I don’t want to say Las Vegas invented the variety show, but pound for pound, we defi nitely host the best such entertainment in the world. As America’s Got Talent proves over and over again, there are so many great individual acts that are capable of populating a show fi lled with such talent. And where’s the destination all of them want to work? You got it: Las Vegas. On any given week, you can see up to a dozen shows that feature performers from around the world, all with jaw-dropping skills who make the impossible seem easy. A new variety show premiered last month, one we’re highly suggesting you get tickets to right now: Miss Behave’s Mavericks at Plaza downtown, featuring the inimitable emcee Amy Saunders and a cast of the beautiful, the wacky, the hilarious and the just straight-up weird (“Back and Better Than Ever,” p. 34).

Bursting With So Much Flavor
Who doesn’t love Italian food? And this delightful hot spot serves up some of the best
On the north end of the Strip you’ll find Balla Italian Soul, a sweet joint with a patio that looks out to Las Vegas Boulevard. It’s chef Shawn McClain’s newest venture, with a menu that captures some of the most celebrated flavors and ingredients of Italy’s Amalfi Coast.
Once you’re seated inside the bright restaurant, ask for a beverage menu, and it’s a beaut here, 26 pages of cocktails, beer and a great variety of wine from all over Italy, with sommelier recommendations, large-format wines and wines from other domestic and global sources. Plus, there are plenty of spirits offered as well.
While you are contemplating your dinner choices, a little snacking will help whet the appetite—start with focaccia and taralli crackers (you may be familiar with the crunchy Italian rings). Other shareable treats include speck ham and summer melon; beets agrodolce, delivering a sweet-and-sour experience; margherita pizza with buffalo mozzarella and Genovese basil; and meatballs with Parmesan and fennel pollen.
Italian meals are traditionally served in multiple courses, so you’ll want to choose both pasta and a main. Balla Italian Soul serves several options for your pasta course. Plus, inventive choices of pasta will give you a great experience. For instance, you can get cannelloni Alfredo, featuring rotisserie chicken, or trottole presented with shrimp fra diavolo, ’nduja sausage, roasted peppers and mint.
Once you travel on to the mains portion of the menu, executive chef Michael Vargas has a variety of choices for you. Seafood dishes range from light grilled prawns with white bean ragu to sea bream, a white fish with a more meaty taste than other white fish. Steak lovers can choose between a 16-ounce New York strip or a 20-ounce ribeye. Stuffed mushrooms with cheese and marsala are sure to make a nice accompaniment.
And desserts span Italian classics as well, with panna cotta, gelato and tiramisu making good choices. If you prefer to drink your dessert, Balla Italian Soul has a carajillo with Licor 43 and espresso, plus amaros, limoncellos and grappa. –Nina King

Finned Frenzy
See all kinds of critters at this animal attraction
One good thing about the subtropical hot desert environment is there are no sharknados. There will likely never be a sharknado in Las Vegas, but if one does occur Shark Reef Aquarium is designed and built to withstand the wind-and-fin phenomenon. Visitors can be secure in the knowledge they will be safely separated from the sharks by tempered glass regardless of what’s happening in the world outside of Mandalay Bay’s animal realm.
The environment inside Shark Reef seems like a world unto its own, a sort of cross between Indiana Jones archeology adventure and Jules Verne beneath-the-sea scenery. There is a jungle with ruins to cross through before shark-sighting, with a tropical scent being the first indication upon entry that climate change is ahead.
There are a few hazards. One must evade a pool populated with piranha, a Burmese python that gives lethal hugs and a Komodo Dragon that looks cute but is an apex predator that would not work very well as a support animal. The king of this jungle is a deceptively chill Johnson’s crocodile with an Ancient Sunken Temple for a castle. Its preferred method of capturing prey involves clamping down with its 70 teeth and drowning dinner before commencing consumption.
As long as visitors remain well-behaved, there is little chance of becoming a meal for Shark Reef’s inhabitants. There are no boundaries for imaginations, though, so creating a scenario in which there are relics to hunt for is perfectly appropriate. Once the man-eating hazards are circumvented, there are more bucolic species to see. Placards provide fast facts about French angelfish, queen triggerfish and parrotfish in a learning experience that accompanies the length of the trek.
The most photographable scene on the premises is the shark tube, a walk-through, transparent tunnel that gives an indication of how much water and space it takes to provide homes for hammerhead sharks far from the ocean. It’s less complicated to provide an abode for stingrays, and far less dangerous to touch a stingray than a hammerhead shark, so the rays reside in a touch pool. –Matt Kelemen Mandalay Bay. 702.632.4555
Great Music, ’60s Style
Family band can still deliver the nostalgia goose bumps
Growing up, one of my favorite shows was Love, American Style, partly because it had one of the most enjoyable theme songs of all time. (Bear in mind, this was a period in pop culture where a lot of TV shows had now-iconic songs attached to them.) The band responsible for that song, The Cowsills, has another tie to that period: A musical family, they were the inspiration for The Partridge Family! Originally six siblings who performed with their mother, The Cowsills now
consists of siblings Bob, Paul, Susan (and occasionally John), but while their numbers have decreased, the music is as charming as ever, a sound that truly speaks to the generation it was created in—one of peace, love and harmony. From “The Rain, the Park & Other Things” and “Indian Lake” to “Silver Threads and Golden Needles” and “Hair” (a huge hit for them), The Cowsills are guaranteed a place among the greatest nostalgia acts around.
Inducted into the Rhode Island Music Hall of Fame in 2013, the band remains busy, recording new albums and individual side projects, as well as occasionally touring with The Turtles and other ’60s bands as part of a package tour. Fans of that era will want to get their tickets and join the love, Cowsills style. –Ken Miller

Hitting the High Notes
Adult revue mixes rock and ravishing routines
Rock ’n’ roll music, a cast of scantily clad ladies (who also get topless!) and a bevy of fierce dance routines is all wrapped up in the entertaining adult revue “X” Rocks. For 70 minutes, sit back and enjoy a musical romp through the genre’s biggest hits while a cast of beautiful dancers shows off impressive athletic-meets-seductive moves.
Each number pairs choreography, props and costume with the song. You’ll watch the ladies dress (and undress) in ’60s and ’70s styles to hits like Led Zeppelin’s “Black Dog,” The Beatles’
“Come Together” and Jimi Hendrix’s “Purple Haze.”
For those mesmerized by Tawny Kitaen in Whitesnake’s music video for “Here I Go Again,” you’ll see it re-created onstage, with one of the dancers dressed in that flowing white dress while she seduces on top of a Jaguar car. Things get scary, sexy and a little silly when Alice Cooper’s “Feed My Frankenstein” comes on, and nothing looks hotter than the ladies tearing off their white tank tops during Kid Rock’s “My Name is Kid.” And things slow down during a few numbers

Popular attraction gets even sweeter for the holidays
For many Las Vegas locals and tourists, the holiday season officially opens with the first visit to Ethel M Chocolates Factory & Cactus Garden . This is the 31st year that Ethel M has held its Annual Holiday Cactus Garden Lights celebration, and it’s a beautiful thing.
Through Jan. 4, starting at 5 p.m. daily, the gardens are lit with about a million lights and adorned with tons of holiday decorations. After scoring a cup of hot cocoa at the outdoor Garden Café and meandering through the paths, photos and visiting with Santa may be in order. (For $35, you’ll get a professional printed photo, and a digital one, too). There is a $3 charge to enter the attraction (fee waived for ages 2 and under and 65 and older), and that benefits local charities HELP of Southern Nevada and Three Square Food Bank. The Garden Café also features Mexican hot chocolate, chocolate-dipped snacks, mocktails and cocktails for sale.
In the retail shop, you can pick up special holiday chocolate collections for gifts; you can also customize a box. You can also book a holiday chocolate tasting, available with wine for the 21-plus crowd, and sample some of those sweet treats. Slots for the tastings fill quickly, so reserve online in advance.

And the Sweet Dreams is a playful dessert in cocktail form. Inspired by the classic Brandy Alexander, the cocktail is served inside a waffle cone that has been dipped in dark chocolate, stout, Himalayan salt, orange essence and raw sugar, and is a blend of Rémy Martin 1738, Baileys Strawberries & Cream, Tempus Fugit crème de cacao and marshmallow syrup. I mean, hellooo?! Liquid decadence continues with Gatsby’s specialty cocktails, a mix of Prohibition-inspired sips with modern flavor flair like Daisy’s Sour with Belvedere, Lazzaroni amaretto, lemon and lime juices, rosemary syrup, lavender bitters and egg whites, and the Gatz Old

Play lead guitar in a rock band. Check. Have the best nickname ever. Check. Create your own brand of whiskey, spices and hot sauces. Check. Own Nevada’s oldest operating bar. Check. Meet Stephen Staats, aka Old Man Liver, who purchased the historical destination Pioneer Saloon in Goodsprings, Nev.
“When I stumbled upon the Pioneer Saloon I was like, ‘Oh that’s the place that people were talking about,’” Staats says. “Then it came up for sale during COVID
and I thought maybe it wasn’t in the cards for me because there were so many big investment groups after it. But I’ll throw my name in the hat. And strangely ... I’m not a big fate guy, but it picked me in some weird way because I started dreaming about it, and I’d wake up and be like, ‘Man I have to have it.’ Next thing I know I have a 111-year-old fixer-upper.”

throughout the dining room. The inviting, horseshoe-shaped bar is adorned with elegant wooden panels curving around the bar, and stools with golden bases arrayed against it. The music selection is almost as sweet as the décor, with a classic rock soundtrack
curated by Luckley Tavern operator Oliver Wharton playing.
The menu here is also obviously lovingly curated, with choices that echo a high-end American restaurant or steakhouse. Sink into a cushy booth, or at one of the tables set against a long, curving banquette while waiting for your first cocktail, something perhaps like the Guava Gal, a light drink of white rum, Mystic Tiki rum liqueur, lime guava mint and a touch of
orange oil that I recently indulged in.
The Blood Orange is a bit more strict, mixing gin, lime, rosemary, blood orange and ginger.
A mouthwatering warm artichoke dip had me hoarding chips through to dessert, but your server is certain to be clearing away empty plates from the miso cod lettuce cups, pigs in a blanket, served with pub cheese and a wholegrain mustard, and three shrimp tacos with roasted garlic and avocado. The eye-catching lollipop bu alo wings come with the classic combination of celery, carrots and ranch.
The fresh mozzarella and heirloom
tomato salad comes with heirloom baby tomatoes, with a mix of acidity in the tomatoes, a lovely ball of mozz in the center and a sprinkling of pepitas, all drizzled with balsamic. The emerald kale salad here veers o some other version, with grated black kale interacting with a roasted peanut vinaigrette, mint, pecorino cheese and pickled onions for the best version of a kale salad that I have ever had.
Speaking of the best, the woodfired salmon with broccolini and lemon was one of the best versions my companion had tried, and a surprise to her, the broccolini was incredible. Other main dishes you might consider are Birnie’s Sliders—A Threesome with wagyu beef, smoked short ribs, roasted chicken and a photogenic lobster pot pie. The spicy rigatoni a la vodka is a fiery dish with Calabrian chili contributing the heat and the tomato and basil mellowing that out.
You can order steaks several ways, from the 32-ounce shareable tomahawk to a 6-ounce petit filet (definitely for one) or a 12-ounce New York steak. Try it Oscar-style or with shrimp if you need a touch of the sea, and grilled onions and mushroom are perfect on nearly everything. Sides like the sautéed asparagus and large onion rings round out the meal.
Desserts are always optional, but the tiramisu, accented with traditional cocoa powder and espresso beans atop the latte-colored mascarpone mixture and ladyfingers, is so good.

Jo Koy just wants to hang out with people who want to have fun

It’s easy to tell why Jo Koy picked a certain New York borough as the location for his latest Netflix special. Jo Koy: Live from Brooklyn, released in June, captures a fired-up comedian fueled by the energy of a fired-up crowd, creating a stand-up synergy that led to 5 million views by September. Koy touches on energy vampires, mumble rap, Biggie Smalls, being a “zaddy” and, of course, his son. He also expounds on the nature and benefits of comedy and laughter. “That’s God’s medicine,” he says. “When you laugh it releases endorphins. That’s real s---!”
Live from Brooklyn is Koy’s bounce back from his Golden Globes hosting shot in January that drew a lot of flak from critics. He’s had his defenders, though. Jimmy Kimmel has pointed out that it was Koy’s first try, and he really ought to be given another chance. Koy was game to try his inexperienced hand at hosting, and it didn’t pan out. If he didn’t try, he’d
never know, just like if he didn’t get up for the first time on a stand-up stage, he wouldn’t be where he is now.
Like Kimmel, Koy learned to be funny while living in Las Vegas. He started finding out how well he gelled with audiences while leading tours at the (now closed) dolphin habitat at The Mirage. He took a do-it-yourself approach during the embryonic phase of his comedy career, with a high point being his renting the historic Huntridge Theater southwest of downtown and promoting his own show.
While Las Vegas had a substantial Filipino population, comedy did not. Koy, whose mother was from the Philippines, was a trailblazer in that respect. Family is a key source for Koy’s material, with his now 21-year-old-son having his life humorously documented throughout Koy’s career.
Nowadays, it’s less about depicting Joseph Herbert Jr.’s antics growing up than differences between generations. Koy, for instance, recounts the clash they had in discussing their tastes in hip-hop, with Koy insisting music from the era of his youth is far superior to the contemporary rap Joseph Herbert Jr. listens to.
Koy’s material is family oriented and family friendly, in a PG-13 sense. His passionate appeal for people to honor their mothers in Live in Brooklyn probably had more than a few audience members texting their moms after the show. His edginess comes from his energy rather than pushing boundaries. We will likely never hear
about him getting wrapped in scandal, declining due to substance abuse or being the subject of a tell-all book written by Jo Jr.
While Live from Brooklyn was recorded before this year’s Golden Globes, its release afterward and ratings success makes it look like Koy is having a comeback. He looks like he works out every day and spends regular time in his favorite tattoo artist’s chair. Koy never went away, though. He was back on stage five days after the Golden Globes, and his current tour is booked through April. Prescribing God’s medicine is his calling.

Miss Behave’s Mavericks finds new digs at Plaza’s charming showroom
Her name is Amy Saunders, but you may know her as Miss Behave, the sword-swallowing, sarcastic comedian who’s produced some of the most racy and riveting shows to ever grace this city’s stages. If you’re already familiar with Saunders’ wonderful work (which you should be), then you’ll be delighted to know she’s back and better than ever in her show’s latest iteration, Miss Behave’s Mavericks Saunders kicked o her nightlife career busking in London’s West End in the ’90s and taught herself to swallow swords
after reading about the unique specialty act, just to eventually become the world record holder for most swords swallowed simultaneously by a woman in 1999, swallowing five swords. She then broke her own record twice, swallowing six swords in 2001 and seven in 2004!
With world records under her belt, Saunders later created the Miss Behave character and began producing her own variety shows, each with its own unique twists and innovations but clearly influenced by the cabaret star’s point of view. Miss Behave’s tongue stays firmly

planted in her cheek as she toes the line of raunchy, but not too raunchy. Bitey, but not too bitey. Chaotic, but not too chaotic. She breaks all the rules in just the right ways, and it’s thrilling to see unfold. Oh, and one last thing to know about Miss Behave: She keeps incredibly talented company that’s just as weird and wonderful as she is.
Las Vegas has seen the talents of Saunders and her crew a few times over the years with hits like The Miss Behave Gameshow at Horseshoe Las Vegas (which was Bally’s at the time) and Miss
Behave’s Mavericks at Cheapshot, a quaint downtown bar that o ered an incredibly intimate setting for shenanigans. Now she’s in the Plaza showroom, and if you’ve seen the Cheapshot version of Mavericks, you’ll likely see some familiar faces. But the performers in the Plaza version rotate, so there’s truly no telling who or what you’ll see. To give you an idea of what you might see, here’s a taste of the crew on opening night:
Burlesque babe Julie Atlas Muz performed a racy number with a severed hand and appeared as O cer Donut for a number that’s so funny, yet so sexy, it ought to be criminal. There’s always a certain level of “WTF?” that comes with a Saunders production, and the crowd got plenty with the oh-so-hilarious hula-hooping chicken dancer Tanya Gange.
Two contortionists accomplished some near-impossible feats of balance and flexibility, each act having its own flair. TJ Santiago pulled o a very sultry display of the male body by incorporating a bit of strip tease into his number, while Scarlett Business wowed the audience performing some steamy hand balancing in full drag.
Bringing plenty of weird to the production, ballet dancer Bella Schleiker stunned the audience with her hilariously uncomfortable swan dance. And it’s only fitting that this one-of-a-kind romp features the only water dump in town (think Flashdance), courtesy of the beautiful Alexandria Beauregard.

Barry Manilow’s long goodbye to touring isn’t the end of the road
Barry Manilow has spent much of 2024 playing his last shows. Not last shows for good, but last shows in cities on both sides of the Atlantic Ocean, where Fanilows have been able to attend concerts as often as Manilow could break away from his long-running residency at Westgate Las Vegas. Following more than a dozen May-June final performances at London’s Palladium, Manilow brought his The Last Concerts Tour to U.S. cities from St. Louis to San Antonio.
He’s hardly done performing though. Now 81, Manilow has begun his long goodbye to the more exhaustive aspects of bringing his music to audiences who may not be able to visit Vegas for Barry Manilow: The Hits Come
Home. Bonding with fans is one of his major motivations, and he would tour until he dropped if he didn’t have the foresight to proactively plan The Last Concerts so he and concertgoers could savor every Manilow moment to the max.
They’ll just have to meet in the future at Westgate Las Vegas, where Manilow has surpassed Elvis Presley’s record of most performances in the iconic International Theater. The Hits Come Home is booked through the end of 2025, which means at least another year of hands swaying in the air to “Can’t Smile Without You,” over-the-top renditions of “Copacabana” and two seasons of holiday shows.
This year’s A Very Barry Christmas dates take place on Dec. 5-7 and 12-14. “I’m so proud of our Christmas shows,” Manilow said in a preview to the 2023 NBC televised version or the production. “It gets more and more beautiful every year. It’s a feel good evening of music.”
Most would argue every
Manilow show is a feel-good evening of music, but it’s only during the most wonderful time of the year that artist who got his start in music by writing jingles applies his artistry to “Jingle Bells” and “Deck the Halls.” More than half of last year’s shows remained his pop standards, with fortunate Fanilows at the first 2023 Very Barry Christmas receiving a special gift: a rare cover of Joni Mitchell’s Christmas-in-California song “River.”
That track is from Mitchell’s critically acclaimed 1971 album Blue, released during the year that Manilow began working as Bette Midler’s music director at The Continental Baths in Manhattan. It was a pivotal time for Manilow, who would go onto produce Midler’s debut album, The Divine Miss M, in 1972. Manilow released his first solo album a year later for Bell Records, which Columbia Records executive Clive Davis would reorganize into Arista Records.

Dominique Ansel Las Vegas features iconic confections straight
from the mind of the chef
Chef Dominique Ansel doesn’t dream about pastry, but that’s because he requires little sleep. The French-born master of flaky cakes and creamy confections thinks about his work constantly. It’s more productive preoccupation than obsession, a dedication to craft that is all-consuming and part of Ansel’s destiny. How could he not optimize the ingredients of ability, vision and opportunity presented to him by the machinations of fate?
Ansel is, of course, the creator of the Cronut, the hybrid of croissant and donut that debuted in New York City more than a decade ago. At his Caesars Palace shop, Dominique Ansel Las Vegas, you’ll find themed Cronuts that change every month. Dominique Ansel Bakery, where the Cronut was conceived, opened
well over a decade ago. The iconic invention came to be after Ansel’s girlfriend, now his wife and business partner, asked him to create a donut for Mother’s Day.
“I’m French. I had no recipe for donuts,” says Ansel, who only had four employees at the time. “She insisted enough that I ended up doing something. Or course I grew up eating croissants. I loved the idea of having the layer of croissant in a donut shape, and I worked on something that didn’t work well in the beginning, but I knew was a good idea.”
A lot of New Yorkers thought it was a good idea, too. It took time and many revisions for Ansel to be satisfied, but the Cronut went viral quickly after its debut. Customers came in droves.
“We made 35 the first day, next day we made 45,” recalls Ansel. By the third day, some 150 people lined up before the bakery opened. “It was stressful. Worrisome. People were not happy. People were complaining, but it’s New York.”
There are more than enough Cronuts to make customers happy at Dominique Ansel Las Vegas. The dining area and displays are immaculate, save for the flakes of pastry that inevitably fall on the white tables and the floor.
Ansel’s popular DKA, a Breton butter cake with caramelized crispy crust, is easy to find alongside chocolate tacos
with hazelnut praline and chocolate Chantilly cream; pistachio rolled ice cream with an orange blossom almond biscuit; and mini Madeleines, cute, tasty little shell-shaped cookies that come in a 20-pack.
The gooey, ganache-filled Cookie Ice Cream Sandwich and Banana Split are more multilayer experiences than dessert, while Chocolate Chip Cookie Shots are homemade Madagascan vanilla milk.
Precision guides Ansel’s hand and gives him the discipline to accomplish, but it’s the reaction to his results that inspire him. “Food has the power to bring you back to a moment in time. It connects you with emotions, with people,” he says, recalling a frozen s’mores item, fashioned for a summer menu, that was torched in front of customers before being served. “You hand it to them, and they bite into it and see marshmallow, and they smile. They’re like kids again.”
