WELCOME
Autumn
Hello! Welcome to our wedding special! This is my third edition editing Gravitas and it has been such fun so far. Thank you, Dee, for the opportunity. The fashion shoots are particularly enjoyable, and we could not achieve the quality without a lot of help from our amazing models and supporters. This month thank you to: Orton Hall Hotel and Spa for hosting, our faithful client Millie & Co who styled the hair to perfection, the fabulous Paula who created flawless makeup and David, who not only provided the clothes, but styled the shoot along with our in-house photographer, Lucy. So here we are in Autumn, which heralds long woodland walks and Sunday lunches by pub fires. And the best part of this job is getting to try some of the fabulous eateries around our region. I thoroughly enjoyed reviewing The Pack Horse and Paten & Co recently – it is incredible the work that goes on behind these establishments, which we often take for granted. If you are looking for recipe inspiration, check out our Rare Breed

Also don’t miss the discount offer on Ella James Interiors (p52) – Ashley has the most exceptional products – you may have seen her at the Burghley Horse Trials. A huge thank you to all our fabulous contributors and welcome Trevor Langley, food guru. Also welcome back to our beauty editor, Freya Pell. And I am particularly delighted to introduce Kathy, our advertising manager, an old friend and erstwhile colleague, who will be working alongside Dee. The dream team! Life Coaching
6 simple steps to improve the quality of your life now Hanna Magdziarek @ Kaizen Continuous Improvement Coaching Studio Ltd (KCICS) is an Organisational Culture and Career Coach, and a Business Advisor. She supports individuals and business clients in turning their challenges into opportunities www.kaizenway.space. Hanna offers 6 simple tips to improve our quality of life: 1. Start journaling, especially when you feel overwhelmed or struggle with negative thoughts. It will help you declutter your mind, put ideas in order and release the build-up of negativity. You can look back at your notes and see that many of your worries and stresses have ‘evaporated’. Don’t forget to journal about your successes too and appreciate those who have helped you achieve them. Gratefulness invites more positivity into your life. 2. Think about your habits and start replacing the ones that don’t serve you. Also, experiment with some just to challenge yourself and give your brain a workout. It’ll pay dividends by
making your brain more flexible and agile. Sometimes it’s enough to change your route to work or learn something new. 3. Be good to yourself and I don’t mean self-indulge. A mix of self-discipline and understanding towards yourself is ideal. Also accept your own and others’ imperfections.
07 4. Practise little acts of kindness, and also, don’t be afraid to ask for help. Human beings love helping, and it makes us feel good to be able to help someone. We thrive on being kind. If you offer to help, be reliable and do a great job. The best thing about it is it works both ways and it’s always a win-win! Again, remember about the law of attraction. Where attention goes, energy flows! 5. Develop a positive mindset. Our thoughts shape our reality, so replace negative thoughts with positive ones. How? Spend all your time and energy on focusing on solutions and positive outcomes.

6. Hire a Coach. A professional coach can provide you with a structure and process to help uncover your core values and limiting beliefs and thus help align your goals accordingly. By getting to know yourself better, you increase your chances of identifying how to live a purposeful and fulfilled life. Contact Hanna on 07889008753 or visit kaizenway.space
‘Market Town’ - a collection of original songs by Clubhouse Records’ Paul McClure Rutland singer-songwriter Paul McClure, also known as the Rutland Troubadour has recently released his third album, Market Town. Known for his intimate storytelling concerts, Paul’s characters and story lines - in particular the loves, laughs and losses that have come his way - allow the humorous side of any situation to come forward. All the songs were written during and inspired by McClure's time spent living in Oakham, Rutland - but don't expect cute tales of quaint England, the songs tell stories of love, loss, life and death, just as you'd expect from a seasoned and well-travelled Country Folk singer. Songs of characters met and conversations shared, of loves and regrets and of memories past; some happy, some not so... Themes of love, family and fighting the demons of the past whilst containing the trials of the present. The album talks about trying to escape and trying to find your way home.
"Rutland Troubadour, aka Paul McClure. A master of the stage, whether it's an intimate house concert or a full-on festival set... interspersing his trademark dry humour between some excellent and thoughtful songs his shows are a delight, making him one of the most in-demand performers in the country and a significant player on the UK roots scene." - Americana UK

ckbk - the world’s best cookbooks at your fingertips In 2015, entrepreneur Matthew Cockerill, publisher Jon Croft and writer Nadia Arumugam launched the 1,000 Cookbooks project, which aimed to compile the best and most essential cookbooks of all time. The project has since evolved into a digital subscription service, called ckbk, which bills itself as the “Spotify for Cookbooks.”
With recipe playlists, ckbk lets users create compilations of recipes from their favourite authors and cookbooks and share them with friends and family.
ckbk's expanding collection already includes the full content of more than 350 cookbooks containing over 80,000 recipes from a total of more than 500 authors. It also includes classic reference works such as the Oxford Companion to Food (and to Wine). The range of specialities and cuisines covered is immense, with more than 100 national cuisines. Vegetarians and vegans and those on gluten-free diets benefit from being able to easily filter searches to only show the relevant dishes.
There is also a free membership tier offering access to 3 recipes per month. First time users are eligible for a 14-day free trial.
ckbk offers recommendations to help users explore and discover additional recipes they might like and, thanks to a partnership with BSH (the parent company of NEFF, Bosch and Siemens), ckbk recipes will soon be able to automatically set the right mode, temperature and time on the new generation of "connected" ovens.

Invest in Key Pieces this Season Abigail gets the latest advice from David, our stylist from Oliver’s of Uppingham:
Make your key pieces work day through to night
This season, invest well in a few key pieces that you will wear and wear and that will live in your wardrobe for a long time - an amazing jacket, statement trousers or a sensational dress. Buy the best quality you can afford and mix and match with less expensive items. For a more structured look, pair a standout jacket (like the Sandwich Velvet p16 & 18) with jeans or a shirtdress. For a more relaxed style, take some statement trousers (like the Coster Copenhagen silk trousers p13) and wear with a tunic, suit jacket or vest top. Co-ords are also a great investment as not only do they look like a jumpsuit, without the inconvenience, but they also offer flexibility as they can be worn as separates and suit any age or figure. To get more out of your investment pieces, make them work for you day through to night. For example, on pages 10 and 11 Hannah wears the Coster Copenhagen dress with white trainers and a chunky oversize coat for
a daytime look and then accessorises with bright heels and a cute clutch for night. To make the co-ords work at night, simply add a heel and an evening bag. For the day, match with loafers or trainers and add a jacket. To make them work harder, split the striped co-ordset (p13) and match the trousers with an acid yellow Kaffe sweater, which you can find in store. For the boys, choose an investment leather or denim jacket along with trainers for day, and switch to a stylish blazer teamed with dress shoes for night. If you want a smarter look, replace the jeans with chinos. Whatever your look, be brave with fabulous prints that remain on trend this season and don’t forget to invest in one or two key pieces.
For sensational clothing for men and women, head to Oliver’s of Uppingham where super friendly David will be on hand to offer help and styling advice.

Countdown to the Big Day Amid all the excitement of sharing the good news, it’s not unusual to feel a little overwhelmed. Using a timeline is a simple way to take the stress out of your planning – here’s our guide to making sure you have everything covered. Soon after your engagement… Discuss and set your wedding budget. Be sensible, realistic and do your research. Contact suppliers and find out how much venues, catering and photography cost. Wedding Fairs are a great source of information. Arrange a meeting with the minister if you are opting for a church ceremony. Twelve months before… Set the date and confirm with the minister, registry office or civil venue. Book a venue for your reception. Choose the bridal party – bridesmaids, groomsmen, witnesses and anyone you would like to read or speak at the service. Create your guest list. Issue a ‘Save the Date’ notification. Nine months before… Select and book a photographer. Meet with the caterer – be it at your chosen venue or with an independent caterer if you are not having an all-inclusive wedding. Book musicians or entertainers. Choose and book a florist. Book transport for the day. Choose the bridal gown and arrange your first fitting – NB most dresses have a five or six month waiting time on delivery. Six months before… Choose a hairstylist and discuss any major changes to colour or length now. Plan and book the honeymoon. Place a gift list or honeymoon account with a favourite retailer. Order the wedding cake. Plan and order wedding stationery. Choose outfits for the groomsmen and bridesmaids – make sure that colours and styles are co-ordinated around the bride’s gown.
23 Two weeks before… Sort out local currency for your honeymoon. Wear in your new wedding shoes. Collect wedding rings. One week before… Run through details with your venue – dates, times, location, contact numbers. Organise for a note or gift to be delivered to your partner on the wedding day. Pack for your honeymoon. Collect the wedding dress and bridesmaid outfits. The day before… Place any room dressings or decorations at the church or venue. Have a manicure and massage to help you relax. Run through the order of the day with the bridal party to ensure everyone knows their role and responsibility. Three months before… Arrange a second dress fitting. Choose and purchase wedding rings. Select hymns and readings and discuss the details of the service with your minister or celebrant. Ensure passports are valid. Send out your invitations. Re-confirm bookings with venue, florist, photographer, caterer and musicians – if there should be a glitch, you have plenty of time to rectify any problems at this stage. Two months before… Meet with the photographer to decide on style and to advise on key groups. Draw up a wedding day timetable and circulate to all concerned. Buy gifts for bridesmaids, groomsmen and parents of the bridal couple. Book trial hair and makeup sessions – take with you any veil or headpiece you will wear. Organise Hen and Stag celebrations. One month before… Go for a final dress fitting. Finalise your seating plan. Plan and write speeches.
Remember to enjoy yourself!

Stamford’s Celebrity Designer Wants Every Bride to Steal the Show!
Anna-Maria D’Amato, the owner of ‘Anna Couture Boutique’ in Stamford, took the ambitious step late last year to open ‘Anna Couture Brides’.
Barely two years since its arrival on Cheyne Lane, ‘Anna Couture Boutique’ had already become so popular, offering the latest stylish and glamorous ladies’ wear for special occasions, that she felt the time was right to expand the business. A costume design graduate with a particularly enviable CV, Anna has years of experience in costume design for both television and film. She was Madonna’s seamstress for a year during her 2006 Confessions Tour. Anna reveals, “During my time making Madonna’s corsets, I had to sew up a fishnet stocking while she was still wearing it, which was terrifying -my needle was millimetres from her leg!” She has also produced costumes for blockbuster productions including ‘Star Wars’ and ‘The Phantom of the Opera’ and has worked with Gok Wan. Before taking on the new premises on St Martins, Anna stocked several wedding dresses including top British bridalwear designer and manufacturer, Chanticleer. When the opportunity to buy the label arose, it proved irresistible and that prompted the expansion on to the High Street. Anna and her team are currently in the process of producing their first Chanticleer Capsule Collection and, with trademark theatrical touches to express individuality, it promises to be sensational. Anna’s experience is vast, having run her own bridal studios in North London and Gerrards Cross for many years. Furthermore, she has the trained, professional eye to understand a bride’s vision for her wedding dress as well as the skill to produce a breath-taking end-product. Anna and her team are adept at ensuring the bride’s couture experience will be both enjoyable and memorable. Anna can also alter a custom-made gown so it fits perfectly, guaranteeing that every bride will feel like the star of the show! To book an appointment, call Anna and her team on 01780 762614. Abigail’s
Vintage Bridal Abigail’s Vintage Bridal is celebrating 10 years of supplying original vintage wedding dresses to discerning brides across the UK
In these days of recycling and conscious consumerism, Abigail’s Vintage Bridal is the perfect choice
27
Established in Rutland in 2009, Abigail’s Vintage Bridal increasingly specialises in antique lace dresses and bespoke creations made up from original patterns, source material and lace. For the recycling and consumerism-conscious bride, Abigail’s Vintage Bridal is the perfect choice. Abigail Gregory set up her boutique after a career in film and fashion, bringing together her love of history and design. The collection of original vintage wedding dresses has grown over the years and there are now, on average, more than 150 frocks available at any one time, making it one of the largest commercially available collections of vintage wedding dresses in the country. Abigail works very closely with her brides and the whole process from initial consultation to final fitting is very collaborative. This is particularly true of the pieces made from original antique lace. From the earliest 1880s dresses to the 1950s fit and flare, there is something for every vintage loving bride. Abigail loves the collaborations of creating pieces that feel faithful to both the period and the bride. For example, in the 1930s dresses were very modest and it would be inappropriate for a bride to show skin, especially in church. With delicate alterations like shortening sleeves or removing the back from a dress, it can be perfectly period but with a modern feel. Abigail often spends months working on a myriad of tiny details making the dress unique and deeply personal - a quirky brooch from a bride’s grandmother to be made into a hair piece, for example, or the blue heart sewn into the bodice from her soon to be husband’s RAF uniform.
Abigail offers a unique and bespoke service and every bride ends up with a dress that is entirely her own Antique materials, particularly lace, have a softness both physically and visually which is not achieved by modern lace. This gives an authenticity to the reproductions. No-one wants to look like their great grandmother, so she might pair Edwardian lace with a slinky 1930s silk underdress. This has the bonus of two dresses in one; at the end of the night when you want to dance, the antique lace can be laid to one side and you can boogie in the more robust silk. Abigail offers a unique and bespoke service and every bride ends up with a dress that is entirely her own. Book your consultation by appointment only by calling Abigail on 07729 888 751. abigailsvintagebridal.co.uk | Instagram: abigailsvintagebridal

Dream Honeymoons Krystian Tatum of Rutland Travel explains current honeymoon trends‌
It’s no surprise that a fly and flop honeymoon on an exotic beach is still the most popular request for a honeymoon, with destinations such as the Seychelles, Mauritius and the Maldives as popular choices. However, there is nowhere that is off limits with an ever-increasing number of couples electing for something a little more exciting. Recent trends are for literally the polar opposite of the exotic beach with honeymooners preferring ice hotels, northern lights tours or whale watching. With Iceland just a three hour hop away, a dip in the Blue Lagoon is a very real alternative to the Indian Ocean. The more adventurous requests are for mountain trekking and discovery tours in far flung destinations such as Peru or Tibet or a honeymoon on the wild side with an African Safari. A good compromise, when a couple are not entirely in agreement, is to add a week on the pristine beaches of Zanzibar.
With Iceland just a three hour hop away, a dip in the Blue Lagoon is a very real alternative to the Indian Ocean.
34 Weddings
The popularity of cruising and river cruising is increasing year on year and often the honeymoon is the perfect excuse to do that once in a lifetime luxury cruise on a 5* luxury cruise liner. It is also the perfect excuse for many to tick off that Galapagos exploring cruise from the bucket list. Whatever the couple’s preference, there really is a cruise for everyone these days.
Top Tips • Book early - to achieve the best price for your Honeymoon. • Check out the local weather - you would not want to hit the Monsoon Season in India or a cold snap in South Africa. • Set a realistic budget – maybe ask for ‘gift contributions’ from wedding guests. • Plan carefully - if you are getting married on a Saturday for example, you may want to rethink travelling the next day and aim for a Monday or Tuesday departure.

Wedding Hair Advice Kai Wan talks us through the dos and don’ts of wedding hairstyles
Hair for the bride is most definitely the crowning glory of her total look. When I have a consultation with a future bride, I am usually one of the first people other than her Mother to get a glimpse of the dress! It is so important that the hair is inspired by the dress and the two complement each other. There are so many styles of dress to suit individual tastes, from figure hugging lace to structured bodice and skirt. Therefore, the hair needs to follow suit. There has been a big trend the last few years for loose, effortless, wavy, half up and half down styles. It’s a very soft, feminine look with a romantic feel. For a simple, nonfussy look, a beautiful twisted bun type style can work well. So, the importance here is to have a full consultation with your stylist and then a trial run a few weeks before to help truly personalise your hair. The bridesmaids’ hair should be understated in comparison, but they should still “blend” in terms of the overall look. Simple waves and a twist or plait are very popular or, for a total hair up, a simple side knot or bun works well. The mother of the bride often feels pressured to look her best as eyes will be on her too. One of the key things to establish is whether she will be wearing a hat or fascinator.
Hair, for the bride, is most definitely the crowning glory of her total look
She needs to feel a million dollars and be confident and so a beautiful blow-dry or simple hair up that suits her and flows with her outfit should be considered. For the groom, the current trend is a very neat and groomed look. A good haircut a day or two before will ensure a crisp and sharp look. He should ask his stylist or barber how to apply any styling product or, better still, book a styling appointment on the morning of the big day. All-New BMW 8-Series Convertible 2019
review
By Motoring Journalist, Tim Barnes-Clay. Instagram @tbarnesclay | Twitter @carwriteups

Motor
When the original 8-series showed up, it made a real impact with its stunning wedge-shape design. It looked like no other BMW product of the time and has been a profoundly popular car ever since.
while tapered surfaces around the doors and front wheels spread out at the top of the rear wheels. Subtle contouring marks out the surfacing above the rear wheels as the flanks transition into the rear end.
This 8-series is a little different, though, being more of a successor and a rebranding to the 6-series than something bright, drastic and new. Should that put you off? Absolutely not, this is a highly luxurious and powerful machine that’ll give you a great sense of desire, irrespective of BMW’s business strategies.
The compartment for the soft-top roof causes the trailing edge of the BMW’s body to be a touch higher than that of the 8 Series Coupé. With the roof down the rear end appears remarkably flat and low to the road. Also, horizontal lines and light units extending into the flanks emphasise the breadth of the car. The third brake light inserted in the boot lid adds to the low-slung look.
From launch, the fresh 8-series Convertible offers a couple of engines - a 3.0-litre turbocharged straight-six diesel, and a strapping 4.4-litre V8 twin-turbo. Both powerplants result in a maximum speed of 155mph, but the petrol V8 will get to 62mph in 3.7-seconds, and the diesel will make the 0-62mph sprint in 5.9-seconds. Regardless of your engine choice, your BMW 8-series will house an 8-speed automatic transmission as well as 'XDrive' all-wheel drive. The new 8-series Convertible is composed, comfy, well-appointed and brain churningly quick. However, if you’re expecting nimbleness and lots of steering feel you’ll be disappointed. This car is better being driven on a cruise across hours of smooth tarmac. As with all the current line-up of BMWs, the latest 8-series Convertible does refinement wonderfully, providing you with a satisfying driving experience. Despite the soft roof, it is remarkably well insulated. And driving with the lid in position doesn’t rain on the parade, as it might in some previous soft top luxury cars. That roof is speedy, too, opening and closing in only 18-seconds via the press of a button - and you can operate it on the move up to 31mph. Indeed, the BMW 8-series Convertible cuts a striking figure with the roof up or down. Detailed character lines mark out the path of the airflow between the front and rear wheels,
Other model-specific features include a brace of contour lines on the boot, while the L-shaped rear lights are highlighted by the line of the taillight bar that lights up uniformly. Dual exhaust trapezoidal tailpipes put the finishing touches to the lower section of the rear apron. Inside, the 8-series has a brilliant cockpit design, being driver-focused but still high in quality. The controls are all rationally arranged, too, meaning you feel at home as soon as you slide behind the wheel. A digital display takes the place of what would be dials in most motors - and BMW's iDrive infotainment unit comes with voice control, a prominent touchscreen, and a swivel wheel next to the gear selector - both now obtainable in crystal.
43 For a convertible, this is a relatively roomy model. It has four seats, but only two smallish kids will fit in the rear – not because of the width or headroom – but due to limited legroom. As for the BMW’s boot, there’s 350-litres of cargo capacity available, which is decent for a vehicle of this class. The rear-seat backrest of the car can be split 50:50 and, thanks to a ‘through-loading’ facility, the capacity of the luggage compartment can be extended as required. In order to ensure the load compartment offers as much space and flexibility as possible, the soft-top compartment can be lifted, and the through-loading facility used even when driving with the top down. If you're purchasing a car in this class, you won't be too fussed about the running costs. But if you’re curious, the 850i V8, that I tested will do around 28mpg in the real world. Mind you, over 500 horsepower returning circa 28mpg isn’t bad! As anticipated from a car reducing your bank balance by six-figures, the quality is precisely what you'd expect. Fine-looking rich leather is wrapped around the cabin, and the metals and plastics feel exceptional. And when it comes to safety, you’ve got nothing to worry about – there’s a lot of kit built-in to this German convertible, including sensors and cameras. A head-up display, which keeps your eyes fixed on the road, is also fitted. And in the unlikely event of a roll-over accident, a roll-bar will deploy, protecting the heads of all occupants.

Nicola Hardy – Fashion Guru and Artist Abigail Richardson talks to local artist, Nicola Hardy who, after enjoying a very successful career in fashion, moved to Rutland where she rediscovered her first love, painting. Who or what inspired you to pursue art? I enjoyed an idyllic childhood with my siblings in a beachfront house in Whitstable. Growing up by the sea with an artist mother, who was my inspiration, gave me the desire to pursue a career in art. As soon as I could hold a pencil, all I would do was draw - always encouraged by my mother. I left school, where I had an incredibly supportive art teacher, to do an art foundation course at Canterbury University. What made you follow a career in fashion? With my love of life drawing and growing passion for clothes, I was advised to apply for a Fashion Design Degree. To my complete surprise I was accepted by Kingston University. It was by no means an easy experience; it was hard work and intense. I started work in the early 80s when punk and the new romantic era were in full swing. I designed collections for a variety of high street fashion stores such as Chelsea Girl, Top Shop and Miss Selfridge. I loved translating fashion from the catwalks into wearable and affordable clothing for young women. My most rewarding and exciting job was working in London and Hong Kong for Richard Caring. Now an international restauranteur, he was then a retail and catalogue clothing tycoon. I travelled to fashion capitals of Europe shopping for samples, gathering ideas and getting inspired for the approaching in house collections.

Light, shade and depth play an important role in achieving the desired effect. When did you transition back to painting? Getting married and having three children made us rethink our lifestyles. We moved out of London, eventually settling in Rutland. My mother followed us, filling her days painting, printing and creating beautiful ceramics. Her paintings have been admired and bought by many local people. She, sadly, passed away last year. My passion for painting the countryside and especially trees echoes the same love she had for beautiful, rural Rutland. I’m always on the lookout for a good tree configuration! With my paintings, I start with a figurative image from my photographs or sketches which I either enhance by using intensified colours or distort into a simplified abstract version. Light, shade and depth play an important role in achieving the desired effect. I use acrylics and inks on canvas and acrylic gouache, inks and pastel on cartridge paper. Interior trends for autumn/winter 2019 still focus very much on the ‘Scandi Look’. As we all live busy, hi-tech lives in a world facing many challenges, the focus for many is on achieving wellbeing and reducing the toll on our environment. This concentrates our minds on reducing our consumption of plastics and disposable products. The Scandi look naturally lends itself to investing in products made of natural, sustainable materials that will stand the test of time. Key materials are humble ones: bamboo, rattan and jute. Marble, stone and ceramics lend contrasting texture to the mix, which is key to achieving a successful design. Soft furnishings work best with a mix of linen, velvet and textured wools. With trends moving away from a traditional monochrome palette, the current look is softened with an injection of soft pinks, blues and soothing greens.

An Autumn Menu from
The Rare Breed Chef Our slow food chef, Tom Cockerill, goes foraging in forests and freezers! (Find Tom at: therarebreedchef.com)
Wood Pigeon & Wild Mushroom Tartlets Searching for wild mushrooms in the autumn is one of my favourite pastimes, combining a walk in the woods with a culinary mission. I feel an almost zen like meditative focus on the leaves and undergrowth of the forest floor and I can be absorbed in the moment for hours, often much to my kids’ frustration! I was lucky to have had expert first-hand tuition from my restaurant’s ‘Mushroom Guy’ several years ago. It goes without saying, picking mushrooms isn’t without risk, but as foraging has become increasingly popular, there are now plenty of courses available to learn the basics under expert guidance.
Searching for wild mushrooms in the autumn is one of my favourite pastimes, combining a walk in the woods with a culinary mission Method For the crumble topping add the butter to a hot frying pan. When melted and foaming, add the walnuts and breadcrumb and stir until golden brown, remove from the heat and stir in the bacon and crumbled Stilton. Brush each square of filo pastry with melted butter and lay one by one, in overlapping layers, to line 4 tartlet tins (Yorkshire pudding tins also a good option). Bake at 160C until golden and crisp (10-12 minutes), remove from the tins and allow to cool. In a large frying pan sauté the mushrooms until coloured. Set aside in a separate bowl and add the garlic to the pan. Fry until just soft and add the white wine. After the alcohol has boiled off, add the cream, bring to a boil and add the spinach and mushrooms. Reduce to a thick coating consistency, add the chopped tarragon and season with salt & pepper. Add the truffle oil at this point if you wish and remove from the heat. In a separate pan, quickly sear the wood pigeon breasts, add a knob of butter, season and leave to rest in the pan. Divide the mushroom mix between each tartlet case, slice each pigeon breast lengthways and serve on top of each tartlet, sprinkle with the crumble mixture and serve right away.
Ingredients 2 wood pigeon breasts 5 sheets of filo pastry, each cut into 4 squares 400g mixed wild mushrooms ½ tbsp fresh tarragon, chopped Handful of baby spinach leaves 100ml double cream 125ml white wine 2 cloves garlic A drop or two of white truffle oil (optional) For the crumble mixture 2 rashers streaky bacon, grilled until crispy and chopped 2 tbsp panko bread crumbs 1 tbsp chopped walnuts 50g butter 50g Stilton, crumbled

No trip back home to our family farm in Yorkshire is complete without my brazen daylight robbery of the meat freezer
Dexter Brisket Roast with Gruyere & Horseradish Potato Gratin No trip back home to our family farm in Yorkshire is complete without my brazen daylight robbery of the meat freezer. Unfortunately (for me at least) my mum’s amazing Dexter beef is now mostly sold by the whole carcass to some fancy London restaurants. On my latest trip, I did find a secret stash of brisket - a cut popularised by the BBQ phenomenon over the past ten years, but which also makes a decent alternative roast, braised first with red wine and served with a creamy horseradish and potato bake. If your butcher has already rolled the brisket, you can just untie and flatten out for maximum crispiness and roast flavour. The cooking time here may seem excessive, but the results will be worth it!
Ingredients
Method
For the brisket
For the brisket
2.5-3kg brisket
Place the brisket on a large roasting tin, season well and roast for 30 minutes at 200C.
750ml red wine 1 litre beef stock 1 carrot / 1 stick celery / 1 white onion, peeled and roughly chopped 1 tin chopped tomatoes 1 bulb of garlic, cut in half 1 bay leaf For the gratin
In a large saucepan over a highish heat, fry the carrot, onion and celery until well coloured, add the red wine and reduce by half. Add the beef stock, garlic, chopped tomatoes and bayleaf and bring to a simmer. Add the part roasted brisket, lid or tightly cover the pan and braise slowly for 6 hours at 130C. Carefully remove the brisket and place onto a roasting tray. Roast again at 200C for another 45 minutes until the fat is looking caramelised and crispy.
1.5 kg white potatoes
Strain the cooking liquor - you can reduce this to serve an incredible gravy and freeze any extra to use as a rich beefy stock base.
4 cloves garlic
For the gratin
400ml double cream
Use a Japanese vegetable mandolin to finely slice the potatoes and place into a large mixing bowl with the cream, horseradish, garlic, salt and pepper and mix well. Place a layer at a time into an oven proof dish, adding a little of the horseradish cream with each layer. Mix together the breadcrumbs, gruyere and thyme and sprinkle over the top. Bake at 160C for approximately 50 minutes. (Cooking time will vary depending on the thickness. Check the potatoes are fully cooked by pushing a knife into the centre of the gratin, if it’s soft, its ready.)
3 heaped tbsp horseradish sauce 50g gruyere, grated 50g dried bread crumbs ½ tbsp fresh chopped thyme
58 Taste Explosion
Pear Tart Tatin I spent many years working as a pastry chef without ever really having a particularly sweet tooth, but there are a couple of old school desserts that I can never resist, a well-made sticky toffee pudding and tart tatin. The combination of flaky puff pastry, tart pear (or more traditionally apple) and vanilla ice cream melting into the warm chewy caramel is, for me, ‘next level’ pudding perfection! Ingredients
Method
4 ripe Williams pears
Place the sugar in a dry 24cm oven proof skillet over a medium heat. When the sugar begins to caramelise, give the occasional stir with a wooden spoon. When all the sugar has dissolved and caramelised, immediately remove from the heat and stir in the butter and vanilla extract.
250g castor sugar 75g butter 1 tsp vanilla extract 250g puff pastry
Peel the pears, slice lengthways and remove the core with a melon baller. Arrange the pears, flat side up on the caramel. Roll out the puff pastry to the approximate thickness of an old £1 coin, cut out a 24cm circle (plates make ideal stencils) and use a fork to prick the pastry (do this lots - key to a crispy end result is letting the moisture from the pears escape). Lay the pastry over the pears, pushing the edges lightly into the cooled caramel. Bake at 190C for 45 minutes. Allow to cool for 5 minutes (no longer) and VERY carefully turn out by quickly flipping onto a large serving plate or chopping board (keep hands clear, caramel can give you mean burns). Serve with plenty of ice cream!

Pack Horse Pub & Restaurant The Gravitas team enjoy a little bit of down time…
Probably the best dessert I have ever eaten
Set in the idyllic village of Northborough and dating back to the sixteenth century, this stone-built pub is a warm warren of connected rooms adorned with inglenooks and set under an original timber framed roof. With an excellent reputation for food, a stunning interior and, as we were to discover, superb service, we were very happy to combine our team meeting with pleasure. The à la carte menu was not overly extensive – always an indicator that the food is fresh and seasonal, so I was impressed to see that there were options for vegans and vegetarians as well as accommodating gluten free. There was also a separate pizza menu, which looked excellent value at £11 per pizza and included a plethora of toppings, and a ‘bucket’ menu – a selection of pub favourites such as Curly Chips, Battered Cod Goujons, Mozzarella Dippers etc (£3 each or 4 for £11).
We opted for the à la carte menu which offered light bites and less light mains. Dee chose the 8oz Pan Fried Fillet Steak, Grilled Mushroom and Tomato, Chunky Chips and Peppercorn Sauce (£23). It was huge and well-cooked and served with lashings of rich (perhaps a little too salty) Peppercorn Sauce.
The star of the show, however, was the dessert – our mains dictated that we shared one between us – a crime! We had the White Chocolate Cheesecake with Strawberry Sauce (£6) – sounds simple? It was not, and probably the best dessert I have ever eaten – and I don’t like white chocolate! Popular with locals and foodies alike, this pub is not just a pub with food. Look out for themed nights, summer BBQs and music festivals.
I had the Red Thai Fish Curry with Monkfish, Salmon and Prawns in a Spicy Coconut Sauce, Coriander Rice and Fresh Lime (£16). Again, a very generous portion with heaps of delicate, flaky fish. I love spice and I was very happy with the punch - not too subtle but also not overbearing for those less adventurous. Advertising manager, Kathy chose the Smoked Salmon and Cream Cheese Sandwich on multi-seeded bread and summer salad: ‘Delicious’ and, again, substantial.

A Taste of France France is renowned globally for many aspects - from history and architecture, through arts, literature, music and fashions. French wines need little introduction and the cuisine of France is now available around the world.
Words: Trevor Langley
Le Garrick offers character, exceptional dining and splendid cuisine
Le Garrick Restaurant is recognised as an ‘institution’. Very popular with theatrical actors and actresses, Le Garrick offers all-day dining in a venue that has a lot of history. This ‘little piece of France’, in the West End of London, is known for its excellent, regional French food, service and atmosphere. Having a ground floor with window tables plus a downstairs restaurant area with intimate candlelit alcoves, Le Garrick offers character, exceptional dining and splendid cuisine. Being in close proximity to many theatres, pre and post-theatre dining is very popular. The menu is undoubtedly French. Les Entrées has selections that include Scallops and an Assiette de Charcuterie, for example. Boeuf Bourguignon is extremely popular for a main course. Other mains have ‘devotees’ for their succulent honey-glazed duck and fish dishes. Tender steaks have ‘followers’ too and are served with a choice of sauces plus French fries. The team of chefs ensure all cuisine is cooked and/or presented to perfection. The complementing flavours of the dishes are outstanding and impress, constantly. Desserts have something for all tastes and Tarte au Citron or a chocolate creation will certainly not disappoint.
Champagne, plus high-quality wines/drinks, that are elegant, light, rich and powerful, have something for all palates. Having a good number of theatres within easy distance, this is most certainly a restaurant to consider prior to or after a theatre visit, as well as a venue to return to, when in the area and to make a destination, too. All dietary requirements can be catered for and gift vouchers are available also. Le Garrick has regular clientele – always a good sign. Booking is advisable, particularly during popular times. Paten & Co A super fun, family-style sharing menu in an uber cool dwelling…
Part of the KNEAD Pubs group, this venue was bought by Michael Thurlby over 20 years ago, relaunching as Paten & Co in November 2017. Situated next to The Crown Hotel, the pub resides in a redesigned 18th Century building reflective of its merchant history but with a modern twist. Split over 3 levels, the urban, industrial theme inside makes this place completely unique. When renovating The Periwig, Michael discovered the original salt glazed Paten & Co sign on the front of the building. Wanting to pay tribute to its history, he discovered that the original owner’s (a wine merchant) grandchildren still live in Peterborough and so with their permission (and delight) adopted the name for his exciting new venture. Inside you will find original signage, restored polished concrete floors, stripped stonework, school gym rails, stunning and authentic parquet floorboards (reclaimed from a Welsh church) alongside industrial ironwork and a state-of-the-art open plan kitchen. It is uber cool! Operations Manager, Ross Dykes explained that the concept for the pub was to offer total flexibility. Everyone is welcome from workers with a cup of coffee (there are USB points at the tables), to drinkers and diners. The top two floors are typically reserved for dining on a Friday and Saturday night – with a booth style feel on floor 3 for more intimate dining and high seating on floor 2 for those wanting a more casual experience.
The menu has been designed to offer flexibility as well as a social and fun experience. Customers can share a number of small plates (3 for £10 at lunch time) or opt for a main dish with an array of sides. The idea is you can create your own meal exactly to your liking. Weekends offer brunch with a sumptuous selection including Sausage or Bacon Baps (£6), Eggs Benedict (£6.50), Full English (£10) or Vegan Breakfast (£10). Sunday lunch is also popular, particularly the Whole Roast Red Tractor Chicken (for 2 or more to share) served with pigs in blankets, sage & onion stuffing, goose fat roast potatoes, cauliflower cheese and seasonal vegetables (£26.95). Yum!
With 12 Craft Beers revolving weekly, Paten & Co is a must for the craft beer lover
65 The drinks menu includes an exciting range of bottled beers, 12 Craft Beers that revolve weekly and a huge array of spirits with an extensive gin and specialist cocktail menu. Check out the light fittings which are bespoke and made from gin bottles. Paten & Co hosts the only charcoal oven in Stamford, which is perfect for showcasing their traceable meat. Michael is a fifth-generation farmer and the beef and lamb come directly from his farm in Tallington. Also used for smoking, the oven is perfect for producing mouth-watering flavours throughout the meat dishes. There is also plenty of choice for vegetarians, vegans and gluten-free diets. All ingredients are locally sourced when possible. Ross chose a selection of plates for us to try: Burrata, Tomato and Orange Salad £8.00 (fresh Italian cow milk cheese made from mozzarella and cream) – utterly divine, Berkshire Pulled Pork Croquettes and BBQ Mayo (£7.50) -we had to call Catherine’s son Henri in to help do these justice: ‘superb, tasty and tender,’ Baked Camembert served with smoked tomato chutney and sourdough (£7.50) – my favourite! Skinny Fries with rosemary sea salt (£4.00), Caesar Dressed Gem with Anchovies (£4.00) – both yum! and Mango and Chilli Sea Bass - pan seared fillet of sea bass served with chilli infused mango, shaved coconut, coriander and steamed basmati rice (£13.00) - beautifully cooked, perfectly flaky, and the mango salsa could have been a dish on its own. Catherine was extremely pleased that we finished with the white chocolate mousse: ‘Heavenly and not too sweet, hot raspberries and honeycomb complemented the dessert beautifully.’ I can imagine this eatery being popular with groups of friends or families as the menu is so accommodating and sociable. I will definitely be taking the girls soon. Located right in the heart of Stamford, Paten & Co offers a very unique, relaxed and informal dining / drinking experience which is simply fun, fun, fun! Heart Led Psychotherapy Dr Alexandra Dent is the Company Director of Alexandra Dent Psychological Services Ltd. She is an experienced Registered and Chartered Clinical Psychologist with clinics based in Melton Mowbray, Oakham and Stamford, working with individuals across the age span for over 23 years. Her areas of interest include trauma, attachment work, mindfulness and spirituality. Alexandra is also the founder of Heart Led Psychotherapy (HLP), a new spiritually informed psychotherapy. The model and principles of HLP are suitable for everyone as they provide a way of teaching individuals to start mindfully living a life through their heart and soul rather than their ego, so that they live a more authentic life which is freer of pain and suffering. In HLP, the term ‘ego’ is used to refer to an individual’s ‘self-image’ or conscious perceived thoughts and over-analysis of the world in which they live, where subject and object are considered distinct and separate. The term ‘heart’ refers to a person’s emotional centre that is the source of unconditional love, compassion, inner wisdom and truth.
For further information or to book an appointment email: info@alexandradent.co.uk or call 07986 585270.
When an individual learns to honour their authentic self, they will start to live a life of peace and grace rather than pain and suffering
HLP is based on the spiritual belief that everyone is on an individual life journey - the purpose of which is to understand and experience life lessons (such as assertiveness, joy, forgiveness). When people experience challenges, trauma or attachment difficulties, these can create blocks and restrictions, resulting in repeated patterns of behaviours and subsequent psychological distress. In HLP, it is suggested that the ego maintains psychological distress because it makes people believe they are still a victim, powerless and fearful and thus prevents them from breaking out of the repeated patterns. By becoming more mindful, HLP provides a process to learn how to become an observer to their difficulties in order to identify and understand possible life lessons. When they learn to honour their authentic self, they will start to live a life of peace and grace rather than pain and suffering. Sometimes this process requires taking ‘leaps of faith.’ Alexandra has written a book entitled ‘Using Spirituality in Psychotherapy: The Heart Led Approach to Clinical Practice’ (find it on Amazon) and has also started working as a spiritual coach, supporting others on their spiritual journey and awakening process.

Nothing beats learning by doing
The HackSpace If you've had your ear to the ground, you may have heard of a new and exciting venture opening soon. The HackSpace is Peterborough's new ‘maker space’ and is the brainchild of self-confessed tinkerer, Tyler Clark. What is a maker space? A maker space is exactly what the name suggests. It is a dedicated space where amateurs, hobbyists and professionals with shared interests or skills can go along and create, learn, teach and develop. A maker space, commonly found in community spaces such as libraries and schools, will typically have a range of machines and equipment such as 3D printers, laser cutters, sewing machines, hand tools and much more. The HackSpace will have all of this and more. It will also boast a cafe area and co-working space as well as regular workshops and a thriving community of designers, makers, dreamers, thinkers and do-ers, all geared towards helping each other bring their ideas to life. Tyler Clark, Founder of The HackSpace said, "The HackSpace is for everyone. There is no target market. You may not know what a lathe is or what a CNC machine is. It doesn't matter. What matters is that you have an interest, an idea. The community is far more important than the tech." There are things you can learn in a book and there are things you can learn from instruction videos, but nothing beats learning by doing and The HackSpace is somewhere where you can do exactly that. Get hands-on with a pattern and learn to sew from someone that has been making their own clothes for
years. Sit and discuss your next social media campaign with someone that really understands Facebook algorithms. Anyone can come along to The HackSpace and get access to the tools they need to pursue their passion. With a varied range of workshops and a 'come as you please' door policy, everyone is welcome! The HackSpace is set to open its doors this autumn and work behind the scenes is nonstop. Its aim is to increase the opportunities and investment in STEAM industries and activities in the city whilst providing a social environment where you can learn, discover, build and collaborate. With its plant-based cafe, superfast 1GB internet, free parking and wide, step-free access (with warning lights for hearing impaired), it really does have the community at its heart. You can keep up to date with the latest machine delivery, latest sponsor details and so much more by following The HackSpace on all of the main social platforms. What's more, you can also become a founding member from as little as £75. For more details on how you can get involved, head to: thehackspace.co.uk.

Festive season tips
“Your brand is a perception or emotion, maintained by somebody other than you.”
On the radio, I mention the weather every hour, so it’s no surprise that I end up talking about it when I’m off air. Am I a seasonal expert? No, but I am for my own business and you should be too.
It is easy to pile on the pounds over the festive season – from office treats to alcohol fuelled Christmas parties. So, how do you avoid undoing all your healthy hard work?
Know when the seasons change – figure out when your ‘quiet times’ are - when you should have squirreled away money and resources from your profitable months or, more importantly, looked at diversifying your offering to ensure your fallow months become equally successful. Take a look at the previous few years of trading, see where the dips are and think about how you can attract more business during those times – don’t just equate it to: ‘that’s just the time of year’.
Here are some tips from Kelly Taylor, diet consultant:
Listen to Craig’s radio show, every weekday between 3 and 5pm on PCR 103.2FM or join the conversation on Facebook – The Craig Bunday Afternoon Show.
Lost under piles of tasty food gifts? Donate to a local food bank and do something good for others as well as your diet.
If ever you find yourself a candidate looking for work, then make sure you watch your online brand. I hear a lot of people say only companies have a brand, alas, in the modern social media world, so do you. Take a step back and look at your brand. What would someone who has never met you think of your last social media posts? Would they look and think that the late-night revelry pic is the right image? Or the political rant you posted during the local bi election? Do these posts best represent you, and therefore your brand? Check and clean up your brand. If you don’t think employers are checking these prior and even whilst you are employed, then think again. Remember your brand isn’t what you think…it is what someone else thinks! mark@yourrecruitmentcoach.co.uk 07870 603565 Mark Deaton

Take plenty of healthy snacks so hunger doesn’t drive you to make bad choices. The same goes for parties. Don’t turn up ravenous as you’ll eat far more than intended...not to mention the effects of pre-dinner drinks on an empty stomach! Choose low calorie spirits and diet mixers (avoid the festive punch) and alternate alcoholic drinks with water.
Have an amazing Christmas and New Year and don’t hesitate to contact me if you need a little support with that New Year diet. kellythedietlady@yahoo.co.uk 07711 687708 | 01778 701180 Kelly Taylor

Make a will to protect your family
What do you have in your first aid kit?
Shockingly, 65% of people with children under 18 have not written a will, meaning they have not appointed guardians or ensured that their children’s inheritance is secured!
How many of us have cupboards full of creams/ salves /ointments? Something for all eventualities?
Putting off the will-making process is a risky strategy which means that parents are ultimately playing Russian Roulette with their child’s future. By postponing the process, parents are unwittingly putting their children at risk of court-battles, family disputes and potentially even foster care. A guardian who agrees to look after your children if you die can be appointed in a will. Otherwise social services might intervene to decide who should care for them if both parents pass away. Is that what you want for your children [grandchildren]? To explore how these issues can be alleviated for you and your family call Julian at Bright Insight Ltd on 07577 629616 to arrange your initial FREE consultation. Julian Bright
I used to have plenty of these. Now I only have a small box of first aid kit with the usual dressings, plasters and my trusted tube of Forever Aloe Vera Gelly. Essentially identical to the Aloe Vera’s inner leaf, this 100% stabilised aloe vera gel lubricates sensitive tissue safely. It soothes and calms irritation, is great for cuts, bites, bruises, burns and more. Suitable for all ages. Animals too. Simply liberally apply Aloe Vera Gelly to the affected area. Repeat as required. Definitely an essential for the house, handbag or school bag. If you don’t want to carry a tube, then use the Forever Aloe Lips, great as lip balm but can also be used like the Gelly.
Effective coaching I’ve been to 3 organisations recently that have told me that they are using coaching to develop their staff. They were not actually using coaching at all, simply mentoring or telling people what to do! • Coaching isn’t about telling, training or leading someone towards an answer - it’s using open and challenging questions to help an individual find their own solutions • You might know the answer, but coaching is about helping others to come up with their own. Their answers might be different to yours, but that’s ok! • In skills development, coaching comes after you’ve instructed and trained someone. The coachee needs to be competent and be able to improve their own performance. • A good coach will have a few favourite open questions ready to use at any opportunity

Let’s do Lunch is a Huge Success! In April, Gravitas launched a new quarterly social network meeting for valued clients, small businesses and supporters.
The event, held at the Circles Sports Lounge & Kitchen in Market Deeping, proved to be an enormous success with a fabulous response from attendees. With smooth jazz playing in the background, the informal atmosphere made for a wonderful two hours of networking and there to capture the proceedings was our photographer, Lucy Dack (lucydack.co.uk). During the lunch meeting, all participants were treated to an engaging and informative talk by Julian Bright of Bright Insight, exploring the best options for leaving wealth to loved ones.
Let’s Do Lunch! Also joining us on the day was the renowned, and previous Gravitas interviewee, Sukhi Wahiwala– an award-winning small business coach. Sukhi spoke to the group about how strategic business mentoring can help businesses thrive and many attendees reportedly gleaned further advice on a one to one basis. Feedback from the day was that clients did indeed connect, network and meet after the event. The plan is to meet again on October 10th at Haatch Desks, look out for details on our social media platforms, Gravitas Connections and Gravitas Magazine. This is a FREE event and includes a finger buffet style lunch.

Transmedia in Action:
A fundamental in digital marketing In the Winter 19 issue, Reckless Abandon Media (RAM) introduced the concept of transmedia benefitting marketing strategies. Here the team explain transmedia in further detail: Transmedia, coined in 2003 by researcher Henry Jenkins, is defined as a story told through different media and communication platforms. By approaching marketing from a transmedia perspective, you can effectively redistribute your high-level content to achieve better engagement rates. The way your audience prefers to consume media varies by platform, so your content should also follow suit. The key thing to keep in mind is that transmedia isn't simply optimising your content for a platform but creating a unique piece of work that adds to your overarching story. It isn't advised to convert a blog to a video verbatim for example. We utilise this approach with Gravitas' fashion shoots, where the main purpose is to capture high quality images for the editorial. A lot of work goes into these shoots where the team need to source locations, models, props and, of course, the clothes. We felt we could create more content from the day to be published outside of the magazine. We launched a video series 'Gravitas peeks...' which takes a behind the scenes approach to the fashion shoot. Each episode tells the story from the perspective of a single role (photographer, stylist, MUA, hairstylist etc.)
For this issue, we wanted to create a short moving image representation of the photos appearing in the magazine. We took just a small section of the overall shoot and turned it into a small piece optimised for social media rather than YouTube. So, we rearranged the scene but kept the clothing, cars and models the same to keep with theme continuity. Photography and video were never taken simultaneously to avoid content duplication. Interestingly, this article and its photos are also an additional piece of transmedia. See how deep this rabbit hole goes? Transmedia covers all forms of media but doesn't have to involve everything. A focussed strategy over a few platforms is more effective than a wide-ranging one. Re-evaluate your content output, make optimisations and keep your publishing high quality and regular. For further inspiration, check out the Gravitas YouTube channel, and compare the video content to the written pieces in the magazine. If you would like to add a professionally crafted video campaign to your digital marketing strategy, give RAM a call on 07743 073866.

The Building of a Local Brand
The Good Stuff has fast become the name for healthy food in Peterborough. But behind the brand is a journey that took a year of dedication, and working with the right people. Like any business idea, it wasn’t an overnight success. There have been hurdles, setbacks, and all the traditional challenges that come from starting a small business. When Ashish Sarman had the brainchild for an eatery that provided fast and healthy food in Peterborough city centre, he had all the ideas but no brand, no name, and no presence. Ash simply had a vision that he wanted to open a take-away concept that only offers fresh, wholesome and nutritious food. But what do you do with a business idea when you don’t know where to start or who to turn to? Ash partnered with Dean Lynn, founder of Trusted Media. With Dean’s vast experience in commercial business and marketing, it was clear from the get-go that Dean’s business knowledge and enthusiasm could enable Ash to bring his idea to life. Dean had previous experience of working with food brands, and with over fifteen years of marketing experience, he knew how he could use his knowledge and business acumen to support Ash in building a local brand. And it wasn’t long before ‘The Good Stuff’ was coined. However, while it may look from the outside like any ordinary marketing partnership, Dean’s knowledge and hands-on support have enabled Ash to grow his business in new directions. The Good Stuff now provides private catering and delivers fresh food across Peterborough city centre.
While Trusted Media have supported Ash in creating the social presence and PR for The Good Stuff, it’s the partnership of Dean and Ash that has enabled the business to truly thrive. “I could have chosen any normal marketing agency, but I truly believe there’s no way I would have received the support and guidance I have gained from Dean. He knows what works and what we should be doing to make the business a commercial success.” “As anyone with a small business will tell you, it’s vital to get money coming in as quickly as possible, and Dean’s hands-on approach has meant we’ve had third party support from day one. As well as the local marketing, Dean’s helped streamline our menu and think of new services to increase revenue.” The Good Stuff remains a firm favourite in Peterborough. With fitness enthusiasts and local athletes in bodybuilding and the POSH football club making it their place for high-quality healthy food, it has gained a strong reputation across the city for delivering a unique healthy eating experience.

Dean isn’t just a marketer, he’s an incredible business consultant who has guided me through all my start-up and growth problems.
For further information log on to trustedmedia.co.uk or call 01733 788 766.
To reach this level of success in such a short period of time reveals the impact that a strong marketing partnership can provide. It’s not just about spreading the word, it’s about truly understanding a business - its needs, its market and ultimately the goal. If you thought the building of a local brand was easy, this story highlights that it takes the right people, a firm understanding of what success looks like, and a lot of persistence to go from idea to small business.
The Good Stuff is a family run restaurant, opened by professional bodybuilder Ashish Sharman with the mission of delivering healthy food to Peterborough and eliminating the stigma of vegetarian and vegan meals as being bland and boring. The restaurant serves healthy alternatives to dishes such as pizzas, kebabs and burritos, while also serving customers protein filled pancakes, healthy smoothies and many other wholesome food options. The whole menu is designed to incorporate fitness nutrition into everyday recipes and create an oasis for people from all walks of life who wish to improve their diets while still being able to indulge in great tasting food in a friendly environment.

Starters are served at your table or you can help yourself from the buffet. The buffet offers a huge range of healthy cuisine including seafood, fish and meat choices.
Stir fries and the honey-glazed roast gammon are popular choices. Mohamed Bardouz is the Dining Room Manager and ensures all guests have a memorable, most enjoyable experience. Desserts include yoghurts and chilled options. Complimentary mineral water and tea or coffee are also included. With several packages available – from a short visit to an extended stay – there is always time to take the opportunity for a treatment (or three!). From mini pedicures and manicures to 90-minute-deep massages, there are plenty to choose from. If you still have energy, there are mountain bikes, tennis courts, a croquet lawn and more activities available all day long. For evenings, the dining room is transformed with pristine, candle-lit table settings adding to the ambience. All courses are served to table. The 90+ beautiful, inviting bedrooms offer wonderfully comfortable accommodation to boot.
