There was still snow on the ground when the planning started. Friends and family members who had spent much of this long cold winter nesting were eager to spread their wings and I was right there with them. Summer, we agreed, is fleeting and we wanted to enjoy every minute. There would, we decided, be trips to the farmers market followed by a vegetable-laden dinner on the back deck. And a tour of local garden centres and time in the yard pulling weeds and planting flowers. We would take an afternoon to walk through a neighbouring downtown, browse the shops and stop for a drink. And finally try that restaurant we’d been talking about for months. There would be a weekend up north with extended family enjoying their sometimes chaotic company, the water and everything barbecued. And a few quiet couple’s evenings on the front porch looking at the stars and listening to the crickets. We would hit the trails, for hikes and runs and a backpacking trip or two. We would return to camp at a favourite park and try out a new one. It’s an ambitious list, but we’re up for the challenge. I hope this issue inspires you to make the most of your summer. When Tracey and Kathleen Hutchison bought their five-bedroom Richmond Hill home nine years ago, they hired Marisa Lupo of Lumar Interiors to take the main living areas from “new build” to elegantly comfortable for them and their two young daughters. This year, they decided, it was time to do the same for the upstairs, and again called Ms Lupo and her partner Luisa Maringola. Like many of us, the Hutchisons had focused their energies and dollars on the public areas of their home first. The upstairs, which features the master bedroom and ensuite; their daughters’ rooms, which are connected by a bathroom; a guest room and bath; and a combination laundry room and home office, was crying out for the same attention. summer 2014

The décor was getting a little tired. The girls, now in their teens, were still in “Barbie pink” rooms and the guest room was outfitted with items they had bought decades ago. “We’re grown-ups,” Mr. Hutchison says, “It was time to get rid of the Ikea furniture.” The spaces had good bones, says Ms Lupo, such as dark cabinetry in the ensuite, neutral natural floor tiles and large windows, but they lacked personality, a sense of style. “We added the pretty things,” she says. They started from scratch in the master to create a bit of an adult retreat. “It gives us a spot to hang out when both girls are home and the house is full of kids,” Mr. Hutchison says. “It allows us to take advantage of the space we have.” The mood is warm and calm. The colour scheme is neutral, but texture, such as the custom tufted headboard, grasscloth wallpaper and fuzzy bedding, as well as pattern on the chairs, drapes and pillows keep it interesting. A dramatic counter-to-ceiling backsplash in a mosaic tile that picks up colours from the existing floor is the new focal point in the bathroom. Trios of mirrors and lights add sparkle.

Glass mosaic tile adds colour to the Hutchison girls’ shared bathroom

The girls’ rooms reflect their own personalities but are tied together by a common colour, a watery turquoise blue. It appears in the glass tile backsplash in their shared bathroom and in various applications in both bedrooms. One space is decidedly more glam—and features a shade of that common blue on the walls, a deep blue velvet tufted headboard, curvy-legged side table and crystal chandelier. In the other room, a more neutral greige headboard and custom window seat cushion are punctuated by graphic hits of turquoise and orange. The Hutchisons’ old bedroom furniture has been given new life in the guest room, which Ms Lupo updated with accessories such as lamps, artwork and drapes in a bold deep orange floral. Working with Ms Lupo allowed the Hutchisons to create an upstairs that works for them—without doing all the legwork. Rather than spending days browsing through paint, fabric, furniture and décor stores and websites, they discussed ideas with the designer, who came back with a few suitable samples of upholstery fabric, paint chips or table lamps to choose from. The results, says Mr. Hutchison, are more than they could have accomplished on their own. “There’s just no way we would have been able to pull it all together.” The look of the spaces is both classic and modern. The shapes and colours feel fresh, but not flash-in-the-pan—a look that Ms Lupo says works with the Hutchisons’ personal style, but also makes good sense. The items you buy for your home should have a lifespan of at least 10 years, she says. That means choosing pieces that are well made and will stand up to use and that you will still appreciate and enjoy a decade down the road.

“The entrance to a house is very important,”says homeowner Jeanne Hammill. “It sets the tone for the rest of the house and it’s where you greet your guests and linger when you’re saying goodbye.” Ms Hammill and her husband Tim Hammill bought their 1980s bungalow, located on a quiet Aurora street, more than eight years ago. Although the house didn’t look like much at the time, the Hammills, who had more than 25 homes and many renovations under their belts, saw the potential and knew they could transform it into something great.

In its original state, the entrance was small, drab and out of scale. “I didn’t want a huge, grand foyer because it wouldn’t suit the house,” Ms Hammill says. “But the low ceiling made it feel tight and I wanted more light.” They spent seven months working with a local contractor to renovate the entire house, including significant changes to the front foyer. Components of the entrance were stretched, removed, added and enhanced. Major structural changes included moving the exterior wall out four feet, raising the roof and adding a shed dormer, adding two windows, widening doorways into adjacent rooms and building two closets. After the structural tweaks came some decorative touches and architectural features, such as the columns framing the doorway to the living room, five-panel closet doors, a custom Craftsman-style front door and a panelled wall serving as a beautifully detailed backdrop for the entire area. The results are spectacular. The dated, ordinary and dark entrance has been replaced with an open space that is flooded with gorgeous, natural light, well-thoughtout details and a charm that is part of Ms Hammill’s signature style.

The weather is warm and summer beckons—and it’s time to make some changes in your home to reflect the season. Goodbye wool blankets, pine cones and fire logs; hello cotton throws, fun and colourful pillows and fresh-cut flowers. A practical and easy way to spruce up your home for summer is adding a new area rug to a well-used space, such as the front entrance. With area rugs available in a variety of shapes, sizes, materials, patterns and pricepoints, there is a carpet available for your space. “Rugs are great at transforming areas because they offer pattern and colour in ways that no other home décor element can,” says Lindsay Card, manager at Patti-Lynn Interiors in Stouffville. “Rugs are simple and can be easily done without getting into larger projects. And best of all, they can be anything you want—fun, dramatic or subtle.” Fibre Area rugs come in a variety of natural fibres, such as wool and sisal, and synthetics, including nylon and olefin. “The fibre of carpet you choose will play a huge, possibly the biggest, role in how your carpet performs and what you pay,” Brandon Terry of carpetcaptain.com explains. “Each material has unique properties that impact its ability to come clean, stain-resistance, durability and comfort, potential to grow mould, eco-friendliness and cost.” Wool and nylon wear quite well (great for high-traffic areas like an entryway or laundry room), while polyester and polypropylene score points for stain resistance (ideal for kitchens or kids’ rooms). $$$ TIP: Before purchasing an area rug, consider whether it will be an investment piece you’ll use for years or something that will get replaced after a few seasons. This will help you decide whether to pay the extra bucks for a specific fibre, such as wool. . 34

Size and pattern Consider furniture placement and practicality when deciding on the size of rug you need. (People should be able to come inside and stay on the carpet without worrying about stepping onto the floor with dirty or wet shoes, for example.) You might find that perfect rug in a home décor or department store, at the supermarket or garden centre or even a garage or estate sale. But if the standard sizes won’t fit your space or you’re looking for a particular colour, you might want to consider a custom piece. “Many people don’t know that stores, like ours, that offer carpets for large wall-to-wall residential projects can also create area rugs from the same product for our customers,” Ms Card says. “This means you have access to the hundreds of options that designers and contractors do.” Designers often go this route for clients because of the customization it offers. “These types of carpets can be cut and bound to suit all sizing and shaping requirements, no matter what the space you are working with,” explains Jennifer Brouwer of Jennifer Brouwer Design in Markham. A round rug, a runner for your stairs or a specific pattern are all possibilities when creating your own custom rug.

After being cocooned indoors for seemingly endless months, the opportunity for some outdoor living has finally arrived. And, with the current trend of creating spaces that merge the lines between inside and outside, the choices to decorate with flair and colour are abundant, affordable and definitely fun. levels; Rain Lite LED candles, (particularly handy because they can be operated by remote), which provide ambient lighting without attracting mosquitoes; dramatic wall art featuring peacocks and parrots; and “wow” pieces such as three foot bird cages that act as planters for colourful summer foliage. “People are coming in asking for concrete figurines,” says Margaret Rose, manager at Vaughan’s Terra Greenhouses. “Fairies and frogs in yoga positions are especially popular.” And gnomes are back for summer garden fun. The new gnome is plaster rather than plastic, with earthy-tone colouring and expressive features that are decidedly less kitsch and a lot more charm. Animals are well represented in the backyard garden this year and include wrought iron cranes, metal roosters, composite driftwood ducks and the wise old owl. “Owls have gained in popularity over the last year or so,” says Jen Ferragine of Bradford Greenhouses. “They are popular as statuary, pillows and wall art. Peacocks, with their colour palette, are also making a comeback. The beautiful teal, emerald and purple combinations make them fun and bold in any kind of application.” Patio furniture, with its trendy stylish sectionals, substantial dining tables and comfortable plush seats, has definitely evolved. “The accessories that are available for outdoor furniture are moving forward with beautiful, colourful cushions in updated patterns, accompanied with lanterns and outdoor rugs,” Ms Ferragine says. “Even Adirondack chairs have come a long way, being constructed now of a composite material that is available in a large selection of colours. The benefit to composite over wood is that that they never have to be restained or painted, they stay cooler on hot days and slivers are no longer a concern.” If you really want to get serious about your summer backyard space, a tiki bar and a big

old palm tree are just the ticket to impress all your friends and neighbours. “Tiki bars are great looking and add coolness to anyone’s backyard,” says Don Smith of The Backyard Pool and Spa Company in Aurora. “The tiki bar quickly adds a focal point to any backyard. It’s easy to place and because it’s already mostly assembled, you can start enjoying it immediately.” Sizes range from two by four feet, all the way up to custom 20-by-20-foot units; finishes such as stone, bamboo, and cedar are available. Add the synthetic thatch roofing material to the roof, and mucho gusto, you’ve got a bar you can enjoy for years to come. And what is tiki bar without an authentic giant green palm tree? Putting in a faux tree involves pouring a concrete pad just below ground level and then securing it with hardware; the good news is, in most cases this can be done in an existing flower bed or garden. Be it as simple as Muskoka chair and a few potted plants or as elaborate as a patio under palms, take comfort in your outdoor space this summer.

There is something about a basket of just-harvested Ontario strawberries that says summer. In July in York Region, you have easy access to this seasonal favourite—whether you’re picking them yourself in a local field or shopping at a produce stand or farmers market. Here are recipes for two of my favourite desserts featuring strawberries, as well as a new-to-me salad recipe from a local grower.

STRAWBERRY SEMIFREDDO Semifreddo is my go-to summer entertaining dessert. You can make it a day or two ahead of time, just taking it out of the freezer for a minute or two or so before cutting and serving. And once you know the basic recipe, it’s easy to switch up depending on what’s in season and what you have in your pantry. Peaches, rhubarb, raspberries, blackberries, candied pecans, slivered almonds, dried apricots or figs, bourbon, limoncello, citrus juice and zest, honey or melted chocolate all work in a semifreddo. Finely chop the strawberries (I used a food processor), reserving juices. Line a standard loaf pan with plastic wrap, leaving excess to wrap semifreddo. Create a double boiler by adding water to a saucepan and placing a heat-resistant bowl on top. Bring water to a gentle simmer. Add eggs and sugar to bowl and beat with an electric mixer until thick and pale, about 8 minutes. Remove bowl from heat and continue to beat until mixture has cooled to room temperature, about 5 minutes. In a clean bowl, with clean beaters, beat the cream and vanilla until it is the same consistency as the egg mixture. Fold egg mixture and cream together. Fold in strawberries and juices. Pour into loaf pan. Wrap carefully and freeze until firm, about four hours or up to two days in advance. To serve, remove from pan to cutting board or serving platter. Using a warm knife (heat under hot water then dry) cut slices. summer 2014

ROASTED STRAWBERRIES Make a big batch of these while strawberries are in season. Store in the fridge for up to a week or in the freezer for longer. Use them in desserts (like Eton Mess, below), mixed with plain yogurt for a snack, to top oatmeal or pancakes or on seedy crackers with goat cheese. ingredienTS

1,250 mL (5 cups) strawberries, halved or quartered 60 mL (1/4 cup) sugar 10 mL (2 tsp) vanilla 5 mL (1 tsp) canola (or other neutral oil) MeThod

Heat oven to 375 Fahrenheit. Using a pastry brush, spread oil on baking sheet. Toss together strawberries, sugar and vanilla and spread in single layer on baking sheet. Roasted, stirring occasionally, until strawberries are soft, about 20 minutes.

ETON MESS Make the roasted strawberries and meringue ahead of time, but whip the cream just before layering in a pretty glass to serve. Serves 6. ingredienTS

To make the meringue, preheat oven to 250 Fahrenheit. With an electric or stand mixer on high speed, beat egg whites until foamy and small peaks begin to form. Gradually beat in sugar, until mixture holds stiff peaks. Spread on parchment-lined baking sheet and bake for 1 hour, until dry. Cool, then break into pieces. Meringue can be stored in and airtight container for a few days before using. For whipped cream, beat cream with an electric or stand mixer on medium speed until soft peaks form. Add sugar and vanilla and beat until soft peaks return. To assemble and serve, layer meringue, strawberries and whipped cream in a clear dish or glass.

STRAWBERRY, GOAT CHEESE AND SPINACH SALAD This recipe comes from the Reesor family, which operates the Reesor Farm Market and pick-your-own strawberry field on Ninth Line in Markham and Reesor’s Market & Bakery on Main Street, Stouffville. The ingredients may seem familiar, but it’s the dressing that sets this salad apart. Don’t skimp on the pepper; it works so well with the strawberries. Serves 4. ingredienTS

1,500 mL (6 cups) spinach leaves

Combine maple syrup, balsamic vinegar, soy sauce and pepper in a large salad bowl. Add oil in a steady stream while whisking to incorporate. Add spinach to bowl and toss to coat with dressing. Add other ingredients and toss gently. Serve immediately.

Green berries will not ripen after they are picked. • Store strawberries with stems on in a shallow container in your fridge. Food has been a passion for Fina Scroppo since childhood, when summer Sundays were spent indulging in delicious food at family picnics and trips to her dad’s work meant hanging out at the grocery stores he managed. Today, the Vaughan resident is a wellrespected editor who has worked with numerous authors 58

such as Dragon’s Den David Chilton and Janet Podleski and Greta Podleski, sisters and co-authors of several hit cookbooks, including The Looneyspoons Collection. But after helping dozens of writers realize their dreams, Ms Scroppo says it was time to focus on her own. Last fall, The Healthy Italian hit Canadian bookshelves.


“It’s a passion project that’s been simmering for decades,” she explains, adding it took two years to pull it together. The 150 recipes in the cookbook—photographed by Ms Scroppo’s husband, Mike Rao—are the culmination of a lifetime of preparing meals for family and friends. “Growing up Italian, food has always been at the epicentre of my life. I’ve been cooking since I was tall enough to stand over the stove,” she says But along with being a foodie, Ms Scroppo is also health-conscious. “Like other empowered moms, I worry about my health, the health of my kids, “she says. “So I leaned on what I know—the robust Italian cuisine—and began experimenting with alternative, better-for-you ingredients without compromising taste.” The result is an authentic collection of traditional favourites married with lesserknown flavour-rich offerings from all regions of Italy. Since the launch, Ms Scroppo has been extremely busy promoting the book. “It’s been a whirlwind of activity but I’m so enjoying it,” she laughs. She has done countless interviews, including spots on Canada AM, Cityline and radio stations across Canada. While Ms Scroppo says she’s grateful for all the opportunities to talk about the book, it’s been connecting with readers that has been most satisfying. “Just this week, a reader recognized me in the grocery store and asked me about some gluten-free options for her daughter who was recently diagnosed with celiac disease,” she shares. “She had read about my sister’s struggle with meal-planning when she was diagnosed more than 20 years ago. She emailed me a couple of days ago to tell me how thrilled her daughter was with some of the dishes she made from my book. It made my day!” Ms Scroppo says she’s frequently asked for tips. “I always tell people that the first thing they need to do when they make a commitment to cook and eat healthier is to spend more time in the produce section of their grocery store,” she says. When meal-planning, Ms Scroppo suggests including plenty of favourite vegetables and fruits, along with whole grains, leaner meats, legumes and nuts—especially if you plan on adding a few lesser known flavours to the mix. “And don’t be afraid to bring the kids grocery shopping to give them more ownership of what you make and serve on the table,” she adds.

Fava Beans & Peas with Mint (Fave e piselli alla menta) Serves 4 Ingredients

500 mL (2 cups) fresh or frozen fava beans, pod removed (see tip) 250 mL (1 cup) fresh or frozen green peas (thawed) 15 mL (1 tbsp) extra-virgin olive oil 125 mL (1/2 cup) chopped onions 3 sprigs fresh thyme 30 mL (2 tbsp) chopped fresh mint 10 mL (2 tsp) light butter 45 mL (3 tbsp) reduced-sodium vegetable broth sea salt and freshly ground black pepper to taste

Bring a pot of water to a boil. Add fava beans and peas and cook for 5 minutes. Drain, rinse and drain again. In a medium bowl, pop out the fava beans from their outer shell; use your hands, but you may need a knife to pierce the skin first. In the same pot, heat oil over mediumhigh heat and add onions; cook until softened. Add cooked fava beans and peas, along with herbs and mix for 1 minute. Add butter and broth. Season with salt and pepper. Remove thyme stems and serve.

Fava beans, also known as broad beans, grow in thick, long pods and require double peeling—first, to remove them from a thick, sturdy pod and then to discard their waxy, outer shells by blanching them. Variation

Serve with shavings of ParmigianoReggiano or ricotta insalata. High in vitamin C: Peas are loaded with vitamins, most notably vitamin C. Just 125 mL (1/2 cup) offers half of a day’s worth or as much vitamin C as a clementine. summer 2014

The Vaughan area offers much in the way of terrific grocery stores, including Longos, Fortinos and No Frills—all go-to places for Ms Scroppo. She’s also excited about the newly opened Nature’s Emporium. And with the warmer weather comes even more fresh and local options. “I love shopping at the local farm stands that are sometimes set up in store fronts or along a few intersections as well as farmers markets in the summertime,” she says. But whatever the time of year, Ms Scroppo says not to overlook the value of organization. “It’s important to stock a healthy pantry with staples like whole grains, whole-grain pasta, no-salt-added canned tomatoes, beans and legumes, canned fish packed in water, dried or preserved vegetables, nuts, extra-virgin olive oil and sodium-reduced broths, among others,” she says, adding that a well-stocked pantry makes getting a healthy meal on the table a lot easier. She knows a thing or two about that. With two sons, aged 10 and seven, weekday nights are typically booked with soccer games and swimming practices, as well as her yoga classes. Despite the hectic pace, healthy meals are non-negotiable. “I tend to make meals that day, but if I’m having a crazy week, I might do some prep, such as wash and cut vegetables, the day before,” she says. “Or in the case of a sauce that needs to simmer, I tend to make it on the weekend to serve later in the week.” Ms Scroppo says good nutrition and convenience need to go hand-in-hand for busy families, so nearly all her recipes are built around that idea. “I often tell parents not to overdo it when getting meals on the table—don’t defeat yourself and make three dishes that each require 30 to 40 minutes of your time.” Instead, she suggests cooking a one-pot meal or a main dish and pairing it with a green salad, steamed vegetables or an easy risotto. “If a new side dish, like stuffed eggplant or battered cauliflower, is the star of your dinner, choose an easy main like a grilled fish or baked chicken that doesn’t need more than 10 minutes of your attention to prep,” she says. “My goal is to help families not only get healthy meals on the table with ease, but also to spend more time together around the kitchen counter or at the kitchen table.” Recipes from The Healthy Italian: Cooking For the Love of Food and Family by Fina Scroppo. Turkey Saltimbocca (Saltimbocca di tacchino) Serves 4 Ingredients

4 to 6 very thin slices prosciutto (about 35 g/ 1.5 oz) 4 to 6 turkey scallopini cutlets (454 g/ 1 lb), see tip 8 to 12 fresh sage leaves 10 mL (2 tsp) extra-virgin olive oil, divided 10 m (2 tsp) light butter, divided 60 mL (1/4 cup) white wine 2 mL (1/2 tsp) cornstarch 60 mL (1/4 cup) no-salt-added chicken broth sea salt and freshly ground black pepper to taste Method

On a clean working surface, gently press a piece of prosciutto on top of each turkey cutlet. Lay a couple of sage leaves in the centre of each cutlet and secure them by weaving a toothpick in and out of the cutlet. Cook the cutlets in two batches. In a large non-stick skillet, heat half the olive oil and butter over medium heat. Place 2 to 3 cutlets in the pan, prosciuttoside down and cook until prosciutto is crispy and slightly browned, about 3 to 4 minutes. Turn cutlet over and cook just until no longer pink, about 2 minutes. Don’t overcook or they’ll be tough. Transfer cutlets to a serving dish, remove toothpicks and keep warm. Repeat with remaining cutlets. In the same skillet, heat the white wine

on medium heat for 2 minutes, scraping up the bits at the bottom of the pan. In a cup, whisk together the cornstarch and broth and pour into skillet with wine. Season with salt and pepper. Whisk sauce until smooth and bubbly. Pour sauce over turkey cutlets and serve. tip

If you’re having trouble finding scallopini at the meat counter, buy turkey breasts, cut them into thin slices (about 0.5 cm/ 1/4 inch thick) and gently pound with a mallet. Variation

Add some antioxidant oomph by tossing in one or two handfuls of frozen mixed vegetables (peas and carrots are perfect) at the same time you stir in the chicken broth to make the accompanying sauce.

Since the boom of the sushi restaurant in the 1990s, Japanese eateries have been as plentiful as fish in the sea. But finding that “extra” in an ocean of ordinary is the challenge for any diner who wants to spend their money on something more than just a decent dinner. At its best, sushi is a craft and an art: the freshest ingredients expertly prepared and creatively presented. Such is the work of master sushi chef Jyo Gao, who runs Solo Sushi Ya in Newmarket, as well as Solo Sushi Bekkan in downtown Toronto. Solo Sushi’s menu offers a myriad of both cooked and raw choices, from the unusual to the everyday. You’ll find favourites like gyoza (Japanese dumplings), seaweed salad, 62

Friendly and welcoming, Chef Gao is happy to chat with customers before he ducks in the back to make the, well, duck and anything else that is ordered. His daily chef’s selection is several courses of seasonal and inventive items. Many are his own creations and others are variations on familiar dishes. The best ingredients available that day are combined with ingenuity to produce a oneof-a-kind meal.

Salt and pepper salmon. In non-stick pan, heat 10 mL (2 tsp) olive oil. Sear salmon on both sides and transfer to plate. (Salmon will not be cooked through.) In the same pan, add 5 mL (1 tsp) olive oil and garlic and sauté until slightly brown. Add soy sauce, mirin and sake. Return salmon to pan and cook until done. Plate, spooning sauce over salmon and sprinkling with sesame seeds.

The Town of Aurora, a 150 year-old jewel in the heart of York Region, offers this kind of eclectic shopping experience, by way of a leisurely stroll down Yonge Street just south of Wellington. The historic downtown area is beginning a revitalization that will spruce up the area while preserving its vibrant years of cultural heritage. “Aurora has a unique character with a variety of over 45 shops, boutiques and restaurants, many housed in traditional 19th century historic buildings,” says Judy 64

Marshall, CEO of the Aurora Chamber of Commerce. “We have a lot of ongoing events, including the Aurora Chamber Street Festival and Home Show, Rib Fest, Concerts in the Park, the farmers market and Theatre Aurora.” A walk down one side of the street and up the other is a strategic must so as not to miss the unique treasures each store has to offer. “Main street Aurora is a destination, so we always have new product coming in to make that trip to our store successful,” says Andrea Henderson of Saturday Afternoons home décor store. “We are a smaller boutique style store and are able to spend time with clients to find exactly what they are looking for. We love to create inspiration and find unique ways to display products.” A couple of doors south is Klein Home,

which offers furniture, décor items, interior design services and Benjamin Moore paints. “The area has become a furniture and decorating destination,” says Mary Klein. “Customers get their paint here and then coordinate furniture pieces.” Rounding out the furniture options is Galleria, a store of both old and new, with some decidedly interesting ideas about mixing the two. A circa 1970 brass Moroccan lamp with teardrop crystals paired with a hand-painted Egyptian table produces stunning results. Also check out Galleria’s handmade Persian wool rugs, ranging from $100 to $50,000. Of course a house is not a home without at least one or two pieces of original art that speak to you. focus on York Region, offers up an eclectic collection of canvases, ranging from $50 to $5,000. “There is a great deal of talent in our own backyard and many buyers connect with that,” says Sandee Tatham, co-owner of Gallery Seven. “Owning a piece of original art from a member of your community resonates with people.” The gallery carries original pieces exclusively, no reproductions. Most pieces are oil or acrylic on canvas or board, but there is a small selection of watercolours, black and white and colour photography and multimedia pieces as well. Caruso and Company, housed in an 1887 heritage building, emanates, with its wooden floors, tin ceilings and inner brick walls, the authentic small-town shopping experience. Mike Caruso, grandson of the original

owners, shepherds his grandparents’ legacy by offering pieces that hail back to a simpler time. The florist offers an array of fresh flowers suitable for giving or brightening your own home, but also fashion pieces, one-of-a-kind items—such as the colourful, home-spun owl pillows that are both a decorative piece and cosy back support—and collectibles. “Our distinctive collectibles include vintage style furniture created from reclaimed century old farmhouse millwork, one of a kind accents, such as hand-painted windows and assorted folk art by local artists,” Mr. Caruso says. Across the street it’s all funk and glam at RockFella, a shop housed in a building dating back to 1903. High fashion for men and women, with brands like Franco Mirabelli, Kensie and Lipsy, really kick it up. But the

piece de resistance are the Voila and Sarina purses. My favourite, a bejewelled peacock purse, was pretty much irresistible. A short but invigorating walk down the hill from this collection of stores takes you to the Aurora Shopping Centre, an outside mall with inside goodies. Aurora’s Kitchen Accents offers up a wide variety of bake ware, barware and cookware, including such top brands as Le Creuset and Emile Henry. There is an extensive knife collection from Zwilling J.A. Henckels and Miyabi and imported linens from Ekelend of Sweden (Master Weavers since 1692). Creative Colours Fashions has the looks for summer, in coral, turquoise and lime, from premier fashion icons Joseph Ribkoff and Frank Lyman. There doesn’t seem to be much Ernestine Tahedl can’t do. The 74-year-old Austrianborn artist started painting at the age of six, entered art school at 14, earned a diploma in printmaking and graphic arts and worked for years as a successful stained glass artist doing large architectural installations— all before embarking on her career as a painter. Her father, Heinrich Tahedl, was a wellknown artist in his own right. He provided young Ernestine with materials and she worked alongside him in his studio. That

she had a natural talent was clear. By 14, she had already spent years in the studio and had amassed a significant portfolio, allowing her to start art school much earlier than her peers. Her father instructed her teachers not to influence her; rather they should let her develop on her own. She loved her time at the Vienna Academy of Applied Arts, studying there until the age of 20. In 1963, at 23, she left Austria and came to Edmonton. Within two years she married and moved east to Montreal.


Her first 15 years in Canada, she worked in architectural stained glass doing major commissions, including some for Expo ’67. Ms Tahedl, her husband, son and daughter moved to King City in 1983, where they still live. There is much about glasswork she continues to love. “There is nothing more beautiful than the medium, the colours, the transparency,” she says, “but I have always painted. It was a division of time between painting and stained glass. Slowly and surely, I moved from the large glass commissions into painting.” Ms Tahedl has always enjoyed switching from one medium to another. “It’s a way of staying fresh so you don’t get stagnant,” she says. Lately, she finds photography compelling. She travels often and takes numerous photographs, which she revisits later. While she doesn’t use them as a basis for her paintings, they definitely serve as stimulus. In person, Ms Tahedl is diminutive and elegant, immediately disarming and warm, with vibrant energy and a ready laugh. Her paintings are large-scale and feature a rich interplay of intense, luminous colour, usually spread across multiple canvases or panels. Since arriving in Canada she has been inspired by the landscape—and landscape in general. An avid traveller, she has visited Canada’s north, the Arctic, Greenland, South America and Antarctica.

“I’ve always tried to find landscapes that are vast and monumental, not too cultivated,” she says. Although many of her paintings may be recognizable as landscapes, individual works do not represent a specific motif or place. “It’s the essence of a place that I strive for.” Some of her work was recently on display at the City of Vaughan. The exhibit, called Waterscapes, was part of the Planet Earth Series, curated by arts coordinator Sharon Gaum-Kuchar. “It’s a celebration and acknowledgment

of the importance of the planet, of preserving the ecology and beauty of the landscape,” Ms Tahedl says. Her stunning four-part Goldberg Variations VII served as centrepiece. “My biggest fear is that when you achieve a certain status or success you stay there and continue in that vein. It’s very dangerous,” she says. “It’s important to develop further, even if it’s in a direction that might not turn out to be successful. That path of constantly searching is so important if you want to have a long career.” summer 2014

Complacency is no concern for this artist. A fan of classical music, Ms Tahedl recently started transposing the music she loves into paintings. There’s no thematic connection, more a transfiguration of her feelings. The result is more abstract than previous work, but she sees in it a strong inspiration from and connection to nature. “It has freed my style a little bit and I’m thrilled,” the artist says. “It gives me something new to explore.” Ms Tahedl has begun to mount full exhibitions of her work overseas, recently showing in Bratislava, Slovakia and Zagreb, Croatia. This summer, paintings from her 74

latest series will be shown in an Austrian castle. The inspiration for these pieces was Wagner’s Ring Circle; each painting represents one of the operas. For an artist who believes in change and evolution, Ms Tahedl is certainly showing us all how it’s done. Whether you have a long weekend ahead of you or just a few hours after work, make the most of the season by venturing out to enjoy local, family-friendly pursuits. Here are some ideas to get you started. take a hike Grab a York Region trail map and explore the picturesque York Regional Forest. Free to the public, this network of green spaces includes 21 properties with a total of 2,300 hectares of forest. No two trails are alike—explore plantations, natural woodlands, treed swamps and creeks. Look out for monthly guided events including geocaching, tree planting and guided walks with naturalists. Or join one of the hikes hosted by the Oak Ridges Trail Association, a non-profit volunteer organization with chapters in King, Aurora, Richmond Hill and Whitchurch-Stouffville. hit the beach Slather on the sunscreen, grab your beach towel and head out to the shores of Lake Simcoe. With several beaches to choose from, you can test out a few and pick a favourite. Georgina’s Willow Beach Conservation Area has picnic tables, flush toilets, a playground and, best of all, a sandy beach. Holmes Point Conservation Area, north of Pefferlaw, also offers a sandy beach, picnic tables and a playground for your little ones. Pack a picnic lunch or dinner and relax for a couple of hours while the kids build sandcastles on the beach. play in the pool Summer is synonymous with swimming. If the lake’s not your thing, head to a local outdoor pool for respite from the heat and humidity. The Thornhill outdoor pool, open from late June through to Labour Day, boasts a 30-metre, six-lane main pool and a separate children’s wading pool. Newmarket’s Gorman Pool, an outdoor heated pool with a graduated depth with a maximum of 1-1/2 metres (five feet), is a popular summer destination for young families. With a string of recent successes on the golf course, Taylor Pendrith has earned the recognition as one of Canada’s most talented and promising amateurs. Having recently graduated from Kent State University, the 22-year-old is shifting his focus towards a career as a professional golfer. While making it to match play at the 2012 NCCA finals and winning the General Heckler championship in March 2013 were both very significant, the former Bayview Secondary student identifies his first-place finish at the Porter Cup in July 2013 as his greatest accomplishment to date. Winning the Porter Cup put his name among elite company, as notable champions who have hoisted the trophy include former world No. 1 David Duval and current PGA superstar Phil Mickelson. 78

“I looked at the past winners prior to the event and noticed that some have become very accomplished professional golfers,” says Mr. Pendrith, who is only the third Canadian in history to win the event—and the first in 28 years. “The win just reassured me that I can compete with the best,” adds the current Canadian national team member. “It’s definitely my biggest accomplishment.” His success has been recognized by the Golf Coaches Association of America, which recently identified the Richmond Hill native as one of the top collegiate golfers in the United States by adding him to the Ben Hogan Award watch list in February. Taking a moment to reflect on his journey, Mr. Pendrith is quick to credit his parents for their unwavering support.

“Neither my mom or dad play golf, but they have a passion for it…. They always drove me to the golf course and picked me up after dark,” says Mr. Pendrith, who was introduced to the game by his older sister at age 12. “I’m very thankful that they support me in everything that I do,” he continues. “Without it, I would not be where I am today.” Looking ahead, one person who believes Mr. Pendrith has what it takes to be successful as a professional is fellow Kent State University graduate, Corey Connors. Both men scored full golf scholarships out of high school and put in four impressive years as teammates at Kent State—so the Listowel, Ont. native is very familiar with the strengths of Mr. Pendrith’s game.


“The greatest part of Taylor’s game is his length off the tee. He hits it really solidly with his driver and that gives him a great advantage,” says Mr. Connors, who is Kent State’s other member of the Ben Hogan Award watch list. He says that in addition to Mr. Pendrith’s remarkable driving distance—which is comparable to some of the PGA’s biggest hitters like Tiger Woods and Bubba Watson—his teammate also has the right mental approach. “As a person, Taylor is usually very calm and relaxed and rarely gets discouraged which is a huge benefit when playing golf,” Mr. Connors explains. Their Kent State head coach, Herb Page, echoes that point. “Taylor has a great attitude and is very coachable and not averse to making change,” says Mr. Page, a Markham resident and a member of the Ontario Golf Hall of Fame. “He has a lot of tools,” adds the legendary coach. “With continued hard work and improvement, the sky’s the limit.” Grateful for the strong support and encouragement from Kent State and Golf Canada, Mr. Pendrith plans to make

the complete transition from amateur to pro after the World Amateur Golf Championships in September. Prior to that, Mr. Pendrith has his sights on is the RBC Canadian Open, held late July in Montreal. With multiple spots up for grabs for the country’s top amateurs, he is excited about the possibility of earning one of them. “When I was younger, I used to go watch the Canadian Open all the time,” he says about the historic tournament founded in 1904. “It would be my first PGA Tour event—and it would just be amazing to compete and be up close with some of the world’s best.” Looking beyond the summer, Mr. Pendrith understands the task of earning full-time status on the PGA Tour may be a difficult one. He will first have to prove himself as an elite player on the highly competitive developmental tour. But he is optimistic about the challenge ahead. “I realize that it’s a long difficult journey to the PGA, but I’m dedicated to trying it,” he says. “To have a career where I compete against the best on the PGA is my ultimate goal in golf—and to achieve that goal would be awesome.”

… pre-game fuel: A big breakfast. In college tournaments, we usually play 36 holes the first day and begin very early in the morning. I like to eat a lot of bacon, eggs and fruit washed down with chocolate milk. I think eating properly before playing is important because it stays with you throughout the first round and gives you lots of protein to get you going early.

Anna Eliopoulos

Entrepreneurial spirit by

A combination of chance and destiny started Anna Eliopoulos on the path to becoming an entrepreneur; she found success on the journey because of her drive and dedication. Three decades ago, she was the young mother to two daughters and wife to restaurant owner Peter Eliopoulos. A stay-at-home mom, she was considering a part-time job at a bank when her husband suggested she join him at the restaurant. So,, she found a babysitter and worked the cash register during the lunch service. It was a request from customers there—to package the cookies and chocolates they sold at the counter as Christmas gifts—that led Mrs. Eliopoulos to launch her own business, the precursor to Peter & Paul’s Gifts, Baskets & Promo. For two holiday seasons, she sold baskets of treats at a table in the restaurant. “At that point,” she says, “I would buy the baskets, make the baskets—have friends come over in the middle of the night (to help)—deliver the baskets, write out the invoices by hand. “We were a restaurant during the day and at night, we became a basket company.” After that second successful Christmas, Mrs. Eliopoulos began to search for a space where she could operate the business yearround and expand to offer other items, such baby and corporate gift baskets. “As a young couple with three kids, (another daughter arrived soon after the start of the business), you’re hungry, you want to make money,” she says. “We had a mortgage, we had expenses and you see that you’re making some money, so instead of going to work for somebody else, you continue.” Vision, high risk tolerance, perseverance and ambition are the hallmarks of an entrepreneur, Mrs. Eliopoulos says. “It’s not as easy as it seems; it’s a roller coaster.” The couple’s commitment was put to the test during the economic downturn of the early 1990s, when they lost everything. “You become survivor because you rely on yourself,” she says. “You have to pick 80

yourself up and keep going and that’s what we did. We started over again. We started a restaurant. I started work at 6 a.m., making espressos for the construction guys.” She also worked hard to manage both work and family life well. “The biggest challenge, especially as a woman, is trying to be the best mother you can be while creating your business,” she says. But, she counters, owning her own business and building a team she could depend on allowed her the flexibility to be with her daughters when it counted. She went on field trips, attended concerts, stayed home on PA days, ferried them to dance class. “Because she was an entrepreneur, she could make free time for herself and she did,” says eldest daughter Katherine, who is now a mother herself to three sons. “We were her priority.” Her encouraging, entrepreneurial spouse has been the key to her success, Mrs. Eliopoulos says. “We fed off each other,” she says. “When he was down, I’d bring him up. When I was down, he’d say it’s going to get better.” They have always been one another’s greatest sounding board and support system. They schedule meetings to talk about work, but also set aside time for their personal relationship. “If we’re going out at night, going to a function, we won’t talk about business,” Mrs. Eliopoulos says. “That comes with experience and with time. When you’re growing your business, it consumes you. but you just can’t do it 24 hours a day; we learned to overcome it.” Today, they work alongside each other, sharing office space in Vaughan, on different ventures under the umbrella By Peter and Paul’s. Mr. Eliopoulos manages the hospitality and entertainment group, which includes five event centres in York Region and Greater Toronto Area, as well as catering and audio/visual services.

Mrs. Eliopoulos oversees the gifting business, which offers a wide selection of carefully crafted baskets—a chenille throw, wine and upscale snacks tucked into an ottoman; or wine, cheese and crackers wrapped up with a cheese board and knives; or a customized wooden wagon carrying baby items—as well as other gifts and promotional products. She has an obvious enthusiasm for the work—sourcing interesting and indulgent items for the baskets, creating unique baskets for long-term corporate clients and looking for new ways to build the business. “There’s more to it than money,” she says. “The interacting with people. The making of new friends. The enjoyment people receive. I love the challenge of creating. That’s why I keep doing it.” Mrs. Eliopoulos suggests entrepreneurship is in their blood. Mr. Eliopoulos’ parents and extended family owned restaurants and her father had an asphalt sealing company. They saw the pride and passion that came with owning a business and began to understand the commitment it demanded at a young age—Mr. Eliopoulos standing on a milk crate behind the cash register and Mrs. Eliopoulos writing customer invoices. Now, their daughters, Katherine, Angela and Nicole, are involved in the business. They started at a young age, making bows and putting stickers on baskets as a summer job or during the Christmas rush. Their roles grew as they did.

“I loved the idea of growing something and my kids taking it over,” Mrs. Eliopoulos says. “I started when they were small, they grew up in it, they worked it from the bottom up—and now they can continue it.” Katherine says following their parents into business seemed a natural transition for the three sisters, who were encouraged and inspired by their mother. “She was such a good role model to us. She gave us that image of the woman we wanted to be,” Katherine says. “She was able to handle so much, it was a lesson for us that women can do whatever we want.” Part of what Mrs. Eliopoulos wants is to give generously to the community. She has chaired committees and given time and resources to a number of causes, including Humber River Regional, the hospital that cared for her family while she was growing up; Princess Margaret, where she was treated for breast cancer eight years ago; SickKids; Greek and Italian community groups; and Villa Charities, which supports the elderly as well as individuals with intellectual disabilities and mental health issues. And she supports a myriad of other charities who ask for donations to silent auctions and other fundraisers. “I’m at the point where I can give back to the community,” she says. “Anybody who calls for a donation—I’ll do it all. “I’m so thankful and grateful for where I am in life that I want to help.”

Living in York Region, we are rarely more than a few minutes from green space—be it as expansive as the York Regional Forest or as simple as your neighbourhood park. Take advantage of this space, the warm weather and get all the benefits “green exercise” has to offer. Studies have shown that green exercise—defined as physical activity in natural areas—reduces the risk of mental illness and improves one’s overall wellbeing, in only 10 minutes of participating

in a natural setting. Research published in the journal Environmental Science & Technology says exercising in natural environments is associated with greater feelings of revitalization, increased energy and positive mindset, as well as decreased tension, confusion, anger and depression. Researchers found: • two out of three participants reported improved self-esteem;

Outdoor exercise also provides a healthy dose of vitamin D, which is essential for calcium absorption, strong bones and a strong immune system. It can also aid in healthy weight maintenance. Overweight individuals tend to have lower amounts of vitamin D in their bodies, in part because fat can absorb and hold onto vitamin D, making it unavailable to the body. A vitamin D deficiency can interfere with the functioning of leptin, a hormone that signals to the brain when you are full and should stop eating. To keep your vitamin D levels up, some experts suggest getting 10 minutes of unprotected sunlight, three times a week. Create a trail workout As a resident of Aurora and personal trainer, I am in the forest five times a week. I find the atmosphere stimulating—which can make exercise something you want to do rather than something you should do. Here are a couple of ways to build your own trail workout. Look for spots along the way with rocks or fallen logs that you can use for push-ups, step-ups, dips, planks and balance beams. Vary your pace to get your heart pumping, maybe taking a set of stairs two at a time or running to the next fork in the path. Add walking lunges, skipping, squats, bunny hops and grapevines along the way. Get creative! Before you start a trail workout regime, you’ll want the proper footwear, which could be hiking, walking or running shoes, depending on the trail and your activity. Kenya is the country where the safari originated. It is where one comes to discover a beautiful diversity of landscapes, a myriad of animal, bird and plant life and fascinating traditional culture and warrior tribes. Almost every known landform is found in Kenya, from glacial ice to arid desert, mountain massifs to sprawling savannahs, large lakes and dense forest. The Great Rift Valley, its floor littered with beautiful lakes and extinct volcanoes, cuts through this land from north to south. Mount Kenya, at 5,200 metres (17,058 feet), is impressive with its snow-capped peaks; it stands above the rolling grassland plains and the intriguing semi-desert wilderness much farther to the north. Lake Victoria,


the largest lake in Africa and source of the Nile, dominates the southwest of the country. In the south, Kenya reaches the Indian Ocean in a brilliant blaze of blue, where water meets fine white sands and amazing coral reefs. However, Kenya’s ultimate attraction, of course, is its concentration of spectacular wildlife, found in the 48 national parks, reserves, marine parks and game sanctuaries. That was the purpose of my latest visit. I’m awestruck, at times, during my forays to Africa and as I trek through Kenya, I recall some of the country’s earliest explorers—Denys Finch Hatton, Karen Blixen, Lord Delamere, Elspeth Huxley

and Ernest Hemingway. All experienced the excellent variety of privately owned bush homesteads, small hideaway lodges and nights under canvas in exclusive permanent or mobile camps. It is truly possible to experience the magic of this country as it was done in days before. I enjoyed a long, yet relaxing, flight on Air Canada from Toronto to Zurich and then on to Nairobi, where I was met by a representative from Maniago Safaris. I always use Maniago in Kenya. The same driver/guide has been with me for many years and I consider him a friend. He always manages to position me in the best spot for that perfect picture. After energizing my battery and gathering

some steam following the long journey, it was off to Samburu National Reserve. Located 325 kilometres north of Nairobi in the hot and arid fringes of Kenya, the reserve offers plenty of water, trees and shade to attract wildlife that includes elephant, lion, reticulated giraffe and Grevy’s zebra from the surrounding savannah plains. Leopards are also regularly spotted. There are more than 350 varieties of birds. Samburu is often grouped together with Buffalo Springs and Shaba national reserves, as they lie so close together. These are home to the famous Somali ostriches (distinguished by their unique purple-blue legs during mating season), kingfishers, humming birds, eagles, guinea fowls and vultures. summer 2014

While on the reserve, we stayed at Elephant Bedroom Camp, situated on the banks of the Ewaso Nyiro River and so named because of the number of elephants that frequent the area. It is a small and exclusive camp, nestled in the shade of doum palm trees. Elephant roam the gaunt hills, which punctuate the scrubland and where occasional clusters of vividly coloured desert rose challenge the arid surroundings. These elephant seek

solace and contentment in the shallow waters of the river and from time to time a visitor finds herds bathing and drinking in a spectacle of unconscious pleasure. The river is at its best in the reserve, broad and sluggish with a large population of crocodile seen on sandbanks at almost every bend. In the lower reaches, where permanent pools have formed as a tributary joins the river, are hippos. The river is fringed with

giant acacias, figs and doum palms, all of which provide shade and sustenance to the wildlife that comes to water. For most of the year, Samburu National Reserve is under the unsympathetic equatorial sun. Relief comes from the wide swathe of the Ewaso Ngiro River, which begins hundreds of kilometres to the west on the foothills of the Aberdares and vanishes beyond Samburu in the recesses of the Lorian swamp.


From here, it was off to Elsa’s Kopje in Meru National Park. Often described as Kenya’s best-kept secret, it is a hidden jewel in the untamed wilderness of the park, made famous by the book and film Born Free and named after Elsa the lioness. The lodge is built on the site of George Adamson’s first campsite, with each of the nine individually designed and luxurious cottages offering complete privacy and the ultimate room with a view. Invisible to the eye as you approach, the lodge offers stunning 360-degree views over Meru’s landscape of giant baobabs, doum palms and hot bushland interwoven with lush springs and a myriad of rivers. This is home to the rare northern desert species of beisa oryx, Grevy’s zebra, reticulated giraffe, lesser kudu as well as large herds of elephant, prides of lion, cheetahs and leopards. The elephants of Africa are still very much under threat. Culling continues, due to claims that increasing numbers threaten to destroy habitat and trample other species. Elephants are still at risk for their ivory, which is even on sale in some airport dutyfree shops. Unfortunately, there is no end in sight to the unhappy situation into which

elephants are born. Baby elephants are still being taken from the wild for sale to unsuitable destinations, including Chinese circuses and zoos. One of the highlights of every safari I take in Kenya is a visit to the David Sheldrick Wildlife Trust to see the tremendous work that continues to be done in the conservation, preservation and protection

of wildlife. These include anti-poaching initiatives, safeguarding the natural environment, enhancing community awareness, addressing animal welfare issues and providing veterinary assistance to animals in need. An important part of the trust is rescue, hand-rearing and rehabilitation of elephant and rhinoceros orphans, as well as orphans of any wild species.
