HOSTING A HEALTHY, SAFE
Holiday PARTY
It’s the holiday season -- which for many people means parties galore. Whether you’re hosting a sit-down or buffet-style dinner, the pressure of entertaining can be overwhelming. For a healthy and safe holiday party, consider some helpful holiday advice from the Academy of Nutrition and Dietetics. “Holiday parties are a great way to bring food, family and friends together,” says registered dietitian nutritionist and Academy Spokesperson, Nancy Farrell. “It is important to make hosting as stress-free as possible so you can enjoy this quality time with loved ones.” Plan ahead. This includes choosing the menu, grocery shopping and equipping your kitchen with all the necessary supplies. “Don’t forgot paper towels; plenty of soap for a quick and safe clean-up; a food thermometer to make sure all food is properly cooked; and shallow containers for storing leftovers,” Farrell says. Remember, it is possible to have flavorful food without 8 Holiday Gift Guide December 2015
added fat and calories. Limit creamy dishes, fried foods and extra salt. “Instead, serve a Greek yogurt dip for an appetizer, flavor the turkey with a fat-free broth instead of butter, and top vegetables like broccoli with lemon juice rather than a creamy cheese sauce,” Farrell says. Also, offer plenty of choices for all holiday guests, including vegetarians, those with allergies, gluten intolerance, diabetes and other health restrictions. “If necessary, make two separate dishes or place sauces with offending foods on the side to accommodate all guests,” Farrell says. More concerning than simply going off your healthy diet, is that food safety rules may be forgotten when throwing a party. Food poisoning is a serious concern that must not be overlooked. “Forty-eight million people get sick with food poisoning per year,” Farrell says. “Follow proper food safety practices before, during and after the gathering to help keep guests safe.” Start by washing hands, all produce and kitchen surfaces. When cooking, use a food thermometer to ensure all items are cooked to a safe temperature. Don’t leave any food out of the refrigerator for more than two hours. If food is served buffet-style, set a timer as a reminder to replace the food every two hours. Refrigerate all leftovers immediately in shallow containers. Coastal Christmas is a growing collection of existing and new local holiday events promoted in a unified way. The celebration began in 2012 with a purpose to develop our Coastal Baldwin region as a destination for holiday travel and shopping opportunities. Many local organizations and governmental entities have come together for this cooperative venture and welcome your involvement too. Coastal Christmas begins the day after Thanksgiving, (Friday, Nov. 23) and runs through New Year’s Day. It will feature long-time favorite events like the Christmas Lighted Boat Parade and newer ones such as the Polar Dips, plus some

new surprises. This year will also feature the Fourth Annual Merry Market and Unique Arts and Crafts Expo and The Gulf Shores Christmas Parade. Officials say it’s important to develop economic opportunities for our area’s businesses during the traditional “off-season.” By investing in this with a long-term outlook, we hope to create more opportunities for our small businesses, more jobs for our citizens, and more visitors for our community during a traditionally slower season. BAKE A BATCH OF
sugar cookies Holiday baking is a tradition that stretches through time. What person doesn’t look forward to the treats the season brings? Cookies are often gifted to friends and family members, and they usually help complete the dessert offerings after the holiday meal. Sugar cookies are an ideal holiday cookie because of their versatility. They can be dressed-up however you see fit, whether iced, covered in sprinkles or enjoyed as they are dunked in hot cocoa. To make successful sugar cookies, try this triple-tested recipe courtesy of Monica Buck and Good Housekeeping.
Sugar Cookies Yields: 5 dozen cookies 1 cup (2 sticks) butter (no substitutions), softened 1/2 cup sugar
1 large egg 1 tablespoon vanilla extract 3 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt
Frosting (optional) Coarse sugar crystals, silver dragees, holiday decors (optional decorations) 1. Preheat oven to 350 F. In large bowl, with mixer on low speed, beat butter and sugar until blended. Increase speed to high; beat until light and creamy. On low speed, beat in egg and vanilla. Beat in flour, baking powder and salt until blended. 2. Divide dough into 4 equal pieces; flatten each piece into a disk. Wrap each disk with plastic wrap and refrigerate 1 hour or until dough is firm enough to roll. (Or place dough in freezer 30 minutes.)
3. On a lightly floured surface with a floured rolling pin, roll 1 piece of dough 1/8 inch thick. With floured 3-inch to 4-inch cookie cutters, cut dough into as many cookies as possible; wrap and refrigerate trimmings. Place cookies, 1 inch apart, on ungreased large cookie sheet. 4. Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack to cool. Repeat with remaining dough and trimmings. 5. When cookies are cool, decorate with frosting if you like; use along with sugars and candies to decorate cookies. Set cookies aside to allow frosting to dry completely, about 1 hour. Store in tightly covered container (with waxed paper between layers if decorated) at room temperature up to 2 weeks, or in freezer up to 3 months.

Coastal Christmas Spectacular RETURNS TO FIRST BAPTIST CHURCH FOLEY
The Coastal Christmas Spectacular sponsored by the Music Ministry of First Baptist Church of Foley will be held Dec. 11 – 13, at 7 p.m. in the sanctuary of the church. This theatrical style worship presentation features a dramatic cast of 12 along with 75 singers and instrumentalists comprising the choir and orchestra. During this evening you will hear classic carols “Angels from the Realms of Glory”, “Silent Night,”, a big band favorite, “Silver Bells”, “I’ll Be Home for Christmas”, and new worship songs, “Born that We May Have Life”, “Ring the Bells”, “I Believe,” woven together with a creative script that is both humorous and thought provoking. As the story unfolds, this comedy will introduce you to an over-the-top, overachieving and highly perfectionistic mom who is determined to give her family “the perfect Christmas!” However, the more she tries, the more everything goes
disastrously wrong. Through it all she comes to understand that God’s grace is sufficient for her, especially at Christmastime. Preparations for Christmas productions usually begin right after Easter. This year it started with just a script, then the search for the music. After many hours of prayer, research and revisions, the structure of the program was complete just in time for the beginning of rehearsals in September. Over 100 volunteers have been working for months to create and prepare what they hope will be a new tradition for your family during the Christmas season. Under the direction of Greg Engell, who joined the staff last year as minister of music and senior adults, the presentation has experienced the introduction of a live orchestra and a name change. The Coastal Alabama Business Chamber’s 30th Annual Christmas Lighted Boat Parade is an anticipated event every year for the Island. The event has now been a southern Alabama family tradition for 30 years and it is free to the viewers. The parade route of the boats is from Lulu’s and finishes at Cobalt in Orange Beach. There are great viewing areas along Canal Road, at The Wharf and at Cobalt Restaurant. A special flotilla party will cap the evening with live music and more at Cobalt. Boats from the entire Gulf Coast join in the celebration by decorating their vessels and bringing their crew for the journey. Thousands of local residents come to the Gulf Shores / Orange Beach area for this and other events scheduled that weekend. This is a great opportunity for local businesses to sponsor a boat and bring their staff members to crew or help decorate. TASTY OMELETS FOR OVERNIGHT
The holiday season often finds homeowners playing host to friends and family visiting from out of town. While the holiday dinner often draws the most attention, guests need to eat breakfast as well. Holiday hosts who want their overnight guests to start their days off on the right foot should consider the following recipe for “Potato and Arugula Omelets” from Betty Rosbottom’s “Sunday Brunch” (Chronicle Books).
Potato and Arugula Omelets Serves 2 21/2 tablespoons unsalted butter 1/2 tablespoon olive oil 4 ounces red-skinned potatoes, scrubbed but not peeled, cut into 1/2-inch cubes Kosher salt Freshly ground black pepper 4 eggs
1/8 teaspoon cayenne pepper 8 cups arugula, stems discarded and leaves cleaned, dried and coarsely chopped* 1/2 tablespoon balsamic vinegar 6 tablespoons grated Gruyere cheese
1. Heat 1/2 tablespoon of the butter and the olive oil in a medium, heavy frying pan set over medium heat. When hot, add the potatoes and saute, stirring often, until light golden and tender, 8 minutes. Remove from the heat and season with salt and pepper. (The potatoes can be prepared 1 hour ahead; leave at room temperature. Reheat, stirring, over medium heat.) 2. Whisk the eggs in a mixing bowl and season with a good pinch of salt and the cayenne. Place the arugula in another mixing bowl and toss with the vinegar. Place the Gruyere and the potatoes each in separate bowls. Have ready a ladle for adding the egg mixture to the pan. 3. Add 1 tablespoon to a 9-inch frying pan,
preferably nonstick or seasoned cast iron, set over medium heat. Swirl the butter so that it coats the bottom of the pan. When it is hot but not smoking, ladle half of the eggs into the pan and stir with the back of the fork until they start to set but are still quite liquid on the top, 30 to 40 seconds. With the fork or a nonstick spatula, lift an edge of the omelet and tilt the pan to let some of the uncooked egg mixture run underneath. Repeat this two or three more times, working your way around the pan until the eggs are cooked but remain moist on top. 4. Sprinkle half of the potatoes, then half of the cheese, and finally half of the arugula over the eggs. Let the mixture cook until the cheese begins to melt and the arugula wilts only slightly, 30 seconds. Using a nonstick or metal spatula, fold the omelet in half and slide it onto a plate. Repeat to make another omelet. 5. Serve each omelet as soon as it is prepared.

Angelone, NBCC Membership and Project Manager, credits the design with inspiring the return of the antique car exhibit. “We are very excited to welcome back the antique car exhibit as it has been so popular in prior years. There has been a great deal of interest generated and we are expecting a great turn out of vehicles,” Angelone said. “A special thanks to Marvin Corley and the Baldwin County Archives Department for their help in providing vehicles for the show and to all the car enthusiasts who have been so supportive of this event.” Registration is still open for those interested in participating. Opening ceremonies will be Friday evening with the annual tree lighting and Santa’s big arrival. In addition to lots of candy, the jolly old elf will be tossing out hundreds of ping pongs as he makes his grand entrance. Of those, 100 ping pongs will be numbered and 100 prizes will be given away during the weekend. This side of 49 will be the headliners performing at 6:30 p.m. Dec. 11. The entertainment stage will be filled with performances on Friday and Saturday by local groups such as dance teams, the Baldwin County High School Jazz Band, The Unknown Bluegrass Band, Oakwood Hand Bell Choir, MacCrossan School of Irish Dance and many more. “Not only do we have live entertainment but this two-day festival is complete with arts and crafts vendors with everything from handmade hair bows to monogrammed gifts, Perdido Vineyards wine and vinegars to Bush Farm’s blueberries and Satsumas,” Jones said. Vendors will also be selling handmade

soaps, woodworking, unique jewelry and lots and lots of good food. In addition to numerous arts and crafts and food vendors, there will be games and fun activities and plenty of great entertainment to fill the weekend. There will also be a special children’s area set up in Blackburn Park manned by volunteer groups. The Kids’ Zone will offer the younger set some activities to enjoy during the festival. The Chamber is selling a limited number of commemorative T-shirts featuring a design by Marlee Long of Bay Minette. The shirts are $12 for youth sizes and $15 for adults and will be available for purchase at the Chamber booth. Friday’s activities will also include the annual “Bedtime Stories with Santa” at the Bay Minette Public Library. This free event kicks off around 6:30 p.m. and children can come dressed in their pajamas to hear a favorite Christmas story and to visit with Santa Claus. The fun continues Saturday with more time for shopping at vendor booths, live entertainment, Pancakes with Santa, antique car show and the annual parade. Pancakes with Santa, sponsored by the Kiwanis Club, will be held 8 to 11 a.m. at the First United Methodist Church. Admission is $5. The Christmas parade rolls at 1:30 p.m. Saturday and will begin at Bay Minette Elementary School to 9th Street to Hand Avenue to U.S. 31 South to Pine Street, First Street then to Hoyle Avenue to 5th Street to White Avenue to 6th Street back to the school.
