West Farm The perfect venue Finding just the right venue for workshops and events can be tricky. First, you need to give your delegates a day to remember, secondly an environment that lends itself to learning and creative expression, and lastly and most importantly it needs to reflect your own values and quality standards as hosts and course facilitators.
It comes as a pleasant surprise, therefore, to discover that a new private project to offer such facilities is underway at the Barn at West Farm in the coastal hamlet of Southerndown. Funded in part by Creative Rural Communities and Tourism, building has begun on creating an eighty seat function room/cinema/theatre that can be used for conferences and events. The project will be completed in May to link the existing barn to provide a larger space for product launches, promotions, training, conferences and weddings. Directors JillJames and Ewart Needham are no strangers to the creative industries as their backgrounds in film, TV, theatre and radio at BBC, ITV, BAFTA and the BBFC have enabled them to find a niche in the market for this type of venue. An open day will be held on Sunday 22nd May 2011.

Clean energy is money in your pocket Richard and Vanessa Adams had a 14-panel solar electricity system installed by Elltec Solar Electricity on their Morrocan-style family home in Peterston-super-Ely. When our old boiler needed replacing we decided to consider newer technologies, and felt that solar panels were the best option. As a family, we feel strongly about environmental issues and with dwindling supplies of traditional fuels we felt that making our own electricity would be a wise financial move too. Under the Clean Energy Cashback Scheme we get paid for every unit of electricity we produce. This is fixed at 41p for the first two years and index linked for 25 years. The electricity we use is free and any we don’t need is sold to an energy supplier for an extra 3p per unit. With the money we make from this, the system should pay for itself within ten years.

The return can be as much as 8% higher than any savings account we have found. We added the cost of installation to our mortgage. Our existing deal was finishing and our lender was very happy to increase the amount we borrowed to pay for the solar panels. Having made the initial outlay, we should start to see our outgoings reduce. The system should produce more electricity than our five-person home uses in a year. We sourced several quotes and Elltec Solar Electricity stood out as being very knowledgeable and professional. Our house is a listed building with a flat roof so there were a few planning concerns which Elltec handled very efficiently. During installation they were exceptionally thoughtful, tidy, hard working and pleasant to have around the house. They filled out the required forms to help us receive an installation grant and advised us on the process for claiming the Clean Energy Cashback. We would highly recommend them. South Wales gets hooked on classics
The Media Angel promotes Zurich flights
South Wales Classic Car Club will be having their annual show at Pencoed on May 8th. This is a great club and deserves your support they do an enormous amount for local charities.
When Helvetic Airways was launching the new Zurich flight from Cardiff, an exciting new direct destination flying four times a week from £99 one way, they needed to get the message out.
The SWCCC is a medium sized club with around 100 members mostly from the South Wales area, but they also have a few members from further afield such as Ireland and Germany. They’re based in Bridgend and normally meet on the first Monday of every month at The Hunters Lodge, Brackla. Get in touch with the club if you’d like to exhibit or pop along on the day for a good nose at some gorgeous classics.
Cardiff Airport, working with advertising agency The Media Angel, created a plan to advertise this exciting new destination. St John’s School - an outstanding education Celebrations got underway at the end of February when St. John’s School, Porthcawl, marked 90 years of outstanding education with the release of balloons in the presence of Mayor Mrs Mary Emment-Lewis, pupils past and present and parents. River View Chef’s favourite River View’s Head Chef chose sizzling fillet steak with black pepper sauce as it is easy to cook and it is one of his favourites. Ingredients For the steak: Welsh beef fillet Steak Butter For black pepper sauce: Black pepper (ground) ¼ green pepper ¼ red pepper ½ onion 1 clove of garlic Light soy sauce Dark soy sauce Vegetable oil Cornflower (mix a small tea spoon with water)
Method Heat up a metal hot plate. Heat up the wok with a spoon of vegetable oil, put 2 small cubes of butter in the hot wok till completely melted. Put the steak in the hot wok; adjust the cooker hob (turbo burner in our kitchen) to lower heat, pan-fry until the steak is cooked to brown and seal at the surface. Adjust cooking time accordingly depending on whether you want it to be rare, medium or well done. Don’t overcook the steak as it will be put on a sizzling hot plate later, and it will cook further on the plate. Heat up the wok with a spoon of vegetable oil, put in the chopped green pepper, red pepper and onion, and stirfry for 3 minutes until the onion is soft. You may have to vary this time a little as it is dependent on the temperature of your wok. It’s about 3 minutes for our professional turbo burner hob. Add the ground black pepper, and the light soy sauce, the dark soy sauce and the cornflower water. Stir in the wok for another 2 minutes. The sauce is then ready. Put the steak on the hot plate, pour the sauce over the steak and let the heat coax the flavours out. Of course, if you want to try this mouth-watering dish without having to make it yourself just visit River View and let them do the work for you. ❧ 8 ❧

The Cross Inn Chef’s favourite Head Chef Darren Wilkins and his team at The Cross Inn, Cowbridge, share with us their favourite dish of pan-roasted Welsh Black fillet steak, sautéed shitake and oyster mushrooms, wilted butter spinach, parsnip quenelles and sweet mashed potato infused with olive oil. Ingredients Welsh Black fillet 4oz sweet potato 4oz parsnips Salt Pepper 2oz shitake mushrooms 2oz oyster mushrooms 1oz baby spinach Olive oil 1oz butter Real gravy
Method Season the fillet with salt and pepper and put into a pre-heated frying pan. Seal the top and bottom for approximately two and a half minutes each on a moderate heat. Take the fillet and seal the sides with a pair of tongs. Place in oven for around 15 minutes for a medium fillet on gas mark 6/200°C. Put the mash potato into a small saucepan and slowly heat with a teaspoon of olive oil, salt and pepper to taste. Take your torn shitake and oyster mushrooms and gently fry in olive oil; just enough to brown the edges, remembering not to put too much olive oil in as they will become soggy. Once the parsnips are peeled, still use the peeler to make the parsnip crisps by doing the same way as if you were peeling, then gently place into a small pan of vegetable oil until they brown and take out onto paper and leave to cool down, adding some salt to take some moisture away.

Take a handful of baby spinach and a good teaspoon of butter with a drizzle of olive oil so that the butter doesn’t burn and gently warm the spinach and, when wilted, drain excess moisture away. Take the fillet out of the oven and let it rest.

Now you are ready to put together the dish. Place the mushrooms on the plate and take the spinach and place on top of the mushrooms. Place the rested fillet on top. Position the sweet potato and parsnip mash onto the plate and using two dessert spoons quenelle the parsnip and sweet mash potato and place on the plate, then place the parsnip crisps onto the quenelle of sweet potato and parsnip mash and serve with a little sauce boat of real gravy. Of course you could try this dish at home but why not treat yourself to dinner at The Cross Inn and let Darren cook for you. Just think, a fillet steak and all of the trimmings cooked to your liking with no washing up - bliss! Darren is also a dab hand at desserts. Return to health with Return 2 Health My guess is that we’ve spent most of the winter months hunched up indoors as the cold outdoor weather has left many of us feeling miserable and tense in our attempt to remain warm. The good news is that spring is upon us and at this time of year we want to return to health so that we can enjoy this new outdoor freedom. Much like a car, our bodies need to be serviced regularly and not just when we are in pain. Good mobility, posture and a pain-free body is dependent on a healthy spine, muscles, joints and bones, so it makes sense to give ourselves a regular health check to make sure we’re in tip-top condition. We caught up with Vanessa Kelly, registered Chiropractic Practitioner and owner of Return 2 Health. Tell us about your new premises. We moved to our current premises in this lovely cobbled courtyard last April but have been in Barry since 2003, previously at Tynewydd Road and Wyndham Street. What services do you offer? Apart from chiropractic care we offer sports massage and rehabilitation services from our on-site qualified personal fitness trainer, Mark Kelly.

What’s the difference between a chiropractor and an osteopath? People often confuse the two! Osteopathy and Chiropractic share a common philosophy about the importance of the spine in ensuring good health. There are similarities in that both professions offer ‘hands-on’ treatments and are regulated by law. Some people prefer Chiropractic treatment, whilst others benefit from osteopathy. Chiropractic helps with conditions mainly concerning the spine and surrounding muscles, such as low back and neck pain, whiplash injuries, and also pain in the shoulders or knees. Chiropractors in the UK must be regeistered with the General Chiropractic Council in order to practice. We are governed by strict guidelines and aim to maintain high standards of professional care to our patients. What ages do you treat? A variety, our youngest having been twelve weeks old and our oldest 100 years. As we are all so different each person is assessed and examined before setting up a specified treatment plan for their individual needs.
What are your qualifications? I graduated in 2001 from the University of Glamorgan following a four year fulltime degree course. When I began in practice I completed a post registration training scheme over a further twelve months. Prior to that I was a qualified registered general nurse mainly specialising in intensive care nursing. You’re also a teacher - what does that involve? I’m a Clinical Floor Tutor at the University of Glamorgan supervising fourth year Chiropractic students who are in their final year of study. I love this part of my work as it enables me to give something back and to help students prepare for their professional lives. Do you have any advice for readers? Our bodies were not built to sit at a desk for eight hours a day, or to drive for long periods or conduct many of the daily repetitive tasks that we do. Therefore it is imperative for the health of our spines to take regular breaks from the desk and when on car journeys, but most importantly to exercise and strive to keep our bodies healthy.

Miskin Manor, a country house hotel with 43 individually designed bedrooms and 22 acres of glorious gardens, is, quite simply, a stunning venue in a beautiful and picturesque setting. It’s little wonder then that it’s one of the most popular venue choices in South Wales.
PERFECT DAY We spoke to happy couple Tom and Beccy Roberts who made Miskin Manor their own for a day.
Why did you choose Miskin Manor as your wedding venue? It’s such a stunning venue and we knew we wanted a summer wedding, so the beautiful gardens were a real attraction for both of us. We were particularly drawn to its intimacy and the fact that we could have both the ceremony and reception there as well as having plenty of rooms for guests to stay in. We had our ceremony in the Minstrel Gallery which feels very much like a little chapel, and afterwards our wedding breakfast and evening reception were in the Terrace Suite, which was perfect. Did you look at other venues? Yes, we looked at a number of venues in Cardiff and around South East Wales, but fell in love with the beautiful setting of Miskin Manor. Did you enjoy working with Miskin’s wedding co-ordinator? Lauren was absolutely fantastic. She couldn’t do enough to help us and we both agreed that she was influential in ensuring that everything went smoothly on the day. She is very calm and professional which is reassuring and was also very helpful with any planning headaches that arose and last-minute panics! Just before I walked into the ceremony room, I suddenly thought to myself ‘when do I walk in?’. I looked at Lauren and she must have seen a bit of panic in my face and she reassured me.
Did you stay at the Manor? We stayed at Miskin on the night of our wedding along with approximately 50 of our guests (including families with small children), mostly family and a few friends. We had a beautiful room with champagne waiting for us when we arrived and lots of people commented on how lovely their rooms were. How did the day go? The day was perfect! It really went without a hitch. We both put a lot of effort into the preparations in the run up, but on the day itself, we had to hand over the responsibility to Lauren and the team at Miskin to make sure that everything ran smoothly. We were really happy with the food and the service at the wedding breakfast. We had all of our photos outside and there were plenty of places for photos inside if it had rained. It’s funny actually, you seem to spend so much time thinking about the weather in the run up to the ‘big day’ but on the day itself I don’t think I even noticed what the weather was like. The transitions from ceremony to drinks reception, to wedding breakfast and finally to the evening reception were seamless.
to kick off the evening’s entertainment with the Pluck and Squeeze band, who were brilliant. We were a bit unsure about how this would be received but everyone got really involved and thoroughly enjoyed it. Where did you honeymoon? We went to Malaysia and had the time of our lives. The first couple of nights were spent at the Mandarin Oriental in Kuala Lumpur before we moved on to Borneo. We saw orang-utans in the rainforest which was an amazing experience, and has always been a dream of ours! How’s married life? Absolutely amazing! We had been together for ten years before getting engaged, so we wondered whether married life would change anything. However, it definitely has made things a lot more special. We have been celebrating our anniversary every month so far and hope we can keep that up for years to come!
Would you recommend Lauren and Miskin Manor to friends? Most definitely, and we have already done so!
In addition to Lauren’s fantastic organisation, I have to say a special thank you to our amazing photographers Andy and Sacha Stoyle (ALS Photography) who recommended a number of our other suppliers (hairdressers, make up and florist) and who produced a beautiful album of our wedding day. Did you have entertainment? The String Quartet Company played during our ceremony and the drinks reception. We then had a disco in the evening (SG Disco’s). I had been looking on the high street for an engagement ring for Claire for quite some time. I new that I wanted a pear shaped Diamond around 1ct in weight but wasn’t really confident enough to just make a decision. Matthew helped me to decide what options would be better for the design. He sourced a few diamonds within my budget and I then picked the one I preferred. My proposal was a complete surprise to Claire and she was delighted. I really hadn’t been brave enough to commit to any one particular ring before I had Matthew’s help. We are currently now having our wedding bands made by Matt.
I wanted my wedding band to consist of the diamonds from my grandmother’s eternity ring and of course wanted it to match with my engagement ring. Matthew Mullooly of Northern Star directed and advised on the style and shape and produced exactly the design that I had envisioned. The service was first class and Matthew was friendly, confident and couldn’t do enough to make the process of creating the perfect wedding band as easy as possible. Exactly what you want as a bride to be.
Matthew listened to my thoughts for the design of the ring I really wanted and then helped create exactly what I had in mind. Matthew was genuinely understanding, professional, and patient and provided a first-class service. I was over the moon with the final product which provided me with a new, unique and very sentimental engagement ring. I have received many admiring comments for the ring and it is really special being able to describe the story including the sentiments that go with it. Thank you once again Matthew for helping create my perfect dream ring.

Even if I followed a diet carefully, it was so difficult, and eventually I failed, miserably. I knew that I needed help in controlling my appetite - but diet pills don't work so well.”
A LIGHTER LIFE Does this sound familiar? We all know the importance of diet and exercise to look good and feel good but, for some people, sticking to this healthy lifestyle is just too hard. Whether it’s a lack of willpower or motivation that’s the problem, it doesn’t make them bad people, it just means they need a little extra help. Over the last twenty five years the intragastric balloon has proved to be the most effective non-surgical method of treating obesity. More than 100,000 patients have achieved an average weight loss of more than 15kg during the first six months of treatment. Newport-based Nucleus Healthcare, Wales’ private centre of excellence for gastroenterology, has been fitting patients with intragastric balloons with great results and, from 2011, the hospital is delighted to announce that it will be offering a new adjustable gastric balloon, the Spatz. The adjustable gastric balloon is the next generation of balloon and is a non-surgical, non-drug therapy which does not involve a general anaesthetic. We spoke with Dr Manny Srivastava, founder of Nucleus Healthcare and Consultant Gastroenterologist to find out more about this new adjustable balloon.
What makes this gastric balloon different to the old one? Despite achieving great results over the years, certain weaknesses and limitations in the traditional intragastric balloon have been detected – nothing that those with the old-style balloon should be concerned about but as with most things, there’s always room for improvement. The main reason was that it was impossible to modify the volume throughout the treatment and the useful life of the device was limited to six months. After years of exhaustive research, the Spatz adjustable gastric balloon has been designed to overcome this issue and offers a more effective treatment for twelve months. How does it work? The adjustable gastric balloon is filled with saline and sits in the stomach for twelve months resulting in an average weight loss of four to five stones at twelve months. It drastically reduces the sensation of appetite due to the volume it occupies in the stomach. It slows stomach emptying, keeping blood sugar levels stable, thereby reducing the sensation of hunger. It eliminates the vicious cycle of ‘hunger, anxiety, hunger’ and provides control from the very beginning.
What does the procedure involve? A deflated balloon is inserted into the stomach through an endoscope. The balloon is then filled with saline to produce a feeling of fullness. The ability to vary the volume in the balloon over twelve months allows greater weight loss. It also reduces side effects as you can tailor the volume in the balloon to suit the patient. The balloon is inserted under local anaesthetic and takes about twenty minutes. The patient stays in the hospital for around two hours.

Nucleus staff continue to provide aftercare beyond twelve months with individual counselling and group seminars for as long as the patient feels they are necessary.
What are the benefits? Obesity is a huge social and medical problem in Wales with enormous implications for the people involved. This style of treatment has a proven track record and, I believe, has a much greater success rate. It is very much an aid to dieting and helps modify their eating habits. Once the balloon is in place, people don't feel as hungry, and eat smaller portions.
Who is the balloon suitable for? It is suitable for patients over eighteen with a body mass index of 27 or more. There are two main groups of patients who opt for a gastric balloon - those worried about long-term health problems associated with being overweight or obese and those that want to lose weight for cosmetic reasons. Can you tell us about any new developments at Nucleus? This is a really exciting time for us and we are delighted to announce that we have just opened a brand new, state-ofthe-art laparoscopic unit and that we now carry out gastric banding.

COUNTRY LIVING Locating to a new area always requires a certain amount of research whether it’s city centre living or a quiet country cottage, location really is everything. So, when David Brown, 28, a cricketer for Glamorgan, upped sticks from his Lancashire base, moving to South Wales last March, he set about with a wish list for his new home and Cardiff base. David, what first attracted you to Hensol Castle Park apartments? I first saw the apartments in March last year when I played a game of golf at the Vale Resort and thought at the time it looked a wonderful place to live. Obviously as a golf fan the apartments were in a dream location but more practically speaking, they really are ideally located. The complex has a great country feel because of the fantastic rural setting so it’s easy to forget you’re only fifteen minutes from the centre of Cardiff. It’s the perfect combination of country living with the hustle and bustle of city life just a short drive away.
But, the highlight of the apartment has got to be the kitchen. All of the apartments have designer kitchens from Leekes, but this particular cream high-gloss Sheraton model with the island in the centre of the space really sold the apartment to me.
What made you choose this particular apartment? I enlisted the help of my Dad when it came to choosing the plot as I wanted someone to bounce ideas off and we decided this was the best plot. Some of the apartments had the kitchen in the back but I really wanted an open plan aspect. For me, the apartment is perfect; it gives me the right amount of privacy whilst still being able to enjoy the great views of both the castle and the golf course.
I worked closely with Dawn LlewellynJones who is head of the interior design team at Leekes Llantrisant and she interpreted my brief and brought it to life. I know what I like in terms of design but it’s pulling it all together to create a home. I didn’t want anything too fussy, but rather a minimal, masculine look with clean lines, and Dawn helped me to create that.
What was your starting point for the interior scheme? The statement kitchen inspired the interior scheme; the cream cabinetry and black granite worktops have been used as the starting point for the rest of the living space, continuing the theme into the living area and the master bedroom.
Which rooms did Dawn and her interior design team help with? Literally every room in the apartment! The whole process was completely hassle-free as Dawn handled everything – from the bespoke upholstered headboards, throws and cushions in the bedrooms to the black gloss Calligaris cabinet furniture in the living area. I had seen a very contemporary looking Eicholtz flightcheck chest which I thought would make a great side table and when I spoke to Dawn about it, she sourced it for me. Do you have a favourite room in the apartment or a place where you spend much of your time? I really like the conservatory area, which acts as the dining room. The views across the golf course are fantastic and there’s nothing better than eating with the windows open in the warm summer evenings. ❧ 58 ❧

Guests enjoyed a look around the latest acquisition to the Celtic Manor portfolio, The Newbridge on Usk. As well as meeting the team, guests experienced a variety of dishes from the exciting new menu. Drinks and canapés were followed by Ty Bryn Farm woodland pork belly, Madgett's Farm slow roasted duck breast, Preseli Blue Mountain Welsh lamb, honey and thyme crème brulée and Seville orange trifle. Guests were also offered the opportunity of looking around the gorgeous bedrooms adjacent to the restaurant.

Bowood Hotel and Spa, a luxury destination hosting a championship 18-hole golf course and spa, was an ideal choice for our two-girl road trip to the Wiltshire countryside and (more importantly) for a shopping spree in Bath.
BEAUTIFUL BOWOOD
First impressions count, especially when two important days of your life are going to be in the hands of people who are there to make it as relaxing as possible. We knew we were heading somewhere special when we approached the impressive gated driveway that would lead us to the Bowood Hotel and Spa. We arrived in the dark yet we were still in awe of the dramatic entrance and the anticipation of a warm welcome. Being near to the M4 makes travel from Wales easy to this epicentre of some of the UK’s best places of interest, including the 2000 acres of the Bowood House Estate, owned by the Marquis and Marchioness of Lansdowne. It was to offer us the perfect country hideaway combined with our need to be pampered city slickers. Now, all the flowery language and journalistic adjectives in the world won’t do justice to our short break experience, so I’ll keep it simple because that’s exactly what it was. In effect I’ll summarise in three words unobtrusive, uncomplicated and accessible.
Everything from the bedrooms to the lounges and restaurant were well appointed and impressive enough. Our every need was attended to, yet there was one thing missing – and in a good way I hasten to add - and that was the overt overuse of pomp and ceremony (apart from a hint of it at afternoon tea). It was just what we needed at that time – a quiet haven of relaxed efficiency and excellent service that needed no excessive grandeur or boutique fixtures and fittings to dazzle us. The hotel is recently built in keeping with local land and architecture, as is the interior, which has been designed by the Marchioness of Lansdowne to combine modern with traditional. Yet it was the staff (with no single exception) who made our stay so perfect and everyone, irrespective of where you bumped into them, was smiling, friendly and professional. We commented on it between us to the extent that we were shocked at how we’ve become conditioned to accept poor service as the norm in the UK, with good service being something of a rare surprise! ❧ 64 ❧

THE LAST WORD We’ve all heard the adage that women can multitask. Well, Sally and Lisa Brown can testify to this. Vale Life caught up with the long-term friends and full-time mums to find out more about their successful business, Ruby’s Drawer. Who are you and what do you do? Sally and Lisa Brown have been friends for over twenty years; both are married as well as being full-time mums. Ruby's Drawer sells costume jewellery and accessories at events/parties across South Wales. We offer a party-planning service and online shop and support many local charities, workplace events, school fayres, etc. We do a monthly event at the Red Dragon in Cardiff Bay. Ruby’s Drawer is a great name. Where did it come from? We were on our way back from our first trade show chatting about names and it just clicked. We love the name and have received many compliments. Where did the idea for Ruby’s Drawer come from? We came up with the idea on a family holiday to Spain. It was meant to be a part-time hobby, something for us mums to do together, but it has quickly become a business of its own. How long has the business been running? The business has been running for over eighteen months and is going from strength to strength.
What are your roles in the business? We both work together; we love fashion and accessories and we choose the products personally. By listening to our customers we are able to react to the market quickly, always ensuring that we have up-to-date trends available at reasonable prices. We are fully aware of the economic climate and bear this in mind when procuring stock. What is it like working together? It has been a very busy 18 months with lots of laughs and tears, we have met some great people who have inspired us along the way, however we have had our ups and down but we are both strong characters and we have overcome them to create a great friendship/business partnership. Who does your jewellery appeal to? We have been delighted by the response of all our customers - we seem to attract ladies of all ages. As you will see from our online shop, we cater for almost every lady. We feel that we are an alternative to the High Street whilst keeping up with the latest fashion trends. Our chunky heart and silver range has proved to be a massive hit with clients of all ages.
Any new developments this year? We launched our new website before Christmas. It took a lot of stressful late evenings, but it was worth it. Since launching we have been delighted with the fantastic response and feedback from customers. Are you excited about 2011? Absolutely! We now showcase a small selection of our products at The Academy Spa - Coleg Morgannwg, which has proved to be a huge success. We have built up a loyal returning client base and we will continue to support charities such as Help for Heroes, Y Beythin, Ty Hafan, CLIC Sargent and many more.
