It’s a year since we started Good Taste as a platform to celebrate the brilliant food and drink talent in Merseyside, Cheshire and beyond. In that time we’ve featured hundreds of chefs, producers, farmers, baristas, bar tenders, grocers, hoteliers and business owners. In our last edition we profiled 100 women leading the way in the food and drink industry. We love telling their stories and spreading the word about all the great places to eat and drink on our doorsteps, and further afield too. That’s why we’re launching our Good Taste Awards, a celebration of all the great people working in the sector. From farmers to restauranteurs, large hoteliers to small producers, we want to recognise outstanding achievement across the board. But we need your help to do that. This autumn nominations will open and we’re asking you to tell us who we should be shouting about. It’s the most exciting thing we’ve done yet, and we want you to be part of it. In this edition we also eat our way around Liverpool ONE, with its huge range of restaurants, cafes and bars. Bold Street Coffee adds some Spirit

T

his autumn, one of Liverpool’s best loved independents is to get a new lease of life. Independent bar and restaurants company Graffiti Spirits Group has partnered with Bold Street Coffee for the return of Liverpool’s favourite coffee shop to 89 Bold Street. Their hugely successful crowdfunding campaign in May, raised over £35k with 884 backers. Sam Tawil and Katy Monti, owners of Bold Street Coffee say: “Due to our landlords reconfiguring the site at 89 Bold Street, we launched the Kickstarter campaign needing to raise £30k of the £75k required to fund the fit-out to get back in and expand our offering. “Graffiti Spirits have always been hugely supportive, allowing us to hold pop-ups in their venues during the Kickstarter campaign and now at Santa Maluco. Their advice and expertise since has been incredible. “We knew that we wanted to do something a little bit different when we got back into 89 but obviously our experience lies in coffee shops. Partnering with Graffiti Spirits Group means that we have access to their incredible know-how and contacts so that we can take Bold Street Coffee to the next level.” The new look shop will launch in stages, with the coffee shop returning in October and a potential downstairs bar to follow in 2019. Co-founder of Graffiti Spirits Group, Matt Farrell, adds: “We think independent businesses are hugely important to Liverpool’s growing food and drink scene. Having been friends with Sam and Katy for many years, we obviously were devastated for them when problems arose with the venue. “We saw a great brand alignment and after hosting the pop-ups, we wanted to work with them on the new Bold Street Coffee concept. “Being partners allows us to help BSC in expanding the brand and becoming the number one independent coffee shop in the North West. We will be adding a brand new open kitchen and menu, meetings room, as well as a small bespoke bar offering, yet not forgetting the classic things that made the shop so popular with ourselves and other regulars. It’s a great tale of two independent, local businesses coming together to give something back to the city again.” Bold Street Coffee is set to return to Bold Street in October.

news Warrington-based mobile afternoon tea and baking school, Room Forty, has been declared Warrington’s Hospitality Provider of the Year. Room Forty was founded only two years ago by businesswoman Jen Perry. The business comprises a mobile afternoon tea emporium and baking school. This accolade was part of the Warrington Business Awards and follows on from winning silver in the Tiptree World Bread Awards in October. The Warrington Business Awards were sponsored by Redwood Bank and Warrington & Co and were independently judged by a panel of experts. Jen says: “When I started Room Forty Afternoon Teas just two years ago I had a vision but no idea about how to achieve it. Every day was a baby step (sometimes backwards) designing menus, learning to bake and create, finding better ways to do things and tweaking and refining. Not to mention the business side of things and finding a way to store all the vintage crockery. “On the days or sometimes weeks with no bookings I didn’t give up, I just stretched the goals and worked harder.” Jennifer Roulston, Warrington Business Awards 2018 organising committee member and partner at FDR Law, commented: “What a fabulous night. The quality of the nominations for each of this year’s awards was extremely high and the deserving winners exemplify what a great collective ‘can do’ attitude we have here in the Warrington business community. Well done to everyone involved.” Rough Hand Made has opened in the Royal Albert Dock Liverpool. The family-run bakery has brought its perfectly imperfect hand-crafted pastries, pittas, breads and sandwiches – all made freshly each day to its own unique recipes – to the Dock. After four years on Penny Lane, Carlos and Sharon Goldman have moved their business from one worldfamous Liverpool landmark to another, creating a bright and airy bakery at the Britannia Pavilion. Now, along with a new location for customers to enjoy Rough Hand Made straight from the oven specialities, they have created a space to sit and have lunch and coffee too. “It’s a bakery, but it’s really an experience,” says Liverpool-born Sharon. “Our customers don’t just come in to buy a loaf of bread, it’s somewhere where all of your senses wake up. It’s something special and different.” Restaurateur Gary Usher smashed his £50,000 crowdfunding target to get his fifth restaurant, Pinion in Prescot, off the ground. It reached its target in just under 60 minutes and quickly reached more than £86,000 with investment from nearly 1,000 supporters. On reaching his target, Usher immediately took to Twitter to thank his backers. “It’s overwhelming beyond words,” he wrote. “I’m so grateful to have support like this and I don’t want anyone to think I take it for granted. It gives me the confidence to know what we’re doing is ok. Thank you.” Rewards for pledges include a name on the founders’ wall (£10), meal vouchers to the value of the pledge (£25-£100), two opening night party invitations (£100), masterclasses and lunches at his other sites (£200) and a private home-cooked dinner (£2,000). Last year he raised more than £200,000 from 1,522 backers for his fourth restaurant, Wreckfish in Liverpool, the most money ever raised for a restaurant through a crowdfunding campaign in the UK.

news It’s been a successful summer for Thornton Hall Hotel and Spa. After winning the Best Tasting Afternoon Tea of the Year Awards, the hotel is also celebrating inclusion in the top 50 list for hospitality across the globe according to the LUX Life publication. The Wirral venue is well known for its afternoon tea, which includes a choice of more than 20 varieties of loose leaf tea, plus dainty finger sandwiches with seasonal fillings accompanied by homemade cakes, pastries and baked scones with bespoke jams and curds. Thornton Hall Hotel and Spa general manager Geoff Dale says: “To be up against many five star London venues and win is quite an achievement. I’m so proud of the whole team: the Lawns’ head chef Chad Hughes, our pastry chef Ellie Fletcher and restaurant manager Abdallah Othmani. “As we were the only countryside hotel we also took our view with us on two pop-ups with photos of our gardens, so the judges could really get the Thornton Hall experience.” Editor of competition organiser Hotel F&B magazine Joe Bill adds: “The standard of food and tea pairings was exceptional. The Kitchen at Storyhouse in Chester has unveiled its latest seasonal menu, celebrating the crossroads of the Eastern Mediterranean. With recipes and ingredients from Greece to Turkey, and Libya to Lebanon, each dish bursts with flavour. Favourites on the starters and salads menu include delicious pea and mint hummus (£3.50), as well as home made fattoush (£4) and roasted beetroot, served with labneh, mint and pistachio (£4.50). Meat eaters will love the hearty harissa pork sausage, with crushed butter beans, parsley and coriander, or the Persian meatballs, with lamb, aubergine and red pepper. Or for lovers of seafood, the cod, home-cured in ouzo, is served with ruby grapefruit and candied walnut (£6.50), and seared scallops are dressed in fragrant rose harissa oil, and served on celeriac puree (£7.50). recipe Jen Perry goes in search of authentic Indian food in Warrington Mareek Singh’s enthusiasm and passion for cooking is irrepressible and matched only by the phenomenal food he produces. As he describes it himself, it is ‘Real Punjabi soul food’.

If you haven’t tried his food yet, you are sorely missing out. Singh’s Grillhouse takes its street food out to markets and events across the region and is based in Warrington Market. It is easy to find, just look for the queue in the corner. “I’ve never had any formal training,” says Mareek. “My ability is a gift from God.”

With just one mouthful of his goat curry I’m a believer. The Moss Side boy intends to take his regular customers on a culinary tour of the Indian continent through the specials that he’ll be serving. Each special will be a taste of authentic food from a specific region, city or town. It will be the real

recipe, the real taste but with Singh’s unique take. He says: “I’m sharing with you my recipe for Punjabi homestyle chicken on the bone. This is a real taste of the Punjab region, a meal that is cooked in every Punjabi household. “Don’t be put off by the fact that it uses a lot of oil, it is essential to the cooking process and can be poured away at the end.”

You’ll need:

Recipe: Mareek Singh’s Punjabi Homestyle Chicken Take a whole chicken, skin it and chop into rough chunks (bones and all) about 2-3 inches in size. Sprinkle salt all over the chicken and set it aside for the moment. Pour plenty of the oil into the pan so that it sits about a cm deep and heat the oil until it is simmering. Thinly slice the onions and then squeeze them as you throw them into the pan. The squeezing of them breaks the enzymes, keeps them moist and helps them cook quicker. Fry them in the oil until they are sweated down to golden brown in colour (don’t be afraid if the onions go dark brown as eventually they’ll disintegrate into the dish) Very finely chop the ginger and garlic (or blitz them in a food processor with a dash of water) and drop them into the pan.

1 x free range, corn-fed whole chicken 2 x brown onions 1 inch cube of ginger 4 x green chillis 5 x cloves garlic ½ tin peeled plum tomatoes Vegetable oil Garam Masala* Tumeric* Chilli Powder* Coriander Powder* Salt *Mareek recommends buying these from an Asian grocers

Leave them for a minute or so to turn golden in colour. Take the half tin of tomatoes and give them a mash to break them down with a potato masher then stir the tomatoes into the pan. Leave on a low heat until the oil starts to split and pool around the mixture. Put in the chicken into the pan giving it a quick stir around. Add into the pan 3 tbsp of Garam Masala, 1 ½ - 2 tbsp chilli powder (dependent on your chilli tolerance levels!) , 1 ½ tbsp. coriander powder and 1 tablespoon of turmeric. Stir all the ingredients together and turn the heat on the hob up high. Keep stirring until the chicken has turned white, then turn the heat back down, give the pan a

shake and cover with a lid. Leave to lightly simmer for 45 minutes until the chicken is fully cooked through (give it a short stir every 15 minutes or so), then take the take the lid off, turn the heat back up and give a good stir. By now the masala/ tomato/onion/spice mix will be sticking to the chicken. Give the sauce a quick taste and season to taste with salt. The meal is now ready to eat! Either just cover on plenty of fresh washed coriander and chop the green chillies over the top, or, if you prefer drain off the surplus oil add a glass of water and a little more salt and heat it through slightly before adding the coriander and green chilli. Serve with rice and naan breads.

News Cains Brewery licensees Fiona and Dominic Hornsby by the original water pump

ne of Liverpool’s best-loved brands has returned with a multi-million pound investment and a home in the bustling Baltic Triangle. Liverpool-born entrepreneur Andrew Mikhail has re-opened the Cains brewery site, building on a portfolio of bars and hotels in Liverpool, Southport and St Helens. “This is a pivotal moment for our business, the CainsBrewery Company,” he says. “Cains Brewery and Liverpool are such iconic brands and Cains, of course, is part of the city’s heritage. We’re investing an initial £7 million in four phases as part of bringing to life what is a 15,000 sq ft scheme on three levels plus a basement with incredible potential. “After speaking with Cains’ former managing director Sid Dusanj for around six months, he told me he was delighted to pass on the Cains brand to someone who is so passionate about the Brewery Village scheme and the city. “I was born in Liverpool with a family history that goes back several generations and my vision is based around making this city great again. “Cains is a resilient brand just like Liverpool and we’re really excited to be bringing Cains Brewery back, albeit with a new direction that will bring national attention to Liverpool for all the right reasons.” Plans include a craft-brewery with cask and keg beers, an Altrincham-market style venture for artisan food and drink lovers, and a state of the art sky bar. In addition, another bar with capacity for 120, already named as The Quarter Hoop, plus a brewery hall housing 400 will sit alongside the existing Brewery Tap and the Punch Tarmey brand – part of Mr Mikhail’s existing portfolio – that will operate on the other side of the Brewery. Sid Dusanj, managing director of Brewery Village Ltd, says: “The brewery village concept started five years ago and it’s great to see that Cains Beers will be brought back to life within the grade II- listed brewery by entrepreneur Andrew Mikhail and is soon to be re-launched after brewing stopped back in May 2013. “It’s an astonishing building and that’s why we’ve put together such a bold scheme. There’s two cavernous tunnels running through the site that we will be converting into two live music venues. Plus, there’s even a well that consists of a

40 ft long lake that’s 12ft deep… all part of the great history of this site.” The four phases being developed over three years include phase one’s Punch Tarmey, an artisan food and drink hall and the brewery in phase two, the sky bar in phase three and a hotel in phase four. Hoylake welcomes careful food lovers

W

ith its friendly high street packed with independent shops and restaurants, Hoylake is home to a huge range of places to eat, drink and shop. The vast majority are locally owned and not part of chains, creating a bustling local economy which allows small businesses to thrive. Situated between Meols and West Kirby, it has two train stations at either end of its high street – Hoylake and Manor Road – and plenty of free parking. Its coastal location lends itself perfectly to walking and cycling, and if you’re visiting on a sunny day, then head down to Hoylake beach, a haven for dog walkers and those chasing the famous Wirral sunsets. The promenade also plays host to one of the town’s most popular annual events, the Hoylake RNLI Open Day which takes place each year in August, and, of course, there’s the Royal Liverpool Golf Club, one of the world’s most beautiful courses. It has excellent speciality tea and coffee shops – Nine Leaves, Rosie Lee Tea Rooms, Ground, Toast and Smooth to name but a few – as well as a huge range of great places to eat inspired by countries around the world. There’s also a great range of shops too, with everything from Honest to Goodness, a super-healthy speciality store where everything is vegan, to Jill’s Cookshop and Hot Stuff, which specialises in beautiful Esse stoves and everything you’d need for a woodburner, open fire, outdoor pizza oven or range cooker. Many of the shops and restaurants have planters outside filled with herbs and vegetables which anyone can eat. It’s part of a project run by volunteers to produce locally grown food in every spare bit of space. As well as a haven for independent businesses, Hoylake is known for its

strong community spirit. With its lifeboat crewed by volunteers, plus the sailing club, rugby club, community cinema, Hoylake and Meols in Bloom group and annual Festival of Firsts, it’s a fun and friendly place to spend time, and visitors get a warm welcome. Every Christmas the town comes together to fund its own Christmas

lights, a spectacular display arranged by volunteers. Their motto is fitting: “There is no ‘they’, only us, ‘all of us’”. Sometimes, that’s all you need…

When his local looked like it was about to close Ritchie Whitworth decided he had to act... and now he’s transformed its fortunes

‘I liked the pub

so much I bought it’

W

hen your local pub looks like it’s about to shut down, you’ve got two choices: drink somewhere else, or take it over. Quite literally putting his money where his mouth was, Ritchie Whitworth stumped up the cash to take over the Plasterers Arms, and within no time at all, found himself running the place. Having been a regular of 30 years, he knew the pub well – and its most important asset, its customers. And those decades of experience on one side of the bar put him in a good position to know what would make it work on the other side of the pumps. For Ritchie and wife Michele – who he credits as the creative force behind the pub – it was about making sure a community asset remained available to that community. “Most of our customers live within 600 metres of our front door,” says Ritchie. “Our regulars are very good to us, and very loyal with their custom. “They are the reason we wanted to keep the pub open – it’s about providing that meeting place that is now sadly lacking in many towns and villages. That, and to sell good beer.” And the beer certainly is good. A keen real ale fan himself, Ritchie prides himself on keeping a good cellar. “Bombardier is always popular, and at the moment we have White Rat, which has been doing well, plus Boltmaker and Purple Moose. There are three lagers, two bitters, Guinness and cider. We’re thinking of adding a craft beer too. There’s a list on the bar for customers to help us decide what

they want to try next.” But a pub cannot live by beer alone, as well Ritchie knows. There’s an excellent wine selection, an impressive and diverse whisky range, as well as a burgeoning gin offering, served with Fevertree tonic and garnished with juniper berries. While on most nights there’ll be a delegation of drinkers at the bar setting the world right and tables full of friends catching up, the pub ensures it’s more than just a place to drink and chat. As well as the staple quiz nights and live music, christenings, birthdays, wedding parties and final send-offs are all catered for. There’s live music and outdoor food on Lifeboat Day – a major diary marker in Hoylake – as well as winter markets for local craftspeople, free Christmas lunches for the older community, and a visit from Father Christmas for the kids. As a well-used establishment, it takes some upkeep. Since they took over three years ago, Ritchie and Michele set about returning it to its former glory, without stripping out any of the charm or original features that make it a home from home for so many. The open fires still roar in the winter time, and the recent addition of William Morris wallpaper in the snug has met with approval from many a discerning eye. “We deep cleaned, re-painted, recarpeted. One of our regulars, Julian, helped us choose the wallpaper for the snug. Another helped us to hang it. Another regular, John, does the planting in the beer garden, and in

with the flowers he’s planted tomatoes, chillies and lots of herbs. “It was a bit unloved out there but now it’s the best seat in the house.” While the local community is at the heart of the pub, there’s always a warm welcome for all visitors, two or fourlegged. “We’re the only really dog-friendly pub this side of West Kirby,” Ritchie explains. “So lots of people find us through the internet when they’re looking for somewhere to bring their dog when they’re walking down the beach. “We’re dog-friendly and familyfriendly – we want people to feel welcome.”

Wirral girl turned Italian chef Tracey Taziolli tells us all about Ama La Vita and why it’s good for the soul…

W

hen you step inside Tracey Taziolli’s bright airy Wirral cookery school you can immediately see its blessed with some stylish Italian touches. Her super-modern kitchen sits beautifully alongside a collection of beloved pots, pans and vintage Italian accessories. “I spent 27 years in Italy,” explains Tracey, “and I love collecting things!” Disillusioned with Thatcher’s 80s Britain, she set off on an adventure to pursue her two great loves, food and art, and ended up settling in Northern Italy where she met her husband Marco. “I was so lucky to settle in Palermo. The food culture there is just incredible and my wonderful mother-in-law

was so kind and generous; passing down family recipes and teaching me the art of pasta and bread making and generally re-educating me about Italian food.” Now, after teaching food technology in Italy and working alongside some of the country’s most renowned chefs, Tracey and her family have moved back to the UK and she is ready to pass on her knowledge to a whole new audience. So What Is Ama La Vita? Tracey’s new home cookery school, Ama La Vita opens its doors this autumn and she says it’s all in the name. “Ama La Vita means ‘love life’ and for me food is a massive part of that,” she says. “I want to be able to inspire my students to really embrace the heart of Italian

cooking. Yes, I’ll be teaching all the basics – pasta making, authentic breads and pizzas – but I’ll also be offering more

specialist fish and dessert classes and a very special festive feast class for Christmas.” And she is not stopping there. ‘I can’t imagine anywhere we’d rather be’

T

he sign outside Julian’s restaurant says it all: “It’s all about the food”. Anyone who has eaten there will agree. From homegrown herbs to carefully sourced meats – Julian rides his motorbike up to his native North Wales to select the best cuts in person – it’s a haven for serious food lovers. Julian and Jackie Davies opened their bistro in 2004, with a focus on excellent food and friendly service. It is a bistro-style, intimate restaurant serving international and modern British cuisine. They oversee every detail themselves, and it feels like eating at a friend’s house – albeit a friend who is a very good host indeed. Julian learnt his trade at the Chester Grosvenor Hotel, starting at just 18 and working his way up to sous chef, second in command of the huge award-winning kitchen. In 14 years there he catered for royalty and learnt how to make every dish from scratch. Along the way he fell in love with making exquisite sauces, created slowly from fresh ingredients and packed with authentic flavour. From there he went out on his own, working at restaurants across the region, including a stint as head chef at the Wheatsheaf Inn, Raby, being named Chef of the Year in the Wirral Tourism Awards. It was there that he met wife Jackie, and together they opened Julian’s, a hidden gem at the Meols end of Hoylake’s busy high street. While Julian runs the kitchen, Jackie gives the same love and attention to detail front of house, making sure customers always feel at home. Fantastically knowledgeable about food and drink, she knows regular customers by name and offers excellent recommendations from the menu. “Often it’s the dishes on the menu that people

wouldn’t think of that they end up loving the most,” she says. “Obviously the Welsh lamb and steak dishes are always popular, but there’s a dish on at the moment that’s actually a meat loaf of gorgeous pork and beef. Everyone who has tried it raves about it, and the next time they come in it’s the first thing they order.” “The French have a good way of describing things,” adds Julian. “Sometimes in English things don’t sound as beautiful. Something like Haddock Veronique is always popular – it’s a fresh fillet of haddock, cooked in cream, white wine and grapes, and again, once people try it they order it again and again.” Cheese comes from the Liverpool Cheese Company in Woolton and vegetables are sourced daily, ensuring freshness and flavour. Quality comes at a price, but Julian and Jackie are keen to keep their menus affordable. There’s a Fish and Chips deal with two courses for £9.95 Tuesday-Friday from 6pm-7pm, an impressive table d'hôte menu on Thursdays with three courses for £17.50 and the popular Tuesday wine offer, which serves two courses plus a bottle of house red, house white or house rosé for each couple for £16.50. They also have a set menu every night. Tuesday to Thursday it’s £15.50 for two courses, and Friday and Saturday it’s £18.50. There have been regular awards along the way for Julian and Jackie, including a 2018 Certificate of Excellence from Tripadvisor, but the best feedback comes from customers. “Once they find us, customers tend to keep coming back,” says Jackie. “We have a lot of regulars and most of our new business comes from word of mouth recommendations, which is fantastic. “We’re lucky to be part of such a good community. Quadrant is the ideal place to enjoy the sunset

ith its stunning exterior and a real sense of grandeur as you walk through the door, there’s always been a ‘special occasion’ feel about The Quadrant. But, as its co-owner David Williams makes clear, it’s as much a friendly neighbourhood bistro and bar, where every day can be a special occasion.

“Our customers are fantastic and very loyal, but part of our challenge is showing people that we’re more than just a birthday and anniversary restaurant,” says David. “Over time I think people are realising that they can pop in for a drink or a few small plates – it doesn’t have to be a full on formal meal.” Previously The Portrait House, this listed building has been beautifully refurbished while retaining its original features. Situated just round the corner from Hoylake station, this corner site now radiates hospitality and charm. Sharing is the order of the day with tapas-style dishes such as chorizo, honey and sesame seeds (£4.95) and homemade Thai crab cakes, which come with a slick of sweet chilli dipping sauce and fresh lime wedges (£6.45). David and wife Amy met working together in the restaurant’s previous incarnation, before taking over two years ago. They now work

with partner Adam Bowers on the restaurant, who has taken the reins as head chef. “Adam was my sous chef then when I left he became head chef. When the opportunity to buy the restaurant came up we both jumped at the chance,” says David. “We both have a huge passion for cooking and having worked with each other for 12 years a great understanding of where we want the restaurant to aim towards. “It was always our idea that we would slowly start to put our own stamp on what we were doing here. We’ve added small plates to our options and we receive amazing feedback from that every time new customers come in and try the menu.” They are keen to make the restaurant as accessible as possible, offering 3 for 2 deals on small plates until 6pm every day. The a la carte menu also offers two courses for £16.95 available all week and up until 6pm Fridays and Saturdays. They’ve also launched a membership scheme where Qcard members can can receive vouchers to use on their next visit, which includes 50% off the food bill. There’s a real emphasis on fresh local produce. “We are a fully fresh restaurant and we have a team of chefs that enjoy working with the finest ingredients available to us to create new and exciting dishes,” says David. “We change the menus seasonally in order to help us achieve this. estauranter Lazaros has been on a food odyssey around the Wirral for the last 20 years. If you love Mediterranean food and live on the peninsula, chances are you’ve eaten in one of his tavernas. In recent years he’s been at the helm of the eponymous Lazaros in Hoylake and Moreton. You often read about how good for you a Mediterranean diet is, and there’s no doubt that the cuisine at Lazaros Hoylake and Moreton is like eating a plate full of sunshine. From the flavourful Greek salads with their tomatoes and onions bursting with flavour you just can’t really find in the shops, to the lean and succulent kebabs of chicken, pork or a mixture, there’s an extensive menu on which there’ll be something to everyone’s tastes. Don’t miss the haloumi fries, which are the best you’ll try this side of Athens. The restaurants on Market Street in Hoylake and Hoylake Road in Moreton are firm local favourites, with excellent early evening deals that make it hard to justify slaving over your own stove. Inspired by his love of scented candles, Drew set about researching and developing his own range as a hobby at first. “When I’m at home, I always have a candle on the go,’ commented Drew, ‘but I hated the smoky after smell and noticed my walls were becoming a bit discoloured so I decided to look into what made a really great candle. “I discovered that most mass-produced candles are made from petroleum-based paraffin wax and they are often heavily dyed and fragranced with synthetic scents containing parabens and toxins. “So, I started making my own candles using only natural products. I sourced vegan, soy wax and began blending it with essential oils to create my own fragranced candles. I didn’t use any colouring or dyes because soy wax is naturally a beautiful creamy colour. I wanted to make my candles stand out from the crowd, so used a natural wooden wick. They crackle when they burn, which my customers love!” Just under a year on, Drew now boasts a collection of over 30 scents and, having just opened his first luxury candle boutique in Pacific Road, the brand looks set to go from strength to strength. “We are constantly researching and developing new fragrances,” says Drew. “We are super-excited about our new Autumn / Winter and Christmas collections and can’t wait to see what our customers think.”

Inside, the traditional snug and snooker room are big hits with families too. “Often late on the dads will gather and play snooker or share stories over a few drinks,” says Joanna. “It’s a lovely sociable space, and the exclusive hire is a big draw for many families.” Mitton Hall is another popular venue, with a real sense of grandeur. The beautiful 550-year-old Grade II listed Tudor mansion is the perfect backdrop for photos. “It’s such a romantic venue, brides and grooms love the history of the hall,” says Joanna. “It can host 180 seated guests and up to 400 in the evening, so it’s perfect for larger celebrations. We only host one wedding per day, so you know you have everyone’s complete attention. “I always think it looks lovely in the winter too, really cosy, with its roaring log fires.” Just over the border into Yorkshire, Falcon Manor is close to the beautiful town of Settle. With two bars, a snug, a magnificent stairwell and a light-filled function room, it offers the best of a historic venue, combined with modern flexibility. Outside, the stunning terrace and gardens overlook the Dales beyond, perfect for capturing those all-important photos. For a more intimate celebration, the Shireburn Arms is a gorgeous 17th century country inn, in a chocolate box village. Back in Lancashire, it’s a stone’s throw from Stonyhurst College, with far reaching views over the glorious Ribble Valley countryside.

oyal Institution is opening its doors during the daytime to offer everyone a private members’ club experience. Non-members can have full use of the club’s facilities before 6pm, including free wi-fi and a healthy food menu created by Liverpool’s Peel & Coconut, plus first-class service delivered by a dedicated team. Co-owner Danny Murphy says after a soft launch period they felt ready to let everyone see for themselves what Royal Institution is all about. He explained: “When we launched as a private members club in March we always intended to open during the daytime to non-members but we are perfectionists so we were keen to make sure everything was running absolutely smoothly before we really promoted it.

“The exclusivity of our membership comes in after 6pm, so we wanted to make the best use of the daytime too and we had a large number of business people say they would like to be able to come into Royal Institution on a more casual visit-by-visit basis. “It is such a beautiful space, it just made sense to open it up to a wider audience during the day. “When we first discussed the concept of Royal Institution we set out to be the first-class lounge of the Ropewalks area – it’s an intimate space and no matter how busy, you always feel that it’s your space and the team is dedicated to you. “If people come here and bring a guest for a meeting, they’re not fighting for elbow room or for decent service like you can be if you go to a coffee shop or restaurant. “Not everyone wants to meet in the business district, and a lot of other

venues aren’t quite what people are looking for because they’re not designed to give privacy or the level of service we do.” Danny says members will still have exclusive use of the club from 6pm onwards, but it will open to nonmembers from 7am, serving breakfasts, healthy lunches and drinks. “Royal Institution is very much about exceptional service and an outstanding venue, but at the same time we want it to be inviting and unpretentious. “In the daytime anyone who comes here can use our two beautiful rooms, wi-fi and wireless printing facilities, we have a daily changing selection of newspapers and magazines, and alongside our current food menu we’ll be launching a new menu of healthy smoothies soon too.” Royal Institution, 24 Colquitt Street, Liverpool www.royalinstitution.com

Jane Clare finds the perfect al fresco tipple

W

ell, what a fantastic summer we’ve had. I know that’s tempting fate and no doubt it’s raining as you’re reading this. But that doesn’t stop me writing about my theme – wines with barbecues – because if there’s one thing we Brits know how to do it’s hide under an umbrella and serve up a sizzling feast. It’s in our DNA. I bet that on your barbie you’ll have sausages, burgers, maybe some ribs, definitely some chicken (spicy perhaps?) and no doubt some flash-grilled prawn kebabs. Here’s a handful of wines which should tick the boxes whatever your flavour combinations. Dourthe No1 Sauvignon Blanc 2017 (£8.50, from the award-winning www. thewinesociety.com) is a delightfully crisp Bordeaux white and it just shouts sunshine and friends and summer salads and grilled fish. It is classy and elegant with its vibrant notes of grapefruit and lemon. I tasted its sister wine Dourthe La Grand Cuvee 2017 (Waitrose, £9.49) at an Everyday Bordeaux tasting the other week and it was to die for, with zippy citrus notes, complexity and a fresh, fruity aroma I couldn’t get enough of. I’m pretty much in love with pinot gris white wines at the moment which hit the spot with spicy seafood or delicately spiced chicken kebabs. It’s the same grape as pinot grigio but is a riper style and more luscious (and memorable) in the mouth. You can buy Californian MacMurray Estate Vineyards Pinot Gris 2016 (£17.95, greatwesternwine. co.uk) and relish its rich complexity of pears and

apples; but nearer to home Whitmore & White has a New Zealand pinot gris (my favourite style) in Riverby Estate Pinot Gris (£16.95). Or pop to Lidl and buy Pinot Gris Gisborne (£6.99) and share several glasses with friends as you watch the chicken sizzle. I’ll turn to a red now, a great match with singed chipolatas and crispy-round-the-edges burgers. Root 1 Carmenere 2016, (£6 in Morrisons until September 16) is a blend of carmenere and syrah and is full of red berry flavours, vanilla and a hint of spice to offset the crunchy charcoal coating on the meat. There’s a couple of handy little wines exclusively in the Co-op which are perfect for picnics if you have one of those miniature grills with you. Certo Merlot Veneto and Certo Garganega Veneto are just £4 for 50cl and so you’ll get a couple of pours from them. Maybe if you like a soft fruity red with your barbie and your pal enjoys a crisp Italian white, then there’s your answer. Take one bottle each to the park. Finally, think like an Australian and enjoy a sparkling shiraz with your barbie. Yup, they like their sparkling reds Down Under. They’re a bit of an aacquired taste but if you’ve not had one before, then cast your eye towards Sainsbury and McGuigan Black Label Sparkling Shiraz (RRP £10), new in the shops this summer. This sparkling red delivers an ooooer moment, with savoury, woody, spicy black fruits on the nose and a peppery burst of black fruits and spice in the mouth. With food and sun it will really shine. Pick of the cellar: Marqués de Cáceres In 1970, Enrique Forner founded Marqués de Cáceres Unión Vitivinícola S.A., a historic alliance of growers in the village of Cenicero in the Rioja Alta sub-region of Rioja. The enterprising Forner family has has been devoted to the wine trade for five generations. They have released an impressive batch of wines, including the Gran Reserva (RRP £18.99). A deep, dense ruby red, it is aged for two years in oak barrels, and offers intense aromas of ripe cherries with slightly toasted vanilla notes. Alternatively, the Reserva (£13.49) is aged for 20 months in French oak barrels, and tastes of toasted blackcurrants, refined oak and sweet spice, which work together to give it its intense, dark colour. The youngest of the reds, the Crianza (£9.49) presents a fresh bouquet of red berries with a touch of spice. Gently, toasty notes give it a nice depth and intense flavours in the mouth. Local heroes unite at Santo Maluco Graffiti Spirits, the independent bar and restaurant group owned by Matt Farrell and John Ennis, has announced that UFC star and local legend Darren Till has bought a 25 per cent share in his favourite Liverpool cocktail bar and restaurant, Santa Maluco. Along with MMA fighter Mark Scanlon, the pair will make up 50 per cent of the business. Darren, pictured, has been a regular visitor to Santa Maluco’s for the last year and it’s not just because of the unbeatable pizza, there’s a sense of nostalgia for both him and Scanlon in the restaurant too, as the pair used to visit another Rodizio-style (all you can eat) pizza place every week whilst they trained to fight in Brazil. Darren said: “I’ve known the guys from Graffiti Spirits Group for a while now and have been really impressed by their impact on the Liverpool food and drink scene. “John and Matt have been a great support to me over the years, so it’s really great to be able to partner up with them with Santa Maluco. Festival at The Florist

Festive Flowers and Events held their inaugural charity fundraising event, Festival at The Florist. The event was hosted by Radio City 2’s Claire Simmo and entertainment was provided by The Voice UK’s Hollie Ellison and Dixie Daye. After a drinks reception and a three-course lunch, guests enjoyed sets from DJs Lee Butler, DJ Ricco and Jake Edwards. Glitter face-painting was provided by Face the Strange and floral table settings were festooned with mini festival flags and pompoms. A raffle and an auction raised much needed funds for The Christmas Foundation. Paul Lally, managing director of Festive Flowers and Events, said: “The Christmas Foundation was set up by my wife Vicky and I to ensure that as many disadvantaged and disabled children as possible experience the magic of Christmas. Last year we hosted a party for 500 children and we are hoping to do the same this year.”

Marco Pierre White dinner for Claire House Marco Pierre White hosted a charity dinner in aid of Claire House Children’s Hospice at his Wheeler’s of St James’s restaurant at Pullman Liverpool. On arrival, guests were treated to a special Wheeler’s Gin & Tonic Oyster and then enjoyed a three course meal from a menu created by Marco himself. The evening featured a raffle in aid of Claire House. Marco said: “The children who are cared for at Claire House are very brave and are dealing with so much at such a young age with a smile on their faces. That’s because of the incredible commitment of the staff. “When I spent a day at the West Derby site I was moved and struck by how important the hospice is to the children and their families. “Claire House does important work and its new site helps extend its reach even further from Wirral to Liverpool and across the North West, giving hope and support to thousands.”

The Wirral Bake Off 2018

Some of Merseyside’s best bakers and makers dusted off their aprons and took their finest wares to The Wirral Bake Off 2018. Hosted by Claremont Farm, the event was organised to raise money for local charity The UTS foundation, in Hoylake. The delicious desserts where judged by four of Wirral’s best food enthusiasts: Andrew Pimbley from Claremont Farm, Katie Kenny from Squidges Bakery, Ceri Newton from Gorge’us tearooms and Good Taste editor Jade Wright. The guests also had chance to vote for their favourite desserts. The People’s Choice award winner was Claire Casey, with her baked salted caramel and pecan cheesecake. The overall winner was Kelly Wakefield, with her cake lemon, elderflower and white chocolate cake.The event raised £3,483 for The UTS Foundation which provides free structured coaching, health and well-being sessions to vulnerable community groups in Wirral. Mamma Mia premiere The stars were out for the Liverpool premiere of Mamma Mia: Here We Go Again. The event, which took place at The Odeon Cinema in Liverpool ONE, was followed by a fun-filled after-party at the Hilton Hotel in Liverpool city centre. More than 150 Dancing Queens gave the sequel a massive thumbs-up at the charity fundraising event as they danced in the aisles and cheered at the feelgood movie which is already set to break previous box office records. Guests enjoyed arrival drinks in The Gallery at The Odeon, and from the opening credits transported themselves to the clear blue shores of the idyllic Greek islands. Following a standing, dancing ovation, guests made their way to the Hilton for a Mediterranean-themed lunch. The event raised in excess of £8,000 and was supported by Barclays and Barclaycard. The afternoon was hosted by Radio City 2’s Claire Simmo, with Radio City’s Pete Price and feelgood tunes from DJ Charlie C.

I

biza is known as an island of beauty, extremes and hedonistic tendencies. Yet, there is a tale to be told, specifically in the north of the island, of well-being, farmto-table produce, quiet hidden beaches, charming villages and a growing artisanal culinary experience, as well as a magnetic energy that you could only find on this enchanted island. Ibiza has long been one of my favourite destinations. Over the years I have certainly frequented the many clubs and bars of Ibiza town and beyond. My better half often refers to me as ‘Dora’ and I have always found myself living up to this expectation, especially when in Ibiza, often taking time to explore and get lost in the culturally diverse climate that the island has to offer. It’s only over the past few years that I have found myself even more drawn to the north, away ‘from the madness in the south’ as it is often referred to by locals. There is something about the north with its secret coves, pine forests, hippy and local feel that has a really positive energy. This is now being matched by numerous independent culinary options. Firstly, make sure you are mobile for this trip. All corners of the island are accessible in one day but make sure you have transport either by car or even better by bike if you are a keen cyclist. The island’s main gateway to the north is known as the restaurant road. Island favourites Bamdbuddha and the adjacent Nagai (Carrer de Sant Joan) start the journey and with a variety of turn-offs along the way, an afternoon can be spent acquainting yourself with the growing new independent offerings. With an antipodean origin and born from a desire to improve the coffee offering in the Balearics, Meke Coffee Roasters (Lugar Venda de Safragell, 154) is located just off the highway. As well as a strong ethos of sustainability they are now pioneering their coffee across the Balearics. Here you can sample the best cortado (espresso with milk) on the island and take a look around the roastery, where they also sell a variety of organic wines and mezcals. Santa Gertrudis is my favourite town on the island, although not strictly north, deserves it deserves some acknowledgement. A charming rural village, nestled in the centre of the island, it is a perfect escape to take an early evening stroll and partake in its independent boutiques and restaurants. Wild Beets (Carrer Venda de Llatzer, 9) is the place to dine if you’re looking for a vegan or plantbased diet and draws locals in from all over. La Paloma (Calle Can Pou, 4) located in the small town of San Llorenc five minutes off the restaurant road, is often on the lips of any local you speak to as the best restaurant in Ibiza. Be sure to book in advance and ask to sit on the terrace. Personally, I prefer the café offering in the daytime, spending the afternoon in one of the most relaxed al fresco environments, offering organic produce, fresh hummus, home-made pizza and aromatic sea salt and rosemary focaccia. Another five minutes’ drive down the road sits Can Guimo (Carrer de San Joan) created by an alumni of La Paloma. This charming roadside café is the essence of the Ibizan way of life

and again champions an interesting menu targeted at well-being. It’s a welcome pitstop on the way to one of the many beaches. Chiringuito Can Xuclar (Carretera San Joan – Portinatx) is well-hidden off the north coast road. Frequented by locals and the clued-up northern expat community, this charming peaceful cove with its charismatic restaurant is also home to some of the best grilled seafood and homemade desserts on the island. Be sure to book in advance. Sa Palmera (Plaça Corona, 3) has been home to the best paella on the island since 1979 and is located in a beautiful secluded part of the village of San Agnés. Sit in its walled flower garden and enjoy some fried squid and rice with some friend before a well-needed siesta. Los Enamodores (Carretera de Portinatx, 103) is owned by a French former basketball player and his partner, a Dutch journalist, and is located on the northern tip of the island in the old fishing village of Portinatx. The restaurant and nine-room hotel is known for its hip boho design. The menu is an eclectic fusion sharing offering, using fresh seasonal produce and taking inspiration from Asia and Europe. Ultimately its positioning for sunset is the biggest draw for the restaurant terrace (be sure to book in advance for a good spot); the tuna tacos and chicken wings come a close second.

For a truly rural experience stay at Finca Can Marti (Venda de Ca’s Ripolls, 29) which is an example of agritourism of the highest quality. It’s located just before the village of San Joan, where on a Sunday you can find one of the best markets of the island and take solace in the The Giri Café (Plaza España, 5), with its fine secluded outdoor courtyard. The Finca is family-run with a wonderful ethos of health, tranquillity and home-grown produce. There is even an honesty shop where you can gather your own organic ingredients from their farm and nearby local suppliers to cook your own meal in one of their Casitas. Alternatively they have just launched their Moroccan tagine room service menu cooked in-house by one of the farmer’s spouses, who can also be found selling cuisine at San Joan market. It is some of the best north African food I ever have tasted. Every place I have mentioned in the article is of independent origin. They are run by people who know the land and what it requires, and keep the island’s soul beating strong and peacefully away from the noise of Ibiza’s summer mass tourism ‘madness’. The last word A personal trainer for 10 years, Rhys Owen says with the right programme and mindset anyone who can put weight on can lose it. We caught up with him at his Zone Fitness gym in Hoylake to find out how ... Is dieting enough when it comes to losing weight healthily? Dieting is one of the most crucial factors, not the only factor. Try to increase your energy expenditure throughout your day; for example, move more, walk or bike to work, commute rather than drive. Yes it’s more hassle, but what’s more important to you? What exercises are best for healthy weight loss? The ones you most enjoy and that you can stick to. Find a hobby. Exercise does not have to be dull or something you dislike. Find a buddy and figure out the best method for you. As long as you don’t stick to being a couch potato, anything is better than nothing. Does the body prefer to burn fat or muscle? It’s not as simple as what the body prefers, more so what it is you do which forces the body to burn. If you go in too much of a calorie deficit then it would ‘prefer’ to burn more muscle (a 1000 calorie a day is generally far to low for most people, but I see too many people on this). If you are consistently in a small calorie deficit (300-500 maximum) your body would ‘prefer’ to burn more fat. What do the different food groups do for your body? In basic terms: Carbs are your first source of energy when moving. Fats store energy, insulate us and protect our vital organs. They act as messengers, helping proteins do their jobs. Protein is by far the most important group as they are the building blocks of all life. Without the correct amount consumed in our diet you will struggle to get the important results you need, poor recovery, more injuries etc. Healthy eating can mean many different things to different people. Regarding weight management, calories is key. I follow an 80/20 rule which means I can be good 80% of the time and the rest I pretty much eat and drink what I want.

How to shed the pounds without having to be good ALL the time Sustainability is key, so you must find something which works for you. What factors might inhibit weight loss? Anything which restricts you from moving around on a day to day basis. So if you overdo it in the gym one day thinking you’re burning more calories which leads to more weight loss, that may be true short term, but you may be too exhausted the next day to move which will then prevent you to burn more calories throughout your day, which in the long term, will inhibit weight loss. Also you could cause an injury which

again….slows you down day to day. Can only certain types of people lose weight, or with the right programme can anyone do it? In my 10 years of personal training I’ve heard every excuse under the sun about why an individual can’t lose weight. Once their mindset has been changed and they follow a structured programme tailored to the individual, I’ve realised that everyone is capable of weight loss. If you can put it on, you can lose it.
