CUCUMBER CANAPES A REFRESHING APPETIZER | YIELDS 2 DOZEN
Ingredients 1 cup mayonnaise 3 oz cream cheese 1 Tbsp grated onion 1 Tbsp minced chives 1/2 tsp apple cider vinegar 1/2 tsp Worcestershire sauce 1 garlic clove, minced 1/4 tsp paprika 1/8 tsp curry powder 1/8 tsp each dried oregano, thyme, basil, parsley flakes, dill 1 loaf favorite sliced bread - rye or wheat are great options 2 medium cucumbers, thinly sliced into rounds Sea salt for topping
Directions 1. In a blender or food processor, combine the mayonnaise, cream cheese, onion, chives, vinegar, Worcestershire sauce, garlic and seasonings. Cover and process until blended. Ideally, refrigerate for 24 hours before use. 2. Using a 2-1/2-in. biscuit cutter, cut out circles from bread slices. Spread mayonnaise mixture over bread; top with cucumber slices. Garnish with a sprinkle of salt and dill weed.
Bonus: finger foods make for an easy clean up!

CARROT & BEET TURKEY SLIDERS THE MAIN COURSE | 4 SERVINGS
Ingredients 1 1/2 lbs extra lean ground turkey 1 1/3 lb carrots, cleaned, peeled, and grated 1 1/3 lbs beets, peeled and grated 1 tsp sea salt 1 tsp dried thyme 1 Tbsp Dijon mustard 1 Tbsp avocado oil
Directions 1. In a large mixing bowl, use your hands to combine all ingredients, eclipsing the avocado oil. 2. Divide the mixture in half and in half again. Make 4 patties, about 4 inches wide. 3. Fire up the grill and cook to 165 internal temperature. You can also cook them in a skillet on med-high heat. Coat the pan with the avocado oil before cooking. 4. Enjoy a la carte, or with your favorite burger toppings and a bun!
Pro Tip: Make mini sliders to feed a larger crowd by making smaller patties!

CITRUS & BEAN SALAD A TASTY SIDE | 3-4 SERVINGS
Ingredients 3/4 cup fresh or frozen edamame 3 Tbsp Balsamic vinegar 1.5 Tbsp Dijon mustard 1/4 Sea Salt 1/8 tsp garlic powder 1 Tbsp extra virgin olive oil 1 orange, peeled and chopped 2 cups mixed beans (cooked, rinsed) 2 Tbsp red onion 4 cups mixed greens
Directions 1. Cook the edamame according to package instructions, if uncooked and set aside to cool. 2. In a small mixing bowl, combine vinegar, mustard, salt, oil, and garlic powder. Mix well. 3. In a large bowl, combine the cooled edamame, mixed beans, mixed greens, orange and red onion. 4. Drizzle dressing and toss to combine. Salt to taste.
Pro Tip: Dressed greens will wilt, so only dress what you think you’ll eat!

WATERMELON SALAD A TASTY SIDE | 6-8 SERVINGS
Ingredients For the Dressing 2 tablespoons extra virgin olive oil 1/2 cup white balsamic vinegar ½ garlic clove, minced ¼ teaspoon sea salt For the Salad 5 cups cubed or balled watermelon 1/2 cup crumbled feta cheese 1/2 cup torn mint or basil leaves Sea salt
Directions 1. Whisk together dressing in a small bowl and set aside. 2. Combine salad ingredients in a large bowl. Drizzle dressing and gently toss. 3. Serve cold.
Optional: Omit the feta cheese to make it vegan!

CHOCOLATE BANANAS A HEALTHIER DESSERT | 1 BANANA SERVES ONE
Ingredients Yellow bananas, peeled and cut in half. Chocolate Nuts (optional) Sprinkles(optional) Popsicles sticks
Directions 1. In a sauce pan, gently melt the chocolate. 2. Insert the popsicle stick halfway into the banana. 3. Dip the banana in the chocolate and roll in your favorite toppings. 4. Freeze for 1 hour.
Topping Ideas: nuts, granola, sprinkles, or fruit!
