the energy is behind that,” he said recently on podcast Song Exploder. “That’s really kind of been in the glue for as long as we’ve been doing Panic. I mean, I’ve always wanted to be performance based to a certain degree and, like, theatrical as all hell.”

Viva Las Vengeance is a coherent song cycle that celebrates both Urie’s pre-adulthood period and the artists he heard while growing up in a musical household. The tracks are neither derivative nor overtly influenced. “Don’t Let the Light Go Out” just sounds like Barry Manilow meets The Strokes, in a good way.

Panic’s seventh studio album has its share of Brian Wilson and Queen influences, with Urie creating stellar harmonies alongside production partners Jake Sinclair and Mike

Viola. His flair for the theatrical has been long in development, but Viva Las Vengeance feels cinematic and conceptually innovative. The title track injects bounce from Spencer Davis Group’s “Gimme Some Lovin’” with punk spirit before Urie’s urgent vocal paints a portrait of the artist as a young creator.

Urie limited the recording of Viva Las Vengeance to eight tracks, not only preventing him from endlessly tinkering with songs but also causing him to proactively develop ideas.

Tasteful dashes of Cheap Trick and Cars influences surface here and there, as do twin-guitar leads à la Thin Lizzy and Jim Steinman production homages, but it’s Urie’s vision that ties it all together cohesively and avoids pastiche pasta.

It’s Urie’s development as a showman that’s brought Panic! at the Disco from an embryonic emo state to becoming one of the best live draws in the concert industry.

He’s this era’s Freddie Mercury, even without the recently tattooed image of Queen’s late singer on his left forearm.

It doesn’t seem like too long ago that production shows, concerts, gaming and sporting events were the main driving forces when it came to tourists booking plane tickets to Las Vegas. But now you can add another element to that equation: Restaurants. Our dining scene has exploded so much—and with so much quality—that it’s impossible to ignore. I know from personal experience that tourists are now coming here just to eat at a specific establishment. Food is life, true, but for a growing number of Las Vegas visitors, life is food.

Who doesn’t love Martin Yan?

He’s practically the Mr. Rogers of food shows. If your mother began cooking Chinese food for dinner back in the ’80s, you can most likely thank Yan and his enormously entertaining and endearing PBS series, Yan Can Cook. Yan might be in his 70s now, but his energy is unfailing. He’s ready to bring his brand to Las Vegas at the soon-tobe-rebranded Horseshoe Las Vegas (currently Bally’s) in a restaurant to be called M.Y. Asia . Set to open sometime this fall, it’s sure to contain all the personality of his show, not to mention the flavors of China, Japan, Vietnam and Thailand. And by all means, make sure to bring Mom!

Tenants will include Seoul Bird , Wexler’s Deli, Egghead and Temaki, and offerings will range from cocktails to cuisine. Sports fans who park at Mandalay Bay to get to Allegiant Stadium will definitely want to check out the upcoming Flanker Kitchen + Sports Bar, which will be awaiting them just steps from the walkway to the stadium. The high-end dining scene is about to welcome a new heavyweight contender: Ocean Prime, a $20 million project set to open at 63, a multilevel retail and hospitality complex at the corner of Las Vegas Boulevard South and Harmon Avenue, in the spring of 2023. It will be one of only 18 in the country, measure more than 14,500 square feet, and sit four stories above the Las Vegas Strip, so you’re

guaranteed spectacular views while enjoying a menu that includes the best of land and sea. The space will include 400 seats, two bars and three private dining rooms.

Mediterranean cuisine is extremely popular on the Las Vegas Strip, as it encapsulates so many different regions. One of the more under-represented sub-categories is Israeli street food ... but no longer. Chef Eyal Shani is opening two outposts of his most popular restaurants, HaSalon and Miznon , at The Venetian in early 2023. HaSalon, which also has locations in Ibiza, New York and Miami, will feature an interactive, open kitchen and lots of energy throughout your dining experience, while Miznon features a highly varied pita menu and serves everything from breakfast to late-night noshing.

Gordon Ramsay’s restaurant empire is about to get just a little bit bigger. He’ll soon be opening Ramsay’s Kitchen at Harrah’s, which will mark his sixth enterprise in Sin City. Then there are Michael Jackson fans who build an entire Vegas visit around Cirque’s tribute to the King Michael Jackson ONE them, a couple seated in Row K, seats 1 and 2, flew into Vegas from Phoenix just for a Monday performance.
