The Olympics, whether summer or winter, always brings a sense of nostalgia. For me, it always seems that the whole world takes a pause from strife, their struggles, politics, etc., becoming a place where differences seem to fade away and cheering on your team takes center stage. You even find yourself hopeful for those who have come through great adversity or struggles, to be able to make their Olympic debut or be the last time competing. Many times I find myself rooting for another country, just because the story of the Olympian is so fantastic- you can’t help but want them to win. haun White, “The Flying Tomato” defied gravity in the 2006 and 2010 Olympic champion in snowboard halfpipe. He rode into the Sochi Olympics aiming to make history two times over: by becoming the first U.S. man to win gold in the same event at three consecutive Winter Olympics, and by claiming the first-ever gold medal in the snowboard slope style event, which made its Olympic debut in Sochi.
Then two days before the Opening Ceremony, White dropped out of the slope style competition, citing potential risk of injury due to the dangerous course. He turned his sole focus back to the halfpipe, which looked to be a smart decision after he earned the highest score in the qualifying round. Unfortunately in the final, his Olympic winning streak ended when he fell twice in his first run, played it safe in his second, and finished off the podium in fourth place.
Now 31 years old, while gearing up for a fourth Olympics, White nearly saw his dreams get crushed thanks to a brutal crash that left him battered and bloody. Back in October, White took a hard slam while training on a 22-foot Olympic superpipe in New Zealand.
Overcoming injuries and using what he learned from his disappointment in Sochi to try and reclaim his title as Olympic champion at the 2018 Pyeongchang Winter Olympics.
Acrash during training had left her screaming, then passing out from the pain, on the side of a Colorado mountain, 15 months ahead of the Pyeongchang Olympics. Just one of a series of serious injuries that has interrupted the American's illustrious ski career, this required delicate surgery to insert a plate and more than a dozen screws into her broken right arm while trying to avoid nerve damage. The lengthy list includes concussions, broken fingers, torn ligaments, a fractured ankle, along with the ripped-up right knee that held her out of the 2014 Sochi Games and prevented her from defending her downhill gold medal from four years earlier, when she also collected a bronze in the Super-G.

I have many patients ask me, “What is the best way to keep my long term weight loss goals from taking the back seat to my busy family life?”. It is a question and struggle that almost all of us have had at some point. The best advice that I have is, in one word, “pre-planning”. Yes, planning for the week ahead does take time and thought. As the week unravels, you will be singing your own praises because you were able to conquer time and logistic obstacles with healthy food alternatives.
What I recommend to patients is, to grab some snack-sized seal-able bags and divide fruits, vegetables, pretzels, granola, etc. just before the week begins. Measuring out items into these bags provides you with a reasonable portion and you know exactly how many calories you are consuming. This is convenient for side items for a work lunch or for a snack while you play chauffeur to your children’s activity schedules.
If you must grab something from fast food or at a restaurant, make good decisions. Choose a side salad instead of fries. Order your sandwich without cheese, mayonnaise, or other high calorie sauces. If there is not an option for a breaded bun substitute, only eat the top or bottom side of the bun. If you order a salad, make sure it isn’t covered with cheese, croutons, bacon, and/or other high calorie/fat items that sabotage the whole purpose of eating a salad. Make sure the salad has a lean protein on it if it is an entree. Only add small amounts of the dressing to the salad as needed, instead of the whole package. Chances are you won’t even use half of the portion provided to you, and you just saved yourself lots of calories. Small changes add up to big results!

The presence of wildlife in our world is a treasure, one that we will never be able to reclaim if it disappears.
Wildlife around the world is increasingly threatened. Historically, one out of every one million species became extinct each year; since the Industrial Revolution in the mid-1800’s, this rate of extinction has increased rapidly. Recent studies have shown that rates of extinction are currently 10 to 100 times higher than normal and that the world is on the brink of a sixth mass extinction, the first since the time of the dinosaurs.
3 delicata squash (about 3 pounds total)
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 pound bow-tie pasta
2 bunches Italian (lacinato) kale
1/2 cup pine nuts
1 cup crumbled feta cheese
Extra-virgin olive oil
Cut the squash in half lengthwise and remove the seeds. Cut into 1-inch chunks (there's no need to remove the edible skin). Arrange on a baking sheet and spray or brush with olive oil. Season with the salt and pepper. Roast 10 to 15 minutes, until tender. Allow to cool.
Fill a large pot with water, add salt and bring to a boil over high heat. Add the pasta and cook until just tender. Drain, rinse and set aside.
Remove the leaves of the kale from the stems and cut into large pieces. Set up a steaming basket over boiling water and steam the kale just until it is bright green, about 2 minutes. Remove and plunge into ice water to stop the cooking and keep them bright green.
Toast the pine nuts in a small dry skillet over medium-low heat until light brown, 3 to 5 minutes. (Stay nearby while you are toasting. Left unattended, the nuts can easily burn.)
Combine the pasta, kale, squash, and pine nuts in a large bowl. Toss, and then add the cheese. Taste and adjust the seasonings accordingly.

2 cups light brown sugar
1 teaspoon cinnamon
3/4 cup pecans, toasted and coarsely chopped
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1. Arrange a rack at center position and preheat the oven to 350 F. Butter the bottom and sides of a springform pan and then cut a sheet of parchment paper to fit the bottom of the pan. Place the paper in the pan and then butter the paper. Butter the sides and bottom of a ramekin and place, right-side up, in the center of the pan.
2. In a large bowl, stir together the flour, brown sugar and cinnamon. Add the diced butter and rub the mixture between your fingers until it resembles coarse crumbs. Remove 3/4 cup to a small bowl and add the chopped pecans; set aside.
3. Add the baking powder, baking soda and salt to the large bowl with the flour mixture and stir to combine. In a medium bowl, whisk together the buttermilk, egg, dissolved espresso, and vanilla and then stir them into the dry ingredients just until well blended. e batter should be quite thick.
4. Ladle half of the butter into the prepared pan and spread evenly with a spatula. Sprinkle half of the nut mixture over the batter. Repeat with the remaining batter and nut mixture. Place the pan on a rimmed baking sheet and bake until a tester inserted into the area around the ramekin comes out clean, 40 to 45 minutes.
5. Cool the cake to room temperature, about 45 minutes. en run a sharp knife around the inside edge of the pan to loosen the cake. Run the knife around the outside of the ramekin to loosen it from the cake. Gently remove the ramekin and the sides of the pan. Dust the cake with confectioners' sugar, drizzle the glaze over the top, and serve.

In a medium bowl, whisk together the milk and espresso powder until the espresso has dissolved. Add the cream cheese. With an electric mixer on medium speed, beat the mixture until blended, and then gradually beat in the confectioners' sugar. e glaze should be smooth and thin enough to drizzle over the co ee cake. If too thick, thin with a teaspoon or more of extra milk.

The lights shown and cameras ashed as over 80 models, ranging from kids to adults, strutted the runway in stylish black and white dresses and swimwear, gowns in holiday colors and dapper tuxedos.
Hosted by Gage Models & Talent Agency, the Holiday Fashion Show took place on Thursday, November 30 on the roof top of Downtown 211 in Knoxville’s Market Square and featured looks by The Gilded Gown, Regal Tuxedo, Xen by Rachele Swimwear, Legends of Hollywood and even had kids modeling shirts from the zoo’s gift shop. Attendees may have also spotted some penguins. Well, kids in penguin costumes.
While the fashion show didn’t have actual penguins waddling down the runway, it did bene t penguins that are very real—the penguins at Zoo Knoxville. The zoo is home to ve South African penguins who play an important role. Visitors to the zoo have the opportunity to see these penguins swim and dive, but they also learn about the penguins’ wild counterparts who are endangered. In 2010, National Geographic reported that African penguins are sliding towards extinction due to industrial shing around the Cape. Thanks to conservation and breeding programs at zoos like Zoo Knoxville, animals like the penguins will hopefully remain in our world for many years to come.
The fashion show drew about 100 attendees and raised over $2,000 that will go towards enrichment items for the zoo’s penguins.
“We love producing shows that are fashion for a cause,” said Gage Models & Talent Agency Owner Jaime Hemsley. “We’re thrilled that the fashion show bene ted the zoo and raised funds for the endangered penguins. The parade units will be staged on Howard Baker Jr. Blvd., travel up Church St. and turn right on Gay Street, continue over Summit Hill and make the sharp turn onto Jackson Ave. Give your unit enough room to make the turn. The parade will disband just past Barley’s in the parking lot on Jackson and Willow.
Limited parking is available in the Knoxville Coliseum Parking Garage “B” but may not be free because of events taking place at the Coliseum or Auditorium. There is no special parking for parade participants. We highly recommend carpooling because of the volume of traffic and limited space.
Atlanta's Hank & Cupcakes are only a two-piece, but theirs is a sound that's bigger, sonically richer and more viscerally galvanizing than that of any 12-piece funk ensemble or multiple-strat-toting metal outfit you could think to name. Married couple and Israeli ex-pats Sagit "Cupcakes" Shir and Ariel "Hank" Scherbacovsky call it "indietronic," but there's really no way words can do justice to their irrepressible and insistently hook-y brand of electronic indie-pop hybridized with deliriously danceable rock 'n' roll.
"We had just come out of being in another band, and we were experiencing a period of creative emptiness, where we just weren't sure what our next move should be," says Shir, explaining the band's genesis during a recent phone interview. "Ultimately, Hank & Cupcakes was born out of that boredom and uncertainty. The two of us just started rehearsing together, with no commitments other than to enjoy being 100 percent creative, just a bass and drums.
"We began exploring very deeply, and we found a way to make up for all the musicians that were 'missing' from our lineup. We don't do things in the traditional way a bassist or a drummer would do things. There's a lot of creativity and being unconventional involved in the way we approach our instruments."
Shir gives a good deal of the credit for crafting H&C's rafter-shaking, multi-dimensional racket to hubby Scherbacovsky and his ingenious fourstring manipulations. "He has this incredibly complex rig, like a mad scientist kind of thing,"
signed a recording contract from major label BMG.
But the idyll of having a major label record deal proved to be short-lived. "It was a situation where we had an album ready to come out, and all of a sudden, the label started questioning things," Shir says. "Then they demanded we bring in co-songwriters. And then they said the budget was gone. We were used to being involved in all aspects of our band, from business to music to promotion, but they didn't want us being our own leaders. They wanted to keep us out of the loop."

To be sure, the story of Hank and Cupcakes' crazy travelogue of a career, and of the consequent evolution of their one-of-a-kind, genreredefining sound is hella fascinating all by itself.
It began when Tel Aviv natives Scherbacovsky and Shir met while playing in a military band as members of the Israeli army back in 1999. They clicked both musically and personally, and played in a couple other projects together before marrying and moving to Havana to study jazz and indigenous Cuban music.
Their Cuban sojourn was cut short by the country's uneasy political climate, and thus the couple bounced back to Israel and undertook the aforementioned creative transformation before officially founding Hank & Cupcakes and moving to Brooklyn, NY in 2008.
Stateside, it wasn't long before H&C's emergent pop savvy and colorful, cathartic live sets built a buzz, turning the band into a minor New York legend. They started touring outside the state, traveling all over the U.S., playing CMJ and various other stops on the up-and-comers rock festival circuit before trekking abroad to Europe and the Middle East.
A publishing deal ensued, and then, on the eve of releasing their debut record, Hank & Cupcakes
Shir says the band managed to find a loophole in their contract, then secured their release in 2013 -- miraculously enough, with rights to the songs they had written still intact. Liberated, they went on to release their debut "Naked" independently in 2013.
Two more albums -- including 2014's "Cash for Gold" and last year's "Cheap Thrill" -- and a move to Atlanta later, and the buzz the band started building before the BMG derailment is mounting yet again. H & C learned to produce their own videos, and have since released a slew of video singles, several of them in conjunction with famed fashion photographer Javier Ortega.
The duo have also logged literally hundreds of dates on the road; they're currently gearing up for a four-month touring run, the end of which will see them head back to the studio to record songs for a fourth Hank & Cupcakes release in 2018.
"I think most of our growth has come thanks to playing all of those shows these last few years," Shir says. "We've become much more elaborate in what we do, and it's also helped our sound to grow much bigger. Our performance level has gone way up."

The program concludes with Rimsky-Korsakov’s Scheherazade, One Thousand and One Nights, also containing stories of Aladdin and Ali Baba. The clever maiden, Scheherazade, tricks the sultan into keeping her alive for 1,001 nights by telling him stories, by which time he falls in love with her and makes her his queen.
