Ingredients • 30ml The Botanist

• 15ml Lemon Juice • 10ml Sugar Syrup • Top with champagne • Garnish: Lemon Twist

Add Gin, lemon and sugar syrup to a shaker filled with ice, shake and fine strain into chilled champagne glass, top with champagne and garnish with lemon twist.

Ingredients • ½ lime • 1 tsp raw sugar • Mint • 30ml white rum • 30ml passionfruit • 90ml lemonade • Dash of Brown Brothers Sparkling Moscato • ¾ glass loose ice

Method Muddle lime & raw sugar. Add ice, passionfruit, mint and lemonade. Top with a splash of sparkling Moscato.

THE ‘SILVER SCREEN SPARKLER’ COCKTAIL

Ingredients • 45ml gin • 2g edible gold glitter • 15ml St. Germain • 15ml fresh lemon juice • 15ml simple syrup • 3 mint leaves, freshly picked • 3 cucumber slices, freshly cut

A limited edition cocktail inspired by the TV Week Gold Logie statue, as served in The Star Gold Coast’s signature bars in the lead up to the 2022 awards show.

Add all ingredients to a cocktail shaker filled with ice. Shake until combined, then double strain into your preferred cocktail glass. Be sure to swirl the glass or stir with a cocktail spoon as you serve the cocktail for extra sparkle.

Method Add the elderflower liqueur, lemon juice and a dash of Brown Brothers Moscato to a glass 3/4 filled with ice. Garnish with dehydrated lemon & petals.

2021 PLENARIUS

The 2021 Plenarius is copper-gold in colour with brilliant amber edges. Aromatically, there’s tinned apricot, marmalade, jasmine perfume as well as candied ginger and hints of lemongrass. This wine is rustic but simultaneously polished; grippy skin phenolics are offset beautifully by a glycerol richness and a fine natural acid line. Dynamic and engaging, it evolves with a multitude of aromas, flavours and textures. Zeitgeist Shiraz has been bottled to showcase the 2021 vintage in all its primary vibrant glory. 2022 Zeitgeist Shiraz is vivid purple in colour. Aromatics are primal and lifted with bright floral perfume, crushed red berries, mixed spice and red liquorice with a touch of milk chocolate. Light grippy tannins give a strong backbone to balance the fruit. The finish is lengthy and radiant, completing a pure and expressive wine. Parallax Grenache is a revival and reiteration of a classic old vine Barossa varietal. Parallax Grenache is picked two to three weeks earlier than normal and combined with fermentation on stalks and minimal maturation. Light purple-red in colour, Parallax Grenache has the compelling aroma of strawberry, herb, sweet earth, raspberry, fresh flowers and musk. On the palate it is light-bodied and bursting with fresh fruit.
