MUST-HAVES A strong team with an affection for and belief in the product is a must!

J

ust as I believe that it takes a village to raise a child, I also know that it takes a tribe to create a well-produced magazine! Since its launch in June of 2004, Ottawa At Home has been run by a passionate group and I am proud to have carried this on since 2009. Many current team members have been with the magazine from its beginning 10 years ago, which is a fine tribute to their dedication and belief in the product. Throughout the pages of our summer issue we celebrate this first milestone decade and introduce you to the people who made it all happen, starting with founding publisher Caroline Andrews. Our food editor Paula Roy has been with the magazine since 2004 and featured me in an article that ended up on the cover of the spring issue the following year. I am not a foodie, so I’m always relieved when Paula keeps our highly respected food section on top of the capital’s burgeoning food scene. Our current publisher Michael Curran and Terry Tyo, vice-president of sales, hired me. I liked and respected them instantly – a feeling that grows with the years. During my life I’ve found myself in various leadership roles, and I know I’m a better leader than a follower. But, I also know that a good leader is one with the confidence to surround themselves with capable people. I readily admit my weaknesses and am grateful for those on our team who pick up the slack. Creative director Tanya ConnollyHolmes and I hit it off from the start and share a supportive appreciation of our working strengths. Five years and 25 issues later, there has not been a cross word between us! Photographer Mark Holleron and I also became fast friends, and while

They all showcase such a variety of amazing designs and styles.” we may have exchanged a few heated words in the multiple hours and miles we’ve clocked together, the respect is strong. Our journey has involved my acknowledgement that Mark’s images catch the readers’ attention and draw them into the story, and his progress is on recognizing how the words can make or break a feature . . . When I accepted the job of editor-in-chief I made it clear that my technical writing skills were weak. So, Jane Whiting was hired as associate editor and I am always in awe of her ability to take a feature and clean it up, while maintaining the writer’s original voice. Many of our contributors are respected local experts and every writer is committed to showcasing their subjects in the best possible light. As our web editor, my daughter Olivia keeps us young and the proofreader powers of Krystal Kung keep us clean! Mix all this together with a dynamic sales team that keeps us in business, and we have a magazine that is perfectly primed to go into an exciting new decade. Here’s to us!

I am very fortunate to share my ideas and creativity with a talented, witty and energetic team.

t’s hard to believe that it has already been 10 years since we launched Ottawa At Home magazine. It seems like yesterday. It was a dream of mine to launch a magazine focused on food, décor and the amazing people in the city of Ottawa. In the beginning we had a mix of original local content and also partnered with Canadian Living and Style at Home for recipes and beautiful décor ideas. It was a labour of love by several talented team members. I was thrilled when the first issue went to press and we all had realized our dream to bring Ottawa a unique new magazine. I was thrilled when Mike Curran and partners bought Ottawa At Home and the Ottawa Business Journal from TC Media. The products are stellar and I’m happy to see them thrive under a local media company. I’ve had the pleasure of watching the changes and improvements of Ottawa At Home over the past several years. With every single issue, it gets better and better. It has exceptional content, design, writing and photography. I look forward to reading each issue. My lifelong career goal was to work in the magazine industry. Ottawa At Home was my first magazine. It will always have a very special place in my heart. Interestingly, I did fulfil my career goals working in magazines after I left Ottawa. I ended up based in Toronto running all of TC Media magazines. This included Canadian Living, Style at Home, The Hockey News, Canadian Gardening, Elle Canada, TV Guide, Vancouver

t should come as no surprise that Mary Taggart’s new lake house reflects her colourful personality. Yes, she is Ottawa At Home’s editor-in-chief as well as an interior decorator, so it’s twice as much fun to peek inside Mary’s home on Big Rideau Lake to see her bright and breezy décor.

MARY’S TIPS FOR INJECTING COLOUR 3 Play with colour to get to know how you respond to certain shades and tones. Everyone feels colour differently. 3 Start with a base colour and then pull other colours from there. 3 When working with bright, strong hues, remember to ground the space and then inject pops of colour to avoid a riot of too much colour happening in the space. 3 In the cottage, I used an all-white base and then added colour in fairly even hits throughout. So even with powerful pops of colour, the white keeps things under control and provides a clean palette to work from. 3 White needs to be treated like any other colour and must work with your palette. I chose a white with a hint of grey to enhance the contemporary feel of the architecture, while also balancing the strength of the turquoise and hot pink. 3 Never choose a colour for your décor just because it is on trend. Always choose a colour because you like it.

SUNNY DESIGN STATEMENTS Replacing an older cottage that belonged to her parents-in-law was a big deal for Mary and husband Chris, as it held many fond memories of times past. But, she wanted a year-round home that the family could visit anytime — even for lunch!

Mary had a strong input into the structural design, in addition to planning the décor, and worked hard to find the right balance of contemporary elements with a cottage vibe. With influences from her summer home in Maine, she has instilled a breezy

Cape Cod style that flows through the tall windows of the two-storey home which sits right on the lakefront. Yet, she also wanted to introduce some different design ideas to make the décor appealing for both hot, sunny days and cool, snowy visits.

3 Bring in three colours that work with your accent colours so the look is interesting. I used turquoise, pink and yellow as accent colours, along with their complements, for a feel that is fun and looks effortless.

“It had to be cheerful and uplifting, with hits of bright colour to offset the white winter landscape and allwhite interior walls,” says Mary who implemented some novel ideas to bring summer inside. “Every bedroom ceiling is painted in a bold colour – with one in

a coral-tangerine that just brightens you up when you look at it.” A vibrant yellow on the bathroom walls is very sunny and almost calls out for sunglasses. Mary even admits that she was a bit nervous about painting the kitchen cabinets in the turquoise shade of Poolside Blue by SUMMER 2014 ottawaathome.ca 13


Benjamin Moore, which is a favoured decorating hue throughout the home. “I just love that colour,” she says, and she certainly does! There are turquoise touches in all the bedrooms and bathrooms, and treasured family furniture – like the porch table and a lovely old cabinet – has been given new life by going blue. HINTS OF FUN To add textural bursts of colour, the antique dining chairs in the porch were reupholstered in outdoor, floral fabric by Sunbrella. A redyed, vintage-style rug in pink from the Elte’s Second Life collection makes a striking statement in the family room. It contrasts well with the stone fireplace which was salvaged

from the original cottage and rebuilt with a recycled wood beam for the mantle. Mary was careful to incorporate elements from the past into the new home and also reused pine panelling from the cottage in their private porch off the master bedroom. Injecting bold, unexpected touches that make an impact is a distinctive aspect of her decorating style, which she describes as “welcoming with hints of fun.” This is clearly reflected again in the kitchen, where Mary had a beer trough built into the island counter. Think of a long, narrow sink filled with ice where you can park wine bottles and your beer between sips. It’s such a cool idea that is all Mary – stylish with a twist (see cover).

I don’t like anything too predictable, so I tend to use a lot of mismatched furniture. The space needs to look like it has developed over time, like each piece was chosen through the years. WERE THERE ANY SPECIFIC REQUESTS FROM YOUR CLIENTS THAT DICTATED THE LOOK FOR THIS PROJECT? They are tall and requested that I incorporate height into the main bath vanity. During our initial consult I had asked my client what her primary residence was like visually. I really felt it was best to stay clear of anything they had done in their own home so that this space would be a getaway from everyday life. It was decided that this space, unlike their home, was going to be crisp and fresh with warm wood throughout.

looks like the winner! Yet, after stepping inside the bungalow, the secondguessing begins. Here, the surrounding windows not only bring in the outside all year round, they are also fitted with motorized shades that are timed to open and close with the sun for an enhanced sense of outdoor living. Both inside and out, the newly built home showcases the careful thought process from concept to completion. And it was a family affair, with input and plans drawn up by the Lemays’ nephew Julien Lemay, who is

currently an architectural student, as well as many implemented ideas from Dan and Chris themselves. The house is a tribute to the couple, who did their research and came up with innovative and creative ways to incorporate concepts they admired while touring home and design shows in Montreal, Toronto and Ottawa. contemporary space to create harmony, along with touches of slick details that work perfectly together. Walnut is the wood of choice for trim, cabinetry and floors, while cork and leather appear in all the right places. A floating floor in the dining room is leather, as is the dramatic headboard in the master bedroom. The kitchen is a sleek, contemporary combination of grey lacquer and American walnut. They are the only two materials used on cabinetry in the kitchen and the six bathrooms (including powder rooms). Pierre Dromaguet with Potvin Construction worked with the Lemays to execute space for entertaining. He designed the sizable kitchen to include a large pantry equipped with a commercial fridge. “You don’t feel crowded in here – we each have our own space,” says Chris who enjoys the easy entertaining aspect of the home. Since the couple moved in a year ago they have hosted several large gatherings. Dan credits Potvin for implementing many of the interior details, including the trim and posts, which are an integral part of the architectural detailing. A floating ceiling in black walnut that is suspended in the living room with aircraft cables, is a feature that

was designed by Dan and built by his cousin. Ideas came to the Lemays through many sources, including the popular design website Houzz. Chris found the leather headboard in the master bedroom on the site. The meticulous attention to detail carries on from the main-floor living space to the basement, where there is office space, a workout room, entertainment room and a showstopping wine cellar. Dan stocks the luxury 600-bottle unit with recommendations from local wine connoisseur Natalie MacLean. The exterior architecture is a combination of Arriscraft stone from Merkley Supply, wood composite from Spain and PVC cladding. It emphasizes the clean lines that are reflected in the overall contemporary décor inside. Frontto-back landscaping, executed by DX Pools & Landscaping, highlights the overall feeling of a luxury escape. With a grand home on a golf course, the Lemays have the perfect combination of home and away. Dan sums it up nicely when he confesses, with a nod towards the first tee, “I go over there to work on my golf,” and adds with a wave of his hand over his backyard, “and come back here to play. . . ”

imberley Seldon is known for her classic style with a modern twist. The personality-filled interior designer is passionate about her work and is constantly on the go keeping up with client requests throughout North America. The Los Angeles-born, Torontobased designer started her television career with ABC on Ripley’s Believe It or Not! program. When the show was cancelled, she flew to Cancun for a Club Med vacation, where she met her future husband Bob. Looking for a fresh start, she moved to his home city of Toronto and was hired as a CTV journalist. She later enrolled at the International Academy of Design & Technology, and there a star was born! After hosting and producing three television design series, including HGTV’s Design for

Living with Kimberley Seldon, she became a sought-after television personality, a keynote speaker, an expert design guest on Toronto’s Cityline and editor-in-chief of Dabble Magazine. Kimberley has also been a design editor for Style at Home and Chatelaine, as well as being the author of three design books. IS WALLPAPER THE NEW BLACK? BY ANDREW DOWNWARD

R

emember when wallpaper used to be so 1970s? Sadly, I do! Funny, but as I look back it seems as though I spent the first 10 years of my career taking wallpaper off and the last 10 years putting it back up. I first noticed the shift back to wallpaper during my time on Divine Design. Each new episode seemed to introduce another dynamic way to use wallpaper in the home. From bold prints, birch forests, woven grass, wood grain, metallic and botanicals, the use of wallpaper was making a comeback and this trend is still very much alive and well! Are you ready to commit? Typically, wallpaper comes in rolls of 20.5-or 27-inch widths. It’s important to measure out your space before heading out to your local design centre. Remember length x width = area. Each roll will tell you how many square feet it will cover. I always add at least 10 to

20 per cent to this total, since matching patterns often leads to a lot of cutting. Choose your wallpaper wisely! Certain types of wallpaper will give you vastly different visual results. For instance, metallic paper reflects light, which provides a fun way to add a visual backdrop to bold lighting, but may look ridiculous in a sun-filled room. Grass-cloth wallpaper is very soothing and will provide texture and depth to your space, but is often difficult to hang and any glue residue that accidently makes its way onto the paper is almost impossible to get off. If you are planning on hiring the job out, budget an extra 30 to 50 per cent for installation.

WALLPAPER PREP There are two types of wallpaper – prepaste and paste. Pre-pasted paper requires you to soak the paper in water before applying to the walls. Most hardware stores sell a wallpaper tray with a long skinny bar that holds the paper in the water as you pull it through. I personally like to use a one-litre spray pump bottle filled with warm water and soak my paper that way. Whichever method you chose, make sure you fold the ends into the centre, or “book the ends” (paste the side of the paper). This allows the paste to activate and gives you time to apply the paper without it

drying out. If your wallpaper requires you to apply the paste, purchase a heavy-duty wallpaper paste and pour it into a paint tray. Using a paint roller, dip and roll out the paste on the back of the paper as if you are painting it. Take a paintbrush and apply extra paste around the seams so that there is no lifting after the paper dries. Have a spray bottle ready to dampen your walls before you hang the paper. This allows you to move the paper around and keeps the paste moist.

STEP BY STEP Make sure your walls are smooth before hanging the paper, as even the slightest bump will cause big problems. Sand your walls first. Measure the width of the paper. From the first corner, measure out the width of the paper and subtract by half an inch. Drop a plumb line from that point and snap your straight line. Apply

your paper to the plumb line and work the paper towards the corner using a plastic wallpaper spreader. The overlap at the corner is now ready to cut off. Using a large putty knife, push it into the corner and with a clean, sharp box cutter knife cut along the edge. This will give you a clean cut and the paper will not pull. Using the putty knife, cut along the edge. With your first piece of paper in place and completely straight, you can now line up your pattern, cut your next piece and apply it using the method described above. Take your time and be patient. Clean up any excess glue from the top of your paper as you go. Working with a partner will make the process smoother.

hey were movers and shakers when they first appeared on the cover of our magazine, and they’re still movers and shakers today. Catherine Marion, Carrie Irvine, Kathie Donovan and Janet Podleski were all featured in Ottawa At Home magazine in its early years and they exemplify some of Ottawa’s amazing local talent. Here’s a snapshot of where they were when they were our OAH cover girls, what they’ve been up to since then (Q1), their thoughts on our growing city (Q2), and their hopes for the future (Q3).

decided to go back to school to be a personal trainer.

Q2: I love how our city is growing. I remember, way back before I’d started on The Mom Show, I did a voice-over for an LRT (light rail transit) promo and they were just starting to push the idea. It was like this little seed of any idea they were hoping to do one day, and now it’s happening! And I love the new Ottawa Convention Centre. It does justice to Ottawa’s beauty.

Q3: Somehow, I’d like to find a way to marry my passion for television and fitness. But, if television isn’t something I can do here in Ottawa, then coaching and inspiring people to reach their goals keeps me just as happy. But you know, I was a teacher, then I was a stay-at-home mom for nine years, then somehow I landed on television. I say to myself that if something so out-of-the box can happen to someone like me, then who knows what the next 10 years have in store?

three years all over North America. Honestly, we are so lucky here in Ottawa. I don’t think I realized it until I was on the road so much. I think it’s growing, it’s getting there, and I love supporting things like Ottawa Fashion Week. I feel there are people in this city who are really trying to make things happen on the fashion scene.

Q3: If you love fashion and you love design, it translates into everything in your life, so I want to continue marrying those things together with marketing. I really can’t imagine doing anything outside of that. I’m passionate about it. I love building things. I love creating something and being inspired by it – turning nothing into something. So, I imagine and hope that will continue.

CARRIE IRVINE

CATHERINE MARION September 2005 was a significant turning point in Catherine Marion’s career. She had just left Rogers’ Daytime Ottawa show and was about to start the first of five seasons as cohost of Life Network’s The Mom Show. She was also the proud (and busy) mom of four kids under 10 years old.

Q1: I now have four teenagers — 18, 16, and the twins are 14 – so I’m exponentially busier. Business-wise, The Mom Show opened so many doors for me. I’m a regular on The Marilyn Denis Show, which is such a treat, and Derick Fage over at Daytime Ottawa has invited me back a few times as well. The big news is that I really fell in love with fitness and coaching and

In September 2006, Carrie Irvine was on our cover as the proud owner of the home décor destination, Laura’s Corner. As a central point of the town of Navan, Laura’s Corner drew clientele from around the region and beyond, a testimony to Carrie’s great design sense.

Q1: I was in corporate marketing before opening the store and that was my passion, so it just seemed right to combine that and my experience as an entrepreneur to help other businesses. So when we sold the store in 2008, I started my own company called Blackbird Communications. I’ve also worked with Karen McClintock, a designer from Ottawa, and that’s taken me to the Oscars, the Gemini Awards, and the Toronto International Film Festival. I also have a new role coming up, as I just accepted a position as marketing director at St. Laurent Shopping Centre.

teaching a course called the Course in Happiness. My mission now is really to help people do more, have more and be more in their lives.

Q2: The thing that stands out for me is the amazing restaurants. I felt Ottawa was always on the map, but in a very quiet way. But now, there’s so much more to access. It’s just fantastic – these world-class, worldrenowned chefs calling Ottawa home. This is just how we roll now. I think we’ve become quite sophisticated.

Q3: That’s a difficult question to answer because I’m following a path now that I don’t see that far along. I hope there will be more of what I want: more abundance, more joy, more peace and more beauty for everyone. My mission is to share my message with as many people as possible. If I’m blessed to be alive, I’ll be doing whatever I can to make a difference.

Q3: I’m finally going to start my own holistic wellness practice called Imagine Health with Janet Podleski. I combine holistic nutrition with advanced energy medicine. I hope I’ll still be doing television appearances with my sister and speaking engagements as well. Do I have another cookbook in me? Gosh, who knows? You just have to put one foot in front of the other and go where your passion leads.

JANET PODLESKI When Janet Podleski was on our June 2005 cover, she and her sister Greta Podleski were well-known for their best-selling, low-fat recipe books Loonyspoons and Crazy Plates. They had just written their third book Eat, Shrink & Be Merry! and were about to do a TV pilot for the Food Network.

KATHIE DONOVAN In November 2006, Kathie Donovan was a well-known face in the Ottawa area as co-host of CTV’s show Regional Contact. We visited her in her beautiful home in the Gatineau Hills, to feature her life and style.

Q1: During my last two years at CTV I’d been working on a secret passion. I’d always wanted to write a book and I’d connected with some ideas that I wanted to pursue about the Law of Attraction – the idea that what we focus on expands in our lives. I realized there was a lot that I could share with people. So, when I left CTV Ottawa in 2012, I put my head down, finished my book, and began

up being our third No. 1 bestseller. And in 2011, we launched Loonyspoons Collection, which is our favourite book by a lot. That one was successful beyond our wildest dreams, going to No. 1 as well. We filmed three seasons of our Food Network show and now it’s in reruns. And we recently filmed eight webisodes for YouTube called Health Nuts with Janet and Greta. We’ll see if that ends up becoming a television show too.

Q2: Ottawa has always embraced natural health. There are great vegetarian and raw food restaurants now. And people are becoming even more receptive to natural health. I find that more and more people are adopting natural strategies and SUMMER 2014 ottawaathome.ca 35

T

he physical power and majestic beauty of horses are well-known characteristics. But there is less awareness of how horses can also help people who are living with a wide range of disabilities, mental health and behavioural needs. Various forms of equine assisted therapy for adults and children have proved to provide physical, emotional and psychological benefits. And many programs are available right here in the Ottawa area. When Marianne was introduced to Tranquil Acres, a therapeutic equestrian centre in Vars, the primary focus was on her 16 year-old autistic son Adrian. Dealing with anxiety issues of her own, she was scared of horses with no desire to ride. Yet after a year of interacting with a big, strong animal on the ground, Marianne noticed an improvement in her ability to assert boundaries and was less fearful to the point where she is now learning to ride Dory, a Pinto mare that she has bonded with. Marianne’s husband also enjoys going to the barn to groom horses, and Adrian visits a few times a week for his Equine Assisted Psychotherapy sessions with his favourite horse Munroe. Designed by the Equine Assisted Growth and Learning Association (EAGALA), this program involves client and horse interaction in a nonriding situation, with the 36 ottawaathome.ca SUMMER 2014

collaboration of a mental health therapist and horse professional who work together to observe and identify treatment goals. During these sessions, Marianne has seen some interesting connections in her son’s non-verbal communication with Munroe. “Once, Adrian was having a really rough week and when he came to see Munroe, the horse started running everywhere and being defiant. We didn’t know what was happening, until we realised that the behaviour was coming from my son – because that was how he was feeling.” Ryan Theriault, a certified equine specialist who owns and operates Tranquil Acres, noted that when Adrian acknowledged and released the emotion he was holding on to, the horse’s behaviour changed dramatically and he stood still. “Horses are very honest. They become a natural bio-feedback machine –

communicating back the information of moods and behaviour.When they are free to move away or towards a person, the last thing they want to do is be near somebody they don’t trust or feel safe around. They can sense a good or bad intention – and have a strong flight reaction.” With his seven horses and ponies, including a miniature horse and donkey, Ryan started offering equine assisted therapy three years ago. He works with about 200 clients to help them experience the transformative power of horses as teachers and healers in coping with everything from depression and post traumatic stress disorder to relationship issues, anger or grief. Some of his clients are referred by doctors or local hospitals; some by word of mouth or through his website. Most of them do not ride, but come to participate in clientdirected equine sessions and workshops in a safe environment.

“As facilitators practising the EAGALA model, we ask clients how they are interpreting the horse’s behaviour – what is

important or meaningful to them,” says Ryan. “We work on body energy and may have multiple horses in a session, mixing small with large, that can be used as metaphors by the client in a positive or negative way.” He explains that the horses may represent a family or group dynamic, individuals, or something the client is afraid of. They may represent a struggle they are experiencing, an addiction or drug. For some clients like Marianne, the therapeutic element is about facing and overcoming her fears; an accomplishment that she can apply to everyday life. She believes that the difference it makes to Adrian is in how he relates his difficulties to what Munroe is feeling and finding similar ways to ground himself. As an example, Ryan refers to an occasion when Munroe was running back and forth, swinging suddenly from left to right. “Adrian commented that sometimes he felt that way too – quickly changing direction for no obvious reason.” He adds that no horsemanship skills are necessary for a person to experience the strong bond and trust that can form between them and a 1,000 pound animal. D

elaney Dunlop is a cheerful and practical young woman. The 24 year-old Ottawa native, who is a graduate of Carleton University with a degree in communications and sociology, plays hockey and she’s an active community volunteer. She was also born with cerebral palsy and lives every day with physical challenges that see her use a wheelchair for most of her mobility needs. But you certainly won’t hear Delaney complain about that. Despite having faced discrimination and adversity because of those physical challenges, she takes a resolutely positive approach to life. She credits that to her experiences at Camp Merrywood which is a summer camp in the Rideau Lakes region run by Easter Seals, an organization that provides programs to help kids who are living with physical disabilities. “I became involved with Easter Seals when I was two,” recalls Delaney who started family camp at age

three with her twin sister Ashley and their mom – a single parent. “It gave my mom a chance to be with other parents who had kids with physical disabilities, and it gave my sister a chance to play while I was going to camp activities.” Delaney continued at family camp until she was seven, when she began attending Camp Merrywood on her own. It’s a time she remembers as “some of the best years of my childhood.” Delaney freely admits that life with a disability can be difficult. “Often people associate a physical disability with mental or educational challenges,” she says, referring to people who talk slowly or loudly to her on the assumption that the presence of a wheelchair suggests her cognitive abilities are affected too. At Camp Merrywood, Delaney encountered a level of respect that she didn’t find elsewhere and her confidence grew. It also provided her with a sense of equality, and she learned not to be defined by

dominant ideas about disabilities. “Normally, a disabled person wouldn’t be able to go kayaking, rock climbing or climb a tree – someone would say it’s too dangerous – but at Camp Merrywood there were no barriers and there was always a solution,” says Delaney who always felt included and involved. “Camp Merrywood gives a child with physical disabilities a chance

to dream bigger for themselves.” Her camp experience taught her never to settle for second best. “I learned to expect more for myself and not just what others deem possible or acceptable,” she concludes, adding “I learned to be who I want to be.” To help send a kid to camp, please visit www. eastersealscamps.org.

PREP TIME: 15 minutes SERVES: 4 BBQ TIME: 8-10 minutes Serve on buns or in lettuce leaves INGREDIENTS: 1 lb (454g) lean ground beef 2 tbsp (30 mL) taco seasoning Small red onion, cut into rings Tomato slices Lettuce Pickled jalapeño peppers sliced hamburger buns AVOCADO AIOLI: 1/4 cup (50 mL) mayonnaise 1/2 avocado, mashed 1 tbsp (15 mL) freshly squeezed lemon juice 1 tsp (5 mL) minced garlic MEHTOD: In medium bowl combine beef and taco seasoning. Divide mixture into 4 and form into patties. Refrigerate until ready to BBQ. In small bowl combine mayonnaise, avocado, lemon juice and garlic. Purée to desired smoothness using hand immersion blender or fork. Refrigerate until serving time. Preheat BBQ to 400F. Grill burgers for 4 minutes each side or until internal temperature reaches minimum 165F. Serve on bun or lettuce leaves. Garnish with onions, tomatoes, lettuce, jalapeños and avocado aioli. Garnish with tomato slices and jalapeño.

KOREY’S TIPS Add 1/3 cup (80 mL) corn niblets to beef mixture.

hen it comes to serving up more delicious meals, the best place to start is to shop where the chefs do. Most of Ottawa’s great restaurants have the freshest ingredients arriving daily on their doorsteps, and now home cooks can enjoy the same service thanks to Slipacoff’s Premium Meats. The concept of terroir is real when it comes to meat. Ontario lamb is among the best in the world, for example, so we do work with local farmers for that. And while there are some great local beef farmers in this area, the majority of the best beef in Canada comes from Alberta. Our goal is to consistently source out the freshest, most flavourful products possible.

AMANDA, WHAT ARE YOUR TIPS ON COOKING FOR A CROWD? I always like to make sure I am working with similar sized pieces of meat. With our steaks, chicken breasts, pork chops, burgers and other products, they are all sold by weight

and individually cryovac packaged so you know you are getting consistent portions. This not only makes it easier to cook them, they also look nicer on the serving plates.

DO YOU GET MANY PEOPLE WHO LIKE TO STOCK UP FOR SUMMER ENTERTAINING? It’s funny, we do have people who will order in a couple of dozen steaks, for example, knowing they can just freeze them and then cook a few at a time as needed. But because there’s no minimum order, we also have a lot of customers who really enjoy working with fresh product so they prefer to just order once or twice and have it delivered in insulated packaging to their

home or cottage at their convenience.

WE’RE HEARING MORE THESE DAYS ABOUT DRY-AGED BEEF – WHY IS THIS IMPORTANT? Just as with wine or cheese, dry-aging transforms and concentrates the flavour of beef, giving it an unusual, more intense taste that can’t be replicated any other way. Most supermarket beef is wetaged for seven to 14 days, whereas our dry-aged beef hangs in a temperature and humidity controlled environment for 60 to 70 days – allowing moisture to evaporate and enzymes to break down the connective tissue, making the meat more tender and giving it a

deeper, richer flavour. Dryaged beef is now a huge restaurant trend, so it’s fun to be able to offer home cooks the same opportunity to work with these tastier cuts.

BITE BURGER HOUSE > One of Ottawa’s newest burger joints, Bite Burger House has been turning heads in the ByWard Market thanks to its bodacious burgers and creative cocktails, including booze-spiked milkshakes. Beef patties come in two sizes; pork belly, herbed chicken and vegetarian beet and black bean patties are options, with housemade condiments as tasty accompaniments. Whatever your burger selection, be sure to order a side of scrumptious truffle fries. Planning a picnic this summer? Bite’s Burgers are also available for takeout. < VERA’S BURGER SHACK Vancouver’s favourite burger chain – started over 30 years ago as a beach concession – is also a hit in the Nation’s Capital. Nestled inside The Butchery in Bell’s Corners, Vera’s may be small, but it dishes up big flavour. Freshly made beef patties are grilled up while you wait then garnished with your selections from a wide range of toppings, including delicious Vera’s sauce. Crispy, twice-cooked fries are fantastic; chicken burgers and hotdogs are also available. You can also pick up Vera’s house-made patties to grill up at home. BURGERS N’ FRIES FOREVER > One of Centretown’s most popular burger spots is Burgers n’ Fries Forever, affectionately known as BFF. From halal ground beef to egg, nine grain and gluten free buns, it’s very customer-focused. Handcrafted burger balls are cooked in butter then smashed into patty shapes; these are served with both regular and premium toppings. There’s a build your own burger option, along with hot, crispy hand-cut regular and sweet potato fries and a generous selection of other tasty sides and drinks. < DICK’S DRIVE-IN AND DAIRY DIP Dick’s charcoal-grilled burgers are happily reminiscent of a bygone era. HINTONBURGER > From its humble beginnings in small shack to its present home in a repurposed KFC location, Hintonburger has developed a loyal following. Its freshly-made burgers are worth the wait, slathered in delicious toppings including signature barbeque sauce. The menu includes thick milkshakes, Harvey & Vern’s soda, chicken and veggie burgers as well as hot dogs, chili, pogos, fresh-cut fries, onion rings and poutine, but it’s the burgers – solo or in combo meals – that keep drawing rave reviews.
