Each year at the Fantasy of Trees, the Adopt-A-Trees program showcases the creativity of Knoxville area children. Students create hand-made ornaments and decorations for their school or group’s tree. All area schools and local children’s organizations are invited to participate. This year, nearly 100 special trees from the following area schools and children’s groups will be on display, and for sale, at Fantasy of Trees.
The holidays are filled with both joy and stress. Coping with personal stress is already challenging, but when combined with workplace stress, it’s no wonder holiday cheers turns into holiday glares. We are often faced with shortened deadlines, meeting expectations for the end of the year, and coping with stressed-out clients, which are just a few of the reasons for increased anxiety. So choosing the right gift now becomes a chore! Slow down.......I cannot begin to express how I disdain shopping! However, I have found a few things that have aided me during this season. Shop during the off hours instead of after work or during the “big sales”. Typically you are less likely to feel rushed without people playing ring around the clothes rack with you. Shop alone!! While I normally like someone to participate in my anguish, I tend to be more focused and less impulsive when no one is with me. This also helps when sticking to a budget. Finally, shop local!! I like trying to find unique gifts that no one else has and shopping in small local shops insure your gift is not duplicated.
Most of all remember the true reason for this time of year, the birth of Jesus!

Holiday shopping can seem like a dreadful task during the months of November and December. We have a few tips to make your Holiday shopping an event -not a chore. Best way to tackle holiday shopping without sacrificing time with family and friends is to make your holiday shopping a social event!
• Invite friends or family along. Recreate the days of your youth when it was fun to meet friends at the mall and scour the shops. Plan a meeting location and have an itinerary in place. Divide shopping lists so that everyone shares the task of shopping and fatigue doesn’t set in prematurely.
• Make lunch or dinner part of the day. Incorporate refueling into your shopping plans. Failure to eat or drink can lead to hunger pangs and test shoppers’ patience, two factors that are seldom conducive to successful shopping. Having an end goal to meet friends or family at a nearby restaurant & even a dining location right within the mall, can inspire intrepid shoppers to get their work done promptly. Reward yourself for a job well done over a tasty meal and maybe a cocktail. Just be sure to indulge responsibly.
• Break up the day with a flick. Many malls have a movie theater, so plan your shopping around the movie schedule so you can take a two-hour break to rest and relax in the theater. Chances are you’ll come out of the film relaxed, refreshed and ready to tackle the rest of your shopping list.
• Make it a date night. The thought of shopping may not conjure up ideas of romance, but if time is short, couples can use shopping excursions as an opportunity to spend time together. Visit a coffee shop or a bar for a nightcap afterward and enjoy some one-on-one time. Parents can enlist the help of a babysitter to keep children entertained while they enjoy some uninterrupted time with each other.
Shopping fills the days leading to the holidays. Make the most of such excursions by inviting friends and family along.

Weather can affect outdoor exercise enthusiasts, while busy work schedules can make it difficult to get to the gym. When unforeseen consequences compromise your ability to stick to your normal workout routine, working out at home might be your only option. The following are a handful of ways to exercise at home when leaving the house is out of the question.
• Hit the stairs. Many gyms have StairMaster¨ products that can be used for high-intensity interval training, calorie-burning workouts and/or improving flexibility. While you might not be able to duplicate the effects of such equipment at home, you can take to the stairs in your home, walking up and down the staircases in your home to squeeze in some aerobic exercise. Be sure to adhere to proper form when performing crunches, as the wrong form can increase your risk of injury.
• Become a squatter. You can become a squatter without breaking any laws. Squats can be performed with or without weights, and either option can help tone your legs and buttocks, strengthen your core and improve your flexibility. Be sure to use proper form when performing squats. If you have never done squats in the past, first get the form down without using weights, only moving on to squatting with weights after you have mastered the form and if you feel like you want to.

CREATE A SANCTUARY
Overnight guests should have a designated space they can use as a retreat. Holiday Travel on Track
By Matt LongFor some people the process of getting from one place to the other is a pain, a chore, an experience to dread with fear and trepidation, especially during the Holidays. But there’s one form of transportation that seems to transcend the trepidation, to which most travelers fell drawn and memories are made – the train. Be it a modern high speed train in Europe or an old fashioned steam train in rural Tennessee, the train has captured the imaginations of people around the world and I’ll tell you why.
An era long gone – We’re so used to being ushered about like sheep in a stall that we want to enjoy those creature comforts that have all but disappeared. True, you won’t get white glove dining on the TGV out of Paris, but you do get some privacy, peace and quiet and civility. There’s a lot to be said for that. The train in question doesn’t have to be entirely practical either. Refurbished steam locomotives take passengers on joy rides around the world to experience the sensation of old time travel and to see the world in a new way. I was on one such scenic train ride just a few weeks ago and the train was packed, every seat sold as hundreds of people jockeyed to get on board a remnant of the past. There’s just something about the experience that compels us.
Little effort, maximum enjoyment – Train travel isn’t hard, especially when compared to flying. To fly in the modern era, travelers must arrive hours early in order to be processed, poked and prodded losing valuable time from one’s life. The actual flying experience itself isn’t all that remarkable. Compare that to train travel. You aren’t supposed to arrive early, that just clogs up the platform. It’s perfectly alright to arrive on time, a sensation that just feels wrong to modern travelers. Boarding happens fast and hopefully orderly and the actual experience itself is wonderful. In a plane you’re lucky if you get a few nice views, but on a train that’s all you have. I’ve spent hours doing nothing but looking across the landscape as the train has raced past farms and flower fields. This allows you have an experience that requires very little effort but gives a maximum level of enjoyment.
It just works – Everything, the ease of use, the pleasant journeys and the recollections of days gone by all add up to creating a travel experience that just works. I know, I know here in the United States we’ve had some issues with our commuter train system, but I’m talking about your local locomotives or long distance traveling trains. It’s amazing to me that in the 21st century, amidst all the security precautions and fear that we can still enjoy a travel experience that is efficient and a pleasure to undertake. I can only hope that it stays that way for future travelers to enjoy.

CINNAMON
Gingerbread, nutmeg, and peppermint are classic flavors during the colder months, but there’s a reason that cinnamon spice is associated with everything nice (and it isn’t just because it’s an easy rhyme). It’s just so good, and it comes with some pretty sweet health benefits too. So why limit your use to just desserts? Check out these sweet and savory ways to use cinnamon that prove it may just be the most versatile spice in your cabinet.
CINNAMON BROWN RICE
PUDDING W/ALMOND MILK
4 cups water
1 cup brown rice
4 cups almond milk
2 Tbsp sugar
2 Tbsp honey
1 Tbsp cinnamon
1 tsp nutmeg
2 Tbsp butter
1/2 cup raisins
Boil 4 cups of water and stir in brown rice. Lower to medium heat and simmer rice for 30 minutes, uncovered. Stir occasionally. Drain water and transfer rice back to its original pot. Put the lid on the pot and let steam for 10 minutes, away from the flame. After 10 minutes, transfer rice to a bowl and set aside. Bring almond milk, sugar, honey and spices to a low boil. Stir often so the milk doesn’t burn. Add the rice, butter and raisins, stir often. Simmer until milk cooks down, about 30-45 minutes.
Serve cold or at room temperature with a pinch of cinnamon on top. Add raisins to your liking.
SIMPLE CINNAMON PUMPKIN PANCAKES
3 eggs
1/2 cup pumpkin puree
1/3 cup olive oil
1 tablespoon brown sugar
1 1/2 cups almond milk (regular milk is fine too)
5 ounces plain nonfat Greek yogurt
2 cups whole wheat flour
2 tablespoons baking powder (yes, tablespoons!)
1/2 teaspoon salt
1 heaping teaspoon cinnamon
a pinch of nutmeg, cloves, and/or all spice
Whisk the eggs, pumpkin, olive oil, brown sugar, almond milk, and Greek yogurt together until smooth. Add the whole wheat flour, baking powder, salt, and spices. Stir until just combined.
Preheat a skillet or griddle to medium high heat. Pour 1/3 cup batter onto the hot griddle and let cook for 3-5 minutes until bubbles rise to the top and the edges look dry. Flip the pancakes and let cook for another 2-3 minutes. Remove and keep warm until ready to serve. Top with butter and maple syrup. Keep leftovers in the fridge for a few days or freeze them to enjoy later.
MAPLE CINNAMON CHEESECAKES WITH GINGERBREAD CRUST
For the crust
1 heaping cup pecans
6 medjool dates
1/2 tsp ginger
1/2 tsp cinnamon
For the cheesecake
2 cups raw cashews (soaked overnight)
1/2 cup maple syrup
1/2 tsp cinnamon
Juice of 1 lemon
1/3 cup coconut oil
1/2 tsp sea salt
These Maple Cinnamon Cheesecakes are vegan, gluten free and paleo.
For the crust:
Combine all the ingredients in a food processor . You will see the mixture start to get to a crumbly like consistency. Be careful not to over process or you will end up with pecan butter. Once the mixture looks done, you can press a little into the bottom of each muffin cup. I used standard sized pans . Place them in the fridge while you make the cheesecake part.
For the cheesecake:
Make sure your cashews have been soaking overnight. Drain and rinse them. Place them in a food processor with all the other cheesecake ingredients. Mix until everything is smooth.
Spoon a little of the cheesecake mixture into each muffin cup. Once that is done, place them in the fridge to firm up. It can take up to 12 hours for the cheesecakes to get fully firm.
CINNAMON SWEET POTATO AND CARROT SOUP
2 cups sweet potatoes, chopped
1/2 cup onion, chopped
1/4 cup coconut oil
1 teaspoon cinnamon
2 cups carrots, chopped
1 1/2 cups warm water
1/4 teaspoon EACH ground cloves, nutmeg, and allspice
Steam sweet potatoes and carrots. Combine with water in a blender. Blend until smooth. Add onion, coconut oil, and spices, blending until well mixed. Reheat in saucepan on low, if desired, or serve cold.

Provided by Independent Pampered Chef Consultant Cajun GrahamBaking is popular come the holiday season, when baked goods are often gifted or shared with family and friends at holiday gatherings. Individuals turn out sweet treats left and right, and these treats are often gobbled up by appreciative holiday revelers.
Although some people have mastered baked goods, others can benefit from a few tricks of the trade. Utilize these tips to make holiday baking that much easier.
* Overworked cookie dough may result in dry cookies. Try not to handle dough more than is necessary to roll it out to desired thickness. When rolling the dough, put it between two pieces of waxed paper to reduce flour usage on the rolling pin.
* When baking brownies or other bar-type cookies, line the inside of the pan with greased aluminum foil. This way you can lift out the dessert and cut it neatly instead of risking sticking.
* The same technique can be used when baking cookies. Line cookie sheets with parchment paper and bake as directed. The cookies should slide right off when done, and you won't have messy pans to wash afterward.
* Double-check your oven temperature with a reliable thermometer to make sure it is accurate. This will help you bake more efficiently and adjust the time or temperature accordingly.
* Many cookie doughs can be refrigerated or even frozen, so you can make a big batch and then spread out your baking as needed throughout the season.
