Roasted cauliflower with crispy chickpeas

INGREDIENTS:

• 400 g cauliflower florets

• 3 tbsp oil

• 3 tsp BBQ seasoning

• 250 g canned chickpeas

• ¼ tsp salt

• ¼ tsp black pepper

• mixed green salad

METHOD:

1. Pour 2 tbsp oil over 400 g cauliflower. Season with 3 tsp BBQ seasoning and mix well.

2. Add cauliflower into the larger air fryer basket.

3. Air fry for 23 minutes at 190 °C.

4. Drain, rinse and pat dry 250 g chickpeas. Pour over 1 tbsp oil and season with ¼ tsp salt and ¼ tsp black pepper. Mix well.

5. Add chickpeas into the smaller air fryer basket.

6. Air fry for 20 minutes at 200 °C.

7. Serve roasted cauliflower with mixed green salad and top with crispy chickpeas.

Coconut shrimp with sweet potato 2

INGREDIENTS: METHOD:

• 400 g peeled sweet potatoes

• 2 tbsp oil

• 200 g shrimp, raw and peeled

• 20 g flour

• ¼ tsp salt

• ¼ tsp pepper

• ¼ tsp garlic powder

• 1 egg

• 30 g shredded coconut

• 20 g panko breadcrumbs

• salt and pepper by taste

1. Cut 400 g sweet potato into 1 cm thick planks then cut it into 1 cm thick strips. Add 2 tbsp oil and toss to mix.

2. Add sweet potato into a larger air fryer basket.

3. Fry for 25 minutes at 200 °C, stir halfway through.

4. When done, season it with salt and pepper by taste.

5. Pat dry 200 g shrimps. Combine 20 g flour and ¼ tsp garlic powder in one shallow bowl. Whisk 1 egg in a second shallow bowl. Combine 30 g shredded coconut and 20 g panko breadcrumbs in a third shallow bowl. Dip the shrimp into the flour mixture, shaking off any excess. Then dredge the shrimp into the eggs, and after into the coconut panko mixture, gently pressing to adhere.

6. Add coated shrimps into a smaller air flying basket.

7. Air fry for 12 minutes at 190 °C.

8. Serve coconut shrimps with sweet potato fries and sprinkle them with fresh chili and lime juice.

Steak fajita with colourful vegetables

INGREDIENTS: METHOD:

• 1 yellow bell pepper

• 1 green bell pepper

• 1 red bell pepper

• 1 onion

• 2 tbsp oil

• 400 g sirloin steak

1. Slice bell peppers  and onion into thin strips. Add 1 tbsp of oil and mix well.

2. Add sliced vegetables into a larger air fryer basket.

3. Air fry for 15 minutes at 200 °C, stir halfway through.

4. Brush 400 g sirloin steak with olive oil and season it with salt and pepper.

5. Add steak into a smaller air fryer basket.

6. Air fry for 15 minutes at 200 °C, turn halfway through.

7. When steak is done, wrap it in foil and let it rest for 10 minutes.

8. Slice the steak into thin strips and serve it with colorful vegetables, tortillas and red salsa.
