Italian Bruschette
Ingredients (serves 4) • 2 large ripe tomatoes, diced • 2-3 garlic cloves, peeled • 8 basil leaves, ripped • extra virgin olive oil • salt and pepper • 300 g Tuscan-style bread
Cut the tomatoes in half, remove the seeds then dice. Mix the tomatoes, basil leaves, oil and salt and pepper together in a bowl. Set aside for at least 15 minutes. Toast the bread and rub one side of it with the garlic cloves. Spoon the tomato mixture onto the bread and serve. ** Crostini and Bruschetta are always done in the oven and not under the grill. **
