Cheese Spotlight: Burrata

At rst glance, burrata might look similar to a ball of fresh mozzarella, but what is on the inside sets it apart. This fresh cheese made with cow’s milk originated in the Apulia region of Italy, and burrata means “buttery” in Italian. It has an outside thin shell made of mozzarella and contains a so mixture of fresh cream and shreds of mozzarella inside. When you cut open burrata, it oozes with buttery and creamy rich avor. Keep refrigerated, but if you want to serve it at room temperature, remove it at least 30 minutes before serving. Once opened, it is best to use within one to two days. Do not freeze. Serve it with ripe tomatoes, basil and crusty bread with a light drizzle of olive oil. Enjoy it with roasted peppers, cured meats, melon, grapes and light wines. Try it atop mixed greens with strawberries, cucumbers, walnuts, dried cranberries and grilled chicken dressed with raspberry vinaigrette. Add pieces of burrata to a cucumber and radish salad or serve with grilled peaches. Jazz up avocado toast by spreading burrata on toast and topping with avocado slices and fruit such as strawberries and a little basil and drizzle with balsamic vinegar and sprinkle with sea salt.

Charcuterie Picnic

The charcuterie board has been making waves lately. And this deliciously popular combination of cheese, meat, and sweet and salty accompaniments is perfect to pack for a picnic.

CHEESE SELECTION: Aim for contrast of textures and tastes (ripened, unripened, washed rind, blue, hard, so , semiso ), levels of avor intensity (strong, gentle, sharp) and milk types (cow, sheep, goat). Some combinations, for example, could be a so mascarpone, a fullbodied cheddar, blue cheese and a bite of salty feta or smoky Gouda. Or try brie, burrata, blue cheese and an aged Gruyère. Semi-so cheeses range from mild and buttery to earthy and pungent. Look for Fontina, Havarti, Muenster and Monterey Jack. Semi-hard cheeses such as cheddar are o en a favorite on a cheese tray. Hard cheeses such as Asiago, Parmesan and Romano pack an intense avor punch.

CURED MEATS: Some combinations pair particularly well, such as salami with Gouda or a salty, crumbly Parmesan with prosciutto. Soppressata, a dry salami made with both pork or beef, complements semi-so Havarti. An aged cheddar, Spanish cured ham— Iberico or Serrano—Swiss and gouda would work well together.
