Ready to Order?

A big part of Las Vegas recovering from the pandemic shutdown of 2020 was the opening of Resorts World Las Vegas in 2021, a megaresort (the most expensive on the Strip to date) that has proven to be a huge draw in every category: Entertainment (residencies by Carrie Underwood, Luke Bryan and Katy Perry), nightlife (residencies by Tiësto, Zedd and Kaskade) and, equally noteworthy, restaurants. All of the property’s dining options are simply stellar, with some of the world’s best chefs putting together some of the Strip’s most impressive menus.

This week’s issue is a celebration of that amazing achievement. Managing editor Nina King sat down with six of the property’s culinary visionaries to talk about their journey to Las Vegas: Shaun Hergatt, Tal Ronnen, Nicole Brisson, Daniel Ontiveros, Devin Hashimoto and Justin Kalaluhi. Get to know these fun, creative people (“Chef Collection,” p. 32), and then make your reservations for a meal you’ll never forget.

But the dining excitement doesn’t stop at Resorts World Las Vegas. Switch on with pop group’s hit-filled residency at Park MGM

Maroon 5’s devotees possess a special kind of dedication. The band’s Maroon 5: The Las Vegas Residency at Dolby Live at Park MGM gives those superfans an ongoing opportunity to commune and groove in a state-of-theart venue that frontman Adam Levine commands with unparalleled stagecraft. Novices who only know the hits but appreciate showmanship leave the venue having experienced one of the most dynamic live acts in 21st-century entertainment with perfectly optimized sound and floor-to-ceiling video that enables multiple sightline options from every seat.

Sometimes those video images come in the form of heat coming from Levine’s body as he prowls the sparse, uncluttered stage. This spring, the band kicked off sets with “Animals,” with Levine effortlessly hitting the song’s high notes before leading the audience in a sing-along of the falsetto-fraught chorus to “One More Night.”

Lead guitarist James Valentine has to be one of the most underappreciated musicians in popular music, especially for a band of Maroon 5’s stature. He builds foundations for hit songs by staying in the pocket and blending his parts into the arrangements, but live, he gets to pull out all the stops when it’s

his turn in the spotlight, or in a medium shot that reveals how little he’s aged since the band hit the big time with “This Love.”

That song came early in sets as did the first of Levine’s costume changes, some of which are the subject of much discussion. At least the green mesh tank top he wore during a crackling cover of Prince’s “I Wanna Be Your Lover” was, but what was unquestionable was his own prowess on guitar. Although his voice is distinct and instantly identifiable, he jams with effortless fretwork that would impress any musician in the house.

The hits come one after another, from “Harder to Breathe” and “Maps” to “Moves Like Jagger.” Projections of blue skies and nighttime traffic back the band for the sweetness and light of “Payphone,” while a runway allows Levine and Valentine to get up close and personal with fans during “She Will Be Loved.” Maroon 5’s long relationship with Las Vegas undoubtedly helped season them into A-class headliners that win over new fans with every performance. –

Magic Hour

World-class mentalist has astounded audiences for years on the Strip

Frederic Da Silva tells the skeptic to pick a number from one to 100. Open to experience, the skeptic accidentally says the last two digits of his birth year out loud. Da Silva asks him to make another choice and keep it to himself. He thinks 71, then 13, before an Alice Cooper song pops in his head and he focuses on the number in the song title. The star of one-man show Paranormal With Frederic Da Silva makes sure the skeptic has settled on a choice, looks him in the eye, writes on the back of show program then turns it around: 18.

The skeptic walks away stunned, exchanging excited words and glances with people lined up in the lobby of The Magic Attic to take a photo with Da Silva after his 4 p.m. performance. It seems like the entire audience waited around to have a close encounter with the French mentalist, who won them over with his combination of extra-sensory perception and contagious charisma.

Da Silva picks participants by throwing foam flying rings and inflated emoji balls into the all-ages audience. He proceeds to astound them by correctly guessing names, numbers, locations and ephemera drawn from his minimalist prop inventory. He blinds himself with tape for one bit, perhaps too much.

He demonstrates artistic skill as well, creating an abstract profile of one of his influences with a twist not apparent until his canvas is complete. One part of the show that may require some suspension of belief is when he makes people feel as if he has tapped them on the arm when he is well clear of their personal space. It’s a little hard to believe despite their amazed expressions.

That is until Da Silva makes that correct guess of 18. There is no empirical explanation. People brought onstage continue to express genuine amazement as they wait in line to meet Da Silva after the show. There is no evidence of plants, just Da Silva successfully sowing seeds of belief in his Paranormal powers. –

AREA15 sushi bar features myriad delights

The vibrant,artistic world within AREA15 continues to evolve in new and exciting ways. Its newest tenant, Kaia Handroll, will have you nudging your way through the crowd to make sure you snag the next stool to get a taste of some of the best sushi rolls in town.

The brightly colored, brightly lit sushi bar is set up in such a way that socializing is practically mandatory. As you make your decision between a starter of Japanese Caesar salad or a Kaia poke

stack, you’ll be talking to those around you in no time—especially once you get started on your choice of sake, beer or spirit.

The handroll selection here features blue crab, scallop, salmon, yellowtail, spicy tuna, toro, tuna poke, kanpachi, lobster truffle and vegetable. You can opt for the usual duo of soy sauce and wasabi, but Kaia also offers two signature sauces in case you want something a bit different.

All rolls are served cylinder-shaped and fresh from the kitchen—if you opt for one of the pre-set menus (a chance to really explore the menu), each roll will be brought out individually. We personally recommend the four-roll set of blue crab, scallop, yellowtail and spicy tuna. Top everything off with Japanese cheesecake (although the mochi is a strong contender, also). –Ken

Sequins of Success

Liberace was once a ubiquitous presence in Las Vegas. At the height of his fame, he had the most in-demand residency at the resort on Paradise Avenue now owned and operated by Westgate Las Vegas. He held court at his own restaurant at the Liberace Plaza on Tropicana Avenue, which also housed the Liberace Museum. Both venues would eventually close, but the museum’s collection of clothes, cookbooks, memorabilia and a glittering automobile lives on at the Nevada State Museum inside Springs Preserve via Liberace: Real and Beyond .

The exhibit, which runs through Dec. 31, opened a little more than three years after centennial observations of Liberace’s birthday. By the time he arrived in Las Vegas to play the Riviera in 1956, he was a pop-culture phenomenon, having gone from performing at hotel chains and Hollywood supper clubs to films and his own television series. Along the way, the classically trained pianist shed highbrow pretensions and learned to play to the masses, taking showmanship to places it had never been before.

That included tickling the ivories of ornate pianos and being wheeled

onstage in dazzling vehicles, examples of both of which are included at Liberace: Real and Beyond. His interest in cooking led to publishing books that are included in the exhibit. Candelabras, religious items, art, personal effects and sparkling accoutrements and wardrobe items he was famous for are on display.

While plans for the restaurant to reopen are under way, the adjoining museum will remain closed. Liberace’s legacy was celebrated in mid-May with a Liberace Week highlighted by a preview of producer Jeff Kutash’s new show Glitz, a Las Vegas spectacular about the star. It took place at Coop’s Cabaret inside Las Vegas’ venerable Commercial Center, bordered on the south by a street leading to Liberace Avenue.

Liberace’s presence is still palpable in Las Vegas, but through Dec. 31, it’s possible to see his sequins of success in person, courtesy of Nevada State Museum. –Matt

Get a taste of this famous family’s comfort cooking

Nellie’s Southern Kitchen is a tribute to Kevin Jonas Sr.’s late grandmother and the great-grandmother of mega-famous trio The Jonas Brothers, and every detail in this location has been carefully thought out to pay homage to both Nellie and Belmont, N.C., where Kevin grew up.

Everywhere you look, you’ll find details that evoke different parts of Belmont: Different rooms reflect different neighborhoods; design details, like the legs on the tables, are meant to reflect the city’s natural elements; some of the fonts used even have a special connection to the community.

Signature cocktails include the Whoa Nellie (vanilla vodka, amaretto and pineapple juice); the Cherry Lemon Sundrop (Tito’s vodka, fresh cherry liqueur and Sun Drop citrus soda); and the Front Porch Punch (gin, Malibu rum, drunken cherry juice and mixed citrus juices).

Look for Nellie’s picture when ordering food; that indicates dishes her family ate on a regular basis, including Southern rolls, barbecue chicken, macaroni and cheese and drunken collards. But for a serious comfort food with roots in Belmont, you gotta go with Nellie’s Chicken and Dumplings, with large, house-made dumplings swimming in a rich broth.

There’s also a terrific sandwich menu here. The Nellie’s signature Southern flavor continues unabated in favorites like a fried green tomato BLT. The Free Bird, featuring a blackened chicken breast (fried or grilled) with lettuce, tomato, onion and house pickles, is even better when you add pimento cheese.

Service is a passion and a top priority for this manager

When it comes to work, there are two mantras that Valentino Crespo Jr., assistant general manager of Mott 32 at The Venetian, lives by, as did his father who adopted the mantras, too: “This is what my dad told me a long time ago— he said it to me every day—‘Consistency produces knowledge, knowledge produces confidence, confidence is the highest peak of any profession.’ He also told me, ‘Any fool can criticize, complain and condemn—and most fools do. But it takes character and self-control to be understanding and forgiving.’”

It was also Crespo’s dad that first introduced him to the industry when Crespo worked in his family’s restaurant. From there, Crespo perfected his service role, working in every type of cuisine, from positions that included server to management, even working in the art of butler service.

In 2018, Crespo heard that Mott 32 was opening—it was a huge Chinese culinary brand in Hong Kong and New York City—and he was hired at the fine-dining restaurant as a captain, working his way up and earning his

Ocean Prime elevates the seafood and steak experience on the Strip

In a relatively short time, Cameron Mitchell Restaurants has established Ocean Prime as a premium brand across the country, opening outposts in Beverly Hills, Kansas City, New York City and Washington, D.C. Your eyes will be glued to so many cool details—a sizable wine collection, ceiling adornments that sparkle at night and impeccably appointed tables and booths. The cherry on top is the patio area, large enough for any group and cooled in the summer by portable units.

The showmanship here is beyond compare, even by Strip standards. Order the Berries & Bubbles cocktail and you’ll see what we mean—the drink, a blend of Belvedere organic lemon and basil vodka, marinated blackberries, fresh lemon juice and Domaine Chandon Brut, arrives at your table bubbling like a witch’s brew, thanks to the inclusion of dry ice. Time to make your Instagram followers a bit jealous!

That inventiveness continues on the appetizer menu, particularly the Prime roll. This twist on the sushi roll combines beef carpaccio (!) with tempura shrimp, cream cheese and scallions. Yes, there are more traditional sushi rolls on the menu, like the spicy tuna, but this is truly something to experience.

Seafood and meat options are all stellar. The Chilean sea bass is served with broccolini, pearl onions and a potato purée, but what really puts this over the top is the truffle vinaigrette. The flavors perfectly complement one another. And steaks (all seasoned and broiled at 1,200 degrees) are simply sublime, especially the 10-ounce filet mignon, with your sauce of choice—we opted for the au poivre, but black truffle butter and Maytag blue cheese crust are all highly recommended.

We don’t often find ourselves gushing about side dishes, but wait until you try jalapeño au gratin, smoked gouda tater tots, miso-chili roasted broccoli and bacon creamed spinach. These are all so good, you may save them to take home later.

The desserts here cover the gamut of tastes. Heck, even carrot cake makes an appearance, and what a version it is—10 layers of goodness smothered with cream cheese icing and, as a glorious bonus, pineapple syrup. For one the whole family will want to share, order the warm butter cake, accompanied with fresh berries, vanilla ice cream and raspberry sauce.

Carversteak (Corporate executive chef)

Carver Road Hospitality corporate executive chef Daniel Ontiveros, like many Vegas culinary artists, has worked in a variety of restaurants, gaining experience and fans.

When he opened the vaunted Carversteak at Resorts World Las Vegas as executive chef, he brought a wealth of knowledge gleaned through restaurants like Bouchon. The opening of Carversteak in Resorts World Las Vegas was exciting in myriad ways.

“Obviously it’s an iconic location being that it was the Stardust. … It was exciting for me to take the oppor-

tunity to come into a new building and work with Sean Christie and Carver Road, and all the executives that brought me on board. It was great to be able to create something together,” he said.

Although he travels extensively in the executive chef position, he’s still

involved in all aspects of the restaurants. “The role that I’ve taken on now is more of a mentor for the people who work (here), to make sure that they’re upholding the standards and the expectations of not only myself but Carver Road, and Carversteak.”

He’s got a little advice for beginning foodies: “To develop a palate you have to … have respect for the ingredient itself and where it comes from, how it was grown, who delivered it to you. It’s kind of an entry level for me, in terms of getting people to try new things, and giving a story. Everybody loves the story (like how) our lobsters are shipped from Maine, every two days… I think it just becomes a deeper appreciation for food.”

You might be surprised to learn just how far Resorts World Las Vegas’ executive chef Devin Hashimoto’s reach extends . The Las Vegas restaurant veteran (Stratta, Renoir, Mizumi) opened the resort, interviewing chefs, tasting dishes and recommending menu and ingredient changes. Today, he directly oversees 29 venues, including the foodie paradise of Famous Foods Street Eats.

The Hawaii native developed a fascination for cooking after growing up

in an accomplished mother’s kitchen and getting a part-time job in a local restaurant. “That was the first kind of experience I had (in) prep work … getting whatever the fish they had from that fishermen that they had contracted with. Whether it was a marlin or … mahi. It was just so intriguing to be able to see that operation and to experience like a small independent restaurant operation and then come to Vegas, and then work at The Mirage.”

As the UNLV culinary grad worked his way up in Vegas, he developed a network of contacts that proved invaluable in his role at Resorts World Las Vegas, allowing him to source the best possible product at the best possible price, and share that with the resort’s chefs.

So if you see something unusual on a restaurant menu, it might in part be due to Hashimoto. “We try to see what other competitors are doing, what are they offering and how can we get ahead of that and do something unique and different that can attract guests to the property.”

“Some people say food should be hot. I was trained that food shouldn’t be as hot because you lose the flavor. Where the true flavor comes out (is) when items are cold.”

Caviar Bar (Owner and executive chef)

For Australian-born Shaun Hergatt, the secret to success isn’t a secret— it’s hard work, dedication and creativity. The executive chef and owner of Caviar Bar grew up in Cairns, a tropical area that’s considered the gateway to the Great Barrier Reef, with extensive farming and ocean fishing.

“I think that it was such a great environment to be able to be creative,” Hergatt said. His Finnish-born grandmother nurtured that, cooking tradi-

tional Finnish dishes but also using whatever fresh ingredients were available. “My grandmother is an amazing influence in my life , especially from a culinary standpoint, because she was the one who was really teaching me from a very young age about food.”

It seemed natural to go into cooking, where he labored and learned fine dining, taking on an executive chef role at age 22. He ended up in New York and Miami, earning Michelin stars and building a reputation for exquisitely crafted dishes.

He brought that experience and passion for excellence to Caviar Bar,

designing a restaurant and menu with a seafood-forward menu that is liberally accented with caviar and, as befits the name, features a caviar section with caviar flights.

The restaurant was designed conceptually, said the chef, meticulously planned so that every aspect complements and leads to another. That planning is emblematic of the chef. “When you have your own mindset, you have your own foundation. And you can create conceptually amazing dishes for the season and the artistry … but also make it taste delicious.”

From farm to table to Italy—Nicole Brisson has always been immersed in the food world, with a grandfather who owned his own restaurant and a childhood spent eating and preserving produce from farmer’s markets and the family’s own acreage in New York.

“I didn’t have fast food until I was probably 26 years old,” Brisson said. “Everything I had was made from scratch. And I think that kind of ignited my passion for farm-to-table cooking.”

That background made a decision to pursue opening a restaurant a focus during high school and culinary

college. Then came travel to Italy and studying in its restaurants.

After years of making and honing connections, she began helming restaurants both on and off the Strip, garnering a James Beard nomination and appearing on television in the process. When the opportunity to participate in opening upscale Italian restaurant Brezza at the brand-new Resorts World Las Vegas came along, it felt serendipitous.

“It was really kind of like this reunited family atmosphere with all the executives in the hotel, and we kind of bonded over the fact that we’ve been on this trip for 20 years and all know each other, and our paths or our careers kind of correlated at some time.”

At Brezza (and at Bar Zazu, the arty tapas restaurant next door that Brisson also helms), she pulls in the influences her experiences have given her, creating dishes with stories behind them. Take the caprese, a beautiful dish with a geléed tomato center, inspired by a dish she prepared daily in Italy. The pasta is a marvel, with a team of four hand-making every portion in the hours before the restaurant opens.

FUHU (Executive chef)

When Justin Kalaluhi was growing up in Hawaii, he little suspected that one day he’d be leading the team at FUHU in Resorts World Las Vegas. As a child he often camped with family in an extensive beachside camp that included a full makeshift kitchen; that intrigued him, while meals with family excited his taste buds and got his creative, inventive juices flowing.

Today, you’ll find those influences blossoming in the Asian-inspired, seafood-forward menu at FUHU, where Kalaluhi took the reins earlier this spring. As executive chef, he focuses on presenting the best-quality dishes to guests, dishes like scallops, whose ingredients and presentation vary with each season.

One of the most impressive items at FUHU, he said, is the aromatic crispy duck, a Malaysian-inspired dish. “People don’t understand that it’s a three-day process. We fabricate the

duck and salt it for a whole day. Then we rinse it and put a dry-wet rub on there and it sits for 24 hours. Then we braise it for two hours, then cool down, and in the next process it’ll be (finished) in the fire.”

If you haven’t yet developed your appreciation for raw foods, take Kalaluhi’s advice for expanding into that arena: “If they don’t know anything about the raw side of things, like sushi, the goma crab is an introductory level; it’s not raw, it’s fully cooked. Then they can venture into something like the crispy tuna...” He has a tip for beginning home cooks as well: Don’t add cold food to your pan. It will stick.

If you know much about plant-based food, you have undoubtedly heard of Tal Ronnen. The executive chef and owner of Crossroads Kitchen has created buzz for years with his advocacy for vegan foods. He’s worked with celebrity clients like Oprah Winfrey, wrote cookbooks (The Conscious

Cook), founded vegan brands like Kite Hill, and established vegan restaurants like the trendy Crossroads Kitchen in L.A. When expanding to Las Vegas, Resorts World Las Vegas seemed perfect.

“It was a very natural fit for me to choose Resorts World Las Vegas. The

resort has a great Los Angeles theme with Wally’s, Fred Segal, and Ray Garcia (¡VIVA!). It just made really good sense for me to come here,” he said.

That expansion has proven a success, with guests coming from near and far for the fine dining that Crossroads Kitchen is famous for. The menu is vegan, with items like chestnut foie gras, which the chef is justifiably proud of. “People are blown away by the texture in the depth of flavor (of the foie gras). It’s made from porcini mushrooms and roasted chestnuts.”

That’s not the only dish to look out for here. The skirt steak takes an incredible effort to produce. “Our eggplant skirt steak is made from a whole Italian eggplant, which is steamed, dehydrated, and then butterflied to look like a skirt steak. It’s then marinated in a beet ponzu, which gives it that bloody color and served like a steak set would be.”
