In a large pot add 1 kg of red plums and 250g of your sugar of choice. Toss to distribute the sugar through the fruit, cover the pot and leave it overnight. Do not refrigerate. Cook on low heat until it starts to foam, about 15 minutes. With a large spoon, skim as much foam as you can off the jam and discard. Add the juice of half a lemon, and cook for a further 15 minutes until thickened slightly and syrupy. While the jam is hot, fill your jars - allow to cool completely and store in the fridge.
