“I look for a scene that exemplifies certain aspects of a location. When in Shelter Island, boats are iconic shots, as is surfing to Montauk. I will travel to a location at the right time that casts the perfect light. I can visit the same place several times, but end up with a

different scene and point of view every time I visit. “The beach areas that I go to involve a hike. I venture to destinations that are not easily accessible by roads. The more untraveled, the better; I like the feel of being off the beaten path. I have trailed over the walking

dunes in Amagansett and hiked to Hither Hills State Park on the eastern tip of Montauk. It’s those back road shots that make the journey worthwhile. That is where you find the landscapes and views that people are surprised to know exist.

“I’m always on the lookout for quality visuals. I took photojournalism classes in college, and since then, I have always had a camera with me. As a reporter I cover energy, commercial and recreational fisheries, and the Native American affairs on Long Island.

Occasionally my profession and pastime do collide, but I tend to keep photography as a separate personal passion. I don’t overly plan. The best shots occur by happenstance. I grab my camera, put my dog in the car, and hit the road. I never know what I will find.”

LETTER From THE EDITor-IN-CHIEF

When it comes to the world’s most renowned chefs, Eric Ripert’s name is always among those with the greatest accolades. It’s been a big year for Mr. Ripert, with the opening of Privé, a private dining space located next to his famed New York City restaurant Le Bernardin, which he co-owns, and the publication of his memoir, 32 Yolks: From My Mother’s Table to Working the Line. In it he reveals a much darker past than even I was aware of, and we have been friends for many years. It is a story of heartbreak and abuse in which he bravely chronicles his culinary journey, from the mistreatment he suffered as a child to becoming the Michelin-starred chef he is today. Ripert shares with Hamptons magazine further insight into his book and his early life, long before all of the honors he receives today. Hamptonites will be able to meet Ripert under the tents at the East

Hampton Library’s Authors Night on Saturday, August 13, where he will be signing copies of his memoir. Along with Ripert, in this issue we give you profiles of four of the other authors who will be under the tents—William Norwich, Ally Hilfiger, Jennifer Keishin Armstrong, and Michael Gross— whose books tackle subjects ranging from Seinfeld to the underbelly of the world of fashion photography. I encourage you to visit AuthorsNight.org to see the various ticketing options and possibly purchase a ticket to join us at our Hamptons magazine private dinner with these five authors. All of the proceeds support the library and its fantastic year-round programming. From Authors Night to Guild Hall’s Summer Gala, we give you a first look at all of the weekend’s hottest tickets. Enjoy the weekend!

LETTER FROM THE PUBLISHER

from top: With Dr. Stephen Greenberg and great partner and friend Andrea Correale celebrating with cover star Charlotte Ronson; with the CEO of Douglas Elliman, Dottie Herman, and the chairman of Douglas Elliman, Howard Lorber, celebrating summer at Campbell Stables in Bridgehampton.

Don’t you always feel like summer is coming to its exciting close when those tents go up at Sayre Park in preparation for the Hampton Classic horse show? This is one of the largest show-jumping contests in the US. Held in Bridgehampton over the week leading up to Labor Day, the Hampton Classic is also one of the biggest and most elegant events in our Hamptons social scene and signals the grand finale of high season. Meanwhile, this weekend’s Authors Night continues to be one of my favorite events of summer. First, there is an amazing gathering near the library in East Hampton Village, with all the participating authors seated with their books, available to sign, and with proceeds going to fund the library. Next, many of the authors break off with hosts into about 20 private dinners. With our editor-at-large, Michael Braverman, we have the best dinner planned, featuring five fantastic authors who will be welcomed into Michael’s magnificent home,

whose architectural centerpiece is a spectacular two-story library. This year our cover star and lead author is the iconic Le Bernardin chef Eric Ripert, whose memoir, 32 Yolks, is a New York Times best seller and a great look into his life. In addition, this weekend we celebrate Evelyn Alexander Wildlife Rescue Center and Guild Hall’s spectacular Summer Gala, which will offer an exclusive preview of the exhibition “Aspects of Minimalism,” followed by cocktails and dinner at a private home. Enjoy this busy East End weekend filled with art and culture as we slide into the final weeks of summer leading up to Labor Day and the Hampton Classic Grand Prix Sunday, and I will see you in town!

amy zavatto

rachel felder

Shelter Island native Amy Zavatto has penned multiple books about food, wine, and spirits, including Forager’s Cocktails: Botanical Mixology with Fresh, Natural Ingredients. She has also contributed to Time Out New York and Food & Wine, among other publications. In “Rosé 2.0,” Zavatto explores the massive rosé boom in the Hamptons. What is your drink of choice in the summer? I’m big on tall drinks—a little bit of spirit, simple syrup, some muddled fresh herbs or fruit, a little something fizzy, be it club soda or sparkling wine. And I definitely gravitate toward gin. All those botanicals are so nice in the warm weather. What is your favorite spot for a drink in the Hamptons? The hammock at our weekend place in Greenport in my quiet little backyard or the subterranean bar at Brix & Rye down the street. Owner Evan Bucholz is the best drink maker on the East End, hands down.

Rachel Felder is a New York-based writer whose work has appeared in many outlets, including The New York Times and Travel + Leisure. Felder is also the author of the new book Insider Brooklyn: A Curated Guide to New York City’s Most Stylish Borough. Her fourth book, Insider London: A Curated Guide to the Most Stylish Shops, Restaurants, and Cultural Experiences, comes out next year. In this issue of Hamptons, Felder uncovers the hidden treasures at The Chequit hotel’s chic Salt Supply boutique. Where do you shop for home goods in the Hamptons? I love expertly curated spots like MONC XIII and Ruby Beets, and also rummaging for finds at yard sales or Marika’s Antiques. What is the Hamptons to you? It’s all about beauty: the gorgeous natural setting, relaxed time with family and friends, delicious local produce and seafood, and inviting restaurants. It’s just a magical place.

tanya malott

Award-winning photographer Melanie Dunea travels the globe for clients, including Condé Nast Traveler, Food Network, Vanity Fair, and more. Dunea shot internationally renowned chef Eric Ripert for this issue’s cover story. You’ve photographed many of the world’s greatest chefs. What was special about this shoot with Eric Ripert? I’ve shot Eric many times. Each time, I pretend it’s our first photo shoot and try to see him as he is in the moment. It was heaven to be in such a gorgeous location with amazing light—it made my life very easy! What was your inspiration? I wanted to tell the story of Eric’s day off, so we photographed him as his day unfolded. I scouted a few locations before, but the day was quite impromptu, fun, and rosé-filled.

Tanya Malott travels the world shooting portraits of leaders in the arts, business, and society. Her photographs have been featured in Martha Stewart Weddings, New York magazine, Vogue, and many other publications. For this issue’s “Social Studies” column, Malott shot S|2 Gallery Director Nicholas Cinque. What do you love most about what you do? The greatest part is the people I get to meet through my work, and the way I can capture them and transmit the energy of who they are. I love that I never know whom I will meet next or how that relationship might blossom and evolve. Any plans for the rest of the summer? I do a lot of family portraits, but I will also be traveling to work on my book of portraits and stories.

As the director of S|2, the Sotheby’s gallery founded in 2011 as the private sales arm of its contemporary-art department, 26-year-old Nicholas Cinque has helped to organize a series of Saturday-evening events at the Madoo Conservancy in Sagaponack. Through August 27, the gardens are the enchanting backdrop for private receptions focusing on various Sotheby’s departments, and Cinque is in charge of ensuring that there is more to admire than ginkgos and boxwoods. He also recently brought S|2 to Montauk, mounting “Fish People,” a July exhibition of paintings by Joel Mesler at the Surf Lodge. “Joel’s idea for the show was inspired by the seasonal migration of New Yorkers to vacation towns on the water,” explains Cinque, “a return to the sea from which we came.” His own migration was a bit more circuitous. Born and raised in Amagansett, Cinque attended the Ross School, where one memorable field trip took him to the Shelter Island studio of John Chamberlain. “There I was, in seventh grade, playing with tin îî

As a student at Emory University in Atlanta, Cinque created a Web-based brokerage for the burgeoning category of street art and parlayed the project into internships at top galleries, including Gagosian and Lehmann Maupin, before joining Sotheby’s in 2014. “Unlike a traditional gallery that is obligated to show its stable of artists,” he says, “S|2 works on a project basis, presenting artists and exhibitions that we find to be relevant.” (In September, the gallery will show the densely layered “jungle” paintings of London-based artist Henry

He also encourages people to seek out East End art in its natural habitat: “It’s just cool to drive down Ocean Road and see that giant Richard Serra”— Sidewinder (1999), on the property of Leonard Riggio— “or glimpse a Robert Indiana LOVE sculpture beyond a privet hedge. That’s what’s great about the Hamptons: You can stumble upon things that you wouldn’t ordinarily get to see.” The Madoo Conservancy, 618 Sagg Main St., Sagaponack, 537-8200; madoo.org

“To have a prosecco ThaT doesn’T have sugar in iT is really exciTing.”— christie brinkley 52  hamptons-magazine.com

Iconic supermodel Christie Brinkley graced over 500 magazine covers, before later transitioning her career to author, entrepreneur, mother, philanthropist, and actress. Now, at age 62, she is launching Bellissima, an exclusive line of organic proseccos. The three varieties—Bellissima Zero Sugar sparkling wine, Bellissima Sparkling Rosé, and Bellissima DOC Brut—are all made in Treviso, Italy, near Venice, from organic grapes. “Our vineyard has never had chemicals on it,” says Brinkley. “For as long as it’s existed, it’s been organic.” Bellissima Sparkling Rosé, made from Pinot Grigio grapes, is fresh and fruity, with hints of strawberry and grapefruit. The Brut, a classic prosecco, is aromatic and dry, with scents of green apple and freshly baked bread. The Zero Sugar is also a brut wine with the sugars removed naturally through double fermentation. “To be able to have a prosecco that doesn’t have the villain sugar in it is really exciting,” says Brinkley, who also designed the labels with the image of Venus, which represents beauty. “If you’re dieting and you still want to have that little glass to celebrate with friends, then you have my Zero, and you’ll love the flavor and you’ll love the little giggly thing that you get.” Also on the horizon for the mom of three—she’s about to become an empty-nester, with her youngest, daughter Sailor, starting college in the fall. But after writing a beauty book, Timeless Beauty: Over 100 Tips, Secrets and Shortcuts to Looking Great, and launching a line of beauty products, Authentic Skin, plus a new line of hair extensions, the Hair2Wear Christie Brinkley Collection, about to debut, she has much to keep her busy. Says Brinkley, “I’m focused right now on launching my businesses. This year is really all about kicking my prospects into high gear.” bellissimaprosecco.com

At Mulford Farm, renowned event designer David Beahm will translate the exhibition into the overall theme of the evening. “The focus is going to be on capitalizing on the minimalist show and trying to bring that to life through the event itself,” says Howard. “It really is creating an experience in the environment itself that’s highly unique.” The evening will honor Neda Young, a philanthropist, art collector, and longtime supporter of East End artists. Says Howard. “She is an amazing woman. She is beloved by all and just tremendously supportive to our community.” 158 Main St., East Hampton, 324-0806; guildhall.org

moving to main street On the heels Of his success at art sOuthamptOn, Stephan eSzler is back On the east end with a new residency On main street. By Kaitlynn Miller

Following a successful run at Art Southampton, Stephan Keszler, founder and owner of the gallery bearing his name, has returned to the East End with a new temporary outpost. The space is “a prime location and perfectly built for a gallery,” he says. “There are very long, straight walls and 15-foot-high ceilings—it’s like a loft space.”

Keszler describes the gallery’s design as “minimalistic” and says the works he’s showing reflect the type of art he would want to hang in his own home. They include familiar favorites from his prior galleries—such as original works by Banksy, Marilyn Monroe images by Russell Young, and supermodel photographs by Marco Glaviano—but

the new location also boasts a retail element and a partnership with renowned photographer Michael Dweck that brings things full circle. When Keszler originally opened his gallery in 2007, Dweck’s “Montauk” was its first solo exhibit, and now the gallerist is excited to be displaying Dweck’s iconic work again. Keszler and the

photographer have also teamed up to produce a portfolio of his most famous images—10 shots capturing the lifestyle of the East End through a youthful eye—available exclusively at the gallery. Says Keszler, “This is a fantastic continuation of the success I’ve had with Michael.” 44 Main St., Southampton, 834-7779; keszlergallery.com

When some of the best fish in the world is caught in nearby waters on a daily basis, ordering seafood is de rigueur out East. But sometimes all you crave, even on a warm summer night, is a juicy burger. Enter the Sag Harbor favorite LT Burger. Chef Laurent Tourondel has a decorated career in classical French cooking, but he opened this family-friendly neighborhood eatery and gave it a much more relaxed atmosphere than in the Michelin-starred restaurants he’s cooked at around the world. The white tile-lined walls surround a room with wooden tabletops and a slightly retro feel that pays homage to the all-American burger that Tourondel has

mastered over the years. The LT Backyard burger epitomizes the fun, approachable vibe here. It’s a hefty eight ounces of certified Angus beef that’s perfectly cooked with grilled hickorysmoked bacon, New York State cheddar, and a special LT sauce. Perhaps just as popular as the burgers are the creative shakes, such as French toast- and s’moresinspired versions that can be made with alcohol. “The Hamptons is known as a summer destination for people traveling from the city and elsewhere to have fun and party,” Tourondel says. “I wanted to keep the same fun atmosphere in my restaurant.” 62 Main St., Sag Harbor, 899-4646; ltburger.com

AT YOUR SERVICE ROBBINS WOLFE COFOUNDER CHRIS ROBBINS DISHES ON WHAT IT TAKES TO CATER A FULL SPECTRUM OF HAMPTONS SUMMER EVENTS.

CLOCKWISE FROM ABOVE: Colorful deconstructed summer crudités; the Grenville Baker Boys & Girls Club gala in Locust Valley; wok-seared noodles with slivered Asian vegetables; the East Woods School gala in Oyster Bay.

How did you get your start in the industry? Senior year of high school, a junior said, “Would you like to cater a party in Rye Beach, New Hampshire?” Rye Beach is for Boston what the Hamptons is for New York. I worked this first party and knew from that moment forward that I was going to be a caterer. What’s your favorite Hamptons venue? The Bridgehampton Tennis & Surf Club—I am the exclusive caterer there. Wölffer Estate and Channing Daughters also offer a nice backdrop. What are some of your favorite events? Ken Wolfe, my business partner, will agree: any collaborative effort with a celebrity chef. Their recipes aren’t necessarily [intended] for volume; we have a kitchen crew that is capable of adapting small and large and having it be of equally high quality. Having my chef, Chris Tonti, be able to [convert] recipes that are geared to smaller quantities is very important. Favorite thing about the Hamptons? It gives me the opportunity to love what I do. I like the ability to [transition] from a big cocktail party to going into a smaller private home dinner and then moving on to a buffet where everybody’s already dancing. You get to see the entire food spectrum in one evening in entirely different environments. 25 Waterside Plz., Bldg. 25, NYC, 537-1926; robbinswolfe.com

scene food for thought The menu takes a creative approach to the classic cuisines of the Riviera, Greece, and the Mediterranean.

“The locals are so genuinely pleased ThaT we have opened someThing of This caliber in The markeTplace.” — greg grossman Oreya chef Greg Grossman.

Homegrown east end local GreG Grossman comes home, bringing a taste of the mediterranean to southampton with his first own venture, oreya.

You’ve had multiple jobs as a chef out East. How does it feel to open your own place? It is an incredible feeling to finally own my first restaurant in the Hamptons. We were met with a huge amount of hardships this summer, but now that we are open, I feel that we are really doing something special. There is no better feeling than having the friends and family [I grew up

62  hamptons-magazine.com

with] come in for dinner and tell me how much they loved everything, along with the locals who are so genuinely pleased that we have opened something of this caliber in the marketplace. What are some of your signature dishes? The concept for the restaurant began as we tried to reinvent classic “Riviera” fare… The large plates bridge the gap between the à la carte

seafood offerings of storied Greek restaurants such as Milos and Avra, while being more approachable and fun than those of a fine-dining restaurant. Our tempura figs with stracciatella cheese, fig jam, basil, and grilled bread is one of our best sellers, along with our crudos (the hamachi carpaccio is my personal favorite), and crispy octopus with kumquat, minted sorrel granita, and

pistachio oil. Where do you love to shop for ingredients out East? Round Swamp Farm in East Hampton; I still have memories of walking into the walk-in refrigerator produce section with my father and shopping every day. I love Breadzilla in Wainscott and will find any excuse I can to get a simple shrimp sandwich on squishy bread from there.

Favorite summer cocktail? I’ve been on a Campari kick this summer. We have a great cocktail on our menu called the Tickled Pink, which is Grey Goose, Campari, grapefruit oleo, lemon, grapefruit bitters, and rosemary, topped with soda water. It’s super refreshing. 281 County Road 39A, Southampton, 500-9055; oreyahamptons.com.

It’s been just over a decade since Michelle Farmer opened her first showroom in East Hampton. Ten years later, she has boutiques in Bridgehampton, Palm Beach, and Dorado Beach, a RitzCarlton Reserve in Puerto Rico. “The Hamptons is understated, low-key elegance,” says Farmer. “Palm Beach is ladylike glamour. My style really falls somewhere between the two.” Splitting her time between the Hamptons and South Florida, Farmer captures the essence of luxury resortwear in all its incarnations, including bespoke gowns made in-house. “In a world of mass fashion with no originality, we feel it’s so important to be able to offer this luxury to our clientele,” she says. “We’re moving into a more elegant form of elevated resort, with luscious and unusual fabrics and more refined silhouettes.” In addition to custom creations, Farmer stocks many of the world’s most coveted brands, such as Greek bohemian designer Maria Korovilas, Palm Beach swim brand Flagpole, and clutch line Allison Mitchell îî

Six Ways to Tell Ahead of Time If You’re Selecting the Right Landscaper. 1. Will they complete the job within budget? Marders gives you a firm cost, not a +/-10% or so guesstimate.

2. Will they complete the job on time? Our crews are on our payroll and are trained by us. They remain on your site until the job is finished.

3. Do they provide a written guarantee? Marders gives you a 2-year written guarantee for trees and shrubs which we’ve stood behind for 40 years.

4. Will they get all necessary permits, appear before Town or Village Zoning or review boards, etc.? Do they know local regulations?

5. Will you have to settle for cookie-cutter designs? Most landscapers have a limited variety Photograph by Douglas Young

Island Time Lanai, a new collection celebrating the spirit of the hawaiian island, is now available out east. By Lauren Finney

Lanai Collection, a two-yearold men’s lifestyle brand, comes to Southampton this summer via Santa Monica, California, although (as the name suggests) it gets its inspiration from even farther west. All 1,500 pieces in the pop-up shop have been inspired by Lanai, the least traveled and arguably most tranquil of the Hawaiian islands. That means floral-print blue-on-blue drawstring shorts, striped linen tees, and beach-ready henley sweat-

shirts, all in soft neutrals. “One important element that unites the serene Hawaiian island of Lanai and the stunning town of Southampton is luxury,” says Jackie Chiuchiarelli, the company’s chief creative officer. “Lanai Collection offers a sophisticated, luxurious alternative to more traditional menswear.” She suggests that Hamptonites try the brand’s classic polo—available in seven colors—and the cashmere mélange crew-neck sweaters, which make great layering pieces as summer moves into fall. Founded by David Ellison, the line will also be partnering with Gents for its innovative hats as well as GOA Skincare for its highly concentrated beard oils, face serums, and more. 38 Jobs Lane, Southampton, 732-9793340; lanaicollection.com

FASHIONABLY FIT FOR ACCESSORIES DESIGNER CAROLYN ROWAN,, SUMMER IS BEST SPENT OUTDOORS IN THIS SEASON’S HOTTEST ATHLEISURE WEAR. BY CHRISTINA CLEMENTE

When Carolyn Rowan isn’t designing pieces for her eponymous line of cold-weather vests, shrugs, and outerwear in luxe fabrics like cashmere and leather with Swarovski crystals, she’s keeping active in the Hamptons. “The rest of the year, you’re cooped up,” says Rowan, who, with her husband, Marc, and their children, splits her time between Manhattan and Southampton. “I kayak out

Anything you can do to be outdoors—but covered up—is ideal!” To “cover up,” Rowan heads to Bandier (44 Main St., Southampton, 488-4304; bandier .com) for sneakers and “flexible” activewear, and Letarte (60 Jobs Lane, Southampton, 2045777; letarteswimwear.com) for rashguards to kayak in. “They do cute peace sign ones,” she says.

When Rowan isn’t getting her burn on with trainer and friend Ed Cashin (truthtraining.com), she’s ordering a cappuccino at Sant Ambroeus (20 Main St., Southampton, 283-1233; sant ambroeus.com) in low-key pieces from Zimmermann (27 Newtown Lane, East Hampton, 604-6291; us.zimmermannwear .com) and Xanadu (76 Main St., Sag Harbor, 808-3147). For almost seven decades, Lester’s has been a fixture in New York City and Greenvale, Long Island, for contemporary clothing for fashionable adults and their equally fashionable kids. “Whether for backto-school, camp, a special occasion, or a wardrobe for a

warm-weather winter vacation, they know we cater to their specific needs with fashion-forward, trendsetting style for the entire family,” says Perry Schorr, the company’s president and the son-in-law of Lester’s founders Lester and Lillian Kronfeld. For women and

girls this fall, that means au courant items such as coldshoulder tops, velvet pieces, bomber jackets, camouflage prints, and slides and mules. The stores will also be introducing Komono and Le Specs, two new sunglasses brands favored by celebrities such as Kate Moss

and Olivia Palermo. While Lester’s does carry labels that can outfit the whole family, such as 7 for All Mankind, DL1961, and Levi’s, the stores also focus on niche offerings for discerning shoppers, like shoes from Vans and Converse or tees from LNA and Chaser, as well as

covetable items for moms. Says Jill Oralevich, the company’s divisional merchandise manager, “‘Mommy and me’ really translates to our seeking out top, of-the-moment trends and brands that transcend age.” 90 Northern Blvd., Greenvale, 516-6261161; lesters.com

“I was searching for a simple, solid-colored or striped tunic with long sleeves that I could wear to the village, but I was unable to find it,” explains fashion designer Helen Feid. “Everything I saw was either too see-through or an Indian print. So I decided to create my own.” Tideline Tunics, the brand Feid launched in 2014, has now become a staple for the chic and preppy set and can be found at the Monogram Shop in East Hampton as well as in other resort boutiques in Harbor Island, Lyford Cay, Jupiter Island, and Palm Beach. Feid, a third-generation East Hamptoner who moved out here full time last year, is no stranger to styling beautiful clothes for elegant women.

80  hamptons-magazine.com

She started her career at Harper’s Bazaar and then worked in design for Ralph Lauren Women’s Collection and J.Crew. For the first two seasons, Tideline featured an array of stripes and checks, while this summer’s collection consists of solid tunics in navy, white, shell pink, and pale blue. The two different styles are the Tom (named for childhood friend and now well-known decorator Tom Scheerer), which has a collar, and the Christina (named for another friend), which is mandarin style. “The most exciting thing is seeing people wearing the tunics,” says Feid. “That’s really fun.” Monogram Shop, 11 Newtown Lane, East Hampton, 329-3379; tidelinetunics.com

Sisters Jessica Schulz and Nicole Tracy were frustrated by the lack of flattering swimwear for women, so they decided to create their own, founding Kore Swim in 2011. Drawing inspiration from their Southern California home base, the line reflects the sisters’ talents: Tracy cut her teeth at Google, while Schulz studied apparel design at the Rhode Island School of Design. While at RISD,

Schulz traveled to Italy with fellow student and illustrator Joana Avillez. Now the three have joined forces to create the new Joana Avillez x Kore Swim collection. “Working with Joana was awesome and very easy, since she knew exactly what we were looking for,” says Schulz. “Together we decided on a few motif ideas to incorporate into the print, and then she had the

freedom to create something that would translate well into swimwear, as well as encompass her illustrative style.” The result is three swimsuits printed with whimsical illustrations, along with a tote and a beach towel, all ready for a Hamptons summer. The prints feature Italian summer motifs—such as Vespa scooters, flowers, Italianate villas, and sea life—that blend perfectly

with an East End lifestyle. “The late dinners and warm nights of the Hamptons remind me of the nights I spent in Rome,” says Schulz. “The [print] that screams summer most to me is the girl walking and eating the Popsicle. That brings back both Italian and Hamptons memories for me.” Sunset Beach, 35 Shore Road, Shelter Island Heights, 749-2001; korewear.com

Tranquil Toque It’s easy to imagine that as the chef at one of the world’s most renowned restaurants, Le Bernardin in NYC; the host of a PBS series, Avec Eric; and now the author of a memoir, 32 Yolks, which he’s presenting at Authors Night, Eric Ripert would be a live wire. But as this exclusive interview reveals, he’s a calm, collected talent, and as candid as an open book.

by ChuCk AnsbAChEr photography by MElAniE DunEA

While climbing a mountain in southern France, eric ripert had an epiphany. This moment occurs about halfway through his new memoir, 32 Yolks: From My Mother’s Table to Working the Line. He’s 16 years old. To the reader, it would seem that up to this point Ripert has been in training since birth to become a world-famous chef. He’s dined at France’s Michelin-starred restaurants with his mother, Monique; spent endless days glued to the counter at Chez Jacques, watching his first mentor—a local toque named (what else?) Jacques—whip up countless soufflés, baba au rhum, and his absolute favorite, mousse au chocolat; and now he has abandoned academic pursuits, left home, and enrolled in culinary school in Perpignan, a French city not far from the Spanish border. Yet here he is, making his way up Mont Canigou in the Pyrenees with his culinary classmates and his dorm master, Raymond, acting like a total teen. His competitive nature getting the better of him, he’s showing off, gloating, and promising he’s going to beat everyone to the top. But when he does reach the top (first, of course) and everyone has had a

90 hamptons-magazine.com

chance to catch up, Raymond berates him. In Ripert’s selfish haste, a slower classmate has been lost on the mountain. Because Ripert was thinking only of himself, someone else has been hurt. It is at that moment that Ripert sees the fault in his character, and he resolves to be more generous, more compassionate, and more at peace with himself. Decades later, Ripert is a three-starred Michelin chef, a Buddhist, a family man, and a longtime Hamptonite. His particular brand of aplomb defies what most have come to expect from the exacting world of fine dining: He achieves perfection while maintaining humility. How he preserves this balance has been the stuff of food-world legend since Ripert became the chef at Manhattan’s Le Bernardin—one of the best restaurants in the world—in 1994. And now, with 32 Yolks, it also happens to be the stuff of a New York Times best seller. What motivated you to write your new memoir? I wanted to write something that was truly inspirational to people, not just write something about myself. I had to be authentic and say what was

glorious and painful at the same time. The idea was, this is my life, I have nothing to hide. Divorce, sometimes, is a good thing for families. I’m not anti-divorce, but in my case, when my parents divorced it was really painful and devastating. So therefore I said, Why not write about it? Because maybe some people are contemplating the idea, and they should think about the potential consequences. Ultimately, the negative transformed itself into positive, but still, it was a process. You had these moments—with the divorce, your time at boarding school, and the ups and downs with your stepdad—that could have gone a long way to hardening you. But it seems that you’ve softened tremendously since then. What changed along the way? At the end of the day, I found my own path and spirituality and I have a very happy life. Whatever happened in my life previously to today has been positive in the sense that I learned a lot of lessons, and I’m not bitter or nostalgic. I just live in the present and I have a past and I’m sharing it as an inspiration. You look back and you have these figures in your life—your mother, Jacques. How fortunate do you feel that Jacques took you under his wing? I didn’t even realize for a long time that he was my first mentor. For a long time I thought he was the neighbor and a friend, the guy I was eating chocolate mousse with. But he was one of my biggest inspirations and a great mentor of mine. And your mother taking you to Michelinstarred restaurants when you were a child. That’s just not the way most kids grow up. Yeah, I thought every kid lived like that! I had no idea. It almost seems preordained that you would later become a Michelin-starred chef who—somehow—is not a jerk. I try not to be 99.99 percent of the time! And if I am, I apologize. I do, publicly. If it happens, which is extremely rare—I cannot even recall the last time I raised my voice—but if it happens, then I’m sorry about it and I apologize. In the kitchen, there’s the constant demand of perfection. How do you let people come up against their own faults, like your dorm master Raymond did with you, and let them work through that? It’s a process. Obviously, nobody’s born with all the qualities—if we’re talking about the kitchen, surely—nobody’s born with knife skills; nobody’s born with the knowledge of how to cook a salmon perfectly. It’s a process. What we try to do is mentor the cooks from a very early stage when they’re with us in the kitchen. We try to inspire them, knowing that along the way they’re going to make a lot of mistakes. We have a high degree of tolerance. We have a certain discipline, of course, and we have to meet these high standards, but we have a big team, and the thing about a big team that’s nice is to allow us to train the staff well and be consistent. Therefore, when someone cannot perform because he’s making too many mistakes, or for some reason is stressed, we move him out of the kitchen for a while and we can have someone [else] take the job. Or that person can train longer on certain techniques that he has not mastered. Therefore, we don’t create situations where you are set for failure, in the sense that either way you are going to lose control of yourself or you are going to burn the fish. We set you up for success; it’s a win-win for our own interest, and for your own interest as a cook or other employee.

You’re raising a son. Do you bring any of that thinking into your family life? I don’t think you have a different way of thinking. Not like, you think a certain way at home and then you go to work—I cannot conceive the idea of being different. I try to be a good family member. My role is to be the father and husband, obviously. And I try really hard, as much as I try in the kitchen. And I try to dedicate time for the family as well. It’s very important to me. You say in the book that the most important ingredient in any dish is love. How do you maintain that spirit at Le Bernardin? It’s all about keeping the passion of the staff alive and inspiring them. Inspiring them to push themselves to the limits. Inspiring them to do what they love. Inspiring them to progress. It’s a mentality; it’s part of our culture at Le Bernardin; it’s what we try to do. It’s what I try to do with my son, as a father. I try to inspire him to be the best he can. Not necessarily with the best grades in the class—obviously I’d rather him have good grades than bad grades—but I’d rather for him to be a good human than have an A-plus. Good values have nothing to do with money and with success, what is perceived as success externally. If you make money and you’re rich and famous, good for you, good luck, thank you. If you’re not, it’s okay. Love and compassion and good values are more important than that. You describe food when you were growing up as a unifying, civilizing force. The only time that you and your stepdad weren’t going at each other was when you were sitting at the dinner table. Is that something that you’ve brought to your own restaurant, that you think about when you cook? When you are in the process of cooking, you may not think that, but during the day you think that— especially in my role. I’m here to deliver an experience that I want people to remember. It has to be something convivial, it has to bring people together, they have to have a great time, and I believe the power of sharing a meal together at the table is very strong. I experienced that myself when I was a kid. From the dysfunctional family and fighting all day long, then it would be mealtime, and the food and the experience of the meal would bring us together and we would have a truce. And then we would go back to the war. When I talk to someone my age, if they had the experience of having a family that eats together, or a grandmother who cooks on Sundays, they always have those vivid, happy memories of it. Especially the Italians—they always talk about Christmas with the 13 fish or the tradition that they have, and the grandmother cooking all day… it has no price. It’s all about love and compassion and food, food, food. You moved to New York in 1991 and started visiting the Hamptons in 1999. What are some of your favorite places? Sunset Beach in Shelter Island is always very special. I like to eat on the top deck under the tree; I like the feeling of being in the treehouse. And then I spend my afternoon playing pétanque—it’s like bocce, the Italian game. I like that, I have a lot of friends there, but I have a lot of friends everywhere, actually. Pierre [Weber] in Bridgehampton is a good friend, and he has a good restaurant. Chef JeanGeorges [Vongerighten] has a restaurant in Bridgehampton—Topping Rose. I always go to the Beacon, and Sen has great sushi. I went to Nick & Toni’s last week—I haven’t been in a long time. And then I discovered Duryea’s, which I love very much, in Montauk. It’s really good.

From pop culture to couture… Hamptons offers an inside look at four of this summer’s hottest authors who will be under the tents at this weekend’s Authors Night, signing copies of their best-selling books.

ALLY HILFIGER Bite Me: How Lyme Disease Stole My Childhood, Made Me Crazy and Almost Killed Me

The East Hampton Library is not only a library but also a community center that services all demographics of the Hamptons. Offering a plethora of outreach programs including English as a Second Language, tutoring, and computer workshops, the library receives almost no local or federal funding, so it relies almost exclusively on donations. Now in its 12th year, Authors Night is the largest fundraising event for the library and one of the most popular gatherings in the Hamptons. This year’s dazzling event on Saturday, August 13, will feature almost 100 esteemed authors signing copies of their books under the tent, and includes a variety of honorary cochairs, from Eric Ripert to Gwyneth Paltrow and Mary Higgins Clark. Here we talk to four scribes who will be fêted later that evening at a private Hamptons dinner.

HAMPTONS-MAGAZINE.COM

Designer Tommy Hilfiger’s daughter Ally recounts her emotional and physical battle against illness in her honest and poignant memoir, Bite Me: How Lyme Disease Stole My Childhood, Made Me Crazy and Almost Killed Me. Heartbreaking and heartwarming, Hilfiger’s prose is ultimately helpful and hopeful. What prompted you to write this book? I had been sick for so long and had no idea why I was experiencing so many physical symptoms. We finally figured out that it was Lyme disease after dealing with it for 23 years. I thought, My story really has a beginning, a middle, and an end. Now that I have perspective, I think the reason I got sick was to help people and spread awareness. And maybe my incredibly crazy story will benefit others and help to find a cure and hopefully save other people.

Before you were diagnosed with Lyme disease, what did they think you had? Many of the doctors around me were brushing it off or said I might have rheumatoid arthritis, and no one gave me a real solution. A lot of years I shut my mouth, but in retrospect, maybe if I had spoken up more it would have been a better idea. My parents did everything they could, but it was really the doctors who were not helping diagnose me. Finally Dr. Ellyn Shander, the psychiatrist at Silver Hill Hospital, put the pieces together. What’s next for you? I’m working on awareness and education around this book, and hopefully we can continue to share the book with people in different ways. I’m a very creative person, I have a lot on my horizon, and that was one of the things that motivated me to get healthy. I’ve always worked, since I was 11 years old, and I’m excited to see what my next thing will be. Right now I’m working with the Global Lyme Alliance and Project Lyme. They have made a lot of progress, and it’s very encouraging. What is your plan for your upcoming visit to the Hamptons? I love the Hamptons. It’s really charming and beautiful. Growing up, we went to Bridgehampton. For Authors Night weekend, I plan to visit some friends, go to the beach, and wear lots of tick spray!

I said there is no sequel because how do you match characters like Eileen Ford and John Casablancas? And I didn’t want to write the same book, just set in a different time. But then I thought, What if you did Model but you turned the camera around? And suddenly I was writing. How is the photography world different from the fashion world? The golden years have ended. Film is over. Fashion magazines are facing an existential crisis. Fashion has become this big-brand, big-money thing rather than a haven for quirky individualists. Celebrity has overtaken everything. Digital has changed the medium, and now it is a different métier than it was 10 years ago. I didn’t realize until I was writing Focus that, unlike many of my books, this story had an end. Fashion photography of the 21st century is not yet definable. How did you decide which photographers to include? The first thing I considered when starting this book was, Who should it open with? Who is the fashion photographer of the moment? I made lists; I called magazine editors and gallerists and people from fashion brands and photographers I knew and asked them, “Who matters now?” There

were lots of names, but only one name jumped out of the pack: Terry Richardson. (This was just before all the scandals about Terry burst into view again.) Terry is sui generis and the most interesting photographer working now. Are you looking forward to Authors Night? I’ve never done Authors Night, and I’m so excited. I have looked at it quite enviously for a number of years, but I don’t think I’ve ever had a book so perfectly timed.

William NorWich My Mrs. Brown

This is your second novel, your first having been published 18 years ago. What inspired you to write this one? I’m always writing fiction. I completed a novel I didn’t like, and I vowed I was going to be done. Then, about nine years ago, I read Mrs. Arris Goes to Paris, by Paul Galico. It was published in 1958, and it stirred my imagination. It’s about a charwoman in London who after all the darkness of WWII, the Blitz, and having had nothing, no silk and no flowers—she is cleaning and she sees a chiffon floral evening dress that she becomes completely besotted with. I thought, Who would that woman in the US be now? What would the dress be? So it began as an intellectual challenge, but then Mrs. Brown started to come through as a character. What fashion items inspire women today? Given the propaganda of the red carpet and the pressure on people to look a certain way, the height of style that seems to trickle down is an evening dress. Not everyone can live on Meadow Lane and afford an evening dress, so I thought a lot about what would be equally empowering: Would it be for a cleaning woman to own an exquisitely tailored suit and go to a board meeting? How did you pick Oscar de la Renta as the designer of the dress Mrs. Brown would covet? It was important for me that it be an American designer. In Europe, it would be Chanel. But all of these people like Laura Bush and Mrs. Kennedy and Brooke Astor and all these ladies and philanthropists and working women all owned an Oscar de la Renta black suit, and that’s how I decided that he would be the designer of choice.

Noted author and editor William Norwich has dazzled with his second novel, My Mrs. Brown, an elegant morsel reminiscent of Edith Wharton’s novellas. This book is certain to be tucked into fancy beach bags all over the East End this summer.

Jennifer Keishin Armstrong Seinfeldia: How a Show About Nothing Changed Everything Pop culture expert, journalist, and author Jennifer Keishin Armstrong reminds us just why Seinfeld was America’s favorite sitcom in her new book, Seinfeldia: How a Show About Nothing Changed Everything. This in-depth behind-the-scenes journey into everything Seinfeld will answer every question you ever had about the show. It’s been 18 years since Seinfeld ended its run. Why did you decide to write about it now? There are not many shows that are quite as influential in our modern landscape as Seinfeld. It continues to have a really huge influence on what we see on TV and it lives on. If you count syndication, it’s never been off the air since 1989. Why do you think it was so popular? They did a lot of innovative things, one of which was to elevate the art of television with the idea that TV could be sophisticated. They stripped their comedy down where it’s not about feelings and relationships; it’s just about comedy and being funny. Is it surprising that it was so huge? The fact that the four characters were unlikable people is the part that is the most surprising, and that’s why networks didn’t think it would work at first. The main characters don’t care if you like them, they’re not trying to be likable, and this precipitated the rise of the antihero, and ushered in the era of the Sopranos, Mad Men, et al. What’s your favorite episode? I love a lot of Elaine stuff; I love the sponge-worthy episode because it’s so full of Elaine and very feminist. The Chinese restaurant one is great because that’s the first episode where they started to get really weird and avant-garde; there is basically no plot. After that one, they really got their groove.

.

“There are noT many shows ThaT are as influenTial in our modern landscape as Seinfeld.”

Authors Night takes place Saturday, August 13, at East Hampton Library, 4 Maidstone Lane, East Hampton. A series of intimate dinner parties for ticketed guests will be held later that evening at private residences throughout the Hamptons. Visit authorsnight.org for more information and tickets.

Rosé 2.0

Rosé gets a reboot this season with its greatest advocate, Roman Roth, stepping in as the Long Island Wine Council’s new president. by Amy ZAvAtto

even Pamela Anderson is adding a little blush to her brand, with a Canadian-sourced brut sparkler (oddly named Contempt). So when did pink become so… prolifically popular? “It’s the beauty of rosé—it pleases both the red and white drinker. And it goes with anything. It’s very versatile,” offers Martin Cabrera, a partner in Montauk’s Navy Beach, where rosé outsells pretty much every other beverage. So much so that this year Cabrera has upped the ante to offer over 25 different bottlings on his menu. “We always tried to have a big emphasis on rosé. The first year, it was a little challenging. Things have changed.” Have they ever. In 2006 when Sacha Lichine and Patrick Leon first made Chateau D’Esclans’s Whispering Angel— the Provençal rosé that, last year, you couldn’t swing a feather without hitting in the Hamptons—they offered up a mere 800 cases; this year, to fulfill the US’s thirst for the varietal, they’re up to over 200,000. D’Esclans, which also makes Garrus, Rock Angel (given out in grown-up sippy cups to happy riders of Hampton heli-commute operation Blade), and Les Clans, even teamed up with Sugarfina to create the world’s first rosé gummy bears and gummy roses—the initial offering of which sold out in mere hours in New York. But that irreverence and embrace of the South of France laid-back lifestyle doesn’t mean that D’Esclans isn’t very serious about rosé. “Whispering Angel is not made in a factory; it is not mass produced,” says Chateau D’Esclans’s Patrick Chevalier. “We’re in the oldest wine region in world for making rosé—almost 1,000 years!” From a “locapour” point of view, one must turn a gaze toward the vineyards of Sagaponack to find the source of eastern Long Island’s rosy reverence. “In the past, most rosés (or white Zinfandels) were always sweet. As tastes evolved and started to get more sophisticated, rosé [in the United States] did not. Yet there was always serious rosé made—mostly in Provence,” says Wölffer Estate Vineyard winemaker and partner Roman Roth. “From the start, we took that serious approach and always made rosé in a dry style. Over time, we got a serious following and thus did our part to help rosé catch up, finally, and become acceptable, fashionable, and one of the hottest categories on the market.” Roth, who also recently became president of the Long Island Wine Council, may be underselling his role a little. Arguably, Roth is responsible for single-handedly creating the full-on unquenchable Hamptons’ thirst for the rosé. It all began in 1992, his first year making wine for Christian Wölffer’s nascent winery. He made a rosé from mostly Merlot, Long Island’s (and Wölffer’s) most widely grown red grape variety, as well as a few other grapes grown on the estate. It was dry. It was crisp. It was pink. Those familiar with the Provençal penchant for rosé loved it, although it was lost on the rest of South Fork’s summer crowd swell. Until it wasn’t.

Still on the waiting list for this year’s hot commodity, Sugarfina’s Whispering Angelinfused rosé gummy bears? This pretty, light rosé gelée from Kevin West’s book Saving the Season is the perfect make-ahead dessert for your next summer soirée. SIMI Sonoma County Dry Rosé Gelée

Serves 8 1 Tbsp. + ¾ tsp. unflavored gelatin (two packets) 1 cup water, divided 1 cup sugar 1 bottle SIMI Sonoma County dry rosé, or your favorite dry-style rosé Sprinkle gelatin over ¼ cup of the water in a small bowl. Set aside for a few minutes to rehydrate. Combine the remaining water and sugar in a small saucepan over medium heat and stir until sugar is dissolved. Remove from heat. Add gelatin to sugar syrup and stir to dissolve. Combine with wine in a medium mixing bowl or a 9-inch square baking pan. Refrigerate for 3 hours, until set. To serve, cut gelée into cubes or break it into rough chunks, arrange in glasses or small bowls, and top with a little jam and whipped cream.

t’s not just the summer sunset that saturates your view in myriad tones of pink; it’s the prismatic effect of thousands of glasses filled to the brim with what has become the most-sipped summer quencher on the East End: rosé. Seriously—who isn’t drinking rosé these days? According to recent stats, the official number of rosés from Provence alone is up nearly 60 percent. Wine shops that once stocked barely a smattering of bottles have options in every shade of blush; restaurants offer wine lists with entire rosé sections; a hashtag (#YesWayRose) was so popular it turned into an actual wine (Nikki Huganir and Erica Blumenthal’s Summer Water). Even celebrity winemakers want in on the cool-factor that rosé affords—Drew Barrymore recently released Barrymore by Carmel Road, a Monterey-sourced Pinot Noir rosé; Angelina Jolie and Brad Pitt have the much-lauded Miraval from their Provençal vineyards; photographer Ben Watts has been touting his Watt’s Up rosé from Rioja for several summers;

The wine caught on and, by the early aughts, Roth couldn’t keep it in stock. It gained the nickname, “Summer in a Bottle,” and it stuck. That’s when he decided to think a little pinker. Today, Summer in a Bottle is its own label, and the pale, coppery-tinged pink-hued juice— a blend of mostly Merlot, as well as Cabernet Franc, Chardonnay, and aromatic Gewürztraminer—is redolent of tangerines and flowers and hits your entire tongue with its fruit-forward, zesty presence. Its bottle, too, makes an entrance, bearing images of butterflies, flowers, sea creatures, fruit, balloons—imagery that evokes the easy, breezy, colorful, celebratory feel of the season on the East End. It’s part of a whole family of Wölffer rosés: that original gold-label estate version, the barrel-fermented Grandioso; the stunning Noblesse Oblige sparkling; the spritzy, bubble-gum pink cider; and Roth’s latest project from Wölffer’s vineyards in Mendoza, Argentina, the plum- and raspberry-scented Finca, a blend of Malbec, Pinot Noir, and Syrah, which was released in the US in July. “The key to a great rosé is to have an understated elegance, yet make a sophisticated vibrant wine,” he says. For Roth, that generally translates into using a blend of different grape varieties as opposed to one. “Instead of just making a varietal wine and pushing one button, I like to use all registers.” But it’s certainly not the only way to go. Other talented winemakers like to keep their focus singular, notably Christopher Tracey of Channing Daughters in Bridgehampton, who offers no less than six different rosés, five of which are the result of single-grape varieties, and Paula and Michael Croteau’s Croteaux Vineyards in Southold, where only rosé is the exclusive order of the day. The pale hue of Tracey’s wines belies the glorious intensity of fresh, varietally true aromatics and palate-saturating flavor, offering the kind of long finish that boldly flies in the face of those who claim rosé wine to be simple quaffs for forgettable swilling. Five are focused on a single grape variety—a Cabernet Sauvignon (a personal favorite), a Cabernet Franc, a

Picnic Picks Whether you’re bringing bottles to the beach, barbecue, or bow of the boat, screwtops and bubbly wines are the way to go. Here, we’ve got some great picks to twist open wherever, whenever. Olivares 2015 ($10): Made from old-vine Monastrell and Garnacha, this strawberry-scented Spanish rosado is super versatile and oh-so easy to sip on. Carpe Vino 2015 ($16): Winemaker Josh Carp sources Merlot grapes from the North Fork for this easy-drinking sipper with delicate cherry aromatics. If it could talk, it would beg you to get a lobster roll.

Syrah, a Merlot, and a Refosco; each is thoroughly redolent of that particular grape’s character. It’s no wonder that Almond restaurant held a multicourse dinner in June to highlight each of Tracey’s entrancing rosati. Provence-inspired Croteaux gets even wine-nerdier, offering several rosés made not just from a single variety (often Merlot), but a single clonal representation of that grape. In 2016, the Croteaus took on winemaker Alie Shaper (owner and winemaker of Brooklyn Oenology) to craft their line of nine still and sparkling rosés, and they couldn’t have picked a more devoted proponent of the style. Shaper is the kind of winemaker who has the science background to thoroughly understand the process, but the soul, if you will, of an artist, happy to give up a bit of the necessary control to the muse of the grape and the seasonal fickleness of Mother Nature. Although Shaper has made rosé for her BOE and As/If labels, she decided to make a pilgrimage to Provence this past spring for her new role at Croteaux. Pink made her think. “Rosé can be made to express fruit, terroir, play to a certain flavor profile, to a certain palate, to a certain culture—you can do anything with the style that you can do with any white or red,” she says. “What rosé is about is the balance of terroir, acid, and fruit. It’s about wine that’s made to go with the things that exist where it’s from.” The latter notion was the one, in particular, that set off a light bulb in Shaper’s mind: Thousands of miles from home, in a wine region far older than the one she normally occupies, she found the missing link, the reason rosé has become the hot ticket it has on the North and South Forks. “Provence has such marine influence and their foods are so similar [to ours]. It’s different soils, but the same idea—a similar salinity,” she says. “They are all about embracing that—the notion of living on the water and celebrating their seafood and their agriculture. In that, I saw a mirror image. We’re taking that inspiration from Provence: how we can take the best of that style, that aspect of wine and food terroir, climate, and context and express it in a Long Island way.”

.

Paumanok Dry Rosé 2015 ($18): Kareem Massoud is Long Island’s screwtop evangelist—and also a mighty fine winemaker. His barely-pink kissed rosé of Cabernet Franc is rife with wild, fresh berry aroma and flavor. Broadbent Vinho Verde Rosé NV ($10): Fizzy and fun, this fruit-forward fuchsia beauty from Portugal blends local grapes like Borraçal and Espadeiro— which you can spend time worrying over how to pronounce since it’s so easy to open. Chandon Rosé ($24): Part of their American Summer series, this limited-edition California-sourced sparkler made in the traditional method is around for summer 2016 only—all the more reason to start popping corks.

Montmassot Rosé 2015 ($12): To the west of Provence, Languedoc is home to some delicious red wines. Here, prolific grapes like Cinsault and Grenache come together to make this salmon-hued rosé with notes of flowers and berries. Martha Clara Vineyards “Solstice” 2015 ($18): Bring on the spicy charcuterie! Slice up a little salty cheese and picante sausage with Martha Clara’s Solstice, a blend of Merlot, Chardonnay, and Riesling with just a little bit of residual sugar that nicely offsets the heat of spicy meats. Moët & Chandon “City Bottles” Nectar Imperial Rosé ($70): Available only in July and August, MC is celebrating New York City with its City Bottle series of Champagne, and the biscuity, strawberry-scented rosé is a great way to kick off a special alfresco Hamptons night. fresh start designer John BJørnen helps author Patty MccorMic and her husband, Paul critchlow, define their next chapter of hamptons living with a happy north haven home. By Jean nayar PhotograPhy By Costas PiCadas

As the author of several critically acclaimed novels, Patty McCormick knows a thing or two about starting new chapters. And with her influence, the new home she shares with her husband, Paul Critchlow, in North Haven stands as a reflection of a turned page in the story of their own lives. “My husband worked on Wall Street and was on the cusp of retiring, and we sold our apartment in the city, as well as a country home in Bucks County, Pennsylvania, because it wasn’t lively enough,” explains McCormick, who had also summered over the years, with her husband and now-grown children, in a home they shared in Southampton. They sold that house, too, in search of a more casual context and found what they were looking for in a renovated ranch overlooking Fresh Pond. “It was close enough to everything in Sag Harbor, but away from everything, too,” McCormick says. For Critchlow, “It appealed to us in its simplicity—I fell in love with it at first sight.” In their renovation, adds McCormick, “the previous owners had a lot of affection for Japan,” and they’d added a separate two-story extension and refreshed the interiors throughout with a soothing Zen quality. “We didn’t need to mess with that—all we did was lighten the floors,” she says. The couple did start fresh with the interiors, however, and called on designer John Bjørnen, who helped them define the rooms with a mix of mostly îî

new custom and off-the-shelf furnishings. “Patty had always loved Hans Wegner’s Wishbone chairs, and in a ’70s ranch house, it’s natural to embrace classic Midcentury Modernism,” says Bjørnen. “So, with a nod to the Scandinavian aesthetic, we found a nice Zen-meetsmidcentury vibe with walnut and oak woods and textiles and textures that give the rooms warmth.” “We wanted a counterpoint to our travels,” explains McCormick, who has spent a lot of time in Asia and other parts of the world, which have inspired some of the complex and socially challenging tales she writes. “We wanted spaces that were calm, quiet, and uncluttered.” Yet, thanks to the shots of color and pattern of pillows and throws and vibrant works of art—including a bold piece created by their daughter when she was a child—the spaces are also happy and fun. Now that they’ve settled in, the home is so comfortable for the couple that they actually

spend more time here than in the city. McCormick writes in the loft space of their Hamptons house, which doubles as a shared home office/entertainment area and features a balcony perch from which to look out onto the water beyond. Friends and family come to visit “for sliders, corn salad, and beer by the pool,” says McCormick, who loves the guest- and petfriendly house, crediting Bjørnen for creating spaces that make a statement without being too precious. For his part, Bjørnen attributes most of the home’s unique flavor to his clients. “They’re some of the warmest, brightest, most empathetic people I’ve ever known,” he says. “They really wrote the story of the house, and I got to start it with them with a jumping-off point. But I think they’ll be here for a very long time, and there are many more chapters yet to be written.” Bjørnen Design, 144 Main St., Sag Harbor, 725-0946; bjornendesign.com

IN GREAT SUPPLY

Although the inviting new boutique Salt Supply is located at The Chequit hotel in Shelter Island, its clientele isn’t just guests looking for, say, a roomy beach bag to use during their stay. “The first day that we opened, all the neighbors came in and shopped for their houses,” says Kevin O’Shea, who oversees the store. “That was always my goal for Salt Supply— being able to capture the locals.” Non-hotel guests make up around half of the customers at Salt Supply, whose mix of wares—unusual and sometimes quirky items for home and beach, for men and women—is precisely curated and always appealing, including a few essentials and plenty of covetable gifts. Most of what’s in the brightly colored store comes from small, independently owned brands, many of which are based nearby, like Dealtry’s ornately printed scarves and Knot + Bow’s charming paper goods. “When you live in a town, you want to have that perfect gift store where, no matter what’s going on, you can always find something,” says O’Shea, who is also the creative director of Salt Hotels, which owns The Chequit along with two properties in Provincetown. “I wanted a part of this store to be that for people, with things you haven’t seen before, new discoveries and unique items.” 23 Grand Ave., Shelter Island Heights, 749-0018; thechequit.com

POND MEMORIES A RETRO ’80S-MODERN ESCAPE ON GEORGICA CLOSE OFFERS UNPARALLELED VIEWS OF GEORGICA POND.

A stone path leads to the entrance of the magnificent, newly restored modernist home at 72 Georgica Close, listed for $17.98 million by Corcoran broker Michael Schultz.

Dreamy Georgica Pond was home to F. Scott Fitzgerald’s famously well-heeled BFFs, the Gerald Murphys, and more recently Steven Spielberg and Ron Perelman. Over the years, the pond’s beauty has attracted famous aesthetes, including one of Manhattan’s most venerated art dealers and a supermodel and her actor husband. It isn’t possible to get any closer to Georgica Pond than this reimagined late-1981 modernist escape off Georgica Close. A gravel drive winds past a tennis court to a broad stone path that leads to the entrance. The structure was originally built by beloved Hamptons architect Harry Bates for author B.H. Friedman, best known for his biography of Jackson Pollock. “This house is a pond-front with spectacular open-water views, and customers are embracing the rounded curves of the interior and wood-paneled walls,” says the Corcoran Group’s Michael Schultz, who is listing the property for $17.98 million. “The positioning of the pool house and pool give it an almost resortlike quality.” Since the 1980s, local building regulations have made setbacks more strict. “Today the home would have to be built 150 feet back from the wetlands and the pond, and you would not be able to remove any trees or foliage,” Schultz points out. “There would have been no room for a tennis court on the two-acre lot.”

Throughout the undulating interior, artful furnishings help the design sing, such as the Pierre Paulin steel-and-leather sling chairs in the living room, which were created about the same time as the house. below: The heated pool is surrounded by a generous deck, with an alcove for alfresco dining and incredible views of the pond.

Eight years ago, architect Lee Mindel of SheltonMindel was hired to breathe life into the vintage behemoth. “What made this house special and worth salvaging is its footprint and grandfathered views,” says Mindel. “The house is built like a hinge that opens on the living room. We sanded all the wood and tried to celebrate—reactivate— this building type. We put no finish on the cedar so that it feels as if the woods that surround the property continue into the house.” To echo the architecture, Mindel installed furniture that combines curvilinear and straight forms: an undulating

yellow chair by design star Marc Newson, Beaubourg dining chairs from a production run for the Centre Pompidou in Paris. The round table at the entry is by Danish designer Poul Kjaerholm. And the boomerangshaped pieces on the entry console that resemble sculpture are actually leaves to the Kjaerholm table so that it can seat 10 instead of six. Says Mindel, “Even the pool adopts the curves as it hits the water.” Michael Schultz, Corcoran, 51 Main St., East Hampton, 8990254; corcoran.com. GOOD GREENS ASHLEY MCDERMOTT’S SOUTHAMPTON GARDEN INCLUDES FLOWER-FILLED SPACES PERFECT FOR OUTDOOR ENTERTAINING.

“I wanted something that looks as good in the spring and fall as in the summer,” says writer Ashley McDermott of her Southampton garden. “Part of the reason I fell in love with this house [is that] it reminded me of my childhood home in California, surrounded by year-round flowers.” To create her dream garden, McDermott enlisted Nantucket landscape designer Elizabeth O’Rourke, with whom she had worked before. The garden includes many different flowering trees, like pear, apple, and cherry, along with peonies, that explode into bloom in spring. “I selected a white, pink, and lilac palette,” says McDermott of the landscape that includes a number of outdoor “rooms,” as well as a cutting garden used to fill the house with flowers. “My teenagers love lunch in the sunken walled-in garden,” she says. “We hang out around the fountain, enjoying the boxwood, which surrounds white tulips, for breakfast and dinner.” The nearly two acres of gardens also play host to an annual family party. A dance floor is created under a giant oak tree, while torches guide guests through the gates, past rose topiaries, antique benches, and hand-painted blue-andwhite pots filled with white impatiens and white roses. Says McDermott, “We spend as much time outside as possible!”

Real estate in the noRth FoRk and west oF the canal is the next big thing, says a panel oF east end buildeRs, bRokeRs, and designeRs. Moderated by Michael braverMan

What are some of the characteristics that you find west of the canal and/ or the North Fork? Robert Brown: No traffic. Traffic going out East is horrendous in the mornings. It is hard to do business; your workers are out of the house 12 or 15 hours a day and getting paid for eight, because it is just a journey to get out East. Marcia Altman: Also the lifestyle. The North Fork is a slower pace. Enzo Morabito: I agree. I have been coming out here since I was a kid. My parents rented a house in Westhampton Beach and Quogue, and I never saw the need to go past. MA: People ask me all the

118  hamptons-magazine.com

time, “Is the North Fork going to turn into the Hamptons?” Absolutely not, because the people who are coming over from the Hamptons are coming because they want the North Fork to remain the way it is. And our townships are extremely aggressive in maintaining that character. Let us take this beyond what these places are not, and get to the characteristics of what they are. MA: When people want a second home, they go where their friends are. If their friends are in Remsenburg, that is the only place to be. Remsenburg is not very well known because it does not end in the word “Hampton”; in a way, that is good

because it keeps it quiet and private. Remsenburg has more waterways than any other part of the Hamptons, so you have more waterfront homes than anywhere else. RB: It is totally undervalued. MA: Yes, and it is catching up. Some people with foresight have been selling homes east of the canal for a big profit, and coming here and buying. Debra Gildersleeve: A lot of young couples are renting in the city, and they are choosing to buy in the North Fork. They want that quality of life. They work in the city and they have to be there, but this is where they would rather have their kids spend their [free time]. What happened there and why? Harris Cohen: Every 10 years or so, The New York Times would write an article about the undiscovered North Fork. We would sort of hold our breaths and wait for the explosion. I see people coming out to Greenport and the North Fork, and buying very old houses with good bones and restoring them to their former glory. Donielle Cardinale: One of the things that makes Greenport so special is that it is the only walking village on the North Fork. That makes it very desirable for people who are coming out from the city. A lot of them don’t have a car or are not accustomed to driving everywhere. You can go out to a huge number of restaurants, bars, and different little shops. You have the carrousel for the kids. There is so much to offer in that very consolidated little spot. HC: The nature of the infrastructure of the village is such that it does not seem like it can change very much. There is really no place in the village of Greenport for a new site division. It is what it is, and people are coming for that stability. How does that affect the way that people are decorating their homes? RB: We are doing a lot of master bedroom suites on the ground floor, which is just a demographic phenomenon. On the inside, people are looking for detail. îî

There are a lot of moldings—simple, classic kinds of looks. DG: My client likes that upholstered headboard with a mirrored nightstand and cool lighting fixture in the bedroom, and lots of area rugs. What about Quogue? Who is attracted to that area? DC: Young families who started out as group renters in a big house with a lot of singles, and ultimately are now in a position to buy a second home. They are coming so that their kids can have a place out of the city to run around and have a life like most would like to give their children. The older families are the parents with kids and grandchildren who figure if they can have a nice big place in the Hamptons, then everyone will come, and they do. What do you think will be in the future for all these places? MA: I think people will keep coming here more and more. As the traffic going further east becomes more and more congested, that will continue. RB: We always felt that once my son gets through school, we would move back out East. We don’t feel like that anymore. My sense of my community is [in Westhampton], and we are very happy. EM: When I was out in the North Fork, it was an education for me. When we started the company out there, everybody would say to me, “People are buying in the Hamptons, and then they are moving to the North Fork.” That is not true. Very few people living [in the Hamptons] move to the North Fork. MA: Ten years ago, I would say that was 100 percent correct; it has only been in the last five years that we are seeing a big influx of people from the South Fork moving to the North Fork. Both of these areas we are discussing today really have a lot of similarities in that they are probably far more appealing in terms of a long-term investment. If I am going to put my money somewhere, I would prefer to put it in one of these up-and-coming areas than something that has already popped.

How you know them: Douglas Elliman’s Tal and Oren Alexander hold the record for selling the most expensive single-family home in Miami—a vast, modern Biscayne Bay property built by their father, developer Shlomi Alexander, that went for $47 million. Two years ago, Elliman’s Alexander Team sold a townhouse in Manhattan to the country of Qatar for $100 million. Recently, The Wall Street Journal’s list of top brokers ranked them number five in

122  hamptons-magazine.com

New York, number two in Miami, and number 16 in the US based on their $308 million in sales last year. Home base: While they partner on deals, Oren spends more time in Miami and Tal in Manhattan. Yet summers are for the East End, and this year they’re spending Hamptons season entertaining clients on their VanDutch 55 speedboat. Hamptons home: “We rented a house in North Haven,” says Tal. “It’s just over 10,000 square feet, with an indoor basketball court,

steam room, and gym, and the backyard is on the water. We’re going to do a lot of entertaining— celebrations, Friday-night Shabbat dinners, and charity events—at the house. The boat seats 20 comfortably and will do 40 knots, so I can take a group to Sunset Beach.” A-Team offerings: 38 Two Mile Hollow Road in East Hampton, listed for $32.888 million. “It’s new construction on three acres,” says Oren. “It’s shingled, 8,000 square feet, with five fireplaces, and the pool house is a

beachfront bungalow.” Also available is 315 Rose Hill in Water Mill, listed at $29.9 million and featuring a tennis court, a wine cellar, and eight fireplaces. “That is a 20,000-square-foot house on four acres,” says Oren. “You have a true chef’s kitchen, two double staircases, a huge fitness room, a real home movie theater, and an exquisite Murano glass chandelier.” Rec time: Tal was a Division I tennis player with a full scholarship and often plays with clients. As for Oren, “I love

to start my day at Barry’s Bootcamp,” he says, “and I kitesurf right outside my house and in Miami, Turks and Caicos, Maui, and Mykonos.” Great escapes: “Gurney’s, Navy Beach, and Sunset Beach and Salt in Shelter Island,” says Tal. Adds Oren, “Duryea’s and Harbor in Montauk. I also like to take my Jeep Wrangler on the sand in Amagansett and enjoy a bonfire with friends.” Douglas Elliman, 485 Madison Ave., NYC, 212350-8561; thealexander team.elliman.com

John Graham, the cofounder and executive director of Hampton Racquet, wants everyone to take their workout outdoors. “One of the greatest things about the East End is you get to explore the best of nature,” says Graham, who has been coming to the Hamptons since 1971. “You can enjoy outdoor fitness. Professional athletes come to play tennis here, and they’re exhausted after 15 minutes because it’s a different type of workout. It uses different resources in your body. Tennis complements your fitness routine and adds to it.” His club, a family-owned boutique country club in East Hampton, is unique because there’s no blanket membership fee. Instead, all of the programs, clinics, events, and other activities are offered individually, or “à la court.” The mission of Hampton Racquet is all about being active outside and about family fun. “I really focus on getting children to start playing tennis,” he says. “It’s a lifetime sport that the whole family can do together, forever. I still hit with my sister; we’ve been playing together for 40 years now.” When he’s not on the courts, you can find Graham at outdoor TRX, riding his bike around town, or walking or running on the beach (“There’s no better way to strengthen your knees and ankles!”). Just don’t look for him inside. 172 Buckskill Road, East Hampton, 324-0297; hamptonracquet.com

Let it Flow From sexy ringlets to beachy waves, curls are a mane attraction this season. By Christina Clemente

The days of pin-straight hair and Ariana Grande-style waves are not gone but winding down, says Bianka Lefferts, founder of 27 Hampton Salon—and in its place are seemingly effortless coils. “Women who have that natural curl want to leave it, but want to know how to control it,” she says. “It’s easy and doesn’t make you look like you’re trying too hard.” According to Lefferts, it starts with the foundation of your hair. “If hair is not cut properly, there’s no way to wear it curly and be 100 percent satisfied,” she explains. “Curly hair does all these crazy things.” Using a “carve and slice” technique, Lefferts begins with her clients’ hair completely wet, creating layers and minding where the curls lie; then once it’s dry and styled, she goes back in to “sculpt” and perfect. And when it comes to products, more is more. For tight, clean curls, start by combing “a ton” of Ouidad’s Moisture Lock Leave-In Conditioner through sopping-wet hair and a small amount of gel, and let it dry naturally, then use your fingers to scrunch some of the product out. Says Lefferts, “Your curls stay in place, and it looks like you have nothing in your hair.” If you prefer a more laid-back coif, use the same leave-in conditioner but swap gel for a little of Oribe’s Surfcomber Mousse—that will give you a “beachy, surfer look,” perfect for the Hamptons. Says Lefferts, “Some of us take our time getting ready, but we shouldn’t look like we did. That’s the key for this season: We should just look effortless.” 27 Hampton Salon, 27 Hampton Road, Southampton, 377-3107; 27hamptonsalon.com

Sotto Sopra Slip into the inviting atmosphere created by warm natural lighting, wood-paneled walls, and a sprawling outdoor patio and enjoy some of the best Italian fare the East End has to offer. With its roots in Tuscan and American traditions, Sotto Sopra’s inventive menu features classic grill offerings alongside wood-fired pizzas and a full antipasto spread. Chef Fermin Jimenez prepares a specialty dish made with locally sourced fish every night (a recent offering was a pan-seared striped bass served with crispy chanterelle mushrooms and broccoli rabe). And this summer only, try Sotto Sopra’s special summer spritzer made with Aperol, prosecco, seltzer, and orange juice. 231 Main St., Amagansett, 267-3695; restaurantsottosopra.com

Kozu This summer, 75 Main restaurateur Zach Erdem opened Kozu as part of his plan to add a little more flair to Southampton. Influenced by Peruvian cuisine, the Japanese restaurant offers a variety of buns among its extensive raw bar, sushi, and sashimi selections. Signature dishes include the Kozu jalapeño yellowtail with smoked tomato ponzu and the summer corn and lobster salad with a corn “pudding,” shiso, and yuzu dressing. What really defines Kozu, however, is its design, which is sleeker and more modern than many Southampton restaurants. The open-air patio is by turns a relaxing place to sample unique fish and rolls and a thumping club-style space.
