Watermelon Salsa

This fresh salsa offers a fruity, summer twist on traditional salsas. It tastes delicious with pork or chicken and looks festive for a 4th of July picnic. Make it at least one hour in advance to allow the flavors to meld.

Ingredients

• ¼ cup fresh cilantro leaves, chopped • ¼ cup chopped jalapeno peppers • 2 tablespoons white vinegar • 1 ½ teaspoons minced garlic • 3 teaspoons to 1 tablespoon sugar • ½ teaspoon salt • 2 cups finely chopped watermelon • 1 medium yellow onion, diced • 2 navel oranges, peeled and chopped

Instructions

1. In a medium bowl, stir together the cilantro, jalapenos, vinegar, garlic, sugar, and salt.

2. Add the watermelon, onion, and orange.

Stir, making sure the watermelon mixture is well coated. Cover and chill one hour before serving.
