Wanting What You’ve Got

MUST-HAVES This fall, accessorize with soulful charm and quirky personality, add a splash of gold to décor and you’ll be right on trend.

W

hen we pore over the pages of décor magazines, it’s easy to get overwhelmed by all the design possibilities for our own home. Perhaps our entire space needs updating, or we want to create a designer look in just one room. Most designer styles work well on the pages of a magazine, but it’s important to ask ourselves, “Is this right for me and the home that I have?” As a decorator, it was always difficult to step into people’s homes and create a décor for them based on my impressions of their taste. Your home is your comfort zone and the personal décor should reflect this. While I am not a promoter of sacrificing style for comfort, I do believe in the value of finding your authentic style to create a space that makes you feel at home. In the fall, we present our Home & Design issue with inspiring décor ideas throughout the pages. But more importantly, we feature people who are sharing their uniquely created home environments to help others. A family of 10 found much-needed space with a new country house, while one couple effectively combined their home lives later in life. In the city, a newly built home surprised its owners with unexpected views, and a florist makes her home a canvas for her own talents and those of her family. An amazing restoration in Rockcliffe Park may stir up renovation envy, yet all these different homes have come together to participate in The Homes for the Holidays tour in support of Hospice Care Ottawa. Reflecting on the comforts of home is only fitting for an issue where we highlight an event that helps to provide end-of-life care in the most comforting

way possible. It makes us recognize that the true meaning of our home goes far beyond its design style and decorative finishings – even if they are magnificent! For me, that means bringing the outside in with windows exposed, vases filled with seasonal offerings, adding a splash of colour and a few new trends to show that I am on top of the latest styles. I

t’s only fitting that florist Elizabeth Young should live in a tranquil, picturesque country setting surrounded by nature’s offerings. The home that she shares with her husband Jeff White, son Austin and daughter Madison is nestled between Manotick and

Kemptville. But while it’s a 30-minute drive to her Ottawa flower shops, Flowers Talk Tivoli in Westboro and Flowers Talk in Wellington Village, the proximity to the 416 makes the commute an easy and peaceful transition from work to home. The house is a work in progress.

Built in the 1970s, the need for updates has given the family a chance to showcase their talents, including the work of 16-year-old Austin. He has not only built some of the furniture, including a barnboard coffee table in the family room, but also worked alongside his father

to create a feature wall of pine planks that were weathered with vinegar, black tea and steel wool. The décor is enhanced with a stone fireplace and combines an urban vibe within a country setting. As the current owner of two of Ottawa’s most respected flower shops, Elizabeth is a whiz at creating nature-inspired

arrangements that effectively combine imported flowers with local, seasonally authentic materials. Her daughter Madison shares her talents. Elizabeth brings different materials home so the two can work side-by-side to create their home’s simplistic décor. “I like natural and FALL 2014 ottawaathome.ca 11

authentic, bringing the outdoors in,” she says. “A simple vase of flowers on a table instead of knick-knacks, sand from a family vacation, driftwood from a boat trip; things that show our experiences together as a family.” Her fall décor embraces the colour transitions in nature. “I love the jewel tones for fall – deep burgundy, burnt orange, dark purple with a contrast against the greenery.” She adds, “In early fall you can add white or darker pinks to keep a touch of summer and then go deeper towards November.”

ne of the most cherished features of a newly built home in Wellington Village is that the setting offers a private, cozy feel within a city neighbourhood. Yet, the owners of this home are giving up some of that muchdesired privacy by handing their dwelling over to the 2014 Homes for the Holidays tour in support of Hospice Care Ottawa. In the decision to share their home, personal privacy was pushed aside in lieu of the fact that one of the homeowners experienced an unmet need for hospice care. “Sadly my mom passed away two years ago and there were no hospice beds available to us. I was surprised to find out how few palliative care beds (outside of a hospital setting) there were in Ottawa. When we were approached to support this cause through the holiday tour program – I just couldn’t say no!” Tour-goers are in for a treat when they visit this contemporary home, which is nestled into a quiet street on a treed lot surrounded by mature homes. It offers extraordinary views that came as a surprise bonus to the owners who didn’t see the effect their location would have until their home was complete. They express their delight in a property that has exceeded their expectations. “The house has a great open and airy feeling. This is a great way to bring a bathroom up-to-date. Before starting the project consider what is best for your space; there is a range of possibilities from acrylic or engineered marble to a custom tile base. Keep in mind that a deeper shower unit will require moving the drain location and beware of problems arising due to the joist location in the floor. Current trends in shower doors show an increase in height and a decrease in panels to create a slicker look with technology that allows for smooth quiet openings and a more luxurious look. Think about your personal style and how you want this to reflect in your updated space. Whether you have traditional, contemporary or country tastes there are plenty of options to choose from. Be sure your updates work in conjunction with the rest of the room. This is also the time to incorporate change and enhance the space with a spa-like atmosphere. behind the project, but (as Paul Kariouk is quick to point out) that didn’t mean they had free rein to create as they pleased. Not only were they limited by physical factors, but the client’s particular tastes and specifications played a leading role in the outcome. Given that the clients are extremely private people, Paul said he knew the house would be introverted and not a stand out glass box. “But ironically the client wanted the house to look gracious and it had to be extremely open visually and filled with daylight,” explains Paul. “So the gratifying part of this project was the challenge to reconcile seemingly oppositional client desires with their requirements.”

With a lot that is steep from side to side, it posed complications that ended up becoming the home’s greatest feature. The front of the house is elevated from the street to bring the interior of the home in line with the full depth of the lot, and create a private oasis within. Windows at the back of the house seem to open onto a cocoon of nature. An outdoor courtyard area connects with indoor space on either side, which offers a brilliant solution to what Paul describes as “a sequence like a spatial necklace that strings together alternating

interior and exterior spaces.” Both indoor and outdoor spaces will be focal points to showcase holiday décor in its entire splendour during the tour, which takes place Nov. 14-16. Crystal Hill from the Fresh Flower & Gift Basket Company will be honouring the home’s clean lines and esthetic, while promising to include some traditional elements with greens and flowers to add striking, bold elements for the wow factor. F

ans of the renowned Ottawa architect W.E. Noffke are going to enjoy visiting one of his grand houses during this year’s Homes for the Holidays tour. The Noffke house was built in Rockcliffe Park in the late 1920s, but a recently completed year-long redevelopment has not only restored the distinctive character of the home, it has enhanced the original design and improved its structural function for family living. Working from early architectural drawings of the house, the proud new homeowners enlisted the professional help of Robertson Martin Architects to ensure their ideas respected Noffke’s vision. The husband and wife team planned the exterior and interior design themselves in collaboration with Laurin General Contractor and

landscape architect John Szczepaniak. It was a meticulous rebuild with considerable care to preserve the beautiful village heritage of the residence and property.

SPLENDID SYMMETRY To maintain the Tudorstyle exterior of the house, the stucco was finished in a greywhite tone to blend authentically with the stonework and older beams. The restoration process also removed unsightly renovations that conflicted with the architectural character. An underground garage that was added to the front was taken out and relocated around the corner of the property to form a sizable, but discreet, double garage and driveway. The outdated solarium and deck on the back of the home were replaced by the new addition and landscaped patio. In a seamless link between old and new, an original FALL 2014 ottawaathome.ca 19

A FULL HOUSE IN THE COUNTRY

W

ith the arrival of their sixth child, Lori and Meredith Egan got serious about moving to a bigger house. They eventually found a two-acre lot in rural Kanata and built an imposing 5,000-square-foot, threestorey home, complete with five bedrooms and a self-contained apartment for the grandparents. The combined family of 10 moved into their new country home 13 years ago and the tired mom admits it was all a bit of a blur back then. “The first time my husband brought me out here, I had no idea where I was,” says Lori, who grew up in the east end of Ottawa and had

lived in the Civic Hospital area for years. While the house was under construction by local builder Jim McGill, the family rented a cottage in Constance Bay. The move finally happened nearly six months later when the youngest Egan had just turned two and the eldest was 15 or 16, recalls Lori as she counts back the years. With charming candour, Lori states that they had no clue at the time about home design and planning. “The only thing we told our builder was that I wanted a separate living and dining room. I love a formal dining room, even if we only use it for special

occasions.” In hindsight, the only major change that Lori would make is to double the kitchen space, especially considering the size of the house and her family. But she says it functions very well and updated features include a new backsplash and black granite countertops. The kitchen flows into an

open family room with a stone fireplace and large windows to bring in the forestlike setting. French doors lead to a huge screened-in porch that transitions easily into the country-sized backyard and pool area, where the kids have played happily for most of their lives. Antique pieces of furniture mix in with contemporary elements to accent the warm atmosphere and natural environment. “I like it when people tell me that my house feels like a real family home,” says Lori, “because that’s what it is! And the view outside is always beautiful, whether it’s summer or winter.”

ALL DRESSED UP FOR THE HOLIDAYS In winter, the big stone home is just as welcoming. And this holiday season, the decorating will be particularly stunning as it undergoes the professional magic performed for houses on the Homes for the Holidays tour. Shannon Gorman, the owner of Pretty Pots Flower Shop in Stittsville, is the designated florist and this will be her first involvement with the popular tour. As a preview for this issue of Ottawa at Home, she is decorating a few areas of the home to give a sense of what to expect. “In the living room, I’m working with the image of a white orchid picture above the mantle to decorate with groups of orchid planters around the fireplace. I want to keep the overall look of the home as natural as possible, with branches and bark pieces, but add some glitter as well.” Outside, Shannon plans to adorn the wide stone steps with countrystyle holiday planters and traditional treatments. But inside, she is taking an experimental approach to decorating the Egans’ treasured Christmas tree. The wow factor of a fresh 14-foot tree that soars up through the curving stairwell will be pumped up in an exciting new way. “I’m going to bring some vines and branches out of the tree and loop them for a three-dimensional effect,” explains Shannon, who adds fittingly that she is going out on a bit of limb on the tree decoration. It will certainly be an inspirational idea for this year’s tour visitors!

Q. We like the look of both contemporary and craftsman style, how can we blend the two effectively? A. You’re in luck! These two styles, while quite different in theory, compliment each other beautifully in décor and design. Choose one to be the more dominant style and then work at blending the two together so the look becomes a clean, modern approach to craftsman style. In a recent renovation project we worked on the design of a kitchen & bath, where we put a contemporary spin on the craftsman style architecture. This was done using clean lines and strong forms. They wanted the kitchen’s design to have a strong connection to the land with its rolling topography and the beautiful water view. We visualized a kitchen that was mindful of its outdoor surroundings. We also wanted to capture that sensibility, but within a contemporary framework. This was achieved by carefully using a combination of natural materials in the kitchen. As we developed the design, it became more and more about the transitional connection between the materials used in this kitchen and the stone inside the house done by Barry Hobin Architects. The colour of the stone helped us determine the colour pallet that evoked an earthy feel in the kitchen. Taken as a whole, the kitchen layout enhanced the magnificent views. For bathrooms, the same concept applies. In this case, they wanted their master bathroom to be a private retreat with simple, clean, and uncluttered spaces. It includes custom suspended cabinets, a free standing tub featuring a ceiling mounted waterfall accented by stone walls. This enhances the contemporary feel of the interior and it opens up the views beyond. While the owner wanted a contemporary bathroom, it was important that the design acknowledge the craftsman style architecture of the house. Reducing the bathroom to its simplest form also brings a very contemporary edge to the design.

Accora Village is transforming itself into one of Canada’s greenest communities

O

ver the past three years, Ferguslea Properties Limited has taken significant steps to revitalize Ottawa’s Accora Village. As part of a carefully planned, $40 million program of revitalization projects aimed at directly enhancing residents’ safety, comfort and security, the program also includes substantial upgrades to the community’s many apartments, town homes and garden homes. One of the key areas of emphasis is green living, and the benefits of the community’s greening are already being enjoyed by residents. “Since developing our Green Community Plan in 2010, we have been working hard to reduce our environmental

impact and boost resident satisfaction and pride in the place they call home,” explains Stephen Ryan, Vice President of Ferguslea Properties Limited. “Guided by this Green Community Plan, we have undertaken a host of initiatives to save energy, conserve water and reduce waste, making Accora Village an even more desirable place to live for professional couples, young families, seniors and downsizing adults.” “While green initiatives do cost money to implement, we believe the dividends they return are invaluable, in the form of reducing resource consumption now, and for many years to come,” he adds. The dividends Stephen

speaks of are measurable and impressive. In 2013, Accora Village used 6% less energy than it did in 2010, representing enough energy to power over 85 single family homes for a year. The energy and water saved since 2010 also represents a 3% reduction in greenhouse gas emissions – equivalent to removing 42 passenger cars from the road for a year. Similarly, in 2013, Accora Village used 6% less water than it did in 2010; it’s a savings of 10 Olympic sized swimming pools of water. Energy audits and enhanced metering have helped Accora Village collect data and analyze utility consumption to identify energy-savings opportunities. Buildings are being retrofitted with

energy efficient windows and lighting, and new building automation systems are allowing for better resource consumption management. Water-saving faucets, shower heads and toilets are being installed, as are rainwater collection systems for grounds irrigation, ensuring that Accora Village maintains its lush, green environment while using significantly less potable water. At Accora Village’s Fairview building, a ground source heat pump – a key element in new green building construction but rarely in retrofits – is now harnessing natural heat from underground (in winter) and providing efficient cooling (in summer). This cutting edge solution uses less electrical

energy than the heat or cooling it produces. “In addition, waste audits have led to the installation of two Earth Bins as a pilot project, which has been so successful that the program is being expanded,” notes Stephen. “Waste diversion through efficient waste management, recycling and resident education, like all our other green initiatives, is proving a big hit among residents. raditionally, most ceilings are painted in a stark, flat and sterile white (blah!). Now don’t get me wrong – white ceilings have a certain charm and serve a very important purpose. Painting your ceilings a flat white helps to mask any imperfections the ceiling may have; it reflects light, adding a sense of additional space and height and creates a contrast between your walls

and ceiling. However, ceilings can be much, much more! Choosing the perfect colours for our walls is a very personal undertaking. We all have a unique sense of style and taste, and colour is usually at the top of the list. Our favourite go-to colours often provide the bases of all our interior design decisions, especially when choosing colours for our walls. So, when I was recently asked

to paint a ceiling for a client I was left scratching my head, but only for a moment.

I have always referred to the ceiling as the fifth wall. For a number of reasons, I felt it deserved as much attention as the four walls that surround a room. Firstly, if you get the ceiling wrong, the whole room looks horrible. Painting your ceilings a stark white, or conversely going with a colour that’s too dark, can dramatically change the sense of space and flow in the room. Also, most ceilings lack the same finished quality of the rest of the room. Drywall professionals find it difficult to work over their heads (and if you have ever stood under a ceiling being sanded you would try to get the job done as soon as possible), so details in the sanding and taping are often imperfect. Choosing paint with sheen will highlight any imperfections in your ceiling, drawing the eye to them as soon as you enter the room. So here are some valuable tips I use when painting the fifth wall: Use the tone of your walls when painting the ceiling. Every ceiling in my house is painted using a shade of the colour that is on the walls. When I worked on Divine Design, I would simply mix a quarter of the gallon of flat white for the ceiling with the same amount of the wall paint and stir it up. The result was a soft blend between the walls and the ceiling, without the

stark contrast. It leaves a soft hue of colour on top combined with the richness of the wall colour. Another way to achieve this is to ask the paint store to mix in your flat white paint with a quarter formula of the wall colour. Since you are starting from a flat white and not a base, the mixture will tint the white paint in a soft hue of your wall colour. Always paint your ceiling using a flat or matte paint finish. Flat paint is your best defence against poorly taped or sanded ceilings. I avoid actual ceiling paints as they are usually stark white and too clinical-looking, plus most have a slight sheen that allows imperfections on your ceiling to shine through. J

im Taggart and Jane Panet have been in each other’s orbit since they met playing bridge in the tunnels at Carleton University almost 50 years ago. They were each married for more than 40 years and have a combined family of five children and nine grandchildren. Both couples had an ongoing connection as part of the same social circles with mutual friends, and living near each other their daughters attended school together. After graduating as an engineer, Jim went to work for the family-owned Taggart Construction and is now chairman of the respected Taggart Group of Companies, which is at the forefront of construction and development in Ottawa. Before she had her children, Jane was a high-school teacher and then worked as a communications adviser in the federal government. Their lives shifted dramatically when both of their spouses were diagnosed with cancer and died within a few months of each other in 2009.

Jim and Jane experienced the importance of quality end-of-life care that was needed to give their loved ones comfort in their last days. Watching their spouses succumb to the inevitability of their illness was difficult to endure and the friends gravitated towards each other in sympathy for their mutual loss. Two years later they joined their families and were married, strengthened by their shared experience of knowing that life can change so quickly and alter their path. Moving forward to embrace new opportunities, they were delighted to be appointed as this year’s honourary chairs of the Homes for the Holidays event. With their own first-hand experience of caring for a loved one in their greatest time of need, the task of spreading awareness of Hospice Care Ottawa and end-of-life care is deeply personal for them.

& JANE: A new feature this year is the invitation-only cocktail reception we are hosting in September to officially launch ticket sales for the tour that is being held Nov. 14-16. With your purchased ticket, guests mingle with past donors and bid on wonderful items at the silent auction. We are also contacting business leaders in the community to help us raise funds for the two hospice facilities in Ottawa.

HOW ARE YOU PROMOTING HOMES FOR THE HOLIDAYS THIS YEAR? JIM

It is heartening to know that almost everyone seems to know about Homes for the Holidays. We

have gone on the house tours ourselves and enjoyed that aspect. Jane has also worked as a volunteer. We are looking forward to seeing a lot of money raised for this worthwhile cause, as we know that this tour of holiday-decorated homes is the most significant fundraising event for hospice care in our city.

WHY IS END-OFLIFE CARE SO IMPORTANT? JANE: My husband was diagnosed with cancer and we were grateful for the doctors and nurses who were so involved with his care.

We had a cheerful nurse who came to our home and I was appreciative of this connection with the real world because it is very difficult to watch someone you love decline and suffer pain, and you cannot do anything about it. A very close friend died not so long ago and I visited him at the hospice and it was like visiting him at his own home. His family was there and the staff made it as comfortable as possible for him and his loved ones.

who is dying who may not be aware of what is happening. It is tough for a family member to be exposed to this 24 hours a day. This type of care provides a break for the caregivers trying to put their ailing loved ones into a place where they will be well looked after, so the family can leave for a short period to go about their own lives with some normality.

WAS IT DIFFICULT TO BLEND YOUR LIVES TOGETHER? JIM: Jane has been very gracious to adapt more to my life than I have had to adapt to hers. She sold her home and ski chalet, tore down her cottage and built a new one, and moved into the house that I have lived in for 30 years. During the summer we spend a lot of time on the road driving between our two cottages. We live at Jane’s on McGregor Lake during the week and then on the weekends we live at mine on the Big Rideau.

Rather than try and do it ourselves, we hired a well-known decorator who viewed both houses, made suggestions and helped with creating the environment we now live in. It is important to be busy, open and flexible and to welcome the changes that life presents us with.

ttawa is a network of fabulous neighbourhoods, each with its own distinct charm, history, architecture and thriving local businesses. Four of Ottawa’s neighbourhoods – the Glebe, Westboro, New Edinburgh and the ByWard Market – are all older and central, each unique in their own way. THE GLEBE ACADEMIC With Carleton University at its southwest corner and uOttawa and Saint Paul University just a stone’s throw away, the Glebe is a centralOttawa enclave for the academic set. This is definitely a walkable neighbourhood and bicycles also fill the streets in the warmer months. You’ll see more Tilley hats, organic fair-trade shirts and

But the Glebe is not all serious academe. Rock star Alanis Morissette hails from this neighbourhood and went to high school at the Glebe Collegiate Institute. She even sang the national anthem at the former Ottawa Rough Riders’ games

H NEW EDINBURG BORO WEST BYWARD MARKET

WESTBORO HIPSTER A combination of upscale urban development and a hint of retro in its tree-lined streets, Westboro is perfect for hipsters. The neighbourhood’s exact borders are debated, but it lies generally between Island Park Drive and Golden Avenue, to the east and west, and the Ottawa River and Carling Avenue, to the north and south. Westboro was a village until it was annexed by Ottawa in 1949 and, in postwar fashion, many of its avenues bear names from that time,

including the iconic Churchill and Roosevelt. Tiny bungalows common to the era also dot several Westboro streets. It also has, however, some of the region’s most luxurious homes and trendy glass condos that give the neighbourhood a modern flair. The restaurant scene has exploded in Westboro, with elegant eateries like Gezellig, Juniper and Savoy catering to the local crowd. You’re likely to see skinny jeans, thick-rimmed glasses and newsboy caps on patrons sipping martinis at places like the funky Trio and micro-brews at the Clocktower Brew Pub. A mecca for the affluently athletic, you’ll see SUVs topped with kayaks or Thule boxes heading towards the Gatineau Hills, across the Ottawa River, which can be seen from the Westboro streets, and calls these urban residents to outdoor adventure. To prove Westboro’s hipster credentials, it

even has its own music and arts festival that takes place every June and draws big name artists from across Canada. Westfest draws thousands of visitors and prides itself on being the only festival of its kind that is totally free. It’s just Westboro’s way of spreading the love.

NEW EDINBURGH ENTREPRENEUR You know your neighbours are movers and shakers when one of them is the Governor General of Canada and the other is the prime minister. While New Edinburgh might hold these two important official residences, it’s also known as a community that attracts business leaders as well. In fact, a good portion of the neighbourhood bears the family names of one of Ottawa’s first entrepreneurs, Thomas McKay. He was one of the creative forces behind the Rideau Canal, and named

S

aul Jacobson spent more than 30 years as a radio host – almost 20 of those years in Ottawa! With his deep voice and easy on-air personality, Saul was a natural for radio, but his professional career originally started on a different track. “I taught school for a few years,” says Saul. And while he admits he loved working with kids, he had spent his high-school years volunteering at the local radio station, and radio remained his true passion. So he quit his teaching job, and the rest is history. Now retired from radio, Saul finds himself back where he started – at school. This time, he’s combining his teaching skills with his love of music as the volunteer director of Broadview Public School’s Grade 8 jazz band. “I originally got involved because my wife, Ginger, is the music teacher there. So the first few years I was ‘volun-told’ because she needed help,” he admits with a laugh.

Saul is dedicated and enthusiastic about his volunteer work at Broadview, something he sees mirrored in the attitudes of the kids he teaches. “The entire band program at Broadview is extracurricular – early mornings, lunch breaks – these kids are doing it because they really want to.” He relishes the opportunity to share his love of music, and believes strongly in the Broadview music program’s mantra: Making Music Makes You Smarter. “There’s a lot of clinical research which indicates that making music increases your self-confidence, leads to better grades and better behaviour,” Saul notes. “Music is also an international language, and if you can ‘speak’ it and read it, you can be at home anywhere on the planet.” Saul is particularly committed to jazz music because he feels it’s a style of music that allows kids to step outside the box. “We live in a society which has rules for everything,” he observes. “Jazz is one place where kids

can break the rules and it’s OK, because jazz music is about breaking the rules.” The jazz lover is immensely proud of the award-winning band, which is good enough that they do an annual tour of southern Ontario schools and play at music festivals in the

region. “A year before the Grade 8 concert, the kids in the band are often just learning how to put their instrument together,” says Saul. “To go from that to performing in a polished ensemble – it gives them real pride, and it makes me feel great.”

INGREDIENTS: 2 slices whole grain bread 1 tbsp. (15 mL) basil pesto (or homemade, see recipe) 2 thin wedges or strips Brie cheese 1 thick slice beefsteak tomato 1 tbsp. (15 mL) crumbled cooked bacon METHOD: Preheat panini press (or heavy duty frying pan) to medium heat. Spread pesto on one slice of bread, top with one wedge of Brie followed by sliced tomato, bacon and another slice of Brie. Top with bread and grill 1-2 minutes each side or until cheese is slightly melted to keep the sandwich together. MAKE YOUR OWN BASIL PESTO: 1 clove garlic, peeled 2 tbsp (30 mL) grated Parmesan cheese 1/4 tsp (1.25 mL) sea salt 4 cups (1 L) fresh basil leaves 2 tbsp (30 mL) olive oil 1 tbsp (15mL) lemon juice METHOD: In food processor, pulse garlic, Parmesan and sea salt until garlic is well puréed; add basil and purée until basil leaves are minced. With motor running, slowly add olive oil. Scrape down sides and purée to desired consistency. Stir in lemon juice and adjust flavour with salt, if desired.

I

t’s a fortunate time for diners in Ottawa. There is an impressive array of restaurant options, some featuring the rising stars in our culinary scene who treat ingredients with care and consistently delight the guests they feed. Ottawa At Home talked with three kitchen wizards under 30 who are making a big name for themselves thanks to a combination of inspiration and perseverance.

STEPHEN LA SALLE 27, THE ALBION ROOMS This Ottawa native is single-handedly changing the perception of what it means to eat in a hotel restaurant. At the Novotel’s Albion Rooms, his Britishinfluenced food, contextualized within Ottawa’s vibrant artisan

food scene, is drawing rave reviews. It’s also helping to cement Stephen’s reputation as one of the area’s most impressive chefs, so much so, that he has been invited to compete in the prestigious Gold Medal Plates competition in November. A graduate of Algonquin College’s culinary program, he was inspired to pursue his chosen path while working at Lapointe’s restaurant in the ByWard Market as a teen. “I loved chatting with embassy chefs as they were doing their early morning shopping.” Upon graduation, Stephen worked at ARC The Hotel and the Whalesbone, where he gained enough experience to be hired by the Novotel. “I have the best chef job in Ottawa, but it is very demanding. It was a big gamble for them to appoint someone so young to a position of such responsibility but I think it’s worked out well for everyone.” He credits the business skills he learned at culinary school for

helping him deal with the administrative aspects of his position. His advice to young chefs is to stage (train) in as many places as possible. “That’s how you make connections and it’s also the best way to keep on learning. Working with other chefs, whether in a kitchen or in a field at a fundraiser, is really inspiring.” Most importantly, he adds, is a constant desire to try new things. “I’m going to have a lot of fun playing with various elements as I prepare for Gold Medal Plates.”

IAN CARSWELL 29, K.W. CATERING AT THE NATIONAL GALLERY OF CANADA Having grown up in Petawawa, Ian Carswell

found his love of the kitchen lifestyle at Nippissing College, where he worked parttime at a family diner. After apprenticing in North Bay, Ottawa and Toronto, he went to Europe. “I had amazing experiences there, particularly at Helsinki’s Chez Dominique, ranked in the top 25 restaurants in the world. It was intense – I worked 100 hours a week but I learned so much.” Ian landed at Absinthe Café when he returned to Ottawa and he moved next to K.W. Catering where he quickly rose to become executive chef. At just 29 years of age, Ian enjoys the responsibility of running the National Gallery ’s busy kitchen, serving up a blend of classical French cuisine with modernist touches. “I like dishes that are relatively simple, beautiful, and supremely flavourful. I enjoy the precision and efficiency of big events, but I also appreciate small dinners because

I can take more time with each plate.” As part of a local group of young chefs, it’s phenomenal for him to be participating in great fundraising dinners like the FLUX series and the Ottawa Humane Society’s Summer Harvest Garden Party. He advises other aspiring

chefs to knock on doors to make things happen and to be patient. “You don’t have to do it all by the time you are 30 or even 40 – take time to enjoy each step along the way.” To that end, Ian is currently taking five months off to be with his young daughter. “Balance is key. I would love to have my own restaurant one day, but I’m not in a rush.”

JAMES BRATSBERG 28, MENA You know you’re doing something right when your eatery is one of 30 nominees for the 2014 Canada’s Best New Restaurants award from Air Canada enRoute magazine. Chef James Bratsberg is humbled by the nomination and determined to

prove that MeNa, a gem on Preston Street, is deserving of the accolade. His resumé is impressively lengthy for a 28-year-old chef. From Newmarket to Calgary to downtown Toronto, he accumulated extensive kitchen experience. A

chance invitation to join a friend in Ottawa led to a job running the raw bar at E18hteen immediately prior to joining the MeNa team. “I love having full creative rein here as I present comfortable, French-inspired food using as many local ingredients as possible,” says James. Working in

Ottawa has proven to be a great fit. “Ottawa is like a big small town. There is a true sense of community among chefs and people are genuinely friendly, which I think helps the culinary scene as a whole. Chefs seem to be more open with each other about their ideas than in bigger cities like Toronto.” James admits that

the transition from brigade member to being the person in charge of the kitchen happened a little faster than he expected, but he is relishing the opportunities before him. “I love being part of such a young, energetic team here at MeNa – I think it’s amazing that at 28, I’m the oldest guy in the kitchen!”

WHICH KITCHEN APPLIANCE WOULD YOU SPEND THE MOST MONEY ON? My dream appliance would be a six-burner Wolf gas stove.

s the executive chef at the Westin Ottawa, one of the national capital’s busiest hotels, Kenton Leier spends much of each day in the kitchen. Despite this, he is always eager to cook after hours, noting that his passion for cooking really comes alive at home. As he prepares to embark on a search for

a new residence, Kenton shared his thoughts on house hunting and kitchen essentials.

WHICH IS THE MOST IMPORTANT ROOM IN THE HOUSE TO YOU? Not surprisingly, it is the kitchen. It’s where people gather and I love having an open space so people can

hang out with me while I cook.

WHAT ARE YOU LOOKING FOR IN A HOME? A vibrant, established neighbourhood is key, as is a house that is not too big and has great potential. I’ve done renovation projects before and I look forward to this again.

IS THERE A PARTICULAR AREA OF THE REGION THAT APPEALS TO YOU? AND IF SO, WHY? I like neighbourhoods in transition and am considering a number of areas, many of which are close to downtown and the heart of Ottawa’s food scene.
