Course Content The course includes core modules covering content such as: • Orientation to Study • Speaking and Listening • Reading and Writing • Australian Society and Culture and other elective modules.

Entry Requirements The Certificate I in English Proficiency is suitable for students at elementary to pre intermediate level. Students will be assessed on arrival and placed in the Certificate course appropriate to their level. The Certificate II in English Proficiency is suitable for students at pre-intermediate to intermediate level. (for example, IELTS 3.5 to 4.0 or equivalent). Students will be assessed on arrival and placed in the Certificate course appropriate to their level. The Certificate III in English Proficiency (General English) is suitable for students at intermediate to upper intermediate level (for example, IELTS 4.5 to 5.0 or equivalent).Students will be assessed on arrival and placed in the Certificate course appropriate to their level The Certificate IV in English Proficiency (General English) is suitable for students at intermediate to upper intermediate level (for example, IELTS 5.5 to 6.0 or equivalent).Students will be assessed on arrival and placed in the Certificate course appropriate to their level

Learning Resources Specific Learning Resources are detailed in each of the Unit’s guidelines. However in general terms Salford College makes the following resources available • • • • • • •

Learner Guides/record books Assessment tools Technical & botanic references Appropriate text and listening media newspaper radio and TV broadcasts, live media recordings of classroom and other interactions, other practical and ‘real’ communication instruments e.g. letters, notices, calendars etc

Assessment arrangements Assessment will be undertaken across both formal and informal social learning environments. The assessment process will include theory and practical assessments Participants will be advised of the assessment requirements at the beginning of each unit.Assessment will usually commence in the session following delivery. As this is a competency based program, assessment continues throughout the program until the participant either achieves competency in the assessment tasks or a further training need is identified and addressed. Assessment is continuous and competency-based. Students who do not complete the full Certificate will receive a Statement of Attainment for completed modules.

Delivery Arrangements This program is delivered in a classroom based environment with on-site language development allocated for practical communication and language development of the course. Training will be conducted in both the classroom and in wider social environments. Participants may need to purchase resources as indicated below for both theory and practical components of the course. The trainer may provide additional learning material where gaps are identified in either the participant’s underpinning knowledge or the training resources.

Pathways to Employment Students who successfully complete the Certificates in English Proficiency will have acquired English language skills which will offer them a range of further study and career opportunities. Those students who are overseas educated will be in a position to seek employment in their trade or profession at a level commensurate with their previous employment or training. These students will be able to use the English language in the relevant work environment and will possess learning strategies which will enable them to continue their English language development as independent learners.

Certificate III in Hospitality (Commercial Cookery)

This qualification is 12 months long and provides the skills and knowledge students require to be assessed as competent as a qualified cook as it provides the basic cookery skills required within the Hospitality Industry. Work would be undertaken in various hospitality enterprises where food is prepared and served, including restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops. Individuals who have completed this qualification are able to perform roles such as: •

preparing appetisers, salads, stocks, sauces and soups

preparing vegetables, fruit, eggs and farinaceous dishes

selecting, preparing and cooking poultry, seafood and meat

preparing hot and cold desserts, pastries, cakes and yeast goods

planning and preparing food for buffets.

As a part of this course you will participate in over 360 hours of experience in a work environment.

Certificate IV in Hospitality

This qualification is 18 months long and provides the skills and knowledge for students to be competent as a manager in any hospitality functional area. Students will graduate with a sound theoretical knowledge base and be able to use a range of specialised, technical or managerial competencies to plan, carry out and evaluate their own work and/or the work of their team. Work would be undertaken in various hospitality settings, such as restaurants, hotels, catering operations, motels, clubs, pubs, cafes and coffee shops. Individuals with this qualification are able to perform roles such as: •

supervising one or more sections in a large kitchen

Supervising a small kitchen.

This qualification is 24 months long and provides the skills and knowledge for students to be competent as a manager in any hospitality functional area. Students will graduate with a sound theoretical knowledge base and be able to use a range of specialised, technical or managerial competencies to plan, carry out and evaluate their own work and/or the work of their team. Work would be undertaken in various hospitality settings, such as restaurants, hotels, catering operations, motels, clubs, pubs, cafes and coffee shops.
