Gemma Williams-Jones of View2Rent has recently celebrated ten years in business and enjoys an enviable reputation. We caught up with Gemma at the gorgeous new Harbour Bar and Restaurant to find out more. When was View2Rent established? I set up View2Rent in 2007 from our little spare bedroom in our first home and within 12 months I opened our first office on Lias Road. As much as I enjoyed our eight years there, I felt it was time to move on, so in May this year we opened our new office in Porthcawl’s main street. Since moving there, the feedback we’ve had has been fantastic, we absolutely love being in John Street. Why Porthcawl? I’ve lived in Porthcawl all my life and absolutely love it, My family have lived in Porthcawl since 1930 and been in business here since 1954.

My sister has her own boutique The Closet and my brother also has his own business David Evans Garden & Home Improvements, it’s a very proud feeling after all these years as a family we are still in business in our lovely town. Porthcawl has so much to offer with independent businesses, restaurants and bars and the beautiful beaches. No wonder people come for miles to visit. It’s such a lovely town to live in. Who is in the office with you? There are four of us at present. Myself, my husband Sam, Karen is our lettings negotiator and does a fantastic job, Ali has recently joined us and is doing so well at managing all the accounts. They are wonderful members of the team and I’d be lost without them. Plus, we are very fortunate to be able to work with other local professionals, from plumbers to electricians, carpenters and builders, and we count them all as very much part of the View2Rent team. 6

I really can’t believe how quickly time has gone, I’ve welcomed two amazing little boys in that time too, ten years has just flown by but I’ve loved every second. ST. CLARE’S SCHOOL Vale Life chats to Simon Antwis, Headmaster at St. Clare’s School in Porthcawl, to find out more. Who does the school cater for? We are a non-selective independent school for boys and girls aged 3 up to 18. We have many students leave our Sixth Form at the end of Year 13 who have been with us since their Nursery days. St. Clare’s School has recently been able to celebrate its performance in the ALIS Value Added data report for 2017 A-Level exams.

What is ALIS? ALIS (Advanced Level Information System) Value-Added analysis tells us how likely students are to achieve particular subject grades as they set out on the journey to post-16 qualifications, and is based upon a child’s average GCSE score and a baseline test. This data allows us to predict what A-Level results each of our students are likely to achieve and, at St. Clare’s, to aim to better those outcomes. What does this actually mean for students? This analysis shows that due to factors such as smaller class sizes, more individual attention and exceptional teaching at St. Clare’s, a student typically expected to achieve BBB grades is actually more likely to achieve ABB with us. 12

This could make all the difference when it comes to UCAS applications and perhaps see students gaining that Russell Group place they wouldn’t otherwise get.

John Williams, a 50 year old father of two teenagers from south Wales shares with us his fitness journey with Elite Fitness, Cardiff.

ELITE FITNESS Tell us a little about yourself Whilst I have had an on-off relationship with a basic level of fitness over the years, I had undertaken no competitive sport prior to joining Elite Fitness. I had toyed with the idea of trying my hand at white collar boxing but, approaching 47, had I left it too late? What have been your barriers and frustrations? My main barriers were my ability to recover between sessions and to cope with niggling injuries I picked up over the course of a training cycle. With the help of Elite Fitness, I have significantly improved my knowledge of how often I can and should train. I found that rest is as important as training and that patience is sometimes your biggest ally. What was the moment you began to see you were making a change for the positive? I felt a change for the positive very early into training for my first fight, the basic fitness work was tough but I gradually acclimatised to it. Fighting is the most fundamental form of physical challenge; this is probably why its appeal has lasted the test of centuries.

I have raised over £23,000 for Macmillan Cancer Support over the course of my 6 fights. I learnt good nutrition, hydration and supplementation were vital to me being able to train at an appropriate frequency and intensity; this led to me being able to manage my weight effectively and sustainably. I reduced my weight by 10kg over a ten-month period. What actions have made the biggest impact towards the changes you’ve made? The biggest changes I’ve made have been two-fold. Firstly, the ability to set achievable goals and to work towards them in a measurable way by cycling my effort in terms of intensity between fights. Secondly, through experience I have learned not to be limited in terms of goals, there is always scope to improve.

What has changed in you specifically? I look and feel younger than when I started white collar boxing with Elite Fitness, people close to me can see the difference. 15

I hope it has changed the way that people view me, it has been a major challenge for me to make this change at my age. I feel that I have experienced something that most people haven’t, having pushed myself beyond what I thought I was capable of. Be honest with yourself, how often can you genuinely say ‘I gave it absolutely everything I had? I now know that I can look back and say those words with some conviction!

Faceup Cymru has a range of objectives to help people by making their lives more comfortable; including providing specialist equipment, funding a dedicated Physiotherapist, Social worker and a Clinical nurse specialized in wound care.

They also provide patient self-help groups to help with confidence building, coping strategies, target setting, coping with disfigurement as well as support from a Counselor.

John Hawkins, who established the original dental surgery in Rhiwbina village nearly 50 years ago, is a Trustee of the charity, having suffered from oral cancer himself. As we still have such a close relationship with John (as do many of our patients), we wanted to support a charity that is so close to our hearts. At last year’s festival we raised an amazing £1360.68, so had set ourselves a target of beating that this year! And we did it… A fantastic £1420.00 was raised!

Harbour Bar & Kitchen opened its doors in July and for the first month launched their food offering with a soft opening menu which was very well received. They are now running a full, extensive menu to the delights of the people of Porthcawl and beyond. We chat to co-owner Kate Jackson to find out more.

Congratulations on the opening Kate. Are you the sole owner? No, HBK is owned and operated by myself and my partner Phil Booth - of Booth Group Leisure & Hospitality.

We have lunchtime weekly specials and a bar snacks menu too. Harbour Bar & Kitchen serves a modern roast lunch from 12pm - 4pm on Sundays.

What does HBK offer? The restaurant offers modern, casual dining with a menu ranging from Wagyu Burgers through to high end steaks and fish dishes. Our menus change seasonally, so there is always something new to look forward to and, because our food is cooked fresh to order, we can accommodate most dietary requests.

Does the restaurant welcome children? Absolutely! Children are most welcome. We are a family friendly restaurant and have highchairs, baby changing facilities and child menus during Monday to Friday and an additional Sunday menu for roast. What about dogs? Dogs are permitted on our outside heated patio area. We have parking for your four-legged friends (whilst you pop to the bar) and bowls of fresh water for passing thirsty hounds too! What was your reason behind opening the studio? The initial reason behind opening ProTone was to create a working environment for my daughter who has autism. Charlotte makes refreshments for clients, and cleans down our toning beds. She is able to work in a calming and non-stressful work place. I have worked with children for years, with various disabilities or with parents who struggle with daily living situations. What has the journey been like since you opened up? At the beginning my husband and I were unsure if we were ready to take on the challenge of a career change. It was a struggle at the start, working long hours, not having many clients. We started off with 3 or 4 clients a week, now we are pre-booked throughout the week.

What sort of treatments do you offer and what are they recommended for? Our toning beds are fantastic for helping relieve symptoms of Fibromyalgia, Arthritis, Cerebral Palsy, Diabetic Neuropathy, Parkinson’s and stroke recovery. Our beds are excellent for toning up. They are very beneficial to clients that have poor blood circulation and poor coordination. The beds are suitable for anyone between the age of 14 to 85 plus. A session on our bed is the equivalent of an hour in the gym. We also have a beautiful treatment room where our Holistic Therapist offers amazing treatments such as Reiki, Reflexology, pregnancy treatments, Massages. Davies and Jones Optometrist have an enviable reputation for providing the best possible customer service. To prove this, two of its staff members are competing for the privilege of winning a much coveted AOP (Association of Optometrists) Award. Cath Coles and Lee Berbillion have each been nominated for Dispensing Optician of the Year. We looked in on them to find out how they feel about their nominations.

The AOP Awards recognises and celebrates outstanding talent and contributions in the optical sector. A shortlist of finalists in each category of the competition is selected by a panel of expert judges, who represent all areas of optics. Finalists are then profiled on the AOP website when voting opens in September. AOP Awards winners will be revealed at a prestigious ceremony; a black-tie gala dinner, taking place on Sunday, 28 January 2018. Cath and Lee both undertook the same academic qualifications but Cath has always been in practice (front of house) whereas Lee spent more time in the lab and was much less customer facing.

Cath I started in Davies and Jones as a part-time optical assistant. I really enjoyed dealing with the public, and I was interested in the dispensing. I was then given the opportunity to take Optical Assistant courses with the Worshipful Company of Spectacle Makers. When I had completed those courses I was asked if I would like to go on to do the DO course to be a dispensing optician. I did my degree while working full time in practice and with two small children at home - it was exhausting but worth it! I then worked around three of our practices; got involved in frame buying, and then was lucky enough to be offered the position of Manager of Talbot Green branch. 38

Also, I did one year working for a pilot scheme, delivering eye service to a special school in Aberdare (released from work one day a week), which was a real honour. Lee I started off as a lab technician, after leaving school finishing my GCSEs. I worked in the lab for six years and progressed through the Worshipful Company of Spectacle Makers - doing courses from Level 2 to 4 NVQs and qualified as an SMC Technician. I worked alongside Geoffrey Lewis, who set up the lab 25 years ago and Bradley Watts, the lab manager now. I learnt a lot about spectacle glazing.

Then, being very ambitious, I wanted to go onto a dispensing course. Under the guidance of Cath and Owain, I have progressed over the last three years to become a FBDO BSc Hons dispensing optician. Tommy’s fabulous starter came joint first in the Finals of this year’s Great British Menu scoring 10’s all around. You can sample this dish at Restaurant Tommy Heaney at The Great House Hotel as it is currently on the menu and now we’re giving you the chance to recreate it yourself.

RESTAURANT TOMMY HEANEY AT THE GREAT HOUSE HOTEL It’s been lovely to hear people’s comments about our Great British Menu experience and also to hear their feedback about the dish when they’ve tried it for themselves in the restaurant. We are getting an increasing number of customers asking a lot more about ingredients and techniques and I think that people are a lot more interested in what goes into a dish and how it is made than they were in the past. Programmes like the Great British Menu really help to get people more interested in food and for me this can only be a positive thing. I also believe that it’s encouraging people to be more adventurous with what they make themselves at home and try different cooking methods as well and challenge themselves to learn more. My philosophy has always been to use great local produce and let the produce do the talking and it’s great that people are so interested in how we create dishes.

Baby Beetroot 2kg Medium Beetroot 3 Bunches of Baby Beetroot (Yellow, Candied & White) 100ml Rapeseed Oil Sprig of Thyme Salt Smoked Beetroot Applewood Smoking Chips Pickling Liquid 1ltr Water 350ml White Wine Vinegar 90g Sugar 30g Salt 1 Bay Leaf 3 Sprigs Thyme Beetroot Emulsion 800g Beetroot Juice 160g Cabernet Vinegar 4 Egg Yolks 400ml Extra Virgin Olive Oil Pigeon 2 Pigeon Crowns 2 Sprigs Thyme 100ml Rapeseed Oil Salt & Pepper Seeds 50g Sunflower Seeds Pickled Berries Punnet Raspberries Punnet Blackberries Blueberries Pickled Shallots 2 Banana Shallots Dressing 1 tbsp Balsamic Vinegar 1 tbsp Chardonnay Vinegar 1 ½ tbsp Extra Virgin Olive Oil 1 ½ tbsp. Hazelnut Oil Garnish Micro Mizuna Nasturtium Leaf Nasturtium Flowers Red Currants

METHOD

1. Remove the breasts from the bird. Remove the skin, season with salt, pepper, thyme and oil… seal the bag. 2. Beetroot emulsion; juice the medium sized beetroot (holding back 2 beetroots for the smoked beetroot). Weigh out 400g and reduce to 100g, add the remaining ingredients, reduce to 60g and cool. Add the egg yolks to a blender with the beetroot reduction slowly add the oil and season to taste. 3. Season the remaining beetroot (holding back one of each baby beets for pickling), vacuum seal individual colours in separate bags and steam at 90˚C for 30-35 minutes (90 minutes for the medium sized). Once cool enough to handle… peel. Alternatively, you can wrap the beetroot in tin foil, bake at 160c for 45 minutes until tender. 4. For the smoked beetroot. Place the cooked medium sized beets on a wire rack. Layer a baking tin with foil and ass smoking chips, place the wire rack over the chips and cover the whole tray with foil; place on direct heat for 5-8 minutes depending on the size of beetroots.

8. For the seeds, place a pan n heat and ass the seeds, tossing until just coloured. 9. To make the dressing, emulsify vinegars and slowly add the oils, season to taste. 10. To serve; cook the pigeon breast at 58˚C for 15 minutes and slice in two. Alternatively, sear in a heavy based frying pan until golden brown then transfer to a small roasting dish and roast at 100c for 6 minutes and leave rest for 10 minutes. 11. Place on plate with warm beetroot, berries, emulsion, seeds and pickled beetroot. Garnish with nasturtium leaves, flowers and lightly dress with vinaigrette. 5. For pickling liquid; place all ingredients in a pan and heat to dissolve the salt and sugar. 6. For the pickled beetroots and shallots, peel and slice the remaining beetroot and slice the shallots into rings. Heat pickling liquid and pour over beetroot; once the vegetables have softened slightly, remove and layer on a tray. 7. Pickled berries; place the blackberries and blueberries in separate vacuum pouches and ladle 30ml of cold pickling liquid into each and seal on full pressure. Place the raspberries in a small take away container with 30ml of pickling liquid and compress. 43

When did you open Fablas Michelle? We’ve been open now for six months and can’t believe how well thing are going. We couldn’t have asked for a better response. What’s on offer at Fablas? We’re much more than a coffee shop. We offer an arrange of hand-made, mouth watering Artisan Ice Creams, sundaes, sorbets (both alcoholic and non-alcoholic), really good coffee, cocktails, wines, bottled beers and a selection of cheeses that you wouldn’t find in the supermarkets. Where do your customers come from? We’re getting a good following from the people of Cowbridge but we see new faces every day. What do you think is special about Fablas? We pride ourselves that our ice cream is made locally by ourselves, using locally sourced milk and cream. We’re firm believers of selling locally sourced produce. Our customers love the fact that we are an independent business and that we are a mother and daughter team.

I couldn’t have done all of this by myself. Mum and I love working together. Our staff are local and we are a friendly team. Customers often comment that there’s a friendly and relaxed atmosphere which is something we really wanted to achieve. What’s popular on the menu? Who doesn’t love Prosecco? Our Prosecco ice cream is a big hit as are our Smirnoff Ice and Desperados Sorbets. I know there seems to be an alcoholic thread here! Our ice creams are hugely popular and, given that we have 29 flavours, there’s enough to choose from! We hear you also do parties? Yes, we recently introduced our Kids Party Package which are proving really popular. From £12.50 per head, kids can enjoy a mocktail on arrival, followed by afternoon tea and finish with a giant sharing ice cream sundae. We also do grown-up parties too! (18 and over). AAI (Architectural Aluminium Installations) of Swansea were delighted to join forces with Morganstone on a large care home in Beddau which was officially opened in September this year. We caught up with Ralph Hughes, Operations Manager of Morganstone, to find out why he chose to work with AAI.

They are known to us through personally knowing each other from previous companies. What work did they carry out for you? It gives a large amount of natural light to the internal corridors and also security to the entrance doors.

Headline sponsor Bluestone National Resort and the lunch’s other sponsors joined the Women in Wales committee at the SSE Swalec Stadium for the cheque handing-over ceremony, where Save the Children confirmed that the donation would go towards the Welsh project, Eat, Sleep Learn. Launch night of Penarth Fashion Week Local independent businesses including boutiques, tailors, hair designers, food establishments and make-up artists and members of the RNLI got together to launch Penarth Fashion Week which runs from 9th – 15th October, 2017. As you know, PFW was born to raise money for much needed support and fund raising for the local RNLI, a charity which saves lives every day. The evening culminated with the unveiling of the “RNLI Dress” worn by Gaby Harding and designed by Georgina-Grace Smith. The event was hosted by Etc. Penarth and later in the week again hosted another photoshoot to unveil the “RNLI Suit” designed by Nathan Palmer and modelled by Kieron Davies.
