You have probably seen these cute vintage Econolines around town sporting an abundance of beautiful flowers and bouquets for purchase from Flourish Flowers. This business is all about sharing the joy and beauty of fresh flowers throughout our city.
Clamity struck a few weeks ago and one of their mobile flower trucks (a Knoxville staple, thanks to you all) spontaneously caught on fire while one of their employees were on the interstate on their way to one of Flourish’s regular pop-ups. Thankfully no one was harmed, but their truck was completely destroyed. This cute little 1961 Ford Econoline was the foundation of their business.
Savannah Pannell started business from a really tough place in her life. “It seemed there were a lot more hard days than good days. This season of life challenged me to create something that could be used as a tangible glimpse of hope, love, and kindness in anyone’s situation. I think flowers are able to do just that. The heart behind Flourish is to create opportunities for people to love themselves and those around them well! I believe we are made to enter into the lives of those around us, and with the gift of flowers we can both celebrate and grieve with others.” But to continue making this vision a reality, that means replacing our lost truck as quickly as possible.
Why do they need you?
Due to the age of the vehicle their insurance isn’t going to be paying much to help with these losses. “To be completely transparent, we put over $28K into this truck and we lost it all. A short list - truck, automatic engine we converted last year, a custom table, custom metal frame/canopy, a whole load of flowers and all of their buckets, our POS system, cash box/cash, merchandise, you name it - it was destroyed. Insurance plans to give us about $6K in compensation, which doesn’t even cover the income we are losing while not being able to be out as planned.” All funds reeived will go toward the cost of a new truck, a custom canopy, the truck wrap, and all of the equipment they lost.
As luck would have, Savannah found a new truck very quickly after the fire. “Finding an automatic Econoline in good shape is almost unheard of, especially anywhere near the east coast. We reached out to the Econoline community and told them our story and a man responded that he had one in Indiana that wasn’t for sell but he was willing to talk about it with us. His grandfather had many vintage
cars and had passed away last fall. They were deciding which ones to keep and which to sell and he felt like his grandfather would want his car to go to something like our business and said it made it have meaning in such a hard time for their family. We knew this new truck was meant for us - we took a leap of faith before knowing what insurance would say. We have worked really hard over the past 5 years to create a stable, year round work environment for our team and this set back has been a difficult one for our business. Taking a toll on our resources, our people, and our finances as we figure out what recovery looks like.”

Turning 50 may seem to be a lot of years for a business but is short when looking back on your life.
As Buddy’s Bar B Q celebrates turning 50 this year, so do I. It honestly doesn’t seem possible that I am 50 years old. I still feel like a kid just beginning to embark on my future, granted my physical body reminds me that I am no longer in my youth.
It is true, you have a greater appreciation of life as you age. It’s easier to laugh at yourself, it’s easier to laugh at others and it’s easier to take life less seriously. Your perspective changes on what is truly important and you care less about seeking others approval.
Turning fifty is a milestone in anyone’s life. It’s a sign of getting older, becoming wiser. I am not sure if I would say that I am wiser however I do have greater discernment than in my youth,

You can budget out your home build based on how many rooms you and your family will need. It will also help you figure out a floor plan and how many bedrooms and bathrooms your custom home will have depending on the budget for your project.
The cost of building a traditional
home in Tennessee is between $120 and $155 per square foot and steadily rising.
This will include things like materials and basic assembly to get your home built and ready to be decorated and customized. This does not include things like custom cabinets or appliances.

What’s Your Hair Health?
When it comes to optimal hair health, you are what you eat. After all, the scalp is home to around 100,000 hair follicles that need the right nutrients in the right amounts to thrive. Ahead, we share which vitamins you may want to add to your diet if you aren’t already consuming them.
Hair health can be subjective, whether it’s silky-smooth locks or bouncy, curly tresses. That said, many of us can probably agree healthy hair is free of frizz, split ends, and brittleness. But how do you go about achieving that?
Spoiler alert: it’s not only topical hair products you need to invest in. The other contributing factor to healthier hair lies in your diet. If you want your mane to look and feel its best, find out which vitamins (and other micronutrients) are known to be good for hair — and which ones still need more scientific data to solidify their hair-beneficial effects.
1. Vitamin A
Vitamin A is one of the essential nutrients that everyone needs so that hair grows strong and healthy. If you need scientific proof, mouse and rat models show that this antioxidant stimulates the hair follicle stem cells. Still, you don’t want to overdo it with vitamin A as consuming too much is linked to hair loss. Remember, moderation is key.
2. Vitamin B2 (Riboflavin)
Vitamin B2 (aka riboflavin) is another hair vitamin you’ll want to take notes on. Because this antioxidant is needed for cell development, fat metabolism, and energy production, low levels of riboflavin are known to trigger hair loss. It’s recommended to eat more riboflavin-rich foods like spinach and fatty fish (such as salmon and mackerel) or consider a B vitamin supplement that contains vitamin B2.
3. Vitamin B7 (Biotin)
Because vitamin B7 (biotin) deficiency is linked to hair loss, make sure to get enough of this micronutrient in your meals. A 2017 systematic review in the Journal of Skin Appendage Disorders highlighted that supplementing with biotin may help with poor hair growth and brittle nails. Still, the review consisted of only 18 case reports solely focused on individuals with biotin deficiency and hair loss. As such, more studies are needed to confirm the general efficacy of biotin as a vitamin for healthy individuals.

4. Vitamin B9 (Folate or Folic Acid)
Vitamin B9 exists in two forms: folate (natural) and folic acid (synthetic). Whichever form it takes, the jury is still out on whether vitamin B9 makes any difference to your mane.
Some research shows there’s no difference in zinc, vitamin B9, and vitamin B12 levels in people with or without hair loss. Yet, other data points to folate deficiency in women with hair loss conditions like female pattern baldness.
While science still needs time to make up its mind on this vitamin for hair health, you want to consume enough vitamin B9 daily for overall well-being.
5. Vitamin C
You’ve probably heard that vitamin C is vital to healthy hair growth, given how it cracks down on free radical damage.
One study even showed that a hair growth supplement containing vitamin C significantly boosted hair regrowth in women with thinning hair over time. However, it should be noted that said supplement also consisted of other ingredients such as horsetailderived silica. For that reason, the improvements in hair volume cannot be solely credited to vitamin C alone, although it won’t hurt to get enough of this antioxidant in your diet.
6. Vitamin D
Vitamin D deficiency is linked to various hair loss conditions like female pattern baldness and alopecia areata (an autoimmune condition). Even if you don’t have one of these conditions, it’s wise to meet your daily vitamin D intake. In vitro studies have discovered that vitamin D levels increase in the keratinocytes (cells that produce the hair protein keratin) during the growth phase of the hair cycle.
7. Vitamin E
If you’re currently experiencing thinning hair, vitamin E may be worth a try as it tackles free radical damage and oxidative stress.
A small-scale2010 study discovered that taking 100 milligrams of vitamin E supplements every day for eight months boosted hair growth by 34.5% compared to the placebo group. While large-scale clinical trials are needed, vitamin E supplementation seems like a potentially promising hair loss treatment.
8. Collagen
According to science, collagen may be worth a try in the name of healthier hair. After all, collagen is chock full of hair-healthy amino acids that may aid in keratin production.
To illustrate collagen’s potential effect on tresses, a small study of women with thinning hair took a nutraceutical supplement that contained collagen (among other active ingredients). The test subjects saw a rise in hair volume, thickness, and overall quality, suggesting that collagen may be what your locks need to thrive.
9. Essential Fatty Acids
Did you know essential fatty acids like omega-3 fats are vital to optimal hair health? These fatty acids help regulate androgen synthesis, a male sex hormone linked to hair loss. And yes, the
female body produces androgen, just in smaller quantities than our male counterparts. One way to get more healthy fats in your diet is to consume whole foods like fatty fish and avocados. Alternatively, some people prefer supplements such as cod liver oil and fish oil soft gels.
10. Iron
As iron deficiency (with or without anemia) is commonly associated with thinned-out tresses, this is one micronutrient you don’t want to miss out on.
But how does iron benefit your mane? Well, this essential mineral is indispensable to hemoglobin production, the protein that allows red blood cells to carry oxygen to the hair follicles.
That said, a 2010 medical review offers mixed perspectives. There’s some research suggesting hair thinning as a result of iron deficiency benefited from iron supplementation, while other studies suggested otherwise. This might be another case of YMMV (your mileage may vary) when it comes to iron for hair health.
11. Selenium
Not getting enough selenium in your diet has been attributed to increased hair shedding. Case in point: A small study involving six babies explained that after correcting for selenium deficiency, their symptoms improved. While more scientific data is needed to reaffirm this finding for adults, consuming enough seleniumrich foods helps to maintain a healthy thyroid and other vital functions.
COLLAGEN TYPES – WHAT’S UP WITH THEM?
“What type of collagen does my body need the most?”
This is probably one of the most popular questions and with good reason too, consumers interested in the health and wellness space are becoming:
• Highly educated on the quality of the products they choose to put in their body.
• Are looking long-term and into the future, from a longevity perspective more nowadays.
They have good reason to be, the health and wellness industry is becoming more and more crowded with more ‘marketing’ brands out there jumping on the back of trends all just to make a quick buck. WHAT IS COLLAGEN?
Collagen is the most abundant protein in the body and is a major insoluble fibrous protein in the matrix of all of our connective tissue structures in the body. At current, there are 16 known types of collagen present in the body, however, percentage-wise 80-90% of all of our bodies collagen is made up of the three main types and are types I, II, and III.
The formation of these types of collagen with the exclusion of type IV looks like the structure of a springy triple helix strand designed to help our tissues withstand the stretching force put on them day-to-day. The triple helix structure that comprises collagen protein is developed from three main corresponding amino acids:
• Glycine
• Proline
• Hydroxyproline
Of course, helpful cofactors from our micronutrients in our diets like that of copper and vitamin C help in the assembly and cross-linking of new collagen to existing collagen fibrils. So, in an overview, collagen is our essential element for movement –from the fascia that encases our muscles to ensure they can glide across one another in smooth movement right down to how freely we can jump up and down on our joints and everything that requires stretching and moving motion in between. But, why are there different types?
TYPE I COLLAGEN
Type I collagen is found abundantly in the human body. Dietary sources of bovine and marine collagen also contain type I collagen forms. Although interestingly, marine collagen is limited to type I only and not inclusive of type II and type III. The role of type I collagen is predominantly in bone and osteogenesis and is more of a stiffer structured collagen form capable of lasting the compressibility of day-to-day life like that on our tougher rigid

structures like joints for example.
Type I is also involved in cell-matrix signaling pathways and extracellular health. Think of your scaffolding type structures that need to be a bit tougher, everything gets built into and around, bone, skin aspects, tendons, and blood vessels, and some aspects of muscle, etc. Your “performing under pressure” structures.
TYPE II COLLAGEN
There is some crossover in type II collagen with type I around its function for joints and cartilage in the body with regards to these stiffer structure types. Type II however tends to be cartilage-specific. Fun fact; the other rare small % forms of collagen that make up the other types of collagen outside the major three, like that of IX and XI also assist with this cartilage formation. For the most part, the role of type II is more specific to cartilage.
Interestingly, if you are supplementing with this type of collagen peptide; you are best to take this at a different time to type I and type III. Why? It is said they actually compete for absorption with these other types and you may miss out on type II benefits, however, we have been unable to find a specific
reference to ensure this was true. If you are taking all three forms in a day it may just be of convenience to separate them across the day. In saying that, the amino acids from type I and type III can help to form type II in the body, much the same as dietary consumption of foods high in these specific amino acid types and their co-factors.
TYPE III COLLAGEN
Type III collagen function is very interesting –it is found more in vessels and hollow organs of the body. It is also involved in the critical element of wound healing and the interaction of blood platelets in the survival capability of blood clotting in animals and humans. The tissues that must withstand stretching and contraction like that of the uterus and the bowel are two major areas where type III collagen is required in the body.[6]
Type I and III often can occur together in the same collagen fibril structures and type III has also been found to support close proximity of type II in and around the cartilage aspects of the body. Type III also works on the endomysium and epimysium of our muscle make-up, so the white aspects surrounding the muscle fiber bundles internally as well as externally in the muscle. That combined with
its integral function in cellular health in terms of cell adhesion, migration, and how well receptors function on the surface of the cell, it’s a very important form of collagen that our body uses.
Fun fact – one of the first ways that they discovered that type III collagen’s role in the body was in wound healing and clotting, was through post-surgery wound fluids. They found that levels of type III collagen increased 2-3 days post-surgery and at day five were 1000-fold higher than those levels of nonsurgical patients.
WHICH TYPE OF COLLAGEN IS FOR ME?
Well, if you’re human, ideally you should be accessing and building all forms of these collagen types, unless you are a fish of course maybe type I is more your style. So, the answer here is you should be consuming the amino acids and co-factors required to help build these collagen structures in the body.

Golden anniversaries are truly a cause for celebration. In marriage it symbolizes a depth of love and commitment to one another that can’t be contained within the pages of books, borders of pictures or by definition alone. It has to be shared heart to heart - tangibly felt and decided upon daily.
In business, golden anniversaries are also a milestone, showing strength and commitment to its patrons and a longevity that has withstood the changes of time.
I had the honor of speaking with Suzanne Lindsey and Sandy Hayes of the Buddy’s Bar-B-Q family-owned business and within just a few short moments it was clear that their 50 years of serving the Knoxville and surrounding areas is indeed not only one of longevity and success, but a beautiful love story that can only be shared through the lives of those who know it best, the family and staff of Buddy’s.
So today, I will share with you the story, as told to me by Suzanne Lindsey, daughter of Buddy and LaMuriel Smothers (the founders of Buddy’s Bar-B-Q), and Sandy Hayes, a longtime employee.
The Love of Life… Through Bar-B-Q
Buddy and LaMuriel Smothers grew up in Alabama. After marriage, they made their home in the beautiful East Tennessee area where Buddy worked in a successful business and loan company while LaMuriel maintained the home, caring for the children and doing what she loved best, cooking family meals with passion and creativity.
As the children grew, so did LaMuriel’s desire to have a family-owned restaurant and Buddy was able to help in fulfilling that dream in 1966 by purchasing the Pixie Drive-In restaurant located in Seymour, TN.
It was a hit, and within the first year folks were driving from all around to enjoy the buffet-style family meals prepared by LaMuriel and her assistant cook, Hettie Guffey. The restaurant did so well that after its first year
Buddy decided to leave the finance industry and work with LaMuriel as a restaurateur.
“My parent’s goal was never to grow a barbecue empire,” Suzanne stated. “Their primary goal for success was to have the ability to afford a college education for their children - me and my two brothers, Mark and Michael Smothers.”
After joining forces in the restaurant business, Buddy and LaMuriel had a second dream that
went beyond the walls of buffet-style meals. They wanted to bring a staple food they both loved into the community where they now lived, so they bought into a barbecue franchise. They soon found that the flavor they were serving up was not the same as they had been accustomed to, so they broke ties with the chain and began working to create their own flavor of barbeque spices and recipes that would throw Tennessee’s taste buds deep into their Alabama roots.
They obtained that flavor and in 1972 they opened the doors to their first Buddy’s Bar-B-Q restaurant.
PROSPERITY
As Buddy’s flourished, home-life became a little hectic. Suzanne recalls how she and her brothers, while in middle and high school, would manage household chores while mom and dad were working crazy long hours in the restaurants. “They really needed us to step up at home with the responsibilities,” a task which none of them minded. “We all worked together. It truly takes the whole family to successfully run a business.”
As time went on working in the restaurants became a “family affair” with all members finding their places within the business. In 1982 an amazing thing happened. Buddy’s Bar-B-Q was asked to be an on-site vendor at the Word’s Fair which was held in Knoxville, Tennessee - and that quickly, what had been a local “love” was now introduced to the world!
STRENGTH
One thing Buddy always strove to do was in making sure that the employees of Buddy’s restaurants KNEW that they were valuable. “I’ve never felt unappreciated,” Sandy Hayes exclaimed during the interview, “we’re family here.”
Sandy, a Buddy’s employee for 37 years, recalled how she completed her application in the parking lot before the Broadway
Buddy’s was even built. She started as a cashier and cook and was personally trained by Buddy’s son-in-law, Reed Lindsey, in learning all aspects of becoming a successful business manager. With tear-filled eyes Sandy continued, “I’ve always felt like family. Before coming to Buddy’s I was pretty backwards and shy; I didn’t really even know who I was. But this family helped me in not only learning a life-long trade skill; but taught me how to be a Leader and a team player. As they told me, anyone can be a manager, but it takes much more to be a leader. And as they taught me, I care about all of my team members, not just while at work, but outside of work as well. Every member is important.”
Sandy recalled a personal story of when she first began as an employee at Buddy’s. “When I first started, Buddy himself was working and one day he came into the restaurant, and I always got real nervous when he would come in. I wanted to make sure I was doing everything right, just as he would want it. That day, as he walked through the door, I realized there was a french fry on the floor. I had meant to pick it up but we were very busy and I was working to make everything perfect, and in so doing I forgot about that french fry. So, Buddy came over and at that time he didn’t even know my name because I was new and just learning, and as he started to speak, I glanced down and saw that french fry still laying there; I started to freak out. Buddy, however, right in the middle of his conversation bent down and picked that
french fry up off of the floor, reached over and patted me on the back and said,
We really appreciate you and everything you do for us and what is your name?"-Smiling, Sandy said "that's just who Buddy was.
WISDOM
In a family-run business each member of the family wears many hats and assumes responsibilities as needed, where needed. “Sometimes those paths would cross over into other areas,” Suzanne recalls, “but we always respected one another and made it work.” In time, each family member found the roles which best suited their giftings:

Virginia Smothers, Mark’s wife, actually began working at the Pixie Drive-In and then stepped over into Buddy’s where she quickly became the office “go-to” person. Being a detailed and organized person by nature, the position of Office Manager suited her very well. She also assumed responsibilities in the catering department, booking jobs and handling the catering billing/bookkeeping.
Daughter, Suzanne Lindsey, Director of Marketing/Advertising/Sponsorships, spokesperson for Buddy’s (the voice and face of Buddy’s).
Reed Lindsey, married to Suzanne, Vice President of Operations. Reed also coached high school football as a non-faculty coach for over 20 years; and continues coaching at Karn’s High School.
Michael Smothers, youngest son of Buddy and LaMuriel, worked as a caterer and then became Director of Distribution.
“Early on, I knew my brothers really wanted Buddy’s to be their career,” Suzanne shared. “I had a business degree from the University of Tennessee and had already moved to Washington D.C. to start my career, so I bowed out during that time.”
However, upon marrying and becoming a mom, Suzanne realized that being a part of the “home-team” really afforded her opportunities
in sharing in her children’s lives that she would have otherwise missed out on. As she stepped aboard, she began seeing how the values she had grown up with at home, were also an important part of the business as well.
At first, Suzanne was nervous about being the spokesperson for Buddy’s and questioned if she had the marketing ability needed, and the “know-how” that her father had in making wise decisions in sponsorship, who to help out and how to carry that forth. But, as she saw how the second generation of family (her brothers, and now herself included) worked together with the staff members of Buddy’s in making their business decisions, she found that her job was not a heavy weight, but rather an exciting adventure.
Business decisions within Buddy’s restaurants have never been based on “bottom-line” numbers as many businesses do. They have always been based upon decisions that would most greatly benefit their communities.
In times of economic hardship, Buddy’s
has endeavored to bring to their menu not just food that tastes great, but pricing that would help to make dining out with family still possible. During the 2007-2008 period in which many were struggling financially, Buddy’s son-in-law, Reed Lindsey, suggested that they treat their customers to a “5 after 5” Tuesday special, offering customers a dinner choice for $5 each. This allowed even large families the ability to enjoy a special dining experience without breaking their budget.
Even the way that business is conducted on a corporate level at Buddy’s is done with great intention. “Our business relationships mean something to us,” Suzanne stated. “Whether it be our managers, employees, or outside business vendors that we deal with, we always try to make wise decisions because to us we aren’t’ just hiring people, or helping organizations, it’s personal. All of our connections made over the years, every one of them, are important to us. It goes way beyond ‘business as usual.’”
LIFELONG LOVE
Buddy and LaMuriel had a lifelong love not only in marriage, but also in food as well. They shared in their love for the flavor of barbecue prepared at Buddy’s. But when it came to desserts, their love languages were quite different.
Buddy loved chocolate. It was he that developed the hot fudge cake that is served up daily.
Making sure that the cake was always baked fresh in each restaurant, and the ice cream and topping perfectly placed to taste a little bit of heaven with every bite.
LaMuriel was a lover of lemon, and the creator of the delicious lemon ice-box pie served up at every Buddy’s counter. When you taste the lemon pie at Buddy’s, with each bite you are
capturing a spoonful of LaMuriel’s love for baking.
And the delectable holiday shake you enjoy every Christmas season, known as “Sandy’s Egg Nog Shake” was created by their very own Sandy Hayes, manager at the Broadway Buddy’s. The Smother’s family felt it only right to honor her creation by having the shake bear her name. When Sandy had first begun preparing egg nog shakes she did so to share with her team members one of her great loves at the holidays, never did she dream it would become a company icon. But the Smothers family loves finding ways to honor their workers, reminding them that they are the key to the success of this business.
COMMUNITY
Those who enter Buddy’s restaurants are not just “paying customers” to the Smothers family. It is important to them that the patrons know they are family when they choose to spend time around “Buddy’s” table.
Suzanne told stories of family gatherings, wedding parties and reunions that have taken place around their tables. “It still amazes me,” she proclaimed “that our customers think enough of Buddy’s to make it their ‘Go-to’ place for special occasions. That always touches my heart. We want our customers to feel the comforts of home when they gather here. That’s why our servers walk through the dining hall with hushpuppies and offering to refill drinks. We want our customers to know
that we know they are the reason for our success, and we appreciate them.”
Buddy’s has not only a long history of sharing food, but a long history of caring for their communities. In 1992 Buddy Smothers died of cancer, and in 1993 the “Buddy’s Race Against Cancer” was birthed in his memory. It continued for 21 years.
After LaMuriel was diagnosed with Alzheimer’s, Buddy’s became the event sponsor of the Alzheimer’s TN Purple Gala, an annual event which helps in raising funds for the Alzheimer’s association and their work in finding a cure, while caring for families throughout Tennessee who have been affected by this disease.
But in addition to all that Buddy’s does on a corporate level to reach out into the communities, that same heart of compassion can be seen within the individual restaurants as well. From the sponsorship of baseball teams, church functions, and providing needed essentials for school children, to feeding those who have hit on hard times, even catering for events in a time of crisis. Their restaurant managers are an extension of that same compassionate care that Buddy’s is founded upon, with each having their own stories of how they’ve touched the lives of those within their community. Buddy’s sonin-law, Reed Lindsey, even carried the heart of Buddy’s into his job of Coaching. Any time he found that one of his players was hungry, or needed a job, he would pick up the “hot-line”
to Sandy at the Broadway store to prepare them a meal, or find a job opening. Many of his players became team members at Buddy’s, and Sandy would take them under her wing and train them just like all of her other employees.
There is a wall in Sandy’s office at the Broadway Buddy’s that is called “Buddy’s Babies”. This wall is filled with pictures of those whose lives have been touched in many different ways by the Buddy’s “Family”. From baby pictures to proms, new workers, and even Buddy’s own family growing up, this wall shares a history of community that can’t be found anywhere else.
Three of the staff members working on the day of this interview (Donisha Lindsey, Carl Cole and Julie Lee) were among those on the wall. Speaking of one of the workers who is now a mom, Sandy Hayes said, “I told her, ‘there you are on our wall as an infant. You were destined to be here.’” To which the worker smiled, knowing that her life has value to this company; a love that goes much deeper than a paycheck.
Many of the employees at Buddy’s restaurants have been with them from twenty to fortythree years; a true sign that this establishment is doing something right.
And in the words of Suzanne Lindsey, “My family and I realize that we cannot take credit alone for the success of Buddy’s. We know our employees, who are like our extended family, and the continued support of our customers, who we want to treat in the same way we would treat guests in our own home, are the ones who have walked with us in working together to make Buddy’s all that it is.”

LEGACY
In closing the interview I asked Suzanne what she most wanted us, the community, to know about Buddy’s, and the legacy her parents left that was of greatest value. “There’s so much,” she said. “Treating our employees like they are family is just how our parents operated, and they passed that trait onto us. We are thankful and blessed by our employees, managers and supervisors and we always want them to know that.”
Suzanne shared how her father was truly a “people” person and loved helping others. “There are so many, many wonderful stories I could tell of how my father helped others. My parents always put God first in their life and marriage, and in business, and they endeavored to always treat people right. And that philosophy of truly caring is a part of the legacy that they passed onto us as the second generation, and we have now done our best to pass it onto the third generation.”
As we talked about legacy, and the third generation of family now operating Buddy’s, I was extremely impressed to learn that as this third generation began stepping into their roles, they did not begin trying to change everything and do things “their way.” They instead went to the restaurant managers, Leaders, and sought their advice on how to properly do things within their family’s company and gleaned from them as to what worked well. Fruit Pizza
Fruit pizza is a classic, and this really is the best fruit pizza recipe. It’s simple, straightforward, but so delicious (and so pretty!). No specialty pizza pan needed!
I love fruit pizza. It’s refreshing, gorgeous, and crazy delicious. Whether wanting a “fancy” or “fun” dessert you just can’t go wrong with fruit pizza!
I mean, who can resist a sugar cookie crust, ultra luscious cream cheese frosting, and juicy fresh fruit? Not me. Talk about irresistible.
PERFECT SUGAR COOKIE CRUST
This fruit pizza relies on a perfect sugar cookie base. The dough is a simple one-bowl recipe that results in a lightly sweet, super tender sugar cookie crust that holds it’s shape well enough that you don’t need to chill the dough before using it. YES.
Hi,I’m Cajun, lazy and detest chilling cookie dough unless absolutely necessary. (I have tried using the store bought dough and still have had fantastic drool-worthy results!
Plus, keep in mind, that after the sugar cookie crust bakes, it’s slathered with frosting and topped with fruit. So any inconsistencies in perfect shape are forgotten.
THE RIGHT PAN
I used a stoneware pizza pan for the fruit pizza pictured here, but you can also use a basic half sheet pan for this recipe. And for a slightly thicker crust, you can use a 9X13-inch pan or a circle pizza pan.
To use a metal pan, line your half sheet pan with parchment paper, lightly grease it, and then press the cookie dough into a rectangle about 10X14inches, give or take. It definitely does not need to be exact.
Try to keep the thickness relatively the same throughout so it bakes evenly. As it bakes it will spread a little; that’s normal. *Tip: I tapped the pan down when I took it out of the oven and it literally gave it a crust like a pizza and the inside was lower- È delizioso!
PERFECT CREAM CHEESE FROSTING
And I do mean -PERFECT! The cream cheese frosting for this fruit pizza is very simple and very basic, but a few small surprises make it absolutely amazing.
Along with cream cheese and powdered sugar (both very necessary for perfect cream cheese frosting), the twist and level-upper is there is also a smidge of butter and a dab of sour cream.
The sour cream adds the perfect amount of bright freshness to the frosting without messing with the consistency (like lemon juice can do).
ASSEMBLING THE FRUIT PIZZA
Once the sugar cookie crust has baked and cooled, spread the frosting into an even layer across the top.
And then! The moment we’ve all been waiting for… it’s time for the fruit.
BEST FRUIT FOR FRUIT PIZZA (AND HOW NOT TO BE A PERFECTIONIST)
Listen, I know Pinterest is going to make you feel like you have to create a picturesque fruit pizza fit for edible art galleries across the globe. But when it really comes down to it, my advice on how to decorate the fruit pizza is: DON’T STRESS!
The combination of sugar cookie + frosting + fruit is so amazing, it can hold its own no matter what it looks like.
MY TIPS FOR CHOOSING THE RIGHT FRUIT:
Avoid fruits that are really watery and juicy (like watermelon) – it can make everything drippy and soggy, ew! Choose fruits that are ripe but hold their shape well. If using canned fruits, like pineapple and mandarin oranges, drain the fruit really well and then pat dry with paper towels. Cut the fruit in small bite-size pieces for easier serving, (alternate title: cut the strawberries in quarters so that it’s easier to slice the fruit pizza into squares for serving).

When left to my own devices, I prefer pretty, colorful rows. And I find fruit pizza decorating actually quite therapeutic. Time well spent, if you ask me. (Especially if I can also listen to an audiobook or podcast whilst placing each piece of fruit in its designated spot.)

NOTES
Pan Size: a 9X13-inch pan can be used in place of the half sheet pan (the crust will be slightly thicker and take a bit longer to bake) or a circle pizza pan can be used. I would not suggest using a baking stone. Cream Cheese: full fat cream cheese works best in the frosting recipe; light cream cheese can be used but will make the consistency of the frosting runnier.
Fruit: the fruit given in the recipe is just a suggestion! The sky is the limit with other fruit options. Use ripe, fresh fruit that isn’t overly juicy and will hold its shape. For canned fruit, make sure to drain well and pat very dry with paper towels.

INGREDIENTS
Sugar Cookie Crust: (you can use premade)
¾ cup (170 g) salted butter, softened to room temperature
1 cup (212 g) granulated sugar
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
1 teaspoon fresh lemon zest, optional (but delicious)
2 cups (284 g) all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
Cream Cheese Frosting:
¼ cup (57 g) salted butter, softened to room temperature
8 ounces (227 g) cream cheese, softened to room temperature
1 tablespoon sour cream
½ teaspoon vanilla extract
1 ¾ cups (200 g) powdered sugar
Pinch salt
Fruit we used:
Fresh strawberries, cut in slivers
Fresh blueberries
Fresh blackberries
Fresh pineapples
& fresh Kiwi fruit, peeled and cut into slices
Canned/packaged mandarin oranges, drained and patted dry
INSTRUCTIONS
Preheat the oven to 350 degrees F. Line a half sheet pan (a rimmed baking sheet about 11X17-inches) with parchment paper and lightly spray parchment with cooking spray. See note for alternate pan sizes.
For the sugar cookie crust: in large bowl, cream together the butter and granulated sugar with an electric handheld or stand mixer until smooth, 1-2 minutes.
Mix in the egg, egg yolk, vanilla, and lemon zest. Add the flour, baking powder, baking soda and salt, and mix until no dry streaks remain (don't over mix).
Press the dough into a rectangle shape in the center of the pan, about 10X14-inches. It doesn't have to be exact, just make sure it is fairly evenly thick throughout so it bakes evenly.
Bake the crust for 10-12 minutes until just baked. It should be soft and not overly brown around the edges. Don't over bake. Let the crust cool completely.
For the frosting: in a medium bowl, add the butter and cream cheese and beat with an electric mixer (handheld or stand mixer) until smooth, 30-60 seconds. Add the sour cream and vanilla and mix until smooth. Add the powdered sugar and pinch of salt, and mix until well-combined and light and fluffy, 1-2 minutes, scraping down the sides of the bowl as needed.
Spread the frosting evenly on the cooled sugar cookie crust, leaving a thin border. Arrange fruit on top of the pizza. Chill in the refrigerator until serving. The fruit colors can bleed into the frosting, so it's best to serve within 1-2 hours of making the fruit pizza.

This liqueur was created with rose buds, lavender, chrysanthemum, red clover tops, hibiscus, and sweetened with local honey. When mixed with gin, you achieve a beautiful botanical and floral blend. Add fresh lime juice and a bit of orange liqueur, and you’ve created the perfect party cocktail!

2 OZ Gin
1 OZ Fluer De Vie
1/2 OZ Cointreau

Cycle Down The River
Last year, Knoxville introduced an exciting, fun attraction to the Downtown and Tennessee River areaKnoxville Cycleboats.
For those who are not familiar with this newfound activity, cycleboats are the cross between a bicycle and a boat ride. What started off as an electric boat ride for Chicago tourists in 2018, has grown into an interactive experience for families, friends in a brand new city with so much more room for growth.
Knoxville Cycleboats General Manager Richard Ludwig told HUshh the owner, Ron Silvia, were searching the US for their next boat venture by studying cities with calm rivers and great atmosphere. As Silvia was traveling through Knoxville with his family a few years ago, they absolutely fell in love. They saw so much potential in the Downtown Knoxville community and finally “pulled the trigger” last year.
One of the things that makes Knoxville Cycleboats so special is you can enjoy it with all your closest friends and family. A standard cycleboat holds up to 20 passengers, not including the captain; you even get to BYOD (bring your own drinks-yes, alcohol as well) and blast your favorite music.Each boat includes a built-in cooler to keep your drinks cool the entire ride and a restroom-just in case. Although the cycleboats have bicycle seats and petals to make the boat go faster, you can definitely sit back, enjoy the 90-120 minute ride with a cold drink and let the river do all the work.
The next thing that makes Knoxville Cycleboats so special is they don’t only have cycleboats. Beginning in May they welcomed a new type of boat to their fleet: The Luxury Duffy Boat. This cute little electric boat is perfect for intimate rides on the river. Able to seat up to 10 people,
many choose this option for brunch, bachelor and bachelorette parties, or even wedding receptions. The Duffy includes a built-in cooler, just like the cycleboat; however, your party gets to drive the boat, further making this experience more enjoyable and intimate.
Ludwig stated, “You bring the closest people together in close proximity; [The Duffy is] a very intimate experience.”
He went on to say a lot of people, especially bridal parties, choose the Duffy for its comfortability. With lounge-like seating, a table and large cooler, guests are able to have a larger selection of food and drinks. Since 15% of rentals are for weddingtype reasons, many bring charcuterie boards, champagne and wine to celebrate and enjoy their day. With this being the first full season of Knoxville Cycleboats, boats are scheduled to run the first week of April, first week of May for The Duffy, through the end of November; however, with East Tennessee’s

While most Americans celebrate Independence Day with fireworks, the Museum of Appalachia marks the occasion with an old- fashioned “anvil shoot”. Every 4th of July, the Museum uses gunpowder to launch a 200-pound anvil hundreds of feet into the air!
Anvil shoots were once a common way for pioneers to commemorate holidays, elections, and other special occasions.
The anvil shoot is the centerpiece of an all-day celebration that includes a national bell-ringing ceremony, flag procession, live music, southern food, demonstrations from blacksmiths, beekeepers, dulcimer makers, spinners, weavers, rail splitters, and more.

East Tennessee’s Sweethearts: The Young Fables
If you’ve lived in East Tennessee for any amount of time and haven’t heard of The Young Fables, you’ve likely been living under a rock.
This Modern Traditional Country duo is composed of Laurel Wright and Wes Lunsford, and they have steadily been stealing hearts all across the United States for the last seven years. Before I get ahead of myself, let’s start from the very beginning.
Ever since Laurel was a little girl, she was a star. Always performing for friends and family, a light burst from her everytime she began to sing. When she decided she wanted to make music her life, it didn’t take her long before she could pick up her guitar and play along with the radio.
For Wes, music became a big part of his life when his mom bought him a guitar. To say he couldn’t put it down is an understatement. If you’ve ever heard him play, you would think he’s been playing since diapers.
About eight years ago Laurel had a scheduled gig at Barley’s in Downtown Maryville with her band, when her guitar player at the time bailed on her. Her drummer recommended a guy named Wes to play and the rest is history. Kinda.
After that night something stuck between them. Their chemistry on the stage was undeniable and after nearly a year playing together they decided to join forces to become The Young Fables and move to Nashville.
They’ve released three records since getting together, the most recent being March of this year. This record is one of the most emotional and heartfelt of the three with songs paying homage

to Laurel’s sweet sister and dad, who both unfortunately passed away in 2018. Each of these songs beautifully articulates Laurel’s relationships as well as the struggles she has overcome.
Naturally, like any journey, Wes and Laurel experienced many beautiful moments and also many difficult moments. However, through every setback, they’ve taken it one day at a time and pulled through because of the hard work and dedication they each share. Which is part of why they’ve created a documentary titled “The Fable of a Song.”
“The feature length documentary chronicles the songwriting process behind The Young Fables' song "Daddy's Girl" and the unimaginable events that followed the release,” according The Fable of a Song website.
The documentary recently won the 2021 Nashville Film Festival Audience Choice Award.
With each passing day, the Young Fables are becoming more and more popular and loved. In 2018, they appeared on USA Network’s Real Country and stole the hearts of country legends like Shania Twain, Keith Urban and Travis Tritt. With Laurel’s soulful and melodic voice and Wes’ incredible guitar skillsand background vocals-along with their incredible story, this duo is undoubtedly the next best thing for Country Music.
