NICKI HOYNE Founder, Nicki Hoyne Collection Kilkenny native Nicki Hoyne began her career working in brands like Diageo, Nintendo, Marc Jacobs and Balenciaga in Dublin, London and Australia. She founded award-winning online accessories store, My Shining Armour in 2014, combining her love of fashion, business and innovation to create the Irish success story. The internet treasure trove appeared in Vogue, Cosmopolitan and on The Late Late Show. Announcing it’s closure earlier this year, TEDxTalk speaker Nicki embarked on a new passion project, The Nicki Hoyne Collection. PANDEMIC PIVOT I launched in early October, mid pandemic. I wanted to build something I was proud to put my name on

and that would last. The Nicki Hoyne Collection is made up of chic, quality, accessible luxury handbags with a conscience. I’ve changed, the consumer has changed, and the world has changed. I don’t like the word sustainable. I feel it has lost its meaning. To be a conscious brand means asking questions about where things come from and doing the best business you can do. FEATURE AUTHENTICITY ONLINE Instagram has been a massive part of my entrepreneurial career. If you’re going to do business on it, you have to remember that it is about the followers, entertaining and inspiring them. People want you to be authentic, they don’t want to be sold to or lied to. I keep it real, light and fun. ‘PINCH ME’ CAREER MOMENT Getting an email from the jewellery editor of British Vogue. I have it framed on the wall in my office. I sent her a package hoping to feature in the magazine (aim high). She emailed me to say that she was really impressed with the presentation and my brand. We appeared in a later issue that year. The validation and encouragement spurned me on.

DIGITAL DETOX I was so bad for switching off in the early years of My Shining Armour and eventually it did take its toll. I have a strict system now. I don’t work evenings or weekends. I find that when I switch off, I’m so much more creative. Ideas come to me when I am in the playground with my nieces or if I’m out for a walk.

FOUNDING ‘THE HERO PODCAST’ I love the idea of stories that we can listen to as we go about our lives instead of scrolling mindlessly for hours. I found an app that I could just record in real time and called it ‘The Hero Podcast’ as it derived from My Shining Armour’s tagline “Be your own hero. I wanted to share real stories of insight and inspiration from people I really admired. My favourite recording location was in Condé Nast in the One World Trade Center NYC with Galway girl Michaela O Shaughnessy. She is one of the sweetest people

you could ever meet, and absolutely killing it in New York.

START UP ADVICE Just go for it! You will regret not having started sooner. It is the hardest but most rewarding thing to do. A rollercoaster, you never know what each day holds. We all run our own race. Do you, be unique and don’t worry about what others are doing.

SILVER LINING I have big plans for 2021 for the Nicki Hoyne Collection. I want to secure some key stockists and really drive my brand forward. My positivity pants are on. I’ve also come to a point now where I can help others. Having succeeded and failed at different things, I have that knowledge to share. I can mentor and help people to build their dreams and that is so rewarding.

SHEENA DIGNAM, Founder, Galway Food Tours Franco-Irish food and wine lover, Sheena Dignam is originally from Wicklow but grew up in the Loire Valley. Having spent over 15 years in the food industry, her passion led her to launch the awardwinning Galway Food Tours in 2015, with business partner Gosia Letwoska joining two years later. Offering a range of culinary walking tours of the city, the experience showcases Galway as one of Ireland’s gourmet jewels. In March of this year however, everything changed for everyone, everywhere. No tourists, no tours! PANDEMIC PIVOT We had a very healthy business running on average 4 tours a day, 7 days a week and of course we all know what happened next. Gosia and I needed to take a serious look at the business and see how we could or if we could adapt GFT to this new world, as we knew it would be our new reality for an indefinite period of time. So one day during our run (we have become great ‘lockdown’ runners) the idea of a self guided food tour in the form of a pocket book came to us, allowing people to continue to experience the city but at their own pace and on their own terms. BY THE BOOK The Galway Food Tours Guide Book brings together over 40 local businesses from Kai restaurant to Just Art It and every cool spot in between. This keepsake pocket book reveals what we particularly love about Galway, its people and their great places to eat, drink superb wines and creamy pints; attend small, independent cultural events and share the simple pleasures in life. Of course, there is the inside track on where to visit, eat and drink but there are also vouchers and discounts. It’s all Galway really with illustrations by local artist Gala Tomasso. CONNECTIVITY This is a very important aspect of our business, I think any business for that matter. Your website and social media platforms are the virtual shop front window for your business. Our ethos is supporting local business whether it’s food, culture etc. We get to do this on Facebook and Instagram through the various posts we put up. It’s important to support other businesses on your platforms. VIRTUAL REALITY I think for the foreseeable future self guided virtual tours will be in demand. To have that escapism by doing a virtual tour of the Louvre, the Blasket Islands or anywhere in the world is wonderful. People are

dying to get back traveling especially when you have explored every nook and cranny of your own county. PRE-PANDEMIC REFLECTIONS The freedom that I took for granted. Meeting people on the streets, popping in here and there, maybe deciding after a few beverages in Tigh Neachtains to take a midnight flight to Morocco...those kinds of things. SILVER LINING The book has been selling well since we launched. We were awarded a grant with the Galway City Council as part of their Tourism recovery fund and this has been a huge help to us. We are also working on an exciting new project with Taste4Success Skillnet, creating a storytelling app that will launch at the start of January to enhance the experience of GFT pocketbook which will feature the sounds and senses of Galway picking up the atmosphere of the city as you ramble from stop to stop.

Online Health Coach, Pure Health7 Fitness A lifelong passion in fitness led Kerry born Fiona Fleming to return to college in 2010 to study Postgraduate in Exercise & Nutrition Science. She opened a successful gym studio in Galway city. Some years later the fitness world was exploding and slowly moving online. Clients habits and behaviours were changing. Work and life was becoming more time consuming and exercising consistently was becoming harder to maintain. Closing the doors on her physical business this year was a difficult decision however Fiona faced opportunity head on. PANDEMIC PIVOT I moved 100% online with unlimited access to a library of workouts and classes streamed live. With the gym I was limited to the number of individuals who can join a class at any given time. Having an online business, I can literally have thousands of people join my workouts from their living rooms. As we are moving to a more permanent remote working environment, finding 20-30 minutes during the day to be more physically active is less challenging. The impact from what I can see is it’s more likely to cause a permanent behavioral shift towards business online. COVID-19 just accelerated this. ADAPTABILITY Having the ability to absorb stress, recover and rebuild, and thrive in these difficult circumstances is key. I had 10 years building a community of amazing people. Life is not about bricks and mortar, it’s about friendship, loyalty, love, support, honesty and resilience. COVID19 permanently jeopardised the long term viability of the physical gym. Restrictions, social distancing, limited members, spaced out timetable, it wasn’t a comfortable or relaxed environment for my members. For many of us, exercise is an important part of our wellness routine, being part of a community has so many benefits for our mental and physical wellbeing. To keep this alive, online was the only option. AUTHENTICITY ONLINE Courage creates authenticity. Understanding your core values and living by them, you attract people that hold them too. I discovered my true self by making the hard decisions. If I can show people that we all face challenges, whether it’s physically, financially, spiritually or emotionally through social media then I am breaking down some obstacles that might stop someone from living a healthier and happier life. MINDSET MOTIVATION When people are exercising at home, it opens us all up to vulnerability. I consider this a strength. It was far easier motivating 20 people in one room, now I’m motivating 20 people in 20 rooms. There is a huge energy needed and observation is crucial. My purpose is making sure my clients feel like I’m standing right in front of them. The impact physical activity can have on people’s lives is incredible and I have the joy of seeing it every day. Learning to set my own challenges and find motivation is essential too. Short burst of HIIT 20 minutes a day and getting outdoors at the weekend work for me. I love climbing mountains and when you

By changing my mindset, I discovered happiness through simple pleasures! START UP ADVICE Be yourself, your business is an extension of you and focus on serving, not selling. Be persistent, patient and embrace digital marketing. I have failed several times in business, I try to dust myself off as quickly as possible. If something isn’t working, stop doing it. Pride is the demon. It has no place in the entrepreneurial world.

Can you believe we’ve reached Winter in what has been THE strangest year ever? How are you doing? I hope well. Events since February are, to use the 2020 word of the year – ‘unprecedented’ and, cue Bob Dylan, ‘The Times they are A-Changin’. The question is, will we ever reach a steadystate ‘new normal’ and how do we adapt to these shape-shifting times?

As someone who takes great pride and derives much joy from styling up their wardrobe, the abrupt change in my day-to-day routine this year hit me for six. Where I was once working in a fashion environment all week, I am now glued to a laptop in my kitchen. No more café lunches or nights out with the girls, the most airtime my outfit is receiving is the weekly supermarket run or my work Zoom calls. Like many, I found myself faced with a choice. Bow to the pressures of life predominantly at home, or rise to the challenge and begin to make my wardrobe work for my new situation. Naturally, I opted for the latter and began to make smarter styling and shopping choices, enabling me to take the reins and gain control over my personal style once more.

HELENA MALONE is traditionally trained in the art of goldsmithing and fine jewellery. She has been recognised for her design and quality and was awarded the Irish Fashion Innovation Awards, Jewellery Designer of the Year in 2018. NCAD graduate and West of Ireland Jewellery Designer LYNSEY DE BURCA creates minimal aesthetic jewellery pieces inspired by her surroundings near Moycullen, Co. Galway where she runs a business that now has an international customer base. Every piece is created in sterling silver and uses centuries-old craft techniques. The links have their own unique fingerprint, retaining an untouched raw texture on the outer edge contrasting against the smooth high polish of its flat finished front. “I have over 14 years’ experience in retail and this has proved invaluable to me. “Spend, spend and God will send’’ was a favourite quip of my mother-in-law after she’d been on a mega shopping spree and had blown the household budget. Sadly, I never got the chance to meet her, as she died over 30 years ago but I still find the phrase amusing when it pops up in conversation. It’s by turns, aspirational, there’s a leap of faith with it but it’s also a bit antagonistic as it was often used as a backlash when the hidden purchases were subsequently discovered and she was questioned.

any of us do the very same thing but the original reason for buying the ‘thing’ in the first place gets entangled in guilt. When does purchasing an item change from self-care to unaware or beware? If it’s about instant gratification, how long does the feeling last until there’s a need for something else? If there’s a lift everytime the ‘thing’ is worn or used, there’s nothing wrong with that. Purchasing clothes, in particular, certainly aids good self-care. We all like to look good and when an older item has been washed and ironed, we feel better. The same goes for personal hygiene and clean surroundings. So, what the hell is self-care anyway? Wikipedia defines it as: ‘learned, purposeful and continuous.’ In philosophy, self-care refers to the care and cultivation of the self in a comprehensive sense, focusing in particular, on the knowledge of the soul and the self.

The world as we knew it, shut down for a few months earlier this year but despite all, the sun shone, the birds sang and nature thrived. There was a much needed pause which we all had to take, regardless of our social standing or circumstance. The humdrum ceased and we all had to stop at least one or more of our daily activities and adapt to our new found predicament. Perhaps our workload increased. Busy parents of small children might have had to work from home also. In some cases, household difficulties were exacerbated and domestic violence rose. Sadly, not all of us had the luxury of time to think. Self-care might seem like an illusion to those of us locked into a particular happenstance but regardless, we all have to make choices each day and so have to manage aspects of self-care daily. Some of us clearly view self-care as ‘Me Time’- time to do us. This can mean a trip to the hairdressers or

spa, time to veg out with a favourite magazine or socialise with a few friends. This certainly contributes to a good self-care routine but what happens during lockdown, what did we all do, where did we go? If we merely see self-care as something external to ourselves, a place we need to go to to be pampered, then it’s time to dig deeper. It goes without saying that a healthy, balanced diet and cooking from scratch really helps our sense of well-being as does a full nights sleep and the three W’s - Walking, Water and the Wilderness. Prioritising food and sleep is key to wellness. They are basic needs. Meeting our own physical, emotional, mental, financial and spiritual needs are all part of good self-care. Taking charge of our own lives, addressing outstanding issues, not shirking responsibilities and knowing when to ask for help if we’re stuck or sinking, can really help our situation too. Knowing when to delegate or outsource is a very healthy thing to do. We can’t all be good at everything but it’s worth knowing our own skill set and when to invite assistance for our shortcomings which in turn, helps us gain a fresh perspective. Let’s start with our thought patterns. We don’t have to believe everything we think. Repeat, we don’t have to believe everything we think, especially those lesser things about ourselves. What happens if we were to tell ourselves something different, why not start a new narrative? When we know our strengths and are comfortable promoting them, we are less likely to self sabotage and put blocks in our own way. Trusting our gut or intuition and acting accordingly, takes care of us too. Knowing how our bodies respond in certain situations can protect us. We know that from past experience but we can fine tune it. We need to pay attention when our bodies tell us we are ill or exhausted or when alerting us to someone else’s bad behaviour. For instance, if our palms are sweating or the gut is twisting in response to someone else, listen. Listen to what our body is telling us, then really listen to the other person. Tiny putdowns and jealous vibes grow and mount up over time. Take the time to observe too. Fearlessly competitive people will make out we’re not quite as good as them and make ever so slight digs that always make us feel inferior or somewhat less than when we’re in their company. Recognising this for ourselves so that we are clear from the outset and that we are actually aware will all help in the long run. Instinctively we know when things are ‘off’, we see the red flags, when someone shows us their true

colours. Pay full attention, we want to prevent overriding situations which inevitably warp and re-present in a new form at a later stage. Physically walking out of an uncomfortable situation can buy us time and space if the emotions flare up or we have no words. Choosing to take time to respond, rather than react in the moment is beneficial. This especially applies to difficult texts and emails which can be left for a certain time frame (preferably 24 hrs.) so that we can come back with clarity and a good overview, feeling stronger and calmer. How we react or respond to other people can really impact our self-care. Having clear boundaries, knowing where we begin and another ends, is a massive point for consideration. Some of us are natural empaths, we see another’s needs, sometimes before our own and we often find we’re disproportionately absorbing or taking on an emotional load. Knowing what’s ours and what’s theirs helps immensely. We can be present in our help and listening whilst we’re with another but it’s imperative to know when to move on. Don’t dim your light or let someone else steal your sparkle to make them feel better. If we have a physical wound, we attend to it, the same should go for emotional wounds. Knowing where our sensitivities lie will help us navigate the world more effectively so over time, we can heal or at least coexist with the wound in full recognition. The same goes for addictions. We all have addictions, whether it’s to substances, sex, social media, the phone or being needed by people. When we know our weaknesses we can work with them and clearly define when we are triggered because someone else has spotted our achilles heel or when we are turning to our addictions for comfort. Knowing ourselves fully and why we are doing the ‘thing’ is crucial. Prevention is better than cure, as they say. Instant gratification, i.e ‘Spend,spend and God will send’, can feel like self- care in the moment and it can be great to buy that ‘thing’ but it’s when matters escalate and the circumstances surrounding the addiction start to own us, it’s time to ask for help. Who are we isolating or cajoling to support our habits? Self-care is about identifying our own and other people’s issues and just not interacting with them, a conscious decision. In short, doing things that nurture our own growth. Having compassion for ourselves and others, surrounding ourselves with like-minded people who want to see us succeed and respecting and attending to our own needs will inevitably promote self-care.

Don’t dim your light or let someone else steal your sparkle to make them feel better.

Mini Me

WE ARE HAVING A BABY! While it has been a rollercoaster of ups and downs this year, one major high is that we are due our third baby shortly. We are so excited. It has been strange being pregnant during a pandemic. I really do feel for firsttime Moms who have to go through the unknown by themselves due to restrictions. I am hoping when our baby is due that my husband will be allowed to be with me but time will tell. I am just going to focus my mind on the end goal of holding that gorgeous little baby in my arms. SHAMELESS BRIBERY With my second child, I was fretting that my son would feel left out when I brought the new baby home. It turns out there was no need to worry as he hardly took heed of Sián as soon as she handed over the present she got him. Based on that experience, I am sticking with my plan of shameless bribery for a seamless introduction again this time. The baby will give Sián a doll to look after and Lego for Jack-Riley.

SANTA SEASON We are due to go to Center Parcs to visit Santa before I go into hospital. For this reason, my children have written their Santa letters early. Sián who is 2 (turning 3 in January) wants a pram; she’s small in height so some of the older girl prams are too high for her. The Joie pram has an adjustable handle for different heights which is ideal. Jack-Riley, 4, wants a race track and the Flamingo toy that all the kids seem to be talking about this year. For the new baby, plenty of ‘First Christmas 2020’ memorabilia. SKILL DEVELOPING TOYS Whilst toys are meant for fun, they can also develop much-needed skills in children. Some of the most played with toys in this house are the ones where they are developing skills but they don’t see it as learning. My son loves the Doorbell House; he enjoys anything that he can try to figure out - door locks, doorbells, keys, etc., so this is ideal. Books also help my kids with understanding feelings. I love Bressie’s mindfulness books, his latest one ‘The Chill Skill’, is a great way for children to learn about how to deal with anger. With another baby on the way and less time on my hands I am trying my best to teach the kids to get dressed by themselves; one such toy which is helping develop their dressing skills of buttons, zips, and laces is the Melissa & Doug basic skills board.

THE #POWERWITHIN NETWORK GALWAY As Network Galway entered its 30th year in existence, it was one

that nobody could have predicted. January started off with a bang, with over 150 ladies gathering for the annual open evening, many of whom were new members looking to join this dynamic group of ‘Women in Business’.

O

n the night itself, Network Galway President Sharon Egan reflected on her goals for 2020. “I hope that every member will ignite the fire inside themselves and step out of their comfort zone. Network Galway provides women in business with a wonderful opportunity to grow their tribe and develop a system of support with other members.” And so the theme for the year was born, #igniteyourtribe. Little did Sharon know then, just how apt that message would be - in a year when every member had was forced to step out of their comfort zone, needed more than ever to grow their tribe and their network of support, channel their #PowerWithin and pivot in business to survive. And there was no better example of that message than Sharon herself and how she had to embrace the changes that the year threw at her as President of Network Galway. Live networking events had to be reshaped and reimagined. “It was a year of organising, re-organising, going to plan B and then to plan C, and re-organising yet again in most cases, as gatherings moved through different levels of restrictions and lockdowns, from in-person to online events.” Despite all of the challenges, the year was a huge success. “The sense of togetherness, supporting and promoting each other, and the engagement of our members has 40 | N O V / D E C 2 0 2 0

made me very proud of what we have achieved in these unprecedented times.” All of Network Galway’s events were supported by AIB Bank (National Sponsors), LEO Galway (Sponsors of the Network Galway Businesswoman of the Year Awards), media partners, The Galway Advertiser and GALWAYnow, and finally, the Galway Chamber and Galway Executive Skillnet. Indeed, there were many, many highs during Sharon’s year as President, including ‘The Lockdown Awards’ which were held online in March to raise members’ spirits while the country was under restrictions as the annual Awards had to be postponed. ‘The Businesswoman of the Year Awards’ where the winners were announced online during a virtual ceremony and surprised with a socially-distanced trophy dropped to their own doorstep. And the many Virtual Coffee Mornings where “members laughed and sometimes cried, but were all in it together”, according to Sharon. Indeed, ‘The Businesswoman of the Year Awards’ deserves particular attention. “This year 21 finalists competed in 5 categories during the most challenging of times. The awards were an opportunity for all of our applicants to reflect on their businesses and the wonderful work that has been done over the past 12 months, reacting to the current circumstances and

FEATURE transforming.” When asked about her greatest learning from her year as President, Sharon reflected on the power of Network Galway. “I was blown away by the members - how they engaged with Network Galway, supported each other during good times and bad, and embraced change to ensure that they came out the other side, stronger and better for the experience.” Our members once again showed their support in difficult times by raising over €8000 for Sharon’s chosen charity in a year where all charities struggled with funding. The funds raised will support projects in Galway for Rainbows Ireland who support children with Bereavement and Parental separation.

Incoming President Gemma Ní Chionnaith is no stranger to embracing change and pivoting herself. Gemma has enjoyed a hugely successful media career, having presented a range of shows for both TV and radio over the past 15 years. During this time, she acquired the franchise for Motivation Weight Management and dedicated five years to its development. Having sold the company in 2015, she returned to university to complete a postgraduate degree in Psychology and a Masters in Work and Organisational Psychology. Gemma’s most recent professional move has seen her join the family coffee business. “Prestige Coffee is a full-service coffee company, with over 15 years of experience. We acquired a national coffee company, Scanomat Ireland, almost 4 years ago and that’s when I got involved in the business. Scanomat had been operating in the coffee industry in Ireland for almost 30 years at that stage, so it was a great opportunity and a huge undertaking for the family.” Gemma’s latest undertaking sees her take over the reins as President of Network Galway. “2020 was an absolutely extraordinary year – full of ups and downs, challenges and opportunities, disappointments and great achievements. But above any other year, I think we truly got to see the value of being involved in Network Galway. The friendship, guidance and support that our members have provided for each other over the past 12 months has been really important for so many.” Gemma’s vision for Network Galway 2021 is to strengthen those connections within the organisation, continue to support each and every member, and promote and elevate their businesses during these challenging times. When asked about potential members who might be thinking of joining Network Galway, Gemma has this advice. “Just do it - you really won’t regret it! I know that the thought of joining can be quite daunting but you really have nothing to worry about. Our members are the most welcoming and supportive group of people that you could meet. You have nothing to lose and everything to gain.” Gemma’s chosen charity for 2021 is the National Breast Cancer Research Institute, which funds a comprehensive research programme at the National University of Ireland, Galway. “Each year in Ireland, 1 in 9 women are affected by breast cancer and there are approximately 3,000 cases diagnosed. These women are our mothers, daughters, sisters, grandmothers, aunts, nieces, friends and neighbours. We all know these women, they play central roles in our lives. Monaghan, 24-year-old Makeup Artist Keilidh Cashell is blazing a trail through Irish and international beauty circles amassing over 2.5 million followers on Instagram and Tik Tok for her creative genius in makeup tutorials and beauty vlogging. She has just released her new ‘Secret Treasure’ collection with her own brand, Kash Beauty. Niamh Casey caught up with the busy entrepreneur to discuss life on social media and advice for up and coming makeup artists. Photography Julia Dunin

Congratulations Keilidh! What was the inspiration behind this gorgeous collection? When people come on my social media they know that I do a LOT of colours but I also have grungy tones that I love to wear too. This collection was based on the rustic tones of treasure and the colours blend seamlessly into the skin. Where did your love of makeup come from? Pirates of the Caribbean that was one of the first movies to inspire me to get me involved with makeup. In the beginning, I want to do movie makeup. I applied to do it in college and I didn’t get the points in my portfolio or on my Leaving Cert, but it was a blessing in disguise. I would have still been in college today and I wouldn’t have done all these amazing things that I have done. Everything happens for a reason. I’m a very big believer in that. Can you tell us about social media? Well, when I first started my makeup account, Instagram was only getting big then. I was working at a makeup counter at the time. My whole agenda was always ‘how to be the best makeup artist I can be?’ and not ‘how can I get the most followers?’ I wanted people to see how passionate I am about my work and the amount of love and effort I put into it.

Beauty is a very saturated market at the moment, so you need to make sure you’re bringing yourself and your whole self to it. Don’t be afraid of making mistakes. Know your strengths and know your weaknesses. Ask for help and just do you. If you’re doing something that’s not true to you, you’re not going to put your whole heart into it and it will show. That’s probably the biggest and best piece of advice I could give because if I cared about what anybody else thought about me, I wouldn’t be where I am today. Focus on yourself, focus on your goals and you’ll get there. .

What has your online experience been like so far? There are definitely more pros and cons. Everyone knows cons like trolling for example but I feel like anyone who puts themselves online is going to have to deal with that. You just have to be a certain type of person to not really care. I’ve always been that type of person, I’m also able to connect with makeup mad people from all around the whole world. I’ve met people who I would never have got the chance to connect with otherwise, and I think that is incredible. Speaking of connections, what has been your favourite collaboration? The most amazing one was with Morphe, one of the

DEIRDRE NEWELL, Irish Defence Forces @dee_from_the_sea Sea swimming has led me to great challenges from the icy waters of Antarctica to swimming between countries and continents. The restrictions led me to slow down and reconnect; allowing me to grow my connection with the sea and the community surrounding it. My friends take to the sea most days at the Forty Foot, Dublin but never venture beyond the rocks to the swim marker buoys. From this group came “Buoysclub” who with support and lessons from myself and others built up the ability to complete the virtual Galway bay swim this year. I would encourage all to get in dunk your head and let the waves wash your worries away!

PAT DIVILLY, Motivational Speaker @patdivilly Sea swimming has been a real gift for me this year amongst the challenging and strange times. I've lived in Galway since I was a kid and it's only this year that I've really found the deepest appreciation for where we live and what we have on our doorstep. To me jumping into the cold sea is a chance to embrace a little discomfort and welcome it rather than try to avoid it. Another belief that keeps me going back to the sea is that the pursuit of health requires us going back toward nature. I spend so much of my work life in front of screens, particularly during these recent months. It's not normal and it's not natural. Getting back into nature, and into the sea in particular is a great reset.

BLACKBERRY AND SWEET GERANIUM POSSET A classic lemon posset or set cream is a simple and lovely thing and this version with blackberries and sweet geranium leaves, is a delicious variation on the theme. A little softly whipped cream is the perfect accompaniment along with a fresh organic or crystallised rose petal and a nougatine biscuit. A marriage made in heaven.

RORY’S TIP: Serve straight from the fridge, nice and chilly.

Place the blackberries, sugar, geranium leaves and cream in a small saucepan and bring to a bare simmer. Stir occasionally to encourage the sugar to dissolve. Maintain that bare simmer for 5 minutes.

CARROT, HALLOUMI AND DILL CAKES WITH TAHINI SAUCE, MINT AND POMEGRANATE YOGHURT AND SUMAC These are light and fresh-tasting little cakes suitable to serve with a drink or as a starter or a lovely accompaniment with their sauces to a platter of grilled lamb chops. The cakes and sauces can be made ahead of time and kept chilled. The lemony-tasting sumac is a marvellous spice that comes from the seeds of the deciduous Staghorn sumac shrub. Many people will have this relatively common garden shrub, Rhus typhina. Serves 8

250g carrots, peeled and coarsely grated 250g halloumi, coarsely grated 60g plain flour 1 egg, beaten 4 tablespoons chopped fresh dill 1 heaped teaspoon roasted and coarsely ground cumin seeds 1 teaspoon paprika Extra virgin olive oil, for frying Sea salt and freshly ground pepper

MINT AND POMEGRANATE YOGHURT INGREDIENTS

Ingredients: 250ml natural yoghurt 2 tablespoons chopped fresh mint 1 tablespoon pomegranate seeds ½ teaspoon roasted and ground cumin seeds

TO SERVE

Tahini sauce Pinch of sumac

To make the mint and pomegranate yoghurt, mix all the ingredients together. Taste and correct the seasoning.

Place the carrot, halloumi, flour, egg, dill, cumin and paprika in a bowl. Season with salt and pepper and mix well. Taste to ensure the seasoning is correct. Measure out 20g pieces of the mixture and form into little cakes. Place on a tray lined with non-stick baking paper and chill until ready to cook.

Heat a little oil in a sauté pan and fry the cakes until golden brown on both sides. Keep warm if necessary for a short time in an oven preheated to 100°C.

To serve, place the cakes on a heated flat plate and top each cake with a little dollop of tahini sauce and a light sprinkling of sumac.

RORY’S TIP: Serve as soon as possible, passing the mint and pomegranate yoghurt separately with a little spoon for guests to serve themselves.

COURGETTE SOUP WITH BASIL AND GARLIC, CHILLI AND FENNEL OIL This dish is fresh tasting and delicious with a zing of heat and spice from the garlic, chilli and fennel oil. A refined smooth soup with a creamy consistency, garnished with a little softly whipped cream or just a drizzle of plain unseasoned extra virgin olive oil and a restrained sprinkle of chilli flakes. Serves 6

RORY’S TIP : Should you happen to get a few of the

beautiful flowers with the courgettes, those are good torn into bite-sized pieces and scattered over the bowls of soup just before they go to the table.

INGREDIENTS

Heat the butter and olive oil in a saucepan and allow to foam. Reduce the heat and add the potato and onion. Season with salt and pepper and toss the vegetables in the fat. Cover with a disc of greaseproof paper and a tight-fitting lid and cook over a very low heat for 10 minutes, allowing the vegetables to sweat and begin to tenderise.

Add the chicken stock and bring to a simmer. Cook, covered, until the potato and onion are completely tender. Add the diced courgette and simmer, uncovered, until the courgette is also tender. Add the cream (if using), return to a simmer briefly and purée the soup to achieve a silky-smooth consistency. The consistency (thickness/ thinness) of soup is down to the individual – more or less stock will achieve that. Taste and correct the seasoning.

Serve the soup in hot bowls with a drizzle of the garlic, chilli and fennel oil and some torn basil leaves.

Nuts are one of nature’s power houses. They are naturally nutrient dense, whilst also high in calories and fats. So, if you formed your ideas around healthy eating a few decades ago, you may find it hard to shake the idea that you should avoid nuts. Chopped nuts and seeds add flavour, texture and nutrition to salads, soups and whole grain breakfast cereals. A little goes a long way when included every day.

SUBSTITUTE THEM

Swapping out red and processed meats with nuts can have doubleedged benefits - reducing the risk associated with high meat consumption and also negating the risk of eating too few nuts. Experiment with nuts in place of meat in salads, and main dishes such as nut loaf or added to a vegetable casserole.

Preparation time: 10 minutes Freezing time: 5 hours

SPICY ROAST NUTS/SEEDS INGREDIENTS

3 tbsp coconut oil ½ cup maple syrup or local honey 2 tsp vanilla extract (not essence) ½ tsp sea salt flakes 300 - 340g jar light tahini 10 - 15 roasted almonds/hazelnuts 4 dried figs, diced

2 cups mixed nuts and seeds (cashews, almonds, walnuts, pecans, pumpkin and sunflower) 1 tsp smoked paprika (or use cayenne for spicier version) 2 tbsp maple syrup 1 tbsp melted butter (optional or coconut oil for dairy free) Pinch salt

1. Melt the coconut oil on a very gentle heat. Remove and stir in maple/honey, vanilla and salt. 2. With a fork, beat through the tahini, nuts and figs. Smash a few roasted hazelnut and scatter on top. 3. Scoop the halva mix into a small rectangular container lined with cling film. Freeze for 5 hours, remove cling and cut into approx. 30 squares. 4. Wrap in parchment and store in the fridge. Serve from frozen.

1. Preheat oven to 160C 2. Place ingredients in a bowl and toss well, then spread out onto a baking tray lined with greaseproof paper. 3. Bake in the oven for 25 minutes, or until lightly toasted. Stir at least twice. 4. Allow to cool and store in an airtight container.

Serve before a meal or use to top a salad or soup. For a nut-free version, use seeds instead and roast for less time.

Inside Out Garden inspiration for Galway’s green fingers Sometimes I think I like my garden best in Winter. We have that kind of relationship I suppose – whatever mood it’s in, it’s my current favourite. You could call that dysfunctional but I call it true love.

I

’ve been pondering this, as you do, and here’s why the wintry/mean mood works for me. Although it’s small, the structure works – (even though it sometimes feels like nothing else does) and this is probably down to the nature of the day job. When the froth of summer flowers is stripped away, the structure becomes more apparent, and plants that in summer play second fiddle take centre stage. The rounded domes of Pittosporum ‘Golf Ball’ in sage green and ‘Tom Thumb in deepest amethyst’ are working hard now, as is the Pheasant’s Tail Grass – this supermodel’s bronze and crimson tints never fail to lift the spirits. Even the elderly climbing rose, minus its bright red blooms, has a beauty in the twisted bare branches, hardworking gnarled limbs resting after working so hard all summer. It runs a bit deeper than appearance though. The winter garden has such possibility, because as every gardener knows, the best summer in the world ever is the one that’s coming next. The one when it all comes together, when everything works. It’s like looking 60 | N O V / D E C 2 0 2 0

forward to a party with your oldest friends or a holiday somewhere gorgeous – the anticipation is a cherished part of the experience. Which makes it extra precious this year. Because we don’t know, do we, when we can look forward to a culture infused city break, a sunny beach holiday or a joyful family wedding? We don’t know when we’ll see the siblings in the States, or even meet the newborn grandchildren we are longing to hold in our arms for the first time, because of that tiny pathogen most of us hadn’t even heard of this time last year. The dark days of winter would have you think good times might never come again. But gardeners know that everything passes and however dreary winter is, it’s temporary. Light, colour, and abundance are in the future, just beyond the darkest hour. They know this because they know that what grows in your garden grows in your life, if you let it. They know you have to live through the time of dying, the cold, the dirt and the desolation, and then the year turns, the earth turns, and green things happen.

RECONNECT AND REFLECT It’s easy to get distracted with the mountain of tasks leading up to your wedding but make sure to find the time to organise regular date nights with your other half and make a rule to not talk about anything wedding related. If you usually spend a weekend night together in cosies on the couch with a takeaway then make sure to differentiate from that. Dress up, set the table nicely, light a candle, pop on a soothing Spotify playlist and recreate a romantic restaurant ambiance.
