The Meadows Country Club Hole #13
Nestled in a lush, vibrant setting of over 1600 acres with more than 80 pristine lakes, waterways and preserve areas, The Meadows Country Club is the centerpiece of one of Sarasota’s premiere master planned communities that just keeps getting better all of the time. There’s something for everyone at The Meadows with many social events, educational programs and recreational activities including the 14 miles of oak canopied walking, nature and biking trails that weave through the community.
The 18-hole Members course at The Meadows has always been known as one of the finest layouts in the area, offering six sets of tees with yardages from 4,586 to over 6,700. In April, the Club began an exciting $1.5 million capital improvement project that includes the golf course and practice area. David Johnson who was contracted to reshape the golf course has a long and varied experience in golf course design including having worked on TPC Boston, the 2020 host of the Northern Trust PGA Tour event. All 18 greens have been reshaped and rebuilt using TifEagle bermudagrass, which offers improved speed, consistency and playability. All of the fairways have been resprigged; each of the tee boxes have been re-shaped and sprigged, and every bunker has been rebuilt.

Johnson also worked with bunker positioning. On some holes he added bunkers such as on No. 5, the No. 1-rated handicap hole on the course. Five new bunkers

have been added, including one strategically placed 215 yards from the tee box that collects errant shots. “David Johnson’s vision is at his best on this hole,” said Bill Snow, chairman of The Meadows golf committee. “The new bunkers at the dog leg are just begging you to reach them. And if you navigate the bend without entering them, you are looking down the chute of a tight but fair fairway, bunkered left with trouble right. It truly is a great hole. “ Number 12 is one of the more dramatic transformations where Johnson moved the green closer to the water in front, and added 3 bunkers behind the green. Accuracy and nerves of steel are both advised for challenging this short par-4. After seeing the completion of the 18th hole, Snow commented “The 18th green is a masterpiece. I always felt we had one of the best finishing holes in the area. Now we have the best finishing hole in SW Florida.” Also on the drawing board at The Meadows

is the remodeling of the Regency Room in the main clubhouse, and expansion of the fan viewing area and restaurant seating of The Centre Court Lounge at the Tennis Centre. The Regency Room, the site of many weddings and events is a new design that merges “Old Florida” with a mid-century modern motif. Walls have been removed to provide greater views of the golf course as well as to facilitate ease of movement and socialization through the new modern open spaces. Turn left off of Fruitville Road onto Tatum Road and you’re there. Tatum Ridge Golf Links is a Scottish-style links course complemented by preserved wetlands and 11 lakes in a natural setting, with plenty of wild life and nature at its best. CHEF MARK EVANS CORN LEEK RISOTTO WITH SEARED SCALLOPS
Executive Chef Mark Evans, has 23 years of culinary experience and graduated from Le Cordon Bleu College of Culinary Arts.
INGREDIENTS
6 Cups Chicken Stock 2 cups of sweet corn 2 Tablespoons unsalted butter 1 cup grated parmesan cheese 1 Leek, white and light green parts only 1/2 cup heavy cream finely chopped 1 cup grated parmesan cheese 1 cup arborio rice 1 teaspoon salt, 1/4 teaspoon pepper 1/2 cup white wine Melt the butter in a sautĂŠ pan over medium low heat. Add the leek and cook while stirring occasionally until it is translucent. Add rice and cook until grains look slightly translucent. Poor in the wine and reduce until the wine is absorbed into the rice. Add a ladleful of hot chicken stock to the rice and cook while stirring constantly until the rice has absorbed all of the stock, continue cooking adding ladlefuls of stock whenever rice mixture looks dry. Add in the corn and cook until the corn is tender and rice is creamy and tender. Add your remaining butter and cream and bring to a low simmer while stirring constantly, once to a simmer add your cheese and cook until cheese is well incorporated into the risotto. If its to thick add more butter and cream until you get the desired creaminess.

1 Tablespoon Olive Oil 5-6 U-10 Scallops 1/2 teaspoon Salt 1/8 teaspoon pepper Place a SautĂŠ pan on medium high heat and add the oil. Make sure pan is nice and hot, pat dry the scallops with a paper towel and remove the side muscle on the scallops and season with salt and pepper, place the scallops in the hot pan and cook for about 2 minutes on both sides, they should have a nice light brown color on both sides take scallops off the pan and let them rest to cook all the way through. INGREDIENTS
FOR THE SEA BASS 4 Chilean Sea Bass (7 - 8oz portions) Flour - as needed Olive Oil - as needed, Salt & Pepper to taste FOR THE LEMON OIL 1 cup Grapeseed Oil 4 Tbsp Fresh Lemon Juice 1 Tbsp Lemon Zest 1 tsp Minced Shallots 1 tsp Sugar 1 Tbsp Good Quality Limoncello
FOR THE RISOTTO 3 Tbsp Olive Oil 11⁄2 cups Arborio Rice 2 Tbsp Minced Shallots 1⁄4 cup Brandy 3 cups Lobster Stock 10 ounces Diced Lobster Tail meat
SEA BASS: Heat olive oil in a non-stick pan. Dust the Chilean Sea Bass with seasoning and flour. Sear the Sea Bass on both sides until golden brown. Finish in 450°F oven for eight minutes. LEMON OIL: Puree all ingredients in a blender for 2 minutes. Strain through a fine mesh strainer and set aside. RISOTTO: Heat the olive oil in a two-quart saucepan; add the shallots and sweat until translucent. Add the Arborio rice, sauté for two minutes and deglaze with brandy. Stir in diced lobster meat and add the lobster stock in one cup increments until all liquid is absorbed. ASSEMBLY: Place cooked risotto in a ring mold in the center of a large dinner bowl. Set the cooked Chilean Sea Bass on top of the risotto and finish with three tablespoons of lemon oil. Garnish with petite greens and finely chopped chives.! The LPGA Tour Returns to Tampa Bay November 16-22 The stars of the LPGA Tour are headed to Tampa Bay November 16-22 to take on the newly opened Pelican Golf Club in Belleair. The course, which has already become a jewel among Florida golf tracks, promises to serve as a worthy test to the best golfers in the world. Pelican is a Donald Ross design that has been completely overhauled to create a truly unique experience. The tournament announced previously that tickets are unavailable for purchase due to the COVID crisis, but all four rounds will be televised on Golf Channel to more than 155 countries. The inaugural Pelican Women’s Championship marks the first LPGA event in the region since 1989 when the final St. Petersburg Open was played at the Pasadena Yacht & Country Club. The Tampa Women’s Open was held at Palma Ceia Golf & Country Club from 1947-1960.
The field for the Pelican Women’s Championship will be one of the strongest in all of professional golf and is expected to include stars like Lexi Thompson, Morgan Pressel and Brooke Henderson. It’s also expected to include top-ranked players with ties to the Tampa area including Brittany Lincicome and Nelly Korda. The event includes the opportunity to play alongside the pros in the Pelican Pro-Am. Golfers of all abilities are invited to contact the tournament office to learn more about this unforgettable experience. Every professional golf tournament needs an army of volunteers to assist in operations. In 1911 William Cunningham moved
his family from Fletcher, North Carolina to St Petersburg, Florida and opened a hardware and grocery store on Central Avenue. From the onset they enjoyed success with their business venture. In the early 1930’s, as a result the family’s successful business, William’s son Howard Cunningham, Sr. was able to purchase a 300-acre piece of property west of St. Petersburg. He named it Pine Ridge Farm. Pine Ridge Farm was a working cattle ranch with all of the family members contributing to its operation. For many years the Cunningham family – including Howard’s three sons Gene, Book and Doc Cunningham – enjoyed the farm, which at that time was a long way from their GolfCoastMagazine.com
home in the city. While not working on the property, the family members used the farm as a getaway. The remnants of the family cabin remain on the property just west of today’s clubhouse. In the early 1960’s, the brothers were approached by a local real estate developer. He convinced them to turn the property into a housing development and country club. So in 1962 Seminole Lake Country Club Estates was born. Shortly after the start of the project, the developer was no longer involved and the Cunningham brothers obtained control of the property. As time went by, the community flourished and the club acquired an excellent reputation

as one of the premier country clubs in Florida, boasting a full membership and an active social events calendar. Arnold Palmer played an exhibition round at Seminole Lake Country Club shortly after the course opened. The club hosted several of the premier events in the Tampa Bay area during this time. Over the next four decades the club remained a successful private club, adding tennis courts, and a swimming pool to enhance its amenities. In 2007, golf course renovations were initiated including the resurfacing of all greens, refurbishing the bunkers and adding a complete practice facility. These improvements were very well received by the members. However,

membership started to decline in the wake of the historic 2008 economic downturn and the club converted to semi-private status. Since then, Seminole Lake Country Club has become one of the favorites of golfers throughout the Tampa Bay area. Its excellent location, consistently good condition, playability and service level bring golfers back again and again. Coincidentally, membership has grown as well. Just this past summer, the club installed an entirely new irrigation system. To this day, the club is still owned by the Cunningham family and maintains a very warm feel just as the three brothers originally intended when the club opened in 1962.

Tarpon Springs Golf Course Originally built in 1908, the Tarpon Springs golf course follows the architecture of the time with small, elevated greens and quite a few doglegs. The course is very scoreable on your good days, while water hazards can wreak havoc on your bad ones. During the summer of 2014, all 18 greens and two practice greens were reconstructed. The greens now feature new contours and state-of-the-art Seashore Paspalum turf. At the same time, bunkers were re-sanded and the driving range renovated. Tarpon Springs golf course is honored to be a participating course on the Florida Historic Golf Trail. The “Trail” celebrates Florida’s early golf heritage by featuring publicly accessible golf courses throughout the state that golfers can still play today.
