I
know that February, and more specifically, Valentine’s Day, seems to be synonymous with love and romance. For me, February is all about passion. But shouldn’t every month be? When I’m talking about passion, I don’t mean the heart-shaped candy box and kiss-print boxers associated with the commercialization of the holiday. And I don’t mean passion that disappears shortly after the candles burn out and the chocolates are gone. I’m talking about the passion that’s deep in your gut—the feeling that makes you care deeply for a person, a cause or an activity. The passion that gets you excited about doing what you do, and being who you are. We couldn’t have found a better example of such passion as we did in Evan Strong. Our feature on this highly decorated athlete details how his passion for board sports gave him the courage and determination needed to overcome a devastating accident that took his leg at age 17. Now in training for the 2014 Sochi Paralympic Winter Games, Evan talked with us about his journey from a talented teenage skateboarder to a strong-willed amputee fighting his way back, to the world’s top para snowboard/boardercross competitor. He also gave us a glimpse into his other passion—living green. If you are an avid Green Living reader, I suspect you share a similar passion. “One thing I found out going through my accident is that you don’t know how strong you are until you have to be,” says Evan. That’s what heroes are made of.
E
very four years, elite athletes from more than 200 nations join together to celebrate the Winter Olympics. They go skillfully screaming down steep, snowy mountains at speeds of up to 80 miles per hour, on skis, snowboards and sleds. They deftly maneuver their bodies or objects across the snow and ice, demonstrating fierce concentration and physical endurance—all with the world’s eyes upon them. They’ve worked hard, made sacrifices and, with laser-sharp focus, they’ve become the very best in their sports. They inspire us. Every four years, new heroes emerge from these games— athletes who astonish us with their talent, dedication, determination and heart. Evan Strong is one of those athletes. From March 7 – 16, Evan will compete in the snowboarding boardercross event for Team U.S.A. in the Sochi 2014 Winter Paralympics in Sochi, Russia. Raised in Hawaii, Evan became an accomplished surfer and skateboarder at an early age, but after a tragic car accident in 2004, everything changed. Three days after the accident, Evan’s left leg was amputated below the knee. It was one week before his 18th birthday. Before the accident, Evan had never even ridden a snowboard, but he had a new appreciation for life and he had no intentions of giving up on his greatest passion—board sports. It wasn’t until two years after his accident that he stood on a snowboard for the first time. Today, the 27-year-old is the most decorated para boardercross racer on the planet.

THE MAKING OF A CHAMPION Evan got his first skateboard when he was 5 years old. But, growing up on the beaches of Maui, he was most often found running barefoot on the beach with a surfboard in hand. Almost every day of his childhood Evan was on a board. When he was 11, he moved with his family across the island, to a home close to Keopuolani Skate Park. That’s when he rediscovered skateboarding…and shoes. By the age of 13, Evan’s talent was evident and he had attracted his first sponsor, a local skate shop. Motivated by his success and driven by his love of the sport, he started entering (and winning) local contests and was on the verge of expanding his career when the car accident happened. Evan was riding his sister’s motorcycle to work when a distracted driver hit him head-on going 65 mph. His first thought after looking down at his mangled leg was that he may never skateboard again. At 17 years old, he was an accomplished pro-am skateboarder with his sights set on a professional skateboarding career. Evan and his family faced a new reality when they learned his leg would be amputated. He admits he didn’t take it well at first. One day, frustrated by his situation and the prospect of starting physical therapy just two days after the amputation, Evan snapped at his mom. His new therapist, Gene, sharply warned him not to speak to his mother that way. It was a turning point. “It gave me perspective,” Evan said. “I decided I was not going forward with a bad attitude, so I made a choice. I was blessed that somebody was there to help me.” In true hero fashion, with that same fierce determination that earned him a spot in Sochi, Evan decided to fight. FIGHTING HIS WAY BACK On his 18th birthday Evan shared a new goal with his family—in time, he was going to skate again. He openly credits a raw food diet with speeding up the recovery process. “Nutrition is where the rubber hits the road. It is what fuels you and propels you to achieve your life’s mission.” Evan’s parents, Lisa and Roger Strong, raised their family on a 13-acre organic fruit and vegetable permaculture farm, and taught them early on the benefits of eating whole and raw foods. “I was lucky to always have been eating and living from a garden,” says Evan. He admits that, in his early teens, he rebelled against the clean, healthy lifestyle but, after the accident, he delved deeper into the education and technology of nutrition and diet. “In the hospital I felt like I was wasting away. My digestion was shot from the extreme antibiotics. I

knew I needed to change my diet in order to heal.” Evan came across the work of nutrition expert David Wolfe, and he knew which path he was going to take. Wolfe’s messages about diet and nutrition “rang true to my core,” he said. Evan started a raw food diet and was soon “living out of a blender,” taking in rich superfoods and even learning to make his own sauerkraut. “Within days I felt better than I had in years,” Evan remembers. Eating a lot of fermented foods helped his digestion come back, and he felt like a new person. “I had started to heal myself through diet,” he recalled. Evan said this inward reflection and the healing power of his new diet propelled him in a new direction—toward the manifestation of his highest dreams and potential, doing the thing he felt most passionate about… sports. “I thought that [sports] was going to be taken from me, but I used the technology of nutrition to heal myself so I could get back to what I’m so passionate about, even if I had a prosthetic leg.” Evan believes that his deeper understanding of nutrition helped him to heal, inside and out, and even to surpass his athletic abilities from before the accident. As planned, less than a year after his accident, Evan was back on his skateboard. THE ROAD TO SOCHI Once out of the hospital, Evan wasted no time getting back to living life. He became involved with the Challenged Athletes Foundation and began mentoring youth and adult amputees. Back on his skateboard, he didn’t stop for long to relish in this huge accomplishment—instead, he set another goal. Inspired by a snowboarding magazine he saw in the bookstore, this surfer/skater from the tropics decided to take up a board sport he had never tried - snowboarding. So, two years after the accident, in 2008, Evan moved to Lake Tahoe and got a job at a ski resort, where he spent about 100 days on the mountain the first year. He taught himself to ride and, while he admittedly fell down a lot, his background in board sports helped him catch on quickly. “Snowboarding definitely came out of my accident because I wanted to experience new things… just because I was here to experience life. I wanted to try everything because I was given a second chance.” What did Evan do with that second chance? He turned it

into a whole bunch of medals, for starters: eight-time World Cup Gold medalist in Para Snowboard Cross, winter X-Games 15 Gold medalist in Adaptive Boarder Cross, and the 2012 Para Snowboard Cross World Champion. And he’s just getting started. Sochi, here he comes. The 2014 Sochi Winter Olympics marks the debut of the para-snowcross event for the Paralympics, and Evan couldn’t be more excited. He describes boardercross, where a group of snowboarders start at the top of an inclined course and tear down the mountain to see who can get the finish line first, as “the greatest thrill I ever had.” Fittingly then, when I asked him what he was most looking forward to about his Olympic experience in Sochi, he quickly answered, “Snowboarding. Getting to ride my snowboard. That’s what I’m most looking forward to. That’s what I’m most passionate about.” LIFE OFF THE BOARD When he’s not on the road training with his fellow Olympic athletes, Evan is happy to be home in California, where he lives in a cozy yurt in a cedar forest with his wife, Mariah. At home he focuses on strength training, conditioning and yoga classes, and fuels his body with nutrient-packed superfoods. He also works at The Fix for Foodies in Nevada City, a quaint, raw-centric eatery he owns with Mariah and his sisters Arianna and Stephanie. Evan’s family, friends and teammates have also benefited from his healthy habits. “I’m very passionate and excited about the things I’ve learned and the disciplines I’ve put into place, so it’s very easy to share with people,” says Evan. “And I’ve been getting good results.” Evan says some of his teammates have traded in their morning coffee for his green breakfast smoothies made with fresh fruits and vegetables. “It’s really cool to see how, when friends, family or teammates start implementing these wellness processes, their life takes a different direction and they start getting better and better results. Then they feel happier and more productive. It’s cool to see that happen, just by sharing something I’m passionate about,” he says. And passion is what drives this amazing athlete and human being. When I asked him what he wanted to be doing ten years from now, he said, “Things could be completely flipped upside down tomorrow, so I’m going to keep doing what I am passionate about and see what happens.” (Let’s hope a gold medal is what happens—good luck, Evan!) hile some recipients aren’t too finicky about the colors of their floral gifts, different rose colors can signify different relational states, so it’s best if you choose a bouquet with the appropriate hue for what you’re trying to convey. RED: As the staple symbol of love and fidelity, the red rose is the most common way to express one’s love, be it Valentine’s Day, an anniversary, or any other day for that manner. PINK: Pink roses aren’t as serious as their red counterparts, however they signify a sweeter romance. Light pink roses can signify friendship and sympathy, while the darker roses can signify appreciation.

The sun will burn them. • Soak the entire bush in water from 8 to 24 hours before planting. • Plant each bush 3 feet to 5 feet apart. • Plant in an area that has at least 6 hours of sunlight daily. • Plant bare-root roses from mid-December through February, and container roses from March through May. • Use garlic/water or insecticidal soap/water mixtures against aphids, roses’ worst insect enemies. • Plant nectar plants (daisies, lavenders, and yarrow) to attract lacewings and ladybugs that eat aphids. • Use sulfur (not lime-sulfur) to fight fungal problems during the growing season.
BLACK: The enigmatic black rose can be an overwhelming sight to behold, and is not always well received. The black rose can signify death. They can also symbolize rejuvenation, or change.

YELLOW: The vivid, sunny color of yellow roses signifies strong platonic relationships. It is also a common rose to get for someone under the weather. ORANGE: The orange rose’s fiery appearance has made this color symbolic of desire, enthusiasm and passion and is best for emerging romantic feelings. These can also be given as a congratulatory gift. LAVENDER: The mellow rose, lavender-colored buds are the dreamer’s roses, and are associated with love at first sight, and allurement, along with other fanciful feelings that come with love.

our wedding day is supposed to be one of the happiest days of your life, but the planning leading up to it can be downright nerve-wracking. If you’re about to walk down the aisle, consider visiting a spa first. “For eco-conscious brides, getting bridal-ready at a green spa is the ideal primping and pampering destination,” says spa expert Dena Roché. “All spas promote themselves as sanctuaries of wellness, but with chemicals in the products and in the air, that can be misleading.” Roché, who is penning a book tentatively titled The Spa Dictionary, says that brides-to-be should ask the following questions to determine if a spa is truly ecofriendly: • Do you use a certified organic skin care line in your treatments? • Are the cleaning products used in the spa toxin-free? Are the paints VOC-free? Is the flooring natural? • Do you use natural fiber products in your robes, towels and linens? • How else do you conserve in the spa? Low-flow toilets? No bottled water? Bulk-dispensed toiletries? A great resource to use to locate an eco-friendly spa is greenspanetwork.org/site-search, Roché adds.
Rachel Rock, spa director at Jurlique Spa at Kimpton’s FireSky Resort & Spa, gives a few more insider tips: UNDERSTAND THE SPACE: Because environmentally friendly buildings can be a bit more costly to operate, many green spas tend to be boutique in size, Rock says. “This turns out to be great for bridal parties as it gives a more intimate and exclusive feeling, allowing gals to be comfortable and connect as they share in the special moments.” ASK ABOUT THE PRODUCT LINE: Many bridal parties have their makeup professionally done. One brand that’s a favorite at Jurlique is the Jane Iredale makeup line. Whichever line your spa uses, make sure it’s free of parabens, chemical dye and fragrance. THINK LONG TERM: While your wedding is just one day, your honeymoon is many more thereafter. “Selecting eco-minded products in your services allows more natural care of your skin, leaving it in better shape for the weeks ahead,” Rock says. “Heavy, chemically processed makeup could look fine for day-of photos, but clogged pores when you set out for your romantic getaway will not.” SEEK CERTIFICATIONS: “How do you really know if a resort or spa is eco-friendly? an you remember a Valentine’s Day that really stood out for you? Being married for 23 years, I’ve had all kinds. Before my husband and I had children, we went on some really nice dates on this special day. After kids, it became more about helping them to celebrate the holiday. But there is one Valentine’s Day that stands out from all the others, and it is one in which I received a heartfelt gift of love. What constitutes a true gift of love? For me, there are three characteristics that stand out. THOUGHTFUL: Take the time to plan out your gift. A prepared and pre-meditated gift is sure to speak volumes to the recipient. Last-minute purchases usually scream, “This was bought today.” HEARTFELT: Choose something that is given from the heart. Is it something they’ll cherish? Does it really help to express to your love? RESPONSIBLE: Select a gift that, in its making, was made in love and with respect for the planet. Jewelry is the most popular gift for Valentine’s Day because it is highly sentimental and can last a lifetime. It’s a sure thing. Jewelry can easily satisfy the first two criteria, but is there jewelry available that will fulfill this third point? Fair trade and fair made jewelry can be found with a little effort. Something made locally is always a great choice. If you are thinking about a gift made with gemstones, first learn about the effects that procuring that gemstone had on the planet or on the people mining and cutting it.

Self-love is the most powerful love of all and spills out to everyone around you. In the end, it’s love that really matters. So, what was my heart-felt gift? A beautiful porcelain rose that still adorns my dresser. My husband gave it to me on our very first Valentine’s as a married couple. It serves as a beautiful reminder of a thoughtfully planned and romantic evening. Take a little time out of your Valentine’s Day to celebrate your love. hange is perhaps the most striking characteristic of any living organism. As humans, we are born small and helpless, and eventually we grow through childhood into adulthood. A 200-foot-tall tree begins its life as a small seed, sometimes only a fraction of an inch long. The Earth cycles through the four seasons and the moon creates the tides, driving constant change in the planet’s ecosystems. We have also seen vast changes in human societies over time. Most recently, the past three hundred years have ushered in the Industrial Age. We have replaced animal power first with steam power obtained from burning wood, then changing to coal, oil, and nuclear fission as our primary sources of energy. These sources of energy support a material living standard in the developed countries that was once available only to royalty. In essence, most of us in the USA are living today much like the kings and queens of old. CHANGE CREATES NEW PROBLEMS This rise in material wealth has not eliminated human problems; indeed, it has created an entirely new set of problems. For example, throughout most of our history the majority of people died in their thirties and forties, but in today’s modern industrial societies we are now living well into our seventies and eighties. People win industrialized countries no longer die from bubonic plague, diphtheria, and typhoid fever, but from diseases of old age such as cancer, cardiovascular disease, and Alzheimer’s. In many other areas of society the same trends hold: rather than eliminating our problems, these problems have morphed into a new set of concerns. For example, our extensive use of fossil fuels to generate power has enabled millions of homes to have both light and heat at the flick of a switch, yet the use of these fuels also creates vast amounts of greenhouse gases that affect climate change. The thousands of oil-derived industrial chemicals we use enable us to fertilize our crops, drive our cars, weave our clothes, and furnish our houses, yet these same chemicals create toxic waste dumps that poison the land and pollute our bodies with noxious compounds. RESOLUTIONS REQUIRE INNOVATION There is a growing awareness throughout the business world that we are facing a set of integrated social, ecological, and economic problems not encountered before in human history. Collectively, these problems are grouped under the theme of sustainability. To their credit, many business managers and entrepreneurs are responding with ground-breaking solutions. The following are two examples that illustrate how innovative technology can be used to generate economic profit while at

the same time supporting social value and ecological stability. The first example is based on food waste. A recent study at the University of Arizona found that the average American throws out 467 pounds of food per year, which adds up to almost $43 billion in the trash. Municipalities must dispose of this waste at a cost of almost $1 billion. This amount of waste is roughly equivalent to throwing out the crops and animals produced on 10 million acres of farmland. The cause of this food waste problem is largely inefficient storage in our homes. To address this issue, the Fenugreen Company created FreshPaper, an organic product that keeps fruits and vegetables fresh for 2-4 times longer than conventional storage. The product uses no toxic chemicals, is 100 percent compostable and recyclable, and enables people to store and consume fresh food longer. The second example directly addresses two sustainabilitybased problems. Newlight Technologies has developed a process that creates plastic out of the carbon in the atmosphere. This technology eliminates the use of toxic chemicals derived from oil while decreasing the concentrations of greenhouse gases that are destabilizing the earth’s climate. According to the company’s website, Newlight has “developed, patented, and commercialized a manufacturing technology that separates carbon from air to produce a carbon-negative thermoplastic called AirCarbon.” This technology promises to revolutionize the petrochemicalbased plastics industry. There are thousands more examples of innovative business solutions for the problems associated with sustainability. SCA ADDS FIRST AMERICAN CREW MEMBER TO ALL FEMALE SAILING TEAM SCA, a global hygiene and forest products company with operations in Flagstaff and Bellemont, has added its first American crew member to its sailing team. SOUTHWEST COLLEGE OF NATUROPATHIC MEDICINE BREAKS GROUND The Southwest College of Naturopathic Medicine broke ground on a 47,000 square-foot facility in January. A growing interest in naturopathic medicine, record enrollment and increasing patient volume at its medical center have led to the expansion at 2140 E. Broadway Road, Tempe. The $9.5 million mixed–use building will include a library, study space, a café, exercise area and classrooms. The building also will include an integrative regenerative healing center for pain treatment and a demonstration kitchen. The projects are expected to produce more than 795,000 kilowatt-hours of energy annually, or enough energy to meet the yearly needs of 77 homes. iving sustainably is no longer simply about recycling, composting and reusing whenever possible. It is about identifying the challenges that we face and developing solutions that will last beyond not only this generation but for generations to come. It is in this spirit that Arizona State University, the nation’s leader in sustainability education, is partnering with global leaders in sustainable business, consumer innovation, renewable energy, science and the arts for the inaugural Sustainability Solutions Festival. Themed “It’s time to find a better way,” this weeklong celebration, February 17-22, will feature a variety of activities and events for people of all types and ages, from families and the ASU community to film buffs and industry leaders. Featured partners for the Festival include the GreenBiz Group, holding their annual GreenBiz Forum in Scottsdale, and the Sustainability Consortium, who are holding their winter leadership meetings in Tempe. Additional partners for the week’s events include the Arizona Solar Summit, Arizona Science Center, Arizona SciTech Festival, Sedona Film Festival and the City of Tempe. The Sustainability Solutions Festival is one of eight programs within the Rob and Melani Walton Sustainability Solutions Initiatives at the ASU Global Institute of Sustainability. “The Sustainability Solutions Festival exemplifies ASU’s endeavor to address the world’s environmental, economic, and social challenges of the 21st century through collaborative, solutions-oriented thinking,” said Michael M. Crow, president of Arizona State University. “As citizens of this planet, we have an obligation to future generations to embrace sustainability as a transformational core value in order to develop a society that is more environmentally sensitive, economically disciplined and socially just.” An anchor event for the Festival is the GreenBiz Forum, being held at Scottsdale’s Montelucia Resort beginning Feb. 18. an the power of film create social change? It’s a question that has been under debate for years. As far back as 2006, blogger Nedra Kline Weinreich offered that movies “whether feature films or TV movies have the potential to change attitudes and beliefs, and ultimately to bring about individual and social change. In many cases, a movie may be the first exposure an individual has to a particular topic, raising the awareness that a problem exists. Think Erin Brockovich (environmental hazards), Hotel Rwanda (genocide), One Flew Over the Cuckoo’s Nest (mental institutions) or Human Trafficking on Lifetime.” Fast-forward six years as the focus and awareness on environmental issues continued building interest and action, the topic became conversation for organizers of the Sedona International Film Festival. “We wanted to respond to the growing concerns for sustainability on the planet and thought a selection of our films should reflect that concern,” said Festival Director Patrick Schweiss. “We wanted to bring the issue to the forefront and let people know how to get involved and what they can do to make the planet a more sustainable place.” The sustainability theme remains a powerful draw for those
attending the 20th anniversary Festival from Feb. 22-March 2. “The response has been huge,” Schweiss said. “The audiences and filmmakers have responded incredibly passionately as has our community. We have had great attendance at the films and great conversations afterwards” during both post-screening Q-and-A sessions with filmmakers or as panel discussions at workshops. “And they have been very involved and deep conversations in every case,” he added. That shouldn’t change this year with the environmentalthemed films already selected for inclusion in the Festival’s 145 choices that include full-length features, documentaries, shorts, foreign films and even classics. The Festival also is working with the ASU School of Sustainability to screen the films of Emmanuel Vaughan-Lee, founder and executive director of The Global Oneness Project, including Elemental and four short films. But Schweiss and his team are taking the sustainability concept to another level with the first of what is expected to be an ongoing presentation of awards to “Ordinary People Doing Extraordinary Things.”

The inaugural recipient of the award is Nepalese native Pushpa Basnet, named the 2012 CNN Hero of the Year for her efforts to rescue children living with their parents in prison. Pushpa started a home in Kathmandu for children with jailed parents to receive education, food, medical care and a chance to live a normal life. She is the focus of another Festival selection, Waiting for Mamu, a film by Morgan Spurlock, Thomas Morgan and Susan Sarandon, all of whom will be in Sedona this year. rmed with a cabinet drawer face and an 8-year-old’s imagination, Ava Borgerson accepted the challenge to transform an old drawer face into something new. The challenge was issued by Green Living magazine at the publication’s third anniversary party held at Stardust Building Supplies, seller of gently used building materials, and provider of the drawer face. Ava decided the drawer face looked like a frame, and she filled that frame with a single red rose. We recently met with Ava to discuss her love of art and her inspiration for the piece. WhY DiD YOu DraW a rOse? I like roses and flowers. The red rose is my favorite. It is beautiful to look at and it has lots of details. What Other artWOrk have YOu DOne? I made a birdhouse out of a milk jug. I cut a big hole in it so the birds could get in and I put seeds and peanut butter in the bottom for them to eat. DO YOu have anY Other prOjeCts YOu are prOuD Of? I cut a blue piece of paper into the shape of a cloud and glued on two polished rocks, a wooden unicorn and fake leaves. It was a pop-up card and I gave it to my friend. One time I got a bunch of rocks and started building them into a house for my toy crab. I used four nails and a flat stone for a table. tell us abOut When YOu first starteD DraWing. When I first tried, I had a tough time, but I tried it out and liked it. The person who taught me how to draw is my daddy. DO YOu have anY aDviCe fOr Our YOung reaDers? Start drawing and see what you can draw. If it looks bad, you can make it into something new. H
alfway around the world in Africa, rural communities are coming into the light. Here, along the equator where there are about twelve hours of sunlight a day and twelve hours of darkness, a community in Accra, Ghana, now has light at night, thanks to a system of solar panels, LED lights, and long-term, long-lasting batteries. These systems are helping communities throughout Africa, who have zero access to a grid, use electricity during the day for health care, and light at night for reading, commerce, and soccer matches. Lack of light hinders developing countries both socially and economically because darkness presents a security issue, so shops close and people stay home. So why is soccer important? Along with electricity and the services mentioned above, there is another thing many Africans are missing in their lives: parents. Africa has the highest percentage of orphans in the world. Ghana alone has 970,000 orphans. The leading causes of parentless children in Africa are AIDS, war, and other consequences of extreme poverty such as disease and malnutrition. These children do not grow up waiting for someone to adopt them while being cared for by a foster family; rather, many times they are on their own, and many of these children assume the role
of the parent as they figure out how to provide for not only themselves, but also their younger siblings. During the day these children work hard trying to earn money, and in the process, lose their childhood. This loss of childhood is where soccer steps onto the field. Thanks to Philips Electric’s community light centers, these children can gather as a community and play. Playing soccer is more than having fun. It’s a way to teach young people life skills and confidence, and a means to develop passion and talent. Playing soccer is also therapeutic and healing, and helps these young people recover from the devastation of war and disease. This Earth Day, Green Living magazine will be co-hosting the inaugural bi-continental Earth Day Soccer Classic with ASU’s Global Institute of Sustainability. During a daylong soccer tournament, we will be bringing together soccer and sustainability enthusiasts to have fun, celebrate Earth Day, and learn more about these challenging issues in Africa, in addition to renewable energy and sustainable development. Ingredients 4 mulato chiles 4 pasilla chiles 3 guajillo chiles 2 cascabel chiles ¼ cup sesame seeds ¼ cup peanuts 1 bay leaf ¼ tsp. ground canela (Mexican cinnamon) 2 tsp. Oregano 1 tbsp. salt ½ tsp. all spice
2 tbsp. raisins ½ corn tortilla 1 tsp. avocado leaf 2 tomatillos 1 tomato 8 cups chicken stock 2 cups chopped onion 2 tbsp. chopped garlic ½ cup lard ½ tablet Mexican chocolate
Directions 1. In a large dry skillet, toast sesame seeds and peanuts until dark brown and remove from pan. 2. Toast the tortilla until dark brown. 3. Remove from the pan and toast dried stemmed chiles until slightly darkened and fragrant. Remove from pan. 4. Add tomato and tomatillos and char them and remove from pan. 5. Add lard to pan and sauté onion and garlic and cook until very brown. 6. Add all ingredients and simmer for 30 minutes. 7. Let cool, then puree very fine, and then strain through a medium mesh sieve to further remove any seeds and to obtain a smooth sauce. 8. Serve with chicken, turkey or roast pork loin.

Directions 1. Sift the flour, baking powder and salt together. 2. In a large stand mixer, whip the eggs, sugar, espresso and vanilla extract to full volume. 3. Melt the chocolates together with the butter either in the microwave or over a double boiler. 4. Add the chocolate/butter mixture to the egg mixture and mix until combined. 5. Fold in the sifted dry ingredients until fully incorporated. 6. Place the mixture in a piping bag and pipe circles slightly larger than the ring mold being used to mold the ice cream onto parchment-lined sheet trays. 7. Bake in a 350 degree oven for approximately 6-8 minutes. Cool completely and remove from the paper. 8. Serve with caramel ice cream.

MEXICAN CHOCOLATE BROWNIES BROWNIE INGREDIENTS ½ lb. butter, sliced 6 oz. callebaut bitter chocolate 5 eggs 1 tbsp. vanilla extract 1 tbsp. coffee extract (instant coffee can be substituted) 1 ¼ cups plus 2 tbsp. sugar ½ cup plus 2 tbsp. all-purpose flour
½ tsp. kosher salt ¼ tsp. baking powder 1 tablet Ibarra/Abuelita chocolate (chopped) Caramel sauce Vanilla ice cream Spicy walnuts
Brownie directions
WALNUT INGREDIENTS 1 oz. butter ½ tsp. cayenne pepper 11 oz. walnut halves and pieces ½ tsp. kosher salt WALNUT directions 1. In a saucepan, melt butter with kosher salt and cayenne. 2. Add nuts to melted butter and over low heat, keep mixing until nuts are coated evenly and all the butter has absorbed. 3. Place on parchment lined ½ sheet pan. 4. Toast nuts for 8-12 minutes in a 325-degree oven. Rotate and stir at least once during baking.
1. In a large bowl, place the butter along the bottom of the bowl and put the chocolate on top. Melt over a double boiler. 2. Remove from heat when melted. Add the eggs and extracts. With a rubber spatula, mix until well blended. 3. Combine the dry ingredients, and mix into the chocolate mixture. 4. Place in a parchment-lined baking pan. 5. Bake for 15 minutes in a 325-degree oven. Rotate pan and bake another 10-15 minutes. 6. Allow to cool completely at room temperature. 7. Remove from pan. Lightly trim the edges. 8. Cut into equal pieces.

ANGeL FOOD cAKe iNGreDieNTs 1 ¼ cup Tom Sawyer Gluten Free Flour ½ tsp. salt 1 tsp. baking powder (gluten free) 1 ¼ cup sugar 12 egg whites 1 tsp. cream of tartar 1 tsp. vanilla (gluten free) DirecTiONs 1. Sift the flour, salt, baking powder, and about half of the sugar together four times. In a separate large bowl, beat egg whites and cream of tartar until stiff with an electric mixer. 2. Add balance of sugar slowly and blend well. Continue to beat egg mixture until a firm peak is reached. 3. Add vanilla and blend well. Sift the flour mixture, in small
amounts, over the egg mixture while gently folding. Do not over mix. 4. Pour into non-greased (approximately 8 inch) angel food tube pan and bake at 350 degrees for 50-60 minutes, or until done. 5. You might say that mouthwash isn’t the most romantic thing you can think of. But, if you hope to see some romance this Valentine’s Day, you may want to take a swish! Read on to find out which rinse will prep your pucker for sweet minty smooches! NATURE’S ANSWER | PERIOWASH COOL MINT HE SAID: Nature’s Answer’s mouthwash had a strong oregano flavor. It was like rinsing my mouth out with spaghetti sauce. It did a good job killing my coffee breath, but didn’t seem to last very long. If you’re favorite breakfast is a cold slice of pizza, this is your mouthwash.
SHE SAID: Normally, eating Italian food would be a reason to reach for some mouthwash. So one has to wonder what oregano is doing in the mouthwash? While it does support tissue and gum health, it also dominates the flavor. Ugh.

ESSENTIAL OXYGEN | BRUSHING RINSE PEPPERMINT HE SAID: Sometimes simple is better. Essential Oxygen is essentially just water and peroxide with the slightest hint of mint. It cleared the lasagna dinner flavor and left no hint of it on my breath without socking me in my mouth like most mouthwashes do. A refreshing change.
SHE SAID: As weak as this tasted, I didn’t expect good results. It tasted like water – which wasn’t a bad thing. Surprisingly, it did have a light minty aftertaste that reduced morning breath. Avoid swishing too long, or you’ll be frothing at the mouth like a rabid raccoon. Yup, that was me!

THE NATURAL DENTIST | ANTIGINGIVITIS RINSE, PEPPERMINT TWIST HE SAID: I’m pretty sure I’m not the only person in this world that thinks aloe vera tastes awful. This Natural Dentist is basically just aloe vera gel and water, but they also add citric acid, peppermint, and cinnamon oil, so it’s pretty much flavor chaos. I needed some mouthwash after this mouthwash.
SHE SAID: I was doing the twist alright, because this one tasted gnarly and stung my tongue. It left a minty, sour citrus flavor that, thankfully, didn’t last long. It didn’t prevent “nap breath” and instead left a strange taste upon waking.

DESERT ESSENCE | ULTRA CARE, MEGA MINT HE SAID: Desert Essence tasted almost lemony when it first hit the tongue, then the mega mint and tea tree flavors kicked in and blasted away breath funk. The bottle reminds me of a hand soap bottle, so keeping this one under the sink may lead to a very unpleasant morning.
SHE SAID: There was just a slight tingle while swishing which was a nice change from the shocking, alcohol-containing variety. I was left with a perfectly minty-fresh pucker for about an hour. Tasted great and banished the bacteria!

It had a strong mint and anise flavor that I wasn’t a fan of at first, but it has grown on me. Plus it’s just a fun word to say ...Neem!
SHE SAID: Smelled like watered-down Pine-sol – not a good start. It was non-stinging and had a mild flavor while swishing. If you can get past the awful “herbal celery” immediate aftertaste, it fades to a pleasant, refreshing mint flavor. My mouth felt clean!

If You Take a Daily Multivitamin,
You Might Be Putting Your
Health at Risk.

es, this may sound somewhat ironic. After all, the reason most of us bother with taking multivitamin supplements to begin with is that they are supposedly able to guard against the onset of serious diseases, and otherwise protect our health over the long-term, by providing us the nutrients which we know we are missing in our American diets. Unfortunately, scientific evidence relating to the long-term effects of multivitamin supplements is beginning to stack up, and the consensus is clear: multivitamins don’t prevent disease. In fact, they might actually help cause it. One 2008 study, published in the American Journal of Clinical Nutrition, sought to determine the long-term effects of daily multivitamin use on women. They study found, contrary to expectations, that women who took a multivitamin were more likely than women who didn’t take a multivitamin to develop dense breast tissue, which is considered a precursor to breast cancer. The problems with multivitamins are manifold. First of all, they contain lots of different kinds of inert powders and dyes, intended to help give them their characteristic shapes and appearances. This is good for marketing and profit
margins, but bad for your body, because it means you’re forced to ingest a lot of “miscellaneous” binder and filler matter, that has no nutritional value and may be harmful in the long term. In fact, every major degenerative disease increased in the population taking these supplements over the past 70 years, and now over 65 different studies are confirming why this has happened. The major problem with the average multivitamin supplement is that the nutrients it contains are entirely artificial. By this we mean, consisting of 95-100% synthetic, manmade compounds, with zero food value, and extremely acidic with a pH of approximately 2.0. These compounds are found in over 350 different brands of so-called vitamins, and 85% of these dead compounds are manufactured by 8 drug companies. It’s always better to get the majority of one’s nutrients from actual food, rather than from labrefined chemicals. It’s little wonder that multivitamin supplements are causing problems for people who take them on a regular basis. They have almost no similarity to anything one would injest in the normal course of life. The truth is that they are closer to plastic, than to organic nutrition.
