Celebrity chef Dominique Ansel opens a new French market-inspired eatery on the Las Vegas Strip

Dominique Ansel is known throughout the culinary world for his unique pastries and baked goods, such as the Cronut, with bakeries and shops in cities across the globe, including Las Vegas. And now, Dominique Ansel at Caesars Palace has been joined by the new Dominique Ansel Marché at Paris Las Vegas. Before the new venue opened, Las Vegas Magazine ’s Nina King posed a few questions to the charismatic celebrity chef.

You have opened a variety of bakeries and restaurants through the years, including the new eatery opening at Paris Las Vegas. Can you tell us what the inspiration for this one is?

We always try to create something unique for each of our shops, a different concept and experience that’s made especially for that place. With our second home in Las Vegas being at Paris Las Vegas, I was inspired by the French-themed resort. It made me think of the beautiful Parisian markets and streetside stalls I used to see years ago, ones I still love to visit today. I think of the fresh crêpes being made in front of me, fi lling the air with a delicious smell, rotisseries

with chickens being slowly roasted as the drippings fall into the golden potatoes just below, and of course, the fresh fruits, pastries and croissants baked that morning. Inspired by that, we took the idea and made it our own marché (market) at the center of Paris Las Vegas.

For a newcomer to the Dominique Ansel universe, what pastry would you recommend that a customer order? And are there any special savory dishes at Dominique Ansel Marché that you’d recommend someone try?

I’m especially excited for the rotisserie and the other savory dishes we have planned, including juicy roast chicken, French fries, slow-cooked roast beef and porchetta with crispy, crackly skin. I’m excited for all our crêpes too, both sweet and savory, because I have fond memories of growing up in France and getting crêpes at our local town. My sister worked at a crêpe stand and could make hundreds of them a day. Our savory crêpes are the classic, French buckwheat version, wit h fi llings like sliced ham, Gruyère cheese and sunny side-up eggs. Of course,

there’s also the beautiful croissants and viennoiserie that we bake each morning, including the Cronut. We change the flavor every month, and ou r fi rst flavor at the new venue will be pain au chocolat, with dark chocolate ganache and croissantinfused ganache.

What is your personal order in your own venues?

For me, it’s always a cup of coffee and a DKA (Dominique’s Kouign Amann), which is like a caramelized croissant. It’s our most popular pastry in each of our shops, with golden layers and a caramelized crust.

You must have spent quite some time in Las Vegas during the planning for your bakery and the new restaurant. What are some of your favorite activities here in La s Vegas?

There’s such an exciting energy every time I’m here in Las Vegas, and there are some really talented chefs opening new concepts and restaurants both on and off he Strip. I love exploring and trying out new places each time I’m in town.

Do you have other culinary plans for Las Vegas?

You never know! But for now, we’re focusing on our Caesars Palace and Paris shops, and I can’t wait for everyone to visit.

Voice of a Generation

Legendary tenor stops in Vegas as part of a worldwide tour to celebrate 30 years of musical excellence

Perhaps no current living singer has brought classical music to the masses quite as successfully as Andrea Bocelli, a once-in-a-generation talent whose instincts have served him well over the course of his 30-year career. With a career encompassing 15 solo albums, nine complete operas and multiple collaborations, he’s sold more than 80 million albums worldwide, making him the biggest-selling solo artist in the history of the genre.

What a 30-year journey it’s been for the tenor. He arrived in 1994 with a splash, getting highest marks in the Sanremo Music Festival and releasing his debut album that same year. The album was certi fied platinum within weeks, and soon Bocelli was earning worldwide praise. Celine Dion once famously said, “If God would have a singing voice, he must sound a lot like Andrea Bocelli.”

He soon made a foray into opera, debuting in 1998 in La bohème. That opened the flodgates, as he would go on to perform in Jules Massenet’s Werther, Madama Butter fly, Tosca, Carmen, Il Trovatore and many more. His opera albums, especially Aria: The Opera Album, have been enormously popular with fans.

Bocelli’s list of collaborative partners reads like a who’s who of musical icons: Celine Dion, Luciano Pavarotti, Sarah Brightman, Josh Groban, Katharine McPhee, Mary J. Blige, Jennifer Lopez, Nelly Furtado, Ariana Grande, Nicole Scherzinger, Ed Sheeran and more. He was also famously a guest coach on American Idol in 2006. (The theme? What else? Greatest love songs.)

More recently, Bocelli has been touring with his 27-year-old son Matteo and 12-year-old daughter Virginia, who performed on his A Family Christmas album.

He celebrates his illustrious 30 years this week in Las Vegas as part of a worldwide tour. Expect to hear songs like “Time to Say Goodbye (Con Te Partirò),” the song that introduced him to millions of listeners, as well as “Fall on Me,” the song that introduced Matteo to the world in 2018 via the end credits of 2018 Disney fi lm The Nutcracker and The Four Realms. It truly holds a special signifiance that assures it a place in a Bocelli concert. –Ken Miller

’Tis the Season for Sipping

Eight Lounge introduces new fall and winter cocktails

Warm up with a sweater or with some spirits; although we love both we highly recommend the latter. Welcoming the fall and winter months means cozying up with seasonal cocktails, and Eight Lounge at Resorts World Las Vegas makes all merry and bright with the release of eight new libations.

The recipes all call for sweet, spiced, seasonal flvors, with twists on classic recipes like the seasonal tequila Old-Fashioned (pictured). The reimagined cocktail mixes Código reposado tequila, St. George spiced pear liqueur, demerara

syrup, walnut bitters and fig and fennel bitters, resulting in a deep flvoring of sweet and spice. While summer months are perfect for tiki cocktails, for cooler months, Eight Lounge puts a spin on the classic with the Ninth Island Jungle, a mix of Bacardi Reserva Ocho rum, Campari, simple syrup, pineapple and lime juices and the nutty, fall flvoring of Trader Vic’s macadamia nut liqueur. Even the margarita gets a spin in The Holiday Margarita, a mix of Pátron Cristalino tequila, cranberry juice, house-made cranberry-cinnamon syrup and Solerno blood orange liqueur.

While sipping on one of Eight’s eight new cocktails, don’t forget that the lounge o ff ers guests the chance to pair any cocktail with a cigar. Whether an aficionado or novice, the staff f Eight Lounge are well-versed in matching cigar and cocktail flvors and have a huge selection of brands on hand from a wellstocked humidor. Laughter and Amazement

Find funny and fascinating entertainment at this magician’s family-friendly show

The illusions in Mac King’s Comedy Magic Show are oftentimes so subtle that you may not immediately realize you’ve just seen the most amazing thing ever. But when it hits you, don’t be surprised to fi nd your jaw on the flor. King is so endearing, in fact, that you momentarily forget you’re at his show to see some magic—you’d rather just have a conversation with the guy while sitting on a porch, drinking some sweet tea. But when the magic does come, it’s very organic to King’s persona—there’s no pomp, no circumstance, no razzle, no dazzle.

The Kentucky-born-and-raised magician instantly connects with his audiences through down-home humor and a self-effacing nature—no one is quicker to acknowledge that a joke didn’t work than King, which in itself is pretty hilarious. And King’s choice of garb—that checkered suit that seems just a bit too big for him— is now as iconic as his long-running show, long one of the best family shows in Las Vegas.

And there’s plenty of audience participation in King’s show as well, highlighted by several great bits:

• Using a “cloak of invisibility” (no Harry Potter jokes, please), King helps a couple move some playing cards around the stage—and each other;

• Using four envelopes and a bit of fi re, King fi nds a novel way to use a volunteer’s $100 bill;

• A young volunteer is asked to help King set up his camping tent. At one show I attended, my great-niece was brought onstage. Her reaction to the “great reveal”—utter shock, followed by the biggest smile ever— remains one of my fondest memories as a Las Vegan.

Other props are used to huge effect, particularly a gold fi sh that seems to literally appear out of thin air, a guinea pig that pops up in the most unusual of places (you’ll see!) and … Fig Newtons. We won’t tell you where King makes these things appear from, but trust us … if he gives you one, do not eat it.

By the time King’s show is over, it’s hard to say what you’ll miss more on the walk back to your room—the illusions or the laughs. –Ken Miller

Off-Strip steakhouse excels at the classics

If you’re looking for a nice o ff-Strip dining experience, head to Bistecca Italian Steakhouse, where you’ll find all your steakhouse favorites.

The first thing you’ll notice upon entering is the interior, an intimate space divided in half by shelves that hold attractive bottles, bowls and more. Throughout the restaurant, impeccably appointed tables and booths all have great views of original artwork on the walls, courtesy of contemporary visual artist Patrizia DiDiomete. This is a space you look forward to spending plenty of time in.

You’ll want to start your meal here with one of the wonderful signature cocktails.

A true highlight is the pineapple Negroni sour, so delicious with Aperol, pineapple juice, Luxardo Bitter Bianco, simple syrup and egg whites, followed closely by the coconut Aperol margarita, featuring reposado tequila, simple syrup, coconut milk, lime juice and Aperol.

Great starters include mushrooms stuffed with ricotta, Italian sausage, mozzarella and spinach, served with a lemon herb beurre blanc, and black tiger prawns served with a lemon-scented

cocktail sauce. Then dive into mains like 8-ounce filet mignon, 24-ounce veal osso buco, duck ragu and chianti-braised beef short rib. Pair any of these with sides like Tuscan potatoes, Bistecca fries or lobster mac and cheese.

For dessert, you’ll de finitely want to try the bananas Foster flmbé (two guest minimum), prepared at your table and served with vanilla gelato, caramelized bananas and banana whiskey. –Ken Miller

Japanese-inspired hot spot offers phenomenal ambience and flavor

Step into the winding alleys of Tokyo’s Golden Gai district when you visit the newest lounge inside Wakuda at The Venetian. Named after the lively Shinjuku neighborhood fi lled with quaint bars, Golden Gai cocktail club, just off akuda’s meandering, neon-lit hallway, conjures the essence of the historic streetscape.

A striking collection of Shohei Otomo ballpoint pen drawings line the walls, a fusion of traditional Japanese motifs and modern pop-culture references. From afar, these intricate drawings have many focal points for the eye to bounce between, but up close each painstakingly placed pen stroke becomes visible, which is an incredible perspective of these pieces.

Of course, there’s plenty of chic sips and snacks to match the incredible ambience at this cozy cocktail club, and many of the drinks use unique Japanese ingredients. For something sweet and refreshing, consider the Lychee Martini, a combination of Haku vodka (a spirit made from white rice and puri fied bamboo charcoal), Ginjo sake, lychee juice, lemon and Wakamomo peach. Matcha enthusiasts should try the Matcha Martini made with Ki No Bi green tea gin, cacao and matcha honey cream.

Nothing beats light bites in a lounge, and here you’l l fi nd fi ne-dining fi nger foods for every palate. Try the Jidori chicken nuggets with yuzu ranch dressing for a creative take on something familiar or indulge in the Golden Gai Secret Treasure to enjoy toro, uni and caviar from the sushi bar. –Em Jurbala

Strip lounge has a wide variety of signature drinks

If you’re looking for an evening of drinking and merriment, let us point you in the direction of SAHARA Las Vegas and to its über-cool CASBAR Lounge. This lounge is a true destination for some of the best craft cocktails, a beautifully designed space with tons of room to relax and live music ever y evening.

The lounge introduced a brand-new menu of signature cocktails in late summer, and a breakout star has been the 9th Island Mojito. This cocktail is an ode to the state of Hawaii and is served on draft and made with Kuleana Huihui rum. The brand is popular for its use of homegrown Hawaiian sugar cane, which gives the classic mojito cocktail a bump up i n flavor. It’s then mixed with the standard ingredients— sugar, lime, mint and club soda. Plus, Vegas being known as the 9th Island—it just makes sense.

For those who like the classic Pornstar cocktail, a PG version was created, The Starlet, and then the ante was upped i n flavor and ingredients, resulting in one of the lounge’s most delicious cocktails. The base is Weber Ranch vodka, a brand that takes distilled tequila and distills the spirit again, turning it into vodka. The vodka is then mixed with Passoa passion fruit liqueur, lime, Madagascar vanilla and

served with a glass of KÚ sparkling wine, which you pour into the cocktail.

The classic Gold Rush cocktail is twisted into CASBAR’s own version, the Cali Gold Rush cocktail. The twist is the addition of Argonaut Saloon

Strength brandy added to Horse Soldier bourbon and, for a lovely kick to the taste buds, a mango honey syrup and lemon.

For some more fun with your cocktail, check out the What’s Your Fancy section of the menu. You’ll be able to choose from two cocktails: the Agave Club, a tequila-based delight; or the CASBAR Sour with whiskey. Both cocktails are topped with an egg white foam, and the fun part is a machine that the bar uses to stamp pictures on the cocktail—you get to choose from a library of images. You even get the chance to upload one of your own photos to the machine for a personalized touch.

CASBAR Lounge also offers some only-in-Vegas drinking experiences with its own line of tequila and whiskey. The property purchased a few of its own barrels, and now guests can try the specialty line of Rare Character Presents single barrel series straight bourbon whiskey and the Paladar single barrel 100% reposado. Bartender makes delicious cocktails you can’t refuse

It’s all tied together. Mob ties? In a cheeky coincidence, Chelsea Newton, bartender at Oscar’s Steakhouse at Plaza, grew up working in her family’s restaurant, High Point in Monteagle, Tenn. The restaurant is listed on the National Register of Historic Places, and legend has it that mob boss Al Capone used it as a haven for when he traveled between Chicago and Miami. Now, Newton is bartending at Oscar’s, named after Oscar Goodman, the famed Las Vegas

lawyer for the mob. “The connection is too funny, right?” she says.

Newton has been slinging drinks at Oscar’s for five years. She made the move to Las Vegas in 2016 after visiting the city just once, on her 25th birthday. “As soon as I visited, I was like, ‘This is me. This is it!’ I was so attracted to the lights and lifestyle,” she says. Newton brought her lifelong experience in restaurants—her family has long-owned several restaurants in Tennessee and

CHĪ Asian Kitchen introduces new dishes to its well-rounded menu

One of the hidden gems in The STRAT isn’t really hidden at all—it’s tucked down a short corridor very near the casino floor. And as you walk in from the parking garage or valet, you might not need your eyes to fid it, as the magnificent fragrance will fid you. Inside, walk through an alleyway with a slightly undulating floor with

walled yards, a dragon overhead, garage spaces, bikes stored between dining spaces, an intimate bar, and graphics and graffiti adorning the walls.

Recently, CH Ī Asian Kitchen introduced several new dishes to the menu, and you’ll defiitely want to try one or two of those along with some signature dishes while you’re here.

First, order a cocktail to stimulate your appetite—the Nippon Old Fashioned is concocted with Frey Ranch straight rye whiskey and a spiced cherry reduction, plus Hinoki Japanese bitters and Angostura bitters. Frey Ranch is a Nevada distillery that also grows all of the grains that are used in the product, making each bottle very special. Confucius’ Smile is fabulous if you like your drinks a little sweeter, delicate and delicious with Casamigos reposado tequila, Chinola passion fruit liqueur, Lilikoi, lime, vanilla and car-

damom. Although most dishes at CH Ī Asian Kitchen are served family-style, you defiitely won’t want to share this cocktail.

But you may want to share a few appetizers like the shrimp toast triangles with egg, water chestnut and a dipper of spicy mayo; Vietnamese egg rolls, stuffed with vermicelli, pork and shrimp with a spicy dipping sauce; and the Summer Salad, a wonderful dish with Asian greens and pea shoots tossed with a sesame and soy dressing, liberally sprinkled with crispy shallots and toasted cashews. During a recent dinner, this stayed on the table the entire meal, as did spicy edamame with teriyaki garlic sauce and charred green beans with hoisin sauce. You’ll want to go back to these between each course.

One appetizer that won’t last for even a few minutes after arriving is the sweet and sour spare ribs. These are fall-off-the-bone tender, and you’ll be lucky to snag more than one from family and friends around your table (making a good argument for a solo return).

Fill in any cracks that are left with main dishes like the recently added whole or half smoked Peking duck, served with steamed buns. Get this in another way with the new Peking duck fried rice, with slices of duck riding on a bed of fragrant rice with egg, garlic, ginger and crispy duck skin. A new favorite for me from CH Ī Asian Kitchen has to be the homestyle tofu, with fried tofu mingling with panfried noodles, mushrooms, baby corn, scallions and Napa cabbage with ginger garlic sauce.

Somehow, no matter how many servings I’ve had during dinner, I always have room for a bite of dessert, and it’s no exception here. The fried croissant beignets are delicious, freshly fried with ginger sugar coating the outside. Mochi, available in both mango and green tea flavors, cools everything down.

Music legends ride into the Golden Nugget Showroom for this year’s NFR concert series

The action takes place at Thomas & Mack Center at UNLV, the Cowboy Christmas gift show is just east of the Strip at the Las Vegas Convention Center, and on Fremont Street, in what has become an NFR tradition, Golden Nugget hosts an all-star lineup of country and Americana live music acts.

He’s bouncing back from quadruple bypass surgery this summer to play his classic style of country for rodeo fans after testing out his ticker in October with a concert at the High Horse Saloon in Texas City, Texas. Fans were mighty glad to have the “Bubba Shot the Jukebox” singer performing again, who obliged them with handshakes toward the end of his set and signed an acoustic guitar for a fan.

Chesnutt emerged in the early ’90s with a traditionalist persona and a voice George Jones fans could love, eventually scoring 14 No. 1 hits and 23 Top 10 singles such as “I’ll Think of Something,” “Old Flames Have New Names,” and “Blame It on Texas.”

Tillis and Morgan are currently alternating solo dates with Grits and Glamour collab concerts that allow them to add their voices to

each other’s solo material and harmonize on covers such as Joni Mitchell’s “Both Sides Now” and Barbara Mandrell’s “I Was Country When Country Wasn’t Cool.”

Setlists as of late feature radio favorites by Tillis such as “Maybe It Was Memphis,” and “Mi Vida Loca” alongside Morgan classics like “Something In Red” and “Except for Monday.” If fans at Golden Nugget are really lucky Monday night the ladies will sing “Walk Right Back,” a hit for the Everly Brothers in 1961 and Anne Murray in 1978, in the fun and loose fashion of a Grits and Glamour show.

Terri Clark is a country performer’s country performer. Born in Quebec and raised in Alberta, Clark was Canadian grits

to Shania Twain’s glamour when both artists emerged in the mid’90s. She released her self-titled album through Mercury Records in 1995, followed by two more platinum-selling albums in 1996 (Just the Same) and 1998 (How I Feel ).

She’s on an upswing as of late, with her latest album, Take Two, featuring duets with Ashley McBryde, Kelly Clarkson and Lainey Wilson, among others. Clark joined Wilson to sing album track “Poor, Poor Pitiful Me” at this year’s CMA Fest in June, with the pair receiving a wildly enthusiastic reception. Clark, who went on to play Nashville’s hallowed Ryman Auditorium for the fi rst time in August, performs as part of Golden Nugget’s NFR lineup Tuesday night (Dec. 10) for the fi rst time since 2021.

Lindsey Stirling brings her holiday merriment to the Las Vegas Strip

The mere act of sharing music opens people up to gaining deeper understandings of each other while also supporting artists by helping to distribute their work and contribute to their success. So, when my mother’s bright and eclectic friend recommended Lindsey Stirling’s music to me, I was eager to look inside the musician’s fascinating mind.

I didn’t know what to expect when I typed the unfamiliar name into the YouTube search bar. After all, while the recommendation came from someone whom I knew to be brilliant, it also came from someone I knew to be eccentric. What I found was so fabulously unique—a modern use of a classical instrument that somehow tickled the parts of my brain that love electronic music while simultaneously stimulating the bits of me that adore vibrant violin sounds.

That was back in 2012 after Stirling had just released the music video for “Electric Daisy Violin,” and since then, the funky-haired, dancing violinist has only continued to create imaginative and exciting work that’s led to her most recent tour, The Snow Waltz Tour, which brings Stirling to Las Vegas for two˜shows.

Not only is it seasonally appropriate, but merry melodies lie fi rmly within the realm of what Stirling does so incredibly well. Having released not one but two holiday albums, the violinist has simply

mastered the art of blending the classic sounds of songs like “Deck the Halls” and “Feliz Navidad” with her own electronic echos, fi lled with grand crescendo moments and fun fiddling accented by softer and gentler bits. There’s so much drama, yet so much exuberance in each Stirling°styling.

In concert, the instrumentalist moves with such grace and power that she makes it look e˛ ortless, despite that being far from the truth. There’s a reason you don’t see many other violinists pulling out the dance moves while they wield their bows; it takes years of practice to be able to perform the way Stirling does. With her squad of backup dancers, Stirling breathes life into each tune she plays, and it’s so exhilarating. She even plays the violin while hanging upside down, for goodness’ sake!

Oh, and of course, she’s also got one of the most likable personalities you’ll ever come by. Her energy is uplifting, and her kind demeanor is oh-so-endearing. At shows, the star often asks her audience to participate in creating various forms of social media content, and with each short-form video she posts, you can tell how engaged and happy to take part the fans of the musician are.

As if there weren’t enough reasons to want to snag tickets to this show, the performer donates $1 per ticket to her own philanthropic organization, The Upside Fund, which is currently working to help families pay medical debts and housing costs. So really, not only are you signing up to see one incredible show, but you’ll also be supporting a good cause just by showing up.
