Outrageous Pumpkin Granola Yup, its official, I have a fever and the only prescription is more pumpkin. I’ve caught a case of the pumpkins. It’s not hard to do, I mean, you only have to take a look at the foodie and vegan blogs around at this time of year. Its like taking a visual pumpkin bath. I dipped my toe in, and it was warm. Now I’m sitting in a metaphorical bath of pumpkin puree and cinnamon sticks. I’m even thinking about turning on the jets and staying for a while. Seriously though, I’m having a really hard time with this cinnamon/pumpkin/gingerbread craving thing. Dare you try it yourself and not get addicted. Anyway. To carry on the trend full blown habit of pumpkin, I’ve come up with this super-fabulusmelt-in-your-mouth-its-almost-too-good-tooeat pumpkin spiced granola. Pair it with soy yogurt, a dash of autumnal fruit and some mini gingerbread and its like a LOVE STORY in a bowl. Serious.

Roasted Sweet Potato Burgers with Avocado & Garlic Cream It goes without saying that I’m incredibly excited about Christmas, though not the cold and wintery weather that comes along with it. I’ve been dreaming up summertime meals (and of summer, period), of barbecues, barbecued burgers, cold crisp salads and home-made ice-creams. Since I’ve been freezing for the last week and a half, I decided to embrace this icy weather this weekend by roasting a batch of vegan mash marshmallows and sweet potatoes, too. Taking the potatoes out of the oven, I realised that they’d be perfect for a home-made burger recipe – comforting and warm! They turned out really delicious, but I’m really looking forward to the coming months when its too hot for the oven to be on and we can roast out sweet treats outside. I’m always on the quest for a delicious veggie burger, those vegan packet mixes just don’t do it for me. These ones were really tasty with a great texture with a little crunch thanks to the browning burning that took place upon frying them in the pan. Although I used flax egg to bind them, the mixture didn’t feel like it was holding together all that well so added an extra 1/2 sweet potato and a little flour and it really did the trick in keeping all the ingredients tight enough to not flop everywhere. Of course, you don’t have to eat these sweet potato patties on a burger bun, they are delicious on their own with a side of salad, or tucked in a pitta bread or wrap with of course, garlic cream poured over the top. They are honestly even great if you pop them in your mouth cold!

ECO TOUR The Royal Project on Doi Tung Mountain. For Eco Tours in Chiang Rai we select The Royal Project on Doi Tung Mountain. This because the princess mother restored nature, helped the poor locals to get a normal life, education and changed drug trade into normal business.

ABOUT THE ROYAL PROJECT Doi Tung Mountain is part of the Golden Triangle which was the biggest opium supplier of the world. Armed groups occupied parts of the area. The residents were about six ethnic groups without Thai citizenship who lived without basic infrastructure or government support. In Thailand the Princess Mother is a real hero. Her husband died at young age and she raised two kings and a daughter on her own. In 1986 she arrived in a helicopter, saw the root of problems in Doi Tung area and decided to give these peoplea better live. She builds her home in Doi Tung and started her project to restore trees. She taught people to create a legitimate income by coffee beans and Macadamia nuts. She selected crops that were in high market demand, which grew as well as opium without destroying the
