Dyslexia, even the word itself sounds scary. Well, that’s how it was for me many years ago. I always wondered why I had a hard time reading in grade school and I never wanted to read aloud. I had no idea it was a disability that could actually be treated.
Like many of you I had heard the word, but wasn’t completely sure what it meant. So lets start with the definition::

That didn’t help me much either. I knew from my own experience it was a learning disability, what I didn’t know is there are different types of dyslexia.
It was my senior year in college when I was asked by one of my vocal coaches if I was dyslexic. I told him I had no idea, but it sure would explain a lot. While I didn’t have trouble with numbers and was actually very proficient in math reading and spelling were always a struggle. I would spell word phonetically which would have been fine if there was “spell check” while I was attending school. Instead I had to memorize everything. I would read passages over and over to make sure I could

pronounce the words before being called on in class. School I could mostly prepare for, however it was at church where I would have terrible anxiety. I would not volunteer to read scripture aloud and was scared to death when asked. I would try to politely decline, at least until someone started and I could look up the next verse.
After being asked by my professor, I took a test and found out I was indeed dyslexic. The form of my dyslexia is called Surface Dyslexia, which is sometimes referred to as visual dyslexia because individuals with this condition have difficulty recognizing words by sight. It’s important to keep in mind, though, that dyslexia doesn’t usually involve a problem with vision or eyesight — it’s caused by a difference in the way a person’s brain recognizes letters, numbers, and words. It’s important to note that dyslexia can mimic problems with vision. Which is the reason I was not diagnosed in high school. I was told I had vision problems even after an eye test, because I would mix the letters. Lucky I would not ware the proscribed glasses which would have alter my vision.
So why all this on dyslexia? It is still one of the most undiagnosed disabilities and now has the month of October dedicated to bring awareness. Hence the reason for the fall issue having the 2 Easter eggs.
So if you have always had difficulty reading or mixing letters or words, or if you have children with this issue. Please don’t wait to be tested. The earlier you are diagnosed the quicker you can be treated.

In 2018, we saw the resurgence of boxing, an explosion of high-intensity interval training (otherwise known as HIIT) gyms popping up around neighborhoods and advanced wearable technology hitting the market. As the year was ending, we turned our attention to 2019 and look forward to new workout trends.
TREND#1 30-MINUTE WORKOUTS
For those short on time, 2019 will work in your favor. Following the path of the popular cycling and HIIT gyms offering compact 50–60-minute classes, you should expect abbreviated versions of these to breeze into strip malls. “I think the days of 1-hour workout classes are dwindling, and short 30-minute sessions, classes and programs will definitely continue to grow as people learn you can get a lot done if you do it the right way, with a lot of intensity and short breaks,” says Ashley Pitt, NASM certified personal trainer.
TREND #2 STREAMING CARDIO
“With new fitness streaming options coming to market each week and each offering 15–30-day free trials, I predict that people will experiment with a multitude of streaming fitness services before they find the right match,” concurs Frank Benedetto, DPT and board certified in sports and orthopedics. He expects fitness enthusiasts to perform long-time testing and potentially have one cheap, local brick-and-mortar gym membership.

Many people feel the dawn of a new year provides an opportunity to clean the slate and begin anew. That notion can be applied in various ways, including around the house.
Cleaning the slate at home may involve reducing clutter around the house. Clutter can gradually overtake a home’s interior, turning a once pristine home into one overwhelmed with nonessential items. Clearing a home of clutter can seem like a monumental task, but the following tips can help homeowners and apartment dwellers make the year ahead clutter-free.
•Scan important documents and save them on a computer. Some documents cannot be discarded, but that does not mean they have to be stored in bulky file cabinets or desk drawers. Scan important documents such as medical receipts or tax returns and save them on your computer where they won’t take up any physical space. Purchase an external hard drive as a safety net where you can store backups of important documents in case a computer crashes and cannot be rebooted.

• Purchase furniture that doubles as storage. Storage ottomans and benches can help clear common areas and bedrooms of clutter such as blankets and bed linens that can make rooms feel more claustrophobic. Storage furniture might not get excess items out of the house, but such furnishings can create a more comfortable, welcoming environment.
• Switch to e-statements for bank documents and utility bills. Paper is a big contributor to household clutter. That’s still the case even though many adults now pay the majority of their bills online. When given the chance to choose between paper or e-statements,
opt for the latter so bills and bank statements don’t pile up on your desk or throughout your home office. If you still want to keep important bills and bank statements, download them to your computer and keep them in a designated folder on your desktop.
• Adopt an “out with the old, in with the new” mantra. Resolve to discard old items after purchasing new ones or receiving birthday or holiday gifts. Hanging on to old items because they can still function and serve some utility is a recipe for a cluttered home. Anytime you or a family member brings a new item into your home, make sure the item it’s replacing finds its way out the door.

Ten years after releasing his debut EP,Erick Baker returns with a stripped-down acoustic trio to give thanks for over a decade of making music and to celebrate the release of his NEW album, Morning Light!
If you haven’t yet had the pleasure of making his acquaintance, on the books, Erick Baker is an Americana singer-songwriter and Emmy Award winning Writer and Host of the national PBS travel television series Tennessee Valley Uncharted.
He’s a self-taught guitarist and vocalist, who interestingly enough, didn’t start playing music until after earning his degree in Public Relations from the University of Tennessee. Since then, he’s gone on to share the stage with artists like John Legend, Brandi Carlile, Gavin DeGraw, the Goo Goo Dolls, Grace Potter, and Heart, as well as tour Europe, Asia, and the Middle East, performing for our men and women in uniform stationed overseas.
But off the books, he’s so much more.
I first got to interview Erick two years ago when he was about to perform “Rock the Kettle” for the Salvation Army’s kick off to the bell ringing season. He had just released his new album “Dear Amanda”, which really was fitting as the album was in a way about “Salvation” for Erick; salvaging the person he was and wanted to be as well as the relationships he had.
Now I have the chance to catch up, get an intimate glimpse of how he has taken hold of his aspirations from that last album, where it has taken him and his family and what may lay ahead.
Listening to Erick share his struggles and his personal accomplishments, just reiterates that we all share and aspire to more meaningful relationships and if we are intentional, we can achieve them ourselves.
“The biggest struggle we all have is that battle for balance. It’s daily work to maintain balance & health in your relationships. Not just with the Entertainment industry, but even those men and women who travel for their job, those overseas defending our country and are gone a year at a time. So it’s something most of us are going through- still today, the hardest thing is pulling out of the driveway.”
“It’s so perfect that it’s January [for this article], because the theme of the record; beginning of a new day, a new dawn, new opportunity, to make the most of the day. Time is always a theme that runs through my music. The title track of the album is kind of the foundation of the whole record- it’s called “Morning Light” and it goes:

“It’s about making the most of right now. I feel like that’s what we’re all striving to do, I mean that idea is nothing new, but even just with my personal situations and my last record, basically saying Hey! I need to change, I need to change right now! Then with Mandy leaving her position as a NICU nurse [to be apart of the band], it’s a new dawn for her- but we can’t wait till tomorrow. She’s learning something new- plus being an introvert and being around strangers a lot, it’s been a season of growth for sure, self discovery, self reflection, maturity... some what, and reconnection.
Reconnection has been a big thing; as a family, with our friends, our church, so going into 2019 as a family, we’re the best we’ve ever been.
When the morning comes hopefully we can look back on yesterday and know we didn’t waste it. It’s about being present with intention. You have to be intentional with your time, even something as fundamental as your breath. I did yoga this morning, it’s all about being intentional, that’s the thing that brings you in to the moment.”

“[My experience] with Tennessee Valley Uncharted, this new season, number 5, some of the highlights for me, was one going up to Boling Green, NC to the National Corvette Museum where I got to drive a Corvette on the racetrack, getting it up to 118mph almost 120mph!
We also went to Linville Gorge, NC to do a version of slack lining, called high lining, where they use drones to fly the line between 2 points. [And the pros couldn’t believe he tried it himself!]
We also got to go to the Mississippi Delta, which as a musician, for me, when you trace the roots of music, all roads lead to the Mississippi Delta. So it was so much fun experiencing that Juke Joint, Blues, history. I originally grew up in Memphis, TN, so blues is a big part of me. I’ve never had voice lessons, so I basically learned from feeling it. The passion, that to me, that’s what makes a great singer. It’s not about hitting the notes, I mean you definitely want to hit the notes and everything but it’s that I don’t want to just hear you, I want to feel you. So what I lack in technical ability, emotion is definitely the driving force of all my music. It’s really cool how the TV show parallels being in a band so closely but then in terms of the experience and everything we’re doing [in the show], it just parallels my life so perfectly well.”

New King on the Mountain
EPICENTER: WHY KNOXVILLE IS THE SOUTH’S NEW MTB KING
In a state better known for the Grand Ole Opry and Graceland, Knoxville’s riding is becoming a hit too.
Located just west of the spine of the Appalachian Mountains, Knoxville is blessed with never ending ridges and valleys–AKA really good geography for trails. Thanks to the blood, sweat, and tears of some exceedingly motivated mountain bikers, this East Tennessee city of 200,000 is laced with some seriously epic riding.
At its core is the Urban Wilderness, a 60mile network of trails that interconnects a number parks and green spaces on the city’s south side. The town firmly planted its flag on the “best places to mountain bike” map this past spring with the opening of the Devil’s Racetrack, a high-flying, big-hit gravity trail that rivals anything in the U.S. While the trail is certainly noteworthy, it’s just the latest awesome thing Knoxville has done on its path to becoming one of the premier mountain bike destinations east of the Mississippi. Perhaps one of the best ways to experience all the goodness Knoxville has to offer is to attend during the Appalachian Mountain Bike Club’s legendary and ridiculously fun Fall Fest. To put things in perspective, the event’s organizers are liable to roll up in a stretch limo that’s capable of carrying as many mountain bikes as humans. Get the idea?
If you haven’t started making plans for a visit, you probably will when you factor in Knoxville’s mild climate, good eats, and southern hospitality to boot.
WHERE TO EAT
When you roll back into town after a solid day of riding, find an outside table at Balter Beerworks and sit down for a meal of street tacos, sliders and $4 craft beers (the special price for those who pedal there). What’s more? Balter’s caters to local cyclists and are strong supporters of the outdoor recreation scene. Their Legacy Parks “Beer of the Week” helps support the trails all around Knoxville.
Post-ride on the south side? Trailhead Beer Market is the perfect option near the near the Urban Wilderness trails. This unique taproom features Alliance Brewery on draught and a plethora of other beers for sale in the market. If you happen to be there on Thursday night, you’ll have a chance to play trivia with the local trail nerds from AMBC. Not only are they really good at building and maintaining trails, they’re the reigning weekly trivia champions.
WHERE TO BUY SPARE PARTS
Knoxville has a handful of great bike shops and you can’t go wrong with any of them. Tennessee Valley Bicycles, a full-service shop on Magnolia Avenue, is a convenient place to launch a ride to the Sharp’s Ridge trails. Even more convenient is the neighborhood watering hole located right next door for post-ride recovery.
If you liked the idea behind Balter Beerworks’ Legacy Parks Beer of the Month, you’ll feel good about stopping by REI Knoxville, too. A major AMBC supporting partner, this shop has funded and helped organize some crucial trail projects in the region, including a $10,000 grant for a pedestrian overpass that forms a key link between the Urban Wilderness South Loop and Baker Creek Preserve. REST DAY
Assuming you visit in the warm months, Knoxville’s climate is definitely on the lush side. In fact, it’s a little jungle-like in places. For an exciting rest day activity, find your way to the Ijams Nature Center for a canopy tour with Navitat. Satisfy both your inner science nerd and thrill-seeker personality as you zip-line through the treetops. They’ve got lights and are open late, in case you want to play into the night.

DEVIL’S RACETRACK
Thanks to the votes of mountain bikers from around the country, Knoxville won 2015’s $100,000 Bell-Built Grant which funded this regionally ground-breaking project. Built by IMBA Trail Solutions, Devil’s Racetrack opened in May of 2016 as part of the Baker Creek Preserve, Knoxville’s newest network of trails.
Don’t let the short distance fool you–this 0.6-mile gravity trail starts with a 40-foot-long by 10-foot-tall wall ride and never lets up. Choose your own adventure to the bottom: a succession of high-flying jumps or the world’s longest rock garden.

SHARP’S RIDGE
Due to its unique topography, Sharp’s Ridge drains really well, making it a great option if it has rained recently. The eight miles of trail here are cut into the super steep side slope, which makes for some technically challenging climbs and descents. Link up Sharp Shin Trail’s narrow, challenging singletrack with a blast down Knight Fall’s jump line for a good taste of what Sharp’s has to offer.
URBAN WILDERNESS | SOUTH LOOP
“The Urban Wilderness is a trail network nestled right into south Knoxville,” shares Bell Joyride Ambassador and long-time local Missy Petty. “The mountain biking community there–my family–has grown into an amazing and energetic group of people, and it’s all about hard work, good fun, and, at the end of the day, a great place to ride and live.”
If you’ve never ridden in Knoxville, take Missy’s word for it and start here. This loop only scratches the surface–hitting just 12 of the over 30 miles of singletrack available–but there’s plenty of opportunity to ramp up the mileage. After you’ve sampled your fair share of blazing fast singletrack and rugged rock gardens, you’ll be happy to know that you’re never more than a few miles from downtown and its bounty of food and drink options.

CONCORD PARK
While it’s not the reason you’d come to Knoxville for mountain biking, Concord Park is a local’s favorite. It’s definitely worth checking out as a second ride of the day or a shorter option if time is a constraint. There are some built wooden features, a couple log rides and fun berms to rail along the way.

BIG SOUTH FORK
For a solid backcountry experience, check out the Big South Fork National River and Recreation Area just 90 minutes north of downtown Knoxville. There are an advertised 100 miles of bikeable trails and roads in the park but you’ll probably want to stick to one of the featured rides unless you’re looking for a gravel grind or some bikepacking seclusion.
The 33-mile IMBA Epic Ride combines two of the park’s three best rides: Grand Gap and Collier Ridge. If you only have one day to ride, this loop is well worth the effort. You’ll get the chance to revel over the park’s namesake river on the Grand Gap Loop and sample some of its fastest flowing singletrack on Collier Ridge Trail.

OPEN-FACE EGG SANDWICHES WITH BACON, AVOCADO, & SRIRACHA AIOLI
FOR THE AIOLI:
2 egg yolks, at room temperature
1 garlic clove, finely grated
1 cup canola oil, cold Juice of half a lemon
2 teaspoons Sriracha sauce (or more to taste)
Salt and pepper, to taste
FOR THE AIOLI:
Place the egg yolks, grated garlic, and a splash of water in the bowl of a food processor. Turn on the machine and while its running, slowly stream in the cold canola oil. Run the machine until the mixture thickens and emulsifies. It should look like a slightly loose mayo. Add the lemon juice, Sriracha, and a pinch of salt and pepper. Run the machine again to incorporate and then transfer to an airtight container. Serve immediately or keep sealed in the fridge for up to a week.

2 thick slices of multigrain or sourdough bread (or your bread of choice)
4 slices of crisped bacon
1 avocado, sliced and tossed with a little lemon or lime juice
1 cup baby arugula
2 eggs, cooked to your liking

FOR THE SANDWICHES:
Toast the bread and slather with the Sriracha aioli while the bread is still warm. Top each slice of bread with two slices of bacon, followed by a handful of baby arugula and the sliced avocado. Top everything with the egg and season with salt and pepper. Serve immediately.

Strategies to control appetite
Hunger can be a formidable foe, especially for people attempting to lose weight. When hunger strikes, various appetite-control strategies can help people avoid overeating or eating during those times when boredom is more to blame than an empty belly.
• Eat slowly. When a person eats, a series of signals are sent to the brain from digestive hormones secreted by the gastrointestinal tract. These signals produce a feeling of pleasure and satiety in the brain, but it can take awhile for the brain to receive them. By chewing slowly, people can give the signals more time to reach their brains, potentially preventing them from overeating.
• Choose the right snacks. The right snacks can make it easier to eat more slowly. Instead of reaching for potato chips or pretzels, both of which can be eaten quickly and picked up by the handful, choose snacks that are both healthy and require a little work. Carrots dipped in hummus or baked tortilla chips with low-fat salsa or bean dip are low-calorie snacks that also require some work between bites. The time it takes to dip between bites affords more time for the digestive tract to release signals to the brain that you’re full.
• Reach for fiber first. Another way to conquer hunger without overeating is to reach for fiber before eating other parts of your meal. Vegetables are rich in fiber, but since veggies
are often served as side dishes, many people tend to eat them only after they’ve eaten their main courses. That can contribute to overeating. Fiber fills you up, so by eating the high-fiber portions of your meal first, you’re less likely to overeat before your brain receives the signals that your stomach is full. Consider eating vegetables as an appetizer or, if the entire meal is served at once, clear your plate of vegetables before diving into the main course or other side dishes.
• Drink water. Perhaps the best, and least expensive, way to control appetite and ensure you don’t overeat is to drink more water. A 2010 study funded by the Institute for Public Health and Water Research that included 48 adults between the ages of 55 and 75 found that people who drank two eight-ounce glasses of water right before a meal consumed 75 to 90 fewer calories during the ensuing meal than study participants who did not consume water prior to their meals. Over the course of 12 weeks, participants who drank water before meals three times per day lost roughly five pounds more than those who did not increase their water intake.

Call for Artists for the 48th Annual Spring Tennessee Craft Fair
Local and regional craft artisans are invited to submit their artwork for the 48th Annual Spring Tennessee Craft Fair in Nashville, TN, by February 15, 2019. This juried show presents around 200 of the region’s finest craft artists on the lawn in Centennial Park May 3, 4, and 5, 2019.
The Tennessee Craft Spring Fair is open to artists 18 years of age or older who are Tennessee residents, residents from neighboring states (no guild affiliation required!), as well as artists studying at Tennessee institutions. Erick Baker is an Americana singer-songwriter and Emmy Award winning Writer and Host of the national PBS travel television series Tennessee Valley Uncharted. Since then, he’s gone on to share the stage with artists like John Legend, Brandi Carlile, Gavin DeGraw, the Goo Goo Dolls, Grace Potter, and Heart, as well as tour Europe, Asia, and the Middle East, performing for our men and women in uniform stationed overseas.

Music often plays a powerful role in communicating history. This is evident with “Violins of Hope: Strings of the Holocaust,” a collection of over 50 restored violins that were played by Jewish musicians during the Holocaust. These extraordinary instruments that have survived concentration camps, ghettos and pogroms are making the trip from Israel to Knoxville in January 2019 to tell remarkable stories of injustice, suffering, resilience and survival.
The Violins of Hope will sing again in two performances at the Historic Tennessee Theatre located at 604 South Gay Street with the Knoxville Symphony Orchestra as commentary by Hallerin Hilton Hill and dramatic readings bring the stories of the violins alive. These life changing performances are set to be held on January 23 and 24, 2019.
Stanford Eisenberg Knoxville Jewish Day School is honored to be spearheading the project in partnership with valuable community organizations like the Knoxville Symphony Orchestra.
“The Knoxville Symphony is proud to be a partner in bringing Violins of Hope to Knoxville,” said Jennifer Harrell, Director of Education and community partnerships for the Knoxville Symphony Orchestra. “There is a saying, ‘for the heights and depths no words can reach, God gave us music, the soul’s own speech.’ The stories of human suffering and ultimately hope will be expressed through each of these incredible instruments.” In addition, the “Violins of Hope, Strings of the Holocaust” exhibition will be on display at the University of Tennessee Downtown Gallery located at 106 South Gay Street from January 4 - 27, 2019. The exhibition is being designed by world-renowned architect and exhibition designer, Lou Gauci and will be part of the “January First Friday” art district event on January 4, 2019. The “Violins of Hope” exhibition invites visitors to view, learn and contemplate this singular collection of instruments which survived the Holocaust.
This collection of violins was assembled and restored by Israeli master violin maker and restorer, Amnon Weinstein. Nearly 50 years ago, Amnon
heard an impactful story from a Holocaust survivor who brought him a violin for restoration. This man survived the Holocaust because his job was to play the violin while Nazi soldiers marched others to their deaths. When Amnon opened the violin’s case, he saw ashes. He thought of his own relatives who had perished and was overwhelmed. Amnon put out a call for violins from the Holocaust that he would restore in hopes that the instruments would sound again. Violins of Hope was born.
An organizer of Knoxville’s “Violins of Hope” and Head of the Stanford Eisenberg Knoxville Jewish Day School, Miriam Esther Wilhelm, considers the program a monumental experience for the Greater Knoxville and East Tennessee community. “Violins of Hope is an extraordinarily meaningful program that inspires and educates people of all ages and walks of life,” said Wilhelm. “The Stanford Eisenberg Knoxville Jewish Day School is thrilled to have the opportunity to share these violins with the community as they tell the story of a tragic time in history and what we can learn from it in a unique and impactful way.”
Throughout the month of January 2019, Avshi Weinstein, a Violins of Hope co-founder and educator, will tour East Tennessee middle and high schools as well as churches, synagogues, Sunday schools, businesses, recreation and senior centers with musicians and the Violins of Hope reaching tens of thousands of students and adults. “I think the most important part of this project is education, especially for schools and the younger generation,” said Amnon Weinstein. “When you are speaking through music, through these violins that have been in the camps and ghettos, it’s easier for the younger generation to open their ears and hopefully understand better. The message for all is simple. Never again, never again.”

Sweet Nothin’s is a vocal trio consisting of Lisa and Teresa McCarter (The McCarter Twins) and Chip Winter. The McCarters were a sister trio on Warner Bros records from 1987-92. Growing up in the Great Smoky Mountains of east TN they moved to Nashville and after signing with Warner Bros, they had 3 top-10 charted singles on Billboard country charts as well as 4 other charted singles.
After a hiatus from music for 2 decades, the Twins decided it was time to make more music, and in so doing included Lisa’s husband Chip. Harmony is all they have ever known, so with a giant step of faith for each of them, they share lead vocal responsibilities leading to a whole new experience in 3 part harmonies.
Our Story…
A few years ago, a friend of ours suggested we record our own CD, just for ourselves, because we love to sing, and to see if we could do it all on our own. Initially, Chip was all for it, but only in the capacity of helping out. Lisa and Teresa said, “NO! We’re not going to do this unless you sing with us.” Well, we know how that ended up. We started thinking about songs from childhood memories, songs we grew up with, songs that inspired,and influenced our lives. Some, Chip had never heard before much less, knew how they went. As we gathered roughly 20 songs, we started rehearsing them, vocal and harmony arrangements of each song. That was quite interesting due to the fact that we never sang lead!
It was quite humorous when we’d blow the pitch pipe for the lead note, all of us automatically jumped to the harmony, hence no one was singing lead! Still funny, and we still do that to this day.
The name, Sweet Nothin’s came about one morning when Lisa was humming and singing the Brenda Lee song Sweet Nothing’s. We feel the Lord lays songs on our hearts and minds for a reason. And, since we didn’t actually have a group name for our trio at that time, we all looked at each other and said “THAT’S IT!” And so it came to be and we feel the name represents us well.
We started sharing some “dashboard video’s” on FB of us singing a capella and people really liked it.
So, we started the initial recording process at our home with musician friends, their referrals, usually evenings and weekends as time allowed. About 4 songs into the project, we were contacted on FB by a photographer/ videographer from East Tennessee about doing a DVD/ CD project for the Smoky Mountains.
After a few meetings with him, we put some of our songs on hold, and started on new ones. He wanted songs that could represent the Smoky Mountains, history, scenery, tourism and such. Those would include, bluegrass, gospel, traditional country and folk influences. He left the songs and audio production entirely up to us and he would provide the visual to correspond with each song.
