Moshi, Tanzania, like many cities, is home to a red-light district where women and children fall prey every day to sex trade industry. Having been likened to modern day slavery, its victims are dehumanized; no longer regarded as persons they are treated as objects to be bought and sold, forced into prostitution, and subjected to extreme violence.

In developing countries such as Tanzania, women especially get trapped in this vicious cycle often as a last resort in attempts to make a better life for themselves and their children. Once involved, to return “home” is no longer a place of safety and it doesn’t take long for women trapped in this industry to lose all self-worth. For such women, dreams of ever being free, of having a career or a normal life, are hopeless and fleeting.

But there is HOPE...

Vince and Vicki Welch, directors and founders of Project Watu Kamili, inc/ The Binti Project, in partnership with local churches and Tanzanian nationals provide a home to live in and established a place of safety and refuge for women and their children who want to leave the sex trade industry. These women are desperate for a way out. The Binti Project offers what seems out of reach for women in this industry: a new beginning and a place to call home.

We are a house of hope.

By providing food, water, shelter, clothing, medical care and job training, The Binti Project offers these women the basic necessities of a “normal life” we so often take for granted, while reminding them of their dignity as persons.

The program is different depending on the woman; however, it usually spans around two years, sometimes longer. Included in this timeframe is a period of six months to a year of close mentorship for ladies who are starting up new businesses.

There are two main components of the Binti Project: street ministry and a residential program.

Street ministry is what it alludes: evangelism, outreach, prayer, healing and building relationships.

While our residential program provides women, and their children, a new home and fresh start, as mentioned before. This program also provides school fees,

uniforms, school supplies, and medical care for the children.

While in the program, women are taught the fundamentals to run a business. They learn how to create things like beautiful

jewelry, clothing and quilts. These women are also taught how to keep a business running so they can eventually provide for themselves and their children.

The Binti Project founded by Project Watu Kamili has been serving Moshi, Tanzania for nearly a decade.

Eventually it will reach other countries in Africa and, hopefully one day, beyond.

The Spotlight page in this edition features a group of people very dear to my heart. In 2019 I was blessed with the opportunity to go to Moshi, Tanzania. What started as fulfilling a promise to the woman I was named after, turned into something unforgettable and unbelievable. I never imagined the impact this trip would have on my life.

Don’t get me wrong, I have always been one for the next adventure. Growing up, my mom always teased that my middle name was “GO,” but the people I met on this adventure made a profound impression on me that I simply wasn’t prepared for.

The charity featured in this issue, The Binti Project, is incredibly important for the survival of women and young girls in Tanzania. If you weren’t aware, the rate of sex trafficking and slavery there is at an alarming rate.

As you read their story, and the little bit of information on the couple that started it all, I hope you are moved. Not for the sake of giving, but for the sake of remembering them. Remember them when you feel like you are having a bad day. Remember them when you are having a good day. Just remember them, think about them and if you pray, please pray for them.

Life is hard there! As I found out first hand, we have no clue as Americans just what others go through outside of this country.

There’s a significant emphasis on personal growth and transformation every New Year, thanks to the ever-popular “New year, New me” mantra. In addition to leveling up yourself, you may want to hit the refresh button on your home. Of course, there are always tons of fancy furniture and home decor online and in-store. Display a DIY Vision Board

For the ultimate motivation, create a vision board—a collage of images that showcases all of your dreams, desires, and goals. Choose any images that inspire you and help you visualize and attract the future you want. These can be anything from outfit inspos, to luxury apartment interiors, to exotic locations you’d like to visit someday. As long as the photos motivate you to work towards your ideal self, you’re doing it right.

Or, if you don’t have a yard, take a walk in the woods. As home and DIY Instagrammer Sourya Venumbaka suggests, “A great no-cost way to refresh your home is by foraging! Go for a nature walk, clip some greenery (not from private properties of course), and stick them in vases you already own to add some life to your space.” Even things as small as pinecones look beautiful displayed in fun bowls on the coffee table. Like the vision board idea? Use a tree limb with the clip curtain rings to hang your visions from.

Everyone has a different relationship to organization. For some it comes naturally and is even an ongoing process. However, for most people, it’s a chore or a challenge you keep telling yourself you’ll get to when you have the time. Getting your home organized can do more than just improve the feel of your space–it can save you money. Here experts weigh in with nine tips for organizing your home and saving money in the process.

Organize Your Pantry and Kitchen

A common area for waste is in the kitchen, says Sarah Jameson, Marketing Director for Green Building Elements. “You may help prevent some of this waste by organizing your kitchen, especially your refrigerator and pantry.” She suggests making everything visible and accessible, whether through clear bins or labels, so you know what you have. As a result, you don’t overbuy and are less inclined to let food expire. “Any money you save on groceries helps you stretch your monthly budget,” adds Susan Smith, Manager at Velden Engineering. “Keep track of product expiration dates and make meal preparations appropriately.”

Buy Organizers in Neutral Colors

If you’re going to invest in organizing items such as bins, shelving, racks, do so in neutral colors, says cleaning and organizing expert, and owner of Practical Perfection, Michelle Hansen. “Teal might be your favorite color as of now, but realistically, design styles change over time. If you buy organizers in bright colors, you’ll most likely need to buy new organizers down the road when you want to change the look of your space. Neutrals eliminate that extra expense.”

Once you begin to declutter, you’ll have a number of things that can be donated to places such as The Goodwill or Salvation Army, where you can receive a tax deduction for your donations, says professional home organizer, Amy Bloomer, Founder of Let Your Space BLOOM, LLC. Donating can be more effective even than selling, Bloom says. “Generally speaking, most of my clients find the opportunity cost of time involved in selling items outweighs the amount they might get from the sale. Donations are usually the least time consuming and most economical.”

If you do have the time and energy to sell items you’d like to get rid of, this can obviously make you money, says Lailani Gachalian, a professional home organizer and Owner of Joy & Bliss Organization. “As you declutter, you will decide which items are best discarded, donated, and worth the time to sell. Remember the goal is to get rid of your unwanted items as quickly as possible. If you want to try to sell everything, [then] a yard sale is the fastest way to make money and declutter…”

Once Organized, Stay Organized

If you’ve gotten yourself organized, try to stay organized, says Aya Bradley, home design, indoor plant and DIY Editor at The Golden. “Staying organized is a great mental motivator…a clutter-free home makes you feel a lot better. By this process, you won’t be making purchases as you used to, which will help you save a lot of money.”

Benjamin Moore Director of Color Marketing Andrea Magno admits that October Mist “doesn’t scream green.” However, much like the stem of a flower, this grayish shade blends in effortlessly while creating an opportunity for other dazzling colors to flourish.

Glidden advocated for a festive and appetizing shade of green for 2022. Whether in your kitchen-looks great against a white subway tile backsplash-or other areas in your home, it’s certainly a conversation starter best discussed over a bowl of chips.

Fitting for a year where forecasters latched onto the idea of brighter days ahead, Dulux’s Bright Skies is an airy, open tone that can reinvigorate any room through the sense of freedom and possibility it offers. Honored as the brand’s color of the year by a team of international color and design experts, Bright Skies is a fun, yet functional, option that pushes the boundaries of a neutral without flying too close to the sun.

A silvery green suitable for everything from beachside vibes to modern, contemporary settings, Behr’s Breezeway “inspires us to fully embrace the hobbies or adventures, both near and far, that excite us,” says Erika Woeful, the company’s Vice President of Color and Creative Services. Breezeway functions as an intriguing and perfectly viable neutral for those ready to brighten a space by bringing the outdoors in.

Not content to let earthier greens and browns have all the fun, Graham & Brown’s Breathe showed that the idea of connection to nature can draw inspiration from the sky as well. Fitting for a brand pushing to achieve carbon neutrality in 2022, the pale and powdery blue of Breathe also nods to wellness and sustainability. This shade works remarkably well when paired with Restore Midnight, Graham and Brown’s deep blue, naturally-inspired wallpaper of the year.

Last, but certainly not least, industry leader Pantone announced its color of the year for 2022 in early December. The selection is a perfectly purple blue shade of periwinkle.

“For those who are gun-shy about using too much color and taking that first step, it’s a great color to use maybe just on one wall instead of all four walls,” says Leatrice Eiseman, Executive Director of the Pantone Color Institute, and it’s decidedly different from any pale or olive green.

Very Peri is Very Now!

Described by Pantone as the "happiest and warmest of all the blue hues," the 2022 Color of the Year is called "Very Peri," a "dynamic periwinkle blue hue with a vivifying violet-red undertone," according to the press release. It combines the faithfulness of blue with the energy and excitement of red. Pantone goes on to explain that Very Peri "helps us to embrace this altered landscape of possibilities," allowing us to "rewrite our lives" as we emerge from isolation.

I Used to be Fat

As I have researched and applied over the past decade what getting healthy looks like, the image of “Healthy” has taken on a whole new look. Focus has been lost actually achieving a healthy lifestyle in fear of hurting others feelings.

I am all for teaching someone to have a good self image, but mental image and having a healthy body is not the same thing.

I have struggled with weight and being healthy for the majority of my life. Like most, I thought being healthy and being happy with the way I looked were the same thing. The truth is you can feel uncomfortable in you skin no matter what size you are. I did not have a clue as to how unhealthy I was, and my weight did effect my mental attitude. This is a battle most all of us face no matter if your are male or female.

I fear we are now going in just as a dangerous direction by calling obesity “healthy.”

CELEBRATING THE ANNIVERSARY OF THE WORLD’S FAIR

In 1982, more than 11 million people came to Knoxville to experience the hospitality of East Tennessee and cultures from around the world. The 1982 World’s Fair, formally known as the Knoxville International Energy Exposition, ran May 1 through October 31 under the theme “Energy Turns Our World” and would become recognized as the last successful World’s Fair held in America.

More than 50 private organizations and companies took part in the Fair. Participating nations included Australia, Belgium, Canada, China, Denmark, Egypt, France, Greece, Hungary, Italy, Japan, Luxembourg, Mexico, the Netherlands, Peru, the Philippines, Saudi Arabia, South Korea, the United Kingdom, the United States, and West Germany.

The Amphitheater and Sunsphere, still standing on site today, hosted all official ceremonies and entertainment, including Broadway shows, world-renowned orchestras, ballet and opera companies. The list of entertainers and performers included Johnny and June Carter Cash, Japan’s acclaimed Grand Kabuki, Rudolf Nureyev, Red Skelton, Richie Havens, The London Symphony, and Bob Hope.

Today, Knoxville still draws visitors with history, music, food, culture and festivals that reflect many of the countries represented here years ago. We look forward to the reopening of the Observation deck to the public on February 22nd, 2022.

Ahhh...what better way to spend a cold winter’s day than with thoughts of the Bahamas! This incredibly beautiful island offers thrilling scuba diving experiences and plenty of things to do between dives.

Shark Junction

The Bahamas is known for shark diving, and the original shark encounter is this feeding dive with UNEXSO at a site called Shark Junction. Watch scores of Caribbean reef sharks swirl around you in about 40 feet of water as chain-mail-clad feeders lure the predators with snacks.

Fish Fry at Outriggers Smith’s Point

Calypso and soca music fill the air every Wednesday evening at the weekly alfresco fish fry organized by the Outriggers Beach Club at Smith’s Point Beach. Bring your post-dive appetite to feast on Bahamian favorites such as peas and rice, broiled lobster, baked macand-cheese and grilled conch.

Tiger Beach

For an even bigger rush, visit Tiger Beach — one of the only places in the world with dedicated tiger shark dives. You’ll be armed with a safety bar to settle in on the sandy bottom (at about 30 feet) among the striped beauties, some up to 12 feet long. Hammerheads and lemon sharks often show up for the party too.

Lucayan National Park

The island’s topside beauty stars during 90-minute kayaking tours with Grand Bahama Nature Tours in the stunning Lucayan National Park, home to one of the largest underwater-cave systems in the world. You’ll stop to explore a cavern that’s home to two of the island’s famous inland blue holes.

The sweet treats on this wreck include clouds of curious gobies, angelfish, schooling snapper, wrasse, grunts and parrotfish. This sailing ship grounded and sank in just 20 feet of water while transporting a load of sugar.

Fish Fry at Outriggers Smith’s Point

Edge of the Ledge

Ogle the continental shelf where it drops off into the blue at this dive site in about 100 feet of water. While finning your way along the ledge, you might spot eagle rays, mantas and hammerheads.

Ray of Hope

The Ray of Hope is a 200-foot long Haitian freighter that was sunk as an artificial reef in 2003. She is fully intact, allowing divers to penetrate her interior, cabins, and gangways. Sitting in just 40-60 feet of water, this is the perfect dive for all levels of divers. Living in and around the wreck are nurse and reef sharks, possible eagle rays, turtles, and lots of fish: snapper, angelfish, grunts, anemones, and grouper.

Ben’s Cave

A dive into this otherworldly cavern — found in a Lucayan National Park blue hole — offers a view into how the Bahamas looked long before any cruise ships called in. Follow your dive guide down through the halocline to see ancient stalactites and stalagmites and fossilized shells in the cave’s trapped-in-time maw.

Gold Rock Beach

In an archipelago known for beautiful beaches, this sublime strip of sand across from the Lucayan caverns is near the top of the Bahamian beach heap. Stroll nature trails and boardwalks that lead to the turquoise water.

Breaking down while driving can be unnerving, potentially delaying trips and stranding motorists, and their passengers, for lengthy periods of time. However, for those with well-equipped emergency preparedness kits in their vehicle’s trunks, breakdowns can be much easier to manage.

Even though new vehicles are loaded with advanced technology, drivers are no less likely to avoid breakdowns. In fact, roadside calls for stranded vehicles are on the rise. A study by the American Automobile Association in 2019 found that 38 million drivers required the organization’s services, with issues regarding vehicle batteries, flat tires and vehicle keys reaching all-time highs.

* Sustenance: It’s impossible to determine how long you may be stranded if your vehicle breaks down. Therefore, keep some highcalorie energy or protein bars, or other portable foods with a long shelf lives, in your vehicle at all times.

* Water: Popular Mechanics says a person needs roughly a gallon per day to stay hydrated. If that’s too much to pack, bring empty water bottles and purification tablets. Otherwise, stock up on bottled water.

What’s Healthy, Delicious and Makes You Feel Warm All Over?

Veggie Spaghetti, that’s what! Think of this as a versatile vegetarian pasta recipe that works wonders with a variety of vegetables so you can use whatever you have in the fridge. I like to think of this as a great way to use up any veggie scraps left in the produce drawer.

Let’s see who the stars of the show are:

Pasta — Any shape of pasta will do and you can swap in your favorite gluten-free or whole grain pasta if you’d like to.

Vegetables — The type of veggies are up to you, but we love zucchini, yellow squash, jarred roasted red peppers, leafy greens, peas, corn, and cabbage. Options are endless, here.

Onion, garlic, and tomato paste — These provide a base flavor for the simple sauce.

Canned whole tomatoes — You can use diced or crushed tomatoes, but we love the texture of whole tomatoes for this recipe. Just after adding them to the pot, we crush them a little with a spoon so they fall apart into a chunky sauce. You can also use blanched, peeled fresh tomatoes.

Herbs and spices — When we have it in the kitchen, we add fresh basil. Other herbs work, too (parsley and mint add a different flavor, but are excellent). Dried herbs like oregano, crushed red pepper flakes also make the sauce delicious.

Mushroom powder — Okay, now this one is optional, but for the best, most flavorful vegetarian pasta, we highly recommend using mushroom powder. It adds a rich umami flavor to the sauce and is our secret weapon when making meatless recipes. You can make it yourself or buy it. Trader Joe’s has even started to sell their own version.

Making Veggie Pasta From Scratch

Here are the basic steps you’ll need to follow:

Soften chopped onions in olive oil over medium heat.

Stir in garlic, spices, and tomato paste.

Throw in your vegetables and cook until tender.

Add canned whole tomatoes and break them up a bit with a spoon. You want the sauce to be chunky.

Season and then simmer the sauce until it’s reduced slightly — somewhere between 10 and 15 minutes.

While the sauce simmers, cook your pasta.

Toss the pasta with the sauce and serve.

I love serving the spaghetti with a generous amount of parmesan cheese, but if you are vegan, try sprinkling a bit of nutritional yeast on top instead.

YOU WILL NEED

12 ounces spaghetti or pasta of choice

4 tablespoons olive oil

1 cup (140 grams) chopped onion

2 medium zucchini, chopped (1/2 pound)

2 medium yellow squash, chopped (1/2 pound)

3 garlic cloves, minced (1 tablespoon)

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes

2 tablespoons tomato paste

1 (28-ounce) can whole peeled tomatoes

One (12-ounce) jar roasted red peppers, drained and cut into 1/2-inch pieces (1 heaping cup)

2 to 3 teaspoons mushroom powder, optional, see notes

5 cups (1/2 pound) spinach leaves

Handful fresh basil leaves, plus more for garnish

Salt and fresh ground black pepper

Parmesan cheese or nutritional yeast for serving

DIRECTIONS

MAKE SAUCE

Heat olive oil in a wide skillet with sides over medium heat. Add onion and cook, stirring occasionally until translucent; 3 to 5 minutes.

Add zucchini, yellow squash, garlic, oregano, red pepper flakes, and a generous pinch of salt then cook, stirring occasionally until softened but still with some crunch; 5 to 8 minutes. Stir in the tomato paste and cook another minute. (When making this sauce, we usually end up using between 1 and 1 1/2 teaspoons of fine sea salt.)

Add the roasted red peppers, tomatoes, and mushroom powder. Bring to a low simmer and cook until the liquid has thickened and reduced by half; about 10 minutes. As the sauce cooks, use a spoon to break up the whole tomatoes into smaller pieces for a chunky sauce.

COOK PASTA

While the sauce simmers, bring a large pot of salted water to the boil then cook pasta according to package directions.

TO FINISH

Take the sauce off of the heat, and then stir in the spinach and basil. Taste then adjust with additional salt if needed. Toss in the cooked pasta, and then leave for a minute so that the pasta absorbs some of the sauce and the spinach wilts. Toss again, and then serve with parmesan or nutritional yeast sprinkled on top.

TIPS: Mushroom Powder: You can buy it online or make it yourself. Start with dried mushrooms — any type of mushroom will work. We particularly love dried porcini. They are sold in large or specialty grocery stores, or you can buy online. Throw the dried mushrooms into a blender and blend until ground. Store in a spice jar and use to your heart’s content. Alternatives to mushroom powder: Mushroom powder adds a rich umami flavor to the sauce. If you do not have any and the pasta sauce seems like it needs a little extra “something, something,” try a dash of soy sauce. If you are open to it, fish sauce is also an excellent flavor enhancer. You can also chop mushrooms and add them to the pan along with the onions.

What better drink to cut the carb load of the spaghetti dish than with this cocktail. The Hugo cocktail is a bubbly Italian spritz made with elderflower liqueur and Prosecco! It’s the perfect refreshing drink.

This cocktail might be the literal definition of refreshing. If you love bubbly spritzes, run don’t walk to try the Hugo cocktail! This Italian cocktail is a spin-off on the Aperol spritz and even better, in our opinion. It’s made with delicate floral elderflower liqueur and bubbly Prosecco, which compliment each other perfectly. The bubbly combination transports you right to Northern Italy, where this cocktail was born and is popular to this day. Here’s more about its history and how to make this beautiful drink!

What’s a Hugo cocktail?

The Hugo cocktail is a spritz cocktail made with Prosecco, elderflower syrup and soda water. The drink was invented in 2005 by Roland Gruber in Northern Italy (the South Tyrol region just south of Austria). He created the drink as an alternative to the classic Aperol spritz, and it quickly spread across the country and into Europe. After giving it a taste, we can see why! The Hugo is light and floral, accented with the delicate bubbles of Prosecco. Where its cousin, the Aperol spritz, is sweet and citrusy. This spin is more refined and even more refreshing.

We made one edit to the ingredient list for the Hugo cocktail. It’s easy to find elderflower syrup in Europe. But here in the US, it’s easier to get your hands on a bottle of St Germain, which is elderflower liqueur. So it’s a natural substitute!

Here’s what you’ll need to make a Hugo cocktail:

St Germain Elderflower Liqueur

Prosecco or other sparkling wine

Soda water

Fresh mint

What is St Germain?

The key to this Hugo spritz cocktail is the elderflower liqueur, which infuses a delicate floral flavor throughout the drink. St Germain is a liqueur that’s made with elderflowers, the small white flowers of an elderberry plant. The flavor is light, sweetly floral, and fragrant.

How do you say St Germain? The name is French, so say “Sahn-jer-MAHN” with your best French accent. Fun fact: it’s relatively new to the scene. Get this: St Germain was invented in 2007! The vintage-looking bottle makes it seem like it has hundreds of years of history. But a guy named Rob invented it in 2007.

Just like the substitution of Elderflower liquer, you can substitute the Prosecco as well. Prosecco is the Italian version of champagne, but you can use any type of sparkling wine you like! Make sure it is “Brut,” which means it is dry.

1 ounces (2 tablespoons) St Germain liqueur (chilled if possible)

The Hugo cocktail is so easy to make: you don’t even have to dirty a cocktail shaker! The spritz family of drinks is fantastic because you simply pour the ingredients into a glass. Here are the basic steps (or skip to the recipe):

The Woods Are Still Lovely, Dark and Deep,

NASHVILLE — It was 78 degrees here on New Year’s Day, a record high for Nashville, and I broke into a sweat just packing for a weekend on the Cumberland Plateau. “Did you remember to bring your coat?” my husband asked when I got into the car.

It was not an unreasonable question, despite the heat. I hadn’t packed my coat when we left for the Cumberland Plateau last month. It was warm that day, too. In fact, it had been so warm for so long that the cherry laurels were already in bud. Who thinks to pack a coat when cherry laurels are in bud?

But the next day the temperature dropped to 45, and there I was, stranded in the woods with no coat nor even so much as a sweater. Apparently, this is how winter works now. Daffodils out of the ground, Lenten roses in full bloom two months out of time, and then wham.

I remembered my coat at New Year’s, which is fortunate because the following day brought a winter storm. Snow billowed across the Southeast and up the Atlantic seaboard — an inch or two at home, more than four at the cabin where we were staying. That night, we lay in bed and listened to the wind howling up from Lost Cove, so loud that it drowned out even the coyotes’ howls. Between gusts, we could hear the bare trees creaking as they swayed.

Two days later, the roads were clear enough for us to head home, barely in time to grab a smushed loaf of bread from the picked-over grocery shelves before another winter storm blew in. For an entire day, sunup to sundown, snow poured out of the sky. It snowed and snowed and snowed. On Twitter, Nashville Severe Weather warned that snow was accumulating “faster than the time they dumped all those pay scooters downtown.”

All told, we got 6.3 inches, another daily record. Extremes are our norm now.

Wherever you live, there are plenty of reasons to regard a winter storm with trepidation. Much of the danger hits entirely at random: power failures, downed trees, traffic snarls and hideous wrecks. As always, our most vulnerable — the unhoused and the working poor, those who live so close to the edge that missing a few days of work would mean financial ruin — are hit the hardest of all.

Though the science is not yet settled, a new study suggests that climate change is making these storms more common.

Nevertheless, snow has always been a feature of winter — even, from time to time, in the Deep South — so it comes as something of a relief when winter starts to look like winter again. After last month’s devastating tornadoes, normally a springtime danger, the pure glory of snow in this heat-benighted place is hard to convey. The first thing you notice after the wind dies down is the peace of snow, the hush of it, the way it slows everything to a human pace. All the machines have fallen silent, the backhoes and the chain saws and the leaf blowers. Stoplights wink red and yellow and green in the clotted, snowblown air, and the roads are silent but for your own muffled footfall. Even the songbirds have ceased their singing. They need all their energy to keep warm.

Later, when it clears, children sled right down the middle of streets where adults habitually drive too fast on snow-bereft days. The kids squeal with the joy of speed and sanctioned transgression, but no one is so happy as the galloping neighborhood retrievers, their eyes alight, their shaken coats scattering diamonds in the frozen air.

Even so, snow conveys no beauty in cities or suburbs that comes even close to the magic it performs in a forest, coating every tree, every discrete branch and twig, turning the woods into a wonderland. The trunks of trees turn blacker in the wet, while the ground around them turns white, then whiter still. It’s a black-and-white landscape now, a scene from a movie made in another age.

The whole world is clean, bathed in brightness. You can tell which way the storm came in by which side of the standing trees is also white, but you

see where the path dips or is tricked with fallen branches hidden in the whiteness. Watch your step, especially near the edges of ponds — the snow gathers so densely there that it’s impossible to see where the mud ends and the water begins.

One of the great gifts of snow in a forest is the chance to study animal tracks, to see where one deer peeled away from the group and then returned, to see where the group itself started out in one direction and then shifted to another. Animals change their minds! It is a magnificent, vibrant reminder that our wild sisters and brothers are every bit as individual as we are.

But as a metaphor for clarity and cleanness, snow inevitably falls short. Everything that lies beneath its sheltering blanket — the scarred land, the trash our species always leaves behind — is still there. The snow is only a temporary respite.

But for a moment, sometimes a few days, the woods are yet “lovely, dark and deep,” as Robert Frost so famously put it in “Stopping by Woods on a Snowy Evening.” We have promises to keep of our own — to the natural world, to our own very future — and they are as urgent as any in human history.

In the midst of so much turmoil, it is easy to forget what the snow tells us to do. Its hush, its clarity, above all its wonder — they remind us to stop and listen to the sweep “of easy wind and downy flake.” To stop and watch the “woods fill up with snow.”

To stop.

GLAMPING

Glamping. It’s camping for those used to luxury hotels, or the majority of Americans who simply don’t own camping gear. It’s always in the great outdoors and almost always in the most coveted and beautiful natural destinations. You have your own private space, plus resort-like amenities, lots of activities, and when it comes to food, in most cases, you can order it or you cook it.

So...what is glamping? A combination of “glamorous” and “camping,” and it is definitely not a new concept. However, it is newer in this country. The model has long been used by top tier safari lodges in Africa, some of which have “tents” that outshine the Presidential suite at your local hotel. Most typically they are enormous canvas structures parked on permanent platforms with running water and often the kind of bathroom you’d expect at 4 or 5-Star hotel. They are basically houses that happen to be made of canvas, and most have fine linens, porches, firepits and often rustic touches.

Other variations on the paradigm include yurts, the round Mongolian-style tents that are usually very large single rooms, cabins, fully featured “tiny houses” and oddities like fancy treehouses.

Where to glamp depends on where you are. There are small glamping-only spots and some glamping compounds within larger resorts or campgrounds, but in every case they combine not exactly roughing it with a camping ambiance that is accessible and enjoyable to even the most inexperienced outdoor person. Most are also pet friendly! Glamping has proliferated in recent years and is all over the country, but there are a couple of really notable, standout brand new examples this year, just as glamping is seeing a great increase in demand.

When temperatures begin to hit the 40s and below, the last thing I would normally think of is hiking! I mean who in their right mind would leave their warm home (or cozy yurt) in search of possible frost bite? Winter brings a completely different look to the mountains, and let’s face it, no matter the season, East Tennessee has no shortage of beautiful trails. Frozen Head State Park – Wartburg: Explore 24,000 acres of wilderness made of hiking, biking and horse riding trails at Frozen Head State Park.
