Culinary expertise, outstanding cuisine, an inviting atmosphere, and great company all shape the experience of an outstanding meal. By way of its very nature, eating has always been a social experience that centers on a shared sense of community and togetherness. We hope that in the pages that follow, you find venues to share with your family, friends, and loved ones in the spirit of the Gonzaga Community. Food is a universally enjoyed experience. To experience food is to let aromatic smells delight your senses, succulent flavors to tickle your tongue, and the joy of loved ones to warm your heart. Zambia Gold Honey Zambia Gold is a student run business that has created a rewarding relationship between the people of Zambia and Gonzaga students.

Josh Armstrong, leadership professor and coordinator of the Zambia program, said that Zambia Gold is unique because “it is a sustainable business started by Gonzaga students.” The business – a partnership with honey-bee farmers in Zambia – was started in 2008 by a group of students who traveled to the African nation. Zambia Gold honey is for sale at the front desk of Crosby, the market in Crosby’s basement, the two student bookstore locations, Tilford Café and Coughlin Café. The honey is sold in a 12 oz. jar for $10 and can be purchased with dining dollars, cash, or debit/credit cards. The Comprehensive Leadership Program and the students traveling to Zambia this summer are raising awareness at Gonzaga about the significance of the honey sales. All profits go back to the community of Zambezi. The money goes to buy textbooks, notebooks, desks, and most recently, toward building a new library in Zambezi. The new library will cost about $18,000. Sophomore intern, Conztanza Ponce de Leon, said the project is going well, but added, “There’s still more work to do and more money to raise.” The business focuses on more than just raising money for the Zambian community. “This unique program offers the concept of accompaniment. We are simply helping Zambians stand on their own two feet,” Armstrong said. He added that by working together with the people of Zambia and not simply writing them a check, the business and the program have been able to create strong, long-lasting relationships with the people of Zambia.

Alpine Bistro Renowned in the greater Spokane area for their artisan bread and pastries, Alpine Bistro & Bakery supplies over 100 local restaurants with their homemade delights. GU Alumnus Manages Spokane’s Iconic Steam Plant Grill After earning a biology degree at Gonzaga University, Tim Denniston never thought he would end up back in Spokane, let alone managing one of Spokane’s most iconic eateries. Today, he could not be more proud to be part of the ever-evolving food culture in Spokane. Up until 1986, the Steam Plant provided heat to most Tim Denniston of the major buildings downtown before it became no longer economically viable to operate. In 1996, the city told Avista to transform the space, which holds Steam Plant Grill, or it would have to be torn down. Architect Ron Wells and his wife, Julie, an interior designer, created the retail space, which now contains the restaurant, creating access to a historical landmark within the city. Denniston could not say enough about Spokane’s food scene as new, innovative restaurants continue to pop up throughout the region. From once being a ‘potatoes and steak’ city, Denniston observes the change of culture with a smile, as people branch out and try new food items. He has noticed that less people choose to order White Zinfandel and bottles of Bud Light as people are exposed to, and educated about, the variety of wine and beer that comes out of eastern Washington. Catacombs Pub Catacombs has a unique ambiance, as the location was once the Boiler Room for the historic Montvale Hotel in the early1900s. Offering OldWorld European Cuisine, such as Beef Stroganoff and Hungarian Goulash, Catacombs also serves up brick oven pizza and calzones. Catacombs’ thincrust pizza dough is made in-house, and guests are sure to delight in the brick oven located behind the bar, where they can watch their pizza or calzone being made. ZAMBIA GOLD - Continued from page 3 A group of about 14 students, along with Armstrong, are departing for Zambia on May 15, and a second group will be arriving at the end of May. While in Zambia, students will work with the people teaching computers skills, leadership, and health education. Zambia Gold is helping maintain the bridge between the Zambezi and Gonzaga communities. Ponce de Leon believes that, “Every jar of Zambia Gold honey, in a way, represents the friendship both communities have built through the years.” 2012

Lindaman’s Drawing from over 600 recipes developed in-house over the last 28 years, Lindaman’s Gourmet Bistro has a continually rotating selection of mouthwatering delights. A selfdescribed “community melting pot,” Lindaman’s hopes that guests come away with a full belly and a sense of belonging. Lindaman’s rotates through about 50 different salads, always having at least eight options available, like the Edamame and Black Bean salad. With this unconscious rise in sophistication, restaurant entrepreneurs delight in offering menus with more diversity to satisfy everyone’s desires. Staying true to the change, the Steam Plant Grill does everything possible to keep their menu community minded by adjusting items seasonally, buying local bread, getting produce from Greenbluff, and utilizing regional ranches for all meats and pork chops. Their chef even grows spices at his home on a ranch in Spokane Valley. Steam Plant Grill knows how to cater to this college town with their $99 kegs and Happy Hour featuring ½ off appetizers and a handful of drink deals. Their Happy Hour lasts from 3-6pm Monday through Saturday and lasts all day on Sunday. Denniston is always happy to see Gonzaga students enjoying his restaurant or bringing in their families. Gonzaga holds a special place in his heart, and to this day, some of his closest friends are alumni. He did not hesitate to mention that Gonzaga students are some of “the best people [he’s] ever met.” Appreciating that Gonzaga not only educates, but teaches students how to think has stuck with Denniston throughout this post-grad-life and career changes.

Pete’s Pizza In the early 1970’s, a group of Gonzaga Italian Club students encouraged local pizza maker Pete Barranco to make calzones like they had eaten while studying abroad in Italy. Using his grandmother’s calzone recipe, Pete opened Pete’s Pizza, “The Calzone King,” in 1972 at the very same location it is today on Sharp. Steam Plant offers guests the opportunity to dine within a historic Spokane landmark. Originally, the Steam Plant was constructed to produce steam heat and electrical power for downtown Spokane, and was in operation until 1986. The restaurant features 80-foot ceilings, old boiler pipes and catwalks, a view to the pub down below, and the opportunity to walk into a 225-foot smokestack! Steam Plant has a distinctive approach to dining, working with local farmers to create dishes that celebrate the region. Taste of India believes in creating delicious, authentic East Indian cuisine and a unique, friendly atmosphere for all their guests by sharing their love of Indian culture through their food. Chefs from mostly Northern India ensure that every dish is authentically Indian, and served family-style with basmati rice at any spice level imaginable. Taste of India is both family-friendly and perfect for couples on date night. The restaurant offers window seating with views of downtown Spokane and the South Hill. The interior is warmly lit and very colorful with a newly remodeled main dining area. Guests can enjoy classical Indian music and Bollywood hits playing throughout the restaurant while they dine. Entrees are served in medium-sized, boat-shaped dishes with more food than guests could fit in their palms or naans! House favorites Chicken Tikka Masala and vegetarian option Navrattan Shahi Korma, have a nutty, creamy flavor and can be spiced mild, medium, hot, or extra hot. Tandoori Specialties are also house favorites. These dishes are made with marinated chicken, lamb, fish, or shrimp, and are baked in a clay oven, called a tandoor.
