The Basics Protein Protein is any organic compound made of large combinations of amino acids (usually 50 or more). Twenty-two amino acids have been identified as vital for proper growth, development, and maintenance of health. The body can synthesize 13 of these, the nonessential amino acids, whereas the remaining 9 must be obtained from dietary sources and are termed essential. Protein is the major source of building material for muscles, blood, skin, hair, nails, and the internal organs. It is necessary for the formation of many hormones, enzymes, and antibodies and may act as a source of energy. Rich dietary sources are meat, poultry, fish, eggs, milk, cheese and soybeans which are classified as complete proteins because they contain the nine essential amino acids. Nuts and legumes, including navy beans, chickpeas, and split peas, are also good sources but are incomplete proteins because they do not contain all the essential amino acids in adequate amounts.

Whey Protein

Whey is one of the proteins found in milk (the other is casein). Whey protein accounts for only about 20% of the total protein found in milk, while casein makes up about 80% of milk protein. Whey protein includes alpha-lactalbumin, lactoglobulin, and lactoferrin. Whey protein is rich in amino acids and low in fat. Whey proteins can differ dramatically from one another depending on the processing method and the total protein content.

Whey Protein Concentrate – WPC

is whey protein with 30-85% protein, it generally contains naturally higher levels of fat, carbohydrate, lactose and ash than other forms of Whey Protein. Due to the minimal processing involved in extracting WPC, it is cheaper to produce than other types of whey.

Whey Protein Isolate – WPI has protein content up to 90% or higher, contains minimal amounts of carbohydrates, lactose and fat. Isolates have had some of the peptide bonds between the proteins broken to make it easier and faster to digest. The two key processing methods are ion exchange filtration and cross-flow micro-filtration resulting in whey powder with different taste, texture and functional properties in comparison to Whey Protein Concentrates.

Hydrolysed Whey Protein – HWP is a highly specialized type of whey that has been exposed to specific enzymes during manufacturing which alter the chemical structure of the protein. This enzymatic process called hydrolysation or pre-digestion, is meant to mimic the digestive breakdown that occurs in the stomach and small intestine. Hydrolysation results in a percentage of the poly peptides being broken down into readily digestible oligopeptides (up to 12 amino acids), di-peptides (2 aminos), tri-peptides (3 aminos), tetra-peptides (4 aminos), penta-peptides (5 aminos) etc. It is these easily digestible peptides that provide HWP with some of its unique characteristics. Hydrolysed Whey Protein may be sold as either Hydrolysed Whey Protein Concentrate (HWPC) or Hydrolysed Whey Protein Isolate (HWPI).

Micellar Casein is undenatured casein that exists in its natural globular structure (known as a micelle). A casein micelle is composed of all five bioactive peptides - alpha, beta, gamma, delta, and kappa caseins. Micellar Casein differs from other caseins / caseinates as it exists in its natural form and is more readily digested and assimilated by the body. It also has unique functional properties that are both anti-catabolic, anabolic and anti-inflammatory. Miscellar casein has a tendency to gel in the small intestines and release protein over a 6-7 hour period.

Caseinates are a group of milk proteins that may be comprised of Sodium Caseinate and Calcium Caseinate. These casein products have been exposed to acid and alkali processes in order to make them more palatable for use in food. As a result some of the bioactive peptides and all the micelles within the protein have been denatured or damaged. These caseinates have a lower level of bioactivity than Micellar Casein. Caseinates also possess a sustained release action that occurs over a 6-7 hour period and are useful for their anti-catabolic properties.

Glutamine is a non essential amino acid that has proposed anti-catabolic qualities. Glutamine can be used to support immunity, improve the structure and function of the intestines and preserve lean muscle on a low calorie diet by acting as a source of alternative energy.

L-glutamine is “free form� which means it is not bonded to other amino acids.

Glutamine peptides on the other hand are bonded to other amino acids with peptide bonds which makes it more stable and better assimilated by the body.

Carbohydrate This is the collective name for sugar, starch, cellulose, and gum. They are the major energy source for cells of the body. Simple sugars trigger the release of the hormone insulin and are quickly metabolised while complex carbohydrates release energy over a longer period of time.

Sucrose is also known as table sugar. It can be found as a white or brown crystalline powder. It has a medium glycemic index and affects insulin in a moderate manner.

Glucose is also referred to as Dextrose or D-Glucose it has a very high glycemic level and affects insulin in a dramatic manner. Glucose is commonly used by athletes who wish to intentionally spike their insulin levels during the post workout window period to facilitate improved nutrient uptake into recovering muscles.

Fructose occurs naturally in fruits, vegetables and their juices and can also be found in honey. Fructose has a low Glycemic Index and affects insulin in a moderate manner compared to sucrose and glucose.

Maltodextrin also known as glucose polymers is commonly derived from cornstarch. Maltodextrin can have varying values on the Glycemic Index depending on its degree of equivalence to dextrose (glucose). A DE of 5 would mean that Maltodextrin would have a low Glycemic Index and would have a weak influence on insulin. A DE of 100 would rate Maltodextrin highly on the Glycemic Index and equivalent to dextrose on the scale. It would yield a strong influence on insulin release. Low DE Maltodextrin is a commonly used carbohydrate component in most weight gain powders.

High Fructose Corn Syrup (HFCS) includes any source of corn syrup that has undergone enzymatic treatment to increase its fructose content. It is a disaccharide and is composed of fructose and glucose. HFCS can also be listed on labels as iso-glucose or fructose-glucose. HFCS is commonly sweeter than sucrose and is added to foods and drinks as a replacement for sucrose. HFCS has the same Glycemic Index value as sucrose.

Waxy Maize Starch (WMS) is used by athletes post training to replenish their muscle glycogen stores. For WMS to act as a rapid acting carb it needs to have a very high amylopectin content otherwise it will act as complex carbohydrate.

Non-Nutritive Sweeteners Non nutritive sweeteners are ingredients that are capable of sweetening a food or beverage without stimulating insulin release and adding extra kilojoules to the food.

Acesulfame Potassium is a common artificial non-nutritive sweetener that is 180-200 times sweeter than sugar. It can be listed as Ace-K, or sweetener 950.

Sucralose is a popular artificial non-nutritive sweetener that is derived from sugar. It is sold on supermarket shelves under the brand name Splenda速 and can be listed on labels as sweetener 955. Sucralose is 600 times sweeter than sugar and has the most sugar like taste of all the sweeteners.

Aspartame is rarely used in high quality sports nutrition products. It can appear on labels as sweetener 951.

Stevia is a natural, herbal, non nutritive sweetener that has negligible affect on blood glucose levels. Stevia is 300 times sweeter than sugar and suitable for use by diabetics and individuals on a low carbohydrate diet.

Fat In humans, fat, or adipose tissue, is found beneath the skin and around the internal organs, where it also protects and insulates against heat loss. Fat is a necessary, efficient source of energy. A gram of fat contains more than twice as much energy as a gram of protein or carbohydrates and is digested more slowly, resulting in the sensation of satiety after eating. Like some amino acids, some fats cannot be synthesized by the body and must be obtained from the diet. These are the essential fatty acids, such as linoleic acid and linolenic acid.

Fish Oils contain two important Omega 3 fats EPA (eicosapentaenoic acid) and DHA (docosahexanoic acid) which are normal constituents of our cells. They are especially abundant in brain and nerve cells, the retinas, adrenal glands and sex glands. They are also needed for a healthy cardiovascular system as they maintain healthy arteries, blood flow and blood pressure. Omega 3 fish oils also help to regulate inflammation associated with arthritis, skin problems and autoimmune disease.

EPA and DHA can be made by the body from alpha-linolenic acid found in vegetable sources such as flaxseed and many other seeds and nuts. However, some health conditions and a lack of these specific foods in the diet can result in a deficiency of EPA and DHA. This can be countered by eating fresh (preferably raw) deep-sea, cold water fish, or taking a supplement of Omega-3 Fish Oils.

MCT – Medium Chain Triglycerides are made by altering the structure of coconut and palm kernel oils. They are digested easily and rapidly absorbed into the blood stream and transported around the body. MCTs, are metabolized for energy quickly and are not stored as fat deposits. Athletes use MCTs before training as a source of energy. They can be useful during periods of low-carbohydrate dieting.

Other terms used in Sports Nutrtion. Metabolism the way our bodies produce energy and the other subatances we need to sustain life. There are two parts to metabolism: Catabolism, where compounds such as proteins are broken down to release heat and energy. And Anabolism where simple molecules are used by the body to build more complex compounds.

Anabolic substances that support the growth phase of metabolism. In regards to sports nutrition, anabolic nutrients support the growth of muscle tissue.

Catabolic anything that causes proteins and other compounds in the body to break down into smaller parts.

Nitrogen Balance the difference between the amount of nitrogen taken into the body and the amount excreted or lost. Since proteins are nitrogen rich compounds, the body needs to be in a positive nitrogen balance to build muscle. A negative nitrogen balance can imply the body is in a catabolic state.

Electrolytes a group of mineral salts: potassium, sodium, calcium and magnesium which regulate water and proper function of cells. Supplementing with electrolytes is particularly important during endurance sports and other intense activities which cause excessive perspiration

Insulin spike a surge in the release of insulin to the digestive tract usually caused by the ingestion of sugars. Insulin transports sugar to cells to be used as energy. 11

L-Glutamine Powder Many athletes involved in intense training who want to obtain maximum benefits of L-glutamine usually take 5 - 20 grams daily. Contraindications and Cautions

Mix one level teaspoon (3.5g) on 200ml – 300ml of water twice daily. Take one serving 20-30 minutes before breakfast and another 20-30 minutes before lunch. On training days take one serving 20-30 minutes before exercise.
