De que mejor manera se puede finalizar el año internacional de la Quinua, (Declarado por la FAO) que presentando el Recetario Gourmet fusión 5 continentes editado por Sierra Exportadora desde Perú. Y que mejor marco para presentarlo que en la Cumbre Gastronómica Madrid Fusión 2014, nada menos que 10 años después que Gastón Acurio comenzara su andadura por aquí. Mi agradecimiento, principal a Irina Herrera y Sierra Exportadora, por darme la oportunidad de colaborar en este recetario, así como a los más de 70 chefs del mundo, que enviaron su receta y foto del plato, fusionado con La Quinua (Quinoa) Agradecer a Don Rafael Ansón y su equipo, por implicarse tanto en el proyecto, y escribir el prólogo. A todos muchas gracias, especialmente a los 32 chefs que se implicaron de una manera tan humanitaria y desinteresada. Un alimento que podrá salvar a la humanidad del hambre se merecía un esfuerzo de todos para hacerlo llegar más lejos aún. Y que sirva para que solo sea el principio de muchos recetarios más!!

LA QUINUA ES UN CEREAL ORIGINARIO DE LOS ANDES PERUANOS. Era considerada en la época del apogeo incaico, un alimento sagrado, siendo empleada además para usos medicinales. En las fiestas religiosas la quinua se ofrecía al dios Sol en una fuente de oro, y cada año era el mismo Inca quien se encargaba de iniciar la siembra en una importante ceremonia. Es la Quinua un alimento de elevados valores nutricionales, único alimento vegetal que contiene en el núcleo del grano todos los aminoácidos esenciales, oligoelementos y vitaminas para una vida sana, y no contiene gluten. Hoy en día, manos andinas cultivan con el mismo esmero y ahínco de las épocas milenarias este grano de Oro. ESTA ES NUESTRA QUINUA, DEL PERÚ PARA EL MUNDO.
